MODERN ARTIST: Demetrius Nath by jay kana As Canada’s sixth largest city, Mississauga has a plethora of musical talent but being in between Toronto and Hamilton, both of which have burgeoning music scenes, we find ourselves in an interesting position regarding how to best support the homegrown talent. This opportunity to support Mississauga musicians is how Mississauga Music was created, courtesy of longtime resident and music industry aficionado (who’s also the guitarist and vocalist in the band “Maybe May”) Demetrius Nath. He and his partner, Chris Wulff came up with the idea in the summer of 2015 and after months of planning and strategizing, the project went live in January 2016. Nath says “as I’m in the music business and have done marketing and promotions for over a decade, my focus has always been national and I wasn’t overly familiar with the local scene I realized that our city was unfortunately often over- looked over due to proximity, so Chris and I decided to start Mississauga Music as a way of celebrating, promoting and encouraging the musical talent we have in our community.” There was a grand time in the 90’s and early 2000’s where the music scene was vibrant and buzzing with Billy Talent, illScarlett and others performing locally. While the scene is still active, Nath wants to find a way to bolster it and consistently help as many musicians as possible through this non-for-profit, volunteer-based labour of love. Bringing more live opportunities for original music to the city, more local names onto a bigger stage and providing a platform for local musicians are the key pillars to Mississauga Music. Nath goes on to say “the website was created to become a hub of activity, a way to discover new artists, introduce local talent to the community and give them various channels to broaden their reach” which is in addition to his weekly radio show on CFRE; UTM’s radio station. In the nearly two years of helping others, the response has been overwhelmingly positive from musicians, listeners and new fans but as Nath aptly puts it “it’s a marathon opposed to a sprint.”

8

MODERN MISSISSAUGA | AUTUMN 2017

The company’s successes include a partnership with Toronto’s Indie-Week and Canadian Music Week, organizing a show at the Celebration Square Amphitheatre during the recent SoundBites festival, working with the Mississauga Arts Council on showcasing young talent, releasing their second “Mississauga Music MixTape” which showcases the wonderful talent in our city, and they’re putting on two shows of original music at the Living Arts Centre. Carmen Ford, Manager Creative Industries, Manager Film & Television Office, who’s worked with Mississauga Music says “Mississauga Music has done a great job of providing opportunities for local artists to gain exposure here in ‘Sauga and beyond our own borders. The Culture Division has partnered with them on several projects and we look forward to working with them more in the future.” Ford goes on to say “Music is good for business. A thriving cultural scene driven by music generates revenue through music tourism and serves to create ideal conditions to retain and attract a young, highly skilled work force.” Nath’s most rewarding part of this journey so far: “getting people to see the value in what we’re doing and being given the opportunity to continuously move forward and support the local artists. We need to get more artists on wider platforms, get them paid and profiled.” Nath and Wulff are encouraged that they’re seeing consistent results and it increases their motivation to do more for our community. They’re attracting more partners which will help expand the organization Looking forward, Mississauga Music will continue to find the right avenues for artists but do not want to compete with what’s already out there. Ultimately, they want to provide what our music community needs to consistently flourish in our own backyard.

BUILDING A STRONG MATHEMATICAL MIND Co-operative Group Work

by kimberley langen, CEO & co-founder, Spirit of Math

Imagine having the opportunity to be in a room of brilliant people, not just for one day, but week-after-week. Imagine that you could listen to those brilliant people: to their logic; to their thoughts; and to their thinking. Also, imagine that you were able to share your own thoughts, getting immediate feedback from those people. Imagine that you were able to ask them to help you with problems that you just couldn’t seem to get through. Wouldn’t that be exciting? Now, imagine your children having the same opportunity, once a week for an entire year. Every week, they are being taken care of and guided through the process. This is the magic of a Spirit of Math class. When a group of high performing students who enjoy a work like it is candy for their minds, and who thrive on challenging questions get together, they just can’t help but get excited. Their minds are stimulated by the interaction. The challenges they pose to each other not only feed their enthusiasm, but change the way they think. When it comes to math, collaboration is critical. Working through

