hen it comes to health, I’m pretty blessed. Good genes seem to run in my family—knock on wood. That said, I don’t take my health for granted.

I eat a diet filled with healthy grains, veggies and proteins that includes red meat (although I do limit it to once a week). I tend to eschew fads and special diets—anything that is temporary. For me, life is a marathon, not a sprint. That said, to each his own. If something works for you, go for it. As the people on the following pages demonstrate, there are so many ways to achieve health and fitness goals. Good health also pertains to the mind and soul. I’m always interested in exploring ways to enhance those two

Shawn is both. He’s a great teacher and is recognized for his broad technical knowledge. He is also extremely articulate at conveying that knowledge.” Although the taut and trim athlete and teacher still travels a great deal, spending time in New York City, he makes Southern California his home now. He and wife Annie, a fashion photographer, live near Studio City. His Renzo Gracie affiliate studio in Koreatown near Hancock Park, which opened in 2010, has about 6,000 square feet, 450 members and eight instructors. The new location in Pasadena, scheduled to open in April, came about because a lot of families who come to the Koreatown location are based there. It just happens to be a hotbed of martial arts activity. Who knew? “We already have members who commute from there, so it only made sense,” he explains. “We wanted to spread the brand.” Shawn is all-American but mystical, even-

That’s one of the reasons why he loves working with youngsters—because they’re reminders of the same qualities of martial arts that drew him to become a devotee. “Martial arts are so good for kids,” Williams says. “I tell parents that as long as they understand that it’s important to keep kids motivated and to stick with it, eventually they’ll see the benefits.” Master Po may not have articulated it this way, but if you have a great teacher and a passion for a pursuit, you can get pretty far in this world. “Discipline,” Shawn states. “It bled into everything else I did in life.” n
Shawn’s Fitness & Health Regimen Workout routine As a coach, my goal is to maintain a good level of fitness, flexibility and skill. This consists of Brazilian jiu-jitsu training once a day—generally five to six days per week—a wrestling session once a week, a boxing/kickboxing session once a week and weight training twice a week (focused on primary lifts such as deadlifts, squats and occasional Olympic lifts, followed by a circuit of accessory exercises that target my core, back, shoulders and chest).
Diet I try to eat sensibly—usually a high-quality protein (fish or chicken), a plethora of vegetables and some fruit. I’ve found that if I begin to feel “flat,” a sweet potato gives me a nice boost of energy. I aim to follow a very loose Paleo-style diet.
Guilty pleasure My mom’s “puppy chow” is insanely good. It is similar to muddy buddies, but it’s almost an insult to compare the two … another level!
Ultimate fitness goal My goal is to push myself to see what my body is capable of now that I have passed the 40 mark. Getting back into competition is definitely on the agenda after I heal from a few injuries.

Trailblazer At the age of 77, City of Hope cancer researcher Leslie Bernstein is still leading the pack with dramatic findings that are changing the way we think about and treat the disease. ILLUSTRATED BY CHRISTINE GEORGIADES
Dr. Leslie Bernstein is one of the most accomplished and highly regarded cancer epidemiologists in the world today. The PhD has won nearly every award she could receive in her field and been honored numerous times for teaching and mentoring junior scientists. And she continues to work full time, while also being active in the lives of her 11 grandchildren. Here Dr. Bernstein shares some of her findings—particularly in regards to breast cancer—with VB editor-in-chief Linda Grasso.

You headed up a noteworthy research project that identified a link between exercise and breast cancer. How was the study conducted? In 1983 I began to study risk factors for breast cancer in women who were 40 years or younger when diagnosed with invasive breast cancer. I received the grant from the National Cancer Institute and conducted the study from 1984 to 1989. Then I began to analyze the data.

