Editor's Letter Welcome to the first issue of Mississauga’s magazine in 2019, friends! As we enter year four, we’re more motivated than ever to continuously provide you with well-written, honest content about our city. It’s been a terrific first three years and we thank you for enjoying the journey and supporting a local business. The media landscape is ever-evolving and with that comes a stronger sense of responsibility for outlets, publishers and media companies. We’ve done a deep-dive on

our progress to date and have taken everything we’ve celebrated and learned and will be strengthening ourselves in our efforts to continue to be your premier media company. One element you’ll notice more of is an increased personal approach from yours truly. I was hesitant to do it and it took a few weeks of self-convincing. What helped me decide was that I want to create a stronger connection with you, the reader. I want to engage with the community, hear your thoughts, what you like and what concerns you have. I won’t have all the answers on-hand but I will be happy to help you find them.

We’ll still bring you strong, local content, rest assured… but with more of a personal flare to it. The short version is that I’m breaking out of my comfort zone and trying new things, even the things that I’m apprehensive about. If you’re doing the same, I’d love to hear about it and your progress. We’ve got another great issue here and the team and I are happy to share it with you. Series Continues by sara richardson The Living Arts Centre is excited to continue its Hot Havana Nights! series with even more high-calibre Cuban musicians to heat up the winter – AND there’s a contest! Maya Charbin by jay kana

In this Modern Artist segment, we have a conversation with Mississauga’s Maya Charbin, renowned fashion designer who’s made pieces for Miss Universe Canada 2018, Mayor Bonnie Crombie and numerous others.

What exactly do you do and how long have you been doing it for?

I have been designing women’s wear my whole life and launched my label, Maya Charbin in 2014. I’m inspired by unfamiliar places, objects, and experiences and was always driven to discover the unknown. I was born in Lebanon and now based in Mississauga. My design aesthetic is reflective of a global influence. I have had many amazing opportunities to build my brand, like dressing Mayor Bonnie Crombie, Miss Universe Canada 2018 and numerous Canadian celebrities.

What attracted you to become a fashion designer?

Since age eight, I loved sewing and designing and used to wait for my mum to take a nap so I could use her sewing machine. As my parents couldn't afford sending me to fashion school, I majored in social sciences and did makeup sessions. However, my dream to become a fashion designer was always alive. My joy and passion for life grew when I had both of my kids. Nevertheless, I felt something was still missing so I decided to chase my dream. I went back to school and finally became a fashion designer. It wasn't easy being a mother and a student as there were sleepless nights for three years. However, I proudly made it with honour.

What's been your biggest challenge?

Developing and staying loyal to my own brand. Being able to tell someone wearing a “Maya Charbin” in a crowded room isn’t easy. I needed to show people that I was different from other designers and big corporations. I am a designer of passion; one garment will never be like the next. I make timeless garments that provide unique feelings.

How have you overcome it?

I try to stay away from trends or other designers work. I shy away from the typical fashion stigma that can make other designers feel closed in. My passion drives and inspires me and is reflected through my garments. I give each piece its own character and energy regardless of my various clients.

What advice do you have for other entrepreneurs?

Be passionate and committed in your work because it will drive you to be successful.

What's in store for you in 2019?

I am excited for my May 23rd fashion show at the beautiful Harding House, which will have a beautiful theme. Following that, I’m in Italy for Torino fashion week. mayacharbin.com

Drive ’ til it’s warm! O U R F A M I LY ’ S H O N D A O D Y S S E Y FLORIDA WINTER ROAD TRIP

