THE LANDSCAPE IS MARKED BY THE RESURGENCE OF LIFE with the return of warm weather. Greens seem brighter than ever before as leaves dance with the summer breeze. Flowers show their face with newfound vibrancy as they turn towards the sun. And the streets of West Chester come alive again. Around every corner West Chester eateries open their doors and bring dining outside so we can enjoy the summer where we’re meant to, outdoors. In this issue of Fig®, we’re excited to celebrate the best of West Chester’s food scene—from new life to old favorites.
The freshest faces in town, Baco Juice & Taco Bar, are opening their carry-out window to enjoy fresh air and serve you freshly squeezed juice, smoothies, tacos, and more. Our very own local brewery, Boxcar Brewing Co., is making a big move downtown into what was formerly The Note. And Kooma is still serving up some of the best sushi around, now at their new location on Church Street. Of course, there are the perennial favorites, too. D’ascenzo’s Gelato is celebrating three years in West Chester. Summer wouldn’t be the same without this sweet indulgence. And what about one of our favorite local markets, Carlino’s Specialty Foods. A summer lunch break is not complete without a stroll to Carlino’s for the tastiest take-away. Then there is Iron Hill Brewery and Restaurant—a cornerstone of West Chester, faithfully serving their award-winning local libations and handcrafted cuisine.
Summer harkens the arrival of fresh produce, and where better to go than the West Chester Grower’s Market on Saturday mornings, followed by a fresh-baked pastry at Yori’s Bakery just up the street. There are power couples, and then there is Kymberly and Jamie Robinson. You might want to call these two a superpower couple. As the CEO and brewmaster of Boxcar Brewing Co., Jamie and his former partner, Jason Kosher, have grown their homebrew business into a beloved local brewing company. As the CEO and owner of Stratus Interactive, Kymberly is an award-winning designer, webmaster, and most recently, recipient of the Gold and Silver Stevie® Awards in “Female Executive of the Year,” and “Female Entrepreneur of the Year.”
Come early fall, stop by Boxcar Brewing Co. for a familiar taste, maybe the 1492 American Pale Ale or a Mango Ginger India Pale Ale. Then, of course, try something new—a dish from their new menu or a pint from a featured local brewer. And when you see Kymberly and Jamie, make sure to share a toast to hard work, good beer, and the town of West Chester.
Now as sole owners of Boxcar Brewing Company, Kymberly and Jamie have plans to continue to grow both businesses. And although the digital marketing agency and brewery are seemingly different, Kymberly tells us, “There’s a synergy between the two companies, which both our businesses feed from. There are also a ton of similarities, we both strive to create top quality products and services for our customers and clients”
Having joined forces this past spring, they’re moving into what was formerly The Note and Blaze on Market Street. On one side, Stratus Interactive will continue as a fullservice marketing agency; on the other side, Boxcar will open a brewpub in addition to their brewery. They plan to serve a menu that features the craft beer you’ve come to love, local and non-gmo food, and all-natural products—from the sodas to the local produce. “We aren’t going to serve anything we wouldn’t want our daughter eating,” Jamie shares of their philosophy.
Their passion for local and appreciation for the community will spill over into the brewpub. “We love being part of West Chester,” Jamie shares, “and we want to get back to our grassroots origins.” Their hope is to install a small pilot system, where they will invite the local homebrew community to join

