SPOTLIGHT SEA SHEPHERD CLEAN UP DAY

Mrs. Yasmine Hemes General Director Sea Shepherd Luxembourg attended the event and discussed With the support of individual divers, Camel with local divers the major role of Sea Shepherd Dive Club, Werner Lau Diving Center, Dive worldwide. Together we can keep the Red Sea Africa, Oonas Dive Club, Red Sea College and clean – let’s do it. Sinai Divers Sea Shepard’s ‘Clean Up Day’ was a great success. The divers managed to collect nearly 220kg of debris out of the water in Naama Bay. A lot of participants agreed to continue cleaning up on other beach areas, in a bid to hopefully make this beautiful

THREE PEAK CHALLENGE MIX recently covered the story of two long-term Sharm residents completing the Three Peak Challenge in the St. Katherine Protectorate in record breaking time. Now it’s time to take the challenge again. It doesn’t need to be a record breaking attempt, it can just be a personal challenge but nevertheless we should support this great initiative, to put Sinai on the map as a place for extreme sport challenges. The dates are being tentatively set as September Fri 25th/ Sat 26th. It will be a 24 hour challenge for a small group operated by a local Bedouin business. This is a serious mountain challenge - almost the length of a marathon - that requires a high level of fitness for participants. So now’s the time to hit the trails in preparation. I was named Rudolf because I was rescued at Christmas ...This is my story. My owners kept me on a tight rope around my neck, which was choking me. I lived like this for over one year, then I found

myself on the streets of Sharm with no home and begging for food. I was tired, hungry and the rope was still around my neck and getting tighter every day. As Christmas approached a kind lady came to me but I was frightened she was going to hurt me but she didn’t, she took the rope off my neck and I ran away. I saw this lady again a couple of days later and I wasn’t frightened anymore, I knew she wanted to help me. She put me in her car and took me to a place with lots of other cats and dogs and gave me food, water, a safe place to stay and lots of cuddles

and attention. That was my Christmas present…. Rudolf is now looking for a loving forever home, he gets on well with other dogs, loves his playtime is toilet trained and has had all his vaccinations as well as being castrated. He’s a dear little soul and will make a wonderful companion, please open up your heart and your home to Rudolf who’s already had a tough time in his short life. SECOND SUEZ CANAL OPENING – A GATEWAY TO THE RED SEA The expansion of the Suez Canal - one of the world’s most important trade corridors - will be completed on time in August, Egyptian officials have said. The Chairman of the Canal Authority said work is going on around the clock to finish a new lane, which will double the capacity of the waterway. The 146-yearold canal, which links the Mediterranean and the Red Sea, is the fastest shipping route between Europe and Asia. SHARM SAR MARINE RESCUE Sharm SAR Marine Rescue has been a long standing essential service to the diving centres in Sharm. The team provide a marine rescue evacuation service aimed at providing emergency evacuation, medical evacuation and rescue to all sea users. To raise awareness the team have launched a new sticker available for Dive Centres to display the emergency contact number and the Ras Mohamed National Park rules. Dive Centres please pick up your stickers from the office situated on the beach in front of the Marine Sporting Club in Sharm el Maya. 6

PESPES FAST FERRY FIRST EGYPTIAN TOURISM ENERGIZING OFFICE IN THE GCC 29th of July 2015, the Egyptian Embassy in Abu-Dhabi (UAE) will witness the ceremony for announcing the opening of its new tourism reviving office. The office main target is to promote the Egyptian tourism in promising markets that are characterized by its growth, like: the Gulf & Asia. Hussein Shokry - Egyptian Tourism Federation Member- declared that there will be new cooperation with the airlines that have routes to Egypt, to start direct flights to Sharm El- Sheikh, Red Sea & North Coast. He also added that during Eid vacation, Hotel Occupancy rates reached 100% in Sharm ElSheikh, Ain Sokhna, Hurghada and Ras Sedr & GCC tourism had a the highest rate of contribution.

There has been much anticipation for the start of the new fast ferry service between Sharm el Shiekh and Hurghada so much so that the start of the service was incorrectly leaked leading to a little confusion. It is only a compliment as we wait with baited breath for this service which will aid business and tourist travel between the two resort towns. The Pespes Fast ferry service released on their Facebook page the following statement “Dear Hurghada, Sharm El Sheikh residents and travellers. Regarding the publications and facebook posts about the start of the ferry service this week. This misleading information is published without an official statement from the project management. We’re glad to announce that the fast ferry La Pespes has arrived to Hurghada port on 10th of July. We’re proceeding to issue the permit to operate the ferry from authorities. We do our best to start the operations before September 2015. Apologize for any inconvenience and look forward to welcome you onboard soon.”

