EDITOR’S NOTE

a season of giving

W

hat a whirlwind -- the holidays are here, and a new year is just around the corner! It was only a year ago that I decided to create website mollymy.com and had no idea I would be launching a magazine shortly thereafter, let alone a third edition! But, here we are...

I want to start this note by expressing my gratitude to three incredible partners -- Kimberly, Vanessa and Elizabeth. They have made the magazine what it is today and given me the ability to pursue my passion. The holidays are a great time of year to reflect on those who have influenced where you are, and where you are headed; these three incredible ladies deserve every bit of recognition for their endless support and many talents. This issue is a special one, packed with all the important stuff -- friends, food, crafts, good health, and balance, including ways to give back to others, but most importantly, yourself. There is no doubt that the holidays can be draining, but my hope is that this issue will remind you to enjoy life’s simple things and find a balance between giving to others and giving back to yourself. Take a moment to reflect on why we do the things we do during the holidays, even the simple things, like making a recipe. Try to not just approach the task, but rather to approach the outcome, which is helping someone, remembering someone, thanking someone, or doing something you truly enjoy. Recharge your soul by doing what you love, this will enable you to enter the new year with a renewed sense of purpose and energy. That new year’s resolution you make doesn’t need to be based on undoing something negative, but instead can be about doing more of something positive, for you. Think less about what others think you should do, and more about what you want to do. For me personally, I spent a lot of my post college years trying to please others and forgot about myself; whether it was a job, a social circle, or simply how I spent my free time. This year, I did exactly what I really wanted and I’ve never found more happiness, or success. The holidays are what you make of them -- enjoy this time; worry less, and smile more. Live in the moment, and cherish each day and those around you. As always, thank you to readers for encouraging me to live in the now, and to follow my heart each day. It is with much joy that I start a new year with all of you -- I cannot wait to see what 2016 holds, and where this next year will take each of us.

how to maintain stable blood sugar during the holidays

The holidays are here, and a sweet new year is just around the corner! Delicious food is a way to celebrate wonderful times, and as important it is to take time to indulge and celebrate, it’s equally important to arm yourself with information to a healthy holiday season (I’ll explain). I’m thrilled to share some of my favorite holiday recipes with you, ones that are nutritious, and delicious; let’s get started. One of the biggest culprits during this time of year can be sugar — so, let’s define some of the terminology to gain a better understanding of what happens in the body when we consume sugar — because let’s face it, we can’t make educated choices if we simply don’t understand.

BLOOD SUGAR: Blood sugar, or glucose, is our main source of energy. It

dictates how hungry and energetic we feel. Blood sugar is produced when we breakdown any carbohydrate — from quinoa to cake. The key idea with respect to blood sugar is balance. We feel best and lose fat when our blood sugar is balanced: not too high, and not too low.

INSULIN:

Our pancreas creates a hormone called insulin that is released into the bloodstream to regulate blood sugar. Insulin picks up blood sugar and transfers it to our cells to maintain a normal range. When we eat sugar (or other carbohydrate-rich foods that are quickly processed into blood sugar) the pancreas goes into overdrive to produce the insulin necessary for all the new blood sugar to be stored. This insulin surge tells our body that plenty of energy is available, and that it should stop burning fat and start storing it. Our body is then in a fatstoring state.

HIGH & LOW BLOOD SUGAR:

THE BLOOD SUGAR FAT STORAGE CYCLE Hi Glycemic Meal

We can use this information for

Low Blood Sugar

Low blood sugar (reactive hypoglycemia) or a crash occurs when the insulin surge causes too much blood sugar to be transported out of our blood. This can leave us feeling tired, hungry, weak, shaky, lightheaded and anxious. As a result, we crave sugar and carbohydrates thinking they will pick us back up. In reality, they start the cycle all over again. And, in the process, our body stores more fat. High blood sugar (hyperglycemia) occurs when the insulin is unable to transport enough blood sugar out of our blood.

helpful tips to keep in mind

ALWAYS INCLUDE THE #FAB4 The easiest way to stabilize blood sugar within the normal range is to eat fat, protein, fiber and greens at each meal. At Be Well by Kelly, we call this eating the #fab4. Aim to eat 25-35 grams of protein per meal, paired with 2 tbsp. of fat. These metrics will help you avoid snacking and bridge from one meal to the next without a dip in blood sugar. Also, eat fibrous green vegetables that keep you full and satiated, such as broccoli, asparagus or mixed greens.

