SPOTLIGHT Nabq to Get New Neighbour In 2020 Starwood Hotels & Resorts Worldwide, Inc will launch the famous W brand of hotel chains and ‘Residencies At W’ in Nabq Bay. The project promises to add something spectacular to the resort bringing a calendar of exclusive events which will showcase current design, fashion and music trends. SHARM EL SHEIKH AIRPORT TO EXPAND The African Development Bank and Government of Egypt have signed a new deal to secure a major airport development project in Sharm El Sheikh. The plans include the creation of a new terminal building, runway and installation of electrical and navigational equipment. The current passengerhandling capacity of the airport falls at 10 million passengers per year and the expansion of the airport looks to increase this to 18 million. The major development will boost tourism and support the countries effort to increase investment in infrastructure.

SPOTLIGHT CAJUN CREATIONS C o n g r a t u l a ti o n s to Executive Sous Chef / Mohamed Moustafa who led a cookery course this month specialising in Cajun delights. The cookery event took place at the Sultan Gardens Resort Hotel and was attended by over 20 Sharm based chefs. If you have ever wanted to try waterskiing, snowboarding or surfing then this might be your dream sport. Wakeboarding combines techniques from all three and is relatively quick to pick up. So what better way to spend an afternoon on the beach than with jets of sea spray foaming behind you as you carve up the bay. A wakeboard looks a lot like a snowboard but is shorter and wider. It is also buoyant, that is, it can float. The sport is similar in its acrobatic elements, so you will get the same adrenaline fix as you would do on snow, but of course, it’s water based so you’ll have the thrill of seawater fizzing up around your feet as you cruise along.

ACTIVITIES Once you’re ready to go, remember to relax because the calmer you are the more your body will want to balance, making you the watersports pro that everyone will be admiring from the beach! You’ll be traveling at speeds of 18 – 24mph (multiply by 1.6 for kph), so it’s slightly slower than water skiing. The boat that pulls you is specialised and has a rope mounted tower above the water line. This enables the person riding the board to gain height for tricks without being limited by the cable. Once you’ve mastered standing up and gliding along the bay with the Red Sea breeze in your hair, you can move onto some core skills. These will set your pulse racing, so are suitable for those looking for thrills. You can start with ‘carving’, this is a technique where you slice up the water in different directions. Or try a more challenging ‘ollie’. This is similar to the type of flip you would do on a skateboard.
As with many freestyle sports such as snowboarding and surfing, there is almost a separate language of terms to describe various tricks (Off-axis, Tantrum, Elephant, Whirlybird, Slob 360, etc). Professionals on large boards can jump 25 feet above the water. One of the most impressive moves in the sport is the ‘1080’, which involves executing three full 360 degree flips in the air. So if you pull this one off at Sharks Bay Beach you’ll be quite a local celebrity, the maneuver has only ever been caught once on camera in America! This fledgling sport is rapidly growing in popularity, especially with young Sharmers. To have such a large proportion of competitors on the Egyptian team is testament to that. In general, wakeboarding is most popular with 1325 year olds, of both genders. There is a strong movement among the sport many enthusiasts have a dream to make it an Olympic Event, in view of the fact that it has increased in popularity, especially over the last 5 years.

So, if you love watersports and want to try something new or you’re an aspiring x-games nut, this could be just the ticket. If you’ve surfed, snowboarded or skateboarded, you’ll probably pick it up really quickly. Here in Sharm, courses are mainly taken in the harbor of Sharm el Maya, near Old Market, where the glassy still water is well suited to this kind of activity. Not only is it fun but it also offers you a full body workout, it strengthens your arm and leg muscles, improves flexibility in the hands and feet, improves your reaction times and is great for relieving stress.

