While Pay with GasBuddy data showed a small rebound in gasoline demand, oil prices have again failed to break out, leading to yet another week of little change at the pump," said Patrick De Haan, head of petroleum analysis for GasBuddy. "It's a bit too early to tell if the small rise in gasoline demand last week will continue into this week, but it does seem the most likely situation. The V-shaped recovery in gasoline demand has been put on hold for nearly all of July as coronavirus cases s u rg e d , b u t o n c e w e recover from that and we see demand show several weeks of recovery, we'll likely see gas prices begin to tick higher. Suggestions For Mindful Eating: The hip Brussels Sprout Food for Thought Diana Anderson
DianaCAnderson@ gmail.com
This vegetable has redefined itself in the last few years into a hip cool appetizer or main dish accompaniment. It has transcended cuisines appearing equally at home in gastro pubs or A s i a n f u s i o n establishments and for it’s ease of cooking and tremendous health benefits it deserves a spot
at your table. It is in the cruciferous family, closely related to the cabbage, and likewise a winter stock vegetable. Roasted Brussels Sprouts 1-½ lbs. Brussels Sprouts 3 T. avocado or olive oil 1 t pink Himalayan salt ½ t. freshly ground black pepper 1 T. Balsamic Vinegar (added after cooking) optional Pick brussels sprouts
that are a vivid green and tightly closed. They stay well in the refrigerator for longer than most vegetables the leaves turning yellow as they age. These should be picked off before cooking. Pre-heat oven to 400 degrees F – serves 4 Rinse and drain brussels sprouts in a colander dry and cut off the rough ends about ¼ inch or less. Cut each in half top to bottom and put the sprouts together with any loose leaves in a
bowl. Generously season with salt and pepper and toss with avocado or olive oil. Spread on a sheet pan lined with either a silpat* or parchment paper (foil is ok too). Roast for 35 minutes until crisp on the outside and tender on the inside. Shake pan or turn sprouts occasionally while cooking to assure even browning. Once done remove from heat and coat with balsamic vinegar if desired for a sweet tangy
flavor. Regular vinegar will not substitute. They don’t have to be served piping hot and can comfortably sit out while you finish the remainder of your meal. A very accommodating vegetable. Adjust salt and pepper to preference – I like it salty like French fries and believe the pink Himalayan salt is the most nutritionally advantageous. It contains 84 trace minerals necessary to the human body unlike table
salt that is processed to the point of just containing sodium along with some anti-caking agents. Additionally, pink Himalayan salt is more concentrated so less is likely used. *Cooking at 400 degrees might seem high but this characterizes the technique of roasting and will give the vegetable a caramelized sweetness. *Silpats are nonstick silicone mats that come in sizes perfect for halfsheet pans.

THIS IS A Special COMMENTARY: By Sen Shapiro/L. Todd Wood. “Not All Black Lives Matter To Black Lives Matter!.” – a sign at a wild protest in Manhattan, New York, June 29, 2020. Folks, this is the Commentary by Ben Shapiro/L. Todd Wood during Ben Shapiro’s Radio News Show on July 09, 2020. During these intensive times, the liberal Democrat Party Leadership continue to provide “Fake News” and lies to the American public. The current “Black Lives Matter” is not a “Black” organization!!! No folks, it is a white {no blacks in leadership. Ben Shapiro is host of "The Ben Shapiro Show" and editor-in-chief of DailyWire.com. He is The New York Times bestselling author of "Bullies." He is a graduate of UCLA
and Harvard Law School, and lives with his wife and two children in Los Angeles. This week, CNN’s Don Lemon, who has spent the last few weeks bashing the supposed thorough going systemic racism of the United States, hosted black actor Terry Crews. He then proceeded to browbeat Crews, who had committed the great sin of tweeting, “#ALLBLACKLIVESMA TTER 9 black CHILDREN killed by violence in Chicago since June 20, 2020.” Lemon specifically objected to Crews’ hashtag. After Lemon humbly informed Crews that he has skin “as tough as an armadillo,” he then lectured: “The Black Lives Matter movement was started because it was talking about police brutality. … But that’s not what Black Lives Matter is about. It’s not … allencompassing … The Black Lives Matter movement is about police brutality and injustice in that matter, not about what’s happening in black neighborhoods.” This, of course, is largely false. The Black Lives Matter movement did indeed begin with protests about police brutality but quickly morphed into broader debates over the validity of looting and rioting, tearing down historic statues, slavery reparations, and defunding the police. In these trying times, we must turn to the greatest document in the history of the world to promise freedom and opportunity to its citizens for guidance. Find out more now >> And Black Lives Matter, as Crews correctly pointed out, has never restricted its mandate to the question of police violence: It has announced that its focuses also include p o l i c e b r u t a l i t y, transgender rights, gay rights, disrupting the nuclear family, and freeing Palestine, among other diverse topics. So why is Lemon so deeply invested in preventing conversations about black lives? Why, in fact, do only some black lives matter, rather than all? That’s not merely a question asked by conservatives or contrarians. It’s being asked all over the United States by black Americans being left to the
