Letter from the Editor Like the majority of Moore residents and, we suspect, most Americans, we would like to just hit a reset button on 2020. We find ourselves in the midst of a once-in-a-generation pandemic that is redefining our lives in almost every category. It doesn’t matter whether we look at things from 30,000 feet or ground level, the future is in question. From the complex fates of millions of workers and legacy businesses to something as simple as a handshake or a hug. Everything has changed. Everything is still changing. We’ll have much to explore in the months ahead, but in this issue, we wanted to dive into the plight of our local businesses as they struggle to stay afloat in the new world of COVID-19. We also want to honor those high school seniors who, for the first time in as long as any of us can remember, were denied the final months of their high school experience. It’s possible that you’ll also notice that this month’s edition of the Monthly is significantly lighter than usual. Like everyone else, we have also taken some shots over the past two months. That makes us even more grateful that you’ve picked up the May Moore Monthly. Please know that our hopes and our prayers are for the safety and health of you, your family, and your loved ones…and that we all find our way through this unsettling territory together.

MOORE’S SMALL, LOCALLY-OWNED BUSINESSES FIGHT TO SURVIVE

L

ocal residents know what it’s like to weather a significant storm. But when the ball dropped on the year 2020, no one expected the kind of storm that blew into the area in mid-March. A virus that originated in a city on the other side of the world, a city none of us had ever heard of, has left behind a trail of damage that rivals the worst wreckage from an EF-5 tornado. 10 | MOORE MONTHLY | MAY 2020

Kathy Gillette, President, and CEO of the Moore Chamber of Commerce, said the situation surrounding the Coronavirus with all the “shelter in place” and social distancing protocols is unlike anything she’s ever experienced. “We’ve pretty much seen the worst of everything in Moore,” said Gillette, “Or at least I had thought so with the 2013 tornado which was

so devastating. But I think the difference with our current problems are that on the day after the tornado you saw hundreds of volunteers people flooding the streets to help. This time around, we can’t do that.” This time around, the damage-inflicting villain is not a massive storm. It’s a microscopic virus. But it has profoundly impacted society, creating devastating problems for

locally-owned small businesses. “We’ve had to completely change the way we live,” said Gillette, “From whether we hug or shake hands or go to meetings. So, of course, that’s going to impact businesses in a widespread way that we had no way of predicting.” The unpredictable nature of the current situation could reshape


the identity of Moore in the future. Deidre Ebrey, the City of Moore’s Director of Economic Development and marketing, said that small, local businesses are critically important. “Local businesses provide the identity of a community or a city,” said Ebrey. “To lose them would be to lose a sense of who we are. And that’s not taken lightly.” Ebrey expects Moore residents will rally around these businesses and support them. She believes that in doing so, they will help sustain Moore’s positive identity.

It has actually been a good test for us to see the things that we don’t necessarily need to be doing in the future, as well as some things we can improve on. Armstrong Bank’s (formerly Republic Bank) Central Oklahoma Region President and Chief Banking Officer, Andy Sherrer, said the widespread impact Ebrey mentioned is unprecedented. “This is a unique circumstance, unlike anything I’ve ever experienced,” said Sherrer. “It has certainly impacted the worldwide economy, and we see that impact locally as well.” Sherrer says that some of the biggest problems business owners face are merely trying to make the decision on whether to try and stay open or shut down until the crisis passes. “These are tremendously difficult questions these business owners are facing,” said Sherrer. “There’s no real way to know just know long this is going last, so they have to weigh the tough and painful decision on whether to furlough their employees or keep paying them, for example. It’s like a ping pong match, only you don’t know what the score is to end the game.” Gillette said that local business owners are already doing their best

Heather Thompson (Pioneer Library System): Since folks haven’t been able to come to our locations for classes, we’ve been working with our very talented librarians to create adult, teen, and children’s activities that are all digital. It’s been really challenging but has expanded our capabilities in learning to use these new outlets and new skills like video editing. Jenny Campbell (Showplace Market): It’s been a tough time for us, to be sure. But we’ve been using Facetime for our customers and the over 100 vendors in our store. Mostly we end up running around like chickens with our heads chopped off, Facetiming with them to grab this or that. So, that’s a way that we’ve been able to have them shop in the

store without actually being in the store. And of course, we offer curbside pickup for anything they need. We’re also going to try and do some Facebook live things with Mother’s Day coming up. Samantha Tritten (CPA): People still have to do their taxes, so that means we’re busy. But the main thing we’re trying to do is to help clients with the new Payroll Protection and Small Business loans that have been provided by Congress.

