by mike douglas You can hear the echo of this cry in empty office buildings across the country. At the Mississauga Arts Council, our staff and board are working remotely to make an impact in helping to accelerate the transition of the arts community online. In February and March, four focal points in our digital transition are happening concurrently. Family Day Weekend is highlighted by the 100 minute musical documentary tribute to Hazel McCallion on her 100th birthday. Presenting performances from 160 musicians and dancers with best wishes from the Prime Minister, the Premier, the Lieutenant Governor and many more, this heartwarming webcast shows off the world’s most awarded mayor and the dynamic musical talents who admire her so.
Going digital–is easy to say, it's another thing to do it. Thursdays at 7pm in February and March, MAC offers free professional development webinars. TD Culture Lab will provide seven digital skills and information sharing events, conducted by experts on subjects ranging from recording at home to no budget movie making, from grant writing to tax planning. On February 22 and March 15, Heather Christine with Matt Zaddy, host MAC Arts Café, home to professional and emerging singers, keeping musical spirits alive in an entertaining, live at home open mic show, seen by over a thousand viewers and sponsored by generous small businesses. Away from the lights, MAC’s new Creative Director, Jacqueline Mak and Administration Lead, Susan Durnin, are collaborating with website development companies to create the new arts community Hub and to rejuvenate MAC’s current website. Looking ahead, we will be taking the Mississauga Arts Awards (aka The MARTYS) online in May for a virtual awards ceremony. How has Polarity stayed active through the pandemic?
We’ve been taking the down time from shows to write and record. We’re releasing a new acoustic tune called “Hello Sahara” on February 1st to our loyal fan base who’ve been so patient with us. We’ve also used the pandemic to unplug and focus inwards. As an established presence in the Mississauga music community, what advice do you have for newer bands/artists?
Respect your bandmates and the people you work with. Without each and every one of them, you can’t do what you love. Nobody want’s to work with egos. What do you have planned for 2021 music-wise?
Release new music. We’ve got new tunes ready for the studio which we’ll record live off the floor and accompanied with in studio videos. Live off the floor is something we haven’t really done before, so it will be nice to give our fans new music with a live feel. What are you most proud of as a band?
Our growing fanbase in the Toronto music scene. It’s such a hard city to crack and local bands have a hard time pulling large audiences. Luckily, we’ve always grown our audience there.
Our last Lee’s Palace show was packed with a mosh pit going past 1am during the headlining slot, and that’s saying something! Also, the amazing industry talent we’ve worked with who we have great relationships with including Grammy winning producer David Bottrill, master of mastering Joao Carvalho, and producer’s Darren Magierowski and Jill Zimmermann of Jukasa. We’re very lucky to have the support and belief of our fans and industry heavy weights. Polarity's bio includes "challenging the current understanding of popular songwriting." Can you elaborate on that?
We’ve always written music that speaks to us , including weird song structures and odd time signatures, so we push the boundaries of what’s considered “mainstream”. Often times we hear “I don’t really listen to this type of music….but I really like what you guys do” and to us, that’s a huge compliment and mission accomplished. What's your message to inspire and lift up others in the new modern world?
Stay kind, don’t judge others, and unplug from the chaos of whatever disturbs your peace. When you tune into what truly feeds your soul, you’ll find yourself living a more authentic experience and that alone will feed your desire to inspire others to do the same. How have you stayed creatively active through the pandemic?
I released my summer single “Free” and created YouTube vlogs with topics I could personally relate to and hoped they’d help others. I’ve also been busy making music videos with “Free” and graciously winning Video of the Year with the Mississauga Music Awards! We finished recording my album in B.C and I’ve been writing new songs with new demos ever since.
As an established presence in the Mississauga music community, what advice do you have for newer bands/artists?
Love what you do and enjoy the journey. The music industry is about creating beautiful art but it’s also a business, and it takes time to grow. If you’re willing to put yourself out there, work hard and learn, then you’ll go far. Know who you are and the value you bring to this world.
What do you have planned for 2021 music-wise?
I released “Wine Down” to radio in January and played a recorded performance of it on CHCH Hamilton’s Morning Live, and have another performance of the tune coming up on Today in Nashville in February. From there, in the Spring, I’ll release a new song and music video
What are you most proud of as an artist?
I’m proud of how far I’ve come as an independent artist and how my music has impacted people. I had no idea what I was doing when I started and have learned from others, by learning from mistakes ,and never taking no for an answer. I’m seeing success now because I consistently made conscious decisions to continually invest in myself.
Describe your sound and style to a stranger
I’m a country recording artist that’s influenced by ear-catching pop melodies and love to share stories based on my personal experiences, and the experiences of those around me. All of my songs carry a message of empowerment.
What's your message to inspire and lift up others in the new modern world?
Whatever happens and whatever we go through in life will never be more than we can handle. Whatever the challenge, there’s always a silver lining if you look for it. Do what makes you happy, be healthy, stay positive and I hope to see you at a show soon… Much love! elysesaunders.com