FAT: Fat has less impact on blood sugar than carbohydrates. When consumed alone, fats have no effect on circulating blood sugar. When eaten with a meal, fat slows the absorption of your meal, which helps you to avoid steep spikes (this explains the surge in high-fat, low-carb diets, like ketosis).

PROTEIN:

Protein keeps blood sugar levels steady. When consumed alone, protein does not generate a rise in blood sugar. However, do not eat protein in excess, otherwise it may be converted into glucose (gluconeogenesis).

FIBER: Like fat, fiber slows the absorption of nutrients, specifically glucose. Natural sugars found in vegetables and fruit are delivered to us in a fiber “package” to slow the absorption of sugar. Vegetables and fruit are best eaten in their whole state.

GREENS:

By adding greens or deep colored vegetables you’re adding vitamins and minerals to your diet. Another bonus: magnesium found in green vegetables has been proven to increase insulin sensitivity, which is good for regulating blood sugar.

THE KEY IS TO EAT Don’t starve yourself! Not only does starvation cause the production of stress hormones, like cortisol, that prevent weight loss, but the resulting low blood sugar causes our body to go into a muscle burning state, ultimately lowering the metabolism. The key is to eat! Trying to eat less and lose weight only works in the short-term and does more damage to your metabolism in the long-term. Instead of eating a mini-salad with a tiny portion of protein, go for a grass-fed buffalo burger lettuce wrapped with avocado. At Be Well, it isn’t about skipping meals or eating less. Instead, we simply focus on what to eat to keep your body in its natural balanced state, i.e. fat burning, cleansing, nourishing.


LIMIT SIMPLE CARBOHYDRATES START YOUR DAY OFF RIGHT Breakfast is the most significant way to set yourself up for a balanced day. To ensure you are getting enough protein, fat and fiber, begin with a #bewellsmoothie. This will help keep you full until lunch and keep cravings at bay

You can naturally balance your blood sugar by avoiding simple carbohydrates and hidden sugar. Simple carbohydrates include various forms of sugar (look for words ending in “ose”), such as sucrose (table sugar), fructose (fruit sugar), lactose (dairy sugar) and glucose (blood sugar). They can be metabolized quickly and are therefore most likely to cause an insulin surge. This is why it is possible to feel hungrier after you drink a 100% fruit smoothie than after you eat an egg omelet — the subsequent fructose crash will have you craving and eating more throughout the day.

MAKE A DATE WITH THE SANDMAN Get good sleep, those 8 hours not eating and resting will help bring blood sugar back to a healthy state.

WATCH OUT FOR HIDDEN SUGAR: It can be frustrating to clean up your diet and not see results. “Hidden” sugar can be everywhere and may be the culprit. Check the nutrition information on everything you buy and eat. Processed foods: There may be sugar in processed foods like bread, ketchup, salad dressing, canned fruit, applesauce, peanut butter and soups. Beverages: Sugar can also be present in beverages; especially coffee and alcohol and liquid sugar creates the fastest insulin surge.

Fat free foods: Sugar is often used to replace the flavor that is lost when the fat is removed. Juices: Watch out for 100% fruit products that contain concentrated fruit juice or fructose. Juicing your way through the holidays really just means a liver full of fructose and muscle loss (fructose is 100% metabolized in the liver).