The Marriott Resort in Naama bay is one of Sharm’s classic hotels; it is opulent and welcoming. As soon as you arrive you feel like you will be in the hands of staff that will take care of you. It has just the right amount of grandeur to leave you impressed but not so much that you can’t relax. I felt happy to be there as I walked up towards the sweeping entrance, lined with trimmed lawns and neat hedgerows. The hotel interior is classically luxurious, polished marble floors and elegant pillars create a grand lobby entrance. With the minimalist design of more recently built hotels, it’s a pleasure to experience the old-world ambience of the resort. A glinting Arabic coffee pot perches on a nearby bar, poised and ready for pouring, whilst guests checking in, can help themselves to an exotic looking hibiscus coloured juice at reception. Everything is at hand adding a welcoming touch on arrival.

The Beach BBQ Restaurant is a short walk from reception where you’ll glide along marbled floors, down steps, past the brightly lit aquamarine pool, a jewel framed by palm trees. You can also reach the restaurant from outside in just seven minutes from Naama Bay, alongside the beach promenade. This is one of my favourite walks in town, the path to the restaurant is softly lit, there are low rise hotels and shops on one side and the sea on the other. It feels more like a walk through a quiet Mediterranean seaside village, its relaxed atmosphere contradicts the buzzing epicenter of Naama Bay, with its brightly lit facades and booming bars. The Beach BBQ restaurant which opens for food between 12pm-11pm, is tucked away at the other end of the promenade. It is a short walk across a low lit path fringed by green bushes and Egyptian flowers. The restaurant is filled with pretty marbled tables, comfortable cream and aquamarine chairs and sea blue placemats. There is authentic live Arabic music, songs by Egypt’s legendary singer, Om Kalthoum, are received with gasps of appreciation. Egyptians adore her, as do her fans in neighboring Arabic countries. Her music is soaked up with glee by the audience.
by their talented chef, Mohamed Badwy. Haitham, took me to meet Sabah, who is the hotels very own bread maker from Sinai. She silently works beside her oven and what comes out is something truly special. She makes the freshest Bedouin creations you will taste and has her own spot in the restaurant where she works. I watched as she rolled the dough and placed it in a traditional dome shaped oven, flames danced around the flat circles and what appeared soon after were these magical puffs of bread. Sabah makes two types, one is the smaller type eaten at dinner and the other a larger circular Saj variety, which is made in the day and used to create the popular Egyptian shawarma wrap. The bread was brought to the table along with six mezze starters. A colourful fattoush salad of fresh herbs, cubed tomatoes, cucumber, red onion and crispy fried bread, which soaked up the dressing and fresh juices. Other variants of the recipe can include peppers, radishes, lettuce, chilli, mint, parsley, coriander,
You can catch the Arabic band on Friday, Sunday and Tuesdays or come and see Marwa perform on Saturday, Monday and Thursday. Traditional Arabic folklore music is played every Wednesday. Alternatively, you can unwind and watch sports, whilst ordering food and drinks at the beach bar, which is positioned between the entertainment and restaurant. The Marriott has combined this so well, so neither intrudes on the other and sits perfectly together. Everything works seamlessly. Haitham Serag, the restaurant manager, works tirelessly ensuring that his guests are happy. The restaurant offers eight types of freshly caught fish which are all written up daily on a chalk board near the grill and cooked to order MIX October 2015

