Gas Prices (March 22, 2021) Texas gas prices have risen 1.7 cents per gallon in the past week, averaging $2.64/g today, according to GasBuddy's daily survey of 13,114 stations in Texas. Gas prices in Texas are 31.4 cents per gallon higher than a month ago and stand 77.5 cents per gallon higher than a year ago. According to GasBuddy price reports, the cheapest station in Texas is priced at $2.32/g today while the most expensive is $3.49/g, a difference of $1.17/g. The lowest price in the state today is $2.32/g while the highest is $3.49/g, a difference of $1.17/g. The national average price of gasoline has fallen 0.3 cents per gallon in the last week, averaging $2.86/g today. The national average is up 22.2 cents per gallon from a month ago and stands 78.2 cents per gallon higher than a year ago. Neighboring areas and their current gas prices: Midland Odessa$2.89/g, up 3.0 cents per gallon from last week's $2.86/g. San Antonio- $2.52/g, down 0.3 cents per gallon from last week's $2.52/g. Austin- $2.56/g, unchanged from last week's $2.56/g. "With oil prices finally sagging over the last week on inflation fears and worries about a surge in COVID-19 cases in Europe impacting oil demand, motorists filling their tanks may soon see a brief respite from rising gas prices," said Patrick De Haan, head of petroleum analysis for GasBuddy. "While gasoline demand last week rose to its highest level since the pandemic began, concerns that oil demand growth will stall with COVID-19 cases surging in Europe are eroding oil's recent rise. While gas prices still rose in a majority of states last week, we may see some price decreases in the week or weeks ahead, even as U.S. gasoline demand continues to rally to the highest level since the pandemic started nearly a year ago. It'll be a bumpy road the next few weeks as markets sort out the bearish and bullish factors, but I still believe prices will likely experience more upward momentum ahead of Memorial Day." While the phrase is certainly not as common as “Christmas Cookies,” these simple deserts may be the perfect ending to your Easter day brunch/supper/dinner. They are bright and cheery, perfect portion control and artfully arranged will make a beautiful centerpiece. Both of these recipes use alternatives to refined sugar for their sweetners. The first incorporates maple syrup because I love its sweet woodsy flavor in carrot cake, and I also added more cinnamon (it’s a carrot cake staple!) and carrots. Lots of grated carrots. I used one smallish medium carrot, but if you have a larger one and a little extra leftover, throw that in too. It won’t hurt the cookie dough at all! There are two very important parts of this recipe. 1) Measure the oats correctly! Do not scoop them directly from the canister. Instead, measure them like flour with the spoon-and-level method. Scooping results in 1.5 times as many oats. Since those oats act like little sponges by soaking up all of the moisture in the dough, adding extra will completely dry out your cookies and leave them crumbly. 2) Chilling is mandatory! It gives the oats time to soak up some moisture and helps reduce spreading. If you skipped chilling, the cookie dough would flatten thinner than a pancake while in the oven

1. In a medium bowl, whisk together the oats, flour, baking powder,

cinnamon, and salt. In a separate bowl, whisk together the coconut oil, egg, and vanilla. Stir in the maple syrup until thoroughly incorporated. Add in the flour mixture, stirring just until incorporated. Fold in the carrots. Chill the dough for at least 30 minutes. (If chilling longer, cover with plastic wrap, ensuring it touches the entire surface of the cookie dough.) 2. Preheat the oven to 325°F, and line a baking sheet with a silicone baking mat or parchment paper. 3. Drop the cookie dough into 14 rounded scoops on the baking sheet. Flatten slightly using a spatula. (The cookies don't spread very much!) Bake at 325°F for 12-15 minutes. Cool on the baking sheet for at least 15 minutes before turning out onto a wire rack. When measuring be careful to level the scoop. If scooped from the container using the measuring cup, you’ll end up with 1.5 times as much, which will dry out your cookies and make them crumbly. To make your own instant oats, pulse 1 cup of old-fashioned oats in a food processor 5-8 times. For the gluten-free flour, I used as follows: ½ cup (60g) millet flour, 2 tablespoons (15g) brown rice flour, 2 tablespoons (15g) tapioca flour, and ½ teaspoon xanthan gum. A whole-purpose GF flour substitute will also work. Melted margarine may be substituted for the coconut oil or butter. Regardless of which is used, be sure that the egg is at room temperature before whisking it in. A cold egg added straight from the

