Editor's Letter Welcome to the Spring issue of Mississauga’s magazine; we’re happy you’re here. In fact, we wouldn’t be here without you… so thank you! With winter far in the rearview mirror, we’re welcoming warmer weather, the resurgence of leaves on trees and spending more time outdoors. It’s also a popular time to clean up and get reorganized after a long winter and that’s what our feature article focuses on. You’ll also find similar themed articles in the following pages. We introduce the 2019 Culture@ Riverwood Series, Mississauga’s new Poet Laureate Paul Edward Costa and do a deep

Visual Arts Mississauga FUN FACT #1: VAM is one of Mississauga’s busiest art galleries and creative centres is nestled among the trees in the heart of Riverwood Over 450 artist members call Visual Arts Mississauga (VAM) their creative home. VAM’s stunning centre is surrounded by Riverwood, 150 acres of urban wilderness located off Burnhamthorpe Road West at the Credit River. It’s a thriving creative hub, offering a myriad of fine arts courses to over 2,000 children, teens and adults annually and open to the public from September to June and all are welcome to explore the centre. FUN FACT #2:
VAM was Mississauga’s original arts organization Before the creation of the Mississauga Arts Council, VAM was established in 1977 by a group of passionate local artists. VAM first held its meetings at Huron Park Recreation Centre before moving to the Springbank Visual Arts Centre (now part of the University of Toronto at Mississauga). The centre provided the first public space for Mississauga’s arts community to gather. In May 2019, VAM celebrates its 41st anniversary.

Experience over 30 public exhibitions annually in The VAM Gallery VAM’s resident Exhibitions and Events Coordinator Eldiana Begovic skillfully curates a variety of public exhibitions including their annual Members’ Show & Sale, six Member Theme Shows and two Instructor shows. Paul Edward Costa Mississauga’s New Poet Laureate by jay kana We speak with Mississauga’s new Poet Laureate, Paul Edward Costa, in our ongoing Modern Artist series. An experienced poet and writer, he’s frequently performing, creating and inspiring others in and around our community. Join us in congratulating him on this wonderful achievement as we learn more about this influential artist.
What inspired you to apply for Mississauga's Poet Laureate? What attracted me to it was that I could help new writers know and learn things I wish I’d known when I started, and the responsibilities listed were very similar to the activities I was already involved in like writing, spoken word, and organizing literary events.
What's your primary objective during your tenure? To make sure that the city has the most incredible group of Mississauga poets applying to the Poet Laureate position when they look for the next one.
How can we increase awareness for the literary arts in Mississauga? The first step is connecting local writers to a variety of literary journals and publishing press opportunities, and by encouraging Mississauga writers to get involved in the circuit of spoken word performance opportunities throughout the GTA and places beyond.
Name two artists that have inspired you I’m inspired by Samuel Beckett’s perspective and minimalism, as well as Harlan Ellison’s passion for the literary arts, and support of fellow writers, though he had his faults.

You're quite active in the local arts scene what do the next two years look like for you? I’ll be involved in civic functions as a poet and spoken word artist, giving talks to the Mississauga Writers’ Group, co-organizing the new “Verses Out Loud: Poetry and Spoken Word Open Mic” with the Mississauga Arts Council, hosting the YTGA Open Mic series at Studio.89, and I’ll be looking to write more non-fiction promoting Mississauga writers. I also have a book of poetry coming out in August from Kung Fu Treachery Press.
What advice do you have for other poets/writers/artists who are looking to further their craft? Study various styles and techniques of your medium(s) and try to incorporate whatever they find useful into their own style. I was recently on a Quebec tourism trip with some of the most respected, talented and brilliant writers in the travel industry and as an ice-breaker question, we were asked what our favourite destination was. My answer? Saskatchewan. Yes, I’ve been fortunate to have experienced a numerous places yet the one that stood out the most is good ol’ SK. Saskatoon enthralled me with its vibrant dining and arts scene, brimming with charm and splendid scenery. Regina roped me in with its energy, walkability, attractions and their delicious food and drink culture. During a wonderful week in the prairies, I filled my notebook and camera with mountains of memories. If you’ve been, I’d love to hear about your journey. If you’re considering visiting here, I encourage you to. If it’s not on your radar, I hope it will be after reading the following pages.

