welcome to summer Nothing celebrates summertime quite like a taste of the West Chester food scene. Within the heart of our historic town, international cuisine meets regional fare in a diverse range of culinary expression. In a community that supports and appreciates local, sustainable eating, this is the season to gather around the table with loved ones and experience fresh flavors at their finest.

Enjoy a meal under the stars at dozens of area restaurants that offer patio seating. Better yet, come early for happy hour and soak up the sunshine with a creative cocktail or locally brewed beer. (If you haven’t yet tried the mojitos at Limoncello, you’re missing out.) At Teca, dine al fresco and try a strawberry daiquiri paired with their ‘Pesce del Giorno’—fresh branzino filleted tableside. Expect to find new summer menu choices at many of your favorite restaurants. Stop in and surprise yourself with Social Lounge’s innovative dining options, or explore Iron Hill’s seasonal menu, including a selection of mouth-watering tacos. New menu items at Side Bar pair perfectly with their varied and extensive beer selection. The season brings a new location for popular sushi spot Kooma, which will branch out with a larger location on Church Street. Likewise, Roots Café will settle into the former Gilmore’s location, bringing farm-to-table closer to home with new dinner selections. For a sumptuous array of farm-fresh food, spend a Saturday morning at the West Chester Grower’s Market, where tender greens, crispy radishes, and colorful herbs and produce will add life to your table. The Artisan Exchange’s indoor Artisan Foods & Farmer’s Market is another Saturday must-see, offering a variety of handcrafted foods from local vendors. Community Supported Agricultural (CSA) gardens are in full bloom, with area growers such as Thornbury and Inverbrook Farms and Pete’s Produce selling shares in their harvest. Sign up to pick up a weekly portion of veggies straight out of the garden, or check out the farm stands at Thornbury Farms and Pete’s Produce for garden fare on the go.

Rachel Phillips Managing Editor, Fig® West Chester

The season wouldn’t be complete without the popular Restaurant Festival, which returns to West Chester in September and welcomes thousands of foodies to our area. What a wonderful way to celebrate community over great food and drink—making the art of eating well a truly delicious experience.

masterful craft In a town laden with restaurant gems, Éclat Chocolate is a shining jewel in the crown. Tucked into a tiny storefront on South High Street, Éclat offers a world-class chocolate experience with a stunning array of flavors in unique combinations.

M

ade with the finest ingredients, the largest selection of singleorigin chocolates in the midAtlantic region can be found right here in West Chester. The man behind this magic is renowned chocolatier Christopher Curtin. When not sourcing cocoa in Peru with New York’s premier restaurateurs Eric Ripert and Anthony Bourdain, you’ll find Christopher at work on another outstanding creation. With family in the area, Christopher was inspired to open Éclat in the center of town – close enough to Philadelphia, which is the largest cocoa bean port in the country. A local business with an international reach, Éclat has been operating on High Street for over eight years. “We’re happy in West Chester, and we have a great team,” said Christopher. “We want to stay local, stay in this location and produce.”

houses in Europe and Japan, sharing in “the greatest of secrets and techniques.” Though considered one of the world’s top chocolatiers, Christopher places emphasis on the importance of continuing to learn from the masters, and continues to spend time in kitchens with well-known culinary experts. Christopher attributes Éclat’s success to his “amazing staff,” a multi-cultural team of six internationally trained employees who continue to contribute to Éclat’s growth. “You know when you’re doing a good job,” said Christopher. “We want to be worldclass but approachable, see how good we can make something—ask ourselves how to improve upon what’s already great.”

A well-established family business, Artistic Eyewear was founded by Robert’s mother, Terry, 25 years ago in Israel. Now celebrating the 10th anniversary of their Doylestown store, Artistic Eyewear is expanding into the heart of West Chester, and they couldn’t be happier to be here. The Layman family believes in giving back, and each year Artistic Eyewear collects outdated frames to supply to Haiti and South America. Expect to see community involvement from them as well: Robert has plans to participate in West Chester’s First Friday events, and will soon hold exhibit space for local artists. Robert’s girlfriend, Holly, contributes her artistic vision with original art installations and specialty window design.

FR Nestled next to fashion mainstay Jane Chalfant, Artistic Eyewear has the feel of a gallery with bright, original art, while natural light and trendy music create an inviting shopping experience. “We fell in love with the West Chester community,” says owner Robert Layman. Artistic Eyewear provides a look and a price to fit the diversity of each individual who walks through their door. Their collection includes designer brands like Oliver Peoples and Paul Smith, Ray-Ban sunglasses, and an array of boutique eyewear from Europe. Robert credits his talented team, including Holly, Erica, and Tara, for their great care with clientele. Convenience is paramount too, since Artistic Eyewear edges lenses onsite to expedite delivery, and patrons are invited to bring frames home to test their new look. Free customer parking is available behind the shop, and the store is pet-friendly, too.

he Carlino family began to cultivate the finest fruits and vegetables and raise the healthiest game and livestock on the family farm in the sunny hills of Abruzzo, Italy, over six generations ago. Many of Carlino’s Old-World recipes

were developed in those kitchens and are still enjoyed today. Cured meats like prosciutto and soppresatta, sausages, sundried tomatoes, crusty breads, oil-cured olives, dried figs and olive oils, handmade pasta, sauces and sweets have outlasted the test of time and remain virtually unchanged. Today the Carlino family brings generations of commitment to the art of making wonderful food to the streets and homes of West Chester. This mixed-media mural titled “Transition Cycle” was recently finished by Rhoda Kahler at West Chester University’s E.O. Bull Center for the Arts. This exterior wall is 85 ft x 15 ft and is covered in handmade tile, mirror, broken shards, and paint. The mural is located on the Southeast corner of High and Rosedale streets.