predations of criminals, in large part thanks to the woke virtue signaling of many Black Lives Matter leaders and media allies. In Washington, D.C., Mayor Muriel Bowser emblazoned the enormous yellow words “BLACK LIVES MATTER” on 16th Street. Protesters quickly added “DEFUND THE POLICE.” One month later, 11-year-old Davon McNeal was shot in the head while heading to a family cookout on July 4. His grandfather, John Ayala, lamented: “We’re protesting for months, for weeks, saying, ‘Black Lives Matter. Black Lives Matter.’ Black lives matter it seems like only when a police officer shoots a black person. What about all the black-on-black crime that’s happening in the community?” McNeal was just one of the latest victims of a wave of violence gripping America’s major cities. Last weekend, at least 89 people were shot in Chicago, leaving at least 17 dead. Shootings in Philadelphia have spiked 67%. In the first week of June, Los Angeles saw a shocking 250% increase in murders from the prior week. New York City’s shootings have skyrocketed 44% over last year’s numbers; every person shot there the week of June 29—101—was from a minority community. It turns out that the agenda of Black Lives Matter, which includes fighting against the prevalence of police—a call taken up by Democratic mayors and city councils around the United States—endangers black lives far more than the presence of police. Yet these lives don’t particularly matter for Black Lives Matter advocates, apparently. Black lives matter when we’re talking about police brutality. But Lemon has no airtime each night for those who seek to talk about threats to black lives that dwarf in severity problems related to policing—and that are just as newsworthy. Indeed, the statistical case is unassailable that the daily murder of minority youths in America’s major cities is far more newsworthy than the latest cable panel discussion of “white fragility” or the “power of whiteness.” But our current
Black Lives Matter moment isn’t about Davon McNeal, even if the wages of Black Lives Matter’s recommended policies are death for those left unprotected by law enforcement. All that matters for too many in our elite institutions is the narrative that America’s systems are the greatest obstacle to black Americans. And not all lives lost are equally valuable in promoting that perverse narrative. This is a critical year in the history of our country. With the country polarized and divided on a number of issues and with roughly half of the country clamoring for increased government control—over health care, socialism, increased regulations, and open borders—we must turn to America’s founding for the answers on how best to proceed into the future. The Heritage Foundation has compiled input from more than 100 constitutional scholars and legal experts into the country’s most thorough and compelling review of the freedoms promised to us within the United States Constitution into a free digital guide called Heritage’s Guide to the Constitution. They're making this guide available to all readers of The Daily Signal

ICYMI: Congressman Brady on KTRH ICYMI: Congressma n Kevin Brady joined KTRH news to discuss the next round of stimulus legislation, his actions to make sure Congressional funding gets to local communities, the President's efforts to uphold law and o r d e r , a n d the importance of wearing masks. On the next stimulus package: “ I t ’s i m p o r t a n t Congress does not go on a huge spending spree. The truth is we’ve already spent over three trillion dollars, much of which hasn’t yet been spent. We’re not going to do three trillion dollars of marijuana banking, and early
release for criminals, and all of the things in the democrats' bill. “What we do know is because of the flair ups, communities are going to need more help with testing. Small business optimism is up, but parts of the economy and certain parts of the country are going to recover slower. So we got to help keep our b u s i n e s s e s surviving. We got a lot of folks out of work so we want to get them back, reconnected with their jobs and businesses. I think very smart, targeted policies that help both achieve healthy lives and a healthy economy are going to be the focus."