The holiday’s can be hard with excess champagne, cookies, chocolate and cake. Monitor how you respond to simple carbohydrates and add fat or fiber to your snack or meal to decrease spikes and crashes. If you decide to indulge, do so mindfully and remember that those aftershock cravings are just caused by excess insulin; so drink water, eat fat and protein, go workout to burn off the sugar rush and sleep off the alcohol.

SWEET POTATO MUFFINS

For the Muffins •

2-1/2 cups gluten-free all-purpose flour

1-1/2 teaspoons baking powder

1/2 teaspoon table salt

1/4 teaspoon baking soda

1/4 teaspoon ground nutmeg

2/3 cup plain goat kefir

1/2 cup sweet potato puree (from 1 baked potato)

1 teaspoon vanilla extract

1 stick unsalted butter, room temperature

3/4 cup coconut sugar

2 eggs

For the Topping •

1/2 cup coconut sugar

2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

1 stick unsalted butter, melted

How To In a medium bowl, combine gluten-free flour, baking powder, salt, baking soda and ground nutmeg. Set aside. In a large pouring vessel combine Kefir, sweet potato puree and vanilla extract. Set aside. In a large bowl, cream unsalted butter at room temperature and coconut sugar with an electric mixer, until fluffy. Add eggs, one at a time, beating well after each addition. Alternately mix in dry and wet ingredients into the butter, starting and ending with the dry; mix only until each addition is incorporated, do not overmix. Coat a muffin pan with nonstick spray and fill muffin cups 1/2 full. Bake in a 350 degree oven for 20 minutes, or until a toothpick inserted into the center of the muffin comes out clean. While muffins are baking, in a shallow bowl, combine coconut sugar, ground cinnamon and ground nutmeg. In a separate bowl, melt 1 stick of unsalted butter. When the muffins are cool enough to handle, yet still warm, remove muffins from the pan, brush them completely with the melted butter, and roll in the sugar mixture to coat. WINTER 2015

KALE SALAD For the Salad • • • •

4 cups chopped kale ½ cup pecans ½ cup goat cheese 2 pears diced

Dressing • • • • •

1 cup cranberries 1/2 lemon juiced 2 tbsp honey 1 tbsp champagne vinegar 4 tbsp olive oil

How To In a large bowl add kale, pecans, gorgonzola goat cheese and diced pears. In a sauce pan add cranberries, lemon juice and vinegar. Simmer for 10 minutes. Add honey and olive oil and whisk while it continues to simmer for 2 -3 minutes.

Pour cranberry mixture into a blender and blend until creamy. Place in the fridge. Toss salad with dressing when cool.

1 tbsp coconut oil 1 cup organic cane sugar 2 cups coconut sugar 3 tbsp cinnamon 1/8 teaspoon salt

How To Wipe the inside of your slow cooker with coconut oil to coat. In a large bowl, add the sugar, coconut sugar, cinnamon, and salt. Whisk together. In another large bowl, add the egg white and vanilla and whisk until frothy. Pour the almonds in the egg mixture and toss them around to coat thoroughly. Pour the coated almonds into the sugar mixture and toss to coat. Pour the entire mixture into the slow cooker and turn to low. Cook for 3 hours, stirring every 20 minutes. After 2.5 hours, pour in the Âź cup of water and stir well. Leave in the slow cooker for another 20-30 minutes. At 3 hours, pour almonds on the parchment paper and let dry.

10 eggs 1 cup chiffonade spinach 1 cup chopped red pepper ½ cup shredded raw goat cheddar 2-4 pieces of cooked bacon

How To Preheat oven to 350 degrees. In a large bowl, whisk 10 eggs. Add spinach, shredded cheese, bacon and red pepper and mix to incorporate. Grease muffins tins and fill each cup 2/3 of the way to the top. Cook for 20 minutes.

How To In a saucepan, combine wine, cinnamon sticks and honey. Dip the bag of mulling spices in the pot like tea bag. Heat through. Pour in mug and garnish.

