I do have a minor suggestion regarding Modesto To-Do. It would be most helpful if you could also put the day of the week next to the date (ie Friday, June 1st). It would make it easier to scan the listing and plan activities, especially for those of us who can really only do things on FriSat-Sun. I also want to share that last summer my husband flew Modesto to Copenhagen, Denmark (with a few stops in between, of course!). He had a great experience at the Modesto Airport. Wow, back to school. It seems to happen faster every year. Summer seems to go faster and oddly enough, the kids are really itchin' to get back to school and see their friends. The big kids have gone off to college (go Bears) and we wait for a new generation to return to Modesto and bring their big, inflamed and intelligent brains beck to Modesto to strengthen our regional knowledge base. Did you know that culture has a role in this? Can rock and roll, nightclubs, good restaurants help bring the newly schooled people back to Modesto ? It is true. Cultural richness brings the people that create jobs. Cities with culture, access to the arts and a supply of educated people will be the leading cities of the future. My friend Chris Ricci has pegged it right when he correctly identified entertainment and tourism as one of the fasted growing local economies. Who would have thought that all of the things that we find so fun are actually important to our local economy. This month, our cultural world and our economy get a massive shot in the arm as the Gallo Center opens with some truly stellar events and we start a multi year run of fabulous events that will bring people from all over our region to downtown Modesto . There are nearly 200 events booked at the Gallo Center for the next year that will all create excitement and visitors to downtown. The State Theatre is starting to rock again and places like the Fat Cat and Hero's are really drawing some big events and crowds and our nightlife scene is getting better with more options. The construction is done, the yellow tape is gone and it is time to really enjoy our city. Well, at least until they start building downtown housing, but that story is for another time and another place. Last month, we had a lot of fun with Art and Wine. This month we have "the Beatles" playing with the Modesto Symphony, Tony Bennett will leave his heart in Modesto and high school kids will play football on a new surface and the parks are filled with youth soccer players. Fall is always good. Our quality of life is better and the cultural world of Modesto as we know it will change forever. What will you explore this month. Have fun in Modesto !

A lot has been going on in downtown Modesto this month. First, 1505 has closed their doors. Executive Chef and owner Robert West and his wife Nickie built a beautiful restaurant and bar and served up some of the best food (especially the filet mignon) in town. Robert's talents will be missed. Hopefully this 4th generation Modestan will continue his trade in another Modesto kitchen. Next, Dewz will be closing their doors at the 1101 I Street location where they have been for nearly 10 years. The good news is that Scott and Judy Aspesi along with their talented chef Vincent Alvarado will be moving into the space formerly occupied by 1505. Dewz food stands out, and the Aspesi's are confident that their customers will follow to their new location. I know that I will. Moving into the same building that Dewz is vacating will be a Firkin and Fox Restaurant and Pub. No firm date on the opening but stay tuned to www.modestoview.com and this magazine for opening updates. Also soon to open will be Vito's Ristorante at 918 13th Street in the space formerly occupied by Nosh and before that Oceana. On another subject it's amazing how much a good server can add to the enjoyment of a meal. Some of my favorite servers downtown include Joan at Hazel's, Will at Dewz, Lindsay at Harvest Moon, Jerry and Lucas at Galletto, and Todd at Bacchus. If you have a favorite server that you would like to see recognized drop us a line on the website. Finally, as more and more national chains move into Modesto it has never been more important to patronize the locally owned and operated restaurants that we have throughout town. Mitch and Tammy from Clayton's and Tressetti's said it best "think globally and eat locally".

