Kitchen Specials Chef Timothy Hollingsworth got quite the achievements for a 32 year old. The Thomas Keller protegé and James Beard Award winner left his post at the 3 Michelin Star restaurant, French Laundry two years ago to continue his journey in the culinary industry, with On the Rocks. His creative vision in fine dining helped us establish a variety of menu that is not only tastes great, but also interesting. Our menu changes every two months to keep things interesting and innovative. For our current menu, Chef Hollingsworth and On the Rocks bistro team went with a celebration of classic dish, reinpretated in a modern and creative way. Our appetizers for this month consisted of vegetarian menu or simply vegetable garnished menu, while our main course explores variety of meat dishes, ranging from tartare to porterhouse. We stick to the classics with a little bit of twist for the dessert to keep our menu well balanced. Below are Chef Hollingsworth picks of the month.

Crepê Mikado

Unlike most of our appetizers on the current menu, this dish emphasizes more on the protein rather than the veggies. Served with lobster, American caviar, brioche croutons, enoki mushrooms, and Tennessee ham vinaigrette, our deviled egg is simply one of a kind.

Choice of grilled or sautéed flatfish, served with broccolini, cauliflower purée, and lemonbrown butter sauce. This dish would be a perfect choice for fans of seafood dishes and for those who are looking for a dish that is light but could still fully satisfy your hunger.

Our version of steak tartare is served with egg yolk on top, mixed greens with Champagne vinaigrette, and rye toast. We selected the finest and the most hygenic meat in USA and prepared it in the classic way with a little bit of twist. It is a perfect choice for meat lovers.

Our classic French style crepê is served with homemade custard vanilla creme and chocolate sauce. The sweet dish is a popular choice among Parisien. The right amount of sweetness makes it the perfect dish to complete your full course meal at On the Rocks.

Bar & Cellar Specials On the Rocks bar serves only the highest quality of alcoholic drinks. Our chief bartender is non other than Dale “King Cocktail” DeGroff, the master mixologist. We also have a cellar filled with hundreds of curated bottles of wine. We only chose the best of the best to lift your dining experience to a whole new level with the perfect wine pairing. This month, On the Rocks bar and cellar would like to start the year with a comfortable and familiar feelings, and yet still feels ‘new’, to show our valued guests what to expect at On the Rocks from this month forward. Below are the chosen wine and alcoholic drinks specials from On the Rocks bar and curated cellar.

Excelsior’s 2008 Cabernet Sauvignon The Cabernet Sauvignon begins with aromas of smoked meat plus smoky plum and other dark fruits along with cedar, baking spice and a little licorice. Tasting the wine shows loads of juicy dark fruit (plum and black cherry primarily) along with licorice and those smoky notes from the bouquet continue. This is a fairly big and bold wine but it is still smooth and easy to drink. On the finish the dark fruit turns tart and resolves into some lingering chocolate notes. (Red Wine • $55}

Classic Bellini Our version of the Italian cocktail came from a light Italian sparkling wine and white peach purée from our homeland, California. The combination of our chosen sparkling wine elevates the light and fruity taste of the classic cocktail. (Classics • $12}

Liquid Tiramisu The fusion of a classic dessert and alcohol creates a perfect sweet tasting beverages for the sweet toothed. Our bartender combined Kahlua, Baileys, melted chocolate, and homemade whipped cream that resulted in a sweet and tasty drink.