get asked a lot if I jump off cliffs on my bike. I don’t. People who’ve seen the death-defying stunts of Red Bull Rampage’s elite riders or maybe watched Olympic competition get the impression that mountain biking is a high-risk,
adrenaline-fueled sport practiced only by skinny, young dudes. But on Valley trails, you’ll see every kind of mountain biker—young and old, male and female, fat and thin. Sure there are some adrenaline junkies in full body armor bombing high-skill trails like Hummingbird off Rocky Peak, but you’re more likely to encounter recreational riders who are in it for camaraderie, fun and love of nature. Although it’s impossible to get an accurate count of the number of riders in the Valley, “The growth in the sport is obvious when you look at the high school groups,” says Steve Messer, president of the nonprofit Concerned Off-Road Bicyclists Association (CORBA). Messer notes that in 2009 the SoCal High School Cycling League, which oversees secondary school mountain bike clubs, had 70 participants; today it has 1,000. “It bodes well for the future of mountain biking,” he says. THE ATTRACTION “As an intense person, mountain biking gives me a sense of calm,” says Wendy Engelberg, who has been riding for 11 years and is one of the founders of Girlz Gone Riding (GGR), a 1,500-member women’s mountain bike club. Her favorite local spot is the part of the Backbone Trail that runs through Marvin Braude Mulholland Gateway Park in Tarzana. Liz Kurtz, a GGR member and mountain bike veteran with 27 years of riding, echoes Engelberg’s sentiment, saying, “I love the challenge and how it helps me focus. I’m AD/HD and I love the adventure; you can go so many places on a mountain bike.” Kimberly Cofield, co-founder with Engelberg of GGR, says her favorite trail is the recently completed Backbone Trail off Encinal Canyon Road in Malibu. “Beyond the camaraderie, I love being out in nature and getting away from the stress,” she shares. Kurtz says her preferred trail system is in Cheseboro Canyon Park in Agoura Hills. Christian Soleta, a rider with 17 years experience, including enduro (downhill-oriented endurance) racing, says, “I’ve made more friends riding than anywhere else. My best friends are my riding buddies.” Soleta says his top-rated trail is the technical downhill El Prieto single track above La Canada Flintridge. NAVIGATING THE TRAILS Almost all of the Valley’s trails fall within the boundaries of the Santa Monica Mountains National Recreation Area (SMMNRA), which is administered by the National Park Service (NPS). NPS senior communication fellow Zach Behrens says area trails that are open to mountain bikers comprise 53% of the 538 miles of SMMNRA’s public trails across its 155,000 acres.

ith his 40th birthday rapidly approaching, 39-year-old Ryan Levitus is hyperaware of the importance of staying active, eating healthy and, most importantly, listening to
that “inner” voice we sometimes like to ignore. The Minnesota native says outdoor activities have always been a part of his life. “The city, Edina, where I grew up was like every 1980s John Hughes movie—all-American. Sports were a huge part of the daily culture. My family and I were always on the lakes sailing, windsurfing, ice-skating, and playing tennis and biking in the summertime.” In 1996 Ryan headed to LA to attend the University of Southern California to study fine art and communications. There was also another major draw. “A big part of moving out here was the chance to get into surfing. You have to want to learn because it’s a big commitment, but it’s worth every moment. It provides a reset for me. I feel like a new person after I’ve been in the water.” Although Ryan has a family, wife Alexis, a jewelry designer, 8-year-old Riley and 4-year-old River, he still manages to make time to surf in Malibu or Venice every two weeks. During the week, Ryan’s busy at work as a motion graphic designer for TV and film. “I love the creative part of my career, but it’s very sedentary sitting at my computer all day. It’s second nature to stay active, and when I don’t get a chance I start to feel it.” On the weekends he dives into the outdoors with his family—hiking, skateboarding or playing tennis. “I think people make the mistake thinking they have to kill themselves in order to get a good workout. The U.S.’s relative lack of regulations on reproductive services make it a magnet for wealthy medical tourists from more restrictive countries, such as Australia and Japan, or countries where socialized medicine sets treatment limits, such as Canada. And since China eliminated its one-child policy, there has been a boom in older Chinese couples traveling to Southern California for help adding to their families. Seeking medical intervention for conceiving a child means getting sucked into a tornado of medical acronyms, starting with ART itself. Quickly following that are specific ART service options with names like IUI, IVF and PGS. Tamara*, a 37-year-old photographer who has been trying for five years to conceive with her husband of seven years, remembers her first encounter with a fertility doctor as being disturbing and confusing. “He was using all these big words we didn’t understand and he talked a mile a minute. It felt like a science project. That’s not how I want to make a baby.” She did one unsuccessful treatment cycle at that clinic—which cost her $18,000. Unhappy with that outcome, Tamara then went, she says,