difficult problems starts first by struggling through them on your own; but after a little while, you will need to ask someone for help. Learning to use the ideas of other bright people will generate an explosion of new ways to think, and consolidate well thought-out, logical and realistic ideas. Cooperative group work and presentation skills are stressed in the Spirit of Math class, not only for their essential life-skills benefits, but because teamwork is often essential for a student to get the solution to a problem. Through teamwork, students develop the ability to work effectively with others, learning from their peers, and learning how to make helpful contributions to group learning. Our experience has shown that when we present mathematics at an appropriately complex and thought-provoking level, students naturally want to analyze their work and discuss ideas with their peers. WELCOMES FALL WITH THREE NEW EXHIBITIONS! On September 7, the Art Gallery of Mississauga kicked off fall with three new exhibitions that explore personal narratives, migration and markers of place. Be sure to visit the AGM soon to see these not-to-be-missed shows!

WALKING ACROSS, TALKING THROUGH

Dana Claxton, Nalini Malani, Lisa Myers, Sumaira Tazeen September 7 - October 22, 2017 In today’s increasingly globalized but divided world, migration has become a controversial issue. Yet humans have always been nomads, moving from one place to another in search of better food sources, a more hospitable climate, opportunity, freedom. walking across, talking through presents the work of four artists who examine the personal narratives and relationships to both land and nation that are inextricably tied to the act of moving from one place to another. The works in this exhibition draw particular attention to the significance of markers of place in how we craft narratives of migration. Borders, fences, train tracks, roads, rivers these physical objects stand in contrast to the sometimes invisible nature of the stories that reference them, stories that change based on who is doing the telling. In particular, the voices of women are often absent in stories of land, nation, and movement between

and across the two, and those of Indigenous people much more so. The artists refer to personal stories in their work, but speak to a larger idea: that narration can be an act of orientation - geographic, social and political.

BORDER CROSSINGS: A COMMUNITY ENGAGEMENT LAB

September 7 - October 22, 2017 Border Crossings is an interactive community engagement lab that uses the transformative power of art to challenge preconceived ideas around both literal and metaphorical boundaries. Visitors are invited to use the different stations in the gallery to share their stories and experiences with crossing borders - geographical, linguistic, spiritual and personal. Through creativity and collaboration, we can recognize and respect the struggles that are a part of many border crossings, and learn to appreciate that sometimes the most incredible creativity lies at the edges of things. Drop in to share your story through various stations in the gallery, or participate in a workshop or event! For more information on how to get involved visit agmbordercrossings.com or send us an email at agm.connect@mississauga.ca. Border Crossings is an Art Gallery of Mississauga initiative, generously funded by the Ontario Trillium Foundation.

HIBA ABDALLAH: SOUVENIR SHOP | XIT-RM

September 7 - October 22, 2017 In an exhibition that resembles a shop, Hiba Abdallah explores the question: how do we define a city? An artist who frequently works in conceptual and textbased practices, in Souvenir Shop Abdallah presents a series of objects each bearing the word remember, which investigate the connections between ethnic diversity and commercial enterprise in the public consciousness of Mississauga. For the presentation of Souvenir Shop, the AGM partnered with Y+ contemporary, an artist-run space based in Scarborough. Y+ aims to provide an inclusive platform for artistic production, engagement, and experimentation, with a focus on emerging practices. The AGM’s XIT-RM is a project space showcasing emerging artists in the Mississauga, GTA and 905 regions, made possible with the generous support of the RBC Foundation. For the past 19 years, the Port Credit Music Academy (PCMA) has been teaching music lessons in the community and for the past three years, local professional singer/songwriter Chase Stevens has been at the helm. Students of any age and any skill level can take lessons in guitar, bass, piano, vocals, strings and flute. Nearly all of the teachers have post-secondary educations in music, theory and performance. They’re well trained and proficient on their instruments, which helps increase the engagement of students. In fact, nearly all teachers are active performers, which adds an enhanced element to the lessons by being able to integrate playing and performing. New for this year is the exciting addition of a songwriting course, taught by a professional and published songwriter. While songwriting is quite subjective, there are still elements that are constant and there’s a craft to songwriting, which PCMA