Owning a cottage had never been my dream. I enjoy the novelty of new places too much; and besides, I can barely keep up with the maintenance of my own place. But this year was different... When friends and neighbours escaped to their cottages after a long spring lockdown, I admit I was a tad envious. “We just have to check on it,” or “We have some work to do,” they mumbled, as they hopped in their packed vehicles and made their getaways. But luckily for non-cottage owners, a place like Spencer Lakehouse exists. Located in Haliburton, 260 kilometers north of Mississauga, it’s a cottage dream come true. The moment we opened the door, we were greeted by an expansive view of the lake made possible by the floor-to-ceiling windows. A sign in the entrance way read, This is our Happy Place and soon, it was ours, too. The open-concept design was as modern as it was warm, and there were thoughtful touches throughout. “It was a labour of love,” said owner Hue Nguyen, who completely renovated the property to reflect her vision of an ideal cottage stay. She explained that she wanted to change the experience to emulate the more luxurious accommodation she had enjoyed abroad. “We want it to feel like a vacation and don’t want guests to have to worry about anything.” Her vision has been realized in every corner of Spencer Lakehouse. Though I must say that the coffee bar was my favourite touch. As I often do when I travel, I had brought my trusty French press and own supplies.

On the shelves were four different types of coffee makers, a choice of high-quality coffee beans and even a grinder. The aroma of freshly ground coffee was just one of the extras we discovered at Spencer Lakehouse. Others included a candy station, shelves of books and board games, toys and colouring books, cooking supplies and spices, toiletries, diapers and baby supplies, and a Wii video game console. Also, in the 2000-squarefoot property were the more essential features for a luxury cottage experience including washer and dryer, BBQ, fire pit and a large deck. All four bedrooms were beautifully decorated, but more importantly, had super-comfy beds with Endy foam mattresses. With a cottage as gorgeous as this one, you’d be forgiven if you simply wanted to luxuriate inside, but Haliburton is a destination well worth exploring. The Haliburton Highlands is quintessential cottage country with its rolling hills, 500-plus lakes, and rugged forests. Though many people associate it with summer, with boating and drinks on the dock, winter surprises, too, with its abundance of activities and snow-covered landscapes. Here are a just a few of the family-friendly activities to enjoy:

HIT THE SLOPES AT SIR SAM’S
Downhill skiing, snowboarding and snowshoeing enthusiast have been visiting this family-owned business for generations. The ski lifts bring you up to the highest point of the region and offer scenic views of Eagle and Moose Lakes.
OBSERVE AN UNSOCIALIZED PACK OF WOLVES AT THE WOLF CENTRE IN THE HALIBURTON FOREST
At this 80,000-acre conservation area, visitors have the chance to observe the dynamics of an unsocialized pack firsthand. The Wolf Centre is only one part of this remarkable privately-owned wilderness reserve. Its roster of winter activities includes ice fishing, snowshoeing and snowmobiling on 350 kilometres of trails. If you want a more adrenaline -filled winter adventure, try their dog sledding experience!
SNOWSHOE OR CROSS-COUNTRY SKI THROUGH HALIBURTON SCULPTURE FOREST
The Haliburton Highlands has one of the highest working artist per capita rate in the province. Historically, it was the beauty
of the wilderness that attracted so many artists to the region, and one of the best places to experience the beauty of both art and wilderness is at the Haliburton Sculpture Forest. As you follow the forest trails, you’ll discover more than 40 pieces of art by Canadian and international artists. Each piece has its own story. But my fave was the “Sleep of the Huntress” by Doug Stephens. The sleeping woman carved so seamlessly in the rugged, granite boulder echoed the peace I felt as I walked through this forest. In fact, peace, calm and contentment were the sentiments that permeated every facet of our Spencer Lakehouse getaway in Haliburton. WATERFALLS IN ANCASTER Less than an hour west of the city is the wonderful world of waterfalls, housed in the Hamilton area. There’s dozens to experience but if you want to double down on one trip, Tiffany Falls and Sherman Falls pair well. Start with Tiffany Falls and if you’re of a certain age, play “I Think We’re Alone Now” during the closing stretch of the drive. The parking lot comes up quickly so keep an eye on your GPS as you approach. Parking is a flat $5.00 and absolutely worth it for the experience. Once parked, you’ll stroll for about 10 to 15 minutes through the grounds, across two small bridges and reach a raised viewing platform where you can gaze upon the waterfall as it cascades against the backdrop of bedrock exposures. The 21 metre cascade waterfall makes for a great screen background on your digital Device. As it’s a short walk from the car, it’s idea for kids and you won’t get the “I’m tired…carry me, are we there yet?” choruses.

