This edition contains no history but it is a collection of happy positive items. Hope you enjoy. When we were young (many years ago) there was a western serial at the movie theatre called “Cody of the Pony Express”. Cody’s motto was that the mail “must get through, rain or shine”. Thankfully we have our own “Cody’s who will still be delivering our mail daily along with our internet purchases. Unlike the Southern cities that are retrenching mail delivery personnel our Mount Morgan Post Office will NOT change or close. The same services will still be available like paying all your accounts, buying your books and presents and the greeting from Ian and Keri will be as pleasant as always. What a pleasure to live in little Mount Morgan and not have any changes. Talk about the wonderful coverage of late in the Morning Bulletin and Rocky Life it makes Pride in Your Town so happy to read such complimentary words of our town and especially the Big Dam. It endorses our motto “Think Clean – Be Tidy” is the easy way to go to have cleanliness in our streets and of course now we must also look after our Range. It is little effort to use the Bins. Keep up the good work everyone. Many of our readers will remember Doctor Tom Moore who practised in Mount Morgan on two occasions. Well this is about his son, Stephen. Stephen was born in Saudi Arabia in 1983 and after a short time in Ireland he came with his Dad and family to Mount Morgan at the age of 5 years. Stephen has had a successful career in the Rugby Union sport. Firstly in 2003 and 2004 he represented Australia in the junior team. He then made he debut in 2005 in to the Wallabies and in 2011 when Australia defeated England he won the “Man of the Match”. Now 2014, he is Captain of the Wallabies in the three test series against France. Sadly in the first test he had an ACL knee injury and has been sidelined. However he hopes to regain his health and Captain the Wallabies in the 2015 international series. Stephen in two of his interviews said that his career started while he was living in Mount Morgan. What a boost for local Rugby. Good luck Stephen for future success. A couple of inspiring quotes to finish. 1. Do not regret getting older. It is a privilege denied to many. 2. Mount Morgan High receives a visit from Governor of the State

Mount Morgan State High School students were privileged to host a visit last week by the Governor of Queensland, Her Excellency Ms Penelope Wensley accompanied by her husband, Mr Stuart McCosker. Upon arrival at the historic school entrance (now utilised as the office) Ms Wensley was greeted by acting School Principal, Mrs Dorothea Jensen, School Patron, Mrs Irene Sturgess and School Captains: Billi Jansen and Whitney Tull. Fascinated by the proud legacy Mount Morgan boasts as one of the oldest secondary school sites in Queensland, Her Excellency was treated to commentary about the school buildings and their history by senior tourism students: Natasha Wyvill and Isabella Rudolph. Sharing with her our school memorabilia including artefacts from 1912, when the school opened, as well as significant historical records and photography that highlight the amazing journey of Mount Morgan State High School. Hearing about how the current school office building was once used as a hospital to care for people infected by the Spanish Influenza, through to appreciating the local red bricks used to create our school, Her Excellency was captivated by our rich history. Our hospitality students: Thea Hayes and Faith Rankin along with their hospitality teacher Mrs Lyn Porter served up a delicious morning tea in our dining room where Her Excellency offered the school with a token of her appreciation - a beautifully presented book that contains imagery of the iconic Government House in Brisbane. Inscribing a message of gratitude, the book will make a welcome addition to the foyer of Mount Morgan State High School.