aims to teach to songwriters of various levels. Many studies have shown the lasting benefits of learning a musical instrument from cognitive development to enhanced social skills and increased self-esteem. But most of all, music is fun. Stevens’ has made PCMA a warm and welcoming environment for both students and parents on the second floor studio in the heart of Port Credit. The school has certainly seen growth since Stevens’ became the owner in 2015 and he, along with his experienced teachers, are excited to continue growing and welcoming more and more students. Many of the students have been with PCMA for multiple years, which is a strong testament to the quality of the school, instructors and leadership. The Wearable Art Show exists to benefit and inspire Canadian artists by creating a unique event allowing others to explore, experience, and purchase wearable art. The show features the work of nearly 40 makers, creators of clothing, jewellery, handbags, and hats. Craig Ewing, Joanne Jones , Caryl Richmond and Elina Ten are just a few of the talented artists participating. We will also present a display of six garments created by a collaboration between the students of the Textile Program at Sheridan College and students from the Fashion Design Program at Fanshawe College. This year’s show will feature a very special display from the Fashion History Museum, located in Cambridge, which collects and displays the wearable art of the past and promotes the wearable art of the present and future. FALL IN LOVE WITH THE

FINGER L A K E S REGION by dana zucker With fall upon us, it is high season to jump in the car and head to the Finger Lakes region of New York. Just over the New York state border, there are plenty of places to get a good view, but drive a little deeper into the state and you are in the middle of wineries, lakes, and gorges with amazing waterfalls and scenery. Here are a few of our favorite stops, restaurants, and places to stay. We suggest that if you’re going for a long weekend, spend at least two nights in Cooperstown and a night on either end in historic East Aurora. Drive down to Buffalo, where a stop at Frank Lloyd Wright’s Darwin D. Martin House complex is a must. Make sure you plan your trip to catch one of the tours, taking note the complex is closed on Tuesday. This year is the perfect time to visit as it’s the 150th anniversary. While in Buffalo, you must eat at the Anchor Bar, home of the buffalo wing. Right outside of Buffalo in East Aurora is the historic Roycroft Inn. Originally built in the 1890’s as part of the American Arts and Crafts movement, the workmanship is still evident. We highly recommend a stay that includes Sunday Brunch, whic is in Open Table’s top 100 brunches and Best Bang for the Buck by Zagats. Your next stop should be the charming village of Cooperstown! Nestled in the foothills of the northern Catskill Mountains, the area offers a wealth of activities even if you’re not a baseball enthusiast. Check into the Cooperstown Inn for at least two nights. A stay in a Luxury Suite allows you the space to visit with friends and family and enjoy the goodies you may gather after your day exploring. Finding a great restaurant in Cooperstown is easy. The Lake Front Restaurant is a hidden gem with a stunning view. For a local farm to table experience, we suggest Origins at Carefree Gardens. An added bonus is their Harvest Dinner on Wednesday night. For things to do, there is, of course, the National Baseball Hall of Fame and Museum, but don’t stop there. You will not want to miss the fall foliage from the Cooperstown and Charlotte Valley Railroad built in 1969. The other not-to-miss experience in Cooperstown is the beer and wine trail. We suggest one of the many tours offered by the Cooperstown Beverage Trail or build your own tour with Double Day Drivers. For more on leaf peeking in Cooperstown and New York State, be sure to visit www.thisiscooperstown.com

AWESOME AUTUMN-OBILE by jay kana

T

adventures Autumn is truly a beautiful time in Ontario and as the vibrant colours of the season brilliantly light up our landscape, it’s a wonderful time to experience the change of season. Here are a few of my favourite autumn drives that I encourage you to experience along with a pumpkin spiced anything and a fully charged camera:

NORTH MILTON From Mississauga road, head west on 5 sideroad until it becomes Campbellville road and hang a left on to Appleby line. One you reach Britannia, take a left (west) and then turn right (north) on to Guelph line for a different vantage point. As it’s a grid system, any of the turns you make should give you plenty of photo opps.

