En un país que habitualmente está entre los 8 mayores productores en el mundo, con 1,8 millón de consumidores, no es extraño que todos los días exista una actividad relevante en torno al vino.

In a country that is usually among the 8 largest producers in the world, with 1.8 million consumers, it is not surprising that every day there is a relevant activity around wine. A new development, terroir, tasting, congress, awards ... something is always happening!

Sobre el cierre de esta edición, por ejemplo, un total de 45 expertos de América, Asia y Europa elegía al vino chileno “El Principal” como “Mejor vino ícono del año” y “Best in show”, de entre 630 muestras, de 7 países distintos, en el marco de la 22ª versión de los Catad’or Wine Awards 2017, el certamen más importante de Latinoamérica.

Mientras el invierno comienza a abandonar Santiago, los centros invernales aún acogen a sus pasajeros con actividades pensadas justamente en combinar el gusto por el vino con el alusinante paisaje de la cordillera, experiencia que, aunque no alcanzamos a mostrar en esta edición, invitamos a conocer.

Más aún, en este mes de las Fiestas Patrias, las actividades se redoblaron en todo el territorio comenzando con el Día Nacional del Vino Chileno, el cual conmemora cada año ese bienaventurado 4 de septiembre de 1545, cuando Pedro de Valdivia escribió al rey Carlos V de España pidiéndole “vides y vinos para evangelizar Chile”, y así esta historia comenzó a escribirse.

n el contexto de la Copa Confederaciones de Rusia, el jugador chileno Alexis Sánchez — cuyo equipo, el Arsenal inglés, es auspiciado por una viña chilena— disfrutó de un logro histórico: se convirtió en el máximo goleador de “la Roja”. Tras un partido con Alemania que todo el orbe quería ver, ya en la zona de entrevistas seguidas también desde muchos países, Sánchez describió el momento en que su marca se vería superada en el futuro de la siguiente manera: “Algún día me gustaría sentarme, tomarme un vino y ver que alguien pasó mi récord”.

Esa frase dio la vuelta al mundo de la boca de uno de los embajadores más importantes del país, porque el vino chileno no solo se conoce, sino que también se aprecia y se admira en el extranjero. De hecho, se

De acuerdo al comportamiento de los últimos años, por lo demás, no hay duda de que la industria del vino chileno, aún con estos boyantes números, mantiene su afán: crecer. Ni la desaceleración económica, ni las heladas, ni las sequías, ni las inundaciones, ni los incendios forestales han afectado los números generales de este crecimiento sostenido, que no solo suma elogios y nuevos consumidores en el extranjero, sino que también ha encontrado un mercado interno interesado en conocer más de este fascinante mundo.

PALADAR CHILENO CADA VEZ MÁS EXIGENTE El consumidor nacional entendió que en Chile el vino podría ser perfectamente algo así como el chocolate para los suizos, y por lo mismo cada vez está más interesado en saber de las distintas variedades que ofrecen los diversos viñedos del país, probar la mayor cantidad de cepas posibles, conocerlas, saber diferenciarlas, encontrar la combinación precisa con las comidas, regalar una buena botella a alguien que sepa apreciarla. En otras palabras, el chileno sabe mucho más de vinos que hace algunos años y, en consecuencia, cada vez busca encontrarse con un producto de mejor calidad.

Mario Pablo Silva, presidente de Wines of Chile (o Vinos de Chile), ratifica esta tendencia: “Tenemos estudios que nos indican que en Chile el consumo de vinos está creciendo, orientado principalmente al vino de mayor valor, cuya categorización es finos y superfinos. Ese es el segmento que más ha crecido”.

En 2016, la venta de vino superfino en Chile creció un 25,2%, mientras que la categoría completa aumentó un 12,2% en relación al año anterior. “El consumo de vinos ha ido mejorando en los últimos años: pasamos de 13 litros per cápita hace 5 años a un consumo de 14 litros per cápita al año. Mejor aún es la composición de dicho aumento, ya que hoy en día se toman vinos de mejor calidad, lo que va en línea con nuestra estrategia como sector”, complementa el presidente de Wines of Chile.

El mercado nacional del vino, considerando los espumantes, aumentó un 10% en volumen y un 12,1% en su valor, alcanzando una producción de 264,6 millones de litros y utilidades de USD$ 579 millones. Del total de ventas, el consumo interno representa el 24%, cifra que debería aumentar de acuerdo con la visión de Mario Pablo Silva: “Estamos en un país de vinos, líder en el Nuevo Mundo, razón por la cual creemos que el consumo local debería ser superior y establecer una clara ventaja con los otros rubros. Chile presenta enormes ventajas competitivas como paraíso vitivinícola, talento y calidad de su gente e innovación, lo que nos permite proyectar un desarrollo sano y competitivo en el largo plazo”.

According to the behaviour of the last years, there is no doubt that the Chilean wine industry, still with these buoyant numbers, maintains its eagerness: to grow. Neither the economic slowdown nor frost, drought, flood or forest fires have affected the overall numbers of this sustained growth, which not only adds praise and new consumers abroad, but has also found a market Interested in learning more about this fascinating world.

CHILEAN PALATE INCREASINGLY DEMANDING The national consumer understood that in Chile the wine could be perfectly something like the chocolate for the Swiss, and for that reason it is more and more interested in knowing about the different varieties that offer the different vineyards of the country, to taste the greater quantity of strains, know them, know how to differentiate them, find the precise combination with the meals, give a good bottle to someone who knows how to appreciate it. In other words, the Chilean knows much more about wines than some years ago and, consequently, every time he seeks to find a product of better quality.

Mario Pablo Silva, president of Wines of Chile (or Vinos de Chile), confirms this trend: «We have studies that indicate that in Chile wine consumption is growing, mainly oriented to higher value wine, wine whose categorization is fine and superfine. That is the segment that has grown the most. « In 2016, sales of superfine wine in Chile grew by 25.2%, while the whole category increased by 12.2% in relation to the previous year. «Wine consumption has been increasing in recent years: we went from 13 liters per capita 5 years ago to a consumption of 14 liters per capita per year. Even better is the composition of this increase, because nowadays people drink wines of better quality, which is in line with our strategy as a sector, «adds the president of Wines of Chile.

The national wine market, considering the sparkling wines, increased by 10% in volume and 12.1% in value, reaching a production of 264.6 million litres and profits of USD $ 579 million. Of the total sales, domestic consumption represents 24%, a figure that should increase according to the vision of Mario Pablo Silva: «We are in a wine country, leader in the New World, which is why we believe that local consumption should be superior and establish a clear advantage with other areas. This development of the national wine is explained because in Chile a strategy was defined that has given good results, according to the gastronomic chronicler Daniel Greve tells us: “The national industry is on a very different path to that of 6 or 7 years ago, where it was criticized for producing a very flat and predictable wine, whereas now it has demonstrated with facts that it is a country with a very diverse and different product, different, of many valleys, strains and styles. Independent of the rich diversity, there is a common factor that is quality, easy to understand and always invites to have a second glass of wine.”

Los productores chilenos realizan permanentes esfuerzos destinados a abrir puertas en los distintos mercados mundiales, participando en ferias, convenciones y seminarios internacionales de vino. En Asia, por ejemplo, Wines of Chile realizó, durante 2016, 22 actividades, 4 ferias y 3 auspicios corporativos en los que participaron 98 viñas chilenas.

comenta el cronista gastronómico Daniel Greve: “La industria nacional está en un camino muy diferente al de hace 6 o 7 años, donde se le criticaba por producir un vino muy plano y predecible, mientras que ahora ha demostrado con hechos que es un país con un producto muy diverso, diferente, de muchos valles, cepas y estilos. Independiente de la rica diversidad, hay un factor común que es la calidad, fácil de entender y que siempre invita a una segunda copa”.

Greve también reconoce que el consumo interno se ha fortalecido por distintos factores, uno de ellos es el acceso a mayor información, debido a que el mundo del vino en la actualidad forma parte de la agenda noticiosa: “Hay más medios especializados, y eso es muy importante porque es el puente entre el consumidor y el producto, que en definitiva los acerca y los invita a reunirse”.

VINOS DE EXPORTACIÓN Las favorables cifras del primer cuatrimestre del año ratifican la tendencia al alza de las exportaciones de vino chileno. Según información entregada por Wines of Chile, la venta al extranjero de vino embotellado aumentó en un 6,2% en volumen y un 5,5% en valor en relación con los primeros cuatro meses de 2016. En tanto que el espumante registró un alza de 24,7% en su valor y de 20,8% en volumen.

El presidente de la asociación que representa a los productores vitivinícolas de Chile, Mario Pablo Silva, confirma que las cepas que más se exportan siguen siendo cabernet sauvignon y carmenere, y se detiene para explicar las causas del éxito de la producción chilena en el extranjero: “En los últimos años se ha tenido un desarrollo muy importante en los diferentes mercados internacionales, crecimiento generado por nuevos polos e ingreso de nuevos consumidores a la categoría. Sin embargo, los países productores están invirtiendo y desarrollando estrategias y marcas para alcanzar un aumento en su participación de mercado”.

Por su parte, el gerente general de Santiago Wine Club, Arnaud Robert, coincide con el diagnóstico positivo y nos comparte su opinión respecto a las causas del buen momento del vino chileno en el exterior: “Ofrece un commodity de buena calidad que es muy apreciado en otros mercados, los que se pueden ir abasteciendo.

También porque es un vino con diversidad generosa, con mucho sol, mucha frescura, buena acidez, elegante, con estructura, fácil de entender. Todo eso seduce a los otros mercados”.

