Many, especially our aforementioned republican colleague, will argue that with such privilege comes the responsibility of accepting the paparazzi’s unrelenting prurience, that when hundreds of thousands of people have lined the streets for hours to share in your special day (and an estimated two billion in front of TV screens around the world) your every move becomes public property. It is a legitimate argument and one presumably shared even by some fervent monarchists. In that sense, it is not unreasonable for Clarence House to ask for restraint from the press, especially the less salubrious tabloids. At the same time, though, it is reasonable for us – everyday people who live hard-working and responsible lives – to expect more accountable behaviour from the royals than we have become accustomed to in recent times. The following family favourite takes a bit longer to make but can be prepared well in advance and is another refreshing dessert, especially if you are preparing several choices for a dinner or lunch party.

It is also very trendy to fry strawberries. Simply heat a tablespoon of butter in a frying pan, add a kilo of fruit, washed, hulled and sliced if necessary, and stir for a few minutes. Then add the zest of (%)/4",%"'%"'(,1/%(,.%+$-%Q7+;/5%(%)+$$)/% sugar and, if you fancy, an optional dash of liqueur. Mix well and allow to cook for a few minutes until the liquid thickens slightly and serve immediately, alone or with ice-cream or cream.

Nothing preserves a fruit’s natural nutrients, shape and colour like micro-poaching. Try this recipe with peaches and you will be repeating it with other fruits.

(This removes the bitter taste.)

High on the list are strawberries, which are still available in the merry month of May. They are so easy to turn into a delicious but easy and quick dish. Apart from strawberries and cream, have you ever tried sprinkling sliced strawberries with wine (dry, sweet or bubbly), sherry, champagne or an orange liqueur such as Cointreau? And have you every tried sprinkling sliced strawberries with bal-(4+;%B+,/1('%"'%)/4",%Q7+;/%(,.%)/4",% zest? Try it and you will be delighted with the result.

Peaches are well and truly in season at present. Remember that when buying peaches they can spoil quickly so it is best to only buy what you are 1"+,1%$"%7-/<%W""A%#"'%3%'4L&%/-8/.%*/(;8/-%>+$8"7$% bruises and avoid any with green areas as this means they were picked too early and will never be as sweet as they should be. If you do end up with any hard, unripe peaches, store them at room temperature until they become soft but keep the ripe ones in a plastic bag in the refrigerator, where $8/0%>+))%)(-$%#"'%7*%$"%3%B/%.(0-<%%

Ingredients: (serves 4) 4 oranges 2 tablespoons brandy 225 gr sugar

Now how about a fruit salad combining a variety of fresh fruit? The following recipe also uses a tin of peaches – you know, the one that has been in the store cupboard for too long! Combined with fresh fruit it can make a great dessert with a difference

SPICED FRUIT SALAD Ingredients: (serves 8) 455 gr tin of peaches in heavy syrup :'2&33-;"3'.#&2*.'<-!!%"=7' 5 cm long) ¾ teaspoon ground allspice 2 large oranges 2 large grapefruits 1 small pineapple ½ kg strawberries 3 kiwi fruits 2 tablespoons chopped crystallised ginger s%i'(+,%$8/%-0'7*%#'"4%$8/%*/(;8/-%+,$"%(%-4())%-(7;/*(,%(,.% place the peaches in a large bowl. Add the cinnamon and spice to the syrup and bring to the boil. Then reduce the heat to low and simmer for 10 minutes. Remove the syrup mixture and set aside to cool. s%U'($/%$8/%*//)%#'"4%",/%"'(,1/%(,.%-/$%(-+./<% s%Z/4"B/%$8/%*//)%#'"4%$8/%"'(,1/-%(,.%1'(*/#'7+$5%;($;8+,1% $8/%Q7+;/%+,%$8/%*/(;8%6">)5%(,.%;7$%-/;$+",-%#'"4%$8/%"'(,1/-% and grapefruits between the membranes and add to the peaches. s%27$%$8/%-A+,%(,.%;"'/%#'"4%$8/%*+,/(**)/%(,.%;7$%$8/%#'7+$% into two to three-centimetre chunks. POACHED PEACHES Ingredients: (serves 4) 2 tablespoons of peach "%'"#0+%'(%$&#58'-9"$%+4' liqueur 1 teaspoon lemon juice few drops of vanilla essence 4 ripe peaches halved and pitted

Finally, consider freezing seasonal fruits for future use. Though it takes very little time, fruit must be frozen properly – otherwise the end result is that nasty mushy goo that sags its way out of the freezer and puts us off trying again!