On proper allocation of state and local funding: “What’s not been reported is that congress has allocated almost 3 quarters of a trillion dollars to our state and local governments for schools, hospitals, law enforcement, housing… and much of those dollars haven’t even gotten to those communities. “Half of the states aren’t sharing those federal dollars with those smaller communities and rural counties. “When we sent money down to the states and to those larger counties, it was with the intention that they would help cover the cost of those cities and counties in their jurisdiction. The good news is Texas is one of the states that has been sharing dollars but some of those larger counties like Harris County are hoarding those dollars and not sharing with other communities. Before we send any more money, we are going to insist that they
share those dollars with smaller communities in the way we intended.” On the riots in Portland: “ We a l l s u p p o r t peaceful protests, there are a lot of people in pain that want to see change. But in Portland and other cities, this [violence and looting] has been going on for weeks and weeks and weeks. “Americans – I don’t care where they live – deserve a safe community and neighborhood. If the local officials won’t or can’t control the violence, looting, and damage; the national guard and federal officials have the
right to protect those federal buildings, restore order, and keep those communities safe. That is what the President is trying to do." On the importance of wearing masks: “ T h e p r e s i d e n t ’s actually been talking for a long time about following the CDC guidelines and the point here being, if you do the social distancing, the hygiene, selfmonitoring, it really works. A mandate across the country won’t, but having the communities and states make those decisions is the right way to go… I
think that’s a good message. Smart common-sense behavior is what’s going to tamp this flair up down.” “The wrong way to go would be to lock down these communities again, force people back into their homes. Because what we're seeing is these cases aren’t coming from work, they're not coming from retail shopping... it's these social gatherings where we just aren’t using common sense. I think there’s a right way to tackle it."
Brady: Taxpayer Dollars Shouldn't be Wasted on Partisan Policies CONROE, TX Today, Congressman Kevin Brady (TX-08) released the following statement after voting against H.R. 7608, the Democrats’ partisan appropriations package: “This package needlessly spends billions of dollars on partisan provisions that would reverse important pro-life protections, jeopardize o u r n a t i o n ' s security, and hinder our
ability to produce American-made energy. “Right now, our taxpayer dollars should be wholly focused on defeating the novel Coronavirus and supporting American workers and businesses – not on controversial policy measures.” Background: H.R. 7608, comprised of four appropriations bills for F i s c a l Ye a r 2 0 2 1 , includes provisions that: o Allows foreign
o rg a n i z a t i o n s t h a t perform abortions to receive federal funds. o Makes our border less safe by prohibiting funds from being used for a border wall system along the southern border and restricting the President’s ability to transfer funds to address a national emergency. o Recklessly limits America’s domestic energy and mineral production and underfunds the Presi-
d e n t ’s r e q u e s t f o r offshore and onshore conventional energy development. o Spends an unnecessary additional $37.5 billion on top of the budget caps in the Bipartisan Budget Act signed into law last year. o Distorts transparency and side-steps accountability for international organizations like the United Nations and World Health Organization.
