What do you think... good food just grows on trees? It does, obviously. As it does in the ground, especially that of Lancaster’s fecund farmlands, the hallmark of a county not yet paved over. But it also grows from our city residents’ modest plots in Lancaster County Park; from average citizens collaborating with local farmers to keep their small, but highly sustainable and responsible, operations alive; from dedicated city restauranteurs and food vendors who consistently use locally grown and sourced products; from folks going to market, stopping at farm stands and pausing to reflect on the implications of what they’re buying at the grocery store. Ultimately, our good food is growing from the consciousness of a community that is thinking more and more about its role in the unique and exceptional foodways of Lancaster. And it takes darn good taste to recognize that our good foods taste even better when we come together as a community, effectively making the cycle a uni-cycle, with the cooperative and very appetizing mission of protecting our local economy; our family farms; our families’ health; our environment; and of course making, eating and sharing a whole lot of exceptional food in the process. And we can easily do it, because Lancaster has good taste. In spades. (The dirtier, the better.)

IT’S IMPOSSIBLE NOT TO FEEL ALIVE AT CENTRAL MARKET. We inhale the warm scents wafting from honey wheat bread, smoked sausage and steaming coffees and then exhale cheery greetings to our friends — old and new — stocked with us in the aisles. We know we can be at only one place. And as we gaze past rows animated by gladiolas, strawberry rhubarb pie and greenery, we’re already dreaming how it will all look and taste on our own tables. kate foust likes to sing things that people can’t always say. And she insists on looking them in the eye when she does it. “When I sing, when I play, I don’t hold anything back,” describes the lead singer of indie soul band Lady. “That’s what fans want: to hear people emote with no pretense. That’s why they keep coming back.” Lady is indeed an invitation. But as Kate explains, it’s a challenge at the same time. A chick band it is definitely not. Comprised of mostly “dudes,” Kate throws out the term “ballsy.” But just as Lady plays both Philadelphia and Lancaster, there’s a balancing act musically, as well. It can be prim and proper, or bawdy and wanton; simultaneously coy and intense; or as conceptual or non-conceptual as listeners want it to be. Overall, though, it’s empowering. “People get turned on by the energy we’re bringing,” she says excitedly, “and that’s all I really want.” As the band Kate feels is at last perfect for her, the five want to make the best new record possible. Anticipating a fall release, Lady’s new album is actually two EPs (Me and You). In effect, it’s a “big sucker punch,” Kate laughs, a way to set the table with all those built-up love songs — songs born from an incremental growth in personal relationships. They’re not ballads. They’re very dance-y. And more, Kate poses, about exploring the “emotional implications of opening yourself up.” “The way Jim slams his head; the way Liz shreds her violin; the way I sing: it just never gets old.” Nor does it for Lady’s fans. “WE’VE BECOME DISCONNECTED WITH FOOD.” Eastern Market director David Fraile sets the issue on the table succinctly — no side dishes. But considering most Americans eat three meals a day, a troubling paradox emerges, with each bite supporting a particular type of world. Whether that world is a local food system, or a sprawling industrialized one, is controversial. From alfalfa sprouts to Zebra Cakes, just where does our food come from? And more vitally, where is it taking us?
Lancaster Farm Fresh Cooperative General Manager Casey Spacht has thought about this issue a lot. “We’re told we need to buy certain foods,” he offers, like expensive artificial tomatoes year round. Large corporations research the colors, the shapes, the scents that lure us. Do we have to capitulate? “No,” he insists. We can buy what’s in season, right here. David agrees. The Eastern Market director does admit, though, that it can be all too easy to swallow what supermarkets and advertisers feed us. He cites the misleading imagery that many invoke. “Greenwashing,” he dubs it. Rolling fields. Animals grazing on farms...In Lancaster, we are fortunate enough to claim all of the rolling fields and grazing animals that these marketers so covet. Here, it’s much more than a package, however. Here, it’s about a different kind of marketing: Central Market and Eastern Market, for starters. Even so, the narrative of food is sometimes overlooked. Take CAFOs (concentrated animal feeding operations), for example. The animals are treated horribly, “like objects,” David laments. But the public does have a choice; they can opt for those local farmers who use animal practices fairly. There are many right in our backyards, where the animals live with dignity, David explains, where “they have dirt under their feet.” And ours is a county that boasts a long history with dirt. “There’s lots of pride in Lancaster about our food,” recognizes David. So it’s not surprising that the narrative, here, increasingly includes words like sustainable and organic. Describing the popularity of community supported agriculture (CSAs), in which participants compensate local farmers in advance for a season’s worth of fresh, discounted produce, Casey says excitedly: “It’s a great trend.” Today, 75 farms in our region belong to co-ops. There were only 9 in 2006 when Casey and others met for the first time, fittingly, in a barn.

As for large industrial farms and their monoculture planting, genetically engineered foods, damaging pesticides and shipping of foods country-wide via fossil fuels? Yes, it can be a disheartening cycle. But nonetheless a cycle — one that always has an upswing, a time to strike. And it’s happening. Communities everywhere are seeing this system as just not sustainable. And even though David estimates that 99% of our food still derives from this “system,” when we buy locally, we vote with our food dollar. Linda predicts that for any community to cycle completely, though — to no longer be a part of the system — will be a lengthy transition. David is more immediate in his prophecy. “Right now it’s optional,” he concedes. “Soon, it will be inevitable.” In the meantime, we can all begin to question: Can it be better? Can it be more? Lancastrians know absolutely that it can. This is why we stop at farm stands, look for the Buy Fresh Buy Local stickers on our foods, review their innovative “Food Guide” to determine the encouraging number of restaurants and food vendors here that consistently use locally produced and sourced products. It’s why we know in our hearts — and in our bellies — that the farmlands that may sometimes seem to hem us in couldn’t be less confining. Yet whenever the word “trend” is posed, it can be tempting to think transient. Linda Aleci from Buy Fresh Buy Local wants to make sure people understand that this does not apply to local consumers. “I think it’s important to be clear that it’s trendy for whom?” Maybe for some food-related businesses and how they conduct their marketing, she suggests. But not for consumers. “This is where the energy is going on.”