SINAI’S CLEAR SKY’S FOR PERFECT STAR GAZING With the desert just on our doorstep and the fantastic lack of light pollution Sharm el Sheikh is the perfect place to star gaze. Many visitors coming from large cities never have the chance to see the twinkling night sky and the amazing ‘Milky Way’. On Monday July 30th Sharm residents and visitors were treated to a spectacular meteor shower ‘The Delta Aquarid Meteor Shower’. The peak of the shower was on the 30th July but the phenomena could extend to the beginning of August said the head of the National Research Institute of Astronomy and Geophysics (NRIAG). Sharm’s visitors will be able to see the falling meteors by naked eye before dawn, Tadros said, adding that the expected meteors rate will vary from 15 to 20 per hour. The shower peaked at the new moon phase meaning that the dark skies were optimal for viewing. MIX August 2015

On July 2nd 2015 Anthias Divers, in collaboration with Hilton Fayrouz Resort Naama Bay and SSI Scuba Schools international arranged their 6th annual Underwater Dive site cleanup in Naama Bay Sharm el Sheikh at the front of Hilton Fayrouz Resort where they are located.

All participants received a recognition certificate and the event finished with an invitation for dinner organized by Hilton Fayrouz resort.

The organizers would like to thank everyone who took part cleaning helped make this event happen. Events like this should be conducted 40 guests took part in this event. NIGHT DIVING IN SHARM

Why go night diving? Night diving is one the best ways for a diver to experience some of their favorite Sharm dive sites in a whole new light (if you’ll excuse the pun) with the chance to see strange and wonderful creatures that they rarely, if ever, get the chance to see in daylight. There is also the adrenaline rush of venturing in to the unknown for those making their first night dive. A site that someone knows like the back of their hand in the day becomes a completely different place once the sun goes down.The colours of the reef are so much more vibrant (admittedly with the aid of a torch) and, as Whodini sung, the freaks really do come out at night. Creatures of the Night One of the most common reef animals a diver in Sharm will encounter are the echinoderms, such as Crinoids, Brittle Stars, Sea Stars (including the fearsome Crown-ofThorns), Sea Cucumbers & Sea Urchins. A diver is also likely to see numerous crustaceans, the most common being the shrimps (including the Banded Boxer shrimps, Green-eyed shrimp and Durban Dancing shrimp), crabs (such as the MIX August 2015

Splendid Spooner crab, Spider crab and the not as easy to spot spider crabs) and lobsters. You have the chance to see Cephalopods (octopus, cuttlefish and squids) hunting in the open and performing the most amazing instantaneous colour changes. Another thing a night diver will notice are the coral polyps, the tiny creatures responsible for building the reefs that we take such great delight in exploring. Most polyps are nocturnal, staying inside their hard limestone exoskeletons during the day and then extending their tentacles to feed at night. Probably the most popular sought night creature is the bright red Spanish Dancer, a primarily nocturnal mollusc that swims with an undulating motion (usually when disturbed). The animal was given the common name “Spanish dancer” because the whirling swimming movement, and the red color of the mantle, are reminiscent of the skirt movements of a flamenco dancer. Other types of common molluscs include cone shells, sea slugs, nudibranchs (probably the most common being the African & Pyjama chromodorids), and the rather unfortunately named Wart Slugs. 9


ACTIVITIES One of the most spectacular sights on a night dive in the sea is to witness the hundreds of tiny star-like bioluminescent plankton scintillating like a starry sky as you move through the dark water. During a night dive, shield your torch (i.e. place the torch light against your body to block the beam) and wave your hands through the water in front of you, you’ll be mesmerized by the tiny glowing specs of plankton. Not all creatures you encounter on a night dive are purely nocturnal. One of the most common encounters during a night dive around Sharm is with the Common Lionfish (Pterois miles), and are often attracted by divers‘ lights which distract their prey. Another type of fish that you’ll likely encounter at night that you’ll probably have seen in the day are the moray eels (in particular

Giant Morays), which mostly hunt at night Types of night diving Night dives can be made from the shore or from a boat, exactly the same as you would for a day dive. Both types have their advantages and their disadvantages, just the same as shore diving or boat diving does in the daylight. Shore diving is relatively easy for a dive center to organize for you; a night dive from a boat generally requires a greater amount of organization and is usually more expensive. You’ll find often when shore diving that the dive group is relatively small (a great advantage for a night dive); most dive centers will have a required minimum number of divers to make a boat dive at night, meaning you can be in the water with several groups all at once. The main disadvantage for making a

night dive from the shore is the limitation of available dive sites. Recommended Night Dives Around Sharm Shark’s Bay - a perfect place for night diving from the shore, offering easy access and a comfortable area for setting up your equipment with numerous cafes offering food and beverages while you wait for the sun to disappear. The site is ideal for beginners or experienced divers. You may find here many gastropods (snails and slugs), echinoderms, lionfish, cuttlefish and squid. Ras Umm Sid - a very interesting location for a night dive, which can be made as either a shore dive (via El-Fanar beach) or as a boat dive. The site has a very rich reef, including a gorgeous gorgonian forest, with the chance to see many molluscs, crustaceans, and echinoderms.

