LANCASTER

We’re all about fresh here at Fig®. Fresh ideas. Fresh destinations. And, of course, fresh food. This is Lancaster, after all—a sophisticated urban center with unbreakable ties to the County. Just beyond the city limits, endless rolling hills stretch in an agricultural patchwork as far as the eye can see. Countless farmers dig into Lancaster County’s esteemed soil so that we can dig into the very best local dishes every day. With so many amazing raw materials at their fingertips, it’s no suprise that more and more city restaurants are choosing to use local ingredients. In this issue, find individuals who have devoted their lives to creating agrarian products of national repute, families that have passed down knowledge through generations and restaurants that put local ingredients to good use. Learn more about Lancaster’s food culture in our new Fig Foodie Guide at figlancaster.com. FRESH IS REFRESHING Can’t stand the heat? Take a walk down the shady side of the street to Lancaster Central Market. When the whitehot sun makes slaving over the stovetop seem less than agreeable, it’s time to return to that summer staple: the salad. Fresh just gets better in the summer time. Raw ingredients burst with flavor—no flame needed. Vine-grown organic tomatoes have ripened to a flavorful perfection. Cucumbers—cool and crisp—offer simple refreshment. Toss it all together with some locally-crafted goat cheese and a simple vinaigrette and you have a meal fit for hot afternoons and shaded city porches. An urban island in a sea of farmland, the city’s foodways are forever tied to the agrarian culture of Lancaster County. Where else in the state—or the country, for that matter—can you find Amish farms within the same geographic heartbeat as an arts college, an opera company and a dynamic downtown spirit?

JEREMY HESS PHOTOGRAPHERS / JH

So today we raise an ice-cold glass to you, the farmers of Lancaster County. Your heaven-sent fruits and veggies make the sultry city heat more than tolerable.

“Founded in 1797, our 6th generation farm has been a part of Lancaster’s heritage over 200 years. We’ve always had a family goat. Andrew started making cheese in the kitchen for our family 25 years ago. We perfected our craft and in 2008 we became certified cheesemakers by the state of PA. Cheesemaking allows for artistic expression and is perfect for our family farm lifestyle. Excellent cheese starts with high quality milk, which comes from our commitment to taking good loving care of our goats. We know all of our 78 milking goats by name.”

“What most people in our area do not realize is that we are not a “Cool Climate Region” like the Finger Lakes. We receive 3000-3400 Heat Units, which is warmer than many of the coastal growing areas of California like Sonoma Coast. Our continental climate has the same latitude as many significant wine-producing regions in Europe. Our soil composition, weather patterns and terroir have many close similarities to parts of central France and Italy, specifically the Burgundy and Piedmont regions.” How does the City of Lancaster connect to the agrarian culture of the county? “ The city does a great job of

supporting the agrarian culture through farmers’ markets, co-ops and local produce stands. Now Lancaster needs to be recognized as a wine grape region — just venture out to the country and visit a real wine-producing vineyard, taste wine from an estate producer and realize the potential of our terroir.”

Jan Waltz, Owner of Waltz Vineyards

what sets waltz apart from other wineries? “Our wines are “Estate grown,”

which means that they are grown, made and bottled right here at our vineyard.” Ask for Waltz wines at John J. Jeffries, Carr’s and Log Cabin or visit our tasting room in Manheim.

the world because of their rich, fertile composition and long growing season (over 210 days). This allows us to produce fruit and vegetables with optimum ripeness. We benefit from an average of 40 inches of rainfall each year, which keeps the soil moist enough to thrive without continuous irrigation. Our site in particular has Beddington Silt Loam soil, which is comprised of 70% shale so that if the rainfall is too intense for our vinifera grapes, the shale component promotes excellent drainage and pulls water away from our vines.”