The best way to freeze berries such as strawberries and raspberries is to rinse them, dry them well and space them out in a single layer on a baking sheet. 1. THOU SHALT TAKETH THE PROPER EQUIPMENT To take the right equipment to the golf course you need to know certain rules and etiquette. The rules limit the number of clubs you can have in your bag to 14. There is no minimum number of clubs you can have, but borrowing clubs from your playing partners is not a good idea. Borrowing clubs during a round is generally against the rules in most cases. So it’s best for beginners to simply make sure they have all the clubs they need, up to the maximum of 14. Even if you’re not playing strictly by the '7)/-%0"7'%3'-$%$+4/%"7$5%0"7%.",N$%>(,$%$"% be annoying your playing partners by borrowing their equipment. You will also need balls, tees and a pitch mark repairer. Any ball that lands on the green from above will leave a pitch mark. It is essential to repair these as you make them.

2. THOU SHALT NOT BE LATE For most rounds of golf you play in Mallorca you will be required to reserve a tee time. You can get a tee time by calling the golf course you want to play and requesting a -*/;+3;%$+4/<%i/*/,.+,1%",%$8/%$+4/%"#% year and how busy the course is you may have to book well in advance to get the time you want. Once you have made the reservation, keep it. Make a tee time then make the tee time. Plan to get to the golf course at least 30 4+,7$/-%/(')05%Q7-$%$"%6/%-(#/<%f#%(%$//%$+4/% is missed, your group might lose its spot and have to wait around for another opening, which can take hours on a busy day. So, while tee times are not always required, it’s a good idea to have one. And, if you get to the course early, spend the time wisely by hitting a few balls on the driving range and putting on the practice putting green. 3. THOU SHALT OBSERVETH THE DRESS CODE Many golf courses will have a dress code. Find out what the dress code is at the course you’re playing and dress appropriately or follow these simple rules. A pair "#%F/'47.(%-8"'$-%"'%Q/(,-%(,.%(%;"))('less shirt will almost always NOT meet the requirements, but it’s a good idea to check

beforehand. Tailored shorts and polo shirts are always acceptable. Golf shoes are usually not required but training shoes are a good idea if you don’t have golf shoes. If you have golf shoes then 4(A/%-7'/%$8/0%8(B/%?-"#$%-*+A/-@%(,.%,"$% metal ones. Golf gloves are optional.

4. THOU SHALT NOT TEE OFF FROM THE WRONG PLACE On the tee you must place your ball between the tee markers, either even with them or up to two club lengths behind them – never in front of them. Tee markers are usually small coloured balls or some other similar indicator. For example, if you’re playing from the yellow tees then look for any markers painted yellow. O/'/%+,%J())"';(%0"7%>+))%3,.%$8+-%-0-$/4%+,% use: white – Professional; yellow – amateur men; red – women.