A word of warning though, the site can be subjected to very strong currents and shouldn’t be attempted by the inexperienced. Temple - offers an excellent boat night dive for beginners and experienced divers alike, boasting a landscape rich in hard and soft corals. The actual dive site is very easy to navigate on but divers should take a compass with them to locate their boat easily at the end of the dive. Ras Katy - another excellent site, for all levels of divers, to make a boat night dive. Caution must be exercised here though as there can be a rather strong local current that, should you venture too close to the corner of Katy, can push you to the Temple dive site. Before making a night dive, there are some points you should consider: • Choose a dive site you are familiar with or, at the least, have had the chance to dive or snorkel on in the daytime. • Only dive if conditions are good, and the water is relatively calm. • Prepare your equipment in daylight hours when possible. • Try to eat something, especially if you’ve already been diving the same time. Remember though that diving involves exercise, and to allow for at least an hour after eating before starting the dive. • If possible, dive with familiar buddies, people you feel comfortable with in the water. • It’s best to bring a non-diver as a surface marshal and in case there is a problem. This list is in no way meant to be conclusive and, if you’ve not made a night dive before, full training from a recognised diver training agency is recommended. Enjoy the night!

Sushi Lounge by Neil Pillai

Previously located in the steakhouse at Soho Square, Sushi Lounge relocated to it’s own site just over 2 months ago. Now you’ll find it by the information kiosk at the main entrance to the square itself and opposite the supermarket there (it’s on the right as you come in, past the car park). It’s clean and modern in décor, there is, indeed a lounge area where they play ambient lounge music. All of this lends itself to a really mellow, pleasant dining atmosphere. There are no staff hovering over you all the time – they keep a respectful distance and respond instantly when you call them over, 18

which I find refreshing. It’s a good place to take a date for a quiet, relaxed evening out. The best deal on the menu, is the all you can eat sushi, at only LE 99. It runs daily, from 9 pm to 1 am. If you’re anything like me, this is the only civilized time of day to be eating dinner, so they’d already scored brownie points without trying. Small plates are made fresh (you can see into the kitchen to verify that) and fed on to a conveyor belt all through the night. You just pick up what you fancy. The unique thing about this is that most sushi MIX August 2015


restaurants do an all you can eat buffet only once a week (where they to deplete stocks before the week’s new delivery comes in). At Sushi Lounge, The all you can eat buffet is totally fresh each and is available every day. In the unusual event that a plate stays on the conveyor belt for an hour, it is immediately discarded. On the main menu, you can partake of sushi specialties, with 5 listed in each category by price (12, 16, 19, 21, 22 or 40 LE). There are also special mixed platters, ranging between 130 and 180 LE. The portions are generous and they are prepared beautifully. There is MIX August 2015

also an extensive range of very reasonably priced sushi roll platters and sushi nigri. I tried a mixed sushi platter, with a little bit of everything and snacked on the all you can eat buffet while I waited (I had to make sure it was all good for you, didn’t I?). Drinks are standard restaurant price, with a list of special cocktails available. Better still, residents can apply for a discount card, which will entitle them to 25% off their bill and residents of the Savoy/Sierra hotels can receive a reduction on the a la carte menu. Even more incentive to try this place out. I strongly recommend it. 19

Presented by Matthias Giroud - Executive Bar Manager Buddha Bar marmalade, to name but a few. It doesn’t stop there. As part of his palette, Matthias uses such materials as copper wire, rose petals, special straws and candied rocks. Watching him at work with all these materials was truly fascinating, with his attention to detail, design and execution. He is planning to release a new speciality cocktail for Sharm, so go down to Buddha to check it out. At the time of writing, it’s still a big secret.