FOOD in the

RAW

KHARRAN CATTELL,

Lemon Street Market

“Lancaster City is a food haven for organic farming bounty, wild edibles and many creative people who are able to prepare meals from nutrient-rich foods within a few miles of the city limits.” Casey Spacht,

Lancaster Farm Fresh

“Sharing a meal is one of the most intimate moments of our daily lives. Bringing an abundance of fresh, local food to the table, along with knowledge of the people who worked to produce it, makes this experience immeasurably richer.” Kathlene C. Sullivan,

Fig® Blogger

“It started in 1730 and continues today, the best of the County is brought into the City by those who grew it, raised it or made it so that all of us can share in the bounty of the nature around us.” Jessica Mailhot,

Lancaster Central Market

THOUGHTS On FOOD from local food experts

“You are what you eat! Remove the veil, learn the source of the food you eat. Join the movement — buy nutrient-rich foods, grass-fed meats, local and natural ingredients, and get back to pure!” Gina D’Ambrosio,

ALL PHOTOGRAPHY BY JEREMY HESS PHOTOGRAPHERS

“All animals should have happy lives, running free, not in cages. They should eat grass, seeds, worms and yummy berries. People should not put poison in animals’ food or our food. We should thank animals for sharing their bodies to be our food.” Willow,

age 5, daughter of Gina D’Ambrosio

“Lancaster food is the real deal, goods that ignite all the senses. Delight in the vibrant orange of the egg yolks, the crunch of a radish, the fragrance of a fleeting strawberry and the honey-sweetness of that perfectly ripe peach.” Betsey gerstein Sterenfeld,

Essen

“My grandmother’s kitchen was where I first learned the pleasure of turning basic, farm-fresh foods into culinary wonders. The continued abundance of locally-grown food inspires me today to create new recipes and share them.” Ann Fulton,

Fountain Avenue Kitchen and Fig® Blogger

In large cities like New York and Philadelphia, using produce from Lancaster is a major selling point. The words “Lancaster County” at the foot of a menu signify quality and integrity. And we’re blessed to have all this free-range, organic and homegrown abundance in our own backyard. Across the city, restaurants are taking advantage of these resources from our surrounding countryside. If fresh is best, you’ll have to travel far to find a city with greater raw materials at its fingertips.

ON THE FOLLOWING PAGES, MEET THE CHEFS AND restauranteurs who ARE MAKING IT HAPPEN.

“Food is an adventure. It defines and bridges cultures, delights the palate, improves health and well-being. Questioning where and how our food was grown and how to cook it is easy in Lancaster City; people here love talking about food.”

Thoughts on food from Chef Brad Beamenderfer: How have the tastes of your customers changed throughout your career?

“I’m starting to see (slowly, mind you), people becoming more open to new foods and ideas. It means a lot to me when I get a compliment from a customer and they tell me they had never tried that item before.” PICTURED :

Thoughts on food from Chef Andrew Aho: What is a POUR dining experience?

POUR offers a unique opportunity for Lancaster’s diners. Our menu is structured so guests can create their own tasting experience or share that experience with friends. We offer unique plates that allow our guests to explore multiple dishes and create their own multi-course menu. I am also continually rotating dishes so that the menu stays fresh and there is always a new plate to explore. How does your style relate to Lancaster food heritage?

HOW DO YOU POUR? Explore our updated plates, wine & draft at pouronprince.com

“Growing up in Lancaster, I have been able to see first hand how much Lancaster has changed over the past 20 years. I like to take Lancaster classics, such as pot roast, and take it to a higher level, as well as add my own unique twists. In doing so, I am able to not only honor traditions, but push the boundaries of what our food is thought to be.”

Where does your inspiration come from? “Whether it’s hand-picked

mushrooms from the Pacific coast, fresh game meat from Minnesota and Wisconsin or the smell of ripening tomatoes as I walk through the fields at Sweet Annie’s Produce, nature provides all the inspiration that I need. It is my responsibility as a chef to honor my ingredients by highlighting their unique textures and flavors.”