PALM DREAMS Eight states, 24 hours and 2,294 km later, we found our Holy Grail. The warm temperatures in Florida were a tonic for our winter weary bodies, and our dry, pale skin thirstily soaked up the moist, salty air. And it only got warmer the farther south we drove. By the time we arrived in the Palm Beaches, it was a blissful 25°C. Why the Palm Beaches? Extending from Jupiter in the north to Boca Raton in the south along 47 km of Atlantic shoreline, this county in Florida’s southeast offers a wide variety of attractions from nature reserves and eco-centres to top-notch shopping and dining. What to do? Nature reserves and parks, like Spanish River, South Inlet, Riverbend and John D. MacArthur, showcased the subtropical habitat and beaches. We witnessed sea turtles being lovingly rehabilitated to be returned to the ocean at Gumbo Limbo, an environmental complex. And we spotted more endearing sea creatures at the Manatee Lagoon, where these gentle sea cows congregate. On the Island of Palm Beach, whose zip code has more billionaires than anywhere else in America, we biked along the lush Lake Trail on an Island Living Tours. We learned about the island’s rich history and even richer residences, and window shopped at glitzy shops and galleries on Worth Avenue. Luckily, there was more affordable retail therapy nearby at Palm Beach Outlets. www.thepalmbeaches.com KEY MOMENTS A two-and-a-half-hour jaunt plus a lunch stop in Miami and we were in the Florida Keys. After our long drives, this felt like a breeze, and time flew even faster with the eye-candy that surrounded us. One minute we were driving down what looked like an ordinary highway, and the next, we were cruising on a bridge with a front-seat panoramic view of the most inviting turquoise water imaginable. Why the Florida Keys? It’s like driving to a Caribbean Island. In fact, the archipelago consists of approximately 1700 islands, 43 of which are connected by 42 bridges on the Overseas Highway. Key West, Florida’s southernmost point, is only 150 kilometres to Cuba. What to do? Its laid back vibe meant some of the best moments involved a beach blanket or lounge chair. John Pennekamp and Bahia

Honda state parks were gorgeous spots to spend an afternoon with excellent snorkelling. We explored a little of the colourful and historic Key West, tasting the best Cuban sandwich ever at Cuban Coffee Queen. At Sundowners, an aptly named restaurant in Key Largo, we dined on seafood and key lime pie on a patio overlooking the water, and took in the best show in town – a Florida Keys sunset. We were happy. And all of us happy at the same time (which is not always the case on a family vacation). The sunset is now on my screensaver, so that when it’s -10°C or when we’re arguing about homework, I can be reminded of this evening. www.fla-keys.com THE RIDE: 2019 HONDA ODYSSEY The success of our ‘drive’ til it’s warm road trip’ was in no small part due to the comfortable, safe and fun ride in the 2019 Honda Odyssey. It’s like a living room on wheels with ultra-comfy leather front seats that were heated and ventilated, so they were just as pleasant in chilly Buffalo as the warm Florida Keys. Both kids had an entire row to themselves with still enough space for suitcases, coolers and snorkelling gear in the deep cargo well behind the third seat. The assistance technology did everything it could, apart from driving the car itself (a few more years, maybe?), to keep us safe. Adaptive Cruise Control maintained a safe distance with vehicles in front of us; Collision Mitigation Braking was there to alert us of potential collisions and blind spot monitors ensured safety when changing lanes. The Lane Keeping Assist, which tracked the vehicle’s position between marked lanes, not only gave an alert, but steered itself! Even on a highway curve. In a way, this technology took the driving out of the driving, so we could focus instead on the enjoyment of the road, like the mesmerizing mountains of West Virginia (which the Odyssey climbed remarkably well). So though we were driving our road trip ‘living room’, it handled like a smaller vehicle with good acceleration and power. Its fuel economy also made us smile as we averaged 9.0 L per 100k; impressive for a full sized van filled with the family and our gear. Tips: South Carolina has the cheapest gas; and when you need to punch in a zip code at the pumps when swiping a card to pay, use the first three numbers of your postal code plus two zeros.

ONE TANK TRIPS COUPLES GETAWAY TO NIAGARA FALLS by elizabeth wise |

Once again, the holiday season was upon us, and we were in desperate need to get away from everything -- work, kids, the city. This year, our “couple’s getaway” One Tank Trip was to the ever-active Niagara Falls, Ontario. While my husband and I have both been to the Falls various times growing up, our trips always seemed to be either passing through, or with our kids (usually to Great Wolf Lodge). This time around, thanks to Tourism Niagara, we were able to fully experience plenty of excitement this amazing city had to offer. We made our way out of Mississauga on a Friday afternoon and ended our quick hour long drive at the beautiful Best Western Plus Cairn Croft Hotel. The Croft is situated on Lundy’s Lane, a main artery that runs East/West and ends at the Falls. We truly appreciated the location of this hotel as it wasn’t directly downtown amongst the hustle and bustle of busy attractions,