Community provides a helping hand through Rotary project
If you’re anything like this writer, then it can be hard to imagine the complexity of challenges one would face living without the use of two hands. Sure, the odd injury has provided me with temporary understanding in the past, but it is almost impossible to fully appreciate being in this position on a permanent basis. According to local resident, Shelby Pridemore (pictured right), the reason I find this so difficult to imagine, is because I have always known the benefits of using both of my hands. For Shelby however, doing things one handed is something that comes completely natural. Born without a right hand, Shelby has mastered what most of us would consider near impossible. Nothing short of inspirational, Shelby faces everyday and all of its challenges with seeming ease. What this amazing 11 year old believes wouldn’t be so easy however, is being faced with this unexpectedly. This thought was one of the main motivators for Shelby to take part in the Mount Morgan Rotary Club’s latest project. Shelby was one of 22 locals who took part in the “Helping Hands” Workshop last Saturday – a Rotary Australia Project that sees the construction and delivery of prosthetic hands to landmine victims around the globe. “My mum read the story in the Argus about what the Rotary Club was doing and thought it would be a good idea to help,” Shelby said during the morning. “I liked the idea, it seemed like a good trade because someone made a hand for me a while ago. I thought it would be nice to make one for someone else.” Shelby said although she personally prefers to not use a prosthetic hand for the time being, she believes each created on the morning will be well appreciated. “Well I’ve always known doing things this way and I think it’s actually harder to use because I’m used to not having one and I don’t really notice how much different things would be,” Shelby said.
“But for the people involved in the accidents, they would have to learn from scratch. It would be like starting over because they’ve learnt how to use their hand, and then they just can’t.” The morning’s workshop was hosted and funded by the Mount Morgan Rotary Club and saw the construction of twelve prosthetic hands. Comprised of 38 pieces, each hand took around two hours to be completed. Shelby helped to make one of the twelve prosthetic hands during the morning. “I think it’s very fortunate for these people involved in the accidents, that other people have volunteered their time to help them live a better life,” Shelby said. “I think they’d be stressing because they can’t do what they used to be able to do. All of a sudden they just can’t anymore, so it’s really cool they can have the opportunity to get one of these hands.” Now completed, the 12 hands will be sent overseas to assist landmine accident victims in Cambodia, Laos, Vietnam, India and Thailand. Each will be delivered to their recipients by RAWCS Project volunteers, along with messages from the Mount Morgan group and each of the hand’s constructors. President of the Mount Morgan Rotary Club, Del Rowley said she was thrilled by the support received by the community and sincerely thanks all for getting behind the project. “A big thanks goes to all who came along and helped today,” Del said. “Our club members were joined by members of the community, members of the Mount Morgan Men’s Shed as well as Helping Hands facilitators from Rockhampton. “It’s been a real worthwhile project, and is great that we have been able to be a part.” Pictured top left: participants of the Helping Hands workshop with the newly constructed hands, and accompanying cases and letters. Range Road reopened
Winding your way round the bends of the Mount Morgan Range, it’s hard to imagine that until recently this site was undergoing major reconstruction. Following months of extensive planning and restoration works, the road is looking in pristine condition, and is now open to traffic once more. The Range was officially opened mid last Sunday morning, some 500 days after ex tropical-cyclone Oswald’s destructive move around the State. The impacts of Oswald saw more than 30 landslips occur along the Range, resulting in its temporary closure and the commencement of a major reconstruction project totalling more than $20 million. The official announcement of the road’s reopening was made last Wednesday, during a visit to the site by Minister for Transport and Main Roads, Scott Emerson and Member for Keppel, Bruce Young. “It’s great to be back here given where we were 17 months ago,” Mr Emerson said during the site’s inspection. “… To see the devastation on this road, with 35 landslips. I was told at the time that this was going to be a tough one – that there was going to be a lot of complexities to this, and they were exactly right.” Mr Emerson said the project had seen more than 70,000 tons of materials utilised to stabilize the road. Echoing Mr Emerson’s words on the complexities of the project, Member for Keppel, Bruce Young said the reconstruction had been a substantial engineering challenge. “We can remove debris from the road very quickly but in this instance the road slipped away and went all the way to the bottom,” Mr Young said. “And there was a significant engineering and structural build.” As well as intricacies of the reconstruction, Mr Young said the working crews faced additional challenges following further wet weather. “We had an event in June where we had a lot of benching done so that work could commence, and then we had a significant rain event which put us behind the eight ball. That was part of the challenges that were faced.”
A credit to the site’s working crews, the reconstruction project continued and was finalised last month. As well as the reconstruction works, complementary funding allowed for the full length of the range crossing to be resurfaced, and an extra guardrail to be installed to improve safety. The road was officially reopened by Mr Young and Federal Member for Flynn, Mr Ken O’Dowd at 10am, Sunday June 22. The morning’s opening paved the way for keen travellers from around the district to once again navigate the Stopford Way. One motorist to see the site’s changes during the morning was MG Car Club of Qld Inc. Coordinator, Gurney Clamp. Mr Clamp, along with members of the club (pictured below) travelled up for the occasion, following a special invitation from the Department of Transport and Main Roads. “We took well advantage of this great invitation and had 26 MG sports cars involved and also 7 Jaguar cars,” Mr Clamp said during the morning. Mr Clamp said he was impressed by the road and its improvements. “We were all really pleased with the outcome of the road with the reconstruction. It’s really beautiful to drive on. It looks like it has a rubber type surface on it and it is so much better than it was before. It’d be nice to come up on any sort of vehicle, or motorbike.”

