5 Practical & Useful Father's Day Crafts Your Kids Can Make You have to admit it, a lot of crafts made by the kids will be stacked away on a dusty shelf or thrown in the bin a few months down the track as they’ve fallen to bits. This Father’s Day, why don’t you help your little ones create works of art which are useful and practical for Dad? 1. Dad’s Hand Painted BBQ Apron This one is perfect for all ages, from a new born bub (yes you will have to do most of the work, but it’s still super easy!) up to teens. Spoil Dad with recipes Glamarama Vegetable Dumplings DUMPLING WRAPPERS (or use store bought wrappers) Ingredients • 2 cups plain flour plus ¼ cup extra for dusting • ½ teaspoon salt • ⅔ cup water Directions: • Combine 2 cups of flour, salt, and water in a large mixing bowl. Mix with a wooden spoon until it turns into a lump. Then knead it by hand for a 3-5 minutes until the dough gets a little softer. • Cover with cling wrap and let the dough sit for 20 to 30 minutes on the kitchen counter. • Take the dough out of the plastic bag. It will be a little softer and moist and easier to handle. Knead it for 5 to 7 minutes, until it’s smooth and elastic. It should be very stretchy. • Place the dough on a cutting board dusted with a bit of flour and divide it into 2 equal pieces. Put one half into the plastic bag to keep it from getting dried out as your work on the other half. • Cut the piece of dough into 8 equal sized pieces. Roll each piece out with a rolling pin to round circle disks. • Repeat with second half of mixture. DUMPLING FILLING Ingredients • 1 leek, thinly sliced • 2 carrots, grated • 1 cup of mushrooms, chopped

½ block of firm tofu, crumbled 1 handful of green beans, chopped 4 tablespoons of soy sauce ¼ teaspoon of cayenne pepper or 1tbs chilli sauce • ½ bottle of Glamarama Summer Ale (reserve the rest for drinking) Directions • In a dash of oil, fry leek, carrot, mushroom, tofu and green beans in a hot pan for 1 minute. • Add cayenne or chilli sauce and stir through. • Add soy sauce and stir until the sauce is almost all evaporated. • Add beer, a ‘slosh’ at a time until the beer is all evaporated. • Taste mixture and adjust seasoning. • To make dumplings, place a small spoonful of the filling in the centre of the skin. Dab a little water with your finger and circle around the edge of the skin, and then fold in half and seal the edges. • To pan fry the base of the dumplings, coat a frying pan with a little cooking oil and turn to medium heat. Place the dumplings on the frying pan and then turn the heat to high. Pan fry the dumplings until the bottoms turn golden brown and crisp. Add the water and cover the frying pan with its lid immediately. Cook until water has evaporated and turn the heat to low. Cook the dumplings for another 2 minutes or so, dish out and serve hot with a dipping sauce! (Dumplings can also be steamed) Recipe By Renae Smith, Masterchef 2014
these ciderlicious Apple & Strawberry Cider Crumble Ingredients For the filling: • 4-5 large Granny Smith apples • 1 cup of frozen mixed berries • 2 bottles of Cider (reserve half a bottle to drink yourself whilst cooking) • 100g Caster Sugar For the topping: • 100g brown sugar • 100g Sunburst (use butter if preferred) • 100g plain flour • 50g rolled oats • 50g shredded coconut • 1 tsp cinnamon Method • Heat oven to 180c (fan forced) or 200c (regular) • Peel the apples and chop into chunks (around 3-4cm) • Pour the sugar over the apples and cover them with the cider. • Bring to a simmer over a medium heat for about 10 minutes, stirring occasionally. Apples should just soften but still have a slight crunch. • Meanwhile, make the crumble: place all dry ingredients into a bowl and rub the butter through with your fingertips until the mixture resembles bread crumbs and holds together when pressed.