FLOWER CROWN How-To Make Wearable Multi-Purpose

Traditional vases aren’t the only way to display festive blooms on your table during the holidays. Impress your guests with a handmade, fresh flower crown or garland centerpiece to spruce up a place setting this season. Solo, or with friends (it’s a great excuse to host a DIY party!) follow these steps below to create your very own flower details.

what you will need:

Seasonal or holiday themed blooms of your choice, such as red roses, hypericum berries, ilex berries and various greenery Florist tape & wire 2 yards of ribbon 22-24 inch strand of craft wire that will serve as the base of your crown

Flower Crown: Cut a piece of craft wire that will go around the circumference of your head (generally about 22-24 inches)

Flower Garland: Use a longer piece of craft wire (measurement dependent on the desired length of the garland)

Cut the stems of the flowers and greenery into 1.5-2 inch pieces

begin creating your crown or garland by wrapping your first cut flower or piece of greenery to the craft wire with florist tape, starting about 2 inches from the end of the wire. TIP: I like to use 6-8 inch pieces of florist tape as longer pieces can be more difficult to maneuver. You can just rip or cut the tape as you need another piece.

continue adding in the cut flowers and greenery 1-3 pieces at a time and in the pattern of your choice. Wrap each piece or bundle to the craft wire with florist tape 2-4 times around. You can create a fuller look by placing the flowers close together or spread them out for a more delicate look.

when you’re ready to add in larger blooms such as the red roses shown here, you can wrap them to the craft wire using florist wire first before covering the stem and wire with florist tape for additional security.

Oh the holidays…

A foodie’s dream and the thing that probably invented that butterfly feeling. Or it could just be my stomach growling from the obsessive holiday cravings. Okay, if I haven’t scared you off yet, then you have come to the right place! I’m all about giving into cravings and doing it the best way possible, with a healthy, high quality alternative that leaves out the guilt (and the gluten, dairy, grains and refined sugar) but leaves you with all the flavors of the real thing. Holiday treats are a staple for most this time of year and just because you want your food to be nourishing, doesn’t mean you can’t partake. With that said, I have some festive recipes to share, a couple of my favorites that are easy to make, have a little more spice (literally) than the average, and even a superfood boost.

3 cups blanched almond flour 1 tablespoon organic ground cinnamon 1 1/4 teaspoon organic ground ginger 1/4 teaspoon real salt 1/2 teaspoon baking soda 1/4 teaspoon organic cloves 1/4 organic coconut oil, melted 1/4 cup organic raw coconut nectar 1 tablespoon organic vanilla extract 1/4 cup yacon syrup 1 organic free-range egg 1 teaspoon organic lemon zest 1/2 teaspoon organic fresh ginger, grated

How To: Preheat oven to bake at 350 degrees and line 2 baking sheets with parchment paper and set aside. In a large bowl mix almond flour, cinnamon, ginger, salt, baking soda and cloves. In a medium bowl whisk together the melted coconut oil, coconut nectar, vanilla extract, yacon syrup, egg and lemon zest Pour the wet ingredients into the dry and mix until fully combined and cover the dough and let chill in the freezer for 8 hours. Transfer the dough onto a piece of parchment paper and cover the top with another piece of parchment – if the dough seems to be sticking too much you can sprinkle it with almond flour. With a rolling pin roll out the dough until it is about 1/2 inch thick. Remove the top sheet of parchment paper and using a gingerbread man cookie cutter – to prevent sticking dip the cookie cutter in old water after each time. Transfer the cookies onto the lined baking sheets leaving 2 inches between each cookie and bake for 8-12 minutes. Let the cookies cool for about 30 minutes before removing them from the baking sheet and decorating.