Fun fact: Tiffany Falls is named after Dr. Oliver Tiffany, the first doctor in the area. Drive a few minutes north and you’ll find yourself at the scenic and serene Sherman Falls. You’ll have to park for the same $5.00 (again, worth it) and walk about five minutes (close to 500 metres) to reach your destination. Located on private property, the owners have graciously allowed the public to experience the area so long as you’re respectful and leave exactly what you arrived with. It’s a one to two minute walk from the time you arrive until you reach the 17 metre-high curtain waterfall that flows from Ancaster Creek. The bridge allows a broad view and works well for panoramic pictures.If you go alone, the tranquility is heavenly as the water being pulled by gravity and striking the rocks below creates a sense of calm and peace. If you go with friends/family/a partner, the natural backdrop makes for quite the picture.
THE SCREAMING TUNNEL & THE SHOE TREE IN NIAGARA-ON-THE-LAKE The arched stone tunnel is filled with folklore of a tragic tale about young girl who perished in the tunnel, and who’s dying screams can allegedly be heard today. If you’re easily spooked, plan your visit while there’s light in the sky. The 125 metre limestone brick tunnel is beneath the Grand Trunk railroad tracks and while the bookends of the tunnel are tattooed with graffiti, it still makes for artsy urban pictures that’ll garner a few likes on your social media feed.

THE GANARASKA FOREST

If walking 125 metres isn’t enough for you, the end of the tunnel leads to a portion of the Bruce Trail, where you can boost your step count. On the way back along Warner Road, you’ll notice a peculiar sight; a Shoe Tree. Well, it’s more of a footwear tree as there are ski boots, ice skates, and flip flops. There’s no signage but does evoke questions of “Why here? Why shoes? Who started this? Who’s tree is this? Will the shoes stay there?” Each piece of footwear is nailed to the tree, so it’s unlikely that they’ll ever fall, and left to be gawked at with curiosity. It’s a rare sight in such a rural area but one that creates conversations either amongst yourself or the ones you're with.

One of the most popular spots in the country for biking, plus it boasts remarkable walking, hiking, cross country skiing and snowshoeing trails. There’s over 11,000 acres of adventure to be found so remember to bring snacks and water. Rolling hills and mixed forestry only add to the already high allure here, and be sure to pick up a map to navigate the Central Forest, East Forest and West Forest areas. Dogs can be brought along as long as they stay on-leash, horseback riding is included in the mix and you’ll feel like you’re in a different world, despite it only being just over an hour outside of the city.
If you want to stay local, find your way to The Riverwood Conservancy on Burnhamthorpe, a touch west of Creditview. There are various colour-coded trails to meander through, a plethora of wildlife. There’s ample parking and everything is laid out methodically so it’s nearly impossible to get disoriented. The Culham Trail makes an appearance here at the end of the red trail, so if you’re looking to get some extra steps in, keep on keepin’ on. On the nearly unbelievable side, if you walk from the parking lot to Burnhamthorpe, head west until Mississauga Road and then head north a smidge, you’ll come across Wahoosh Falls, a mini waterfall. Yes, Mississauga has a waterfall!

A car is like your body: it needs proper care and fuel to function healthily. Oil changes, filter changes and tire rotations are vital components. An oil change is the most common service and done every 5,000 to 8,000 km, or ever four to six months, depending on your vehicle. (Consult your owners manual.) The pandemic has seen a reduction in driving but it’s still crucial that you service your vehicle. An oil change will ensure the oil lubricating your engine is smooth and

clump-free as over time, the oil begins to settle and is turned into a viscous substance that makes your engine work harder. This causes bigger and more expensive future issues including engine components wearing out and a possible engine replacement. It improves fuel efficiency as clean oil allows your engine to work more efficiently. Tire rotations are key as the tread in your tires can wear out in certain spots sooner than others. Uneven tire wear leads to an earlier replacement, a rougher ride, and increased fuel consumption. Rotating your tires every 8,000 will help with the even wearing of tread depth and can keep you safer on the road.