DESAFÍO: AUMENTAR EL VALOR DE LA BOTELLA Arnaud Robert, de nacionalidad francesa y con 13 años de residencia en el país, cree que existe un conflicto a la hora de endosarle una imagen al vino chileno, entre lo masivo y lo exclusivo: “Esa es la dualidad de Chile: por un lado no quiere perder su commodity, su producto barato y competitivo para ganar mercado, y por otro, ofrece productos premium. No se genera la credibilidad suficiente porque el mensaje más importante es el vino 12

Greve also acknowledges that domestic consumption has been strengthened by several factors, one of which is access to more information, because the wine world is now part of the news agenda: “There are more specialized means, and that is very important because it is the bridge between the consumer and the product, which ultimately brings them closer and invites them to meet.”

EXPORT WINES Favourable figures for the first quarter of the year confirm the upward trend in Chilean wine exports. According to information provided by Wines of Chile, the sale of bottled wine abroad increased by 6.2% in volume and 5.5% in value compared to the first four months of 2016. While the sparkling wine recorded an increase of 24.7% in its value and 20.8% in volume.

The president of the association representing Chilean winemakers, Mario Pablo Silva, confirms that the most exported strains are still cabernet sauvignon and carmenere, and he pauses to explain the causes of the success of Chilean production abroad: “In recent years there has been a very important development in the different international markets, growth generated by new poles and entry of new consumers into the category. However, producer countries are investing and developing strategies and brands to achieve an increase in their market share.”

For its part, the general manager of Santiago Wine Club, Arnaud Robert, agrees with the positive diagnosis and shares his opinion on the causes of the good moment of Chilean wine abroad: “It offers a good quality commodity that is very appreciated in other markets, which can be supplied. Also because it is a wine of generous diversity, with lots of sunshine, lots of freshness, good acidity, elegant, with structure, easy to understand. All this seduces the other markets.”

CHALLENGE: INCREASE THE VALUE OF THE BOTTLE Arnaud Robert, a French national with 13 years of residence in the country, believes that there is a conflict when endorsing an image to Chilean wine, between the massive and the exclusive: “This is Chile’s duality: one does not want to lose its commodity, its cheap and competitive product to win the market, and on the other hand, it offers premium products. Not enough credibility is generated because the most important message is: the wine is cheap. It is a problem of focus, but Chile will have to go to the tendency to adjust the value and lower the volume.”

For his part, renowned international sommelier Hector Vergara argues that the national industry has worked well in the last decade, but that should take the next step to better position outside our borders: “Chilean wine has earned a reputation all over the world, but the task now is to give it value, because when we enter other markets we do it with low prices. Our product has nothing to envy to the wines of the world.”

The diagnosis is shared by Mario Pablo Silva, who also mentions the ways of Wines of Chile to increase the value to the product: “The main objective and strategy is to develop demand for premium wines and increase the average

barato. Es un problema de foco, pero Chile va a tener que ir a la tendencia de ajustar el valor y bajar el volumen”.

Por su parte, el reconocido sommelier internacional Héctor Vergara sostiene que la industria nacional ha trabajado bien en la última década, pero que debe dar el siguiente paso para posicionarse mejor fuera de nuestras fronteras: “El vino chileno se ha ganado un prestigio en el mundo entero, pero la tarea ahora es darle valor, porque cuando entramos a otros mercados lo hacemos con precios bajos. Nuestro producto no tiene nada que envidiarles a los mejores vinos del mundo”.

El diagnóstico lo comparte Mario Pablo Díaz, quien además menciona los caminos de Wines of Chile para aumentar el valor al producto: “El principal objetivo y estrategia es desarrollar la demanda por vinos premium y aumentar los precios promedio de los vinos nacionales, además de incrementar la competitividad del sector. Buscamos lograrlo a través de aumentar el conocimiento del vino chileno, fortaleciendo la imagen como vinos de calidad, y sustentables”.

Finalmente, es él mismo quien explica las expectativas y desafíos de la industria vitivinícola nacional: “Hemos definido como objetivos al 2025 aumentar la demanda y precio promedio del vino nacional, crecer un 3% en volumen y un 6% en valor. Tenemos como misión fortalecer la imagen y reconocimiento de los vinos chilenos en los mercados internacionales, posicionando la mejor calidad y diversidad de nuestro producto. Y a nivel nacional estamos siempre innovando con campañas nacionales e intentando acercar el vino a los consumidores, rompiendo el paradigma de la copa y el vino”.

And at the national level we are always innovating with national campaigns and trying to bring wine to consumers, breaking the paradigm of glass and wine.”

n una entrevista realizada a Kevin Roberts, una de las figuras más importantes de la publicidad y el marketing de los últimos 20 años, se le preguntó cómo se podía conectar determinada marca con el cerebro. Su respuesta cambió completamente el sentido de la conversación: “Eso no es lo importante, sino que cómo se conecta con nuestro corazón”.

Esa frase resume fehacientemente el sentido del branding, concepto publicitario que complementa las acciones de marketing, pero con elementos que sensibilizan al consumidor, generándole un sentido de pertenencia con el producto o la marca.

Cuando hablamos de branding, por lo tanto, nos referimos a una serie de acciones orientadas a transmitir los valores de la marca y posicionarla en el consumidor para que finalmente elija ese producto. En definitiva, el marketing se encarga del precio, la promoción y la distribución, mientras el branding se ocupa de variables como la identidad, construcción de valor y estrategias de la marca. ¿De qué manera se relaciona este concepto con el vino? Pues en la medida en que los vinos son una marca que debe venderse, la relación aplica del mismo modo, pero también adquiere cualidades que le son únicas. Para saber más, conversamos con el publicista Claudio Seguel, autor de los libros Brandstory y Look and Feel, quien, junto con su equipo de Brand Story está afinando detalles para lo que será la primera versión del Wine Congress, una iniciativa inédita en Chile dirigida al mundo del vino, que 16

/// In an interview to Kevin Roberts, one of the most important figures of advertising and marketing in the last 20 years, he was asked how it is possible to connect a particular brand with the brain. His answer gives the interview a new direction: “That is not what matters, but how it is connected to our heart.”

That statement truly summarises what branding is about: a concept in advertising that complements the actions in marketing but incorporates elements that sensitize the consumer, generating a sense of belonging between him and the brand.

When we talk about branding, therefore, we refer to a series of actions intended to transmit the values of the brand and to place it in the consumer so he finally chooses that product. In short, marketing is responsible for the price, promotion and distribution, while branding deals with variables such identity, building value and brand strategies.

How is this concept related to wine? As wine is a brand that must be sold, the relationship goes in the same way, but it also develops its own. To learn more, we had a conversation with the publicist Claudio Seguel, author of the books Brandstory and Look and Feel, who, along with his team of Brand Story is fine-tuning details to what will be the first version of the Wine Congress, an unprecedented initiative in Chile oriented to the world of wine, which will provide new tools to producers for the construction of more powerful brands.

“Cuando empezamos a vender productos sobre la base de precios y promociones, le seguimos entregando el poder negociador al consumidor, pero cuando le puedes dar un valor emocional a un producto, la persona que lo sigue va a estar dispuesta a pagar el valor que sea, y ese es el objetivo del congreso: entregar contenido al vino a través de relatos que sensibilicen y entreguen herramientas para hacer que una historia sea potente y que emocione a tal punto que no importe el precio”, parte contextualizando el académico de relatos publicitarios de la Pontificia Universidad Católica de Chile.

Un objetivo que parece alinearse justamente con “lo único” que según muchos le falta al vino chileno: potenciar el segmento de precio alto. Eso sin olvidar además a los pequeños productores. “En el país cerca de 400 viñas producen vino, de las cuales 300 lo exportan. Pero del total de viñas, diez se reparten el 50% del mercado. Esas viñas no tienen problemas de marketing, pero qué pasa con las otras. Ese es otro de nuestros objetivos: entregar

An objective that seems to go in line with the one thing that Chilean wine is lacking: strengthen the high price segment.

All this without leaving behind small producers. “Nearly 400 vineyards produce wine in the country, 300 of them export it. Of the total number of vineyards, 10 share 50 % of the market. Those vineyards do not have marketing problems, but what happens with the other ones? This is another objective we have: Provide branding’s tools to those producers that do not have product promotion advisors”, adds Claudio Seguel, who highlights the support of Asociación de Vinos Colchagua and the support of Marca Chile in the realization of this congress.

BRANDING VERSUS PRESUPUESTO Nuestro entrevistado cree que el principal problema que deben enfrentar las viñas no es el recurso destinado al marketing, sino más bien las decisiones a la hora de enfrentar una campaña: “Hoy tener un gran presupuesto no es sinónimo de éxito, por eso es importante conocer cuál es mi consumidor. Porque tal vez estoy gastando mucho dinero en televisión, pero es posible que el 90% de mis consumidores estén en el smartphone”.

Para Claudio Seguel, la industria del vino muchas veces ha caído en la tentación de vender rápidamente los productos sin detenerse en lo que realmente quiere el consumidor, a través de promociones que lo incitan a comprar sin ir más allá, hacia el valor emocional que una botella de vino debería generar: “No es necesario tener un gran presupuesto para realizar una buena campaña, pero debemos entender que para que un producto se venda debemos promocionarlo con un mensaje contundente, acompañado de un relato, y no con frases como botellas de vino a $2.990 o dos botellas al precio de una. Así lo voy a vender probablemente, pero no le estoy creando valor al vino”.