Governor Abbott Waives Grade Promotion Requirements For 2020-2021 STAAR Testing AUSTIN - Governor Greg Abbott today announced that the grade promotion requirement related to the State of Texas Assessments of Academic Readiness (STAAR) test for students in grades 5 and 8 has been waived for the upcoming school year. Typically, school systems must take into account a student’s score on the STAAR test to determine whether the student can be promoted to the next grade level. The traditional A-F rating system will remain in place, albeit with certain adjustments due to COVID-19. T y p i c a l l y , students enrolled in grades 5 and 8 are required to re-take a STAAR test late in the school year, and sometimes again in the summer, if they do not meet grade level when taken during the spring. With this waiver, there will only be one administration of the STAAR grades 5 and 8 mathematics and reading assessments for the 2020–21 school year. The test will be administered in May to coincide with the administration of other STAAR grades 38 assessments. “As always, our goal is to provide a high quality education for every Texas
student," said Governor Abbott. "This will be a uniquely challenging school year, therefore, this year is about providing students every opportunity to overcome the disruptions caused by COVID-19. By waiving these promotion requirements, we are providing greater flexibility for students and teachers, while at the same time e n s u r i n g t h a t Te x a s students continue to receive a great education — which we will continue to measure with high quality assessments." "Parents deserve to know how well their children have learned grade level knowledge and skills in reading and math, especially in a time when education has been substantially disrupted," said Texas Education Commissioner Mike Morath. "And educators use this valuable information to make adjustments to support students the following year. But there is no benefit to our children by requiring them to repeat a year based on a single test score given the disruptions of COVID, so we are waiving the grade promotion requirements from STAAR this year for our students." "Parents rightfully expect our schools to
continue to meet a high bar and it is critically important that teachers and parents know how each child is progressing and whether or not they need additional help. A-F ratings will provide us with important information about school performance and, while we won’t use the STAAR test to determine promotions, it will continue to provide us with assessment data that we need. We face some unprecedented challenges in the upcoming year, but we must continue to keep our schools accountable and on track," said Lieutenant Governor Dan Patrick. "During a time of great uncertainty, one thing is indisputable — we cannot allow an entire generation of Texas students to be disadvantaged by the unprecedented disruptions this pandemic has caused in our education system. Not only will this approach do a great deal to reduce the ‘high-stakes’ burden of testing in a school year already complicated by this pandemic, it will hold schools accountable for providing a high quality education while equipping teachers and parents with the information they need to make certain students are learning and remain on the path to
educational success," said House Speaker Dennis Bonnen. "During these unprecedented times, with the State’s support, our schools should do everything they can to provide a quality education for our students. I also agree with Governor Abbott that our students should not be penalized by circumstances beyond their control, while recognizing the assessment itself provides important insight to grade level achievement in a new learning environment," said Senator Larry Taylor. "With this waiver, we are ensuring that the success of Texas students remains the focus of this s c h o o l y e a r. T h e s e unprecedented times have brought much upheaval to these students’ lives and this is one thing we can do at the State level to help ease them back into their educational routines while still ensuring the institutions of education remain accountable," stated Chairman of the House Public Education Committee, Dan Huberty. Devotional It’s Not Christmas, But You Have A God-given Gift Spreading the Word
By Gail J. Box Gailbox@consolidated.net
The gifts we buy at Christmas or birthdays are all expendable. Nevertheless, we do enjoy giving and receiving them. Gifts are expressions of love, however large or small. The gift I’m referring to is one we all have from birth. And there may be more than just one or two. These gifts follow us all our lives. I’m speaking of
spiritual gifts. Some are mentioned in First Corinthians 12. Paul is speaking to the church in Corinth as he says: “Now there are varieties of gifts, but the same Spirit. And there are varieties of ministries, and the same Lord. There varieties of effects, but the same God who works all things in all persons. But to each one is given the manifestation of the Spirit for the common good.” First Corinthians

12: 4 – 7. Paul is trying to explain how the people in the church should use the different gifts and talents God has given each one to help others in needy situations within the congregation. Also, in the early churches there were those who were sick or frail, and couldn’t come to church. So then, the people who were gifted with certain talents could visit with them for healing or for other helps. Each of those gifts just listed are not the best one. Paul states
this in First Corinthians 12:31. He gives us these words: “ But earnestly desire the greater gifts. And I show you still a more excellent way.” He begins by mentioning some gifts in Chapter 13:2 in First Corinthians: “If I have the gift of prophecy, and know all mysteries and all k n o w ledge, but do not have love, I am nothing!” So we find out that love is a gift. And Paul goes on further to explain “love.” He says it is patient, kind and not
jealous. It doesn’t brag or act unbecomingly. It doesn’t blame others for a wrong suffered. It rejoices with truth and not in unrighteousness. It bears, believes, hopes, and endures all things. And Paul ends by saying these three beautiful words: “Love never fails.” First Corinthians 13:4-8a. Paul continues in Chapter l3, and tells us that we can have all manner of spiritual gifts, which are given to us by the Lord, “But now, faith, hope, and love, abide these three; but the greatest of these is love.”
