rom years gone by Bali conjures up images of a holiday destination full with batik prints, thatched beach huts and bintang beer. This image has been blown away by a recent trip myself and Andrene; Sisters and Co manager, took to Seminyak, a beach resort area in the southern end of Bali. We got to experience some of the most stunning restaurants I have seen, amazing bars, great cafes and luxurious spas.
Motel Mexicola is a fun and raucous restaurant bar to go for a fun and crazy night out. Super colourful, super cheap margaritas this is the place to go for a good time.
Our first treat upon arrival in Bali was their much improved airport! The experience was so seamless and soon Andrene and I were speeding to our hotel. To be expected the roads were still a bit hairy, and I don’t know if there was one single road rule but this added to the adventure. We stayed right in the heart of Seminyak in a place called U Paasha, but the accomodation choices are endless! So here are our picks for what we found the best in Seminyak Bali.

RESTAURANTS + BARS
Petitenget Restaurant in Seminyak was hands down our favourite meal of the trip! The service is extraordinary and the food has a Balinese influence but a very European twist. A favourite with all the local hipsters, it’s a must for food and people viewing. La Lucciola is one of the most stunning and elegant beach-front restaurants in Bali – you simply HAVE to visit here. Sweeping lawns, open air two level wooden restaurant looking right over the ocean you could get swept away – and the food is sensational.

KU DE TA is the best sunset in town, and in my opinion the best bar. Amazing tunes, relaxed vibes, great food grab a crew and go and hang – my favourite bar in Bali! Café Bali right in Seminyak is a local institution and has a fantastic menu option form Asian through to Western. The salad nicoise I had is the best I have ever had and the dumplings were ALMOST as good as Jonnys. Earth Café is the raw food café that almost would have started the movement. It has been located in Bali in Seminyak for years and the food is STUNNING – there is a huge raw selection, fridges full of sweet treats, pages of smoothie and juice options and the best raw brown rice sushi ever – a must to visit. Potato Head Internationally renowned this stunning café/bar/ restaurant looking right over the Seminyak Beach is full of pretty people, great tunes, amazing drinks and great food!

With treatments such as Cool as A Cumber, Alloe Aloe and facials such as charcoal and Pepper Perfection which sooths away tired puffy eyes with a green tea oil massage there is so many options you will need to come back everyday! And the best news is this is owned by a New Zealander who also has spas in Wellington and Queenstown – one clever kiwi! Also try the traditional Balinese massage houses. For $10 you are clicked and twisted by massage experts and although the surroundings aren’t as luxurious the results are just as great.

Kim Soo home-ware is an exotic treasure trove of home-ware. Stacked with cleverly sourced plates, marble platters, cane baskets, Buddha’s coming traditional and new design that makes you want to book a container and take everything home! With its own café with the best smashed avocado in town, fresh juices and beer this is a must visit – and make sure you have a few hours you will need it! For Bohemian Chic head to Magali Pascal. This is the perfect blend of island living meets Parisian chic and with amazing embroidery, silks, beading and colours these high end designs add a touch of glamour to your holiday. Lulu Yasmin is another designer worth looking at. Slightly bohemian with influences from around the world, this is Hollywood meets Bali. MODE | HS 16-17