Seguel adelanta una de las estrategias que debería seguir la industria nacional para potenciar el consumo interno de vino: “Falta una campaña gremial, como lo hizo el mundo de la leche o del huevo, para que el chileno se sensibilice y concientice de la calidad de su propio producto”.

Al mismo tiempo, Claudio Seguel advierte que es posible cambiar el estigma del vino chileno en el extranjero, que es visto como un producto bueno pero además barato: “En todas las presentaciones a inversionistas extranjeros se habla del carmenere y se explica que se trata de una cepa extinta en el mundo y rescatada en Chile, pero a nivel de campaña masiva no se ha explotado.

El chileno es catalogado como el mejor vino del mundo en la categoría económica, por eso cuesta vender las botellas más caras. Y esto lo abordaremos junto con otras materias como el nuevo concepto de la etiqueta inteligente en el Wine Congress.

Insisto: la marca vino no se crea solamente con venta y calidad, sino que también a partir de la identidad”.

BRANDING VERSUS BUDGET Our interviewee believes that the main problem vineyards must face are not the resources destined to marketing, but rather the decisions at the time of devising a campaign: “Today having a great budget does not mean success, that’s why it is important to know the consumer. Perhaps I am spending too much money on television, but the case may be that 90% of my consumers are on their smart phones .”

For Claudio Seguel, the wine industry has fallen many times into temptation of selling products quickly, without thinking about what the consumer really wants, through promotions that do not take him further, toward the emotional value that a bottle should generate: “It is not necessary to have a great budget to conduct a good campaign, but we should understand that a convincing message is necessary so that a product is sold, accompanied by a story, and not with messages such as bottles of wine $2,990 or two bottles for the price of one. That way you will probably sell the wine, but you are not giving wine any value.”

Seguel brings forward one of the strategies that the national industry should implement to increase the local consumption of wine: “A guild campaign is needed as the dairy or egg sector did, so that Chileans sensitise and become aware of the quality of their own product.”

At the same time, Claudio Seguel explains that it is possible to change the stigma of Chilean wine abroad, regarded as a good product but cheaper as well: “Carménère is talked about in all presentations to foreign investors and it is explained that it comes from an extinct vine in the world that was preserved in Chile, but a massive campaign is yet to be conducted. Chilean wine is considered as one of the best in the world in the economic category this is why expensive bottles are hard to sell. We will discuss this together with other issues such as the new concept of the smart tag in the Wine Congress.

I insist: a wine brand is not only created through sale and quality, but also through identity.”

e conoce como turismo de vino o enoturismo a las visitas a bodegas y viñas, con catas y distintas actividades relacionadas con la producción vitivinícola. Chile, país privilegiado en cepas y entorno, ha tenido un incremento sostenido en esta materia en los últimos años, especialmente gracias a las “Rutas del Vino” y a las innumerables vendimias e iniciativas promovidas por las viñas, las que se han ganado un lugar destacado como panorama.

La diversidad de vinos ha obligado a las bodegas a estar cada vez más preparadas para recibir a visitantes que saben mucho más que antes y que desean conocer todavía más de ese producto que acompaña en distintos momentos. No se trata únicamente de pasear por maravillosos lugares que no se encuentran en la ciudad, tampoco solo de disfrutar las exquisitas degustaciones, sino que también es ir a la génesis misma del proceso de producción, pasando por cada una de las etapas hasta llegar a la botella, que probablemente será adquirida para probar en casa, ahora acompañados de toda su mística historia.

Mario Pablo Silva, presidente de Vinos Chile A.G., nos describe el panorama del turismo de vino en el país: “El enoturismo chileno tiene un gran potencial,

En Chile existen 94 viñas oficiales con programas de enoturismo, que esperan recibir en el año a 900 mil personas interesadas en el mundo del vino, hasta ahora con una tendencia de 80% extranjeros y 20% de turistas nacionales.

Mario Pablo Silva nos adelanta los objetivos a mediano y largo plazo: “El gran desafío es que el enoturismo ayude a posicionar a los vinos de Chile en el mundo y también localmente, donde tengamos un flujo mayoritario de visitantes nacionales a las viñas. Para 2017 se espera subir a un 35% en turistas locales como asistentes a las viñas; y para 2025, un 50% de enoturismo nacional, lo que se traduciría en llegar a un total de 3 millones de visitantes, una cifra similar a la que existe en España”.

El sommelier internacional Héctor Vergara sostiene que a nuestro país le falta mucho para llegar a los niveles que han alcanzado otras experiencias en el mundo: “En enoturismo estamos en pañales comparados con California, por ejemplo, donde es una industria tremenda. En Chile en general no es panorama visitar un viñedo, mientras que en otros países lo es”, comenta en relación a la idiosincrasia del propio chileno.

The international sommelier Hector Vergara maintains that our country lacks much to reach the levels that have reached other experiences in the world: «In enotourism we are just beginning compared to California, for example, where it is a tremendous industry. In Chile, in general, it’s not a leisure activity to visit a vineyard, while in other countries it is,» he says in relation to the idiosyncrasy of the Chilean himself.

Vergara, que en 1982 recibió la distinción de master en la Court of Master Sommeliers, comenta en este sentido las dificultades del enoturismo en el país: “No está en el ADN de la gente, pero se está haciendo un trabajo para eso. Ahora los turistas que vienen a Chile sí van a los viñedos”, aclara.

Del total de visitantes extranjeros, el 42,8% son brasileños, cifra que ha ido en aumento en los últimos años. De acuerdo a Vinos de Chile, el enoturismo genera ingresos en promedio de 24 millones de dólares al año, considerando venta de productos y de entradas a los viñedos.

Vergara, who received the distinction of master in 1982 at the Court of Master Sommeliers, comments in this regard on the difficulties of enotourism in the country: «It’s not in people’s DNA, but we are working for that. Now the tourists who come to Chile do go to the vineyards,» he says.

Of the total foreign visitors, 42.8% are Brazilian, a figure that has been increasing in recent years. According to Vinos de Chile, enotourism generates an average income of 24 million dollars a year, considering the sale of products and entrance fee to the vineyards.

For Héctor Vergara, the national consumer should still value his own production, which implies knowing also the beautiful places in which it is made: «Wine in Chile is an heritage, it is sold worldwide, so we must assume in our country that we have a noble product and that it sells very well!»

or la experiencia completa, gracias al hecho de experimentar en terreno la historia, los aromas y sabores que rodean la elaboración de un vino, ir a conocer cualquier viña chilena siempre será un panorama recomendable, sin embargo, muchos visitantes no cuentan con tiempo suficiente para trasladarse fuera de Santiago, por lo que finalmente la idea de conocer más del vino chileno se ve desplazada por otro panorama urbano.

Para fortuna de Josely y Luis Enrique, el hotel donde hospedan está cerca de la zona de Alonso de Córdoba, por lo que ni siquiera fue necesario tomar un taxi. Llegaron caminando a Vinolia, en la calle Alonso de Monroy 2869, donde, a pasos de un centro comercial, los esperaba un estimulante recorrido por las mejores sensaciones del vino chileno, ¡incluida una hermosa bodega de vinos campestre!

La experiencia realmente traslada, hay que decirlo, “casi” como si se estuviera en el valle, y es que todo está bien pensado. Se nota que el concepto maduró durante largo tiempo hasta hacerse realidad en mayo de 2017, y que se nutrió —tal como nos explica 28

El tour, que dura una hora, considera el paso por lo que denominan la “Sala de los sentidos”, un espacio acondicionado para, efectivamente, reconocer a través de los sentidos —la vista, a través de la decoración campestre, y el oído, a través de sonidos del canto de los pájaros o caídas de agua, pero fundamentalmente el olfato, a través de 48 aromas presentes en el vino chileno— la atmósfera en la que nace, se desarrolla y se expresa un mosto en nuestros valles.

La siguiente estación es una sala de cine que, con un realismo excepcional, nos muestra el valle escogido junto a cinco copas y el mismo enólogo de la viña, quien les explica lo básico a los novatos y nos invita a todos a descubrir y reconocer las características de sus vinos.

A la salida nos reecontramos con Josely y Luis Enrique, en un espacio especialmente acondicionado para seguir disfrutando del vino, ahora, se supone, con mayor dominio en la materia.

Así que les preguntamos ¿qué les pareció?: “Muy interesante.

Hemos ido a vinícolas en Chile, Argentina y otras partes, donde hemos degustado vinos. Acá no solo hicimos eso, sino que también pudimos ejercitar la sensibilidad para percibir los aromas.

Nos vamos felices”.

The tour, that lasts for an hour, considers visiting what is known as the “Room of the Senses”, an space equipped to, effectively, recognize through the senses – sight, through the rural decoration, and the ear, through the sound of birds singing or waterfalls, but primarily the sense of smell, through the 48 aromas present in Chilean wine – the atmosphere from which it is born, develops and the grape-juice from our valleys expresses itself.

The next stage is a movie theatre that, with an exceptional realism, shows the chosen valley together with five wineglasses and the same oenologist of the vineyard, who explains the basics to the novices and invites us all to discover and recognize the features of its wines.

On the way out we met Josely and Luis Enrique again, in an especially adapted space to continue enjoying wine, now, supposedly, with greater knowledge about the topic. So we asked them what do you think about the experience? “Very interesting. We have visited wineries in Chile, Argentina and some other places, where we have tasted wine. Here we not only did that, but we could also experience the sensibility to perceive the aromas. We are leaving very happy.”

And we are too.

l cambio en Chile llegó para quedarse, y este es solo el comienzo. El rescate del pasado y el reconocimiento de las formas de elaboración de tiempos antiguos está siendo cada vez más común, utilizando más las técnicas tradicionales”.