Coronavirus (COVID-19) Help, Resources, Things to Consider In times of uncertainty, human beings, tend to hunker down, focus on surviving, freeze-up, feel overwhelmed, and we tend to be change adverse, hold on, and when stress is up, communication is down. The best way to stay proactive and not knee-jerk react to economic changes is to conduct a strategic planning session. Revisit your purpose as a company and ask what has made you successful, conduct current marketing research, examine the market and determine what changes to your business model are necessary to survive this current crisis. Below is a list of areas/questions/resources to consider which will help:

• Reassess the current state of your business in this current environment: ○ What is working? What no longer works? ○ Make necessary adjustments – expenses, personnel, mandated adjustments such as essential or non-essential business. ○ Ask yourself what modifications you can tweak to your current business model which works in this environment (i.e. restaurant pivot to take out only, take and bake). ○ Keep an eye on cash – this is oxygen for your business; guard and treat it as such.

○ Re-run your monthly 2020 cash flow projections (this may need to be done by week until the crisis curve has flattened), so you have the best guess at cash flow needs. • Communicate with your customers, let them know what changes you have made to keep them safe as you take care of their needs. Provide your customers with an easy way to communicate with you about any of their questions or concerns. Consider social media posts since many of your customers are working from home, website status updates, and direct email. • Communicate with your employees – changes planned or mandated, resources that are helpful to them and offer an easy way to address their questions and concerns with you. • Understand how to use Zoom (zoom.us) and other online technology to communicate and stay in touch with employees remotely. • Consider a business coach or mentor who can be a sounding board and help you navigate necessary changes. • Keep current regarding resources available to businesses and employees to weather this crisis:

family and medical leave for specified reasons related to COVID-19 from the effective date through December 31, 2020. ○ Internal Revenue Service at irs.gov/coronavirus provides updates regarding economic impact payments. ○ This Facebook page serves as a repository for entrepreneurial ecosystem builders to post resources to support entrepreneurs (and small businesses) that are specific to coronavirus/covid-19 crisis: https://www. facebook.com/groups/2608035679324447/. This group is open and composed of ecosystem builders from across the country and some parts of the world. • Gain clarity in terms of what you can control called your circle of influence, and what you cannot control, called your circle of concern. This helps you to focus and make changes where you can and to stay away from needless worry/depression/freezing in place caused by “what if” thinking about what you cannot control. That only destroys your mindset and saps your energy. • Practice self-care mentally, emotionally, and physically, and try to eat healthy, sleep, and exercise regularly. If you do not take care of yourself, then you cannot be in a position to take care of others, and especially not your business, customers, employees, and loved ones. • Avoid spending endless time watching TV, talk shows, glued to talking heads and negativity. This causes panic, lizard brain, and impairs your ability to make sound rational decisions based upon the things you can control. In summary, be kind to yourself and others. Be a pillar of emotional support to others. Do not succumb to fear and uncertainty, and fight to maintain perspective! We have all we need to weather this crisis if we will just remember to remain confident and inspire confidence in others by how we show up!

and most of our staff have been working from home. Everyone agrees that the biggest problem is that no one can say for sure just how long this situation will last. Even as cities like Moore and Oklahoma City put into effect the three-tier “reopening plan” announced by Oklahoma Governor Kevin Stitt, there’s the fear that a resurgence of COVID-19 cases could push municipal governments to reinstitute a “shelter-in-place” policy and close non-essential businesses. The challenge local business owners face moving forward in this environment is profound, but not impossible.