DINING I watched the Egyptian moon making silvery circles on the water as Haitham brought over the main course. This was grilled shish taouk, two perfectly cooked skewers of chicken and beef studded with sliced green and red pepper. The dish came with some tasty koftas and two pieces of lamb which were charred and crusty on the outside and soft on the inside. The food sat on a mixture of sliced and shaved pieces of fresh grilled Egyptian vegetables. allspice, cinnamon and sumac. This salad was beautifully fresh and light. The salad came with a bowl of moutabal, which translates to ‘seasons’ and is very similar to Egyptian baba ganoush. The smoky aubergine dip had flavours of tahina, garlic and was decorated with bright slices of pepper, fresh herbs and splashed with oil. This was scooped into pieces of Sabah’s fresh bread, along with a beautifully smooth humous. The dip was authentically swirled around the dish, dressed generously with a grassy light olive oil, leafy parsley and dusted with paprika.
The main meal was accompanied by a spiced, herb infused vegetable tagine which arrived in a deep earthenware dish decorated with a sprig of rosemary. The rich tomato sauce, had depth from a long cooking time which responded well to the sweet carrots and lightly cooked tomato, adding something light and fresh to the dish.
Just when I thought we were finished, Haitham appeared with dessert, a perfectly cooked Om Ali. This could be described as the Egyptian sister of English bread and butter pudding. Om Ali is a lighter and more fragrant version though, typically made with phyllo pastry, jewelled golden raisins, toasted almonds, coconut, milk and cream. The Marriott chef, added cinnamon, Haitham then brought three more starters, some which when combined with the creaminess of very crispy fried bread triangles and a bowl of the dish made it the tastiest thing I have tried in cheese sambouseks, which had a buttery rich quite a while! taste, with the lightest cheese filling inside. These were generously dipped in the Marriott team offering some really unique moutabal, a dip I will be trying to make as soon flavours and carefully thought out dishes. Like a tropical hideaway, the position is on the beach, where lights from town hit the sea creating shimmering red, orange and green zigzags on the water. Perfect for a romantic meal which the hotel can arrange for guests. 18

Starting his career 30 years ago, in his homeland in Turkey, Chef Ender finished University, where he studied culinary arts then continued for three years of training in Europe. His long career has taken him to many exotic places like Libya, Kazakhstan and Iraq. Almost a year and a half ago, Chef Ender landed in Sharm El Sheikh, as executive chef for the elegant Rixos Hotel in Nabq. With two main restaurants and 6 A La Carte venues, chef Ender has his hand busy, Especially now that two more outlets are due to open, a Turkish restaurant and a Teppenyaki joint. With a lot of experience in Arab countries, he says that he actually prefers the system in Egypt “I like that the staff care about their jobs, they feel that it’s a real job that they will do for life, I like that” A fan of Mediterranean cuisine, Chef Ender notes that when it comes to cooking he is always tempted to try exotic foreign items, it’s his hobby to search for new recipes and make them.

Congratulations to Little Buddha who are celebrating their 10 year anniversary this month. The Little Buddha concept was created in Paris by founder Raymond Visan, famous for the Barfly chain and soon to open Abu Dhabi branch. Their website gives a visual glimpse of what to expect; an ebony chandelier twinkles from the ceiling illuminating metallic mink coloured seats which are stylishly arranged against a rustic exposed brick wall. This flair for innovative design can be seen in Sharm’s Little Buddha, reflecting the groups’ eye for a stylish space. In the Sharm branch you will find crafted Asian objects, lacquered wooden interiors, Portuguese mosaics, golden fabrics and oriental statues. It could be a distant relative of the old Jim Thompson’s chain in London’s Kings Road, with its collection of Asian artifacts in a restaurant / bar setting. There’s something exciting about a place that is decorated with objects from far away lands, you feel like you are in an art exhibition or museum, but with the addition of some great tasting cocktails to choose from. Little Buddha does some of the best in town and coupled with its surroundings, is the type of place where your senses will absorb everything the room has to offer. The owners’ vision for ambience and décor seem to be what makes the establishment so unique and special. The chain has continued to grow giving the brand international appeal; it has branched out all over the world offering guests the ultimate electro-lounge experience. The resident DJ’s are famed for their creativity and ability to take ethnic percussions and electro beats to create unique music, bringing something special to Sharm’s entertainment scene.
To celebrate their 10 year Anniversary in Sharm, a three day schedule of events has been planned by the team. His recipes set him apart giving him a Michelin star chef quality, using the kind of skill and creativity you would expect to see at that level. So with gourmet cocktail in hand, you can look forward to a magical night. The last evening of the celebration falls on Friday 31st October, where you will be treated to musical talent, Camilo Franko. He will set the tempo with some innovative house beats, rolled into a Halloween special which promises to be something quite extraordinary.