La cita corresponde a un extracto del informe preparado por el catador español Luis Gutiérrez, para la importante revista Wine Advocate, donde describe su viaje de 12 días recorriendo distintos viñedos nacionales. El elogioso texto titulado “Chile, Tierra, Aire y Agua”, que salió a la luz a fines de abril, destaca distintos aspectos del vino chileno a partir de la degustación de 923 variedades, entre las cuales el 55% obtuvo sobre 90 puntos, 28% superior a la cifra alcanzada en 2015. En esta evaluación, junto con otras variables, fue considerado el concepto de sustentabilidad.

The cite has been taken from an abstract of the report prepared by the Spanish taster Luis Gutiérrez, from the important magazine Wine Advocate, where he describes his 12-day journey going over several national vineyards. The commending text entitled “Chile, earth, Air and Water” released at the end of April, highlights several aspects of the Chilean wine through the tasting of 923 varieties from which 55 % obtained 90 points, 28 % ranked higher than 2015. In this evaluation, along with other variables, the concept of sustainability was considered.

de vino sustentable? Posiblemente no tan desarrollada como en otros países, pero sí se están redoblando esfuerzos para compatibilizar la armonía entre los viñedos y el entorno. Al menos la palabra sustentabilidad está considerada entre los pilares de la Asociación de Vinos de Chile, porque se entiende su importancia en el resultado final del producto, pero también porque se valora cada vez más el cuidado del medio ambiente.

En ese sentido, la vitivinicultura orgánica —es decir, la que no utiliza ningún producto químico— ha venido dando paso desde hace algunos años a una vitivinicultura biodinámica, una forma de cultivar inspirada en las ideas de Rudolf Steiner que, junto con ser orgánica, considera a los campos de cultivo como unidades complejas e interconectadas entre sí: suelo, plantas, personas, animales, e incluso los astros, en equilibrio. De esta manera (y solo de esta manera, según algunos), la expresión del terroir en el vino sería realmente única.

Según la enóloga de Emiliana, Noelia Orts, “ojalá que todos utilizáramos el sistema biodiámico, porque es la mejor manera para que las viñas crezcan en un suelo sano y se desarrollen de una forma equilibrada, sin la utilización de productos que matan. Chile debería ser el país de los vinos orgánicos, porque tenemos condiciones únicas”. En lo que no solo coincide Marcelo Retamal, enólogo de Alcohuaz, quien además agrega: “El vino orgánico, más que una tendencia, es una filosofía”.

Por su parte, Julio Bastías, enólogo de Matetic, una de las primeras viñas de nuestro país en desarrollar el concepto orgánico y biodinámico, nos explica: “Chile es un país privilegiado en términos de que tenemos una pluviometría concentrada en el invierno, con un clima estival seco, caluroso. Es decir, condiciones propicias para desarrollar una muy buena agricultura. Nuestros colegas de otras partes del mundo siempre nos dicen que estamos en un paraíso y que podemos hacer lo que queramos en términos orgánicos”. Con él, seguimos hablando de este paraíso: ¿Qué diferencia entonces orgánico de biodinámico?

“El sistema de agricultura biodinámico es el más orgánico de los orgánicos. Si me detengo en la definición, la agricultura orgánica hoy es una agricultura de sustitución, de productos químicos por naturales. Eso es lo que la gente entiende, pero la agricultura biodinámica va más allá y trata de incorporar ciclos naturales, especies vegetales y animales para recrear muy humildemente lo que hace la naturaleza”. ¿Para qué hacerlo así?

Básicamente por la búsqueda de la identidad de los vinos, para que estén conectados con el lugar y tener un sistema de agricultura amistoso con el medio ambiente, sustentable y posible de desarrollar en el largo plazo. ¿Cómo se consigue eso?

Hay que ser muy dedicados en el trabajo de suelo y en cómo se le repone a la naturaleza lo que las parras van sacando. En ese círculo virtuoso hemos aprendido una receta 36

dings compatible. At least the word sustainability is considered as one of the foundations of the Asociación de Vinos de Chile, because its importance in the final result of the product is understood, but also because the care for the environment is more and more appreciated.

With this regard, the organic viticulture – that is, the one that does not use any chemical product – has made some steps in the last years to a biodynamic viticulture, a way of growing inspired by Rudolf Steiner’s ideas that, along with being organic, regards the cultivation fields as complex units interconnected among themselves: land, plants, people, animals, and even celestial bodies in balance. This way (and only in this way, according to some), the expression of terroir in wine would be really unique.

According to oenologist Noelia Orts from Emiliana, “I wish we all used the biodynamic system, because it is the best way for vineyards to grow in a healthy land and develop in a balanced way, without using killing products. Chile should be the country of the organic wines, because we have unique conditions”. Marcelo Retamal, oenologist of Alcohuaz, does not only coincide with Orts but adds: “Organic wine, more than a tendency, is a philosophy.”

As for Julio Bastías, oenologist of Matetic, one of the first vineyards of our country in developing the concept organic and biodynamic, explains to us: “Chile is a privileged country as we have a rainfall concentrated in winter, with a dry and hot summer climate. That is, favourable conditions to develop very good agriculture. Our colleagues from other parts of the world always tell us that we are in a paradise and that we can make what we want in organic terms.” We kept talking about this paradise with him: What is the difference then between organic and biodynamic?

“The system of biodynamic agriculture is the most organic of all the organic ones. If I discuss the definition more in detail, the organic agriculture today is substitution agriculture - natural products instead of chemical products. That is what the people understand, but biodynamic agriculture goes further and tries to incorporate natural cycles, vegetable and animal species to very humbly recreate what the nature does.”

Why doing it this way?

Basically to find the identity of wines, so they are connected with the place and have an environmentally friendly system of agriculture, sustainable and possible to develop in the long term.

How do we achieve it?

We have to be very committed with the work of the land and with how nature recovers what grapevines take from it. In that virtuous circle we have learned a recipe that makes sense to us and has been very effective. Besides, this company has a very important comparative advantage: it is able to manufacture its own manure on the basis of the residues retrieved from the wineries and also from the cattle that feeds naturally following a nutrition program based on grasslands.

Y esta compañía tiene una ventaja comparativa muy importante: es capaz de fabricar su propio abono a base de los residuos rescatados de las bodegas y también del ganado que se alimenta naturalmente con un programa de alimentación de praderas. ¿Es más complejo trabajar de manera sustentable?

Fue complejo al comienzo porque no había maquinarias ni muchos insumos. El equipamiento lo tuvimos que importar, porque no existían los equipos necesarios en Chile y yo diría que todavía no los hay porque muchos son inapropiados. Tuvimos que invertir y aprender porque estamos hablando de una receta local. Hay elementos que uno puede utilizar de la agricultura orgánica a nivel mundial, pero la receta propia tiene que ser desarrollada por ti mismo. ¿Por qué darle tanta importancia a lo sustentable, ya sea orgánico y biodinámico?

Porque la sustentabilidad, es decir el reciclaje de la energía, la reutilización de los abonos compostados en el mismo viñedo o en nuestros casinos, entre otras medidas, está amarrada en términos sociales y ecológicos a la producción vinícola.

En todo caso, ¿pareciera que aún son pocas las viñas

Is it more complex to work in a sustainable way?

It was complex at the beginning because there were no machineries and not many raw materials. We had to import the equipment, because the necessary equipment was not available in Chile and I would say that it is still not available as much of it is inadequate. We had to invest and learn because we are talking about a local recipe. There are elements of worldwide organic agriculture that you can use, but your own recipe has to be developed by yourself.

Why giving so much importance to what’s sustainable, both organic and biodynamic?

Because sustainability, that is the recycling of energy, the re-use of composted manure in the same vineyard or in our casinos, among other measures, is tied in social and ecological terms to the wine-growing production.

In any case, it seems that biodynamic vineyards are still a few?

Yes. One of the explanations of why people do not get more involved is lack of knowledge, because they believe that it is more expensive and because they always look for a commercial value of the things and not for a personal definition of the project, but rather commercial.

Sí. Una de las explicaciones de por qué la gente no se involucra más es por desconocimiento, porque creen que es más caro y porque siempre se busca un valor comercial de las cosas y no por una definición personal del proyecto, sino más bien comercial. ¿Y no es más caro?

No es así. Hay ítems donde la agricultura orgánica es súper competitiva con relación a la convencional. Lo que pasa es que las moléculas químicas son caras y son productos caros de aplicar. Pero por definición no hay un agricultor más orgánico que una persona que ha vivido siempre en el campo alimentándose sanamente sin utilizar productos químicos.

Ellos trabajan con escalas reducidas, pero han podido sobrevivir con alimentos súper limpios.

And isn’t it more expensive?

It is not so. There are items where organic agriculture is highly competitive compared to conventional agriculture. What happens is that chemical molecules are expensive and they are expensive products to apply. But there is not a more organic farmer by definition than a person that has always lived in the country feeding himself healthily without using chemical products. They work with reduced scales, but they have been able to survive with super clean foods.

¿Por qué en el país no se trabaja más con la agricultura biodinámica?

Porque en las universidades no han formado profesionales con un barniz respecto a estas técnicas de agricultura. Todo es convencional, químico. Y es mucho más fácil de entender porque en las universidades se prueba con productos químicos, entonces es difícil no caer en ese círculo.

Why isn’t biodynamic agriculture more used in the country?

Because in universities they have not educated professionals with a basic knowledge in relation to these techniques of agriculture. Everything is conventional, chemical. And it is much easier to understand because in universities they experiment with chemical products, then it is difficult not to fall in that circle.