Canal Street Grille in Ripon Steve Bonner and Lee Deldon had a huge setback when their beautiful new restaurant burned to the ground earlier this year. Now they are back and ready to treat us to a new dining experience. All of the menu preparation, design and creativity are now ready to open this month in North Ripon adjacent to 99. You really never know where the next indie coffee place will pop up. Hopefully as we think more and more about eating and drinking local, there will be more local coffee shops opening. This time we found one of the most unexpected and pleasant surprises. While strolling through the beautiful new North Tower at Memorial Hospital , I found the brand new coffee café in the lobby. This place has it all. Fresh bread from Word of Mouth, organic coffee beans, hand pulled espresso and custom steamed milk and a foam cap that you are proud to show your friends. The service was excellent, the quality of the organic espresso was rich and bold without being bitter or burnt. Whole milk steamed to my favorite 160 degrees and thanks to the attention of baristas Amanda Lizotte and Jennifer Feliciano, I was good to go. You might think it unusual to stop at a hospital for a latte, but I have now done it a couple of times and it is worth the stop. In the afternoon, you can stroll around the corner to the Valley Grille and get a brick oven baked pizza. What at classic Italian afternoon combo. Some places are just so comfortable that you can just hang out and enjoy yourself. Hero's makes it even better with the over 15 flat TVs of all shapes and sizes to watch. The pizzas are amazing, the cheese head fries are the most decadent appetizer in town, but at the heart of Hero's is a centrally located bar that features the great service of Christie Schmidt. There is no doubt that she enjoys her job and is friendly and welcoming to everyone. Christie has been a bartender since she turned 21 and has been a friendly face at Hero's since got her start as a hostess. Christie has lived in Modesto since 5th grade after growing up in San Diego . "Being a bartender is so fun and the people make it a great job" says Christie, who will be attending CSU Stanislaus this fall on her quest to become a teacher. "Elementary School kids for sure, they want to learn and they love everything you teach" she continues. Christie picked up the bartending skill by osmosis by being a server, watching and doing. She was quickly promoted by Wes to bartender when she became really good and turned 21. She has been a natural ever since mostly working with the daytime crowds and on Monday, Wednesday and Friday nights. She claims it gives her a lot of variety and fits her school schedule. Christi has served some fun celebrities like Mandy Moore, Aqualung, Rocco de Luca when they have played concerts in town. Christie likes the fun summer drinks and her specialty is a drink of her own creation, the Banorconut. Yes, you got it right, Banana, Orange , Coconut, rum and more treats. Let's check it out and you should try to make this yourself. Better yet, step on down to Hero's and have Christie make you one herself. n the eyes of David Bradford truer words were never spoken. His company Word of Mouth Baking Company produces as many as 2,500 loaves of artisan bread per day. In addition delicious pastries, pies, cakes, fruit tarts, and French toast have been coming out of David's ovens over the past 12 years.

As a 4th generation Modestan David cares deeply about his community. Word of Mouth supports the State Theatre, the Modesto Symphony, Habitat for Humanity, and the Edible Extravaganza. David is also a vocal advocate for the vitality of independent businesses in his hometown and is active in downtown Rotary. Modestoview sat down with David in his 9th Street bakery surrounded by his ovens to get his views on a number of subjects. MV: How did you decide to become a baker? BD: I get a greater reward out of baking then anything I have done in my professional life. I have been doing this since 1995 and I love it. Before this, I ran a chain of lumberyards and prior to that, I was an officer in the U.S. Army after graduating from West Point . MV: Tell our readers about your training. BD: I have worked with a lot of people to get good at this. I have learned the finer points of baking training with master bakers in San Francisco and at the San Francisco Baking Institute. I have worked hard at my trade. If you want to make a good loaf of bread, make 1,000 bad loaves first. MV: How did you decide on the name Word of Mouth Baking Company? BD: I couldn't come up with anything else. Actually, a good friend suggested that when we started the company the only way people would hear about us would be people talking about our delicious breads or "word of mouth" advertising.

MV: Where can our readers find your freshly baked goods? BD: Local restaurants that serve our breads are Tresetti's, Dewz, Mallards, Picasso's, Concetta, Fuzio's, Mocha Magic, Cayenne , and Semplicita's. You can also buy our breads at Save Mart and O'Brien's Markets. The Farmer's Market downtown sells breads, pasties, fruit tarts and other tasty sweets. Also, if you knock on our back door on 10th Street after 7 am we'll sell you what we baked that morning.