Questions answered over plans to reopen Mount Morgan Mine
Since the closure of the Mount Morgan Mine, the site has certainly been no stranger to discussion of its reopening. With estimations of up to one million ounces of gold still within its tailings, it’s no surprise that over time this site has attracted the interest of mining companies around the country. Despite interest, past plans and testing have come to little or no avail. Though, it appears that this may all be about to change. Australian junior mining company Carbine Resources has recently announced their strong interest in seeing work at the Mount Morgan site commence. The Argus caught up with Patrick Walta, the Executive Director of Carbine Resources this week to discuss their plans. Argus: Firstly, it’s fantastic to hear of Carbine Resources’ interest in the Mount Morgan Mine Site. For those who aren’t familiar with the Company- what is Carbine and what are its projects all about? Patrick Walta: Carbine is a junior mining company, based over in WA. Our focus in on development of assets with complex metallurgy, and we’re targeting geologically derisked projects that require process de-risking. Argus: Carbine has recently made their interest in the Mount Morgan Mine Site know in the media. Overall, what is the company looking to do at the site? We’re really looking at the economic extraction of metals from the existing tailing resources at Mount Morgan, and by doing so, assisting with the environmental remediation of the site. We’re currently completing a scoping study and will then complete a bankable feasibility study for restarting operations. Our ultimate goal is to build a processing facility on the Mount Morgan site which will facilitate the extraction of metals and remediation. Argus: So in a nutshell, processing the tailings and also providing assistance to the Government in their aim to clean up the site. How does Carbine hope to do this? Patrick Walta: Quite simply, the historic tailings need to be reprocessed and relocated into a hydraulically isolated facility. The current tailings on site were deposited without any environmental regulation and as result they are having a significant environmental impact. With every shower of rain, water gets into the tailings and mixes with the sulfur containing pyrites of the tailings themselves. Sulfur and water combine to produce sulfuric acid, causing the natural leaching of metals which eventually end up in the Dee River. It’s a significant environmental issue.
What we do; we pick up the tails and put it through our processing circuit. We take out copper, take out the gold and then we float off those pyrites into a concentrated form – and that’s a saleable or at least containable product in itself. By doing this we can potentially create a tails from our process which is effectively benign. Certainly its significantly better quality then what’s there at present. And then on top of that, we’ll also be placing our tailings into a hydraulically isolated facility to mitigate future environmental burden. Argus: Norton Goldfields have been interested in carrying out this project at the site in the past. Will Carbine Resources be taking over this agreement? Patrick Walta: That’s correct. Norton were looking at developing the project, but in reality they weren’t successful in developing a flow sheet that could economically extract the metal. We’ve completed commercial arrangement with them whereby we progressively take over the ownership of the project. Argus: I’ve read in the media of late, that studies of the site have come back extremely promising. Are you able to provide details into what studies Carbine is looking into and some of the results this far? Patrick Walta: It’s a substantial tailings resource courtesy of 100 years of mining history which has left behind plenty of residual copper and gold – of up to a million ounces of gold and 60,000 ton of copper. The resource size has been there for years, that was confirmed by drilling from Norton and previous owners Moonraker. What we’ve focused on is the metallurgical test work which has been very promising. Our target has been to find an economic flow sheet and the major component of that flow sheet is reducing cyanide consumption. Continues next page:
9 Patrick Walta (continued): Cyanide is used to leach the gold, and naturally you want to use as little as possible to leach it out. Initial testing of our process has managed to reduce cyanide consumption by 80 percent compared to previous flowsheets. This is important as, in very rough figures; cyanide costs represent close to half of the total operating costs of the site. So you’re talking about an 80 percent reduction of approximately half of your operating costs – it’s a significant overall cost reduction.

Argus: So it really sounds like a win-win all round. I suppose from that, the next and million dollar question would be what is the likelihood of the mine restarting through this project?

Patrick Walta: Everyone needs to be aware that we’re just starting off on this journey and there are a number of hurdles that we have to get through. It’s not a guarantee just yet, but we are highly encouraged by the initial results.

We’re currently going through a scoping study to confirm the technical and economic value proposition and then we’ll immediately wrap that into a bankable feasibility study. That will allow us to raise the money required to build the plant. The plant cost will be in the tens of millions so it’s important that we can accurately determine the process viability via the bankable feasibility study.

