Recipe of the month Carrot, Tomato and Lentil Soup Serves 4 Ingredients 2 tbsp extra virgin olive oil 1 large yellow onion, sliced 2 carrots, diced 2 cloves garlic 1 tsp ground ginger 2 tsp ground cumin 2 tsp ground coriander seeds 1 cup red lentils 28 oz (420g) canned tomatoes 6 cups vegetable stock 1 1/2 tsp salt 1/2 tsp black pepper, freshly ground Greek style yoghurt, to serve (optional) Directions Peel and crush garlic and set aside. Leaving crushed or minced garlic for at least 5-10 minutes after crushing helps maximize its
health-protective effects. While health-promoting compounds are forming in crushed garlic, heat olive oil in a large nonstick saucepan over medium heat. Add onion and cook for 3 minutes, stirring occasionally. Add stock, lentils, canned tomatoes, carrots, ginger, cumin, coriander, salt, and pepper, and bring to boil. Cover pot and let simmer for 25 minutes over medium heat.

Add garlic and let simmer for another 5 minutes. Working in batches, purée soup in a blender or use an immersible hand blender to process soup until smooth. Spoon soup into bowls and top with a generous dollop of yoghurt.

"What if you could prevent even one family member from hearing the words, "You have breast (or any) cancer? Would you do it if it meant that you would simply have to give a small blood sample, provide a waist measurement and fill out some surveys about your lifestyle and behaviors? If your answer is yes, then please accept my invitation to participate in the American Cancer Society’s latest grassroots research initiative, Cancer Prevention Study-3 (CPS3). CPS-3 is a long-term research study to help better understand the lifestyle, environmental and genetic factors that cause or prevent cancer and to ultimately eliminate cancer as a major health problem. Did you know that more than 66 percent of people who are diagnosed with cancer live at least five years after diagnosis? Just 30 years ago, only 50 percent of those diagnosed with cancer had that chance. Yet the increase in survival is not a coincidence; the American Cancer Society has invested billions of dollars in cancer research over the past 63 years. It is because of this lifesaving research that millions of survivors are here with us today.
You now have an opportunity to be a part of a new research study that will save lives. CPS-3 will enroll at Martin Health System on August 23-24, 2013. Here is what you can do: men and women between the ages of 30 and 65 who have never been diagnosed with cancer can enroll in CPS-3. As part of enrollment, you will simply fill out a comprehensive survey packet about your health history, provide a small blood sample (to be collected by trained phlebotomists) and provide a waist measurement. Your long-term commitment to the study means you are willing to complete periodic follow-up surveys sent to your home, for the next 20 to 30 years.