MV: What is your best selling item? BD: Ciabatta bread, which is rectangular, semi flat bread with eyes (air pockets) in the center. It's an all-purpose bread that can be used for sandwiches or can be eaten as is. It originated in the Como region of Italy . MV: Where do you like to go out to eat? BD: Concetta. Just about everything they make is delicious. They changed their menu daily and it's all good. Also, the Noodle Palace on McHenry. They have delicious spring rolls and their BBQ pork on noodle cakes is great. MV: If you could invite any three people to dinner, who would you invite and what would you prepare? BD: First, I would invite Benjamin Franklin. Beyond being a scholar, he was a rascal and he always had a story to tell. Next would be Diamond Jim Brady. That man knew how to eat! He was a man of gargantuan girth and an appetite to match. He was a real character in 1880 New York . Finally, would invite Tom Graney who was my company commander in Panama . I learned a lot about life from this man. I would start with cocktails. The first course would be chicken consume. Next would be a Dungeness crab salad (one crab per person, three for Diamond Jim!). The main entrĂŠe would be a Chinese smoked New York steak accompanied by a 1968 Chateau Souvereign Cabernet. I would also serve vegetable Charlotte along with micro greens with grilled shrimp and scallops topped with orange juice vinaigrette. Of course, I would serve lots of bread! For dessert, I would serve petit fours with homemade vanilla ice cream. We would finish off with brandy and talk the night away. MV: What was your most memorable meal? BD: January 2, 1988. I had a date with a beautiful woman who later became my wife. We ate at the Adolphus Hotel in downtown Dallas . We had squid ink pasta, medallions of pork and duck breast. It's a beautiful building and it was a delicious meal. MV: What do you like to do in your spare time? BD: I am active in Rotary. To stay in shape, I practice Pilates and swim in the masters program at MJC. MV: Final question. Beatles, Stones, Elvis or Frank? BD: The Beatles. That's my time!


RECIPE

FOCACCIA BREAD Bread Flour Instant Yeast Salt Olive Oil Water

4 cups 1 package 1 teaspoon 2 tablespoons 2 cups

Stir all ingredients together into a big ball. It will be sticky. Knead on a floured surface until bread develops strength. Let the dough rest for 15 minutes. Roll dough out to fit in a jelly roll pan. Oil jelly roll pan with olive oil and lay out rolled out dough in pan. Coat bread with olive oil and salt. Let dough rise for 60-90 minutes. Bake loaves in preheated oven at 350 degrees for 30-45 minutes until brown on top.

that never seems to disappoint. It is also one of the most sought after tastes and many entry level wines claim to have that "Rombauer Taste". But this is like saying a cheap guitar sounds like a Rickenbacker. You know the answer. Tom feels that the 2nd place finisher Trefethen is one of his most overlooked wines that is consistently stellar. He re com mends this on any wine outing and was pleased with the tasting results. The results were very close this month, mostly due to the selections by Tom and the O'Brien's crew. It is good to have the store's Fromagier nearby for some cheese pairings and Andrew on deck for some great palate cleansers. O'Brien's is a fun place to sit and talk about wine. You never know who may be sitting at the chairs next to you as on a resent visit, there were many highly placed people at some regional wineries that make this a very interesting conversation. The last few weeks, the summer Chardonnays have never tasted better. The better the outdoor dining, the greater the need for a good Chardonnay. The ModestoView wine club moved their monthly event to the wine shop at the Dale Rd O'Brien's. Now this unruly group was now in the hands of Tom Bender who delivered a stellar selection for the blind taste test. The two winners of the September Wine Club tasting were the 1st place finisher, the Rombauer Carneros 2005. This was the most smooth, sweetly buttery and was described as 'Smooth and silky with a hint of melon, fig and honeysuckle" by Wild Thing. "Full Fruit" declared the Pygmy Palate and "Fruit Forward and Tasty" said BonBon. Rombauer is one of the those wines

Wanna make a crepe? We love crepes! We got the behind the scenes hookup at Wanderlust! Nicole Loveland showed us how to make a basic crepe in the kitchen. This was difficult because the crepes were continually ripping if you don't have the perfect technique. We started out making the Mona Lisa, which is a simple crepe that we added cinnamon sugar to, and then folded in a special way. Dalynn Schnepp, one of the owners of the café, suggested we try to make the delicious peach crepe. So Abbey made a Banana Crepe and Megan made the peach crepe. The banana crepe was made by putting bananas in the center then drizzling Nutella (super delicious) on the top of the crepe. The peach crepe consisted of peaches soaked in cinnamon and also put in the center with crème frache. Both crepes were scrumptious. We HIGHLY recommend stopping by and picking up one of their unique crepes, but our personal favorite is the Mona Lisa!