(verse 13). It’s love that runs our homes. It’s love that imparts joy and peace in the midst of chaos. It’s love that brings help to the suffering, and it’s love that takes the sting out of death. Love tempers any arguments. Love comes in on the face of every newborn child as they have known God before birth. Allow all to see God’s gift of love within your giftings, so they will also glorify Him – forever! That is His gift to each one of us at our birth. And it’s there for us to use every day.

On July 24, 2020, Entergy Texas, Inc. (“ETI”) filed an Application with Public Utility Commission of Texas (“Commission”) for approval of a tariff consistent with the accounting order issued by the Commission in Docket No. 50540. In Docket No. 50540, ETI sought and the Commission issued an accounting order establishing the regulatory accounting treatment applicable to the tax effects resulting from a mark-to-market tax accounting method election ETI proposed to make and subsequently made with respect to its power purchase agreements (“PPAs”) (the “ETI MTM Tax Position”). In addition, the Commission approved a methodology by which ETI will provide to customers the benefits associated with the ETI MTM Tax Position. Under this methodology, ETI will provide to customers guaranteed credits associated with the ETI MTM Tax Position regardless of the final determination on that tax position by the taxing authorities. One Nation, “Under God!” There are a growing number of Christians who think that believers should not be involved in government and politics. There are several reasons for this attitude. They are afraid of promoting a social gospel. A social club within the church that substitutes culture for Calvary. They never talk about getting saved or the blood of Jesus. This is a viable concern. We need to keep our focus on getting people saved. There are those that have given up hope. They say, “it’s too late for America”, we’re past the point of no return, all that remains is judgment. Do not give up on America! There is hope, if we will do what the bible says. II Chronicles 7:14 says “If my people, which are called by my name,
shall humble themselves, and pray, and seek my face, and turn from their wicked ways; then will I hear from heaven, and will forgive their sin, and will heal their land.” God would rather forgive and restore than judge. There are those that see politics as dirty. They think that it’s beneath us as Christians and that all politicians are crooks. These people are so tired of scandals that they’ve lost their heart to be involved at all. Some Christians have been intimidated. They’ve heard so much about the separation of church and state that they’ve actually started to believe in it. In case you don’t know, that phrase never appears in the Constitution. It was coined in the U.S. from a letter the
principle framer of the Constitution and third President Thomas Jefferson wrote to the Danbury Baptist Association assuring them that he would keep the government out of the Church (not the Church out of the government). The first amendment actually says: Congress shall make no law respecting an establishment of religion, or prohibiting the free exercise thereof. If there is such a thing as separation of church and state, it is intended as a oneway street. Some say, no, they wanted to keep both separate. Our first president, George Washington, took the oath of office and put his hand on the Bible. As his first official act as President he kissed the