What does POUR bring to the Lancaster dining scene?

“POUR brings an intimate urban dining experience. Our menu is built for social interaction, as well as the ability to experience unique wine, beer and cuisine from around the world. Ultimately there is no wrong way to enjoy your time here... simply arrive with an open mind and enjoy the experience.”

Thoughts on food from Head Chef Yves LeNair: Tell us about your first memories in the kitchen. “I began cooking at the

age of 13 in Brittany, France — the northwest coast. While cooking at my first restaurant, I lived, cooked and slept on site — no time off. The head chef taught me how to use a knife blindfolded and I often went to sleep with my hands bloodied. Needless to say, I’ve learned a lot since then!” What’s your favorite summer menu item? “ Gazpacho is the perfect

summertime food — one of my personal favorites at the Horse Inn.” PICTURED (L-R): Yves LeNair (head chef), Ken Medved (owner), Al Medved (owner), Lindsey Long (manager)

Thoughts on food from Chef Carl Vitale: What are 5 ingredients you absolutely can’t live without? “Every

kitchen needs a great extra virgin olive oil. From dressings to a light stir fry, it shows up in almost everything we prepare. And I’m always reaching for red chilis, basil and fennel. Choosing the right herbs and spices can make or break the dish. And I couldn’t live without garlic — notoriously pungent, it adds a great depth of flavor to dishes.”

What’s your favorite summer menu item? “We love sweet corn

right now. And tomatoes! Nothing says summer like biting into a juicy red tomato, ripened to perfection. There are a lot of unique heirloom varieties available right here in Lancaster.”

Thoughts on food from Chef Damion: What are 5 ingredients you absolutely can’t live without?

“Parsley, my favorite herb—it simply goes with everything. Butter makes it better. Scallops: enough said. It’s not an ingredient, but anything smoked. Last, but not least: peppercorns - black, red, white, green. It’s all good!”

38

How have the tastes of your customers changed throughout your career? “Healthier! People are now

watching what they eat, and more are starting a vegetarian or vegan diet. I think it’s great. Fewer carbs, more protien; oils instead of cream; wraps instead of bread. Gluten-free is also becoming a deliberate choice as well.”

FOOD FORWARD CHEFDRIVEN Thoughts on food from Chef Meghan Young: Was there any one person, event or experience that led you to become a chef? “My mother was

responsible for pointing me in the right direction. When I was young, I wanted to be a lawyer because I love to argue! But when my mom made food for our friends and church events, I enjoyed spending time with her in the kitchen, playing the role of sous chef. One day she said to me: ‘How about looking into this as a profession?’ The rest is history.” What are 5 ingredients you absolutely can’t live without?

“Chiles; fresh or dried, spicy or mild, it doesn’t matter. Seasonal fresh vegetables; again we don’t discriminate. Lard; It’s a 100% natural, non-hydrogenated, non-trans fat and it’s delicious. Cheese; All cheese—even American cheese has its place. Salt; it may not be PC to say salt, but food that’s not seasoned well is horrible. Over or underdone in a recipe, and it’s catastrophic. I wish more people paid attention to using salt correctly.” PICTURED : Meghan Young (co-owner and head chef of Characters)

AUTHENTIC Once a single, homeless mother herself, Jennifer lends an empathetic ear and a tough love heart to women who find their way to her Chestnut Street doorstep. “I am here to help women as others have helped me,” says Powell, who has served as executive director of Clare House for the past 10 years. “I look at their struggle through my own eyes.” As a young mother, Powell sought shelter and assistance from a variety of Lancaster’s social services. After returning to school and graduating with a degree in sociology, Powell answered a blind job ad that led her to the steps of Clare House. “This place is about new beginnings and second chances,” Powell explains. “This was my chance to help someone as others once helped me.” Since opening its doors in 1980, Clare House has grown to support 20 women and their children at a time. Much like her own life, Powell takes a no-nonsense approach to her residents’ recovery. “We have to help, not do,” says Powell, who says the average stay at Clare House is only four months. “It is important to empower women to be self-sufficient.” Classes in budgeting, wellness and job skills are part of each woman’s path to recovery.