There’s no known time limit for cryopreserved embryos.” Egg freezing (cryopreservation) is a growing business for fertility clinics, as women increasingly get the message that fertility is relatively

The truck is the brainchild of 33-year-old Diana Lazarte, who insists she is not a chef. “I have never been interested in being a chef. I have a great love of food,” the Sherman Oaks resident explains. Her menu is comprised of mostly healthy snacks, juices and smoothies. But it also includes incredibly

no refined cane sugars or additives. Running a food truck was not Diana’s original plan. After doing the New York City rat race thing and working in business for six years, the Queens native got “burned out.” She enjoyed making healthy smoothies and snacks and saw an opportunity. “People kept telling me, ‘Your kale chips are so great! They taste homemade, but better.’ That made me laugh so hard.” Looking for a way to become her own boss, Diana started researching. She visited local smoothie shops, followed blogs and podcasts, and read business books. “I just fully invested myself into every aspect of health. Then I tailored the ingredients into a smoothie that tastes amazing.” All smoothies contain a superfood, which adheres to Diana’s general philosophy that “When you feed your body nutrient-packed foods, you don’t crash and overeat or feel tired. Your body is nourished and energized—ready to tackle anything.” One of her most popular smoothies is the BeeBerry Energizer, which has local, live bee pollen, aimed at reducing allergies and strengthening the immune system. The big juice seller is the Emerald Cleanser, which has low sugar content and is made with fennel and kale. She refers to fennel as her star ingredient, saying, “I love the flavor. It kind of tastes like licorice but brings a nice balance to the drink without having to add so much fruit.” Fennel has other attributes; it is packed with potassium, antioxidants and anti-inflammatory properties. Diana’s mom is Peruvian and she still has family in Peru. Diana visited there as a child. “I was always so surprised by the different fruits and ingredients used there. Peruvian cuisine is so complex. My favorite ice cream is lucuma and I’ve only had it in Peru. I now use lucuma powder in my acai bowls. I use other ingredients as well, including maca and Peruvian cacao.” Diana, who plowed her life savings into buying the truck, says she loves what she does but admits managing a food truck has its challenges. “We have run out of generator fuel, all our blenders have failed at once for 15 minutes, with 100 people waiting. or years, as the president of strategic partnerships at the PR powerhouse agency Edelman, Gail Becker used her savvy marketing skills to help people and companies promote their brands. Now she is putting that know-how into getting the word out about her own brand—the nutritious, gluten-free frozen pizza line, Caulipower.
Although the pizzas are made without gluten, they are not being
marketed as a gluten-free product. “Those so often just don’t taste great. Caulipower pizzas have a delicious taste. There are no fillers or cheese in the crust. We use brown rice flour. Plus, there are only 2 grams of sugar per piece—the lowest amount of any on the market.” Gail left the corporate world about a year ago after her father passed away. “He had come to this country with nothing and left with everything: a business, a home and a daughter who loved him. Not long after his death, I recognized this incredible change in me. I increasingly had less patience for things that seemed meaningless and an increasing desire for something more meaningful. I realized that I wanted to be an entrepreneur just like he was … and to try and do some good along the way,” she shares. The inspiration for Caulipower came from her two sons, Josh, 19, and Eli, 14. Both were diagnosed with Celiac disease at a young age, and for years Gail had been buying pre-packaged, gluten-free food. “I began to notice how unhealthy it typically is for you—filled with more fat, sugar and calories. Frustrated with what I could find, I caught on to the cauliflower craze that was sweeping the internet.” Packed with vitamins C and D, cauliflower is considered by some to be a “superfood.” One night she made a cauliflower-based pizza crust and the boys raved about it. “They asked for it again the following week and, to be honest, I said no. Making it took too much time and effort after coming home from a long day at work, but I promised them that I would buy it somewhere. I looked everywhere but couldn’t find it.” A light bulb went off. Gail commissioned some research and began the painstaking process of creating her food line. “We tested countless recipes to come up with the perfect cauliflower crust. I was really taken by the idea of something that was born on the internet and created because people wanted it and couldn’t find it in the marketplace.” The line, with four different varieties of frozen pizzas, is now available at Whole Foods and Bristol Farms as well as on Amazon. Gail is also fulfilling her mission to give back. Caulipower supports One Sun Donor, a nonprofit aimed at connecting kids to whole food. A portion of Caulipower’s proceeds goes toward helping create vegetable gardens in underserved schools across the country. It’s been a ton of work, and Gail admits, “I’ve kind of let myself go for the past year or so. I’ve just really been holed up.” But she has no regrets. “I always used to tell people, the day you stop learning is the day you need to leave. I love what I’m doing now because I learn something new every day. It’s exhilarating.” n