“Opus” has a Postmodern aesthetic. It suggests a structured geometry, but closer inspection reveals a form that is less pure. Central to the piece is an imperfect red sphere. The sphere and the negative space around it are charged with energy and importance.

KRISTIAN HOLBROOK LIVES AND BREATHES CHEESE.

H

e rises early each morning to care for the sheep, cows and goats that provide milk for his seven soft and aged cheeses. He spends days making each wheel and each block by hand and producing grass-fed artisanal cheese that is winning national accolades—all on 75 acres in Chester County and with a tiny staff of five. It doesn’t get much more “farm-to-table” than this. Cheese-making was once a hobby Holbrook taught himself how to do when he worked as a chef, but now it is a career—one that takes equal parts skill, attention to detail, patience, and passion. Holbrook is so stellar at making cheese that in 2010 Urban Outfitters founder Richard Hayne brought Holbrook and his family to Chester County from Blackberry Farm in Tennessee to run Doe Run Farm and create a creamery on his private estate in Coatesville. Holbrook spent the better part of a year building Doe Run Dairy on the property quite literally from the ground up, from the barn to the fenceposts.

Doe Run Farms

Since it began producing cheeses in June 2011, Doe Run has captured the attention of customers and critics alike, including the Philadelphia Inquirer and the American Cheese Society. Even though the cheeses are shipped to customers nationwide and sold in restaurants and markets in Philadelphia, New York and Chicago, Doe Run maintains a strong connection to Chester County. Just look at the menus of the aWhip Tavern, Harvest Restaurant and Talula’s Table.

“We’re probably one of the few dairies on the East Coast as small as we are and making inroads in three species of milk and grass-fed, farmstead cheeses all made by hand.”

all-american cheese

Even Holbrook knows he’s got something uncommon with Doe Run. “We’re probably one of the few dairies on the East Coast as small as we are and making inroads in three species of milk and grass-fed, farmstead cheeses all made by hand,” he says. “It’s a special place.”

When we last met Dan Cellucci, owner of Roots Café, he was a fairly new restaurant owner. After almost two years of success, Roots is moving two blocks down to the former home of Gilmore’s (133 East Gay Street). His farm-to-table business is blossoming, and we can’t wait for what’s next.

what made you decide to move to a larger space? We loved our old location, but it was getting too crowded for what we wanted to do. With our new location, we can expand our seasonal and local food movement. A larger group can now enjoy our café, and we will also add a dinner component, which we desperately wanted to showcase.

We’d like to keep it casual but refined. We liked the quaint feeling of our old kitchen. This space, however, presents us with more prep area, which allows us to add even more flavor. Our breakfast will continue to be great, with additional Benedicts and duck hash as options. For lunch, we’ll keep some of our current offerings, but expand on the vegetarian concepts we had when we first opened. The dinner will include everything from Chester County cheese

n 1998, that neighborhood cornerstone was transformed into a fresh resource for greeting your neighbor and enjoying good food with the opening of Iron Hill, a restaurant and brew pub. Iron Hill maintains a strong presence in West Chester due in large part to the fact that co-founder Kevin Finn lives within walking distance and is committed to giving back to the town he calls home. You might spot Kevin on site at Iron Hill, or running with his dogs through West Chester’s cobblestoned streets. “It’s great to be part of such a beautiful, walkable town,” says Kevin. A beer enthusiast and active sportsman, Kevin helped found the very popular annual Iron Hill Twilight Criterium Bike Race, which happens every July. He was also instrumental in establishing Iron Hill’s “Give 20” program, which donates 20% of food sales to assist the fundraising efforts of local nonprofit organizations, such as the West Chester Food Cupboard. While there are now 10 different locations, Iron Hill’s West Chester branch is their culinary epicenter—all new menu items are tested out here first, right in town, from menu development to sampling seasonal additions like this summer’s selection of tacos. “We continue to evolve our brand in everything we do,” says Kevin. In terms of what comes next for Iron Hill in West Chester, Kevin plans to keep on doing the same—giving back to the community that has been so supportive of Iron Hill over the years. “We hope we will always be part of this vibrant town,” Kevin says.

Julia Child once said, “The only time to eat diet food is while you’re waiting for the steak to cook.”