SASKATOON WHAT TO DO
The history-rich Wanuskewin Heritage Park is a short drive from the core and is dedicated to sharing the Northern Plains Indian culture over the past 6,000 years. This nearly 600 acre National Historic Site of Canada provides a detailed look at this historic gathering place and provides a detailed look at its significance to the First Nations history. Their “Tipi Sleepovers” are a wonderful way to become immersed in their local culture and history. Remai Modern Saskatoon’s beautiful Remai Modern art museum opened in October 2017 on the banks of the South Saskatchewan River. Described as “a thought leader and direction-setting art museum that boldly
collects, develops, presents and interprets the art of our time,” this is a must-experience destination for any traveler. Elegant achitecture, nearly 125,000 square-feet of space, four levels, 11 gallery spaces and an approachable feel contribute to this remarkable facility. Riversdale Neighbourhood The very walkable Riversdale neighbourhood has something for nearly everyone. Experiencing a resurgence in popularity, there are plenty of quaint shops and restaurants to visit. Catch a flick at the historic Roxy Theatre, stop for a sip at a variety of cafes or enjoy the year-round Farmers Market.

Riversdale’s The Odd Couple blends traditional and modern Chinese food that offers vegan, vegetarian and meat-based dishes in an attractive, stylish dining room. Whether it’s a quick lunch or a longer dinner, this local gem comes highly recommended.
Primal If traditional Italian fare is what you’re into, Primal is right up your alley. What makes them attractive, aside from the delicious food, is that they use Saskatchewan heritage grains & whole animal butchery. Baba’s Perogies Canada’s only drive-thru perogie restaurant has a remarkable following and their food quality is superb. They make up to 10,000 perogies per day…by hand! Baba’s is a well-known and well-visited spot, and they’ve earned the reputation of the best perogies, one guest at a time. Black Fox Farm & Distillery Saskatoon’s newest distillery boasts that 90% of what’s in their products are grown on-site and are one of the rare true “farm-to-still” distilleries in North America. Family owned, they’ve started off tremendously by winning the award of “World's Best Gin” in 2018. Plus, owners Barb and John earned Entrepreneur of the Year by Saskatoon Achievement in Business Excellence in 2018. 9 Mile Legacy Brewery A century ago, the families of owners Shawn and Garrett grew up with their houses nine miles apart, hence the aptly chosen name. Fast forward to current day where the brewery approaches five successful years of crafting delicious products for happy customers, both new and existing. Sticks and Stones The brainchild of Top Chef Canada’s 1st winner Dale McKay, Sticks and Stones blends mouthwatering Korean and Japanese cuisine that impresses the eyes and taste buds. Top quality ramen, sushi and sake are but a few of the diverse and delicious offerings.

The Delta Bessborough is truly a stunning building that overlooks the river and is simply magnificent. From its Châteauesque-styled design to the ultra-comfortable and elegant rooms, this is one of my favourite Canadian hotels. Stroll the grounds for incredible snaps of the castle-like exterior plus the Broadway and University bridges.
REGINA WHAT TO DO
A touch west of Regina via the Trans-Canada Highway is where you’ll find the wonderful Western Development Museum in Moose Jaw. One of four locations, this location focuses on transportation with an amazing assortment of planes, trains and automobiles. RCMP Heritage Centre In addition to being where every Mountie is trained, it’s also one of Destination Canada’s Signature Experiences Collection. With excellent exhibits and a rich history worth learning about, a visit here will show you where the RCMP came from through to modern day. Wascana Centre This over-100 year old, 2,300 acre urban park shows what smart city planning can do. In the middle of Regina, the landscaping is gorgeous, there are oh-so many walking trails and the gem is the 320 acre Wascana Lake. It’s also where you’ll find a museum, art gallery, science centre and other impressive buildings.