and calling out to racing cyclists whirling past. Restaurants move their dining outdoors, so patrons can enjoy libations in the heart of the festivities. The Iron Hill Twilight Criterium is a day full of excitement and adrenaline for all ages, from children to professional cyclists. As a part of the USA CRITS Championship Series, West Chester is known as having the smallest venue of the series—but the biggest turnout of supporters.
off the marquee event of the night in town, the professional cyclists race. As the Volunteer Director, Frank coordinates more than 150 volunteers to make the race happen.
From the volunteers who act as road marshals, directing pedestrian traffic, to those who check in racers, and even those who hand out water and sustenance to other volunteers, the day would not be a smooth series of excitement without them. Frank tells us, “We’re busy the whole time, starting at 1:30 pm when we set up the course, and finishing at 11 pm when it’s all done. It’s very exciting to be a part of. And there’s nothing like feeling the wind of the cyclists as they go by; it makes the hair on your neck stand up. It’s amazing.”
This day could not happen without board member, ride leader of the West Chester Cycling Club, and Volunteer Director of the Criterium, Frank Dulin. Now in its tenth year, the Iron Hill Criterium starts off with the morning Amateur Qualification Races at Rustin When the night ends, Frank’s work isn’t over. Club, Frank and the other members constantly help in other local cycling charity events. There’s Pedaling 4 Paws, the five-day five-hundred mile bike ride to Canada, the Cinco De Mayo race benefitting disabled individuals, the Challenge for Cancer Ride, and the YMCA of the Brandywine Valley Benefit Bike Ride (just to name a few). So keep your eyes out for Frank and his friends, cycling from one good cause to the next, making a difference in the community, and, stopping at Iron Hill for a pint of beer after it’s all said and done.

One summer day, you might be walking down Gay Street and notice a line of people wrapping around the corner. A SUSTAINABLE TOWN IS A SUCCESSFUL TOWN.
This is the belief that the borough of West Chester lives by on a daily basis as one of the most walkable and healthy communities in Pennsylvania. Whether through recognition as a Tree City USA town through the National Arbor foundation or from community programs such as the “Share the Road” campaign, West Chester has many key programs in place to ensure the long-term health of the community. West Chester Borough Leaders United for Emissions Reduction (BLUER) is an ad hoc committee within the borough that advocates for emission reduction. Through their advocacy and education, the borough has reduced emissions by 11% since 2005. This also includes launching a $14,685 pilot restaurantcomposting program through the EPA with Roots Cafe & Landmark Americana.
In addition to these programs, the West Chester BID manages a “Clean & Green” program that has worked with 200 community service workers over the past five years, totaling 5,300 hours of sidewalk cleaning. The program also oversees downtown f lower plantings and advocates for sustainable practices of businesses. The highlight of all of these programs is the addition of Big Belly solar trash and recycling cans throughout the downtown. Replacing the current public cans, these solar powered trash receptacles will act as a compactor and allow borough trucks to run less often and be more efficient. Partnering with the borough Public Works department, a $293,000 Chester County Community Revitalization grant, along with a $73,250 borough match, helped make this program a reality. Not only is this the first time the borough will offer public recycling, but it will also save the borough money while continuing to create a healthy community.

A LOCAL ICON BEHIND THE BAR After 40 years as a bartender, William “Billy” Guthrie still finds himself at the helm of a community bar. The latest is Teca, short for Paninoteca, an authentic Italian café and panini bar housed in a historic firehouse. Teca offers popular Italian-focused wine dinners (the “best bargain around,” as Billy calls it) and specials that might include fresh salads, grilled seafood, and whole Branzino filleted tableside. The bar Billy commands is the smaller of the two, with an intimate horseshoe shape that not only inspires what the Italians might call a “conversazione illuminata” with your neighbor, but also a jesting rapport across the bar. Center stage is Billy, who has perfected that special skill of making patrons feel at ease and everyone welcome, from locals who come four nights a week to a stranger

With a slight grin, he whisks a cocktail napkin onto the counter before you can say the word martini, all while maintaining that flair-for-the-job, look-nohands management style of those old-time bartenders that populate such bar-centric movies as It’s A Wonderful Life and Goodfellas.
Central Casting, “the type of places where you went in, and you’d find maybe a doctor and lawyer sitting next to an artist or a stone mason,” he recalls, “People get to talking and that doctor might say, hey, I live in an old stone house in need of some repairs and the stone mason would say, ‘I’m on it.’”
The bars he’s tended over the years—former Chester County landmarks like the Lion’s Share and La Cocotte—were reminiscent of