Argus: With all going to plan, when does Carbine expect to see work commence at the mine? Patrick Walta: Based on our current timelines, we’re looking at being up in running in 2016. In saying that, that’s dependent on a myriad of tollgates to get through along the way. We are progressively building confidence and our initial results are highly encouraging, enabling us to proceed to the next phase of development. We hope by the fourth quarter of this year we’ll be able to release our scoping study and that will provide a fairly solid estimate of the technical and economical parameters of the project. This should give everyone the confidence of whether the project will proceed. Argus: And if all does go ahead, how many people do you think would be employed through the project, and would Carbine be looking to employ locally? Patrick Walta: Certainly, and that’s one of the major benefits. You’re talking about a reasonably significant mining operation somewhere in the region of a million ton per annum.

While we haven’t officially completed employment estimates, we would estimate in the region of fifty full time direct employees on site, and then indirect employees would be a multiple of that. The benefits to the town would be significant because we would need local people operating the facility. And finally, does Carbine have an idea of the lifespan of the project? Patrick Walta: We’re looking at least a ten year mine life and depending on further recourse definition, 15 to 20 years is not out of the question.

Whiskey Remorse gears up for Wendy Matthews Concert
The countdown is on for July 19th – the date we will see Wendy Matthews perform at the Mount Morgan School of Arts. It’s set to be a night of musical magic, with performances by the 7 times ARIA Award winner, plus some of the region’s very own homegrown talent. Among those gearing up for this event and set to perform on the evening are local musical talents Rachel and Mark Davey, and Troy Graham. The trio makes up Whiskey Remorse; one very impressive folk pop band who are making a name for themselves around the Region. Whiskey Remorse will be opening the night on July 19. The band said they are looking forward to the event and in particular, the event’s venue. “It’s going to be a good night,” they said. “We love playing the School of Arts. We played the School of Arts the year before in the Village Festival in July. We love the acoustics of the School of Arts.”
The upcoming gig follows an already exciting start to the year for Whiskey Remorse.
They’ll be performing Friday’s Child with Wendy Matthews and her band.
It almost seems an understatement to say it’s been a busy time for this band, who over just the past few months have welcomed new member, Troy Graham to their ranks, and performed in numerous gigs around the region and State. They have also been busily working toward the production of some new work – with a new single, and EP and an album set to be released in the upcoming year.
“We’re really looking forward to being part of such wonderful live show,” Whiskey Remorse said.

Teddy bears galore:
School Sports Day:
Last Wednesday, the Mount Morgan Primary School held an Under 8’s Teddy Bears’ Picnic.
On the 4th- 5th June, the Primary School held their sports Carnival.
Lots of students bought along their favourite teddy bear. The school had many activities available for the students to do. Face painting, teddy bear collages and puzzles were just a few.
The day saw many students wearing their house colours. All the children competed in lots of different events, including track and field events.
The students were also joined by the children of Red Frog 4 Early Childhood Education, who came along to enjoy the morning. The Teddy Bears’ Picnic follows a Pirate Day and Fairytale Day which have each been held by the school in celebration of the end of the term. Mrs Rosengreen organised the morning with the help of a couple of other teachers and teacher aides. A few of the Grade 7 students also helped with the morning. News from the Dee River Oldies Morning Tea at Welfare Bowls: On Wednesday May 21st our morning tea at the Welfare Bowls Club was enjoyed by everyone who attended. A great array of prizes was won from the mini cent sale. The lucky door prize was won by Lorna Bowden, and the raffle was won by Agnes Hoehne and Carolyn Read. A donation of $150 was made to Cancer Care.

From your State MP Mount Morgan Range now open for business
513 days after the range was severely damaged following ex-tropical Cyclone Oswald in January 2013, the wait is finally over with the Mount Morgan range open to traffic. The damage was severe, with 35 landslips occurring along its length, it took more than 70,000 tonnes of stabilising rock and materials to secure this key route that carries about 3000 vehicles per day.
Street Stall: The winner of the meat raffle at our street stall on Thursday June 19th was Sandra Boland. Thank you to everyone who bought tickets. Our next street stall will be held on August 15th 2014. Morning Melodies: Everyone enjoyed Little Patti at Morning Melodies on Monday June 23rd, followed by lunch at The Rocky Leagues Club again. A few of our members were on the sick list so couldn’t make it.
In addition to the reconstruction works, complementary funding enabled the full length of the range crossing to be resurfaced, and an additional guardrail installed to improve safety. I congratulate and thank the hard-working engineers and Transport and Main Roads crews for their enormous effort and a job well done, and thank all residents for their patience.
‘Operation Cool Burn’ Activated
The 2014 bushfire season is on the horizon and Queenslanders are being urged to get ready and take preventative action as part of Operation Cool Burn. Queensland’s bushfire season traditionally stars in late July/early August. As part of Operation Cool Burn local firefighters and fire management agencies have been out and about identifying bushfire-prone area, prioritising areas to conduct mitigation activities and engaging with local landholders to help reduce risk through activities such as controlled burns. You can play your part by identifying the fire risks on your property, taking action to reduce those risks and preparing a Bushfire Survival Plan. You can also contact the Rural Fire Service to organise a ‘Prepare Act Survive’ community information session. For more information visit www.ruralfire.qld.gov.au