fridge would rapidly cool the fat source, resulting in small blobs of semi-solid coconut oil, butter, or margarine. Honey or agave may be substituted in place of the pure maple syrup if you don’t like the taste of maple syrup. If the cookies are still really flimsy after cooling on the baking sheet for 15 minutes and threaten to break apart, let them cool completely on the baking sheet. That won’t let them crisp up too much, and they’ll still stay soft for an entire week! Here is another recipe with NO butter, refined flour, or refined sugar! Note that it does contain wheat. It is whole wheat which absorbs more moisture than bleached flour so they are not interchangeable. It’s very important that you measure it correctly using the spoon-and-level method. Excess flour results in cakey cookies—exactly opposite of the chewy ones we want. These low-fat cookies require instant oats—and lots of them! Oats are such a healthy fiber known for bringing down blood pressure and cholesterol, so I added 1 full cup. Regular old-fashioned oats are a little too hearty and refuse to soften during baking. They also fail to absorb liquid as quickly as instant (quick cook) oats, resulting in tough chewy bits. To make your own instant oats, just add the same amount of oldfashioned oats to a food processor and pulse 5-8 times until they’re coarsely ground. As in the recipe above use a room temp. egg and chilling the dough is again

super important. Be careful: the amount of time you chill the dough greatly affects its texture and how it acts in the oven! We used instant oats, which absorb liquid much faster than regular oats. The longer you chill the cookie dough, the more liquid the oats will absorb and the less the cookies will spread in the oven. Less chilling = more spread. Because honey caramelizes at a lower temperature than regular sugar, these cookies bake at 325°Finstead of the usual 350°F. Only leave them in the oven for 13-15 minutes. They may appear underdone, but the centers continue to cook on the warm baking sheet. Pulling the cookies out after the outsides have just barely set ensures they stay extra soft and chewy. Blueberry Oatmeal Cookies Yield: 15 cookies These cookies are so soft and extra chewy! The dried blueberries add a bright tangy burst, while the warm cinnamon and oats provide a comforting backdrop. They’ll stay soft for up to a week if stored in an airtight container—if they last that long! 1 cup (100g) instant oats (measured correctly) ¾ cup (90g) whole wheat flour (measured correctly) 1 ½ tsp baking powder ½ tsp ground cinnamon 1/8 tsp salt 2 tbsp (28g) coconut oil, melted 1 l a rg e e g g , r o o m temperature 1 tsp vanilla extract ½ cup (120mL) honey ¼ cup (40g) dried blueberries 1. Miller, who is also a volunteer CASA Advocate, says starting from ground zero to plan a completely different kind of event at a new venue brought challenges, but the end result was well worth the effort. "The time, energy, compassion, and dedication of CASA volunteers is just amazing. They step up to amplify the voices of children whose future is uncertain, and they are making a difference, one child at a time." Miller explains, "While 70% of non-profits cut services during the pandemic, CASA volunteers continued to serve every single child. But our work goes on.” Miller continues, “Currently, about 6 children enter foster care in Montgomery every week. Healthy Carrot Cake Oatmeal Cookies Print Yields: 14 cookies These cookies taste just like their namesake! Lots of sweet carrots coupled with the hearty oats and cinnamon makes them absolutely irresistible! o 1 cup (100g) instant oats o ¾ cup (90g) whole wheat or gluten-free* flour o 1 ½ tsp baking powder o 1 ½ tsp ground cinnamon o ? tsp salt o 2 tbsp (28g) coconut oil or unsalted butter, melted and cooled slightly o 1 large egg, room temperature o 1 tsp vanilla extract o ½ cup (120mL) pure maple syrup o ¾ cup (68g) grated carrots (about 1 smallish medium, peeled first!)

Cool on the baking sheet for at least 15 minutes before turning out onto a wire rack. Notes: It's really import ant to measure the oats with the spoon-and-level method (like with flour; see link in ingredients). If you scoop the oats into the measuring cup, you end up with 1.5 times as many oats, which will result in very dry cookies.

Tis Saint Paddy’s Day with The Irish Among Us Walden Happenings By Doc Fennessy The opinions expressed in this editorial do not necessarily reflect those of MCN.