continued... 13th Avenue Make sure you camera is charged before you stroll on 13th Avenue between Albert to Elphinstone. This is where you’ll find several street murals, quaint shops, cafes and a unique feel for Regina. Pop by Takeaway Gourmet for some of the best cheeses and meats around!
WHERE TO EAT AND DRINK Rebellion Brewing The resurgence of The Warehouse District is led in part by Rebellion Brewing’s Mark Heise. An active community member, Rebellion has won a plethora of awards and offers both a great selection of standard and seasonal beer. The atmosphere is inviting, the service is stellar and there’s always excitement in the air.
Over The Hill Orchards One of my favourite scenery-based restaurants (the food is topnotch as well!) comes via this venue. Their incredibly popular “SupperIn The Orchard” series runs every Friday and Saturday from May until October. Presented with the Culinary Federation of Regina, a different local chef will create a multi-course supper using mainly ingredients from local farms and their orchard. Crave Kitchen and Wine Bar This award winning restaurant is led by Regina’s Chef Jonathan Thauberger primarily uses local ingredients and suppliers. Situated in the historic Assiniboia Club, Crave offers a variety of premium offerings from seafood, to beef, vegetarian options and of course, a very healthy wine selection Skye Café and Bistro Offering fresh, seasonal, and healthy cuisine? Check. An environmentally sustainable seed-to-plate restaurant? Check. Owned by a wife and husband team that are passionate about what they do? Check. Their mandate includes reducing waste, reducing their carbon footprint, and supporting local farmers. Simple food is far from boring food here. Their tagline is spot on: “At Skye, there is no limit!” Avenue Restaurant Remember Dale McKay from the Saskatoon part of this article? Well, he’s back in, this time via Avenue, an upscale new restaurant. It’s been described as “a modern take on comfort food with French influence and global flavours with a vast cocktail program featuring classics and creations.” My take? It’s downright delicious dining with smart, savoury options and a creative cocktail list. If it wasn’t my last meal in SK, I’d have gone there again the next day. 641 Grill and Motel A touch north of Regina is where you’ll find the rustic 641, named after the nearby highway. Classic bar food is prepared exceptionally well (get a double order of the hot wings) and the service is charming. Old license plates and vintage posters and signs pepper the walls for a memorable experience and Instagram-worthy shots.

Cartagena de Indias, the jewel of Colombia, is a city of adventure, charm, wonderful cuisine, vibrant colours and history - which included marauding pirates necessitating the constructing of walled compounds and castles – all waiting to be explored. Cartagena is the perfect spot to get your fill of Latin history, culture and amazing food. As a trendy tourist destination, it has been and still is, an inspiration to artists and writers – including the Nobel Prize winner, Gabriel Garcia Marquez.

You’ll love Cartagena’s thriving culinary scene, everything from upscale dining with Michelin style food and service - to colourful street vendors serving exotic fruits and vegetables. One of my favourite restaurants was Carmen, where I sat on a lush tree-filled patio enjoying an artfully presented salad and ceviche. Another is the upscale Marea by Rausch Restaurant, relaxing on their waterfront terrace I was served amazing dishes accented with phenomenal river views.
WHAT TO DO
There is a lot to do in this incredible city, visit Las Bovedas a bustling market for unique souvenirs and beautiful hand made mochila bags, take a coffee tasting class at Café San Alberto or a rum and chocolate tasting at Sofitel Legend where you’ll sip some of the finest aged rum in the Caribbean. You can see 135 species of wild birds at the National Aviary or take a walking tour
by some of the city’s grand old colonial homes. If you’re into art, check out some of the cities amazing galleries or visit The Getsemani, a cultural neighbourhood filled with amazing street art and beautiful murals. Still got energy left – brush up on your salsa at Crazy Salsa, where professionals will hone your moves. For a beach getaway the Rosario Islands are a short boat ride away.

Cartagena also offers great choices when it comes to hotels. Try one of the historical residences, now restored and housing luxurious boutique hotels with airy courtyards. Across the world technology is changing the way cities, and citizens, work. Mississauga’s Smart City initiatives are focussed on creating vibrant, inclusive communities with a high quality of life. A “Smart City” is one that uses data and communication technologies to increase operational efficiency, improve government services and develop vibrant communities. This includes free public Wi-Fi, open data, hackathons, Advanced Traffic Management, online services, mobile apps, social media and emerging technologies such as Artificial Intelligence (AI), 5G, and an Internet of Things (IoT) network that can help with everything from traffic management to air quality. Mississauga is already a Smart City. As a relatively new city, Mississauga has been able to build an extensive digital infrastructure and over 150 digital services.
We are currently working on a Smart City Master Plan that will guide the future direction of technology for the city.