“We’ve done the improbable here in Moore, and I know we can do it again.” - Deirdre Ebrey, Director of Economic Development “There are no silver bullets out there,” said Sherrer. “But I think creative energy and thinking outside of your normal practices for small businesses from a marketing perspective is certainly something I’ve encouraged many businesses to do.” Sherrer encourages business owners to connect with local banking and accounting experts to pursue funding from Payroll Protection and 14 | MOORE MONTHLY | MAY 2020

Small Business Association loans, some of which may be forgivable if businesses remain open during the pandemic. He also points out that now is the time when your local business organizations can be most helpful. “I think business owners should really be engaged with their local Chambers of Commerce,” said Sherrer. “Those folks and industry associations are precious because that way, you at least have the ability to know and engage in best practices within your particular industry.” Ebrey also points to the Moore Chamber of Commerce as an excellent resource for local businesses. While the Moore Chamber doesn’t provide direct assistance, they can give wisdom and direction in uncertain times. The Moore Chamber has been offering many Zoom meetings for local business owners that enable them to keep up with the latest news from the state capitol as well as to share creative ideas on keeping their businesses profitable. She also encourages business owners to strive to open safely but profitably. “If it makes more sense to remain closed that to open with more costs and less profit, take that into consideration,” said Ebrey. “And keep in mind that some of the recommended protocols require an extra outlay of cash for things like cleaning supplies and additional sanitation.” Ebrey also encourages residents to be patient and supportive in their

roles as shoppers and consumers during the transition out of pandemic protocols. “We need to extend grace to our local businesses,” said Ebrey. “We need to be understanding and patient. Pressuring a small business to return under these circumstances sooner than they are able is not helpful. We also need to show compassion to the shop owner who can’t accommodate our request when we want it or by going out of our way to stand outside in a curbside pickup line because that’s the business owner’s decision to keep staff and customers safe.”

But amid that uncertainty, there’s also a spirit of hope and optimism that small, local businesses will find their way to new successes. “I would encourage everyone to just be patient with the new processes being put in place,” said Ebrey. “You can be positive and help neutralize the negativity when things don’t go as planned. We’ve done the improbable here in Moore, and I know we can do it again.” Sherrer said that small business owners should continue to take advantage of help any time it’s offered.

Sherrer pointed out that these adjustments being made by local business owners can also lead to new practices and strategies in the future that could ultimately help businesses grow. He says one of the most prominent and practical opportunities resulting from these pandemic restrictions is the opening of a new “virtual” frontier.

“We hope that by the end of this week or first of next week, we’ll be able to allocate funding from the federal government to be able to help and participate with more people,” said Sherrer. “As a banker, that’s why we do what we do: so that we can make a positive difference in people’s lives. That’s something we’re honored to do.”

“There’s this new awareness of our ability to have different channels of communication that go far beyond a brick-and-mortar storefront,” said Sherrer. “It might be a new website or social media presence or the use of communication software platforms like Zoom. Small businesses are going to have to be cognizant of these things and determine if they’re right for them.”

And for Gillette and the Moore Chamber of Commerce members, it’s a great chance to remind everyone to shop local in the months ahead as the slow recovery process begins.

“I truly believe we’ll be able to get back to where we were, even a better place,” said Gillette. “But we’re just going to have to be patient and remember to be loyal to our local businesses and restaurants. We really do need to make sure we help those mom-and-pop stores survive.”

Moore’s New Police Chief Brings a Sense of Calling to the Job

T

he middle of a pandemic seems like a tough moment for someone to step into the position of Moore Chief of Police. But Todd Gibson, the city’s new “Top Cop,” says he was already dealing with Coronavirus issues before coming to Moore on April 1. “Jumping into this position during this unique time in history absolutely has its challenges,” said Gibson, “But one of the fortunate things for me is that in my previous job working as the Cleveland County sheriff, it was something I was dealing with daily.” Gibson says it also helps that Moore was keeping up with all the developments with its own strategies and protocols.