The Beatles are Coming the Beatles are coming! Yes you can enjoy a Classical Mystery Tour with the Modesto Symphony and one of the leading Beatles tribute bands. The Symphony will be backing up the "Fab Four" on some of the best music ever written. Even the serious music critics in the early 60's knew the Beatles had something special and even loved Aeolian cadences of It Won't Be Long. Now, the Symphony and the Beatles get the ultimate local mash up September 8 at the Picnic at the Pops. Let's…. Meet the Beatles.

Inter view with the Beatles: This is a totally authentic real simulated interview with the "Fab Four" backstage right before their appearance with the Modesto Symphony Sept 8. It is amazing how this got printed before the interview happened. Talk about fresh printing! Maybe it was just a flashback to the Summer of Love 40 years ago when Sgt Pepper came out and George made his short visit to Haight Ashbury. But the undiscovered "Modesto Tapes" interviews were unearthed by music historian Elvis Lennon and are now transcribed here on this page. Tape begins…screaming fans.. slamming door. "Paul"* - Cherrio mate, did you get me bass? ModestoView: Have it here "Paul", glad you could get here to Modesto with all of the crazy fans an all. "Ringo": I know, they've been chasing us since Tracy . We couldn't shake 'em. Crazy birds y'know. ModestoView: Have you ever played with a symphony orchestra before? "John": No, I play mouth organ though and rhythm guitar. "Paul": No you git, you know, violins, timpani, lots of trumpets. "John": right I was just havin' you on. I didn't think you knew either. "George" It would be good if we could just play with just us, you know, an I, me, mine thingy. "Paul": We've only done it a few times, you know…playing with the symphony. At the Royal Albert hall in London , the symphony went on before us and then we did that big satellite show where we did All You Need is Love. ModestoView: That must have been incredible, your song going out to 70 countries and billions listening. "John" They could probably hear us better than they can at our shows. ModestoView: Did you come straight here to the show. "Paul": No mate. Us lads went to Graceada Park so we could get some photos of us jumping off of the playground equipment for a promo shoot we had to do. There were like 100 police keeping the fans back. We had to do it fast. "John" I loved the park. It was so beautiful and all the trees made me think about how Tomorrow Never Knows and I wanted to relax and float downstream. "George": I wish I could even think about all of this, I have been tuning my 12 string Rickenbacker for the last 2 hours. "Ringo": You know, in other bands, they have people that make the people change the strings and then the other people tune the guitar and then the next people bring you the guitar to play. "George": It would never get done then huh? "MV" What are you looking forward to the most about playing with the Modesto Symphony orchestra. ""Paul": Playing outside to a small crowd of only 4000. Shea Stadium, Candlestick and all of those places have no