ANINE BING Inspired by the fusion of her Scandinavian heritage and American spirit, ANINE BING offers luxurious staples, wardrobe basics and statement pieces that are current and timeless.
T
ell us how you started Anine Bing, the fashion label? What is the concept and aesthetic behind your brand? I started the brand in June 2012. I wanted to create a modern brand that stepped away from traditional seasons, launching new collections every month. I have always been very true to my own style and I love an effortless look with a “less is more” approach. Naturally the lines share that same motto and the aesthetic is simple but where there is a lot of attention to details. The design, brand identity and essence of ANINE BING is rooted in a philosophy where opposites attract, and where a romantic expression meets an urban lifestyle. You are Mother of two, Blogger and Fashion Designer. How do you juggle all these roles and which is your favorite? I believe that all the different roles nurture each other. If I didn’t have my job and creative outlet I honestly don’t believe I would be the mother I am when I’m with my kids. These days my main focus is no doubt motherhood, designer and business owner. It takes up all my time and I have learned to be more focused on the tasks at hand. Meaning that when I’m at work I have a checklist of things I need to take care of that day and when I pick my kids up from school I set work aside until they’re asleep. Living in LA and running your global empire from LA looks like the ultimate dream to many. Have you always been an LA girl and what are your favorite things about living and working in the City? Yes, I have loved L.A since the day I first came to visit. I’ve lived here for 12 years now and the city makes me happy every day. I love the sunshine of course but I believe that the “good for you” attitude is what really makes me happy here. No dream is too big and there is room for everyone! With a busy day-to-day life and tight deadlines it can be hard to find time for the creative process. Where do you find your inspiration and how do you ensure you have the time and space to design? I love to travel and it always inspire me. I also love visiting flea markets and I try to go once a month. Old movies, magazines and music is also a great source of inspiration for me. Anine Bing has grown incredibly fast in the 5 years since its been established. Are there any key milestones that you think have helped you reach this point? I had a strong vision right from the start and there is a lot of hard work behind our success. But getting the attention from influencer’s and tastemakers in the industry has of course helped. awareness and invite customers into the world of ANINE BING. You work with your husband on a daily basis. How do you balance your work and personal life? We try to separate it as much as possible by not discussing work when we’re at home. But that’s of course hard but we’ve become better over the years. What does an average day of work look like for you? Do you have daily routines? We wake up around 6 am, have breakfast and get ready for school and kindergarten. I drop off the kids and go straight to the office where I meet up with my team. I focus a lot of my time on design but also in other departments like PR and Marketing, Production and Operations. After a busy day at work I pick up the kids or meet them at home. We play in the garden, do homework and have dinner, either at home or at a local restaurant in our neighborhood. After I’ve put the kids to bed I try to clean out my inbox as much as possible but then I try to go to bed early. A lot of sleep is key these days! Is there anything important you wish you had known earlier about business or life that you would like to share with people starting out? You have to take ownership and work hard for things. But make sure you do something that you’re passionate about. I think that is so important in order to succeed. What are your 5 essential items in your wardrobe for this summer (its our summer in New Zealand)? A great bikini, an off shoulder dress, a great pair of heels, a weekend bag for fun get aways and a leather jacket for cooler nights and days. Being in a band yourself who are your music heroes and what are you listening to at the moment? I always been a big fan of the Cranberries and they’re still one of my favorite bands. Who would you invite to your dream dinner party? My best friends and sister back home in Scandinavia since I never get to see them these days… Favorite Indulgences? Swedish candy. Being such an incredible style icon, what is one piece of fashion advice you can give our readers? Stay true to who you are and don’t complicate things. Keep it simple but invest in key pieces that will age well like a leather jacket and a great bag. I also love to accessorize with jewelry. It adds personality to an outfit and will make it all come together. Can you tell us any must visit spots in LA? Cafes, restaurants, sites, shops? Anything that the average tourist wouldn’t know? I love Chateau Marmont for the people watching, Restaurant Pace for the ambiance and food. I love Malibu in the fall when it’s still warm but less crowded. And you have to visit Rose Bowl - it’s my favorite flea market and you can make some amazing finds there. Also, don’t forget to stop by the ANINE BING flagship store on 8128 W. 3rd street in West Hollywood. What’s next for the Anine Bing Brand? We are in a very exciting phase right now where the company is growing and the business expanding. I’m so excited about what’s around the corner. Right now we’re working on the fall collection 2017 and I’m super excited about what’s coming.