“Stepping in here with the great leadership we have,” said Gibson. “There are so many great men and women we have at the Moore police department, it really makes my job easy to step in during this transition of COVID-19.” Gibson left his position as the Cleveland County Sheriff to take the Chief of Police position in Moore. Before that, his extensive law enforcement career included a significant period with the Norman Police Department, where he achieved the roles of Captain and Division Commander before retiring. Gibson says his love for law enforcement is what drew him back into law enforcement, first as county sheriff and now, as Moore’s police chief. For Gibson, law enforcement is more of a calling than a job. “There’s an internal desire and calling to want to help people, to want to do good,” said Gibson. “My entire life, I’ve really wanted to stand up for others that couldn’t stand up for themselves. I don’t like a bully. So, law enforcement was a great opportunity to make an impact on my community and make an impact on people’s lives.” The position of police chief in Moore is one that, according to Gibson, was one of the few jobs that could entice him away from his position as Cleveland County’s sheriff. “When you look across the state of Oklahoma, the chief of police for Moore is one of the most coveted law enforcement positions in the state,” said Gibson. “It’s not the Oklahoma City chief. It’s not the Tulsa chief. It’s the Moore chief of police position that is a job that anyone in law enforcement in this state would want.”

One of the things that make the job so attractive is that city leadership in Moore has proven itself to be a cooperative and hard-working team in the face of repeated challenges. “We have great city leadership from the city council,” said Gibson. “From the police and fire departments, and from the other city department heads. We also have great support from the city manager. People might take that for granted, but it’s very unique to Moore, and a lot of other places don’t have that.” Gibson says Moore is a wonderful community with a tremendous reputation as a positive place to live, play and work. His desire is that the police department will continue to serve the community in a way that makes residents feel safe and welcome. “What I really want our residents to know is that your police department is here for you,” said Gibson. “If you need anything, don’t hesitate to call us because we want to be as much a part of the community as possible. We’re blessed to have strong support from the community, and we don’t ever want to take that for granted.” Gibson and his family have lived in Moore since 2006. He has been married for 23 years and has four children. One of those children is in college, two are in high school, and one is an eighth-grader. MAY 2020 | MOORE MONTHLY | 15

Beat the Bugs and Enjoy a Great Month of Growth R

ight around May, growing food in Oklahoma takes on a whole new dynamic. Bugs will really come out of hiding and start trying to eat your plants! Thankfully, nature has engineered a variety of ways to counteract these bugs, and we’re able to manage them without the use of pesticides in our garden. Check out our free mobile app that makes it easy to identify and manage the most common garden pests organically. You can learn more by visiting our website seedtospoon.net or searching From Seed to Spoon in the App Store. Apart from the influx of insects, May is one of the best months for growing in Oklahoma. A lot of plants (greens & root crops) should have already been in the ground by now, but many heat-loving crops welcome the warm weather and can be started in May. This year has been unusually cold with a late freeze, so your peppers and tomatoes may just be getting started! You can check out all of the plants that you can grow right now for your area by using the “can be planting” filter on the main screen of our app. This will show you everything that you can get started growing right now!

Cucumbers are really easy to grow and love our warm summers. They are a voracious plant that does best when trellised or allowed to grow up a vertical structure. We build simple trellises out of t-posts and arched cattle panels that we get from Tractor Supply. The most significant pest you will f a c e with cucumbers is

ons, and have a higher chance of success. You can also grow the smaller ones vertically and allow them to hang from the arch or trellis. Watermelon takes up a lot of space, so we usually grow them in the corners of our gardens. We currently have peas going in our garden right now and will be planting beans all throughout May. Once it gets real hot, we will begin to switch to southern peas (black-eyed peas). We will continue planting new rounds every couple of weeks throughout May. the cucumb e r beetle, which looks like a yellow striped ladybug. These can be controlled with simple DIY homemade traps! Check out our YouTube channel that shows how to make these traps or check out our app for more info about them as well! Varieties of squash also thrive in May and can be started directly from seed. We also grow our squash vertically to help with squash bug prevention. You can also wrap the base of your plants in aluminum foil to help prevent squash vine borers. One squash plant will provide an enormous amount of squash as long as you can keep the squash bugs away. Once these squash bugs become established, they can be hard to manage. Check the undersides of leaves daily for little brown eggs and remove them with tape. Watermelon also loves our summers and can be started directly from seed in May. Although you can grow the really big watermelons here in Oklahoma, we prefer to grow the smaller ones that take less time to produce, create more mel-