¿La tendencia para los próximos años será la sustentabilidad?

No sé qué tan rápido, pero al menos Chile va en esa dirección y además los mercados lo van a ir demandando cada vez más. Si antes la góndola de productos orgánicos era pequeña, cada vez va a tener más importancia y la gente ha entendido lo que significa consumir productos limpios, sustentables.

Will sustainability be the tendency for the next years?

I do not know how quickly, but at least Chile goes in that direction and besides markets will demand for it more and more. If before the gondola of organic products was little, every time it will have more importance and people have understood what it means to consume clean, sustainable products.

A la hora de exportar y considerando que hay viñas en Europa que, siendo biodinámicas, no promocionan su vino por eso, sino solo por su calidad, ¿es un valor agregado ofrecer vinos orgánicos/biodinámicos?

Hay muchos países en el mundo en que es mandatorio que los productos que ingresan a esos mercados sean orgánicos. Por ejemplo en Suecia, Dinamarca o Noruega, si tu producto no es orgánico, no puede estar en un supermercado, y eso es por definición. Más que un valor agregado es una posibilidad que nos abre puertas.

When it comes to exporting, considering that there are vineyards in Europe that, being biodynamic, they do not promote their wine in those terms, but only for their quality, is it an added value to offer organic/biodynamic wines?

There are a lot of countries in the world in which it is mandatory that the products that enter those markets are organic. For example in Sweden, Denmark or Norway, if your product is not organic, it cannot be in a supermarket, and that is by definition. More than an added value, it is a possibility that opens doors.

¿MAGIA? BIODINÁMICA

Una parte fundamental del cultivo biodinámico considera enriquecer el suelo, en periodos específicos de los ciclos astrales, con preparados cuyas descripciones parecen sacadas de un libro de magia: Preparado 502: (…) se realiza con las flores de milenrama obtenidas del campo. Después del equinoccio de primavera las flores se introducen dentro de una vejiga de ciervo que posteriormente se cuelga al sol (…).

Preparado 508: (…) hervir lentamente 500 g de cola de caballo seca en 10 litros de agua lluvia durante 30 a 40 minutos (…).

Según la biodinámica, también las bodegas deben tener características especiales, por ejemplo, ser siempre curvas, sin esquinas, ya que así se representa el infinito.

MAGIC? OR BIODYNAMICS A fundamental part of the biodynamic cultivation considers enriching the soil, in specific periods of the astral cycles, with preparations whose descriptions seem extracted from a book of magic: Prepared 502: (...) it is made with the flowers of yarrow obtained from the field. ien sabemos que los viñedos, como muchas otras especies vegetales, muestran variaciones en sus características de acuerdo a las condiciones del medio en que se desarrollan, el que se define por factores de la naturaleza que determinan el comportamiento y reacciones de las parras, condicionando su metabolismo y crecimiento. Así, en Chile existen más de 400 viñas productoras de vino, en superficies con características completamente distintas dependiendo de muchos factores, como la ubicación territorial, altura y humedad.

Esto, que durante años los españoles llamaron terruño, en algún momento, por influjo de Francia, país avezado en la producción de vinos, se comenzó a llamar terroir. Si bien no hay un conceso universal en cuanto a su significado específico, el Organismo Internacional de la Vid y el Vino (OIV) lo definió con las siguientes palabras: “Terroir engloba el clima, litología, paisaje y suelo. Pero además considera la gestión, el manejo de los productos y la elaboración misma del vino”.

Para conocer más aspectos del terroir chileno, conversamos con un especialista en la materia: Pedro Parra, conocido en el mundo vitivinícola como el “Doctor Terroir”, quien entiende de vinos

/// We all know than vineyards, as well as many others vegetable species, show variations in their characteristics according to the conditions of the environment in which they develop, which is defined by natural factors that determine the behaviour and reactions of the grapevines, conditioning their metabolism and growth. Thus, in Chile there are more than 400 wine producer vineyards, in surfaces with completely different characteristics depending on a number of factors, such as the territorial position, height and humidity.

What was mentioned above, which for years the Spanish called homeland, at one point, influenced by France, country experienced in the production of wines, started to be called as terroir. Even though there is not an universal consensus as to its specific significance, the International Organism of the Vine and the Wine (OVW) defined it with the following words: “Terroir encompasses the climate, the lithology, the landscapes and the ground. But it considers the management as well, the handling of the products and the elaboration of wine itself.”

In order to know more aspects of Chilean terroir, we talked with a specialist in the matter: Pedro Parra, known in the viticultural world as Doctor Terroir, who knows about wines not only for his doctorate in terroir from the Institut National Agronomique of Paris, but because along his trajectory he

no solo por su doctorado en terroir en el Institut National Agronomique de París, sino porque en su trayectoria ha conocido diversas bodegas alrededor del mundo, asesorando a destacados enólogos de distintas nacionalidades. De hecho, su influencia le permitió ingresar en 2011 al ranking “The Power List Top 50”, de la revista inglesa especializada Decanter, convirtiéndose en el segundo chileno, después de Eduardo Guilisasti, en figurar en esa prestigiosa lista.

Así, desde la Octava Región, donde encontró su paraíso para la plantación de viñedos, nos entrega un primer diagnóstico de la realidad del terroir nacional: “Es muy diverso, lo que lo hace muy entretenido y complejo a la vez. Las mejores viñas del mundo se plantan más que sobre el suelo, sobre las rocas que componen el suelo, y en ese sentido Chile tiene un buen potencial porque es un país con mucha presencia de montañas”.

“Resultados interesantes para los vinos baratos, pero catastróficos para los caros” Pedro Parra sostiene que Chile cuenta con un potencial tremendo para la producción vitivinícola, pero que se han cometido errores de fondo que han atentado contra una mejor calidad: “Un porcentaje muy superior de las viñas están plantadas en el plano, en el fondo del valle, y no en los suelos de montañas, lo 42

has known various wineries round the world, counselling prominent oenologists of different nationalities. In fact, his influence allowed him to be part of “The Power List Top 50” ranking in 2011 of the English specialised magazine Decanter, becoming the second Chilean, after Eduardo Guilisasti, in taking part in that prestigious list.

In this way, from the Eighth Region, where he found his paradise for the plantation of vineyards, he renders up a first diagnosis of the reality of the national terroir: “It is highly diverse, which makes it very entertaining and complex at the same time. The best vineyards of the world are planted more above the ground, on the rocks that fix the ground, and in this regard Chile has a good potential because it is a country with a lot of presence in the mountains.”

“Results are interesting concerning cheap wines, but catastrophic results in relation to the expensive ones” Pedro Parra maintains that Chile has an enormous potential for the wine-making production, but fundamental mistakes have been made which have threatened a better quality: “An important percentage of the vineyards are planted in flat terrain, in the bottom of the valley, and are not planted at the grounds of the mountains, which means to have a young viniculture, very little experimented.”

Para que quede totalmente claro, nuestro entrevistado se animó a comparar la industria del vino nacional con el mundo automovilístico: “Chile tiene resultados interesantes para los vinos baratos, pero catastróficos para los caros. Es decir, vendemos muy bien los Fiat 600 hasta los Toyota. De ahí para arriba, no hemos sido capaces de despegar”.

La reflexión tiene que ver con la competitividad que podría alcanzar la calidad del vino chileno en relación con otros mercados, dejando atrás el estigma de la botella barata. Por lo mismo, piensa que los productores locales deberían apuntar más a la calidad y no tanto a la cantidad: “En todos los países del mundo encuentras las mismas cosas en volumen, las mismas marcas, pero cuando quieres buscar productos más definidos, la gente se frustra porque no los encuentra. En la venta del vino en volumen estamos muy bien, pero en productos de reserva no existimos en este momento”.

To make it absolutely clear, our interviewee decided to compare the national wine industry with the car world: “Chile has interesting results concerning cheap wines, but catastrophic results in relation to the expensive ones. That is, Fiat 600 to Toyota are well sold. From there up, we have not been capable to take off.”

The reflection to be done has to do with the competitiveness that the quality of Chilean wine would be able to reach compared to other markets, leaving behind the stigma of the cheap bottle. That’s why, he thinks that local producers should care more about quality and no so much about quantity: “You find the same things in volume in every country of the world, the same brands, but when you want to look for more specific products people become frustrated because they do not find them. We are very well in the sale of wine in volume, but in reserve products we do not exist at this moment.”

“Doctor Terroir” recommends paying a lot of attention to the natural phenomena of recent times, that have affected the results of the harvests directly: “The climate issue must be followed closely, because in the last five years Chile and Argentina have suffered powerful and almost brutal setbacks, and in other parts of the world as well. co hay que seguirlo de cerca, porque en los últimos cinco años tanto Chile como Argentina han sufrido golpes potentes y casi brutales, y en otras partes del mundo también. Estamos todos sufriendo golpes climáticos muy importantes y eso hace que ingrese otro indicador al juego: el clima loco que tenemos en estos momentos”.

Luego de presentar el diagnóstico del terroir chileno, Parra adelanta algunas soluciones para enfrentar mejor los fenómenos naturales: “El año pasado tuvimos lluvias catastróficas que arruinaron una parte de la producción chilena de vino tinto, y en general hay lugares donde las heladas son sintomáticas y todos los años muy fuertes, lo que altera el desarrollo de la vinicultura como la conocimos hace 20 años. Por lo tanto, hay que replantearse varias cosas, como lugares donde plantar, cómo plantar, regar o no regar. Hay un desafío por delante que es empezar a pensar en la vinicultura del año 2040”.