[PART 3- THE IRISH AMONG US] For over 25 years I have contributed my greetings and deep set information on Saint Patrick’s Day in my column in the Montgomery County News. What appears in these three columns, Part One, Two and Three comprises an annotated combination of all those Saint Paddy’s day articles. Hopefully, you will keep all three of the newspapers to be able to read on future Saint Paddy’s days to provide you with the Irish spirit, because at this time in my life, I’m going blind and may not be with you in this newspaper at that time again. Ah yes folks, Tis Saint Paddy’s Day “With The Irish Among Us, And Blessed Are They With Their Passion, Patriotism, Friendship and Humor. It tis the mystic Emerald Isle of Ireland, what a glorious, grand and enchanting experience to travel there! I have been there six (6) times both as a Travel Agent Tour Conductor and Carol and I touring and doing the “Bed & Breakfast” routine for five weeks. We have been all the ways North and South, West to East, up and down the middle and all the way around the island each way along all the coastal towns and hamlets. Stayed in Towns-peoples’ and farm houses, traditional hotels, ancient and historic castles. What wonderful and fascinating adventure; you should all try it just to; “Stop this chaotic world and let me get off for a while!” The Irish are a very truthful race. They never speak well of one another. Ireland is a joke factory if ever a country was one. A witticism of Galway today is a wise crack of Las Vegas in two or three years. The Irish are a hardy, rough and tough race of patriotic brawlers that will stand up

alone in a crowd and speak out for what they believe in. This element of rugged independence in an Irishman’s personality makeup, is deeply ingrained in them as children during their traditional Irish family upbringing. As a race, the Irish firmly believe that "One Irishman with courage is a majority!" In the world at large everything may be serious, but not hopeless, while in Ireland today everything may seem hopeless, but not serious. Humor is food for the soul and we can't live without it. To laugh is to love; to laugh is to understand; and to laugh is to forgive. That's why the Irish are so friendly, positive and happy as a race - because they can laugh at themselves and have people laugh at - or with them. In today's ridiculous and supersensitive world, who, other than the Irish can you make fun of publicly without being sued for discrimination or claims as a being a bigot? If the Irish meet someone that hasn't smiled nor had a laugh that day they give them one! There is no single Irish voice, author, musician, singer, poet, artist, literature, poetry or music that speaks for the Irish, but rather a rich variety of voices-that sing, sigh, mourn and whisper, or shout, rouse, cajole, and tease about the land, the people, their life style, their traditions and history. The extraordinary tonal, textural images of text and art [in its various forms] complement each other in a passionate expression of the Irish experience. The past is never very far away from the Irish. In fact, some people have said that the Irish are haunted by the past. Having personally spent an extended amount of time in Ireland, one can see that the land itself is very much a part of Irish history and understanding the sense or spirit of the place is essential to understanding the Irish. Although the literary tradition in Ireland did not begin until about the eighth

century, the sagas then chronicled are actually myths and legends of preliterate, pagan Ireland legends which survived for hundreds of years through strong oral tradition. It is through these ancient sagas and tales that had flourished through the art of the storyteller [still an art in modern day Ireland], that we learn of Celtic life. The Celts were a warrior society; they were fierce fighters with a strong sense of justice and staunch defenders of the weak and oppressed. They were also rich in the arts and civilized life. When the first Christian missionaries came to Ireland is not known, but in the fifth century Saint Patrick returned to his native land and introduced Latin, writing and the Christian creed to the Irish. From 1846 to 1848 1,700,000 Irish arrived here in the United States due to the famous “Potato Famine” in Ireland. They were poor, uneducated, unskilled and filled with hope for a life in the new world. What they met here was passionate discrimination, but they were not defeated. Many American roads, railroads, bridges and skyscrapers were built by immigrant Irish. Thousands of Irish immigrants distinguished themselves in the Civil War. The Irish were the first tough and honest street cops in New York, Boston and Chicago. Twenty three of the 87 Texas heroes that defended The Alamo were Irish immigrants. Our history is replete with successful accomplishments of the Irish in America. Throughout their tragic history the Irish have fought, survived and triumphed. The Irish are a proud race of people. Many of the twentieth century writers about Ireland, including among others, Cavanaugh, F o n t a g u e , H e a n e y, O’Faolain and Boland draw from historical images in their work, images of landscapes of the past and haunting memories. These authors seem to propose that the nourishment which comes from the sense of being a