EXPERIENCE THE NEW
Whether it’s checking out new live music, visiting an art gallery, a new restaurant or retail store in the city or strolling through a new neighbourhood, there’s value to be had in experiencing new things. You may find a new favourite spot that recently opened or stumble across an existing spot that you become enthralled with. Whether it’s rediscovering Malton to dining at the hidden gem that’s KAGE Restobar, our city has plenty of pockets that are waiting to be discovered and enjoyed.
SETTING/ RESETTING ASPIRATIONS
Creating and or refocusing on aspirations has been a crucial part of my personal and professional growth. You could be considering finding or creating a new job, new hobby, new experience, traveling, or anything else. What works for me is creating attainable aspirations as part of a master matrix. If I’m looking to, for example, improve my Instagram network for Modern Mississauga Media by 50% by year end, I’ll break it down into weekly and monthly realistic targets. Looking to improve your daily step count? Add a bit weekly opposed to going from 3,000 to 30,000 right away. Failure can be tricky and discouraging but by creating a sustainable, strategic and manageable plan, you’ll maximize your success rate. Taking stock of where you are, what you want and what you need is helpful on various aspects and it’s greatly helped me continually move forward.
AT HOME
The ever-popular de-cluttering is a rite-of-passage at my house every spring. If you’re doing a wardrobe review, consider putting some of your items up for sale if they’re in good condition to make a bit of extra cash. What I do is take all of my clothes I haven’t worn in the past 12 months to Value Village to create some extra closet space. Pick your donation location of choice and give your clothes a second life. Alternatively, holding a garage/street sale on your own or with neighbours/friends is another route to refine your closet space. It’s also an efficient way to move seldom/never used items in your garage, kitchen and basement. Got a ton of stuff? A junk removal company is a good option if you don’t have the time to do it on your own.

Another constant for me is reviewing and updating my social media accounts. Since we can spend up to hours a week on social media, updating your friends/ connections lists, pages you like and curating your newsfeed is something worth spending time on. It’s a great way to discover new local businesses that would appreciate the digital support, delve into something new or find unplucked gems both near and far. I’m getting better at this but still not quite ritualistic – I try and clean up my phone on the first of every month. From offloading pictures and video to updating contacts and creating more space, I try not to have too much on my phone in case something happens to it. My worry is that if I have a year’s worth of memories on one device and it breaks or gets lost, I’m without it. Yes, there’s the good ol’ Cloud system but knowing I have it in a different location reassures me that I won’t lose my memories. PROFILE 1: 2020 JAGUAR I-PACE

Electric, elegant and extravagant As the automotive world charges forward with electric vehicles, Jaguar’s lavish, luxurious and long range I-PACE is one of the most pivotal modern electric vehicles. It’s a cosmopolitan blend of style, functionality, and handling and with nearly 400 km of range, it can easily perform as your primary vehicle. The 90 kWh battery lays flat along the floor and is put in motion by two permanent magnet synchronous electric motors integrated with the front and rear axles. Throw in all-wheel drive, 394 horsepower and a whopping 512 lb-ft. of torque and you’ve got the makings of something spectacular. Engineered with aerodynamic prowess, the steeply raked windshield, hood scoop, rear diffuser, deployable door handles and overall sleek design are executed perfectly to give you the least resistance as you stop colleting gas rewards points. Driving the I-PACE sees the evolution of “one-pedal-driving” where when you

release pressure from the accelerator, the vehicle will slow down and through regenerative braking, funnel that power to the battery. Yes, the brake lights come on when this happens and the brake pedal still should be used to come to a complete stop or to help avoid a collision. The handling, cornering acceleration and daily driving score very high marks and there’s certainly a sturdy feel while in motion as the wheels are pushed out to the far corners. The interior is an exercise in simple, modern luxury with flashes of futuristic technology. Two touchscreens control nearly everything and the elegant dashboard is one of the best in class. The ultra-comfortable seats, spacious and uncluttered cabin design and the generous space for passengers are all aspects that contribute to the I-PACE being a truly functional EV suited for daily driving. Oh and there’s a respectable 656 L of cargo space to add to its long list of advantages.
Costing starts at a touch below $90,000 for the S trim and tops out at just below $100,000 for the top trim HSE. The option sheet has plenty of boxes to tick if you’re looking to add more. Without options, it still has plenty to offer. Charging the I-PACE can be done in three ways: On a 100 kW rapid charger, you should hit an 80% charge in 40-ish minutes. On a 7 Kw wall box, you’ll reach full charge in 11-ish hours. And finally, if you plug it straight into the wall of your home, you’ll wait 35 hours to get a full charge. Thankfully, the public charging infrastructure is broadening making it easier to drive and charge an EV. The debut of the I-PACE is a crucial point in the automotive world. It’s AJAC’s 2019 Utility Vehicle of the Year, has plenty of range, more affordable than Tesla’s comparison and is helping pave the way to an electric future.