Bible and then held a twohour praise & worship session in Congress. They open sessions of Congress w i t h p r a y e r, l e d b y chaplains. Does all of that sound like they wanted to keep God out of government? President Ronald Reagan said "If we ever forget that we are 'One nation, under God', then we will be one nation gone under." And so, as we look today at our civic responsibility, the question is not, should a Christian be involved in government? The question is, can you be the Christian you are commanded to be and not be involved? We need to pray for our government. We need to praise our government. Despite all our problems the USA is still the greatest nation on
earth. We need a revival of good old-fashioned patriotism! And we should honor our leaders, and all that are in authority. We should honor our parents for God placed them in authority over us. We should honor our spiritual leaders…like a missionary, who gives away his life, even his freedom, for the souls of others. We need to participate in government. It is inconceivable that God would ordain government such as He has, and then tell His people to stay out of it. It is our Christian duty to get informed and vote. How can we really make a difference? The most patriotic thing we can do is not to set off fireworks, or sing a song, but to witness…to reach, teach, and disciple people for the
glory of God. Let’s join our hearts together, and build a church that will stand as a great light to a dark and dying world. Spiritual freedom comes when you get saved! COVID-19 Can Affect Pets Positive tests in a household require extra protection for pets Written by Kay Ledbetter Social distancing applies to pets as well as humans in households with positive cases of COVID-19. Confirmed cases of pets infected with SARS-CoV2, the virus that causes COVID-19, are being reported across the U.S. “We do need to talk about our pets,” said Susan Culp, DVM, Texas A&M A g r i L i f e Research and Texas A&M AgriLife Extension Service veterinarian in the Institute for Infectious Animal Diseases. “If you do have a human in a home that is diagnosed positive, in addition to isolating from other people, they need to isolate from their pets.” The Centers for Disease Control and Prevention, CDC, recommends avoiding contact with your pet including petting, snuggling, being kissed or licked, sharing food and sleeping in the same bed. If you must care for your pet or be around animals while you are sick, wear a cloth face covering and wash your hands before and after you interact with them. Positive-testing animals with COVID-19 Texas Animal Health C o m m i s s i o n , TA H C , reported a dog in Tarrant County was confirmed to be infected with SARS-CoV-2 on July 7. The case was confirmed by the U.S. Department of Agriculture N a t i o n a l Ve t e r i n a r y
Services Laboratories. Although the dog from Tarrant County was tested through a private veterinary d i a g n o s t i c l a b o r a t o r y, the Texas A&M Veterinary Medical Diagnostic Laboratory, TVMDL, also performs testing for SARSCoV-2. TVMDL began testing for SARS-CoV-2 in April and works with the Texas Department of State Health Services, DSHS, and TAHC. Currently, animals can only be tested with approval from the DSHS state public health veterinarian and the TAHC state veterinarian. TAHC, TVMDL and DSHS work together using a “one health” approach by providing guidance in accordance with CDC. While that was the first confirmed animal detection in Texas, there have more than 20 diagnosed cases in the U.S., according to USDA, which states, “We are still learning about the SARS-CoV-2 virus, which causes COVID-19 in people, but it appears that it can spread from people to animals in some situations.” A small number of animals worldwide have been reported to be infected with SARS-CoV-2, mostly after close contact with people with COVID-19. Culp said according to the CDC, the risk of a positivetesting animal spreading COVID-19 to people is considered to be low.