That’s how I wrote this “treatise” of Ireland, nine (9) years ago after spending so much time interacting with the people, legendary structures, literature, music and geography. Every year on March 17th, Saint Patrick's Day is celebrated by Irish throughout the world, and also hundreds of millions of others that celebrate with them. You will hear that "There are only two kinds of people in this world, them that are Irish, and them that wish they were, so you've got to be one of US. “Saint Patrick’s Day is a curious reminder of this illustrious and proud race of people's historical struggle to survive, grow and prevail.” The Irish are known to be happy two fisted [brawling drunks] drinkers, who drink with impunity, or anyone else that's buying. The Irish also have a reputation for having "a way with words" as illustrated in their many

famous drinking toasts to the health and happiness of their friends. Just to mention a few that you may wish to use this coming SUNDAY, March 17th or on other occasions. “May you be in heaven before the devil knows you are gone!” “Let’s drink to your coffin, may it be built from wood of a hundred-year-old oak tree, which I will plant tomorrow.” “Here's to the health of your enemies' enemies” – “SLAINTE!” “Cheers!” [Health!] And one [I use at weddings] finally, one of the oldest traditional Irish wedding toasts, also most appropriate on Saint Paddy's day is; [if you can still hold your glass up and say it all you haven't had enough to drink yet. “May you have children, and may they mature in heath and color and may they be as greatly sought after as the contents of this raised glass. May you have warm words on a cool evening - a full moon on a dark night and the road downhill all the way to the fulfillment of your goals and dreams. - may every hair on your head turn into

a bright candle to light your way to health and happiness. And may God and his holy mother take the hardness and pain of aging away from you while granting you peace of mind and spiritual serenity till your days end. May the road rise up to meet you and the wind be always at your back. May the sun shine warmly on your face, and the tears of joy and sorrow fall gently upon your cheeks. And, until we meet again, may God hold you and yours firmly, warmly, but oh so gently in the palms of his hands!” On Saint Paddy’s Day say again that there are two kinds of people, “Them that are Irish and them that wish they were!” But whatever, we can all celebrate together, because it’s you I’m a talking to, it is, isn’t it? Degree in Orchestral Conducting from the University of NebraskaLincoln and currently she is pursuing her Doctor of Musical Arts in Orchestral Conducting at the University of Houston. Gkounin has attended masterclasses with international pianists and conductors, such as the pianist Lucas Debargue and the conductor of Boston Pops, Keith Lockhart. Among her awards are the Schissler Foundation Fellowship, the University of Houston Graduate Tuition Fellowship, and the Hellenic Professional Society of Texas Award. Professor Franz Anton Krager says that “Anna Maria is a natural talent”. Fortunately, they do have confirmed dates and venues for the 2021-2022 concert season locked in. It has been promised by the President of the United States, Joe Biden that almost all of the United States population will be vaccinated and safe by July this summer. This week in 1836 the Convention of 1836 adjourned abruptly as the Mexican army approached Washington-on-the-Brazos. The convention, which began on March 1, drafted the Texas Declaration of Independence and the Texas Constitution, organized the government, and named Sam Houston commanderin-chief of the military forces before the delegates had to be evacuated. Here are five things happening around your state:

1. Texas to receive over 800,000 COVID-19 vaccine first doses The Texas Department of State Health Services allocated over 650,000 first doses to at least 445 providers in 178 counties. An additional 200,000 first doses will be available to pharmacy locations and federally-qualified health centers. This is the third largest allocation Texas has received since December. Texas has now administered more than 7.6 million doses

Ensuring Texans have access to high-quality broadband internet is imperative as we move into an increasingly digital world.