chocolate coconut superfood fudge What You’ll Need: • • • • • •

• •

3 cups raw unsweetened organic shredded coconut 1/2 cup unsweetened organic cocoa powder 1/3 cup raw organic coconut nectar 2 teaspoons organic vanilla extract 1/2 teaspoon celtic sea salt 1/4 cup unsweetened almond butter or sunflower seed butter (sweeten yourself with coconut crystals and salt, to taste) 1/4 teaspoon peppermint extract, optional 1-2 teaspoons pro-daily-otic superfood powder

How To: Add the coconut into a food processor and blend on high for 10 minutes, scrape down sides every few minutes. When the mixture becomes runny you will have coconut butter. Add in all remaining ingredients and pulse until everything is evenly combined. Line a small dish with parchment paper and press fudge into dish. Place in freezer for about 10 minutes – remove and cut into squares.

My New Year’s resolution (for the past few years) is to improve my relationship with money. I want to save more, spend more wisely, and feel more abundant. I’m committed to making this new year different than the others and fulfill my resolution. Any advice?

We could spend weeks talking about money and how it works in great detail but, for the sake of getting you on track before the new year, I’m going to cover a few key things that you can start doing now that will greatly change your situation with money.

KNOW THE BASICS

Let’s start out by understanding the principal that money begets more money. If you have ten dollars in your pocket, you will attract $10 situations, opportunities, and ideas. If you have $100, you will attract $100 ideas, opportunities, and situations. Money has a magnetism and it will attract more of itself to itself. The more money, the greater the magnet. So, when you have $1000 in cash on you, you will attract $1000 opportunities, situations, and ideas. See where this is going? Money attracts money.

GET COMFORTABLE

I’m sure at some point a lot of you have had the experience of being in the presence of someone with vast wealth. Think of an Oprah-type of wealth or the closest match you have experienced. These types of people have an energy coming off them that you can just feel. Like it or not, they radiate wealth. And for those of us who aren’t a match to the vibration of vast wealth, it can be unnerving and make us feel out of place being next to them. Often when I work with a client who wants to change their relationship with money, or am teaching a financial mastery class, I’ll place $10,000.00 in someone’s hands. It’s incredible to watch the person’s reactions after I tell them how much it is. The money becomes very heavy and their body language exudes discomfort while holding it. You can physically see they aren’t comfortable with having this amount of money on themselves at that moment, let alone carrying it on a daily basis. It has been scientifically proven that we are all like radio stations broadcasting information. The people above and maybe yourself are broadcasting, “I am uncomfortable with large amounts of money.” So what do you think happens? The universe isn’t going to give any more money than what you are comfortable with having. We live in a world heavily, if not entirely, based on the broadcast and reception of frequencies. You may have

Our bodies are radio stations broadcasting at all times. We have proof of this all throughout science. This is also evident when we meet a new person. Before they even get a chance to open up their mouth, we have a gut feeling about them. This gut feeling is an example of the response we have to the frequencies they give off. The more cash you carry and the greater the amount of cash you are comfortable with, the greater the amounts of money that will be attracted to you. Try it. YOU COME FIRST

Some of the smartest financial people in the world will say that if you only have one money practice it should be to pay yourself first. This act in itself, if upheld, brings about some of the most amazing changes. It basically embeds this signal into your radio broadcast that, “I am most important and need to be taken care of first.” It’s this signal that the universe adheres to. Try implementing a plan that for every dollar that comes in, you are going to take something off the top for yourself.

The key here is to pay yourself first! Before any money goes out to any other place, it goes to YOU.

DRESS THE PART

There is a saying that you should not have anything in your wardrobe that you wouldn’t wear if you were a millionaire. For a lot of us that means throwing everything out except for 4 outfits or less. As extreme and daunting as this sounds, you might think it’s worth it after this next part. The same way large amounts of cash on you at all times can attract more abundance to you, clothes can also have a similar positive or negative effect on your energy. Now, if we actually scaled down our wardrobe to the few outfits that would facilitate us actually having more money in the bank, these outfits would bring about more great situations, circumstances, and opportunities. These clothes would act as a constant signal of:

So, what do you do with that money? Buy something you want? No! Place that money into a savings account that is off limits. The idea will be: the bigger that this account

gets, the more money it will attract into your life.