The Mac Man Celebrates 25 Years in Business

A

quarter of a century ago, Apple computers were still a distant competitor to the Goliaths like Microsoft and IBM, which dominated the personal computer industry. But for Bob Hofegartener and Chuck Schrunk, 1995 was the perfect time to start up a new business that focused on Apple products. “We both worked for a company over in Del City called ‘Mac Solutions’,” said Hofegartener. “They went out of business, and the company that bought them wanted to hire us, but wanted to cut our salaries.” Schrunk went to work for another company in

In 1995 the Apple landscape was filled with models like the Macintosh IIe, the Macintosh LC II, and Mac Powerbooks. It would be another few years before Steve Jobs began the revolution that has led to a world filled with Apple products from powerful desktops to mobile phones that are more powerful than the PCs of a few decades ago.

“You can be like the guy who pays a new-car price for that fancy car,” said Hofegartener, “Or you can shop around and find yourself a great used one and let that first guy carry the burden of the ‘new-car’ cost for you. You still get a fabulous computer at a much better price.”

“It was a new age, and there were very few Apple experts back then,” said Hofegartener. “I was doing a good bit of work onsite along with some repairs at home, and things just began to grow.” Since 1995, The Mac Man has grown from that bedroom-based-business to one of the state’s leading Apple computer repair locations. “It got to the point where I couldn’t keep up with all the stuff at home,” said Hofegartener, “I opened a little one-room service center up in Oklahoma City for a while, and then, after a couple of years I moved back down to Moore. We were doing mostly onsite stuff at that point, but as the walk-in business picked up, we opened our site over off of Tower Drive and then ended up moving to our current location here in the New City Shopping Center.” Christy Yarger joined the team as a bookkeeper in 1998, and Schrunk came on board as a co-owner in 2000. Over the past few decades, The Mac Man has established itself as a small, but very significant business in the Oklahoma landscape. “We’re one of only two locations that are still open during this pandemic,” said Schrunk. “When the iPhones came out, we asked Apple about service those, and they told us, ‘We’ll take care of the phones, you guys do the computers.’ So we’ve done that, and the business has really grown.” These days the majority of business for The Mac Man is a small business, onsite and walk-in repairs. The company has become known as a local go-to source for refurbished Apple computers. Customers looking for a great bargain on a Mac computer will typically find a selection of iMacs and laptops on hand at very reasonable prices. Hofegartner encour-

Hofegartener and Schrunk admit they’re biased toward Apple computers, but are willing to make room for those who want PC’s instead of Mac’s. “If a PC gets the job done for you, I have no problem with that at all,” said Schrunk. “But the great thing about Apple is that they just work well right out of the box and for a lot of people that’s a game-changer.” Schrunk agrees with his co-owner about taking the smart path of buying a refurbished Mac to save money and still get a great computer. “They’re less expensive, and they get the job done for you,” said Schrunk. “And if you buy one from us you’re getting our decades of experience in working on these computers. I think that’s the thing we would want folks to know about The Mac Man – we’re really good at what we do.”

T

he COVID-19 pandemic has changed our daily lives, such as how our kids do school, shopping for groceries, the way families connect with loved ones outside their homes, and much more. Norman Regional’s healers have always been there for our communities, especially in times of need. In the face of this new virus, I am proud of how our healers have stepped up to the daily challenges presented with this ever-changing situation. One thing that hasn’t changed is the Oklahoma Standard of helping others in times of need.