but instead, a very short drive to a quieter part of the strip. The hotel greeted us with a modern and clean lobby that branched off into large banquet rooms and a massive indoor pool courtyard. After a delicious Greek food dinner, we promptly changed into our swimsuits and headed to the hot tubs. The pool was surrounded by beautiful large trees and the courtyard had rooms that were direct walk-outs to the pool deck -- which also featured a massive play structure for kids (something we both thought was a huge draw as parents of two small children!) The next day, our first stop was a 10am appointment at the Healing Salt Caves for a 45 minute session, followed by a hand and foot detox. To be honest, we both had no idea what to expect when we arrived, which added to the anticipation. We were welcomed by a charming lady named Eva, who excitedly explained to us exactly what we were in for. The facility housed more than

three tonnes of Polish rock salt which lined the walls of the dimly lit salt “cave”. We put our feet up, listened to the sound of trickling water, and experienced our first session of Halotherapy -- also called salt therapy -- where you inhale tiny particles of salt into your lungs. It is known to aid in respiratory ailments, skin disorders and as an immunity booster. We left the room licking salt off our lips and feeling more relaxed than either of us had felt in months. Our next stop was at the Niagara Brewing Company for lunch and beer tasting. We were treated to a great spread of both food and beer, which included our own selection of eight tasters to get a real feel for what the only four-year-old Niagara Brewing Company had to offer. We toured the 74ft wide facility, which utilized its space to brew vertically over 3 floors. Interestingly, their beers are hand canned with no additives or preservatives. From a smooth dark porter


to a crisp Ice Wine seasonal feature, there seemed to be enough variety to please any beer enthusiast -- or even somebody looking to understand and appreciate the wide range of flavour profiles beer can offer. Following that was a trip to Bird Kingdom -- the world’s largest free-flying indoor aviary. Although we know this facility would have absolutely thrilled our daughters, we really enjoyed it as adults. We interacted directly with the birds, having our photos taken with a couple of beautiful large parrots, and being covered in a barrage of Rainbow Lorikeets as we fed them nectar. The 50,000 sq. ft. multi-level rainforest aviary is the home to more than 400 birds from nearly 80 species. We came face to face with birds we didn’t know even existed! Our final experience of the day was to the Greg Frewin Theatre for dinner and the Wild Magic show, starring Greg Frewin. We were mesmerized by the theatrics, sleight of hand

tricks and his beautiful tigers that appeared as if from thin air. Frewin is currently ranked as The International Grand Champion of Magic, having won every major award offered within the magic community. The show included humour and drama -everything you hope to see in a magic show. Sunday morning in Niagara showed us a whole different level of magic -- from the inside of a helicopter as we circled over the falls. I’ve viewed this marvel of nature so many times before, but this experience gave me an entirely different appreciation and level of awe. Niagara Helicopters Limited took us on a trip of a lifetime! We were able to see the magnificence of the falls from angles that can only be witnessed from that height. I can honestly say it is an absolute must-do at least once in your lifetime. The final stop on our wonderfully relaxing and eye opening trip was just outside of the city to Niagara-on-the-Lake for lunch

and another beer tasting at Oast House Brewers. We were treated to Belgian style ales from the first farm house brewery in Canada. They use locally sourced food whenever possible and just opened the doors to their restaurant -- Brush Fire Smoke -where head chef John Vetere blew us away with the most unique flavours of bbq mixed with Asian fusion. We heard the history of the land -- where the war of 1812 was fought -- and were toured around the original barn from the 1800s. We cannot say enough good things about the experience we had and recommend without a doubt to stop by the big red barn if you’re ever driving through Niagara-on-the-Lake. We were sad to leave Niagara, but thankful for a short trip back to Mississauga. The next time you’re looking for a getaway, whether with your partner, children or even just solo, Niagara is only a tank away.

New year, new you, new aspirations… 2019 can be a glorious year for you and it certainly should be a good year for you. Whether you’re a resolution-setting type of person or not, I implore you to make this year the one where you maximize yourself. There’s no need to wait for the first of the month, your birthday or other day to start maximizing yourself; the optimal day is today. You may have noticed that the above handfuls of words aren’t quite like our usual feature articles, and you’d be right. I’m aiming to start conversations, create engagement and learn more about the valued readers of Modern Mississauga. My contact info is on the Masthead and I’d be happy to hear from you.Let’s delve into some ways to maximize yourself in 2019.