sound. I hear the Gallo grounds are beautiful. "Ringo" I hear that they have good wine "George" and I like their music. "MV": Music? I didn't know that they had their own music. "George" They must have because there is a big theatre downtown that has their name on it. "MV": The Gallo Center, yes, that will be the home of lots of new music here in town. "John": It looks pretty fab. Why aren't we playing there then? Huh mister man? MV; It won't open until September 28. Plus, the Picnic at the Pops is more fun. What do you think you will play? "Paul" I would like to play A Day in the Life. It is banned in Britain and we can't play it on our tours since we don't have a symphony orchestra. "Ringo" So that is what an orchestra is for. We should play that then. "George": The only one we shouldn't play is Long and Winding Road . I never liked that one after Phil Spector got a hold of it. Paul: Eleanor Rigby though would be gear huh? "Ringo" Hey that song doesn't have me drums on it. We should skip that one. ModestoView: Well your Beatle shows only last about 30 minutes. This show at Picnic at the Pops should last a lot longer? "John": I hope so, we never even get warmed up in 30 minutes. We used to have to play 5 hour sets in Germany and sometimes play all night long. It would be nice to do a longer show. Maybe we will get the chance here. "Ringo": All of this talk about playing all night long is making my hungry. This guy that was driving us here said that there were a number of really fab restaurants and pubs here. We need to whet our whistles. Fish and chips anywhere? ModestoView: Yes we have a lot of good restaurants, and even a Pub that service great fish and chips. We can go there after your set. I am sure that they will have a band so you can just hang out and dig the sounds. "Paul": That would be cool. We are looking forward to playing Modesto and hope we can come back soon. ModestoView: When do you fly back to England ? "George": Tonight "Ringo": Tomorrow "Paul": Next Week "John": Never Well tomorrow never knows. Enjoy the Picnic at the Pops September 8 and 7 pm. WHAT REALLY HAPPENED & SHOW REVIEWS If you showed up to the Modesto Art and Wine Festival last month to check out the Off The Air stage and were wondering why there wasn't anything happening for the first 4 hours when there was supposed to be music going on, I apologize. I mean, I apologize on behalf of the rental company who sent us a generator that didn't work and then waited until 10 AM (the time the event was scheduled to begin) to send us another generator that also didn't work. It then took said rental company 3 and half hours to send out a technician to fix the second broken generator. The fix only took about 10 minutes which is kind of ridiculous after having to wait so long, but yeah, anyway, we still had a great time and hope you did too if you were out there for the show. All of the bands were very gracious, asking me if I needed them to play shorter sets so that everyone had a chance to play and everyone pretty much did end up playing a shorter set. In my humble opinion, the Modesto Art and Wine Festival line-up was probably the best line-up Off The Air has ever brought to the stage at one time. If you missed it, you missed a good one. But, for those of you who made it out and stuck with us through the delay and heat, I thank you from the bottom of my heart. Well, that's that and there's this‌ Recently I had a chance to check out a couple younger local acts that really knocked my socks off. They are "Jupiter is Useless" from Turlock and "A Colourado" from Manteca. Both are super talented, entertaining and had that youthful energy 30something guys like me, who view exercise as torture, are amazed by. I had really wanted to check these kids out for a while now and after seeing them play live, I'm asking myself why the heck I waited so long.

JUPITER IS USELESS - LIVE SHOW REVIEW The show I caught Jupiter is Useless at was this little coffee shop in Turlock (can't remember the name, but it was in the Raley's shopping center) on a stage that was the size of a double bed. They played to a packed, attentive house (I was sitting on a bench, practically behind a propped open door) at a volume that was probably a million times too loud for the room. And even though I left my ear plugs at home I couldn't get myself to rip my butt from my seat near the stage and watch them through the plate glass, sound barrier windows of the coffee shop, outside. Nicholi Ludlow, their singer, stood on a booth seat flailing and dancing in his limited space like a live wire, a startled bird in a small cage as Alex Arestegui, on keys, sat across from Nicholi, subdued, grinning at times, filling out the band's guitar driven sound. These fellas had my head nodding and my mouth smiling all through their set. I drove back to Modesto late that night, window down, hair blowing, chowing down on an In-N-Out burger and fries, feeling inspired and happy I made the short trip down to Turlock to see such a great band in such an intimate way. I was in the house, behind the board, as A Colourado eccentrically rocked Off The Air and Angry F's "POST ART WALK PARTY" in August at CafĂŠ Deva, another intimate venue, this one on J Street in Downtown Modesto, that feels like you are watching your homie's band play in a triple car garage. I had never heard anything from this band before that night except for