History of the off the Shoulder Trend
The Cold Shoulder This summer the “it” item that everyone (including you) will be obsessing over is the off-the-shoulder look. From pretty tops with voluminous, ruffled sleeves to basic and easy to wear dresses, it seems exposed shoulders are the latest (and most flattering) way to show some skin. The spring 2016 runways may have been filled with shoulder-baring ensembles, but this trend has been on-and-off the scene since the mid 1800s. Couturier Charles Frederick Worth (a.k.a. the OG of Haute Couture) designed elaborate dresses, many of which featured bodices with off-the-shoulder sleeves. Brigitte Bardot put her own sexy spin on this look during the 1960s, wearing off-the-shoulder tops with everything from midi skirts to pants. BOHEMIAN HAVEN We caught up with Mount Local, Jo Beer to take a peak around her bohemian beach haven on Wells Avenue. Jo and her Husband Sean are part owners of Volcanic Hills Winery. Jo says at home there may be a shortage of milk or bread to make packed lunches but they have never, ever run out of wine. Jo is a Mum of three, and spends most of her days running the sales and organising delivery to the restaurants and outlets Volcanic Hills supply.
Tell us about your personal style, and how is it reflected in your home? Eclectic, bohemian. I am not into matchy matchy my mother has put me off that. This is reflected in our recent house renovation. We have wooden doors from Marakesh, a second hand blue velvet couch, a black kitchen, the house is painted white outside and we have lots of art all over the walls. It’s probably not everyones tastes but we love it – and if it gets a bit messy which with three kids it always does, it doesn’t matter! Where is your favourite place in the world and why? Marakesh in Morocco is definitely a favourite! I love the culture, the endless twists of narrow pastel-washed derbs, the souks and the artisian craftsmanship. Where do you look for inspiration? I love reading home magazines and anything home-ware inspired. What music would we expect to see on your playlist right now? Loving my 80s playlist at the moment much to my husbands horror! Where is your next vacation? Byron Bay in March with girlfriends I cant wait it will be so much fun. And it’s my first time there!

Who are your dream dinner-party guests and why? Dinner party with our secret book club – you know who you all are! What are your favourite wardrobe “cant live without” pieces? My bracelet from my husband, my sass and bide leather jacket and my jeans and my new earrings from Sisters from Rodelle and Andrene’s recent buying trip – I LOVE THEM! Where is your favourite place to dine? Coffee? Grinnys coffee hole by Tay Street – he’s always so happy to see me! What’s your favourite shop? Sisters – Rodelle would kill me if I said anything else! Who is your favourite designer? Isabel Marant. Who is your fashion muse? Talitha Getty. What is one thing we don’t know about Jo Beer? Most people don’t know the half of it ha ha. One of them is that even though my husband is a winemake I drink beer!

Karen Walker Karen’s signature energy and optimism define the label. Her designs cleverly play with cultural subtext, juxtaposing luxe and street, masculine and feminine, folk and utility, creating pieces that are both directional and wearable.

ell us about the inspiration for your latest collection Mujer? Mujer is inspired by female revolutionaries of the Spanish civil
war. When designing Mujer, what does your creative process involve? Where do you find your inspiration? Inspiration can come from anywhere and anything. When we’re working on a collection - eyewear, ready-to-wear, jewellery, whatever it may be we fully immerse ourselves in its story. We surround ourselves with the concept and the inspiration so that that’s the entire focus in the design room.