Norman Regional has been on the receiving end of this lately with the overwhelming outpouring of support for our health system and healers throughout the community. We are so grateful to the local businesses and organizations, both big and small, as well as individuals who have stepped up and shown their support through generous donations. From small heartfelt gestures such as chalking words of encouragement to our healers on the sidewalks around our three campuses to local food trucks and caterers donating meals to keep our staff fueled with delicious food as they work. Many area churches have also reached out to us to help in various

ways. Victory Family Church in Norman donated 500 N95 masks, which are much needed personal protection equipment, helping to keep our frontline healers safe. The Well Church in Moore served our healers on Easter Sunday by donating breakfast and dinner meals for all our employees working that day at our three Emergency Departments as well as for all staff at both Norman Regional Moore and the HealthPlex. The University of Oklahoma football coaches donated $3,500 in local restaurant gift cards to our healers as well as snack bags put together by their families with personalized notes of encouragement as their kind way of showing support. Both the Moore and Norman Lowe’s Home Improvement stores donated items for our temporary tents, 100 cases of Gatorade for Emergency Department, and EMSSTAT emergency workers as well as four paint sprayers used by EMSSTAT to disinfect the ambulances after each patient. Hitachi’s generous financial contribution enabled us to purchase 3,000 N95 masks. These are just a few of the many businesses and organizations that have made recent donations. Many individuals throughout the community have also helped support Norman Regional by donating their skills and time. In late March, we put out a call for cloth masks for patients and our healers not interacting directly with patients. Professionals and amateurs of all sewing abilities tapped into their fabric stashes and started sewing masks immediately. Carol McCurdy, a nurse of 42 years and wife of Norman Regional Surgeon Dr. Rick McCurdy, stepped up to answer the call for homemade masks. She said she has never seen anything that impacts healthcare needs across the world, like the COVID-19 pandemic has. In the first three weeks of making masks, she was able to make about 150. Thank you to everyone who has donated their time, sewing skills, and materials to make cloth masks. Another example of individuals offering support has been the Friday Night Lights events. After Norman resident Kelly Cook saw a video of community members in Georgia gathering in their cars in the local hospital’s parking lot to show their support for the healthcare workers inside by flashing their lights and playing praise and worship music, she posted on the Nextdoor app to see if neighbors might be interested in doing something similar to support the local hospitals here. Sheri Bennett saw her post and reached out to Kelly, suggesting they put together an event on Facebook, and within days they had their first event at the Norman Regional HealthPlex. The event has since grown to gatherings at each of our three campuses every Friday night from 9 to 9:11 pm. Community members stay in their cars and show their support for the healers by flashing their lights as well as offering prayers to all inside the facility. Our healers love these Friday Night Lights events, and you can often see them at windows waving back. This event has not only safely brought the community together, but as an added bonus, Kelly and Sheri have been brought together by their new friendship. We are blessed to serve communities who love and support our health system and healers so abundantly. his morning in an attempt to get a jump start on dinner plans, I pulled out my crock pot and grabbed the onions and celery to be chopped, only to discover both had gone bad – the onion with a brown center and the celery - limp and colorless. With no time for recourse, I dumped the items in the trash, started into my workday, and chalked it up to another night of takeout pizza for the family. Many can relate to my predicament with empathy, as it is common to throw out spoiled produce or unwanted leftovers. In fact, a USDA report found that American consumers waste approximately 250-290 pounds of food each year. Currently many individuals are seeking to save money by preparing more meals at home. Therefore, it is important, now more than ever, to reduce waste and stock up on food staples that can create nutritious meals that stretch a food dollar. Consider taking the time immediately after getting groceries home from the store to clean and prep them for use and then storing them in clear containers at the front of the fridge. Some pantry staples that have broad use include canned beans, canned chicken, canned tomatoes, chicken broth, whole grain pasta, garlic powder, dried minced onions, peanut butter, balsamic vinegar, and olive or canola oil. • Shop with a plan It is extremely helpful to keep a list of family favorite meals and necessary ingredients posted near the kitchen. You can then draw from this list for inspiration (after looking through your kitchen for what is still available from your last supermarket trip). For example, if black beans and tortillas are in your fridge, consider picking up a block of cheese to shred to create a quick meal of black bean quesadillas. Additionally, try to use an ingredient multiple times in the course of a week to save money. • Creatively repurpose leftovers Casseroles, soups and stir-fries can be convenient ways to repurpose leftovers. Or consider making a pork roast then shredding the leftover meat for tacos later in the week. Check out this recipe for a breakfast casserole using leftover bread and spinach that was approaching its expiration date. Preparing meals at home is a great first step to saving money and eating healthy. Incorporating these suggestions will only enhance your efforts and leave a little extra money in your savings.