FORKS OF THE CREDIT This is by far my favourite local-ish drive! Start at Mississauga road at Lakeshore and go all the way north until you hit Belfountain. At the split, stay right to get onto Forks of the Credit road and enjoy the beautiful scenery. You’ll reach Hurontario at the end and you can head south for a speedy trip back home or turn around and experience it again. Stop in at Forks of the Credit Provincial Park for a picnic and or to further experience autumn.

MUSKOKA I was on a media trip last autumn with Honda Canada and the route they mapped out was absolutely wonderful, scenic route through Muskoka. Take Highway 27 north and then merge onto the 400 for a bit and then jump onto Highway 11. If you’re hungry, make a quick stop at Webers and then carry on the 400. About 10 km from there, make a right onto Muskoka Rd 13 and follow the signs to stay on that road. It’s an absolutely stunning

drive that’ll fill up your camera/smartphone with gorgeous pictures. HAMILTON & WATERDOWN Take Dundas westbound and go, go, go. And then go some more. In Waterdown, hang a left onto Howard road, which turns into Snake road, which in itself is a wonderful drive. At the end that road, turn right on to Plains road, then left on to York road, right on Valley road and then right on Rock Chapel road to bring you back to Dundas. From there, check out any of the concession roads (another grid pattern) to enjoy what up and coming Hamilton has to offer. Plus, with a plethora of waterfalls, your autumn pictures can go from great to grandiose.

KEEP THE HEAT

(AND YOUR CASH) by jay kana With another autumn and winter season upon us, it’s time to run through some ideas to stay warm and save some cash while enjoying your castle. Inspect/replace the weather stripping around your exterior doors, range hood and dryer vents. Basically anywhere where the cold air can invade your palace of warmth. • For your front and back doors, look into getting a "sweep", which can keep the warm air where it belongs. • Inspect/replace the caulking around your windows as it's a fairly simple DIY solution. • If you have a ceiling fan, run it in reverse mode at a low speed. It distributes the warm, pooled air (because hot air rises) throughout the room. Logical on the surface? No. Effective? Yup. • Program your thermostat for cooler temperatures during the day. Try 17 C during the day, 19 C when you're home at night and 18 C while sleeping. Before you say "blasphemy!” read the next tip. • Layer, layer, layer. Sweaters can increase body temperatures by a couple of degrees. So can long underwear. A long sleeved shirt and a sweater brings you up to nearly 5 degrees of extra warmth. Heck, even wear your ugly Christmas sweater. With the cash you save on heating costs, you can invest it into a couple of new ugly sweaters. • Cook! You'll save money on take-out and create warmth from the stove. It won't warm your entire living area but the kitchen and adjacent room(s) will be warmer. • Sleep with the whole gang, including socks, sweaters, long underwear, flannel anything, extra blankets, sweatshirts, and anything else that's warm-worthy. • Light some candles to keep the room you're in warmer. • Clean your furnace filter, have your furnace serviced yearly to make sure it's in tip top shape and running efficiently, keep your vents obstruction free, wear indoor slippers, sip on some hot chocolate or mulled wine. These tips will help keep your heating bills lower and your body temperature higher. If you have any of your own tips, share them on our social media pages so that we can all stay warmer this winter.

THE BIG DEAL AB OU T SM A LL B USIN ES SES IN MISSISSAUGA

“Would you rather be pushed out of a plane or jump?” My close friend Lorraine Sommerfeld recently asked me as we were discussing entrepreneurship. How you answer is as good a definition as any. Entrepreneurs and small business owners are an interesting type. They have a different way of seeing the world, often wanting to break new ground and write their own rules. It doesn’t always work, but true entrepreneurs see failures merely as steps on the way to success. Hence Lorraine and her plane. She’s a jumper, as am I. October is Small Business Month in Canada and as Mayor Bonnie Crombie so accurately stated, “small businesses are the backbone of our economy.” With Mississauga home to approximately 88,600 businesses, about 97% of those are small to medium sized businesses and chances are you’ve wandered into one of them at some point over the past few months. I worked for a couple of larger companies early in my career (Bell Mobility, FedEx) and the further I progressed, the stronger my desire to become involved with a small, local business. Through a well-timed Tweet in early 2011, I landed a sales position at Spirit of the City Mississauga Life magazine, where I was led and mentored by a seasoned and intelligent serial entrepreneur, Don McVie.