En cuanto a los incendios forestales que azotaron a nuestro país en el arranque del año, Pedro Parra reconoce que en general las viñas chilenas no sufrieron directamente, pero que la producción podría tener consecuencias: “Se quemaron pocos viñedos, pero muchos se vieron afectados por el humo del fuego. ¿Cuánto? Se sabrá cuando se pruebe el vino, y si queda con humo será difícil de vender”.

“QUEDA TODO POR HACER” El “Doctor Terroir” está convencido de que Chile cuenta con un gran potencial para la agricultura de viñedos, pero que, sin embargo, algunas decisiones políticas han repercutido directamente en contra de la calidad del vino nacional: “Los suelos en Chile son súper aptos para la agricultura del vino, de altísima calidad.

Pero esos suelos están poco plantados o no están plantados. Peor aún, están plantados con eucaliptus o pinos, lo que genera un país con una bipolaridad brutal, porque en el norte tienen cobre y en el sur, pinos y eucaliptos que destruyen todo”.

Se refiere específicamente a las disposiciones legales que han prohibido la tala de ese tipo de árboles, decisión que ha afectado la producción de vinos premium: “La primera consecuencia es que suelos vitícolas en general de altísima calidad, en lugares que climáticamente serían muy interesantes de explorar, están ocupados por estas atrocidades (pinos y eucaliptus), porque nadie se ha preocupado de regular nada”.

El de Parra puede sonar a diagnóstico más bien negativo del escenario, frente a otros que celebran el boom exportador, pero es una visión que se hace cargo de las oportunidades y que, finalmente, habla del gran potencial que aún queda por explotar, ya que a su juicio la actual distribución le ha permitido al país obtener un escaso 30% de la calidad que realmente se podría conseguir, y remata: “En 100 años se verá un escenario absolutamente diferente”.

Right after presenting his diagnosis of the Chilean terroir, Parra advances some solutions to confront natural phenomena better: “Last year we had catastrophic rains that ruined part of Chilean red wine production, and in general there are places where frosts are symptomatic and severe every year, which alters the development of viniculture as we knew it 20 years ago. Therefore, we have to rethink several things, such as spaces where to plant, how to plant, watering or no watering. A challenge lies ahead which is starting to think about the viniculture of the year 2040.”

With reference to the forest fires that hit our country early this year, Pedro Parra recognises that in general Chilean vineyards did not suffer directly, but production could be affected by the consequences: “Few vineyards burnt, but many were damaged by the smoke. How much? We will know when we taste the wine, and if it has smoke within, it will be difficult to sell.”

EVERYTHING IS YET TO BE DONE Doctor Terroir is convinced that Chile has a great potential for the agriculture of vineyards. However, some political decisions have influenced directly against the quality of national wine: “The land in Chile is suitable for the agriculture of high quality wine. But this land is slightly planted or not planted at all. Even worse, it is planted with eucalyptus or pines, what generates a country with a brutal bipolarity, because in the north they have copper and in the south they have pines and eucalyptuses that destroy everything.”

Parra refers to the legal provisions that have forbidden the clearing of that type of trees, decision that has affected specifically the production of premium wines: “The first consequence is that winegrowing grounds in general of the highest quality, in places that would be climatically interesting to explore, are taken by these atrocities (pines and eucalyptus), because nobody has worried about regulating anything.”

Parra’s diagnosis of the scene may seem rather negative, compared to others who celebrate the export boom, but this is a view that takes into account the opportunities and that, finally, talks about the great potential that is still to be exploited, since according to Parra the present-day distribution has allowed the country to obtain a scarce 30 % of the quality that would really be possible to reach, and finishes stating: “Within 100 years an absolutely different scenario will be seen.”

Amongst those three farmers was Juan Espíndola, who rescued the country stock to begin sowing, which currently produces 400 bottles a year, the average figure of the production of each of the nineteen families that, today, are part of the Tierra Fértil (Fertile Land) program, promoted in 2011 by SQM (Chilean Chemical and Mining Society) and carried out altogether by official organisms, entities of education and the communities.

Esas condiciones permiten que las parras se estresen y produzcan un vino seco con características distintas, a partir de un suelo con muchos minerales”.

“DIFÍCIL PERO NO IMPOSIBLE” La escasez de agua se presenta como una de las mayores dificultades para cultivar en el árido desierto de Atacama. Alejandra nos explica el método utilizado en Toconao para enfrentar el obstáculo hídrico, que reemplazó al antiguo sistema por inundación: “Cada 20 días se acumula agua en un estanque. Cada agricultor dispone de 25 minutos de agua, por lo tanto maximiza el tiempo para regar directamente las plantaciones y luego llenar el estanque que abastecerá el sistema de goteo por esos 20 días. Es muy sacrificado porque generalmente el proceso se lleva a cabo de noche o madrugada, para no perjudicar el riego de turno de todo un pueblo”.

El vino Ayllu terminó por materializar el sueño de una comunidad que concentró en sus botellas la esencia y la cultura de su tierra, con todas las complicaciones que implica trabajar en condiciones extremas. “Es una actividad difícil pero no imposible, a pesar de la falta de agua ¡se puede hacer agricultura en el desierto!”, concluye Alejandra Espíndola.

These conditions allow the grapevines to stress and produce a dry wine with different characteristics, from a ground with many minerals.”

“DIFFICULT BUT NOT IMPOSSIBLE” Water shortage is one of the main difficulties in farming in the arid Atacama Desert. Alejandra explains the method used in Toconao to face the hydric obstacle, which replaced the old system for flooding: “Every twenty days, water accumulates in a tank. Every farmer has twenty-five minutes of water, therefore maximise the time to directly water the plantations and then fill the tank that will supply the watering system for those twenty days. It’s very difficult because the process usually takes place at night or dawn, to avoid harming the irrigation cycle of an entire town.”

The Ayllu wine ended up realising the dream of a community that gathered in its bottles the essence and the culture of its lands, with all the complications that come with working in extreme conditions. “It’s a difficult activity but not impossible, despite the lack of water you can farm in the desert!” concludes Alejandra Espíndola.

Entre los expertos que apoyaron este magnífico desarrollo en la altura estuvo Pedro Parra, chileno formado en el Institut National Agronomique de París, a quien la revista Decanter incluyó entre los “50 personajes más influyentes del mundo del vino” y quien adquirió aún más fama asesorando a Sting en sus viñedos. Cuando Ayllu fue lanzado al mercado en 2011, él dijo al diario local El Nortero: “Estos vinos reúnen las cualidades únicas de esta zona del país, tanto de suelo y clima como de los agricultores atacameños que los producen. When Ayllu was launched in 2011, he told the local newspaper El Nortero: “These wines combine the unique qualities of this area of the country, from the soil and climate to the Atacameño farmers who produce it. These unique qualities are the source of innovation and the main engine that will promote the area of the Atacama Salt Mine as a nationally recognised icon and, in the future, one recognised in the rest of the world, in the production of excellent wines.”

robablemente a cualquier persona en el mundo que disfrute del vino le gustará el que se produce en Chile. Cada visitante que pasa por nuestras tierras tiene palabras de elogio para nuestros vinos. Algunos de ellos, incluso, cuando provienen de celebridades como John Travolta, quien lo calificó de “fantástico” en 2012, o Eddie Vedder, quien fue aún más expresivo en el Lolapalloza de 2013, ayudan a promover esta fama internacional. ¿Pero qué es lo que hace tan especial al vino chileno? ¿Qué lo diferencia de otros productores importantes que comparten semejanzas de suelo y clima?

Para entenderlo, hablamos con Daniel Sanz, enólogo experto, que además cuenta con la experiencia de trabajar desde hace ya varios años en la promoción y venta de vinos chilenos en Europa y EE.UU. Junto con él, descubriremos lo especial de nuestro terroir. Para eso, lo primero es que nos aclare justamente este concepto: “Terroir es una palabra francesa que habla de todos los factores integrados de suelo y de clima que pueden influir sobre el desarrollo de una parra y la condición que va a tener la uva para madurar y dar determinado resultado en un vino”.

/// Anyone in the world who enjoys wine will probably like the one produced in Chile. Every visitor walking on our lands has praising words for our wines. Some of them — when they come from celebrities like John Travolta, who qualified it as “fantastic” in 2012, or Eddie Vedder, who was even more expressive in 2013’s Lollapalooza — even help promote this international fame. But what is it that makes Chilean wine so special? What sets it apart from other important wine-producing countries that share similar soil and climate?

To understand this, we spoke with Daniel Sanz, expert oenologist, who has also worked several years in promotion and sale of Chilean wines in Europe and the USA. With him, we will discover what is so special about our terroir. To be able to do so, we first need to clarify this concept: “Terroir is a French word that refers to all the integrated soil and climate factors that may influence the development of a vine and the condition that the grape will have to mature and give a certain result in a wine.” Right, let’s continue.

Is the Chilean terroir unique in the world?

You can plant vines wherever you want. If the climatic condition allows it, you can have up to two harvests a year, but clearly, there are countries where vines develop better than in others. For example, in Chile

¿El terroir de Chile es único en el mundo?

Tú puedes plantar viñas donde quieras. Si la condición climática te lo permite, puedes llegar a tener hasta dos cosechas por año, pero hay claramente países donde las parras se desarrollan mejor que en otros. Por ejemplo, en Chile estamos dentro de las isotermas que son ideales para la producción de vino, que están más o menos entre los 30º y 45º de latitud norte y sur. Esto cubre California, Francia, Italia, España y todos los países que tienen un clima relativamente similar en ciertas zonas: Burdeos es como el valle del Maipo; el valle de Napa, en California, es como el valle de Calchagua o del Cachapoal. Estas isotermas permiten tener un clima que da las 4 estaciones típicas, una lluvia concentrada principalmente en invierno y una cosecha al año donde concentras todo el esfuerzo.