Savory Breakfast Bread Casserole 2 T. Butter 1 large yellow onion – diced 1 package turkey bacon or turkey sausage 4-6 c. spinach leaves, washed and drained 2 ½ c. milk 8 large eggs (or small carton of egg substitute) 2 T. Dijon mustard ½ tsp. salt ½ tsp. ground black pepper 6 c. day old whole grain French bread torn into 1 in. pieces 2 c. shredded sharp cheddar 1 tsp. dried thyme 1 tsp dried rosemary • Prepare 9x12 baking dish with non-stick cooking spray. • Melt butter in large skillet over medium heat then add onion and cook 3-5 minutes until translucent • Cut bacon/sausage into small pieces and add to skillet. Cook through • Stir in spinach and sauté until it is wilted • Remove skillet from heat • Whisk milk, eggs, mustard, salt and pepper together in large bowl • Add the bread and stir to coat • Stir in bacon, cheese, thyme and rosemary and then pour into baking dish • Cover and refrigerate for at least 1 hour or overnight • Preheat oven to 350 degrees • Twenty minutes prior to baking, remove dish from refrigerator and bring to room temperature. • Bake bread pudding for 45 – 50 minutes Remove dish from oven and let it sit 5 minutes before serving

ong before the arrival of the Coronavirus and quarantine protocols, Tricia Henderson was providing a week’s worth of tasty meal prep products to customers looking for a healthy and convenient way to manage their home dining options. “People were looking for that kind of option,” said Henderson, “Prepared meals that are ready to go in the microwave, and you’re eating in two minutes.” Henderson started offering meal prep three years ago while she was also operating the popular Two Olives Restaurant, inside the Old School Building. Hit Meals initially catered to people looking to keep track of calorie and macronutrient counts. Henderson says their initial success was a blend of precise measurements and a delicious menu. “In the beginning, we were concentrating on great food that met specific calorie and macro needs,” said Henderson. “That just took off quickly. But here lately, people have been asking me for more comfort food items to choose from, so we’ve added a specialty item each week.” Some of those specialty items include baked ziti with green beans, chicken piccata, low-carb chicken enchiladas with black beans and rice, and steak with demi glaze plus green beans and red potatoes. Also back on the menu for those familiar with the Two Olives days: the restaurant’s wildly popular chicken salad. “People really love it,” said Henderson. “They aren’t anxious about the details on the comfort food items, especially the chicken salad. A lot of people just order the chicken salad because it comes in a 24-ounce size.” Henderson said she made the move from operating the Two Olives Restaurant to only serving Hit Meals in the wake of losing her mother. It was a difficult decision, but once she considered family time, she realized she needed a way to create more balance in her life. 36 | MOORE MONTHLY | MAY 2020

“I was working seven days a week and only saw my family when they came up to visit,” said Henderson. “When my mom passed away, I decided that I was going to change things up and make space to spend time with family.” Henderson posts a new menu every Monday on hitmealprep.com. She and her team accept orders on every day except Sunday. If you order on Monday, Tuesday, or Wednesday, your orders are available for curbside pickup or delivery on Friday evening or Sunday afternoon. If you order on Thursday, Friday, or Saturday, your orders can be picked up or delivered on Monday. Customers can pay over the phone or online with PayPal. “Right now delivery cost $5 for addresses within the 73160-zip code,” said Henderson. “If you live outside that area code delivery is $10. Our Sunday afternoon delivery is free right now because we’re trying to help those folks that just don’t want to get out.” Henderson says that, like so many other businesses around the area, she’s taken a hit from the current “shelter at home” situation. But despite seeing a drop-off in business, she’s been able to weather the storm. “I’ve been lucky because there are enough people who want those healthy, ready-to-go menus that we’ve been able to get by so far,” said Henderson. “And I think a lot of people want to support a locally-owned business like mine and others who make such a difference in the Moore community.” And that’s the main thing that Henderson hopes people will realize about Hit Meal Prep: it’s locally-owned and providing a constantly-changing menu filled with healthy and comforting choices in an uncertain time.