2. Broadband bill heard in Senate Transportation Committee This week the Senate Transportation Committee, which I chair, heard Senate Bill 5. I filed this bill as an important step toward expanding broadband access statewide. During the hearing, 89 witnesses signed up to testify. Not one of them testified against this bill. It just goes to show how important this legislation is to the people of Texas and how committed we are to establishing the Texas Broadband Office that will

3. DETCOG, other East Texas counties receive GLO flood mitigation funding The Texas General Land Office approved over $135 million in the second round of flood mitigation grants. There were 21 grantees in this round and seven of those were in Senate District 3. The Deep East Texas Council of Government, Jasper County, Newton, Newton County, San Augustine County, Tenaha, and Zavalla were all granted funds for a wide range of flood abatement

projects. The grants ranged in size from $3.6 million to over $9.5 million and total over $32 million for the region. These funds will be essential for building projects that would protect communities and critical infrastructure against future damage from hurricanes, flooding, and other natural disasters. Protecting our coastal communities and communities with high flood risks is important for safety and disaster preparedness. 4. Nine million dollars awarded for North Newton County broadband project The Deep East Texas Council of Government received a $9.09 million grant from the General Land Office for its North Newton County Broadband Project. The project will focus on building a rural broadband network in northern Newton County, an area where broadband access is lacking. DETCOG has also applied for a larger grant from GLO which, if approved, would allow the agency to construct a rural broadband network in all 12 of its member counties. Currently, DETCOG is

working out the details for the Newton County project. DETCOG began its broadband initiative three years ago, so they are prepared to go to work with engineering and grants management teams already in place. While it will take some time to get broadband deployed, I'm excited about this project and the prospects for the future of East Texas. 5. Texas State Parks returning to full capacity The Texas Parks and Wi l d l i f e D e p a r t m e n t announced they're working on a strategic plan to open all State Parks back to full capacity. Most State Parks closed or had limited capacity for the last year due to the COVID-19 pandemic. However, with Governor Abbott lifting capacity limits in his reopening order, TPWD is looking forward to welcoming Texans back to enjoy the great outdoors. All restrictions on group sizes have been lifted. However, TPWD is encouraging visitors to wear masks, especially when indoors or in areas where it is difficult to socially distance.

Cruz Demands President Biden Allow Press Access to Border Crisis ‘They deserve to see and understand the crisis for themselves with the help of reporters who are free and independent from your administration’ WASHINGTON, D.C. – U.S. Sen. Ted Cruz (RTexas) today ramped up pressure on President Biden to allow free and fair reporting on the humanitarian, national security, and public health crises at the southern border. This comes ahead of a tour Sens. Cruz and John Cornyn (RTexas) will lead on Friday to the Rio Grande Valley. In a letter, Sen. Cruz wrote: “As part of our oversight duties as Senators, I and 14 of my colleagues will travel to the border this week to talk to the brave men and women on the ground who are working every today to stop this crisis and secure our border. “But it is not enough for members of the Senate to see what is happening—the American people must see. That is why I requested that members of the media be allowed to join us. But your administration clearly and emphatically refused to offer press access. Community Young Texas Artists Launches Interactive Video Series Episodes Bring Classical Music To Life For Viewers MONTGOMERY COUNTY, Texas – March 17, 2021 – Young Texas Artists (YTA), a one-of-akind nonprofit, fine arts organization best known for the YTA Music Competition, is launching a free classical music video series designed to educate and entertain. The first one-hour episode of “YTA Insights — A Journey Into the World of Classical Music” will be presented at 7 p.m. CDT Sunday, March 21, during a Facebook Watch Party. This video experience, and three more to be scheduled later this year, will be free to the public. Episode 1, airing March

At the end of 2019 Chuck had a bit of a mid-life crisis and his "Ferrari" was to start a brew pub! At the same time a friendship developed between Chuck and his business partner Johnny “JC” Crawford who had a passion for making exotic cocktails and a great affinity for craft beer. Beer has always been a passion of Chuck’s who has been brewing

for over twenty years and JC's who has cellared hundreds of beers. With the support and help of family and friends Frankenboltzzzz Brewing Co. was created. The focus of this brew pub is not only to serve our own brews but to bring attention to Texas local breweries, wineries, and meaderies, hence our slogan "Beer is Life! Drink Local”. Frankenboltzzzz Brewing Co. wants to be known as a welcoming, family oriented, pet friendly pub that serves

outstanding craft beer. We will have on tap historic beers like Bolthead Double Brown, Latte Porter, Stouts, and IPAs. Our Grand Opening is scheduled for March 27th from 11:00 am – 11:00 pm.