On the heels of another record-breaking year in GTA real estate, we find ourselves in a strong winter market. Traditionally if you were to ask a Realtor about the “hottest” market to list your property you would undoubtedly hear back “spring!”, followed by autumn, with summer and winter bringing up the rear. 2020 brought extensive changes to people around the world. From business closures to our lives at home, most aspects of our lives have been impacted. Real estate was not immune to changes. The blending of seasons or a lack of seasonality seems to be a “new normal”. 2020 saw great gains in sales volumes along with increased selling prices. So, during a pandemic and lockdown upon lockdown, why are we seeing a thriving real estate market in Mississauga and surrounding areas?
SUPPLY & DEMAND
Inventory (availability of product (condos, houses, cottages, etc.)) remains low. There are simply more people looking to buy property than there are people looking to sell. Even during the winter months, we are seeing properties sell with multiple bids, better known as the dreaded “bidding war.” Previous winter seasons have generally brought breathing room to agents and their clients, but not this year. Sales volumes in January 2021 are up over 50% year over year, meaning there were more the 50% more sales in the month of January 2021 as compared to January 2020.

Pundits are also predicting that home prices will climb by 10% this year, pushing the average cost of a house in the GTA to well over 1 million dollars.
CHEAP MONEY
With lending rates severely trending downward, many people are taking the opportunity to increase debt load. This increases demand on an already strained real estate market struggling to keep up with its consumers. People have put their dreams on fast forward. Instead of saying “let’s put a cottage on our 5-year plan” people are saying “let's get a cottage now!” Vacationing is down, money is cheap, and future dreams are becoming current realities.
THE DESIRE FOR BIGGER AND BETTER
Working from home has definitely added its disproportionate share to the increased demand for real estate, especially when it comes to rural properties and the aforementioned cottage properties. Work life on a laptop can easily be achieved so long as an internet signal can be had, making working from the cottage, farm or country estate more viable than ever before. This links us back to people accelerating their dreams. Couples working from home in their 900 sq.ft condo have the ability to now sell that property, move west or north of Mississauga and land themselves on a property with a detached house and quite possibly some land to go with it.

I started painting furniture in 2006 when my marriage fell apart making me a single mom. I needed some furniture and looked high and low for a white vanity desk. I didn't realize that it could cost so much and stumbled on a few blogs that spoke of furniture paint that was made in the UK.

I ordered some paint and it arrived in one loooong month! I painted my desk with my new magic furniture paint. I was addicted. When I painted all the furniture in my home white, I realized that I loved it so much that I started to sell small side tables for a profit of $20 each. That was $20 x profit on 5 small tables = groceries for the week! As I became confident in my abilities, my prices rose and our quality of living got better. We were eating better food and we were going places! I was working for one of the big banks in IT and left after 18 years!! I LOVED my job, but wanted to pursue my dream to be my own boss doing what I loved. In 2015, I leased a space in Port Credit to paint furniture and was there for almost 5 years.
In my last year at the shop, I vacationed in Scotland with my boyfriend and daughter. This trip gave me the perspective to realize that I wasn't happy at my shop because I was needed more at home. I left the shop in November 2019. I met so many friends during this time and kept in touch with them all! During my year long break, I reflected and reflected some more. I have 15 years experience in the painting industry and don't want to throw that away. I love it too much! I'm exactly where I'm supposed to be and I'm back in business! I started Redline Athletics Canada to provide a dynamic, yet affordable space for athletes of all disciplines and ages to get faster, stronger, and more durable. We use very few machines and fitness implements, and choose to develop athletes using their greatest tool, their bodies. I’ve had the same set of Logitech speakers (two speakers and a sub) for nearly a decade, they were $30 at the time (today’s prices has them at around $40) and they’ll make a world of difference compared to primitive laptop speakers.

I was going to buy a lamp for my home office to give the room a different feel opposed to only relying on my ceiling light. As I’m immersed in creating video content, I upgraded my existing ring light to one with a tripod and with numerous brightness/warmth settings. Handily, it doubles as a versatile office lamp.
4 >> Laptop Stand
It’s primitive technology as it’s simply a piece of shaped plastic but it keeps the screen level with your eyes and reduces neck and eye strain. I’ve used the same one from Fellowes since 2011 and it’s as good as the day I bought it.
5 >> Monitor
Keep it simple with a 27” monitor for a larger look at daily tasks that’s easier on your eyes, regardless of complexity. Skip the fancy curved and 4K screens. Dell makes terrific ones that are affordable in comparison.