Honda's middle child fits right in The continuously growing appetite for SUV’s/Crossovers in Canada sees another choice in a buyer-heavy market via Honda’s brand-new-to-Canada Passport. This “middle child” SUV slots comfortably between the popular CR-V and big brother Pilot, giving a smart choice for consumers. Appearance wise, it’s got more gusto than the Pilot while not going overboard on aggressiveness like modern Toyota’s. Honda’s pushing the “outdoor lifestyle” card here and yes, it could be taken off-roading but the majority of travelling will be done on a paved path. It’s good to have options, right? Inside, the cabin is roomy, well laid out and ergonomically excellent. I quickly and easily found my ideal seating position in the impressively comfortable driver’s seat and after a full day of driving, there was no fatigue or discomfort. The touchscreen infotainment system is typical Honda, where it’s easy to navigate and yes, there’s a volume knob!
Standard fare includes a power moon roof, heated front seats, heated steering wheel, Apple CarPlay & Android Auto, remote engine starter and plenty more. Moving to the rear, the Passport boasts an impressive 1,430L of cargo space with the rear seats up. Folding them provides a whopping 2,854L of space for a lengthy road trip, moving days and whatever adventures arise. Standard safety features include Forward Collision Warning, Lane Departure Warning, Adaptive Cruise Control, Lane Keep Assist, Auto High Beam and a few others. Throw in the standard LED front, tail and DRL’s and you’ve got an impressive offering, even on the Sport trim. Powering the Passport is 3.5 V6 with nine-speeds, churning out 280 horsepower and 262 lb-ft. of torque, which is the same as the Pilot. Honda’s known for their impressive engine builds and borrowing sure beats building in this case.
On the road, the Passport offers a comfortable ride, has ample power to get you and keep you in motion, handling is respectable for its size and shape and the All-Wheel Drive system is a great winter partner. The Intelligent Traction Management System lets you pick between snow, mud, sand and normal road conditions for better grip. With three trims (Sport, EX-L and Touring) ranging from the low $40K to high $40K mark, Honda’s aiming to move people who’ve got the Edge, Santa Fe and Murano on their short list into a Passport. SUV’s are the primary modern choice for vehicles and the Passport will help keep prospective buyers in the Honda family with a good-looking, utilitarian and multi-purpose option.

PROFILE 3: 2019 NISSAN ALTIMA

A stylish, stellar, steady sedan While the majority of its competitors are investing heavily in to the SUV/ Crossover market, Nissan has poured plenty of resources into their all-new Altima sedan. The biggest change sees the addition of their Intelligent All-Wheel Drive system as a standard feature, something very few others offer. This sixth-generation offering sees a complete overhaul with it being longer, lower and absolutely gorgeous, while there’s an all-new engine keeping you in motion. At first glance, the Altima looks quite sharp and modern with the right amount of crisp design lines and a sporty stance. On second glance, it’s amplified with its “floating” roof design, handsome rear end and an overall upscale feel. Against perennial leaders Accord and Camry, the new Altima is the best looking. Inside, the overhaul continues and the cabin has a premium fit and finish to it and thankfully, they kept those best-