Dealing with confrontation
There is no single ‘right way’ to respond to a confrontation or attack. Every situation is different. Your most effective weapons are your personal judgment and your commitment to preserving your safety. The response you choose should aim to best preserve your safety. This decision should be based on three factors: 1. Your personal strengths - Which of the response options are you able to execute? 2. The perceived motivations for the attack/confrontation - Is the offender attempting to steal property from you or assault you? If the offender is attempting to rob you, you need to question whether it is worth placing your personal safety at risk for the sake of property that can be replaced. 3. Environmental factors – Are there people around who could provide assistance? Where could you run to for safety? What could you use to defend yourself if necessary? Response options may include: escaping, e.g. by running away, negotiating with the offender, calling upon passersby to assist, screaming, handing over property, distracting the offender, calling police (triple zero, 000), physical self defence, doing whatever the offender tells you to, as you wait for, or create, an opportunity to escape. Remember, if the first strategy doesn’t work, try something else. Keep taking action until the threat is removed. Report the incident to police as soon as you can. You can help prepare yourself to deal with an incident prior to its occurrence by imagining possible safety threats and visualising how you would respond. Self defence and the law In Queensland, you have the right to physically defend yourself with reasonable force, provided the force is authorised, justified or excused by law. The law does not allow you to carry anything that can be described as an offensive weapon. E.g. mace or spray dyes, or items that have been specially adapted, such as a sharpened comb, or knife carried for the purpose of self defence. Self defence courses It is not necessary to attend self defence classes or undertake martial arts training to be able to effectively defend yourself. Each person has a survival instinct that acts to preserve their safety if threatened. A crucial factor as to whether a person can successfully defend themselves is their commitment to their safety. Even so, self defence courses remain an effective method of building confidence and commitment to safety. When deciding on self defence classes, consider these guidelines: • ensure the instructor delivers empowering messages rather than being fear inducing • check the qualifications of the instructor and obtain a referral, if possible • decide what you want to achieve from the classes. There is a difference between martial arts and basic self defence.
I must admit I was totally fascinated when watching a David Attenborough documentary the other day to find out we actually have such a thing in Australia as a marsupial frog! How cool is that? We not only live in the best country but really and truly have the best and most unique wildlife. This little guy (yep, it is a male) hangs around after his mate lays her eggs, staying on guard duty with her for 10-14 days. Then when they hatch the male takes over their care. He climbs among the eggs, covering himself in the jelly, so the tadpoles can wriggle into the pouches he has on the side of his body. Not all of the tadpoles can fit into his pouches, but the lucky ones are cared for by him , sustained by the egg yolk, for about 7-10 weeks. Then they wriggle out of his pouch as fully developed frogs, about 4mm long. Isn’t that fascinating? They are called hip-pocket or marsupial frogs and they live in the coastal ranges near the border of Qld and N.S.W. They hide amongst leaf litter, logs and fallen debris. They have a grey or sometimes reddy-brown back marked with darker patches. A dark line marks the sides between the lighter coloured back and their darker sides. Although they would not be found around here, I just thought they were so unique I had to share it with you. Not far from our house, as the crow flies, some very considerate locals have left a tree with some hollows in it in their backyard. Each year a pair of Pale-headed Rosellas nest in one of the hollows, and each year for some unknown reason, they always bring their babies over to our place. I love to watch and listen to them. We do not feed them., we do however have bird baths in our yard, and it just may be the parents are showing the babies where they can find water. It is wonderful to see people being considerate of the wildlife. We wish to say a very big thank-you to the lady who donated us some much needed carry boxes (many of ours are old and fragile); and also a really big thank-you to the Order of the Eastern Star for their generous donation.

Hi Argus readers, Well there’s now only two weeks left until the Wendy Matthews concert!! We are super excited for this event; it’s going to be a great night! Not only will there be performances by the very talented Wendy Matthews but there will also be some fantastic supporting bands! The lineup includes Whiskey Remorse, 3 Degrees (with lead vocals by former local Brendan Pearce) and the very talented Kate Leahy. Lock it in your diaries – July 19th! The concert kicks off at 7:00pm, with doors open from 6:00pm. Food will be available for purchase, and a bar will be operating.