Perhaps one of the most crucial pieces of your home office is your chair. You don’t have to go all out and spend excessively, but definitely do shoot for middle to upper middle class quality wise. We’re fully immersed in a digital world so between SD cards, speakers, external hard drives, microphones, webcams and many others, there’s only so many ports a laptop has. Do away with moving cables whenever you want to plug something into your limited number of ports and pick up a USB hub. Anker is my choice as it’s been sturdy and reliable every step of the way.

I bought my office desk used from Kijiji six years ago and don’t mind the scratches it came with. Having two adorable and playful cats have seen an increase in scratches. A desk pad put a stop to that, added colour to my dark brown desk and with most of them being waterproof, it minimizes any/further damage to your desk.

I would rather be broken up with via text at 3:00 am, use an Android device, eat plain chicken wings and fold a fitted sheet with one hand before I use a laptop keyboard. For those of you that can do it effortlessly, I heartily applaud you. I quite enjoy the extra space a traditional keyboard provides, especially one with a number pad, as my efficiency is increased and I rarely have to touch the Delete/ Backspace key. There’s a plethora of keyboards from those quirky ergonomically correct ones, to the ultra thin Apple ones (which I love!) so know there are plenty of choices for you.
11 >> Wrist Rest
Carpel Tunnel Syndrome can sneak up on you and it’s incredibly painful. Thankfully, it’s avoidable with the help of a wrist rest. You can pick one up online or do what I do, which is fold a facecloth thrice to align my fingers and wrist height.

Earlier this year, Mississauga residents were outraged to find sample copies of The Epoch Times in their mailboxes. Soon after, Canada Post suspended two letter carriers for refusing to deliver the paper. So what is The Epoch Times, and why has it set off such a firestorm of controversy? Let's start with the basics.
WHAT IS AN EPOCH? Either an ancient story of heroes and gods or a hard, adhesive resin with many useful applications. Sometimes both.
WHERE DOES IT COME FROM? No one knows for sure. The Epoch Times has been linked to the secretive, persecuted Chinese religious group Falun Gong, but it could just as easily come from Milton. The most likely scenario is that one of those Shen Yun pamphlets got out of hand.
WHAT'S THE PROBLEM? While The Epoch Times regularly denounces noted authoritarian communist leader Xi Jinping (a good thing), it celebrates noted authoritarian Home Alone 2: Lost in New York character actor Donald Trump (a bad thing). It has variously promoted far-right politicians,
anti-vaxxers, and QAnon-style conspiracy theorists. The paper's staunchly conservative editorial position has concerned advocates of media transparency, who feel the paper should carry a "Postmedia" warning label.
IS THERE ANYTHING ELSE I SHOULD KNOW? Scholars believe that hidden within each edition of The Epoch Times is a secret message that, when found, will reveal the name of its true publisher. After years of painstaking research, I have deciphered the letters J-A-Y-K-A-N. But I can get no further. Like those before me, I fear my progress will end here. I am haunted day and night by vivid dreams of Mao Zedong and Karl Marx, skipping hand-in-hand along a beach strewn with rubble, a blood-red tide rising from the ocean and with it, the end of civilization... wait, what was I talking about?
WHAT SHOULD I DO IF I GET A COPY? If you receive a copy you are cursed. The Epoch Times will not burn and cannot be recycled. To get rid of it, you must mark it "Return to sender" and place it back in your mailbox. After three days, a tiny hunch-backed man will appear. Say, "Away with thee, Dank Charles!" Dank Charles will take the Epoch Times back to the Canada Post Gateway processing facility, crippling the already COVID-addled service and ushering in a new golden age of private, for-profit delivery companies, as God and Ayn Rand intended.

is not a destination There’s this common misconception in our society these days that our lives will be better WHEN we get somewhere. Whether it’s a new something or better something (house, car, job) we’ve been conditioned to believe that these future states are destinations beyond which our happiness lies. This is why so many people think they need to ‘fix’ their fitness in 30 days. They turn to challenges, cleanses and supplements in hopes of finding resolution to their fitness problems. However the reality is that there is no such thing as ‘being done’ when it comes to your health and fitness. The healthiest version of you - the one you close your eyes and imagine when you’re starting off on a new fitness plan - is actually a person who’s been consistent with their goals for a long period of time.