Moon Trent has been changing the scene since 1991 and has a huge history of making music in Modesto, San Francisco, London and many more places. There is more and more local music on the airwaves with every month that goes by. Since February, ModestoView has been hosting bands on the B93.1 15 Minutes of Fame also sponsored by the Queen Bean, but sadly this program will stop in September. ModestoView hopes to help produce a new show with B93 featuring more local bands and we will keep you posted. We are all about promoting the local bands. Now you need to do your part. he summer has flown by. There have been some great events showcasing music and the arts and one of my favorites has been the Modesto Art and Wine Festival. It was a great family-friendly festival with quality: the art, the food, kids' events, and the music. To see Kenny Rankin singing his face off as he said “sandwiched between the Cherry Poppin' Daddies, the Central West Ballet and the 9th Street train going by not so quietly� was an amazing experience. A wellbehaved crowd with a broad age demographic havin' a great time, I hope more to come. Build it and they will come! Clayton's Blue Monday has taken off and Mitch & Gretchen have helped the downtown music scene by adding Saturday nights where bands that host the Monday jam will perform with special guests and where a monthly name act comes through. The Monday lineup at Clayton's is Sept. 3: Johnny Valdez trio (of Johnny & Kelly), Sept. 10: Joe Barretta Band, Sept.17: DARC (Aubrey Johnson group), and Sept. 24: Valley Rhythm Section. The Saturday lineup at Clayton's is Sept. 8: Valley Rhythm Section, Sept. 15: Joe Barretta Band, Sept. 22: DARC Band, Sept. 29: Valley Rhythm Section. The appetizer menu with pork ribs, seafood tacos and other entrees and full bar are great, with musicians and artists networking and keeping the scene rolling. Clayton's is located at 1016 H Street behind the Gallo Arts Center . Speaking of Gallo Arts I was blessed by being asked to help book the music for one of their grand opening events on Monday Sept. 10. The three bands playing at the event featuring 20 downtown restaurants will be Valley Rhythm Section featuring their full 10 piece band, the Sensations featuring Shelly Streeter, Penny Gail-White, (3-part harmony group), and the Johnny Valdez Group, (with Kelly Ramirez on drums, Tim Allen on bass, and Eric Benson on keyboard). The event is free and goes 6 to 9 p.m. with afterparty jam at Clayton's. Mo Music in the Downtown side continues. Johnny Valdez slings his guitar Tuesdays at the Speakeasy. We also have the Fat Cat Music Lounge with George Railey on Tenor Sax every Friday and Saturday night warming you up for the comedy acts to follow from 6:30 to 8:00 p.m. And don't let me forget the Salsa! Galletto's continues to offer a full Salsa Band every Thursday from 10:00 on for a minimal cover charge to dance to the best in local and regional acts. Off The Air has been using Paul Tremayne's restaurant Concetta for monthly music series with great success, stay tuned for next month. Sorry to lose Fifteen-0-5 Restaurant as a great eatery and venue for the music. Johnny & Kelly have moved to Bacchus on Friday nights now after losing their gig at Fifteen-0-5. Hero's restaurant and sports bar will have Big Earl & the Crying Shame Band Sunday Sept. 16, playing some all the way down home Blues with Jason Finley on guitar.

On September 8th the Knight Sounds Big Band will be performing at the annual USO dinner dance at the Modesto CityCounty Airport, featuring a Mitchell B-25 J Bomber. That's right….not only will you be treated to the sounds of the 40's by the Downey High School alumni band, but the ambience of the evening, hosted by the Commemorative Air Force Flying Museum, will be enhanced by the presence of one of the only three flying B-25's with battle history. Owned by John L. Ward III, of Ward Office Furniture, the 1944 silver bomber, affectionately called Old Glory, will be on display for your viewing pleasure. Still operational and fully restored, this beauty is ready to roar. While listening to the jump jive of the swing band, take a peek inside the Mitchell's bomb bay and read the messages of some of the previous crew members who have signed their names in recent years while revisiting this stalwart WW II aircraft . The bomber is currently on display in Sky Trek Aviation's Hanger # 6, located at the City-County airport and can be viewed by the public by appointment. And I'm not talking cocky confidence; I'm talking the attitude of a true artist who makes art for the sake of making art, being proud about what they've created irregardless of what anyone says. Bassist, Dusty Neu and drummer, Chris Haupt held down the rhythm section throughout their set as Lindsay Pavao and Travis Owen shared vocal duties, both carrying their weight equally on the mic as well as switching on and off instruments ranging from the accordion to guitar, those bells you ring for counter service to the piano keys. Their songs were interestingly arranged with lots of surprises and they sold it with a convincing performance full of movement and energy and witty banter in between songs. Most shows at the Gallo Center will start between 7 and 8 pm. You want to make sure that you have 5:00 or 5:30 reservations for the downtown restaurants so that you get to the Gallo Center on time. If you are not attending a show, the good time to eat is 7-7:30. Some of the best people watching will be when the shows get out and people get an after show dessert or cocktail. ModestoView recommends taking a cab so that you don't have to deal with parking and have a ride home after your final finals. Besides, a cab will drop you off and pick you up at the front door.

The Plaza The plaza will be open during all of the events. The Gallo Center plaza is going to be one of the best meeting areas in town.