• Drain the apples (drink the left over cider) and put them in an oven-proof dish. Sprinkle over the frozen berries. • Cover the apples and berries with the crumble topping. • Put the crumble in the oven for 2030 minutes, or until golden brown and bubbling. Pulled Pork Tacos Quick, easy and full of flavour, this will be a winner every time. The perfect combination of strong robust spices, with a fresh tangy salsa and mellow cooling sour cream. Maybe I should have doubled the recipe as the plates are always licked clean. Use soft taco shells, hard taco shells or larger tortillas. Prep time 5 minutes Cook time 5 minutes Total time 10 minutes Serves 4 (2 per person) Ingredients 8 soft taco shells or tortillas 1 tablespoon olive oil 2 teaspoons ground cumin 2 teaspoons ground coriander 1 teaspoon smoked paprika ¼ teaspoon cayenne pepper ½ cup leftover roast pork juices 400 g cooked pulled pork ¼ iceberg lettuce, shredded sour cream to serve 1 long red chilli, finely chopped (optional) Fresh Salsa 2 tomatoes, finely diced ½ red onion, finely chopped 1 avocado, finely diced 1 handful coriander, chopped ½ lime salt and pepper
Method Preheat oven to 140C. Remove tacos shells from packaging and wrap in foil, making sure all the edges of the foil are sealed tight so the tacos don’t get crispy. Warm in oven for 5 minutes while you prepare the remaining ingredients. Heat oil in a frying pan over medium–high heat, add spices and cook for a minute. Add leftover roast pork juices and pork, and cook for 3–4 minutes until the pork is heated through. If you don’t have enough juice left over from the roast, use orange juice or apple cider. To make fresh salsa, gently toss the tomato, onion, avocado, coriander leaves, juice of half a lime, salt and pepper in a bowl. Serve pork mixture in warmed tacos topped with lettuce, salsa, sour cream and chilli. *** If you don’t have leftover cooked pork, use fresh pork mince instead. After the spices have been cooked, add mince and cook for 4–5 minutes, then add orange juice or apple cider.
Crunchy Veal Schnitzel The best veal schnitzel ever and a regular in our house! The kids love to pound the veal – it helps to relieve some of the frustrations of the day. If you have the time, crumb the schnitzels ahead of time and pop them in the fridge. I find this helps the crumbs to stick better. The spelt breadcrumbs cooked in coconut oil give it a tremendous crunchiness, while the oats give a distinctive nutty flavour. Prep time 10 minutes Cook time 10 minutes Total time 20 minutes Serves 4 Ingredients 400 g veal schnitzel 6–8 slices spelt bread ½ cup porridge oats ½ cup spelt or plain flour 2 eggs coconut oil 4 handfuls rocket leaves 250 g cherry tomatoes, halved 1 handful basil leaves, chopped 50 g parmesan cheese, shaved 2 tablespoons balsamic vinegar 6 tablespoons olive oil Method: Preheat oven to 100C (to keep schnitzels warm when cooked). Using the spiked side of a kitchen meat mallet, pound the schnitzels until paper thin. Then flip over and pound again. This makes them quicker to cook and very tender. If the pieces are too big for your frypan, cut them in half. In a food processor, blitz bread and oats. Make the crumbs as fine or as chunky as you like. Place the flour on a dinner plate, maybe half at a time. In a wide, shallow bowl, whisk the eggs with 2 tablespoons of water (this helps to break up the egg and thin the mix). Place breadcrumbs on another dinner
plate. Coat the veal in flour (shake off excess), dip in egg wash and then breadcrumbs. Press firmly to make sure crumbs stick, and place on a clean plate. Place 1–2 tablespoons of coconut oil in a large frying pan over medium heat. Cook schnitzels (3–4 at a time) for 2 minutes each side. Place on a lined tray in the oven and repeat with remaining schnitzels. You will need to add more coconut oil each time. Shake vinegar and oil in a jar until combined. Taste and adjust to your liking. Assemble the veal schnitzel on individual plates, top with a handful of rocket and a scoop of tomatoes, sprinkle with basil and parmesan, and pour over balsamic oil. You may prefer to serve the dressing at the table so it doesn’t soften the crunch of the schnitzels. In the unlikely event there are schnitzels left over, turn them into a quick veal parmigiana for lunch. Spread with tomato pasta sauce and a few slices of parmesan. Yum!