BE REWARDED

Let’s look at another great money practice. Start asking yourself this question before you make any purchases, “Is this purchase I am about to make profitable?” Let’s clarify the use of the word profitable. What would be considered profitable is anything that brings about an increase in any one or more of the following areas in your life: mental, physical, spiritual, emotional, and financial. If you can answer yes to at least one of these areas, then your purchase would be considered profitable. If you can’t, then you pass! This practice will essentially turn every money decision you make into an investment. It will eventually decrease the bad decisions you make with money and begin to grow your wealth. It’s those who show restraint, make sound decisions, and have a mastery over their emotions that amass large fortunes. Strive to make only good decisions with your money and be rewarded.

feel incredible, successful, and great looking.” Imagine broadcasting this 24/7 from your body. Imagine all the non-planned situations that could present themselves as a result of this. Imagine being in public and someone, who may not have normally noticed you now has. Other people can’t help but feel like there is something special about you. The “what” doesn’t have to be specific. Just enough to engage them. This new chance interaction leads to a new job, new friend, lover, or opportunity. Why would you not want to give yourself an edge like this? Especially when we never know when we are going to meet a person who may be important in our life.

If you do take this advice and cut your wardrobe down, don’t stress. The act of doing the above mentioned practices are going to bring about a huge influx of wealth that will allow you to rebuild your wardrobe quickly and to a much higher quality level. Mastering money is all about being aware of and vibrating at the right frequencies. When I help people to amass their fortunes, I always start them off with these simple principals. It’s these principals that act like a life jacket by keeping you afloat at an abundant higher vibration. Then, at some point, your core frequency will be a match to massive wealth. If you can just jump in and commit to all of the above mentioned practices, at some point you will find yourself feeling more deserving of financial wealth and actually having it. These practices are cheats for us to get to the place where we actually radiate the wealth and success from our core and that is an incredible place to be.

What You’ll Need: • • • • • • • • •

3 cups unsweetened vanilla almond milk 1/2 cup chia seeds pure maple syrup, to taste (about 2 tbsp, or more) pinch of sea salt crushed ginger snaps gingerbread men all-natural cranberry sauce finely shredded coconut flakes raw pecans, chopped

Place chia seeds, almond milk and maple syrup into a large bowl and mix well to avoid clumping. Cover the mixture and refrigerator overnight (or a minimum of 2 hours). Remove from the refrigerator and stir well; set aside.

CHOCOLATE BARK By Elizabeth Palmer Starnes This recipe is so versatile — and simple enough you don’t even really need a recipe. You can add any combination of nuts, chocolate, and even peppermint candy canes into the mix. Try the combinations below to get you started. Simply melt 2 bars of your favorite chocolate, and pour into a baking sheet lined with parchment paper. Then evenly sprinkle over the toppings, and that’s it! Then, refrigerate or freeze the chocolate bark to set, break into pieces, serve, or package it up and gift it. One thing we just can’t get enough of is utilizing little spaces as vignettes for entertaining — picturesque and typically pretty simple. New Year’s Eve is no exception, so we enlisted one of our favorite party gals, Jessica Deans of PaperFoxLA, a handmade paper party decorations shop based in Los Angeles, to help us come up with something special this New Year’s Eve.