Gail’s Fitness & Health Regimen Workout routine I go to the gym every day—except for when I travel. I love classes with hand weights, though if I have a good idea that pops in my head mid-class, I have been known to sneak off to my phone and jot it down. If I can’t make class times work, a good session on the elliptical with empowering music does the trick. “Don’t Stop Me Now” by Queen is a particular favorite.
Diet I try to eat a lot of vegetables and love turning favorite foods into “better for you” options—like zucchini noodles, which are a regular dinner staple. I try to avoid anything fried.
Guilty pleasure Popcorn. There are two places that I can’t do without it. One is the movies; the other is Chicago’s O’Hare Airport. Those who have been there know precisely what I mean.
Health Goal Living a long life is a great goal, but I want to be able to make the most out of it. I lost one parent to old age and one to illness. I have seen the difference. I want to be independent and travel the world in life 3.0. Right now, though, I’m very happy with the 2.0 version.
Fitness Goal I would love to be able to take part in a marathon in some way—even if it’s just walking.
Sleep Routine Sleeping has never been my superpower. I am a very early riser, usually about 4:30 to 5 a.m. In all honesty, I probably average about six hours a night, which is OK, but I would love to be able to sleep more. It’s something I am working on. There is no TV in the bedroom and when the lights go off, so does the phone.

I don’t want to be the guy at the party who is afraid to have a drink or a piece of cake.” Brian comes from an athletic family. In addition to his fit dad, (who is a hair stylist in Woodland Hills), his mother is a former professional dancer who currently owns the Anna Cheselka Dance Center in Studio City. Brian says he too will be fitness-minded later in life. “I anticipate evolving my process to address aging. This will require me to make adjustments, but I’ll continue to push myself as hard as I am capable of pushing. It’s a simple mindset, and I haven’t diverted from it since day one: train every day. That will not change.” n

I had a cause, a goal, a kayak and three months to get ready. September 4 was the kind of Sunday morning when the wind and the marine layer cause Manhattan Beach residents to stay indoors way past brunch time. I schlepped more than 160 pounds of kayak and gear to water’s edge while the rest of MB was still asleep. My main concern was takeoffs and landings in surf zones. I never practiced a beach launch with a fully loaded kayak before. That was a separate course at UCLA, for which I was too cheap to sign up. I had my sprayskirt around the cockpit, my personal floatation device on, my marine radio tuned to the Coast Guard emergency channel and all of my equipment in place. The waves were already licking the stern of the yak. My eyes focused on the water, counting the waves and the time lapse between them. The possibility of a shameful spill one minute into the journey made me extra tense and alert. The adrenaline rush kept me focused on the approaching surf and my hands firmly on the paddle as I was doing my best to keep the yak perpendicular to the oncoming break, while enduring endless gallons of salt water in my face.