We’ve recently had the privilege of being a host for Mount Morgan High School’s Work Experience Placement. Through this involvement, we had the pleasure of welcoming local student, Courtney Brown to our team. With an interest in journalism and creative writing, Courtney spent her week of work experience flexing her writing muscles and learning about what goes on behind the scenes in producing an issue of the Argus. Courtney did a fantastic job interviewing, photographing and writing. But don’t just take our word for it – be sure to have a read of her articles in this issue. We look forward to bringing you more of Courtney’s work in upcoming issues also! A big thanks Courtney for spending the week with us, it was a pleasure!
Out and about:
Along with gearing up for the Wendy Matthews Concert, we have also been out and about at a few regional events of late. Last Tuesday saw our Secretary, Del and Project Officer, Camille attend a civic reception in Rockhampton. This event was held by Rockhampton Regional Council Mayor, Councillor Margaret Strelow in honour of Her Excellency Ms Penelope Wensley, AC, Governor of Queensland – who was recently visiting the Region. The evening saw Del and Camille provided with the opportunity to meet Ms Wensley. Golden Mount Festival President, Dick Needham was also in attendance and had the pleasure of meeting Ms Wensley. It wasn’t just an exciting day for our team members however, but for a number of local residents. As you may have spotted earlier in this issue of the Argus, students and staff of Mount Morgan State High also had the honour of meeting Ms Wensley on Tuesday- when she paid a special visit to the High School!
Last week also saw our Project Officer, Camille head to the Capricorn Coast for the Capricorn2020 Tourism and Economic Development Forum. This event is hosted by Capricorn Enterprise and provides attendees the opportunity to get up to date information on tourism and economic development. This year’s event included a great lineup of speakers and special guests, each sharing personal experiences and successes.

As a final step in Australia’s successful move to digitalonly TV, all channels in Mount Morgan will be changing frequencies. The Mount Morgan TV transmitter tower is scheduled to undergo a channel change on July 2nd. After channels have changed, local viewers should retune their digital TV, set top box, or digital TV recorder to find the channels that have moved. If viewers are missing a free to air digital TV channel/s after the date, they will need to retune.
This is a bit of a glancing memory from my childhood when I was a baby Bogan. I know as hard as it is to believe, I started out as a baby Bogan. And as a little tacker my mum would make smoked haddock/cod in white sauce. We have a friend that tells me this is a truly “Bogan” classic. The funny thing is I used to like it and sometimes mum would put it in a baking dish and cover it with mashed spuds like a shepherd or cottage pie. So, I’ve taking that idea and put it into pastry and made a pie. I’m not sure what mum added in but mine tastes yummo. So here goes, please enjoy.
Shopping list:
• 3 fillets of Smoked Cod (the yellow coloured stuff) • 3 large potatoes - roughly chopped • 2 large carrots - thickly sliced • 3 med onions - roughly chopped • 1 full stick of celery - roughly chopped • 200g sliced mushrooms • 250 diced bacon • 2 cloves of garlic – crushed • ¼ teaspoon pepper (white) • ¼ teaspoon salt • 2 teaspoons of butter/marg • 750ml milk (whatever you use) • 300 ml cream • Cornflour water paste for thickening
How to make it:
Okay, to start- melt butter in large a pan (a 4 to 5 litre one) and add in onions and soften. Now add in the smoked cod a.k.a, smoked haddock. Add the milk, pepper and half the salt and bring the milk to the boil. Reduce heat and simmer for 10 minutes. Now remove the fish to cool so you can remove the skin and bones for later. Now add the bacon, potatoes, carrot, celery, mushrooms and garlic and simmer until potatoes are cooked. Add the cream and turn the heat up and thicken with cornflour paste. Now re-add the fish (which you have removed any skin or bones prior) and mix together. Now cool in the fridge for later, as using hot pie mix tends to spoil pastry and turns it into goop - not nice. After your smoked cod pie mix has cooled down, assemble your pie using puff pastry and pie pans. You could also fill a shallow casserole dish with this mix and cover with puff pastry or mashed potato (I just spray with cooking spray) and bake in 180C oven for 45 minutes or until pastry is golden brown. Serve with some oven baked chips and peas. Please enjoy this as much as I have recreating this childhood memory. And remember- Aussie Aussie Aussie Oi Oi Oi....