Entonces es especial… pero no único.

Lo que nos hace verdaderamente únicos es la diversidad. Nosotros somos capaces de producir desde un sauvignon blanc frío, que puede tener las características de un

we are amongst the ideal isotherms for wine production, which are between 30º and 45º latitude north and south. This covers California, France, Italy, Spain and all countries that have a climate relatively similar in certain areas: Bordeaux is like the Maipo valley; the Napa Valley, in California, is like the Calchagua or the Cachapoal valley. These isotherms allow us to have a climate that gives us the four typical seasons: concentrated rain mostly in winter and a harvest a year where you concentrate all the effort.

Then, it’s special… but not unique.

What makes really us unique is diversity. We are capable of producing from a cold Sauvignon Blanc with the characteristics of a Sauvignon Blanc from New Zealand, with a green pepper scent, to a Carménère or Cabernet Sauvignon or Syrah from a warm climate — as warm as a Cabernet Sauvignon from Napa, California.

I can have those two extremes and, between them, produce a very large range of different varieties, with different qualities, in different valleys.

Puedo tener los dos extremos y producir dentro de esos dos extremos un rango muy amplio de distintas variedades, con distintas calidades, en distintos valles. ¿Por qué pasa eso en Chile y no en otros países?

Por lo largo y delgado. Aquí existen desde la Cuarta Región y hasta la Octava Región latitudes distintas con distintas características, influencia del sol y del océano: en Casablanca, donde recibes la influencia del océano, tienes otro clima distinto al del Maipo, y en La Serena, en el Valle del Elqui, hay parras que van a recibir más influencia del viento, pero con mayor temperatura que si la plantara en Malleco, que es una valle que también crece por estos días para las cepas frías. En Litueche ahora se estan plantando variedades de clima frío porque recibe la influencia directa del océano y además es un suelo muy pobre, lo cual funciona igual que el estrés hídrico y hace que produzca uvas más pequeñas, con la consecuencia de que el vino esté más concentrado por tener más película que pulpa.

El mundo ideal para las viñas…

Hay muchas viñas en Chile que tienen plantados viñedos en distintos valles con distintas características, climas y suelos, se benefician de esto y obtienen calidad y variedad. Por otro lado, como panorama de inversión, hay que considerar que el precio del suelo, la mano de obra, los insumos, los costos de producción, en general, serán bajos y tienes un excelente clima, con valles regados por las aguas que bajan de la cordillera de los Andes por sus distintos ríos y que por lo tanto no se van a secar.

SIN FILOXERA, EXPRESIÓN PURA DE LA VARIEDAD

The ideal world for vines…

There are many vines in Chile that have vineyards planted in different valleys with different characteristics, climates and soils; they benefit from this and obtain quality and variety. On the other hand, as an investment landscape, we must take into account that the price of the soil, the workforce, the supplies, the production costs in general will be low and we have an excellent climate, with valleys irrigated by water coming down from the Andes through its different rivers, which will not dry.

WITHOUT PHYLLOXERA, PURE EXPRESSION OF VARIETY We know, on the other hand, that the natural barriers of Chile — desert, mountains, ice and ocean — protect the territory from eventual plagues, which have made history devastating — for example, in the case of the phylloxera in the second half of the nineteenth century — all the plantations of Carménère in the world… except in Chile.

To precisely understand this advantage, Sanz explains: “The stage of the

Because of its length and narrow width. Here we have different latitudes with different characteristics, as well as influence of the sun and the ocean from the Fourth to the Eighth Region: in Casablanca, where you’re influenced by the ocean, you have a climate different to the one in Maipo; and in La Serena in the Elqui valley, there are vines that will be more influenced by the wind, but with a higher temperature than if you planted it in Malleco, which is a growing valley for cold strains nowadays.

In Litueche they are now planting varieties from cold climates because it receives direct influence from the ocean and it’s also a very poor soil, which works exactly like water stress and ends up producing smaller grapes; therefore, the wine is more concentrated because it has more film than pulp.

Para entendeder exactamente esta ventaja, Sanz nos explica: “La etapa de la filoxera que más trae problemas es la etapa de larva en las raíces, porque esa se come la parra. Esa fue la que devastó las parras de carmenere y que la erradicó. Entonces, cuando tienes filoxera, tienes que utilizar un portainjerto resistente, una raíz dura y sobre esa base pones tu variedad. Sobre la raíz de una vitis labrusca, que es otra especie de vitis no vitivinífera, pero resistente a la filoxera, por ejemplo, yo injerto mi cabernet sauvignon. En Chile no me preocupo del insecto, no necesito el portainjerto y por lo tanto planto la variedad directo al suelo, lo que significa que voy a tener su expresión pura”.

CARMENERE GASTRONÓMICO Si bien ser los únicos con carmenere representa una ventaja, nuestro entrevistado nos comenta que aquello no significa que esta sea necesariamente la cepa chilena más popular. Eso sí, nos explica, se han hecho importantes esfuerzos para que la variedad se relacione con nuestro país: “Es uno de los objetivos que tenemos como marca país para los vinos: potenciar carmenere como la cepa de Chile, y que la gente la pueda asociar a nuestro país y la aprenda a valorar. El carmenere sí es reconocido como una cepa chilena, pero hay varios mercados como Holanda, EE.UU. o Reino Unido en donde todavía no es la cepa que ellos estan acostumbrados a tomar”.

Sanz explica su particularidad: “Es una cepa tan especial que hay muchos consumidores en el mundo que aún no la saben apreciar.

Es especiada en aroma, notas mucho dejo de pimienta y cuando lo pruebas también lo sientes especiado, se intensifica en el aroma y se traduce a una sensación como de pimienta negra”. Él nos comenta, no obstante, que cuando el producto se sabe apreciar es muy bien recibido por los consumidores: “Hay gente que lo valora mucho porque es un vino gastronómico, es interesante y abre el apetito. Pruebas un carmenere y a la media hora, sin darte cuenta, estás buscando algo para picotear. Te incita a comer algo probablemente condimentado”.

VARIEDAD DE VINOS, VARIEDAD DE CONSUMIDORES Diversidad de suelos y climas convenientes para el cultivo de distintas cepas nos permite entonces la producción de mucho vino diferente, siempre de calidad buena a excepcional, lo que explicaría la consecuente diversidad de mercados (y gustos) que son satisfechos por nuestras botellas. Así, no existe una única estrella que brille en el firmamento de los vinos chilenos, sino que justamente es ese cielo estrellado el que deslumbra en el mundo.

phylloxera that brings more problems is the stage of the larva in the roots, because that’s the one that eats the vine. That’s the one that devastated the vines of Carménère and eradicated it. Therefore, when you have phylloxera, you have to use a resistant rootstock, a tough root, and on that base, you place your variety. Over the root of a vitis labrusca — which is another species of vitis, not vitiviniferous but resistant to phylloxera —, for example, I graft my Cabernet Sauvignon. In Chile, I don’t worry about the insect, I don’t need the rootstock and therefore I plant the variety right on the ground, which means I’m going to get its pure expression.”

Según nos explica nuestro enólogo experto, “desde Chile vendemos mucho cabernet sauvignon, merlot y carmenere. A pesar de que cuesta más venderlo, (este último) en Brasil, por ejemplo, se valora más que otras cepas. En Inglaterra, donde toman más vino blanco que tinto, aprecian mucho nuestro sauvignon blanc y chardonnay. En el hemisferio sur también existe demanda para el vino chileno, desde Brasil, principalmente, pero en otros mercados consumidores como Australia o Sudáfrica no llega a ser tan importante la presencia debido a la buena calidad y precio del vino local, fenómeno que ocurre aquí mismo, en Chile, con el vino importado, por iguales razones”.

GASTRONOMIC CARMÉNÈRE Even though being the only ones with Carménère represents an advantage, our interviewee comments that it does not mean that it is necessarily the most popular Chilean strain. However, he explains, important efforts have been made for the variety to be linked to our country: “It’s one of the objectives that we have as a country brand for wines: to promote Carménère as a strain from Chile, and that people associate it with our country and learn to value it.

The Carménère is recognised as a Chilean strain, but there are many markets like the Netherlands, the USA, or the United Kingdom where it’s still not a strain they’re used to drinking.”

Sanz explains its peculiarity: “It’s such a special strain that there are many consumers in the world that still don’t know how to value it. It’s a spicy scent, you notice a lot of pepper drops, and when you taste it you also feel the spices, the scent intensifies and it translates as a sensation of black pepper.”

Nevertheless, he tells us that when the product is appreciated, it’s very well received by the customers: “There are people who value it a lot because it’s a gastronomic wine; it’s interesting and it opens the appetite. You taste a Carménère and half an hour later, without realising it, you’re looking for a snack.

It encourages you to eat something — probably something spicy.”

The diversity of convenient soils and climates for the harvest of different strains allows for the production of many different wines — always of good or exceptional quality, which explains the diversity of markets (and tastes) that are satisfied by our bottles. Thus, there is not one sole star that shines in the firmament of Chilean wines, but it is that same starry sky that dazzles the world.