18 MODERN MISSISSAUGA | AUTUMN 2017

The most impactful lesson he taught me was to treat the magazine as if it were my own; the customer service to sales to writing to distribution and every single other facet. There was certainly no “dialing it in” at any point. Yes, in all aspects of business and professional life there are peaks and valleys. However, they’re far more magnified on the small business side because it can be the difference between success and failure. Through my nearly five years with Don, my industry knowledge and my understanding of the complex movements of a small business increased daily. Armed with a plethora of business and life lessons, it was an easy and clear choice for me to launch Modern Mississauga in the winter of 2015. It’s been a wonderful past nearly two years but they’ve presented a share of struggles and opportunities, of which all small business owners share, regardless of their longevity. With the failure rate of small businesses being quite high in the first two years, these owners rely on the support of the community, a strong business plan and the ability to pivot when necessary to increase their chances of success. Owning a business is much more than simply having an idea; there are so many other moving parts that it can be overwhelming. Several small business owners have multiple

responsibilities, from sales, service, follow ups, accounting, inventory, etc. and it can be stifling if not managed properly. The city of Mississauga can offer a helping hand via the Mississauga Business Enterprise Centre, also knowns as MBEC. As a great resource, they’re here to assist you as much as possible and offer courses that cover websites, financing, HST, social media and others. There are also several seminars that are offered that are here to support our local, budding and even established small business owners. They even have a “Starter Company Plus” program that will assist people 18 years and over interested in starting, growing or purchasing a business in Mississauga. Once you have the training and tools and are ready to open your proverbial doors, there won’t be “9 – 5” work days. There won’t be weekends off. There’ll be nights where

you’re analyzing figures for hours on end. And if you do it smartly, strategically and studiously, it’ll all be worth it. Tommy Donnelly, who’s owned the Brogue Irish Pub for 20 years attributes his success to consistency and as one of the most successful restaurants in the city, it’s a sound strategy that has him thriving. Jessica Spiteri, owner of another very popular restaurant, Mondello Ristorante, lives by "treat others as you would like to be treated. “And it’s worked incredibly well for her. Lina Brocklehurst, owner of the successful Lina Brocklehurst Design has the mantra of “it’s a lifelong commitment to constantly learn and improve.” National celebrity, author and well-known media personality

(and, in fact, a small business owner) Kathy Buckworth’s words of wisdom are “if you really want to do it, go do it.” The owner of The Guitar World, Jim Toris, believes in visualizing success. “See what you want things to be.” And my approach? “It’s a marathon opposed to a sprint so plan carefully, learn from every single experience, acknowledge those beside you and be humble” mixed in with the aforementioned. There have been plenty of posts on social media about how money spent at a small, local business helps support families and entrepreneurs and that’s certainly the case in Mississauga.

We’re a community that thrives on supporting each other, on encouraging our colleagues and friends, regardless if we’re in the same industry. We’re generally happy to spend a few extra dollars at a non-chain restaurant knowing that it’s all about the experience and increasing the success of other residents and of course, supporting local business people. With the upcoming increase to minimum wage and the changes to small business tax, it’s important that we do as much as possible to support our small businesses. It’s certainly not an easy route and these hard working folks don’t have the massive resources that large businesses have. However, with hard work, dedication and a sound strategy, coupled with community support, all of us can help make small business in Mississauga thrive.

EIGHT IDEAL MISSISSAUGA

1

by jay kana

1 . N I S S A N Q A SH Q A I

This subcompact crossover is great for those who want something small and useful that has that crossover feel to it. Popular worldwide, the Qashqai showed up in the Great White North recently and is a great choice for singles, twosomes and small families. As you tote in and around town, you’ll be doing so for as low as only $20K less a Toonie, in style and sipping fuel.