The next 10 days were a delicious cocktail of perfectly balanced Zen and adrenaline with a twist of doing good. One minute I was enjoying the serenity of glassy waters under a friendly layer of ocean mist, while at other times I was paddling for my life—navigating between sharp rock gardens and menacing waves. I spent my nights on various beaches, at times listening to soothing waves or to rowdy yells of overjoyed Pokemon hunters. I learned to move with the ocean. I learned to respect tide cycles. I woke with the sun and went to sleep with the moon. I learned the names of towns between here and Tijuana. I appreciated my space and learned to appreciate the proximity of others. It gave me joy to know that true DIY adventures still exist, and sometimes they may just start three blocks from your house. “A woman who had undergone several previous nasal cosmetic surgeries came to me with a severe nasal deformity and nasal obstruction. I had to devise an innovative surgery using bone grafting and ear cartilage to fully reconstruct her nose. The surgery was very extensive and took about six hours. I grew up in the Valley. I went to Chatsworth High School before going to college and medical school. My whole family is here. After completing my residency and specialty training at the University of California Los Angeles (UCLA), I moved to Las Vegas for a year to practice. I very quickly realized how much I missed my friends and family—and decided to move back to the community where I grew up. Not a day goes by that I don’t see a patient whom I somehow am connected to. It’s a real thrill to take care of people in the community where I was born and raised.

Surgery is usually not required, and these symptoms will resolve with rest, physical therapy and anti-inflammatories. Sometimes the symptoms don’t resolve with these modalities. Dr. Marina Bochkur-Dratver has been a licensed clinical psychologist for more than 17 years and has extensive experience providing treatment to children, adolescents, adults, couples and families. She specializes in parenting education and women’s issues. Kathryn Lee is a nutrition therapist who offers individual and group consultations for individuals who struggle with eating and exercise disorders, disordered eating and emotional eating. She utilizes a non-diet approach to her treatment to help clients heal their relationship with food and their bodies. Kathryn has been working in the eating disorder field since 2008 and has had significant experience working in residential, day and outpatient programs around Los Angeles.

IS IT IMPORTANT TO KNOW WHICH FILLER TO USE ON A PARTICULAR PATIENT?
We specialize in cosmetic injectables—including those aimed at reducing wrinkles (Botox, Dysport and Xeomin) and fillers such as Juvederm Plus, Ultra Plus, Voluma, Volbella, Restylane Lyft, Silk, Refyne, Defyne, Sculptra, Belotero and Radiesse. We also offer microneedling, which generates new elastin and collagen. And we use Novathreads, which are dissolvable threads—essentially sutures—that are placed under the skin to lift a particular area.

“Yes. Fillers differ in thickness, cohesiveness, longevity, water retention, reversibility, viscosity and their ability to stimulate collagen. So at Cosmetic Injectables, we give product choice a lot of thought. We take time to discuss the options and the desired result with patients so we can ultimately choose the right filler that’s also within their budget.”
“First-timers are usually a bit anxious, which is understandable! They want to make sure results will look natural. We choose the proper pain management, depending on a patient’s level of sensitivity, which filler and location, and the longevity that is desired.”
DO YOU TREAT MANY MEN?
“We have seen a huge spike in the number of men coming to our office this past year. I think injectables are becoming more acceptable in our society, so men feel less intimidated. Tired, angry and sad expressions can impact perceptions at the workplace (and ultimately income), as well as social relationships. While outdated techniques might result in a somewhat feminine look, in recent years we have learned how to enhance the male facial features to result in a more masculine, rejuvenated look.”
Everything in moderation. Just as we do our nails and hair and choose the proper attire, we want to avoid overdoing it. Injectables in modest amounts can maintain a “well-kept” and natural appearance. Most of my clients want to look less tired, sad or angry. The most reassuring factor is that if a patient chooses a reversible procedure (most fillers fall in this category) and they don’t like the results, we can essentially “undo” them with a simple injection.
PATIENT CONCERNS Patients typically don’t know how much down time there will be. They wonder if there will be adverse affects with injectables, and they’re worried about possible risks. They also worry whether they are being overly vain. We can relate to these fears—it is natural to be concerned. And it is important to talk it through. We spend as much time as necessary to understand what the patient is trying to achieve. We discuss the various methods available to reach each goal.