Anything that involves glitter, champagne, and friends is right up my alley, and New Year’s Eve is such a fun time for all of that. If you’re hosting a New Year’s Eve celebration this year, I recommend incorporating a picture-worthy space dedicated to cocktails; this bubble bar is just that. And bonus: the defined space makes for easy clean up. Whether entertaining space is big or small, this can help add that perfect festive touch. We created a modern take on NYE with some less than traditional colors and our gorgeous handmade tassels, alongside vintage and eclectic barware pieces.

he process started by using a sequin table cloth, then we adorned our bar with vintage and eclectic cups and trays. Some of these pieces are heirlooms and others can be found at Love Detailed. The key to making your bubble bar stand out is having a statement backdrop. We used paper fans and honeycombs to really make it a focal point (you can purchase the garlands and fans on our site)! Using silver glitter card stock, we cut out star shapes for our drink stirrers then hot glued them to bamboo skewers. We also scattered glass baubles and ornaments around the glasses and trays to make the scene extra festive. Just remember not to crowd your bar too much! Focus on a few key elements so it doesn’t overwhelm the space. Most importantly, have fun and get creative.

holiday RECIPES lightened up

Our Recipe Features Editor, Elizabeth Palmer Starnes shares her favorites of the season — yummy additions to any holiday menu.

FRENCH ONION SOUP

gluten-free & vegan

Serves 2 generously Total Time: 1 hour

Ingredients: • • • • • • • •

3 tbsp. olive oil 8 yellow onions 1 1/2 cups white wine 10 cups vegetable stock (homemade if you can!) 5 cloves garlic 2 springs fresh thyme, leaves stripped and minced Kosher salt & black pepper to taste Vegan parmesan cheese to taste (found at most health food stores)

Directions:

Peel the onions, and slice them thinly into half-circles. While you’re doing this, heat the olive oil over medium heat in a large soup pot. Add the chopped onions and sauté until softened and starting to caramelize. Once the onions start to really brown, add 1/4 cup of the wine to deglaze the pan. Repeat this process, letting the onions brown and the wine absorb, before adding another 1/4 cup of wine to deglaze again. (You’ll end up doing this five times to use up all the wine). Mince your garlic cloves, and add to the onions, stirring to combine. At this point the onions should look caramelized and golden brown all over. When you taste a spoonful, it should taste slightly sweet, with no bite to the onions. Add the vegetable stock, and stir to combine. Bring to a boil, then reduce the heat and simmer, covered, over medium low heat for 30 minutes (or longer if you’ve got the time). Add the minced thyme, stir everything together, and season with salt and pepper to taste. To serve, ladle the soup into bowls, and top with vegan Parmesan if using. Sip slowly and feel better!

vegan MAC N’ CHEESE

Active Time: 20 minutes | Inactive Time: 1 hour Makes about 2 cups of sauce

Ingredients: • • • • • • • • • • •

½ cup cashews, soaked in hot water for 1 hour 1 medium size sweet potato 4 carrots 4 cloves garlic ½ cup almond, soy, or any non-dairy milk ½ cup nutritional yeast (try Braggs) 1 tablespoon honey or agave syrup Salt and pepper to taste Red pepper flakes, to taste (optional) Vegan Parmesan cheese, to serve (optional- or use regular Parmesan, we won’t tell anyone!) Your favorite pasta, to serve

Note: You can also toss this creamy sauce with cooked vegetables, cooked quinoa, or serve with chips, guacamole, and salsa for a faux-nacho dip.

How To:

To make the casew cream, drain the soaked cashews, and add to a highspeed blender. Add ¼ cup of water, and blend until smooth and totally creamy. Scoop out of the blender, and set aside. Bring up a large pot of water to a boil and add a tablespoon of salt. Slice the sweet potato and carrots into thin slices. Add the sweet potatoes, carrots, and garlic to the pot, and boil for 5-8 minutes, until tender. Drain the vegetables, and add to the high-speed blender. Add the cashew cream, milk, nutritional yeast, honey, and a pinch of salt and pepper to the blender. Blend on high until totally creamy and smooth. Season to taste with salt and pepper, and add a pinch of red pepper flakes if you want a little kick. If you want the sauce to be thicker and cheesier, add a few more tablespoons nutritional yeast. If you need to thin it out, add a bit of water or milk. Toss with your favorite pasta, sprinkle with Parmesan cheese if using, and enjoy!

