Food in Cornwall isn’t just a good pasty, it’s everything from artisan doughnuts to Cornish and Italian infused small plates. Flourishing vineyards and ice cream parlours are just a country lane apart and there’s an independent bakery to suit every appetite. A land of foodie entrepreneurs thrive here with street food pop ups, feast nights and celebrity chefs all calling Cornwall their home and inspiration. In our guide you’ll find a selection of hidden gems and new places to discover, from events to evening dining, all across the county, because if there is one thing the Cornish know how to do, it’s eat well! Classically Cornish SAFFRON BUNS

Despite its exotic and affluent heritage, saffron has long been associated with Cornish cuisine. Originating from the plant, Crocus Sativus, an indigenous plant from the East, the Romans first brought saffron to England where it became a widely popular and used spice. In Cornwall, a principle trading point for tin, merchants would trade the metal in exchange for saffron and other goods. However, the popularity of saffron soon waned when the 18th century saw a decline as other spices and dyes began to arrive in England. Fortunately, Cornwall still used saffron in abundance and the Cornish Saffron bun and cake are often regarded as the saviours of saffron in Britain. The Cornish Saffron Cake is entirely produced in Cornwall and saffron is even grown in very small parts of the county to this day.

Bude Food Festival

Friday 20th – Sunday 22nd September Budelicious is a new foodie festival bringing a showcase of local artisan food and drink to the grounds of the Falcon Hotel in Bude. From street food vendors to demonstrators and marquee full of treats this culinary celebration is designed to bring the best and brightest of Bude’s food and drink producers to the front row. Opening with an evening of beer and cheese in the marquee on Friday, the weekend will continue to be full of food and entertainment across the picturesque grounds of the hotel. There are plenty of

family activities and evening entertainment along with live music. Don’t forget, from the 14th September the entire of Bude will be celebrating a Foodie Fortnight, look out for the Budelicious logo in the windows of local restaurants, pubs and cafes to see who is taking part. Flour Power Pizza Parlour

If the name isn’t enough to get you hunting down this pop up, then perhaps the artisan pizza’s will be. Owners and chefs, Rebecca and Simon, trained in Italy to become professional pizzaiolos in Florence and make their pizza using healthy, multigrain dough that they rest for at least 72 hours. From flavours such as Cornish salami infused with seaweed and cider to a classic margherita full of mozzarella, basil and tomato. Kern of Kernow

Driving around Cornwall in a 70s French transporting van named Beyonce, Kern is all about good bundt cakes and good coffee. Owners and cake creating twins Kris and Maren were born and lived in Germany until they were ten and combine their German roots with their Cornish food. Where to find them: You’ll often see Beyonce parked up around Padstow’s Camel Trail but also at dozens of farmers markets, events and pitches. PAN FRIED MACKEREL

I love listening to my grandmother’s descriptions of mealtimes during her childhood. She spent her youth in St Ives and has an ancestry of miners and fishermen to her name. Born in 1939, her earliest years were spent on rations during World War 2, but one of her fondest memories was of her mother pan frying mackerel freshly caught by her father that day. Unlike many wartime towns and villages who struggled to have meat and fish, Cornwall benefitted from easy and cheap access to nutritious and protein packed fish and mackerel was the most common catch of the day. Fried whole in butter or lard with salt, it is still one of her most favourite fish types to eat, although nowadays it’s become slightly more refined. Four fillets in a hot pan with butter, shallots, plenty of salt and pepper and a sprig of thyme and you’re onto an instantly classical Cornish dish .

PockeTful of Stones DISTILLERS Pocketful of Stones was born in the cellar of a pub in London. Sat around a tiny copper still, two brothers tinkered with gin recipe after gin recipe. The dream was to get back to their roots, the outdoors and the ocean and produce something they were both passionate about. Caspyn was born. The passion hasn’t died and the summer of 2019 is seeing two new gins being released. Marmalade Old Tom and Dandelion and Burdock Gin are both contemporary gins with a traditional backbone. The Old Tom style came about in the second gin craze in the eighteenth century and although it was then to cover up unscrupulous distilling methods it is now a delicious style in its own right. Perfectly suited to the citrus tartness of Seville Orange the Marmalade Old Tom is a refreshing gin, ideal on a warm summers day, sat in the sun, friends, family, bbq, more gin...... The Dandelion and Burdock is a traditional London dry style gin, earthy notes from the Dandelion and burdock root lead to a complex floral aftertaste. This is achieved by using locally sourced heather and South African fynbos from, well, a little further afield. The boys down at Pocketful of