COMFORTABLY ESCAPING YOUR COMFORT ZONE Odd title, right? I’m all for the idea of shifting out of your comfort zone. I’m not quite for the 180 degree approach as I’ve found it more harmful than helpful. Start with a few degrees at a time and tweak as you progress. Want to join a gym, for example? Great! Don’t go seven days a week for the first month if you’re starting off. Maybe two to three days a week for a month is the approach to take when facilitating a noticeable change in your lifestyle. Let’s reference the “Tortoise and the Hare” fable for this one. How I’m doing it: I’ve rarely been comfortable in front of a camera in pictures or video. I have this small gap (that feels like a canyon) in my teeth. I feel I pronounce my “R’s” peculiarly and blink too much or not enough. Are these real concerns? Of course. Will/does anyone else notice? Definitely maybe. Owning Modern Mississauga Media has, over the past three

16 MODERN MISSISSAUGA | WINTER 2019

years, slowly nudged me to find ways to embrace it. Yes, it’s easier today yet I’ve still got many kilometers to trek where I’m where I want and need to be. I’ve created a schedule (that’s absolutely tweakable) where I’m doing short social media hosted selfie-videos and documenting the adventures of owning a media company. It’ll include the wins, lessons and commentary and it’ll include my face and voice. I’m doing it because I want to learn about my community and what their (and your) thoughts/opinions are, ask questions, prompt engagement and learn what more I can do to provide you with better, stronger, smarter content.

LEARN A NEW CRAFT/SKILL/TALENT IN ANY CAPACITY Regardless of your age, regardless of what anyone (falsely) says, you can always learn a new craft, whatever it is. From knitting to playing guitar to calligraphy to running and everything in between, if there’s something that’s got you interested, dig deeper. There are a plethora of free online resources that’ll get you started and help provide direction for advancement. Ask those around you if they know anyone

who does “insert X here” and if you can be connected with them. Check out online forums on the subject. At the very least, invest a few hours into yourself with this. How I’m doing it: First, I joined the Travel Media Association of Canada to create with a network of talent that I can learn from and engage with. I frequently travel and create travel articles so this is a natural (albeit long awaited) progression. I’ve applied for a position with the Automotive Journalists Association of Canada for the same reasons. Secondly, through online courses, I’m learning how to produce smarter and more engaging digital content. While I release six beautiful issues a year, there are still 359 other days of the year where I need to connect with my readers, both existing and new. Oh, and I’m learning (oh-so-slowly) how to be a better cook because, well, I’m 40 and it’s never too late to learn. Who wants a fresh bowl of ice cube soup and maybe burnt toast? It’s the thirst for knowledge and aspirational side of me that pushes these decisions forward. Whatever you want, whatever you aspire to do, whether full or part time, simply, smartly and strategically move forward with it. Worst case is you realize it’s not for you and can move on to the next exciting ambition.

CARE NOT WHAT OTHERS THINK I know, I know; it’s a touchy subject... I debated including this and the deciding factor was sharing my personal experience. Maybe it’ll change a view point. Maybe not. Regardless, it’s worth the chance. From online negative comments (of which there’ll always be) to in-person jeers, it’s so easy to say or write the aforementioned. The lesson I’ve learned is that you are absolutely unable to control anyone else’s thoughts and opinions. Sure, debate and discussion is encouraged but each of us are wired differently and will have our own reasons for our thoughts. Other people’s thoughts on/about you may hurt or offend you but I say this with the utmost sincerity; do not change who you are because of others. Change for you and only your own reasons. How I’m doing it: I post content daily in written, video and social media platforms and there’s a reason say “Don’t. Read. The. Comments.” I still read all of them and respond to almost all, even the foul ones. When I started this company, I was too entrenched in what others wanted me to do and took the criticisms to heart. I’d lose sleep over it. I was a textbook “people pleaser.” Fortunately, I eventually realized it and turned away from bending to what others wanted. Quite simply, if you strive to be everything to everyone, you’ll end up not much of anything to anyone. I absorb everything said and written about Modern Mississauga Media and myself. The difference now is I’m much more confident in my plan and vision for myself. I know what’s best for me. Only you know what’s best for you.

What exactly do you do?

I inspire and drive human behaviour though professional speaking and my business, Kind Projects. By definition, you could say I do something different every day. I support charities and not-for-profit groups by planning events, marketing campaigns and writing grants. I am also a blogger, philanthropist, MS Ambassador, entrepreneur, volunteer, Toastmaster, and mom.

What's drawn you to doing this?

I am inspired by people that come together for a common cause. I support organizations that require assistance in completing projects. My speaking, consulting, and event planning skills have allowed me to fulfill my passion of helping others. Projects work well with my hectic schedule.

