we caught up with mojo coffee specialist hanna teramoto to find out the secrets behind the perfect brew. Q: what’s your role at mojo? a: i’m called a ‘coffee specialist’, which is a very new type of role in our country. on any given day you could find me in one of our xx mojo cafes testing the quality of the coffees being made, training and mentoring our baristas, reviewing and developing new coffee blends as part of the mojo coffee committee, running in-house competitions, representing the mojo brand in national competitions or travelling overseas to international coffee expos and to our mojo spaces in japan and soon china. Q: how was the mojo x moochi blend created? A: we came up with the foundation idea of creating something unique and distinguishable to match the on-trend yet classic moochi style. i really wanted to have an ethiopian coffee in there because it’s one of the most floral coffees in the world, so we blended 50% ethiopia limmu with 50% colombia supremo to balance out the acidity with sweetness and floral notes. Q: what makes this blend special? A: i think ethiopian coffees are special.

ethiopia is the origin of all coffee trees in the world. coffee was growing there long before people started cultivating it so there are many heirloom varietals that give a unique character to the coffee. the mojo x moochi blend is a beautiful, floral and sweet blend that makes it approachable yet with a unique character and this balance is what it makes this blend very special.

and flat after its passed the peak, so don’t expect them to taste the same three months after the roasting date!

Q: what’s the secret behind creating the perfect cup of coffee?

3. use the same brewing ratio – ideally, you want to make a good cup of coffee every time. if your cup is tasting good, write down how many grams of coffee you have used. also, write down the amount of water at the end result in grams or in millilitres – or at least remember the line where your coffee came up to!

A: there’s really no secret or tricks to be honest, but it’s important to understand your coffee and brew without cutting corners. if i was to give out some tips, i would say:

4. be consistent in what you do – this is the most important part of creating the perfect cup. if you want to repeat the cup you made before, every slightest thing needs to be the same.

1. make sure your equipment is clean – old coffee oils attached to your equipment will make your coffee taste gritty and bitter.

Q: how would you describe your personal style?

2. use the coffee with correct aging date – depending on the type of brew, your coffee needs to be aged for that particular method. aging means the time passed since roasting and we generally count in days. for espresso, it is usually around 5-14 days. roasted coffee will start to taste stale

A: black is our uniform colour so over half of my wardrobe is black! my favourite piece in my wardrobe is probably my black skinny jeans. on the other hand, it’s nice to dress up for special occasions – i like how it makes me feel different from all other days.

a: i definitely lean toward a more masculine style. i always feel like i am in a constant tension between simple silhouettes and muted tones and and my undying love for ripped jeans, leather jackets and my collection of harley shirts. so somewhere between catherine hepburn and debbie harry perhaps.

DRESS WEEK q: what’s your party style? a: majority of the time i am a pants girl but i do love a good frock – and i also still love a little rock and roll, so generally i pair a little silk number with a leather jacket. q: tell us about a memorable dress from your past? a: i remember when i was maybe 10, my mum making me a great little 90’s floral number. a lilac, button down, swing dress, with matching ‘blossom’ style hat. best ever. i felt like a million bucks.

q: tell us about a memorable dress from your past?

a: i’ve always loved creating beautiful images from a young age and with a very artistic family i began working for modelling agencies building models portfolios. i now study interface design and have a photography business working in fashion and with products.

for my first ball i didn’t have budget for on an extravagant dress so i took to trade me and found myself a full length, deep red velvet cocktail dress which i scored for $20 dollars. as it turned out when it arrived it was the perfect fit and ended up being the dress of my dreams. i still have it to this day.

q: describe the dress you’ve photographed

q: who’s your style icon?

a: i photographed the allure dress which ended up being one of the most comfortable and easy to move in dresses i have encountered. aside from the gorgeous velvet it also has a sexy but modest cut out around the upper back to give it a bit of a glamorous kick. definitely a dress that you can wear casually during the day and dressy during the night.

a: my style icon would have to be another photographer, cindy chen. she is an effortlessly chic practice dresser that has taught me that you don’t have to be wearing track pants and a tank top to be comfortable while photographing on a shoot.

a: by day i am a true moochi girl (assistant manager at moochi ward) and by night i am a creative fiend. i literally cannot sit still, i always have about a hundred different projects on the go. i have recently taken a wee break from making my custom bridal headpieces to focus on my illustrations. q: what’s your party style? a: i have an easy party style. i like to wear things which are really versatile - so going from work straight out to dinner or an exhibition opening. any excuse to wear a cute dress and i’m all over it! q: tell us about a memorable dress from your past? a: when we were moving margie (my grandma) into a retirement home several years ago we starting clearing

out everything in her house. stashed away in one of the closets in a box we found her wedding dress from when she got married in the late 1940s. her dress is a stunning ivory with a semi embroidered rose pattern and scolloped along the bottom hem/train which falls beautifully behind the dress. this beauty is now stashed away in my closet for when i eventually have my big day.

a: i study politics and international relations and work part-time at moochi ward. in my spare time i like to write music and sing, along with using creative outlets such as instagram, tumblr and my personal blog to gather and share inspiration. i’m also working on a project with a dear friend of mine to advocate and educate people around mental health issues. q: what’s your party style? a: i’m a true believer that when you go out, you want to look the part. i would say that my style is rather feminine with an edge. this includes big lashes, strong brow and bold lips. i tend to mostly wear dresses and heels to occasions, minimalistic or dainty jewellery and a nice bag or clutch. q: what would your ultimate night out involve? going out to dinner with good friends at my favourite local and potentially going to a concert or musical. q: who’s your style icon? i have several! i love audrey hepburn and twiggy. contemporary wise, i love unique styles like rita ora, fka twigs and m.i.a – mixing that classic feminine look with more of a unique and edgy ensemble makes for the perfect aesthetic in my opinion.

a: the one thing i absolutely love about this dress is it’s not a dress! it’s a jumpsuit. but because of the elegant long and wide legged pant, it looks and even feels like you are wearing a dress. it has a v shaped neck line, the sleeves have cut outs and have amazing pleats that almost give the illusion of wings and a sheer back with a subtle slit down the spine. this jumpsuit is super chic!