Being the country’s most globally recognised designer is such an amazing achievement. Is there any key milestones that you think have helped you reach this point? Our business is built upon thousands of small successes (and a few failures). The key ingredients to success, in any business, are hard work, good ideas, passion and surrounding yourself with people who get it. Your husband mikhail gherman is also the creative director of Karen Walker. Do you work together on a daily basis? How do you balance your work and personal life? Yes we do - I’ve never known anything else and I wouldn’t have it any other way. We try not to let work creep into home too much though! What does an average day of work look like for you? There is no such thing as an average day here. However when I’m in Auckland, I try to spend mornings in the design room focusing on the creative process, then deal with the business side and meetings in the afternoon. In an ideal day I have one hour of exercise also – yoga or tennis ideally but I can be swimming in summer or just an evening walk. How will you be spending your Christmas holidays? In my own backyard. By the end of the year I will have travelled almost 250,000kms on planes so the last thing I want to be do come boxing day is get on another flight! As a result, we always holiday at home. ell us about your personal style, and how is it reflected in your home? I like simple silhouettes, a ‘less is more’ approach to dressing and to my home. I like to create a calm environment at home so it is a sanctuary from a busy life, and I like to be able to wear fun playful shoes as the accent to a timeless outfit. Where is your favourite place in the world and why? Other than Mt Maunganui? hehe...Tokyo... the most fun, vibrant and colourful city. I have been over 20 times and still get butterflies landing in Narita airport. I love the people, the lights, the music, the shopping, and the food and always leave feeling inspired and excited about the design season ahead. Where do you look for inspiration? Friends, music videos, travel, film... everywhere. What music would we expect to see on your playlist right now? Fleetwood Mac, the Kings, Theia. Where is your next vacation? My mum has an ‘old school kiwi Bach’ in Pauanui, Coromandel so we try to escape there whenever possible throughout the year. Who are your dream dinner-party guests and why? Beyoncé, Obama, Ricky Gervais and my mum! What are your favorite wardrobe “can’t live it without” pieces? A pair of classic ballet flats, and leather trainers, J Brand jeans, Camilla and Marc leather pants, Juliette Hogan suiting and Marle Cashmere. Where is your favorite place to dine locally and overseas? Masu and Sidart in Auckland, Sevva in Hong Kong for the food and the view. Teppan Yakitori in Shibuya, Tokyo, Craggy Range winery in Hawkes Bay, Rata in Queenstown. Tell us what is the best piece of advice you have ever been given? Raw Caramel Slice
This no-bake treat is vegan, butter-free, gluten-free, refined sugar-free, and made with all natural, good-for-you ingredients. It keeps well in the freezer, so you’ll have something sweet to look forward to for weeks. Like any treat, they should be enjoyed in moderation - just because they’re made with wholesome ingredients doesn’t mean they’re the equivalent of a salad. They’re rich and nutrient-dense, so a small slice is all you need to satisfy your sweet cravings (okay, maybe two). Next time you’re in the mood to indulge or need a crowd-pleasing treat, I highly recommend this caramel slice. I promise, you won’t regret it.
INSTRUCTIONS
INGREDIENTS
Make Cookie Dough Base 1. Add soaked cashews (1 cup, soaked for 4-6 hours), rolled oats (2/3 cup), coconut flakes (2/3 cup), and salt (1/4 tsp) to a food processor. Process for 1-2 minutes until the ingredients are finely ground. 2. Add 4 medjool dates (pitted and soaked in warm water for 15-30 seconds) to food processor and blend until well combined into mixture. The dates will bind the mixture together and create a smooth but sticky consistency. If the mixture isn’t sticking together, add 1 tbsp of warm water and process again. 3. Line baking pan with non-stick parchment paper. Press dough into the base of the pan and spread evenly. If the dough is sticking to your hands, dab them lightly with cold water. Cover pan with aluminum foil and place into freezer while you make the caramel filling.
Cookie Dough Base • 1 cup cashews, soaked for 4-6 hours • 2/3 cup gluten free rolled oats • 2/3 cup coconut flakes • 4 dates, pitted and soaked in warm water • 1/4 tsp salt
Make Caramel Filling 1. Add medjool dates (1 1/4 cup, about 14 dates, pitted), almond butter (1/3 cup), maple syrup (2 tbsp), coconut oil (1 tbsp, melted over low heat), vanilla extract (1 tsp), and salt (1/4 tsp) to food processor. Process for 1-2 minutes until ingredients are well combined into a smooth and even filling. If the mixture isn’t sticking together or lacking creaminess, add 1 tbsp of warm water and blend again. 2. Layer the caramel filling on top of the cookie dough base and spread evenly with a spatula. Cover pan and place back into freezer while you make the raw chocolate topping. Make Chocolate Topping 1. Melt cacao butter (1/2 cup) using a double boiler. You can create a double boiler using a saucepan and a large heatproof mixing bowl. Add 1-2” of water to saucepan and bring to boil. Once boiling, reduce heat to a very low simmer. Stack mixing bowl on top of saucepan (making sure bottom of the bowl doesn’t touch the water). Add cacao butter into the bowl for it to melt. Once cacao butter is melted, remove bowl from heat. (Note: Make sure not to overheat the cacao butter as it will alter the taste and appearance of the final chocolate.) 2. After removing cacao butter from heat, add cacao powder (1/3 cup), maple syrup (3 tbsp), vanilla extract (1/2 tsp), and a pinch of salt to the mixing bowl. Whisk until well combined, and the texture is smooth and glossy. 3. Pour the chocolate mixture evenly on top of the caramel filling. Cover pan and place back into freezer. Let it set overnight or for at least 4-6 hours. Slice & Serve 1. When the caramel slice is ready, remove from freezer and leave it at room temperature for about 1-2 minutes so that it’s easier to slice. To help prevent the chocolate layer from cracking as you slice it, you can run a knife under hot water and wipe it before using. Slice into smaller pieces and store in freezer for up to a month.