“Based on current knowledge, there is no evidence that pets play a significant role in spreading SARS-CoV-2 to people,” said Andy Schwartz, DVM, TAHC state veterinarian. “It’s always important to restrict contact with your pets and other animals, just like you would other people, if you are infected with COVID-19 in order to protect them from infection.” “It’s also important that any animal suspected of possibly being infected with SARS-CoV-2 also be evaluated for the other common causes of respiratory or gastrointestinal symptoms,” said Bruce Akey, DVM, director of TVMDL, adding TVMDL can provide an array of testing for these more common, and more likely, causes of illness in the animal, as well. Culp explained that coronaviruses are a large family of viruses, and animals can have their own coronaviruses. Some coronaviruses can cause respiratory and gastrointestinal illnesses in some animals. The chances are very low that the human can spread it to the animal, but it can happen, Culp said. She said people diagnosed with COVID-19 should follow the CDC guidelines and keep themselves away from their pets as well as other people. Guidance for COVID-19
Pets may be a comfort when we are sick, but experts recommend staying away from them if testing positive for COVID-19. and your pets The CDC provides some information for all pet owners in What You Need to Know About COVID-19 and Pets. The CDC, USDA and state public health and animal health officials are working in some states to conduct active surveillance of SARS-CoV-2 in pets, including cats, dogs and other small mammals, that had contact with a person with COVID-19. According to the CDC, these animals are being tested for SARS-CoV-2 infection and also tested to see whether the pet develops antibodies to this virus to help better understand how common SARSCoV-2 infection might be in
pets as well as the possible role of pets in the spread of this virus. “The CDC also has guidelines for anyone who has a service dog,” Culp said. “They don’t have to separate themselves, but certainly should wear a mask.” Culp said CDC guidance indicates routine testing of animals for SARS-CoV-2 is not recommended. “If you have an animal that a veterinarian believes to have clinical signs, they will approach it from a ‘one health’ approach,” Culp said. “CDC wants the vet to rule out all other causes of the clinical signs first. Then if that is done and still believed the animal may be infected, the vet will contact
the state animal health official and state public health veterinarians.” The state veterinarians will work with the USDA on sample collection and submission. “We want to let people know it is not common, but it is possible,” Culp said. “If you have COVID, take the precautions and social distance from your pet.” The CDC offers a number of locations where more information can be found, including: Pets and Other Animals, If You Have Pets and Guidance for Handlers of Service and T h e r a p y Animals and Frequently asked questions.-

Farm to fork: Texas A&M Virtual Beef Cattle Short Course has much to offer ranchers Live cooking demonstration replaces traditional prime rib meal Written by Kay Ledbetter Finding value beyond the packer as more people look for locally sourced beef in the wake of COVID-19 is only one of the benefits of attending the Virtual Texas A&M Beef Cattle Short Course set for Aug. 3-5. There’s still time to register for the educationpacked short course jointly hosted by Texas A&M AgriLife Extension S e r v i c e a n d the Department of Animal Science at Texas A&M University. O n l i n e registration will be open until the event, with the cost $129 until the conference, and $149 after the conference is
over for access to the recorded sessions. “COVID-19 caused some short-term grocery store beef supply issues in the past few months, and this has really created an increased interest among consumers for locally sourced beef,” said Jason Cleere, Ph.D., conference coordinator and AgriLife Extension beef cattle specialist in College Station. “It has created some challenges because local beef processing plants cannot keep up, and processing appointments for cattle are several months out.” This increased demand for locally sourced beef has provided additional opportunities for ranchers to add value to their cattle.

“We will be offering the whole picture, from farm to fork,” Cleere said. “ We ’ l l s t a r t o n t h e production side of ranching, learn marketing tips from a very successful ranch that is providing local beef, and there will be a carcass-cutting demonstration to discuss where the value in the carcass is and how to capture all of the value.” Going virtual this year meant that they would not have the traditional Texas Aggie Prime Rib Dinner on the first evening of the short course, and many were disappointed when they heard the news, Cleere said. “So, we decided to let the expert, Dr. Davey Griffin, provide a live
Nolan Ryan Texas Aggie Prime Rib cooking demonstration on Monday evening,” he said. The cooking demonstration will be broadcast live during the virtual conference beginning at 6 p.m. Aug. 3 after a full day of educational sessions. “We normally cook over 100 whole prime ribs each year in our state-ofthe-art smokers in the Rosenthal Meat Science Center on the Texas A&M University campus,” said Griffin, AgriLife Extension meat science specialist, College Station. “The average person does not have one of these smokers so we will demonstrate on a

There will be a live question and answer feature during the sessions, and each participant will receive a digital copy of the proceedings, Cleere said.