2. MAZDA CX-9

2

This seven-seater, three row crossover can be had for as little as $36,200, which is very affordable for a vehicle this size. Be the one that volunteers to carpool or embrace being able to put your kids in three different sections of the CX-9. You’ll be a hero on moving day and take comfort in knowing that it’s got function and fashion nailed down.

3. FORD ESCAPE

Ford’s wildly popular compact crossover just keeps getting better and as one of their top sellers, it’s easy to see why. Blending a strong interior with good looks and an available fuel-saving EcoBoost engine, the Escape gives you ample cargo space, a comfortable ride and a ton of available safety features and technology to make your drive enjoyable.

4 . S U B A RU O U T B A C K

3

The last true non-luxury station wagon, the Outback gives you a whopping 2,075 litres of cargo space with the rear seats down, 8.66” of ground clearance, high seating position and a ton of available safety features. Rejoice in a vehicle that can hold a dozen hockey bags, drums, guitars, soccer balls, groceries and Ikea furniture all at once. Oh, you can squeeze in 5 people the same time!

5. MINI COOPER CLUBMAN

4

20 MODERN MISSISSAUGA | AUTUMN 2017

5

With its barn doors in the rear and four-doors on the sides, great handling and bigger-than-it-seems body, the Clubman works well in Mississauga. It certainly drives more like a car than a crossover and with so many customizable options, you can stand out in a (huge) crowd of local cars. Bonus points here for balancing cargo space with a fun driving experience.

6 . HO N D A C I V I C

There's a reason the Civic has been Canada's best selling car for 19 straight years. And that certainly doesn’t happen by accident. A true city-slicker, your options are 2-door, 4-door, hatchback, sporty and super-sporty. Truly, there’s a Civic for nearly all lifestyles in this market. They’re fun to drive, have an option for a manual gearbox, look great and have a well-appointed interior. Starting at $16,490, they’re quite affordable and serves the functionality-based folk quite well in Canada’s sixth largest city.

6 CARS FOR CITY LIVING

7

7. C H E V R O L E T B O LT

We’re years away from having the adequate infrastructure to support an uptick in electric vehicles (the up-to $14,000 credit doesn’t hurt, though) but with the new Bolt offering up to 383 km on a single charge (realistically, its closer to 350 km) you can tote all around the city from Malton to Port Credit, do all your errands, sit in traffic, hit up the drive through and carry five people for at least a few days on a single charge. You may be losing out on gas rewards but you’re reducing carbon emissions into Mississauga’s air, which is always a good thing.

8 . H ON D A ODY S S E Y

8

Minivans are tucked into a niche market and the Odyssey is my favourite, mainly because of its oh-so-functional sliding doors, cavernous space and left-to-right sliding middle seats. Undeserving of the scorn that they’ve received in the catapulting rise of the SUV/Crossover, I’d pick a minivan over the latter simply because of their sheer functionality and utilitarianism. It’s a living room on wheels so when you’re stuck in Hurontario, 401/403/QEW traffic, your passengers won’t care and probably, neither will you.

TRAVEL ON THE MISSISSAUGA TRANSITWAY

This fall, Renforth Station will open for service, marking the completion of the Mississauga Transitway. The 18-kilometre, 12 station bus-only corridor makes commuting through Mississauga faster and easier for thousands of riders every day. The new Renforth station, at Commerce Blvd and Eglinton Ave W in the Mississauga Airport Corporate Centre, will connect three bus systems – MiWay, GO Transit and the Toronto Transit Commission (TTC). It will act as a gateway to and from Mississauga, providing riders with more travel options throughout the Greater Toronto Area (GTA). Since the first phase opened in late 2014, the Mississauga Transitway has created a better way to travel across the city. When travelling on the transitway, customers will spend less time waiting with buses arriving every five minutes during peak hours. Commuters can escape the madness of rush hour with dedicated bus lanes, no construction holdups and no traffic lights. Four stations have free parking (Winston Churchill, Erin Mills, Cawthra and Dixie), and all stations have Wi-Fi, and heated enclosures to make the trip more comfortable. The complete transitway links riders from east to west and to Toronto Pearson International Airport. MiWay is expanding services that operate on and connect with the Mississauga Transitway as part of its MiWay Five Transit Service Plan (2016–2020). SMALL BUSINESS: What's the Big Idea? by john murray lewis