THOU SHALT RESPECT YOUR PLAYING PARTNERS AND THE ORDER OF PLAY =8/%*)(0/'%>8"%8(-%$8/%?8","7'@%*)(0-%3'-$% #'"4%$8/%$//<%X,%$8/%3'-$%$//5%$8+-%;(,%6/% decided randomly or the best player (lowest 8(,.+;(*n%;(,%*)(0%3'-$%(,.%-"%",<% On the following holes the player with the 6/-$%-;"'/%",%$8/%*'/;/.+,1%8")/%1"/-%3'-$% from the tee box, the second best score goes second, and so on. Ties carry over to the next tee, so you keep your place in the order until you beat someone on a hole or lose to someone. =8/%?8","7'@%./$/'4+,/-%>8"%$//-%"##%3'-$% but what about the order of play on shots from the fairway, green etc.? He who is ?(>(0@%)/(.-%$8/%>(0<%=8/%*)(0/'%>8"%+-% #('$8/-$%#'"4%$8/%8")/%()>(0-%*)(0-%3'-$5% from any position on the golf course other than the tee box. The exception is when all members of the group have agreed to play ?'/(.0%1")#@5%4/(,+,1%8+$%>8/,%'/(.0%:*'"viding it is safe to do so). Ready golf can be played when a group is trying to speed up a round. 6. THOU SHALT PLAY IT AS IT LIES One of the fundamental principles of golf is an idea that much of the rules of golf are 67+)$%('"7,.G%?H)(0%+$%(-%+$%)+/-<@%I8($%$8($% means is pretty simple: don’t move or touch the ball! Where it comes to rest, whatever state it is in, you most likely have to play it (-%+-%"'%?.'"*%+$@%7,./'%*/,()$0<% There are exceptions spelled out in the rules of golf but you don’t need to concern yourself too much with these at the moment. If you are not sure what to do (-A%0"7'%*)(0+,1%*('$,/'-<%=8+-%+-%0"7'%3'-$% round of golf and they won’t expect you to know everything. If you are not sure what to do and if you want to play by the rules, don’t move the ball, don’t touch it and don’t pick it up unless you are certain that you are allowed to do so under the rules. One exception that is always in place… You are allowed to pick up and clean the ball when it’s on the putting surface, the green. Mark behind the ball with a coin or ball marker before picking it up and be sure to replace it in the same position before lifting the marker. 7. THOU SHALT FOLLOW THE CORRECT RULES FOR OUT OF BOUNDS AND LOST BALLS Out of bounds should be clearly marked around the golf course, usually through the use of white stakes or white lines. The */,()$0%#"'%8+$$+,1%+$%?XF@%+-%-$'"A/%*)7-%.+-tance: that is, add one stroke to your score,

then go back to where you hit the shot from and hit it again. Of course, that takes time. At busy golf courses you won’t have that time because there is likely to be a group behind yours waiting to play. So, when you think you’ve hit a ball out of bounds, you’ll need to play (%-/;",.%6())%:;())/.%(%?*'"B+-+",()@n%$"% (B"+.%8(B+,1%$"%'/$'(;/%0"7'%-$/*-%+#%$8/%3'-$% ball really is OB. Make sure you announce to your playing partners that you are hitting a provisional, then re-hit after everyone else has hit. f#%0"7%3,.%0"7'%3'-$%6())%(,.%+$%+-%(;$7())0%+,%6"7,.-5%$8/,%0"7%*)(0%$8/%3'-$%6())% and pick up the provisional ball, as it is no )",1/'%+,%*)(0<%f#%0"7%;(,N$%3,.%0"7'%3'-$% 6())5%"'%3,.%+$%"7$%"#%6"7,.-5%$8/,%*)(0%0"7'% provisional ball. The exact same rule applies to balls that are lost. If your shot goes deep into the >"".-%"'%-"4/>8/'/%+$%4(0%*'"B/%.+#3;7)$% $"%3,.5%*)(0%(%*'"B+-+",()<%=8/%*/,()$0%#"'%(% lost ball is also stroke plus distance. For example: tee shot goes OB – count 1, tee up again – count 2, hit again (your third shot). Balls hit into water are treated differently, as you will see later (Commandment 9). 8. THOU SHALT NOT PLAY TOO SLOWLY Slow play has always been an issue on the golf course, and it’s even more important as a beginner to be aware of your pace of play. You don’t want to keep golfers behind 0"7%>(+$+,15%Q7-$%(-%0"7%*'"6(6)0%.",N$%>(,$% to be kept waiting yourself by slow groups ahead. Always be prepared to play when it is your turn to hit. Don’t wait until it is your turn to decide which club to use, or to start looking at the line of your putt. Use the time

