KENNETT SQUARE HAS good taste from the time i was very young, I watched my cousins
harvest and plow our family’s land. I studied the dry stalks falling, churning in the combine’s spinning teeth. During the summer of my fourteenth birthday I went to work at a research corn farm. My job was to cross-pollinate the plants to ensure the finest feed corn. My co-workers and I walked silently and endlessly through rows straight as soldiers, the leaves wet and razor sharp. At night I itched endlessly, the thin slices on my arms infested by the golden pollen I was supposed to trap in bags. This, my first and last agrarian experience, was the hardest, most exhausting job of my life. I was born into a farming family with a disposition more equipped for thought rather than physical labor. Kennett Square is hardy with agriculture. In 1890, William Swayne brought over mushroom spawn from Europe and is credited as the father of mushroom farming. While Kennett Square is the mushroom capital of the world, many other farms exist to bring locally sourced products to the table. The restaurants use fresh eggs, berries, cheeses, and beef— all from the local farms that frame the area in unprocessed nutrients. Kennett Square is full of flavor. Each farm and restaurant is unique. Each taste is authentic and diverse. The spirit of central Mexico is in cilantro, guacamole, and tamales. Look and you will find me sitting in front of La Michoacana Ice Cream with a scoop of corn ice cream. Savoring the taste of sweetness, I will remember walking in the fields and my limbs will tire instantly. As Dwight Eisenhower wrote, and I well know, “Farming looks mighty easy when your plow is a pencil and you’re a thousand miles from the corn field.” We are thankful to all the Kennett Square farmers who patiently nourish and grow goodness. For all the restaurants that collaborate to keep freshness and natural beauty at the forefront, we’re pleased to reap the delicious rewards of generations of hard work. Here’s to the seasons of our lives as we grow and mature—and embrace what we value most about food, about substance. Enjoy the thoughtful tastes of summer. With appreciation and admiration, Allison Snavely-Villano Meet the entire creative & talented team who make Fig® possible at figkennett.com

“ You don’t waste talent. You don’t take gifts and ignore them —you apply them.”
giving back: LEON SPENCER leon spencer is a man who cares. Every day he works to preserve
the integrity, stability, and beauty of Kennett Square—believing that community service and cooperation measure progress. “I want to be a part of the community in which I live. If I have some skills and abilities to enhance where I live, then it’s important that I not sit back and wait for someone else to do that,” he says. As the former mayor of Kennett Square and head of the school board, his current responsibility as president of

the borough council unites his experience in government and education. He praises the local police department, after-school programs like The Garage and After-TheBell, and small business owners. Individuals play a critical part in the success of a community. “That means that we not only are looking out for each other from a wellness standpoint. We have to have the fruits of the spirit. We have to be kind. We have to be gentle. We must be patient. We must be respectful.” Leon lives accordingly.
Leon teaches voice lessons at his music school, Pro Musica Studio and performs with his R&B band Goodfoot. “You take the gifts of talent that you have, whatever those talents are, and you apply them in such a way to be beneficial to others. That’s who I am. That’s what I do. You don’t waste talent. You don’t take gifts and ignore them—you apply them. I’m not a great guy. I’m just an involved guy—that’s the difference,” he says with a smile. Learn more about Leon at promusicaweb.com.

PICKS summer loving I would be an awful candidate for a year on a desert island. I just need way too much (impossible) stuff. Oysters, coffee, green tea, chocolate, the perfect wine glass, favorite pillow, lots of chickens, a cheese cellar, and of course a field of heirloom tomatoes. The tomatoes I cannot live without and, perhaps, is one of the many reasons I live in gorgeous Chester County and not on a desert island. Come summer, we first see teeny sweeties and then green tomatoes galore and then our own beloved Brandywine. A few weeks in, every variety on earth shows up. The Kennett Farmer’s Market is itself a veritable field guide to tomatoes. We have tomato
master Tim from Happy Cat— a seed and plant expert. Grower’s galore from SIW, Rootmass, Londonvale, Rambling Roots, Flying Plow, and Shadygrove Greenhouse stands for the tastiest market heirlooms. Once you’ve brought it all home, why not have a tomato-themed potluck? Everyone can bring their favorite tomato recipes— from their grandma’s aspic to tomato watermelon agua fresca. Fun for grown-ups and kids alike: DIY tomato tasting! Drum up your own rating system, come up with alternative names—the sky’s the limit for creativity when it comes to the diverse world of heirloom tomatoes.
Start with this recipe on your Kennett Square tomato journey. Then, stop by Talula’s and tell me where else you’ve gone.
fried green tomatoes In a deep, trusty cast iron skillet heat 2 inches of safflower or peanut oil. Set up three separate wide, shallow bowls of flour, eggs, and breadcrumbs. Dip 1-inch firm green tomato slices in each item. Fry those green tomatoes at 350— until crisp! Transfer to a paper bag or towel and drain and season with lots of salt and pepper. Serve with a smear of mayonnaise and a squeeze of lemon or any of Talula’s Table fantastic salad dressings. (Shoot— two more things I need on my island!) Get your own recipes out. This summer is going to be juicy!