F

rom July 17th to the 20th, Little Buddha hosted a cocktail festival, presided over by executive bar manager, Matthias Giroud. He actually arrivced a week earlier to get a feel for Sharm and to train the staff here in some new techniques and recipes. His inspiration, he says is from all the locations he has visited, during the course of his work, as Buddha is an international brand, with clubs in places as diverse as Japan, the Phillipines, India Mexico and America. He did an interesting and original project with Michelin starred chef, Alain Ducasse called cocktail painting, where he blended his love of art with the process of producing new and interesting concepts for cocktails. Matthias has been an executive bar manager for 9 years but started in the business 20 years ago, at the tender age of 16. The first location he worked for Little Buddha was in Paris. He worked his way up and can now claim responsibility for opening 95% of their branches around the world. He has, however, visited all of them. Each location is tailored to the country in and it’s guests. He refers to himself as a “mixologist” since his job involves so much more than just making and presenting cocktails. For example, a guest can come to the bar not knowing what they want. Rather than just recommend something from the list, a mixologist will quiz the customer on what flavours they like and any preferences in ingredients and work out something unique, according to their taste. The difference between a mixologist and a barman is the same as the difference between a chef and a cook. Here are some of of Matthias’s recipes. You might want to try them at home. These are all shaken cocktails but they can be stirred, or made in a blender using just a little ice (you don’t want to water them down). It’s actually not hard to find a shaker, if you really want to. There are plenty of kitchen and bar suppliers who’ll sell you one in Sharm. Just look around or search on the internet, if you’re that keen. Use your imagination and substitute ingredients where necessary, or take the easy option-go to Little Buddha and leave the work to the professionals.

The Nabq Beach Clubbing Experience! By Neil Pillai People may be saying that these days tourism is slow in Sharm but I saw no evidence of that at Pataya Beach Club. The place was full (without being crowded). According to Marco, the manager, there can be 300 or more extra bodies in there on a normal night. It’s located at the north end of the main road in Nabq and is part of the Laguna Vista hotel. You really can’t miss it, since there are 2 large, well lit signs at the street entrance. If you take a taxi, you’ll have to walk from the road to the entrance of the club itself. If you bring your car, you can drive down to the parking facilities just outside the club. Pataya has been open for 9 years and as the name implies, it has a beach, which is open from 7:00 am, 7 days a week, with deep house sounds all day and romantic dinners on Fridays. The club night is on Tuesdays and opens at 11:30 pm. Although you won’t be able to use the beach, you might want to wear, your swimming costume under your clothes, as there is a small, shallow pool you can sit and cool off in on those hot summer nights. The club boasts 5 separate bars, including an all inclusive bar, where you can pay a fixed price for your drinks for the evening and one that serves exclusively imported spirits (for the more discerning among you). There are 2 VIP areas, with comfortable sofas and chairs, either side of the dance floor. The restaurant 30

serves seafood and barbecue, day and night. Drinks are a little cheaper than you’d expect for a club in Sharm, with a 15% reduction for locals. Just bring some proof of residency ; CDWS card, passport with 1 year visa, ownership documents for your property (only joking)….., whatever. The Tuesday that I went, there were already some people sitting at the bar but people started streaming in at about 11:50 and by 12:15, the place was swinging, with an estimated 600-700 happy clubbers dancing the night away to the

club’s trademark mixture of house and EDM. The sounds were lively but not too harsh. Just good solid beats to dance to. The atmosphere was friendly and genial and the dance floor was full of people enjoying themselves. Podium dancers gave the crowd a show throughout the night and kept the people moving. Pataya is a pleasant change from the indoor club scene, and the windier/cooler weather of Nabq makes it a perfect choice for those hot August nights.

Bread to Bedouins is like honey to bees. It is a fundamental food staple in their nomadic culture; as a handy nourishment in their journeys; as offering to wandering herdsmen and guests; as an ingredient to Fattah dishes; as utensils for eating; as food for their poultry stock; and as the product of a deeply embedded art.

In Bedouin culture, bread making is a basic part of childhood, as well as a prelude to every meal. It is an ancient skill handed over by their parents from the early age of four, initializing their role in the household chores and orienting them in desert survival. The list of Bedouin breads is extensive. Most are based on secret recipes that are exclusive to the family, while a few are shared with friends and acquaintances. All are prepared with a whole-wheat flour, called bulgur. In their spare time, the Bedouins collect the bulgur wheat and grind it with a mineral rock until it becomes a flour fine enough for making 40

Libbah is an aromatic bread made with flour, spring water or milk, and a dash of salt. It is rolled flat on the sand or on an iron pan and buried in the sand with hot coals, turning it once, to completely cook and absorb the sand’s strong and distinctive flavor. It is then tapped with a wooden stick to determine if it is ready for eating, which is noted from the detachment of sand on the stick.

The last is Moraras, a sweet flat bread mixed with ghee or butter and sugar or honey, baked in clay oven. The Farrasheeh, on the other hand, is the most common bread done in Bedouin tours. It is a thin, holed flat bread that is hand-tossed and flattened with a rolling pin, then spread over a concave piece of metal covering the fire.

As a race founded by nature, the Bedouins also have a knack of adding herbs and spices growing around their territory or sold to them by merchandise caravans, such as thyme, oregano, basil, and rosemary, with a sprinkle of virgin olive oil and/or chopped olives.