Rainbow Spring Rolls
Now that the weather is warming up, I find myself craving lighter, fruitier, and more colorful meals. These rice paper rolls are the perfect spring and summertime dish—they’re super healthy, filled with vegetables and herbs, refreshing, satisfying, but light enough that you won’t feel heavy and tired afterwards. Oh, and the peanut butter dipping sauce is to die for. I love the combination of ingredients in this recipe, but you can easily improvise with whatever you have in your fridge. They’re also amazing for summer gatherings and bbq’s—especially when you want to wow your friends and family, and balance out the beers and burgers that will be consumed. The fruits add a sweet and refreshing flavor, and pair amazingly well with the raw, crunchy vegetables. For the colorful fruits and veggies to show through the top of the roll, follow the rolling technique in the recipe below. Let’s get rolling!

Make The Peanut Butter Dipping Sauce Mix peanut butter, tamari, lime juice, maple syrup, sriracha sauce, and minced garlic in a bowl. Add 2-3 tbsp of water to thin. Whisk until creamy and smooth. Set aside.
For The Roll • Red bell peppers, julienned • Carrots, julienned • Yellow bell peppers, julienned • Avocado slices • Cilantro, basil, mint (the trifecta of herbs) • Purple cabbage, julienned • Vermicelli rice noodles, cooked (optional, makes the roll more filling and satisfying) • Rice papers (I use these 22cm wrappers) • Large bowl of warm water (to dip rice papers in)
Set Up Your Rolling Station 1. Prep all the vegetables and fruit toppings that you’ll be rolling. Wash them thoroughly, peel and slice them, and place them into separate bowls so that they are ready to use while rolling. (In this recipe, the vegetables are consumed raw, so I recommend buying organic ingredients if possible.) 2. Place a plastic or marble board in the center of your station to use as your rolling surface. (I used a wooden cutting board in this post so that the rice paper is more visible, but it’s so much easier to roll on plastic or marble, as the rice paper won’t stick to the surface.) 3. Have a large bowl of warm water nearby to dip the rice paper into before rolling. This will make the rice paper soft and pliable. The bowl should be large enough for the rice paper to lay flat inside. Make The Roll 1. Dip rice paper with both hands into the bowl of warm water for 3-4 seconds. Carefully tap off excess water, and lay it flat onto your rolling surface. 2. Layer soft ingredients first (i.e. basil, cilantro, mint, lettuce) to prevent harder ingredients from puncturing the roll. Place the fillings in the bottom 1/3 of the rice paper, leaving about a 1 1/2-inch border on the bottom and sides. 3. Layer remaining harder vegetables on top (i.e. red peppers, carrots, yellow peppers, avocado, purple cabbage, etc.) You can place them in rainbow order to get a pretty effect. Make sure the veggies don’t stick out too much on either side, so they don’t tear the ends of the roll. Be careful not to overstuff the roll—you just need a bit of each ingredient to get the flavor. 4. Layer a small amount of cooked vermicelli noodles on top (optional). If you’re not using noodles, try adding sprouts instead to help fill up the roll. 5. To get the pretty fruits and vegetables to show through the top of the roll, place desired ingredients in a row towards the top of the rice paper (like the strawberries in the photo below). 6. Start rolling by lifting the bottom edge of the rice paper and rolling it over the fillings. Fold in both sides of the rice paper. Then continue rolling all the way to the top (like you would a burrito). Make sure to roll it tight enough to keep the roll together, but not so tight that the rice paper will rip. 7. Set finished roll aside to firm up, while you complete the rest of the rolls. 8. Serve with peanut butter dipping sauce. You can slice the rolls in half, but I love serving them as whole rolls.

For The Pretty Toppings • Mango slices (amazing with avocado) • Strawberry slices • Kiwi slices (surprisingly delicious) Extra vegetables: bean sprouts, alfalfa sprouts, purple cabbage, avocado, cilantro, basil, mint, radish slices, cucumber slices, etc. Note: Feel free to improvise the fillings based on what you have in your fridge and your taste. You can also add protein of your choice (baked tofu, tempeh, shrimp, etc.) Peanut Butter Dipping Sauce • 1/3 cup peanut butter • 1 tbsp low-sodium tamari or soy sauce • 2 tbsp freshly squeezed lime juice (about 1 lime) • 1-2 tbsp maple syrup or honey (I use 1 tbsp, depends on how sweet you want it) • 1 tsp sriracha sauce • 1 garlic, peeled and minced • 2-3 tbsp warm water to thin (I prefer 3 tbsp, adjust as needed)