(WITH KALE, MUSHROOMS, BUTTERNUT SQUASH, & MAPLE TAHINI CASHEW CREAM)

5 big handfuls of chopped kale 1 bag frozen butternut squash cubes (or peel and chop your own) 1 bag frozen pearl onions 4 cups mixed wild mushrooms 3 cups cashews

2 tablespoons tahini paste 2 tablespoons maple syrup 1 package extra firm tofu garlic (a few cloves) cayenne pepper salt and pepper (to taste)

How To:

Kale Sauté 5 big handfuls of chopped kale in 1 tablespoon of coconut oil (or olive oil) until wilted. Season to taste with salt and pepper. Add in some chopped garlic if you like, for an extra boost of flavor (and a boost for your immune system). Butternut Squash Preheat your oven to 400. On a sheet pan, toss together 1 bag of frozen butternut squash cubes and 1 bag of frozen pearl onions. Drizzle over some olive oil, salt and pepper, and roast until everything is tender and golden brown in parts (15-20 minutes). Mushrooms Heat 2 tablespoons coconut oil (or olive oil) in a pan, and add roughly 4 cups of mixed wild mushrooms (they’ll cook down significantly). Sauté over medium heat for 6-8 minutes, until just tender. Season to taste with salt and pepper. Maple Tahini Cashew Cream Soak 3 cups cashews in water for as long as you have (30 minutes at the least, overnight at the most). Drain the cashews, and add to a high power blender with 3/4 cup water, 2 tablespoons tahini paste, 2 tablespoons maple syrup, and 1 clove raw garlic. Blend until smooth, adding more water if needed to make a smooth consistency. Season to taste with salt and pepper. Spiced Tofu Crumbles Heat 1 tablespoon coconut oil (or olive oil) over medium heat, and crumble in 1 package of extra firm tofu. Add a few shakes of cayenne pepper, and cook until the tofu has dried out and begun to crisp (4-6 minutes, depending on how dry your tofu was to begin with). Season to taste with salt and pepper.

To Serve:

Serve over a bit of your favorite grain (try quinoa, brown rice, whatever you like), with some sprouts, and dollop over a spoonful of the cashew cream. Sprinkle with some chopped fresh herbs if you like (try parsley, basil, or chives), and some hemp seeds or chia seeds for an extra protein boost.

This simple and healthy salad transforms vegetables into a warming and comforting meal perfect for cold winter nights. Roasting your humble everyday carrots gives them a sweet, caramelized flavor that pairs perfectly with the creamy avocado and meaty cashews. If you think salads are boring, give this one a try- you’ll be surprised!

1 lb. carrots, peeled and cut lengthwise, then in 1/2 3 tbsp. olive oil 1 tsp. agave (honey if you’re not concerned with keeping it vegan} 6 sprigs fresh thyme, leaves stripped off 2 cloves garlic, minced

3 ripe avocados 1 cup roasted cashews 4 handfuls butter or baby romaine lettuce Juice from 1/2 orange Lemon & olive oil, salt & pepper, to taste

How To:

Preheat your oven to 400 degrees. In a roasting pan, toss the carrots with olive oil, salt, pepper, agave, and thyme leaves. Spread evenly in the pan and roast in the oven, tossing every 15 minutes, for 45 minutes to an hour, until the carrots are tender and turning golden brown at their ends. In the last 10 minutes of cooking, add the minced garlic and toss to combine. Remove the carrots from the oven and allow to cool slightly. In a shallow pan, toast the cashews over medium low heat until golden brown and fragrant, 3 to 5 minutes. Halve and peel the avocados, and cut into strips lengthwise. Squeeze some lemon over the avocado to prevent them from browning. In a large bowl, toss together the lettuce, carrots, avocado, and 1/2 the cashews. Squeeze over the orange juice, lemon juice, and olive oil to taste, starting slowly and adding more as needed. Season with salt and pepper, and toss everything to combine. Plate the salad into four shallow bowls, and top each serving with the remaining cashews.