What motivates you?

My children have taught me to hold my composure. They inspire me to become a better person and enjoy the journey in life. Seeing them admire me is priceless and emotionally fulfilling. I adore people that offer goodwill, tenderheartedness and assistance. As the founder

of a kindness movement titled, “Be Aware, Be Kind”, I am motivated by people that look for opportunities to be kind.

What's your biggest challenge and how do you overcome it?

When people learn that I have multiple sclerosis they are often surprised that I have a disability; I try to always portray myself as energetic and positive. Living with MS is a challenge as I have daily symptoms and sometimes my lethargy is incredibly extreme. Staying mentally engaged, reducing my stress, enhancing my resilience, and strengthening my coping skills all have helped me manage my days.

What does 2019 look like for you?

I look forward to sharing more stories and inspiring others onstage. I will continue as President of my local Toastmaster club and will continue to encourage others to overcome their fears of public speaking. As an Ambassador with the MS Society of Canada, I will continue to exercise my voice at Queen’s Park to change government policies, private industry practices, and public attitudes on ways that will benefit people with disabilities.

What advice do you have for other entrepreneurs?

Focus. When people asked me ‘how are you?’, my response was always, “busy”. I found myself creating a tapestry in my mind of being overwhelmed and overworked. My advice is to focus on achieving small incremental goals. I try not to be ‘busy’ anymore, but rather ‘somewhere between great and awesome’. The legendary Montréal en Lumière festival celebrates their 20th anniversary this year and there’s so much excitement and adventure on tap that it’s truly going to be the best yet with something for everyone at Montreal’s amazing event. This year, the excitement runs from February 21st to March 3rd. The idea that inspired festival founder Alain Simard in 2000 was to energize Montreal during the winter months by bringing warmth, light, festivities and magic to the city, in the heart of Quartier des Spectacles. by phil leconte Going into its 7th year, the annual Port Credit Comedy Festival (PCCF) will celebrate the very best of stand-up comedy from February 22-24. With five amazing shows over two venues, Clark Memorial Hall, and new this year, The Crooked Cue, the PCCF has truly outdone itself with amazing well known comics performing at intimate venues. As in years past, they are expecting to sell out for all performances. In today’s digital world where it’s a constant battle for clicks, reads, likes and shares, there’s a multitude of ways each of us have to grab a seat at the proverbial online table. 2019 sees an acceleration in being able to create, promote and expand yourself, regardless of what exactly it is you do. From entrepreneurs to artists to food and drink enthusiasts and everything in between, we’ve all got something to share with the world. The beauty of this is that you can do the impromptu, low-fi content (of course, planned content also works here) and push your message out immediately. Maybe you’re showing a new product, a recent

renovation, what you’re working on or even shout-out another business/person. If you’re struck by inspiration or have a message that others may appreciate, hit “record” and create your clear, concise and short message.

LEAVING YOUR COMFORT ZONE

Easy to say, hard to do and certainly worth trying. Start with something small for 30 days so you can evaluate it and see how much it’s helped you move forward. For me, it’s putting my face out there for Modern Mississauga Media. It could be a 60 second video recapping my week, acknowledging my clients and readers or even something quirky, like “this is how I roll my socks.” Whatever the outcome, you’ll gain knowledge and experience and hopefully, grow your business/brand.

INTERACTIONS

Interacting with your online community is, to me, more important than what you post. Engaging with those who’ve taken time to comment on your content is a sure-fire way to build a connection with them. While I personally don’t “feed the trolls” I do read every comment and give a genuine comment in return. It’s also a great way to start a conversation and learn more about your audience…you may even receive valuable insight into how your brand is perceived/received.

eggplant parmesan by shai mandel Chef Shai from Rooks to Cooks shares her mouth-watering Eggplant Parmesan recipe with you. It’s an easy recipe that engages the whole family. There are many tasks for children of all ages, such as, measuring ingredients, whisking, dredging the eggplant, helping with the layering of the eggplant slices and you will have lots of family fun and learning opportunities in the kitchen. Note: this recipe yields 2 servings, so you may need to double the ingredients depending on the size of your family.