Meet new local businesses that add to the texture of our thriving borough. Look for our Fig® Fresh Faces in every issue.
fresh face: NOMADIC PIES eat more pie! is the unofficial
tagline of Nomadic Pies. There’s something enticingly comforting about the smell of freshly baked pies—the scents of cranberry apple, cherry, and chicken potpie wafting through the air. The smell is irresistible. The taste is even better. The newly-opened pie shop found its first devotees when it started as a food truck in May of 2012. Customers discovered Nomadic Pies at farmers markets, weddings, and catered events.
“I’ve always been interested in food, cooking, and baking,” says 26-year-old owner Molly Johnston. “I remember the first pie I ever baked. It was a blackberry/ raspberry pie that had been on the cover of Bon Appetit probably in 1994. It was the best thing I ever ate and so every weekend I would bake a pie.” Molly and her staff achieve the taste of home cooking in each and every bite of sweet and savory pies and quiches because of fresh, locally sourced ingredients as well
as keeping the sugar to a minimum and using coconut oil to get a delicious flaky crust. The charming rustic elegance décor and her friends’ homemade retail items for sale make the space even more welcoming. “Every day friends stop by and I see people I know. I love being in this space,” she says. Looks like Nomadic Pies has finally found its home in Kennett Square. Look for the Nomadic Pies truck this summer. Call or visit the shop for catering events, weddings, and special orders.

Meet new local businesses that add to the texture of our thriving borough. Look for our Fig® Fresh Faces in every issue.
“As a chef and restaurant owner, I need to think about my customer’s health. There’s no reason why you can’t make great food and have it be healthy,” he says. Make dinner a breeze this summer with grill-ready meals! Learn more and view menus at chefatopia.com.
fresh face: CHEF-A-TOPIA The Market at Liberty Place has found its eighth merchant—and it’s a fresh and delicious option for Kennett Square residents. Chef-a-Topia is owned and operated by Chef Raymond Maxwell, Jr., a renowned chef with more than 25 years of experience. He’s also the co-owner of the Fire Hill Pub in Kennett Square—an American gastropub that pursues an ever-changing, ever-evolving neighborhood experience. Chef-a-Topia is designed for the person on the go who desires a fresh, healthy, balanced meal
in a flash—for a great price and a hearty portion. Each gourmet to-go meal is professionally prepared by a chef and similar to what a farm-to-table restaurant would serve, but offered at half the price. Customers can expect to pay $8-$17 for an entrée which includes a seasonally fresh side. Each meal is ready onsite for the customer to purchase and take home. Meals come in oven-ready, environmentally friendly packaging and are ready in about 15-20 minutes. Favorites include smoked baby
back ribs, lamb chops, as well as steak and seafood. Both vegetarian and gluten-free diners can enjoy the vegetable lasagna or Chef Ray’s noodle bar—available both to go and to enjoy at The Market. “It’s very fresh and vibrant in color— but also very fulfilling,” he says. “People eat with their eyes,” he says as he references the medley of nutritious green, red, and yellow vegetables. Choices include seafood, vegetarian, roasted pork, and smoked chicken with glutenfree rice noodles or traditional udon noodles.