Thinking of starting a small business in Mississauga? The path of the entrepreneur isn't an easy one. That's a lesson I learned the hard way when I started the Human Dignity Memorial Home for Unwanted Head Lice. Is the idea of charging $6.99 to shave a vermin-infested child's hair into a greasy pizza box too ahead of its time? We may never know, but what I do know is this: every successful small business starts with an irresistible idea. So what are the next big ideas destined to shake up the Mississauga marketplace? Read on! NAIL SALON. Yes, I know what you're thinking: every second business in Mississauga is already a nail salon. That just means you need a new angle. What about a nail salon... for men? It's basically the same thing, but after your customers get their nails done they fight each other. Try a sports theme for maximum market penetration. MEXICAN FUSION. When it comes to authentic international cuisines, everyone knows Mexican fusion is the best. It's a fact. From sushi burritos to butter chicken burritos to adorable cats wrapped in soft blankets (i.e., purritos), there's nothing Canadians like better than defiling the traditional flatbread of our noble North American neighbour. UBER FOR... WHATEVER. As one of the most successful and morally dubious startups of the last decade, Uber is a straightforward blueprint for entrepreneurial success. Honestly, it doesn't even matter what your "Uber for..." is for. Why not... mattresses? Everyone needs mattresses, right?

NIGHTLIFE. Ever noticed how Mississauga basically shuts down at 9:30pm? Some might call it an inevitable effect of the decentralized sprawl of 6-lane streets and parking lots that defines our suburban landscape. But everyone knows that the real problem is vampires. So why not reclaim the night with garlic and wooden stakes? WIZARDING SCHOOL. Sure, you'd be stepping on some pretty shaky ground as far as intellectual property is concerned... but study after study has made it clear. The people of Mississauga want to be wizards, and wizards need proper training. The upside for entrepreneurs in this space is nothing short of "magical." AMAZON HEADQUARTERS. Are you Jeff Bezos? Are you looking for a new home for Amazon HQ? Do you need access to an enormous pool of human labour, pristine, exploitable land, and tons of air for all that weird drone stuff? If not... well... can Amazon.ca at least get a better selection? LOCAL LIFESTYLE MAGAZINE. Are you crazy? Who still reads magazines in this day and age? Listen. Starting a small business is no mean feat. It takes confidence, courage, and more than a little bit of luck. But once you commit to a solid, focus group-approved idea, the sky's the limit. Just remember: starting a small business takes more than a great idea. It takes confidence, courage, and a little bit of luck. But stick with it, and you just might find yourself successful beyond your wildest dreams. Or in my case, covered in lice.

Dining Among the

by brigitte hasbron |

Ever wonder what it was like for the Greek gods to dine so close to heaven? To have the shimmering light of the moon cast before them as they feasted on extravagant epicurean delights. Well, now you have the rare opportunity of feeling such pleasures, as Casa Velas will take you up in the air to experience a lavish feast with their Dinner in the Sky! Diners will be mesmerized as they experience a once-in-a-lifetime adventure of dining in the sky. The Casa Velas hotel situated in picturesque Puerta Vallarta, Mexico has successfully managed to combine both culinary reverie with a unique bucket list experience. Dinner in the Sky, which will be offered for the next three years, has been deemed as one of the world’s most exhilarating dining experiences. Guests are hoisted by crane to the height of 150ft where they are presented with a perfect bird's eye view of the striking Banderas Bay and Sierra Madre Mountains. And, just to keep things interesting, Casa Velas, a AAA Four Diamond luxury adults-only all-inclusive boutique hotel, will be rotating guest chefs every couple of days. Food lovers will rejoice in knowing that the multicourse gourmet dinner are perfectly executed by some of the top

chefs in Mexico. In fact, for my Dinner in the Sky adventure, the guest chef was the well-known and super talented Chef Massimo Fongaro. The evening started with a few cocktail drinks and the signing of a waiver form. This is a simple formality since every safety precaution has been considered. As the sun was about to set in the mountains, the guests, as well as the chef and his kitchen brigade, were harnessed around the table. Once secured, we were slowly lifted to our dining height which offered us a breath-taking view! And ladies, you can still wear an evening dress. The exquisite meal consisted of a beautiful