We tend to conflate effort and sacrifice with what’s really important - consistency. Most people who are continually frustrated with their fitness are stuck in a circular ‘fitness fix’ mentality. Something is deemed to be broken. Now they’ve come to terms with investing a certain amount of time and resources to fixing the issue. They decide how much time and resources they’re willing to spend on the fix and they set out to do it. They buy the cleanse, they join the 30 day bootcamp or they start the restrictive diet. At the end of the phase some do stick with it but the majority of people, having exhausted their willpower, return back to normal, feeling accomplished like they gave it their best shot, and feeling better that the ‘fact’ is that it’s just too difficult for them. The real story however is that the healthy you, the person that you want to be, isn’t missing some insane willpower muscle that others were born with. All you need to do is set yourself on the path to lifelong fitness is make an effort to build consistency in the small choices you make everyday and then do them long enough for the benefits of compounding to reveal themselves. Something is better than nothing. If you can’t make it to the gym go for a brisk walk. If you fell off the wagon with your lunch choice make a healthy dinner choice and skip dessert. Have one glass

INGREDIENTS: (Yield: 4 servings) FILLING: • 2 Tbsp of canola oil • 1 Lb lean ground turkey or firm tofu crumbled • 1 red pepper, finely diced • 1 large carrot, finely diced • 1 cooking onion, finely diced • 3/4 cup teriyaki sauce • 2/3 cup hoisin sauce • 1 inch knob, fresh ginger, minced • 2 tbsp of rice vinegar • 1/4 cup sesame oil • 6 garlic cloves, minced GARNISHES: • 1 large head iceberg lettuce, leaves prepared • 1 cup slivered almonds • 4 green onions, thinly sliced)
DIRECTIONS:

1. Preheat your oven to 350F. 2. Place slivered almonds on your sheet pan. Spread them out evenly. Bake for 5 minutes. Shake them around and bake for another 2 - 3 minutes or until light brown. Remove from the oven and season with salt. Let cool. 3. Heat up a large wok (or skillet) over high heat and add 1 Tbsp of canola oil. Add onions, carrots and peppers and saute until 3/4 cooked through, about 4 minutes. Add in garlic and ginger and cook until fragrant, about 2 minutes. Transfer to a bowl and set aside. 4. Prepare the teriyaki sauce; in a small bowl whisk together the teriyaki, hoisin, rice vinegar and sesame oil, set aside. 5. Wipe out the wok and heat up the remaining oil. Add in the turkey or crumbled tofu and cook until browned. Add the vegetables back to the wok and toss to incorporate. Add in 3/4 of the teriyaki sauce and saute until hot. Taste and add more sauce, if needed. 6. Remove from the heat and serve immediately in a lettuce wrap (approximately 1/4 cup of mixture in each lettuce wrap) topped with sliced green onions and toasted almonds. ENJOY!

DIRECTIONS: 1. To roast the chickpeas, preheat the oven to 450F and coat chickpeas in oil, salt, garlic powder and pepper. Place on a parchment-lined sheet pan and roast in the oven for about 20 minutes, tossing halfway through cooking. 2. Peel and chop onion, chop zucchini. Wash kale and leave to dry. 3. In a medium bowl toss zucchini, red pepper and onion in 1 tbsp olive oil, spread on a parchment lined sheet pan and bake for 20 minutes at the same time as your chickpeas. Turn off oven. 4. Prepare your dressing: In a small mixing bowl whisk the egg yolk, Dijon mustard, and minced garlic together. Add white wine vinegar. While whisking vigorously, VERY SLOWLY add the canola and olive oil in a thin stream. DON’T STOP MIXING. 5. When all oil has been added, add the Worcestershire sauce. 6. Fold in the finely grated parmesan cheese. Season to taste with salt and lemon juice. 7. If the dressing is too thick, add some lemon juice, 1 tsp at a time until the desired thickness is achieved. Alternatively, if the dressing is too thin, add more oil (slowly) until the desired thickness is achieved. Refrigerate until use. 8. Toss salad ingredients in a large bowl except for lemon wedges. Dress only the salad you wish to consume to your taste. 9. Gently warm wraps in oven, it will still be warm from earlier. 10. Divide salad and roasted veggies between 4 flour tortillas; wrap all the ingredients in your tortillas and transfer to plate. 11. Serve with a lemon wedge.