Noelia Scharon Co-owner
authentic: NOELIA SCHARON love is ice cream—and Kennett Square has been in love with La Michoacana Ice Cream since 2003. “Before I opened the shop, I worked in the payroll department at a mushroom company,” says Noelia Scharon, one of the four owners who followed her dream of being a small business owner. That dream started on a trip to Mexico to visit her family. One of them owned an ice cream shop. “I just loved the ice cream and asked if he would share his recipe because I couldn’t find anything like it here in Pennsylvania.” 30 figkennett.com
He not only shared the recipe, he taught her how to make it.
paletas, paletas de leche, and consuellas (popsicles, creamsicles, and sundaes).
Twelve years later, they still use that recipe and have grown from eight flavors to dozens. “The corn ice cream is the number one seller. But people also like other flavors like avocado,” she says. “Try sprinkling cinnamon or chili powder on top. It adds texture and layers of flavor.” Aside from the fresh fruit ice cream that’s all made on premises, dairy-free options include water ice made with real fruit—like chunks of natural mangos and limes. Those with nut allergies can enjoy push-ups. Customers also love colorful, flavorful
“My favorite flavor is strawberries and cream,” Noelia says as a group of children rush into the store and start pointing, smiling, and tasting samples. “I’m very glad I chose Kennett Square, not just because I live here. We have had the support from the community—and that has made all the difference.” Celebrate national ice cream day on July 20th! Visit La Michoacana Ice Cream at 231 East State Street in downtown Kennett Square.

COMPREHENSIVE, QUALITY HEALTH CARE NOW IN
SOUTHERN CHESTER COUNTY Penn Medicine Southern Chester County, the beautiful, 72,000 square-foot medical building opening this June, may be new to the area, but the expert care and service provided by its tenants have deep roots. For more than 25 years, John Daghir, MD, David Rooney, MD, and Nurse Practitioner Judi Gawlikowski have cared
PENN MEDICINE SOUTHERN CHESTER COUNTY ROUTE 1 & ROUTE 796, WEST GROVE 800.789.PENN (7366)
for the growing families of southern Chester County. As the community grew, so did the demand for the excellence and compassionate care provided by this group. This led to the addition of Richard Haug, MD and Karen Baird, MD. Now known as Penn Family Medicine Southern Chester County, this primary care practice will set new roots on the main floor of the exciting new facility.
Also relocating from nearby is the Penn Ob/Gyn Southern Chester County practice and Chester County Hospital Laboratory Services. Complemented by the addition of Chester County Hospital’s Radiology services and the Center for Physical Rehabilitation and Sports Medicine, this building will be a one-stop-shop for residents of southern Chester County. The specialty services of ophthalmology, orthopaedics, cardiology, gastroenterology and otolaryngology will be opening in the coming months and are complemented by a state-of-the-art surgical center. And, should you be in need of more acute care and/or hospitalization, Chester County Hospital, the newest member of Penn Medicine, is a quick drive up Route 1 to West Chester. Specialties include:
Services include:
• Primary Care • OB/GYN
• Laboratory • Physical Therapy
As Chester County Hospital President Mike Duncan explains, “Many of the patients who utilize ancillary and inpatient services of Chester County Hospital are residents of Southern Chester County. With this population growing, Penn Medicine Southern Chester County allows individuals and families to be seen locally in one convenient location. We anticipate this will make a positive difference in the lives of patients living in this part of our region”. Penn provides you convenient access to the region’s finest medical services so you won’t have to travel far for expert care that’s centered around you. Why? Because, your life is worth Penn Medicine.

social mission At Fig® we believe in the power of a community that works together to identify needs and find solutions—one that creates community connections and is passionate about helping its neighbors. We believe in the mission of the United Way of Southern Chester County—our 2015 Social Mission Partner. Please consider giving to them with your dollars and your time this spring.
LIVE HERE? GIVE HERE. STAYS HERE.
the bulk of our donors’ gifts are put to work in our community addressing crisis intervention. Gifts to United Way help our residents struggling with hunger, keeping a roof over their heads, and living with adequate heat and electricity. We also fund programs providing services to crime victims or those suffering through domestic violence. When our neighbors need help, they can reach out to United Way-funded programs and receive immediate assistance. This year, more than $450,000 is being funneled into local crisis intervention programs.

The heart of a community is in its care for less-fortunate neighbors. Our “heart” is strong! When in need, reach out! There are programs and people who can help. It’s as simple as calling United Way (610.444.HELP). Carrie H. Freeman, CEO

Conventional mammography takes images of the breasts from two angles. In 3D mammography, the
scanner moves in an arc over the breasts, taking images from various angles to produce sharper, more detailed images. The benefits of 3D mammography include: • Reduction of call-backs.
• Greater accuracy in pinpointing size, shape, and location of abnormalities. • Possible detection of more invasive cancers that cannot be found with 2D mammography. Schedule your potentially life-saving appointment today.