in-class zero gravity seats. Spend two hours in traffic or two hours on open roads and these remarkable seats will treat you to the pinnacle of comfort. The dashboard (thankfully) has larger numbers making it easier to read, the HVAC system is oh-so simple and the standard eight-inch infotainment screen is quite user friendly. Rear passengers will enjoy ample head and leg room, while the overall spacious atmosphere is a large upgrade to the outgoing model. Power-wise, Nissan’s new 2.5 four-cylinder engine delivers 182 horsepower and 178 lb-ft. of torque through a CVT. The drive quality is much improved and along with the quiet ride, the handling, cornering and acceleration see vast improvements. Canadian winters will definitely be a selling point toward the new Altima’s standard AWD. Fuel efficiency is rated at a combined 8.0 L/100 km. Apple CarPlay and Android Auto come standard, and on the top two trims, SV
and Platinum (excluding the base S trim) you’re given Blind Spot Monitoring, Rear Cross Traffic Alert, Emergency Braking with Pedestrian Detection, and the impressive ProPILOT Assist system. Jump to the top Platinum trim and enjoy a surround view camera, leather seats and a Bose audio system. Will the gamble on sedans pay off when the sales and consumer behaviour data points towards SUV’s? There’s no definite answer today. However, with the Altima putting a strong foot forward, (well, four of them via AWD) and giving their customers a smart and stylish sedan option, that answer may change in tomorrow’s world.

RECEIVES THE GROW GRANT by mandy salter On Friday April 5th, the Art Gallery of Mississauga welcomed the community alongside members of the press and local politicians to celebrate the AGM’s successful securement of the highly competitive Ontario Trillium Foundation Grow Grant. This significant grant supports the delivery of a community engaged project that builds upon the success of the AGM’s proven model with a $434,000 grant over 36 months to assist with staffing and program costs involved, expanding on an empowering community arts initiative. This project engages with the ‘archeology of the present’ and activates at the AGM and across and within Mississauga’s diverse communities through multidisciplinary workshops centering the idea of borders as a conduit for connectivity through the act of storytelling. Enriching people’s lives through arts, culture and heritage, this initiative supports individual engagement with community-based arts creation, and will impact on the lives of 10,500 people in the community. Border Crossings creator’s Sharada Eswar alongside AGM’s Director and Curator Mandy Salter, Local MPP Natalia Kusendova, MPP Deepak Anand and Mayor Bonnie Crombie and community partners celebrated this accomplishment that has secured $434,000 over the coming three years. The AGM’s border crossings project will activate workshops at the gallery and within the community, engaging with multidisciplinary professional artists and emerging mentees alongside diverse community members and groups. border crossings celebrates the Art Gallery of Mississauga’s commitment to creating connections and providign supports for diverse creatives and communities positioning art as a common denominator. This vital initiative engages with Indigenous and non-Indigenous artists and communities to activate ideas through multidisciplinary art forms. The project intends to create platforms for personal and collective reconciliation and questions colonial narratives by presenting parallel histories and stories, while exploring relationships between the spiritual, the uncanny and the every day. MVF and all its mini events are completely free!
2.Something new for our City:
MVF is the first event of its kind for Mississauga. Our festival started as an idea to bring veganism to share with the community and quickly grew to Ontario’s largest Vegfest. In 2018 we attracted nearly 10,000 people to the Port Credit area, they came from all over the GTHA and our furthest attendee was from Buffalo NY! We welcome everyone, I mean everyone, to spend the day with us, eat some great food, shop, learn a little about what veganism is and what it means to us and to have a great time.

KidSanctuary: This is the heart of Mississauga Vegfest. KidSanctuary is located on the upper floor of the Arena and has an all-day schedule of FREE mini events created for Kids. The events include group-led crafts, music classes, dancing, cooking workshops, a Zumba class and a woodworking workshop. There is also an all-day eco-workshop called “Lettuce Learn Academy” where kids can participate in activities geared towards learning about our environment and how to be more eco-conscious. There will also be all day activities such as face-painting, colouring, a dramatic play area, a reading nook and sensory tables for very young children.

Be prepared to eat! With 100+ vendors there is something for everyone. We will have tons of food, food trucks, beauty & personal products, clothing, décor and more. Everything is 100% cruelty free.

Since the crowds for MVF were unexpected there was some crowding. We heard the feedback and have made some big changes for 2019! MVF is an indoor/outdoor festival this May which will provide plenty of space for all the strollers, our elderly, and our friends with accessibility needs. We want everyone to be able to fully enjoy their experience and are working on making MVF safe and enjoyable for everyone.
6.Sanctuaries:
Someone has to be the leader and care for the animals that we are all fighting for and our sanctuaries are those heroes. Before you go home please take a moment to check out the rescues and sanctuaries and learn about their animals and initiatives, maybe even volunteer for a work visit or apply to be a foster or donor. Mississauga Vegfest and the animals will thank you!

