Hard Rock Cafe Now Open in Nabq The world famous Hard Rock Cafe opened its second Sharm branch at Nabq on the main road in front of the Laguna Vista Hotel. The new branch features the unique rock memorabilia the chain is known for, in addition to their extensive food and drinks menu. The Nabq branch also includes a wide dance floor area that will sure see some serious party action soon. Another unique feature is a wide outdoor shaded terrace lounge, complete with a full bar and cozy seating areas, for those warm Sharm evenings. Hard Rock Cafe is also very involved in social responsibility, with a long running fundraising campaign for Cairo’s 5757 Children’s Cancer Hospital via the sale of special bracelets and pins at the Hard Rock Shop, whose proceeds go to this charity. To be able to see the therapeutic healing of our inner self, first we need to understand the nature of these wonderful creatures. Horses, being prey animals, absolutely need to determine whether or not any individual, of any specie, within its vicinity, means to eat it (or do it harm in any way, even simple control). Not only do they have great eyesight and hearing for spotting predators at a long distance (better than up close), but they are extremely empathetic and intuitive as well. Both of these traits assist the animal in knowing the intentions of any individual in its survival feelings. These feelings could be labelled “trust, that it is safe”. Safety is a feeling only and does not actually exist in the world outside of our feelings. We either feel safe or we do not. It is the same for the horse. Therefore, it is easily to see and understand how the emotions of the rider either positively or adversely affect the horse being ridden.

may even result in the horse being labelled dangerous. A “horse whisperer” may be called in to help in situations like this. Horse whispering, as it is often referred to, is more about listening than whispering. The professional horse men and women who practice this skill understand how to read the body language of horses and are fully aware of the psychology of the horse. The ranch’s resident “whisperer” told me that they are helping humans and horses with traumatic experiences, by making them help each other. The soul connection that can develop between them is a life changing experience for both. Those, who for any reason can’t ride, will be gently introduced to the world of the horses by simply leading and treating these sensitive and highly intelligent animals. “Besides teaching horseback riding, we want to lead the people back to nature in its true meaning; to find the balance within the harmony of being together with the horses. Building a unique bond between a horse and a human can show us a very different and peaceful aspect of life, which in our stressful environment is very hard to find. If the rider is unsure, fearful or only trying to survive on the horse’s back, it will prompt most horses to become just as unsure, fearful and concerned about their survival. The horse is a perfect mirror of the feelings, emotions and even thoughts of whoever is with it, either on the ground or in the saddle. This is how horses teach humans. They mirror our internal processes. The horse will respond the same way we are. By being observant of how the horse is, when we are with it, we can determine how we need to modify our feelings, thoughts, movement and so on to assist the horse in having feelings of trust and safety. That’s when you start to feel both humble and strong, which is quite a unique experience. At the Mangroovy Horse Ranch you can learn horseback riding in about 10-12 lessons in the paddock or if you are an experienced rider, they organize day trips with horses on the beaches in Nabq or between the valleys of the desert mountains north of Sharm el Sheikh, sunrise or sunset rides in the Nabq National Park, or a few hours of stroll by the beach in the full moonlight. Recipe by: Chef Daniele Centaroli Executive Chef, Maritim Jolie Ville Resort & Casino, Naama Bay Starting his career in 1985, Daniele Centaroli (now 42) definitely had an early start! Leaving his native Italy, Centaroli worked all over Europe and the United States. He went back briefly to his hometown in Rome to open the highly fashionable “Replay Café”, but his yearning for adventure led him abroad again, namely to the UAE, where he worked as a private chef for the Emarati Royal family. His culinary career was highlighted in 1999 with a Michelin Star for his restaurant “Cucina Italiana.” Centaroli was invited to Sharm El Sheikh in 2003 by the Jolie Ville hotel to open their high end Italian restaurant; Zigolini, where Chef Daniele hosted the widest selection of VIP’s from Egypt and the world. What started as a two year contract, with the intention to return to the UAE afterwards, has now become a permanent post. A Sharmer for ten years now, Daniele still thinks that “Sharm is a paradise, everyone can complain as they wish that the place is not anymore like before, but this place is still very much a paradise, my family and I feel very good here!” With over 100 kitchen staff under his supervision, Chef Daniele Centaroli is now the executive chef at the Jolie Ville Resort & Casino, Naama bay.