N

ot too long ago, red meat and other high-cholesterol foods made regular appearances on the family menu. It’s only recently that we’ve learned how what we eat affects our health—and particularly our hearts. Now, more than ever, people are getting the message to read labels and choose wisely. Low-fat. Low-cholesterol. High-fiber. Whole grains. Food choice terms have now become a part of our culinary vocabulary. And for good reasons. Most people already know one of these reasons. High-fat foods cause cholesterol to build up in the bloodstream, which in turn causes plaque (fatty deposits) to form on the artery walls. This narrowing of the arteries, called atherosclerosis, can lead to a heart attack or stroke. A blockage can occur if a particle breaks loose from the arterial wall and moves into the heart or brain.

Adult Cardiac Surgery Database. The threestar rating denotes the highest category of quality, placing The Chester County Hospital in the top 10 to 15 percent in the country. And The Cardiovascular Center at The Chester County Hospital is one of only 11 hospitals nationally to be accredited for cardiac catheterization and percutaneous coronary intervention by the Accreditation of Cardiovascular Excellence, an organization dedicated to ensuring “At The Chester adherence to the highest quality County Hospital, standards for cardiovascular and we’ve made it endovascular care. our goal to help Additionally, The everyone in our Chester County Hospital and community Health System has achieved the understand their American Heart heart risks.” Association’s Mission: Lifeline® Receiving Center— Bronze Level Recognition Award based on our excellence in treating patients who come to our Emergency Department for heart-related chest pain and other coronary symptoms. the jeweler’s gallery Some just seem to be gifted with impeccable taste. At Sunset Hill Jewelers and Fine Arts Gallery, it’s clear that this applies.

F

rom the stunning renovation of their three-story building to their stellar jewelry selection and original art exhibits, Sandra and Joseph Riper offer a unique experience in art and design that makes Sunset Hill a cornerstone of the West Chester art scene.

Celebrating 30 years in the heart of Downtown West Chester.

This year the Ripers (along with their dog, Louis) celebrate 30 years in the heart of West Chester, where they have witnessed a tremendous amount of change in the community, what they call an “incredible resurgence.” Sandra grew up in West Chester, and last year’s renovation enabled the Ripers to build a home in the borough where they “love being involved.” When not hosting exhibit openings, their annual Miniature Show, or First Friday events at Sunset Hill, Sandra serves on the board of the Chester County Art Association and was the founder of West Chester’s popular Gallery Walk, now in its 22nd year. This biannual event features a range of artwork in different mediums through a self-guided walking tour of borough galleries and businesses. Sandra also celebrates the legacy of late local artist Harry Dunn. (Find his work archived online at harrydunngallery.com.) She runs the Harry Dunn Memorial Art Scholarship, supporting young up-andcoming artists as they embark on an education in the arts. A graduate gemologist, Sandra’s passion for jewelry and design helps her create special memories for customers with every purchase. Sunset Hill’s unique selection of jewelry runs from antique and vintage pieces

to contemporary and classic designs. Sandra works alongside a long-standing team of goldsmiths to complete custom design and repair work. “Our service is our brand, for sure,” says Sandra. After 30 years in West Chester, Sandra’s goal is simple: “30 more!”

“Where your passions meet the needs of the world— that’s where you should get involved.”

giving back As we celebrate West Chester’s robust and active restaurant scene in this issue, there’s another food-related issue that deserves our attention: those for whom food is lacking.

T

o this end, Fig® gives thanks for the work of the West Chester Food Cupboard, a volunteer-run organization that strives to provide food assistance to those in need. Founded in 2009, the West Chester Food Cupboard offers supplemental food to low-income families, making access to food its priority. Fiona Allison is a co-founder, board member,

and long-term volunteer of the West Chester Food Cupboard. Fiona’s passion and tireless work for food equality in Chester County is a defining force. A long-time Chester County resident, Fiona began volunteering at the Food Cupboard in West Chester “because no one should go hungry.” “It is a busy place,” says Fiona. “We’re open to clients 15 hours a week, and volunteers put in many, many more hours a month.” Seven lead volunteers manage the organization along with a board of directors. Those who give their time accomplish a myriad of activities to keep the Food Cupboard running. “It really functions like a body,” says Fiona. “All of the parts have to work together.” Now in its fourth year, the West Chester Food Cupboard is on the verge of becoming a 501(c)3 organization this June.

50 figwestchester.com | facebook.com/figwestchester | twitter.com/figwestchester

“I love the people I volunteer with,” says Fiona. “There’s a real sense of community. Everyone pitches in together with the interests of the clients at heart.” While there are many volunteers working hands-on at the Food Cupboard, there are other ways to help: write letters to elected officials advocating increased funding for food programs, connect on social media, and help to “educate other people that hunger and food insecurity are very real.” Local food drives have been an asset, as have donations from local residents and farming communities. In short, every bit helps. As Fiona so graciously points out, “Where your passions meet the needs of the world— that’s where you should get involved.” pictured Fiona (third from left) with some of the Food Cupboard’s dedicated volunteers

With its detailed imaging, PET-CT offers precise results in detecting tumors and localizing cancer.