Stones Distillery just outside Penzance are not resting on the laurels and only making gin. There’s also absinthe, cider brandy and whisky being produced, feel free to contact them if you’d like to pop in and see what they are doing. Classically Cornish THE SPIDER CRAB

An often-underrated member of Cornwall’s crustacean community, the spider crab is a large spikey creature commonly found around Cornish coastlines. Potting for crabs has minimal impact on the environment and spider crabs are in an abundance in Cornwall, making them one of the more sustainable seafood options for local communities, however the majority caught is exported to Spain. The claws are full of delicious white meat that is regarded as a prized delicacy in France and Spain, so the next time you’re in Cornwall and you see spider crab on the menu, do your bit for the environment and your appetite and give it a try!

Every Wednesday between April and October you can enjoy a Grand Tour and Tasting experience led by a winemaker followed by a fun tasting session of their most famous wines, all for £18, there are Guided Tours for £9.50. The Cornish Fairing

Because we’re a county that likes to put our own spin on things, you’ll also know the Cornish Fairing as a ginger biscuit. The difference between the traditional ginger biscuit and the Cornish Fairing is that you’ll find spiced ginger in the fairing, which became famous during Victorian times. In 1875, a man named John Cooper Furniss obtained a large store in Truro and premises on Duchy Wharf and installed ovens for biscuit manufacturing. He introduced several new kinds of biscuits and also a penny box of sweetmeats with every box containing a small piece of jewellery. The boxes became huge success’ and were demanded nationwide. In 1886, Furniss started selling Cornish fairings in his tea room at Truro and they were so popular that he started selling them via mail order. Furniss Foods went on to crate many other fairing varieties, from orange and lemon to apple and cinnamon. In the 2000s it was bought by Proper Cornish, a pasty manufacturer, which focused the company’s production on the Cornish fairings and a few other products. Today the Cornish Fairing is still a staple biscuit in many Cornish homes and a must-try for visitors, even Rick Stein is a fan!

This spring, Tom opened his fifth bakery shop in St Austell, selling his full range of organic sourdoughs, speciality breads, cakes and pastries, pleasing locals and visitors alike. A real hidden gem at The King Edward Mine, The Croust Hut is a café/bistro serving a range of delicious breakfasts, lunches and cream teas, the Croust House offers seasonal Cornish produce in a bright and welcoming atmosphere. Part of the King Edward Mine Museum site, you can explore this unique Cornish heritage trail and see some of the historic spots before sitting down to refuel with their Cornish coffee and (seriously good) cakes. MAKE TIME FOR MARKETS! Farmers Markets are relatively easy to find in Cornwall, it’s a common tradition many of us take for granted. The usual benefits from shopping at Farmers Markets are ones we have all heard before: it supports our local community, small business’ as well as offering homemade, organic produce. It’s amazing what you can discover food-wise at a market and in today’s consumer conscious society, Farmers Markets are becoming more popular than ever as people are starting to realise it’s not just about fruit and vegetables. Now the amount of small, niche foodie business popping up and serving Cornwall’s farm shops and markets are in an abundance. From Cornish chilli flakes, freshly baked luxury donuts, sourdough loaves, vegetarian delights and vegan treats, Farmers Markets have become a stage for the underbelly of Cornwall’s pioneering and varying food entrepreneurs to show off their creations. In the last ten years, supermarkets in Cornwall have risen by a third. Now, this small county is home to around 62 supermarkets, some just several hundred yards from one another. Six supermarkets can be found in the St Austell and Truro area and six more in the Bodmin region. In Penzance, you’ll find a Sainsbury’s, Morrisons and Tesco all within one mile of each other. An unnecessary surplus of supermarkets are beginning to dominate small areas in Cornwall and whilst supermarkets are a necessity for many people, the sheer number of big name brands fighting for customers in hyper local areas seems somewhat excessive. So, with summertime in full swing, barbeques being well under way (regardless of the weather) and Cornwall’s many artisan bakers, butchers, growers and dedicated farmers making the most of the fine weather, take some time to check out a market of farm shop near you and do your bit to support Cornwall’s local produce!

RATHLEE DISTILLING COMPANY Rathlee’s Cornish Rum is column distilled in Latin America before arriving on the shores of Cornwall in charred white oak barrels, to be delicately blended with the purest Cornish water. Smooth on the palate with notes of tropical fruit, honey and vanilla, and a warm pepperyspice finish. RUM & COFFEE TONIC • 50ml Rathlee’s Cornish Rum. • 120ml Tonic Water. • 25ml Cold Brew Coffee (Colombia). Combine the rum & tonic over ice into a highball glass.