For the veal filet:

Ingredients:

Grill the veal filet on the grill to your preferred doneness, you can add a touch of herbs, salt & pepper to taste.

100 gr.veal filet

For the shrimps:

2 pcs large shrimps

1 artichoke 40 gr zucchine 30 gr broccoli 1 carrots

Clean the shrimps with lemon

150 gr. Red and yellow capsicum

Wrap shrimps with potatoes (you need a special machine which is easy to find in the market)

1 potato

50 gr butter

60 gr raspberry

80 gr fresh cream

salt and pepper to taste and fry until golden

3 asparagus

Red and yellow capsicum sauce: Cook the already cut red and yellow capsicum with onion and fresh cream in two different pans (one for each color) Mix the separate sauces, add salt and pepper

Raspberry sauce: In a mixer, add 1 spoon of butter with a little honey and raspberry.

MIX did the rounds looking for this year’s most romantic restaurants, and while Sharm is full of great places, here is our pick for this Valentine. Little Buddha Little Buddha in Naama Bay is one of the most popular places in Sharm El Sheikh. The Sharm branch of this international establishment, truly lives up to the brand’s quality and atmosphere. The thing you’ll always notice at Little Buddha’s restaurant, is the way they serve their food. If you are one of those who believe that food is a full experience that involves the eyes, and smell before the taste, then you are in for a treat at Little Buddha’s.

Other than the sushi, Little Buddha’s restaurant also serves some quite fulfilling main dishes. Of those we recommend the veal mushroom steak, served with a pyramid of mashed potatoes and roast vegetables, or the Lamb chopsticks with basil dressing. If you’re more of a fish person, you’ll find their fish fillet to be remarkably fresh too. This Valentine, Little Buddha will offer a gourmet Set Menu dinner followed by their famous dessert buffet and decadent Chocolate fountain and even a live violin player, for the price of 500LE per couple including a glass of wine per person. The Raddisson Hotel is quite a drive for those living near Naama bay. It is located at the end of Nabq, but once you’re there you feel that it was worth the drive. It is a huge hotel, that has been attentive to every little detail, So is the white Elephant restaurant, inside the Raddisson’s. The restaurant serves far eastern dishes; Thai, Chinese, and Japanese food, with exceptionally MIX February 2013

fresh sushi rolls. Even though the restaurant is not a place to go if you’re looking not to spend too much, the portions are fulfilling. The white elephant might not have a natural view, but the inside décor with the rich wooden floors and mood changing music, will give you the opportunity to give your partner an exclusive romantic dinner, enjoying all the far eastern specialties.

Sails Lounge The Four Seasons’ newest seashore dining experience. “Sails” lounge hangs on the side of the cliff, protuding into the sea, truely offering an unmatched open sea view. The restaurant offers Asian cuisine with some of the most qualified native chefs. Exactly what you expect from the Four Seasons, the service is impeccable and the food right on the mark. In a setup like that, taking your date there requires minimum talking skills to impress. Silk Road When it first opened, this restaurant had upped the bar in terms of quality in Sharm and for great cooking it’s not that pricey either. Grand Rotana’s Silk Road has three separate open kitchens that serve Asian cuisine from Thailand, India and China in addition to a few less spicy non-Asian dishes, served for those with less tolerance to spicy food. The open-kitchens and being able to watch the preparation only add to the ambiance. If you are into seafood, all the prawn or fish main courses are consistently fresh and perfectly cooked. The setting and light background music will surely create the right mood for a memorable romantic night.