photos courtesy of casa velas

melange of courses: an appetizer consisting of scallops in a raspberry sauce with tomatoes; a delectable rich lobster lasagna; a beef filet with corn polenta served with cambozola sauce and freshly shaved truffles that the Chef was ever so generous with. Our pièce de résistance was the Chef's interpretation of a tropical Tiramisu filled with strawberry and passion fruit. The evening was accentuated by a beautiful display of fireworks lighting up the night sky. Casa Velas has definitely thought outside the box when it comes to spoiling their guests and providing them with this exclusive culinary adventure. Seats for guests staying at Casa Velas (www.hotelcasavelas.com) cost $50US, and for non-resort guests, the fee is $170US (pre-order). If you want to be dazzled and left in awe as you enjoy a fine dining adventure at unprecedented heights, complimented by top-rated hospitality, then I highly recommend Dinner in the Sky as part of your relaxing stay at Casa Velas. Disclaimer: At the time of publishing, Casa Velas was unable to confirm the exact dates for the Dinner In The Sky event in 2018. They did, however, give us absolute confirmation that there would be a 2018 event. Check their website often for updates.

Decanting Wine:

SAVVY OR SUPERFLUOUS?

by tim reed manessy

With some interesting facts, tips and tricks for buying, gifting and sipping, Modern Mississauga’s resident wine expert demystifies the world’s most interesting beverage. 34 MODERN MISSISSAUGA | AUTUMN 2017

“Don’t you think you should decant that for a couple of hours before we drink it?” says your friend on Saturday night, sneaking up on you in the kitchen as you’re popping the next bottle for your guests mingling on the deck. She continues: “You know, I got this aerator as a gift, and I’m telling you, everything tastes better when I use it!” When I teach restaurant staff about decanting wine, I point out that it’s for one of three very clear purposes: the first, unsurprisingly, is “for show.” When you order an expensive bottle of wine in a restaurant and the waiter/ server/sommelier produces an elaborate glass vase shaped like a swan, pouring your wine lovingly into it, the ridiculous markup you have probably paid seems somehow more palatable (pun intended). The reality is that they do this knowingly, adding value via stagemanship. It’s mostly an act. Don’t get me wrong: aerating a wine is important. I call that reason number two. Most wines, when they come in contact with oxygen for the first time since they were trapped in a bottle a long time ago in a faraway place, are shy; restrained; closed. A little air wakes them up, allowing their aromas to fill your glass and consequently, your nose. But, you can do this without any fancy devices: just pour your wine into a standard wine glass and swirl it around as you chat with your dinner companion or party guest. Swirl and sniff, swirl and sniff. And when you take a sip, swish and slosh it around your mouth. (Like the movies!) When you see wine professionals performing this noisy, unruly act, it’s not without reason – they are aerating the wine in their glass and in their mouths. And if you don’t like to swirl, swish, slurp and gargle (don’t gargle; that’s a joke) then I’m confident, if you tell your friends and family that you’re a wine lover, you will inevitably get a little plastic doohickey in your stocking this year, and it will do most of the work for you. Reason number three is to remove sediment. That’s the sandy or flaky (but harmless) stuff that you might find in the bottom of a bottle if you’re drinking barrel-aged or older reds. If you pour your wine slowly and delicately out of the bottle and into a vessel of any kind, you can save the person who gets the last glass from a mouthful of grit. Perhaps prudent at a party. It is worth mentioning, however, that there are some rare wines that need aeration. Young (less than 10-year-old) Barolo and Brunello; expensive Bordeaux, high-end red Burgundy and many cellar-able wines can benefit from an hour or more in a wide, flat decanter, exposing as much surface area as possible. Or just resist the temptation and hide them (from yourself) in your basement or closet for another five to 10 years. It will pay off. Trust me. Got a wine question for our expert? Send them to sommontherun@gmail.com and engage with Tim Reed Manessy via Instagram and Twitter via @sommontherun.