Fiddleheads & Ramps Quiche Fiddleheads are the furled fronds of a young ostrich fern. They are chock-full of vitamins A and C, rich in antioxidants and a great source of fibre and omega-3 fatty acids. Ramps, also known as wild leeks, are a North American species of wild onion widespread across eastern Canada and eastern U.S. If you are experienced at foraging, spring is the time to look for them. If you would rather buy them, look for them at Ontario Farmers’ Markets and local grocery stores. Yield: 1 quiche PREPARING FIDDLEHEADS: Clean the fiddleheads before use; immerse in cold water and clean each one by removing the brown husk. In a medium pot, boil water. Use a steamer basket, and steam for 10 minutes until bright green and tender. Now they are ready to use in your recipes.* INGREDIENTS: • 3 large eggs • 80 mL heavy cream • 120 mL milk (preferably whole) • 2 ounces Parmesan, shredded • 5 ramps, leaves chiffonade** and bulbs removed (wash ramps, trim off bulbs; use chiffonade method to create thin ribbons of the leaves) • 9 fiddleheads, whole (wash, pre-cook for 10 minutes as per instructions above) ** Chiffonade: culinary term meaning to cut herbs into very thin ribbons. Roll up the leaves tightly, use a sharp knife to slice the roll cross-wise as thin as possible, then carefully separate chiffonade leaves.
DIRECTIONS: 1. Preheat oven to 350F. 2. Whisk eggs, cream, milk, salt and pepper together. Whisk in chiffonade ramp leaves. 3. Place cheese in the bottom of the pre-baked quiche shell. Assemble cooked fiddleheads in bottom of quiche shell. Pour quiche filling over top until it reaches the edge. 4. Bake at 350F until set, for approximately 35 minutes. 5. Let cool until warm, cut and serve. SUBSTITUTIONS / ASPARAGUS & LEEK RECIPE: • Replace Fiddleheads: use 8-9 Asparagus spears; wash, cut into bite-size pieces (remove tough ends); • Replace Ramps: use about ½ leek; wash, thinly slice white and light green leek leaves; • In saucepan, melt 1 tbsp butter, sauté leeks and asparagus for 6-7 minutes until tender-crisp; let cool before use in the quiche. *Source: Health Canada website: https://www.canada.ca/en/health-canada/services/ food-safety-fruits-vegetables/fiddlehead-safety-tips.html#a3

After a bitter cold winter, Canadians from coast to coast are eagerly awaiting spring’s arrival. In Ontario, we remained in winter’s icy grip in the first part of March, but according to forecasts a warming trend is on the way. So at last we just might re-emerge from this extended period of hibernation and start enjoying warmer temperatures and brighter days. Spring is a time of renewal and change. It’s also the perfect time of year to take inventory of what’s in our cellars and make a list of wines to stock up on for the season. Spring calls for refreshing, lighter bodied styles with more pronounced acidity. Coincidentally, these are the wines that pair best with the lighter dishes we enjoy this time of year, and they are perfect for sharing with friends while enjoying the longer days and basking in the warm sun. When buying wines for spring consider crisp and aromatic whites, zesty and fruit forward rosés, light fruity reds and crowd-pleasing sparkling wines. Some may resist the idea that the wines we drink should change with the seasons.
And while it’s perfectly fine to enjoy your favourite wines year-round, why not add a little variety to your rotation? Below is a small selection of refreshing wines for spring from the Wineries of Niagara-on-the-Lake: LAKEVIEW WINE CO. – FRESH SPARKLING ROSÉ $15.95: A blend of Gamay Noir and Riesling, made in the cuvee close method. With an enticing orange colour this wine has honeyed fruit aromas. The palate is rich with soft tannins. STREWN WINERY – 2017 SPARKLER, $24: A lovely aromatic Sauvignon Blanc, made using the cuvee close method. It showcases an abundance of citrus fruit with yeasty notes and a wonderfully crisp and refreshing finish. TRIUS WINERY – 2018 TRIUS ROSÉ, $17.95: A delicious blend of Gamay Noir, Pinot Gris and Syrah. It offers a burst of refreshing fruit flavours including red berries and melon. WAYNE GRETZKY ESTATES - 2017 PINOT GRIGIO, $14.95: Refreshing fruit flavours of melon, apple and pear dance on the palate, followed by notes of citrus and green apple freshness lingering through on the finish.