Budget Alternatives Sadiki You don’t always need to spend too much in order to take your date or partner for a romantic outing. In fact, a lot of times the simpler less exaggerated places offer much more tham high end venues. Sadiki is one of those places. Located right at the edge of the Hadaba cliff, Sadiki has a good choice of Italian dishes, and arguably the most fantastic view the whole coast line. It is also one of the best places to go for a tasty, authentic Italian pizza. The place doesn’t serve alcohol, but you can get your own bottles. Farsha Another low budget “thoughtful” place to take your date is the coffee shop and restaurant called Farsha. Located right next to Sadiki, Farsha also overlooks the cost-line from the edge of the cliff-top. The place however, has a much more layed back setting. DJ Profile Chadash Cort Chadash Kort, otherwise known as Korsha, has worked with Dolce Vita for roughly 3 years now, keeping the party pumping with Dolce Vita every Wednesday. The party takes place deep in the desert, and has always been famous for its distinctive setting and lively music. Korsha, also lays his mix at Taj Mahal, the worldwide club & restaurant brand, in Hadaba every Friday. Like many DJ’s, Chadash is also a music producer. He has his own record label “Cort Records”, and has worked with many worldwide known artists such as Jad Shwery and Samo Zein. With Samo Zein Chadash has recently (about 5 months ago) worked on Samo’s new song “Betehlawi”. By the end of February Chadash will be working with Jad Shwery, shooting a new video in Beirut. Originally from Turkey, Chadash was announced the number 1 DJ in Turkey for 2010 / 2011. He has been interviewed by Black hole records, one of the biggest record companies who own the “Tiesto” label. The uprising DJ gets plenty of support and is promoted by a number of star DJ’s such as Roger Sanchez, who plays his music and proclaims Chadash on his music show “Release Yourself” playing all over the world. With a Bachelor’s degree in Business management, it makes you wonder how Chadash ended up in the music world. But as many DJ’s, he was first introduced to the sound mixer and the Vestax spinner by coincidence. His neighbor used to work as a DJ and took Kort to many of the parties he played at. Slowly Chadash was able to pick up on the game, and found his hidden talent mixing and blending music, until he finally started adding his own beat and tempo with his own rhythm to trample his own recording logo. Currently, Chadash is not only Dolce Vita’s resident DJ, but he is also the media manager for Maxima, the owning company of Dolce Vita, handling and organizing all events and parties with his team there. rriving to our interview in her boxy car with a trunk full of newspapers, Lusine Grigoryan is hurried, like she usually is, to catch her next appointment. Working for the Russian newspaper “MK World Weekly”, Lusine is responsible for covering all the events and news that happen in the city, sharing information about the resort, which would be useful for both tourists and residents. She is also responsible for the sales of advertising and the distribution of the newspaper, which explains the boxy car and the trunk full of MK’s. MK newspaper is a well-known name in Russia, its international edition, called «MK World Weekly» (which beside Egypt exists in Ukraine, Latvia, Estonia, Kazakhstan, Kyrgyzstan, Greece, Germany among other countries) all present a selection of the best for a week of world and Russian events, in addition to the local news and cultural information for the country it is published in. In Egypt, the paper has distribution in Hurghada and Cairo, besides Sharm El Sheikh. “We try to satisfy both the needs of Russian speaking tourists and residents living in the resort. Giving them the

necessary information about the country in which they reside. In each issue, among other things, we lead section of questions - answers with the consulates of Russia, Ukraine and Belarus.” Says Lusine. “We try to acquaint readers with the cultural traditions of the country, customs and laws in which they are located. We act as a link with the life of the Russian-speaking community” she adds. Born in Armenia, at the age of three her family moved to Moscow where Lusine grew up speaking both Russian and Armenian as native languages. With time Russian became her first language by far, at university she studied to become a teacher of Russian language. On a visit to Sharm in 2002 (which cost her USD 250 for two weeks in a five star hotel) Lusine fell in love with Sinai, moving here permanently in 2004. First working as a Russian teacher, then in 2007, she joined MK, to finally realise her dream of being a journalist. “The hardest thing about my job is finding enough news in Sharm El Sheikh, not much is happening here every week” she explains, but “the weather, the desert spirit, and the Sinai mountains, are just breath taking. Until now when I am driving I cannot stop watching them!”