According to our expert oenologist, “From Chile we send out a lot of Cabernet Sauvignon, Merlot and Carménère. Despite the fact that it’s harder to sell, the latter in Brazil, for example, is valued much more than other strains. In England, where they drink more white wine than red, they value much more our Sauvignon Blanc and Chardonnay. In the southern hemisphere, there is also demand for Chilean wine from Brazil, mostly, but in other markets, consumers like Australia or South Africa, our presence isn’t as important because of the good quality and price of local wine; this phenomenon occurs here in Chile with imported wine as well, for the same reasons.”

Hablamos con dos reconocidos chefs —Luis Cruzat, del Hotel Marriot, y Enrique Araya, del Reagal Pacific— con posturas distintas a la hora de encontrar la combinación perfecta entre los sabores de la cocina y el vino. ¿Será que la tradicional tendencia de la recomendación en restoranes está comenzando a ser desplazada por la invitación a encontrar individualmente ese placer que entrega el comer y beber “bien”? /// We talked to two renowned chefs - Luis Cruzat, from the Marriot Hotel, and Enrique Araya, from the Reagal Pacific - with different opinions when it comes to finding the perfect combination of the flavours of the kitchen and the wine. Could it be that the traditional trend of restaurant recommendations is beginning to be displaced by the invitation to individually find that pleasure that delivers eating and drinking «well»?

o recuerdas cuando detestabas el sushi?, ¿dirás que siempre te gustó el caviar? Los gustos cambian, especialmente si se trata de sabores. El mejor ejemplo se da en el mismo ser humano, que conforme va superando etapas en el crecimiento, va aumentando su capacidad para aceptar nuevas combinaciones en las comidas, lo que le permite disfrutar alimentos que posiblemente en algún momento rechazaba.

Lo mismo ocurre con los vinos, un mundo infinito por explorar y descubrir, donde los consumidores se enfrentan permanentemente a un escenario con muchas opciones… y cambios.

El desafío se presenta en el momento de elegir el vino perfecto para determinado plato de comida, porque una mala elección podría afectar el objetivo central: disfrutar. Y, por el contrario, si la combinación seleccionada es la óptima para el consumidor, más se deleitará con el equilibrio que ha conseguido entre su plato y su copa. Entonces diremos que el maridaje ha sido el apropiado.

Antiguamente, la fórmula era fácil de aprender: el vino tinto era para las carnes y el blanco, para los pescados y mariscos. Pero en la actualidad hablar de tinto y blanco es como decir que una pizza es de jamón y queso, en circunstancias que hay una infinidad de posibilidades.

Do you remember when you hated sushi? Will you say you always liked caviar? Tastes change, especially if it comes to flavors. The best example is in the same human being, who, as he goes through stages of growth, increases his ability to accept new combinations at meals, allowing him to enjoy foods that he may have rejected at some point. The same goes for wines, an infinite world to explore and discover, where consumers are faced permanently to a scenario with many options ... and changes.

The challenge comes at the time of choosing the perfect wine for a certain food dish, because a poor choice could affect the central objective: to enjoy. And, conversely, if the combination selected is optimal for the consumer, the more you will delight in the balance you have achieved between your plate and your glass. Then we will say that the pairing has been appropriate.

Formerly, the formula was easy to learn: red wine was for meats and white, for fish and seafood. But today talking about red and white is like saying that a pizza is ham and cheese, under circumstances that there are an infinite number of possibilities.

To get closer to that perfect combination of wines and foods, we talked to the international chef Luis Cruzat, from the Marriot Hotel, who starts by recognizing that in Chile there is a greater wine culture: «There has undoubtedly been a great change, because the wine market has expanded and also because

If before in the social gatherings of young people predominated beer cans and pisco or rum drink combinations, nowadays it is more and more frequent to see that group of consumers sharing with glasses of wine in the hand; a change that has also been produced because the wine industry understood that it should target the different segments and not just the regular buyer.

Si antes en las reuniones sociales de jóvenes predominaban las latas de cerveza y combinados de bebida con pisco o ron, en la actualidad es cada vez más frecuente ver a ese grupo de consumidores compartiendo con copas de vino en la mano, un cambio que se ha ido produciendo también porque la industria vitivinícola entendió que debe apuntar a los distintos segmentos y no solo al habitual comprador.

En pleno invierno, Luis Cruzat nos aclara que la elección de un vino no tiene que ver necesariamente con la estacionalidad: “Lo que más influye a la hora de escoger un vino es el plato con que se acompañará, más que la estación del año. Es algo más personal que la época. Coincide que en verano se acrecienta el consumo de vino blanco porque también aumenta la demanda de entradas, ensaladas y platos fríos, y el maridaje indicado para acompañar estos platos es blanco”.

Se conoce como maridaje a la intención metafórica de “casar” el vino con la comida, con el objetivo de aumentar el disfrute y placer de consumirlos. Aprovechamos la instancia, por lo tanto, para que nuestro entrevistado nos presente cuatro recomendaciones basadas en distintos tipos de vino.

Para un buen asado de vacuno se inclina por un cabernet sauvignon, ya que se trata de un vino con carácter que le viene perfecto a un plato con abundante grasa.

Para un pescado frito prefiere un vino blanco, pero dependiendo del acompañamiento también puede ser un pinot noir, nos dice.

De color más delgado que los otros tintos, es un vino de cuerpo lleno, de sabor y aromas intensos, más bien sedoso y seductor.

Para disfrutar al máximo de una paila marina, Luis Cruzat recomienda el sauvignon blanc por su característica frescura y deliciosa acidez.

Y para acompañar un plato de machas a la parmesana, un chardonnay, por ser un vino distintivo y rico, delicado y muy reconocible, sabroso y suave.

In the middle of winter, Luis Cruzat clarifies that the choice of a wine does not necessarily have to do with seasonality: “What most influences when choosing a wine is the dish that will accompany it, more than the season of the year. It is more personal than the time. It is known as a pairing to the metaphorical intention of «marrying» wine with food, with the aim of increasing the enjoyment and pleasure of consuming them. We take the opportunity, therefore, for our interviewee to present us four recommendations based on different types of wine.

For a good barbecue of beef, he is inclined for a Cabernet Sauvignon, since it is a wine with character that comes perfect to a plate with abundant fat.

For a fried fish he prefers a white wine, but depending on the accompaniment he can also be a Pinot Noir, he tells us. Thinner than the other reds colours, it is a full-bodied wine, with intense flavour and aromas, rather silky and seductive.

To enjoy the best of a “Paila Marina”, Luis Cruzat recommends Sauvignon Blanc because of its characteristic freshness and delicious acidity.

And to accompany a plate of “Pink clams with Parmesan cheese, a Chardonnay, for being a distinctive and rich wine, delicate and very recognizable, tasty and smooth.

Enrique Araya, chef ejecutivo de la cadena Regal Pacific, nos recibió luego de una gira que lo tuvo exhibiendo sus preparaciones en París, Londres y Roma, entre otras importantes ciudades de Europa, para hablar de maridaje y acercarnos aún más a la combinación perfecta de comida y vino. Sin embargo, el mediático profesional de la comida nos sorprendió con una frase que resume su postura y lo que parece ser la nueva tendencia: “Lo recomendable es no recomendar”.

Enrique Araya se inclina más bien por una búsqueda personal más que seguir las sugerencias de los especialistas: “Soy un chef que cree que nuestra gastronomía se puede combinar con los distintos tipos de vino. Me puedo comer un filete con un buen blanco, dejando atrás el mito de que las carnes rojas necesariamente tienen que acompañarse con un tinto. Lo mismo ocurre con las blancas: decir que solo se deben comer con vino blanco creo que ya no va”.

El chef internacional coincide con que hay mayor dominio gastronómico y de vinos por parte de los clientes, y que por lo tanto cuentan con mayores herramientas para tomar una buena decisión: “Antiguamente la gente pedía el menú del día con el vino de la casa, ahora hay una cultura y mucho más conocimiento de vinos”.

Si bien reconoce que es una decisión personal evitar recomendar vinos para sus preparaciones, Enrique Araya está consciente de que hay una tendencia en el mundo que sigue la misma línea: “Nuestros sommeliers de todas maneras recomiendan vinos a los comensales que así lo desean, pero creo que es preferible una búsqueda personal para el maridaje, porque finalmente el cliente sabe mejor que nadie lo que quiere. Vengo llegando de una gira internacional y conversé con mucha gente que comparte esa opinión. Al final, hay tanta variedad de vinos que creo que lo mejor es no encasillarse con ninguno”.

I can eat a steak with a good white wine, leaving behind the myth that red meat necessarily has to be accompanied with a red one. The same thing happens with the white meats: to say that only they should be eaten with white wine I think that it no longer goes.”

The international chef agrees that there is greater gastronomic and wine dominion by the clients, and that therefore they have more tools to make a good decision: “Formerly people asked for the menu of the day with the house wine, now there is a culture and much more knowledge of wines.”

While recognizing that it is a personal decision to avoid recommending wines for their preparations, Enrique Araya is aware that there is a trend in the world that follows the same line: “Our sommeliers recommend wines to diners who want to, but I think a personal search for the pairing is preferable, because the customer knows what he wants better than anyone. I came from an international tour and talked to many people who share that opinion. In the end, there is so much variety of wines that I think it is best not to box with any.”

Es parte de un conjunto de montañas que a su vez forman parte del Parque Metropolitano de Santiago, el parque urbano más grande de Latinoamérica y uno de los más grandes del mundo, con más de 722 hectáreas de extensión. En él podrás visitar el Santuario de la Inmaculada Concepción –en la cima– y el Zoológico Nacional. El Cerro se convierte en un excelente lugar para observar Santiago y tomar fotografías panorámicas, si el tiempo acompaña.