INSTRUCTOR: Stacia Becher, CPT The City of Moore is happy to offer the Fitness in the Park series. Join us for group fitness classes all while enjoying our beautiful parks. We will begin the series by offering a fun and challenging boot camp at Buck Thomas Park. The “Fun”damentals boot camp will push you to your limits by focusing on fun drills, including plyometrics and agilities, and challenging intervals of strength training and cardio. “Fun”damentals boot camp is for anyone who is looking to lose weight, get stronger, build muscle, or train for your next 5k. MAY 2020 • THE STATION SCHEDULE RUNNING CLUB

WHEN: Club will start the week of May 25th and meet 2x a week until the Moore War Run on August 28th. WHERE: Central Park, the Station, and other City of Moore Parks. DAY/TIME: Tuesdays and Thursday at 6am and 6pm FEE: $50 for passholders for the entirety of the club, $60 for non-passholders. Running Club - Interested in perfecting your running performance? Want to experience a community exercise group? The Station is excited to offer a social running club during the summer! Spend three months perfecting your running form and getting geared up to run in the Moore War Run in August. The club will be instructed by certified and experienced running professionals and will take place utilizing the city parks and walking tracks! Registration will open May 1st and close on May 22nd. YOU MUST COME TO THE FRONT DESK AT THE STATION TO REGISTER. We will be hosting a team for the Moore War Run, but participation is not required for Running Club. Walking options also available. After registration, participant will be invited to a private GroupMe with club track locations, schedule, and trainings from coach. Social distancing: this program will meet outdoors with plenty of room to social distance while running.

MOMMY AND ME WHEN: Classes will be offered M/W/F in the mornings staring June lst at 7am. REGISTRATION: Registration will open on May 13th, separate registrations are required for each month. FEE: Free for Passholders with registration, $40 per month registered for non-passholders . * Registration will remain open for sign-ups mid-session, but fee will remain same and not pro-rated.* * Mommy and Me will only be offered for the months of June, July, and August.* Mommy and Me -A small group exercise experience designed to help mom’s bond with their babies in a fitness and health based setting. Located in the city’s parks, Mommy and Me will focus on exercising safely with baby. The exercise class styles will differ on a daily basis from cardio, strength, barre, and yoga. Specialty days will introduce a female health specialist on pelvic, abdominal, and post-natal focused exercise. Registration for the class will include a 1-month pass to a private GroupMe with schedule of classes and instructors, city park locations, and exercise formats for mom and baby. Social distancing: this program will be maxed at 10 registrants to allow for proper distancing.

Are you curious as to how nutrition will play a role in losing weight or helping control diabetes? This monthly class can answer all of those questions and more! Join a Registered Dietician and learn the basics about nutrition. In this free class, you will learn about the fundamentals of a healthy diet, gain some insight into how you can change what you consume to meet your goals, and have the opportunity to ask the Registered Dietician any question you might have. These classes will help athletes enhance their balance, coordination, speed, agility, flexibility, and overall performance on and off the field of play. Sports performance classes will help those who want to be a better all-around athlete for any sport by making movements more efficient and by working on joint stability along with all other facets of athleticism. Athletes will not only perform better while playing but sports conditioning has been proven to prevent or decrease injuries and create a more well-rounded athlete.

Over this four-week course, students will learn to train their eyes and draw different objects and shapes from life. This course is perfect for anyone who hopes to practice the fundamentals of drawing. We will cover sighting, massing, value, contour drawing, and more!