while others are hitting to make those decisions, so that when it’s your turn you can step right up and play. If your group is slower than the group immediately behind yours you should stand aside and call them through. It is good etiquette to allow faster groups to play through. Not all groups will want to do this, but many will and they will be very grateful for your show of etiquette. It is important to -$(0%Q7-$%6/8+,.%$8/%1'"7*%+,%#'",$%(,.%,"$% Q7-$%+,%#'",$%"#%$8/%1'"7*%6/8+,.< 9. THOU SHALT OPT FOR A DROPPED BALL AT WATER HAZARDS Water hazards should be clearly marked on the golf course. Yellow stakes or lines indicate a water hazard. Red stakes or )+,/-%+,.+;($/%(%?)($/'()@%>($/'%8(S('.%:$8+-% type generally runs alongside, rather than across, the line of play). You can try to play a ball that is in the water, but that’s usually a bad idea. Instead, for ?'/17)('@%>($/'%8(S('.-5%$(A/%(%",/L-$'"A/% penalty and drop a ball at any point behind the spot where your original ball crossed into the water hazard, but on the same line of play. For lateral water hazards, drop within two club lengths of the spot where the ball crossed the margin of the hazard (no nearer the hole), or on the opposite side of the hazard at an equidistant spot. 10. THOU SHALT COVET THY COURSE AND BE SAFE

Always repair your divots on the fairway. Divots are the chunks of turf sliced off (or dug up) by iron shots. Repairing a divot might mean picking up the sod that you’ve chopped up and placing it back in the resulting hole or it could mean pouring sand or seed into the spot of the divot (if provided). Always rake sand bunkers after you’ve hit your shot to smooth out the sand so that following golfers don’t have to play out of your footprints. Always be aware of other golfers on the course, especially during your swing. Golf clubs can do serious damage if they strike another golfer, and so too can golf balls at close range. Don’t play your shot until the group ahead is out of range.

He moved to Mallorca last year and now with his partner, Bea Esparza, runs Ondine Escape, which offers unique recreational experiences both in and out of the water. Brad designed the Shark Discovery Day at Palma Aquarium, featuring a rare opportunity to dive into The Big Blue, the Aquarium’s enormous tank, which holds several Sand

Tiger, Sand Bar and Blacktip Reef Sharks. Recently seven novice divers, including myself, went into the tank to bring attention to the fate of the shark. ?f$N-%,"$%$'7/%$8($%/B/'0%$0*/%"#%-8('A%+-% dangerous. He wanted to make a movie about them and their relation to humans. We decided to collaborate together with Debora from the Palma Aquarium and we hatched a plan to put ‘normal people’ in the shark $(,A<@%f$%$7',/.%"7$%$"%6/%(,%7,#"'1/$$(6)/5% magical experience, which is what Ondine Escape specialises in. The new divers (Alex, Nicky, Tom, Stroud, Carol, Duncan and myself) were given one to one diving tuition, in the Reads Hotel indoor pool and in the sea using Ondine’s top of the range equipment. I also like to see springtime as a new day, a great opportunity to open our hearts. Spring is the time for love because love makes us all blossom. So this month I want to feature those who are still in love, married or about to tie the knot.

Springtime has truly sprung and some of you probably chose to do a little spring-cleaning over the Easter holiday – but have you ever thought about extending this to your makeup bag? There are so many products available $"%7-%$8($%>/%-//4%$"%1/$%-7;A/.%+,$"%$8/%,/>%?47-$L8(B/% *'".7;$@5%$8/%?,/>%;")"7'-%"#%$8/%-/(-",@%"'5%+,%4"-$%;(-/-5% pretty packaging (you know who you are). We end up getting bogged down by things we don’t really need or use on a regular basis, mixed in with an array of products we have collected over the years. Time goes by, new products emerge and we end up going around in a cycle, collecting more and more beauty items along the way. The maximum shelf life of most cosmetics is six months to two years and continuous use out of date items can actually cause you harm. Mascara, for example, should be changed every three months as bacteria builds up in the tube and can cause all sorts of nasties!

FIRST THINGS FIRST: recognise old makeup products. If the writing on the package can’t be read or it smells bad, it needs to go!

Lipsticks and glosses generally last for up to eight months. You will know if yours is past its best because it will smell and taste bad. Glosses tend to separate and change colour. Oil-based foundations will give you about eight months of use, whereas water-based ones will give you up to a year. Make sure you pay attention to the tools you use to apply your foundation. Sponges and brushes should be washed on a regular basis with a mild shampoo and warm water; otherwise 0"7%('/%Q7-$%)+$/'())0%-4/('+,1%6(;$/'+(%('"7,.%0"7'%#(;/%",%(%.(+)0%6(-+-%K% yuk! Be sure to store them out of direct sunlight, somewhere dry and cool.