ROOKS TO COOKS’ SIGNATURE EGGPLANT PARMESAN Yield: 1 loaf pan (2 servings)

INGREDIENTS: • 1 eggplant sliced in 1/2 inch thick rounds • 2 eggs • 60ml water • 1 clove garlic • 5g salt • 3g pepper • 60g all purpose flour • 60g panko bread crumbs • 400ml Tomato sauce • 50g shredded mozzarella cheese • 50g grated parmesan cheese • 70ml vegetable oil

DIRECTIONS: 1. Preheat oven to 350F. Line a loaf pan with parchment. 2. Sprinkle the eggplant with salt and let it rest in between 2 pieces of paper towel for 15 minutes. 3. Meanwhile prepare the egg wash by whisking together the eggs, salt, garlic and water. 4. Prepare your breading station by putting the flour, egg wash and panko all in their individual bowls. 5. Dredge the eggplant rounds in flour, then dip in the egg wash and then coat fully in panko. Set aside. 6. Heat vegetable oil in a frying pan over medium - high heat. Fry as many eggplant rounds as possible at a time, flipping once, until both sides are golden brown. Once cooked, remove from pan and let drain on a cooling rack. Working in batches fry all the eggplant slices. 7. In a 1/2 liter container, mix together the parmesan cheese and mozzarella. 8 Spread tomato sauce along the bottom of the loaf pan. Be sure it is completely coated. Top with a layer of eggplant rounds. Drizzle with more sauce followed by ⅙ 1/6 of the parmesan-mozzarella mixture. Add another layer of eggplant, sauce and cheese mixture. Repeat until all the eggplant slices have been used up. Be sure to end the layering with the cheese mixture. 9. Cover loaf pan with tin foil and bake for 30 - 45 minutes or until eggplant is soft. 10. Remove from oven and let rest for 20 minutes before serving.

For a while it looked like we might skip right over winter, as temperatures have been rather moderate and we hardly had any snow in the last few months. But old man winter made a sudden and brazen appearance in Southern Ontario this past week with a major storm that brought significant snowfall amounts and bitter cold temperatures to boot. The first blast of winter can often impact our wine selections. And while white wines can certainly be enjoyed year-round, as temperatures drop drastically and that bitter cold air sets in, we inevitably start to reach for those rich, full-bodied reds on a more regular basis. In the height of winter when it’s freezing outside, there is nothing better than curling up on the couch in front of a roaring fire with a bold red. The tannins in red wine can warm you up when there’s a chill in the air. Bold reds are not only perfect for fireside sipping, they are also natural pairings for the hearty dishes we crave this time of year. And whether your favourite winter comfort food is prime rib roast, a classic chilli, short ribs, beef stew, or a hearty soup, a structured and robust red with a good balance of fruit, alcohol and tannins will stand up to this wintertime fare. Below is a small selection of wonderful winter reds from the Wineries of Niagara-on-the-Lake that are sure to warm you up on a cold winter day. 1. THE HARE WINE CO. – 2013 NOBLE APPASSIMENTO, $120.00: A classic blend of three noble varieties with Cabernet Franc taking centre stage. Big brothers Cabernet Sauvignon and Merlot play a supporting role in this rich and boldly blended Appassimento style wine. 2. STRATUS – 2014 STRATUS PETIT VERDOT, $48.00: Newly released with less than 100 cases produced. A rare wine for Ontario and one of the unique varietals planted at Stratus. Petit Verdot is full-bodied and high-spirited. Drinks well now or will cellar for more than a decade. 3. CHÂTEAU DES CHARMES – 2016 EQUULEUS, $45.00: Our flagship red wine, Equuleus is a classically styled Bordeaux blend. The wine is rich and complex with flavours of cassis and dark chocolate and will continue to develop in the bottle for 5-10 years. 4. MARYNISSEN ESTATES WINERY – 2015 PLATINUM SERIES CABERNET SAUVIGNON, $39.95: Rich and complex with supple tannins and a long finish. Made from some of Niagara’s oldest Cabernet Sauvignon vines. 5. COYOTE’S RUN ESTATE WINERY – 2015 ARIA, $34.95: This full bodied Cabernet Sauvignon is blended with 11% Merlot and barreled in French oak for 16 months. Featuring notes of ripe plum, black fruits and dark chocolate. Aria will continue to develop for 5-10 years. 6. NIAGARA COLLEGE TEACHING WINERY – 2017 BALANCE SYRAH, $25.15: a classic example of a cool climate Syrah, the palate is full and well-structured with medium tannins and a warm, spicy finish.