“ This place is about new beginnings and second chances. This is my chance to help someone as others once helped me.”

After a decade with Clare House, Powell still feels challenged, connected and committed to the mission. “It means a lot to the women here that I did not learn my lessons from a book. I share my personal experiences and plant a seed. Hopefully that seed will blossom.” JOIN US AT THE 12th ANNUAL JAZZ FEST Friday, August 17, 2012 at the Lancaster Marriott. GET LOST IN ART Some people say that walking is a lost art. In a society that privileges convenience above all else, it’s easy to lean on the crutch of a car. But in an arts destination like Lancaster, with galleries just around every street corner, the car is just cumbersome. Tie on your walking shoes and take a stroll through the city this summer. Because Art is a journey—and when you’re in Downtown Lancaster, you don’t need to travel far to get there.

SUSAN J. GOTTLIEB Susan Gottlieb is a painter and a teacher. Her artwork focuses on cross-cultural mythology and symbolism. And her fascination with ancient culture takes her to the ends of the earth. Working in acrylic, graphite, oil and collage, her work is known for a vibrant use of color and texture. Landscapes, figures, still life and abstractions are translated into evocative symbolic compositions.

Known for her bright poppies, Christiane inspires us with images of landscapes, animals, portraits and florals. Christiane’s work will inspire you with her vibrant colors in oil, acrylic & watercolor or even a piece commissioned to match your vision.

VOICES : THE STRAY BIRDS 70

“The Stray Birds bring a unique maturity to their record, with a real reverence for traditional folk, and a refreshing sense of intimacy to their original songs.” —Helen Leicht, WXPN

LEARN MORE ABOUT THE Stray Birds at thestraybirds.com

PERFORMING LIVE Mosaic Presents: Hoots & Hellmouth The Stray Birds Mike McMonagle Saturday, June 9, 7 PM Fulton Elementary Theater

*

The Stray Birds discuss the importance of honoring their roots and the simple joy of playing and singing together.

*With advance purchase at the XPN Member price

Your songs are inspired by the deepest roots of American music—what draws audiences to this sound today? Maya: “People like to hear good stories in good company. When we show up with acoustic instruments and three human voices, we are creating a sound that is accessible, compelling and relevant.” How did the people and experiences of your childhood shape your identity as musicians? OLIVER: “By the time I was ten, I was able to play fiddle in the Craven Family Band with my parents and improvise on bluegrass and country music. Playing with my folks is my earliest stage experience. It’s something I don’t get to do often enough.” CHARLIE: “When I was four, I heard the song “500 Miles,” and I loved it. My dad got the tape for me and I listened to it like crazy. My dad is a bass player and inspired me to play. And I listened to oldies music a lot with my mother.” Maya: “I was surrounded by music. My family made an annual pilgrimage to Clifftop, an old-time music festival in West Virginia, and we had a lot of campfires all summer long.” Vocal harmonies play a major role in your songwriting; what makes the human voice a powerful instrument? OLIVER: “It is an instrument that we’re lucky to be born with, can play at any time, it’s free and every voice is unique. Charlie Louvin once said, “If a song’s worth singing, you ought to put harmony on it,” and we really believe that.” You do have a pretty intensive touring schedule —what’s your favorite thing about traveling? And what draws you back to Lancaster? CHARLIE: “We love tasting, walking and playing through towns we’ve never been to. Food is one of the best things about traveling. We can buy fresh and local in a new town every day. We are also the grateful recipients of some incredible hospitality along the way. We were all raised in Lancaster, and the one thing that will always draw us back is family. We also love our friends, Roots and Central Market, Long’s Park and the lightning bugs.”