Blushers and powders have the longest shelf life of about two years, and this also applies to eye-shadows. When you have removed the rubbish from your makeup bag it’s time to think about the fun part: what to replace it with! Now I’m not a fan of having copious amounts of products in my bag, even as a makeup artist! I am more in favour of multi-tasking products that help lighten the load rather than weigh you down. There are some fabulous products to choose from at the moment. Some of my favourites include: Mac tinted moisturiser – lighter coverage for summer and moisturises as well as giving you coverage.

THE DEATH OF AN OLD FRIEND

I heard recently that those who pronounce on such things, in this case a small group of language experts sitting in leather armchairs in a small, dusty, cosy room in Oxford, have decided to change our lives forever. They have declared the APOSTROPHE dead. Rather curiously they quoted, ?f$N-%,"%)",1/'%"#%7-/<@%:M;$7())05%f% heard about this quite a while ago but $+4/%&%+/N-5%."/-,$N%+$wn% While accepting the offence caused to the linguistic purist by the wanderings of this tiny squiggle and feeling sorry for all those innocent words with apostrophes falling on them from the skies (they don’t even know where they will strike; some words have actually been seen being split into two by a particularly vicious attack), I can only vouch for the years of pleasure that the roaming apostrophe has given me. To me they’re like gaudy decorations found in unexpected public places. They pop up everywhere and never fail to bring a quietly superior smile to my face. I’ve seen them on the facade’s of posh buildings, in vicars’ newsletter’s, and even on the pages of respected broadsheet’s.

But nowhere are they found in such profusion as on the Spanish Costa’s. O">%47;8%4"'/%/,Q"0(6)/%+-%H(4% (,.%E/B-%P7))%h,1)+-8%F'/(A#(-$%>8/,% laced with 3 x fried egg’s, 2 x sausage’s, baked bean’s? And would it really be the same if not accompanied by two tea’s? M*('$%#'"4%$8/%)"--%"#%-7;8%(%Q"0"7-% bauble hanging on our language, I’m puzzled to know what will happen to that vast store of apostrophes waiting to descend on the menus of restaurants and the pages of newsletters. So, in order to save these old friends, I’ve decided to start a club. I shall call +$%?M*"-$'"*8/-%}ZN%D-@<%M-%+$-%#"7,./'% president, I will immediately propose a cunning plan to preserve our friends. Instead of inviting sanction by parading at the tops of letters in the clear view of everyone, apostrophes will henceforth hide lower down and call themselves… commas. Six months later the alarm clock was ringing at 4am again and I was back in the proverbial saddle co-hosting the breakfast show at Century Radio in Manchester. The Prince William pub in Magaluf (named after the royal when he was born in 1982) held an alternative royal wedding, with guests dressed for the occasion. GOLFERS’ HELP FOR HEROES

Fairline South Mallorca held their annual golf tournament at the Santa Ponça I course under the direction of golf pro Peter Ledwidge. The Texas scramble competition with teams of four was followed by a late lunch and prize-giving on the terrace of the Santa Ponça Golf Hotel. The event was a fund-raiser for the charity Help For Heroes.

CRICKET BATTLE FOR CHARITY

Three cricket teams did battle at the Mallorca Cricket Club on Easter Sunday to raise money for Help For Heroes. The MCC, a team of ex-servicemen and a Yachties 11 competed in a round robin match Tri 20/20 overs tournament.

Where is your favourite place in Mallorca? We actually both agree! El Toro. Nice little village size, village life, still so much Spanish character. Port Adriano is a nice charming little (well, not so little any more) port, and the scuba diving is brilliant there, with the natural reserves of El Toro and Malgrats. Chicken Shed, an old little bar by the sea, was often referred to as â&#x20AC;&#x153;our favourite place in the worldâ&#x20AC;?. How much time are you connected to the internet each day? We spend quite a lot of time connected each day since our business is internet-based.
