In the spirit of camaraderie with all who have faced medical challenges, I recently dug up a list that I wrote during his 10-day stay at Children’s Memorial (above) in 2011: 1.

he sight of cranes and other construction equipment is certainly nothing new to residents of the Tri-Cities of Batavia, Geneva, and St. Charles, where plenty of new developments have sprung up to transform their formerly sleepy little communities along the Fox River over the past decade. But even by the busy standards of recent years, the pace of activity currently unfolding in St. Charles is something to behold.

“Given the energized development environment here, we enjoy a strong mix of industrial, commercial, and residential development that supports anyone who wants to live, open a business, or just visit St. Charles,” says Mayor Ray Rogina.

That development can be seen on several fronts throughout the city, 16 JANUARY 2019 / NAPERVILLEMAGAZINE.COM

ranging from a downtown upswing to a high-profile restaurant opening to a shopping mall reboot—all of which stand to redefine St. Charles in the years ahead: WEST SIDE STORY A new Wahlburgers restaurant is but one of the residential, commercial, and public projects taking shape on the city’s west side, including the new 250-unit Prairie Winds apartment community, the 78-home Anthem Heights subdivision, a new state-ofthe-art police station on the site of the former Valley Shopping Center, and the Prairie Centre project on the long-vacant St. Charles Mall site, which includes a plan for up to 670 new apartments and prime retail space.

THE DOWNTOWN SCENE As the city’s police force prepares for a move to that brand-new west side facility later this year, its soon-tobe-vacant station will be added to an ongoing downtown overhaul. Plans include the redevelopment of five blocks along First Street to create an urban vibe amid a mix of new restaurants, shops, plazas, and residences, as well as the opening of three new riverfront buildings containing retail, office, and residential components.

CHARLESTOWNE CHEW While plans for a complete mixed-use revitalization of the Charlestowne Mall property—which include building new apartments and townhouses, reducing the size of the main mall building, adding freestanding commercial structures, and refurbishing anchors such as Von Maur and Classic Cinemas—have been floating around for nearly two years, this massive project remains very much in the conceptual stage until deals can be hammered out with developers.

BURGER TIME It’s not often that the most highly anticipated development project in St. Charles is yet another new burger joint. But, then, few burger joints going up in retail parking lots carry the backing of some of the world’s most famous restaurateurs.

In this case, the bold name in question is singer, actor, and celeb-abouttown Donnie Wahlberg, who lives in St. Charles with wife Jenny McCarthy and their family. Wahlberg lobbied his brothers and business partners (actor Mark and chef Paul) to make his adopted hometown the site of the first Illinois outlet of their family-run burger chain Wahlburgers. He’s told the City Council and various press outlets that he hopes the restaurant—which is set to open in early 2019 on a three-acre Meijer outlot at Route 38 and Randall Road—will bring jobs, resources, and reinvestment to the town he and his family have come to love.

Not to mention a great burger, of course.

DUPAGE DEMOCRATS County chairman reacts to monumental shift in local congressional leadership

he reality of breaking the GOP stronghold in DuPage County has settled in, as Representatives Sean Casten and Lauren Underwood head to their offices in Washington, D.C., this month as members of the 116th United States Congress.

“We have finally reached a point that many of us thought would never happen,” DuPage’s Democratic Party chairman, Robert Peickert, says of the midterm election results.

“DuPage County is no longer a red county. DuPage is blue.”

Casten, a Democratic newcomer from Downers Grove, bested longtime Republican incumbent Peter Roskam of Wheaton in the 6th District. In the 14th District, Underwood of Naperville defeated Representative Randy Hultgren of Plano.

With the exception of Bill Foster, who now serves in the 11th Congressional District, the Democratic 18 JANUARY 2019 / NAPERVILLEMAGAZINE.COM

Party has not won the offices of the 6th and 14th districts for decades (see sidebar). George W. Collins was elected in 1970 in the 6th District, and 1933 was the year Chester C. Thompson was elected in the 14th District.

“Prospective candidates were interviewed,” he says, “which was a big difference from the years in the past.”

Casten and Underwood brought their own styles into the campaigns, Peickert says. “Sean had a way of communicating with people and Lauren raised issues that Democrats were overall concerned about.”

President Trump and the demographics of DuPage County influenced the election as well, the Democratic Party chairman says, adding that Casten and Underwood will add to the effort to change the whole atmosphere in Washington when they take office January 3. “Sean and Lauren are willing to work across the aisle with Republicans on issues that are important to voters.”

NAPERVILLE NUANCES Chamber program offers an inside look at the historic and operational structure of the city

recently was invited to join a new pilot program offered by the Naperville Area Chamber of Commerce, Leadership Naperville! Longtime members, as well as those new to the city, spend six weeks getting behindthe-scenes insight into the workings of the city. Whether you are a new resident or a native who has some time on your hands, this can be a great way to find out more about your community. Here are six things I learned:

hanks to the popularity of taking wedding portraits before the ceremony, the time-honored tradition of a groom seeing his bride for the first time walking down the aisle has become more rare. But when Brent Flickinger, 34, and Erica Price, 26, married at North Central College’s Koten Chapel, the Naperville residents both wanted that old-fashioned reveal.

“It was probably the happiest moment of my life,” Flickinger says. “I couldn’t hold back the happy tears.”

The couple said their vows in front of the chapel’s stunning stained-glass window, and instead of lighting a unity candle, they created a unity canvas. “We had our parents dip their thumbs in ink and make a heart, and then we each did one to connect the hearts,” Price says.

Their first dance to the acoustic version of “Latch” by Sam Smith recalled the couple’s early days of friendship after meeting as employees at Ted’s Montana Grill in downtown Naperville.

Their friendship blossomed and soon led to romance. Flickinger proposed in Lake Norfolk, Arkansas, on an annual summer vacation in 2017 with Price’s family. Price’s mother— Naperville magazine sales director Jenni Price—vacationed there with her family as a kid. “Now we all go with my cousins, aunts, and uncles,” Erica Price says. “That’s a super special place to me. And now we can bring our kids there when we go someday.”

Their reception at Prairie Landing Golf Club in West Chicago featured rustic walnut-toned wood and rose gold details, along with floral arrangements of white ranunculus and eucalyptus leaves. “It was everything that we expected,” Price says. “Everyone was dancing all night, and we had a photo booth that everyone just loved.”

Price now works as assistant general manager at Jackson Avenue Pub, and Flickinger is general manager of Front Street Cantina, just a block away on Jef-

ferson Street in downtown Naperville.

They honeymooned in Jamaica and enjoy going for walks and snuggling with their white pit bull, Lando.

SERIOUS SLUMBER Though he’s not a sleep expert, this ENT finds a common link to pediatric problems

F

rom first working with airway and cardiac issues as an EMT to eventually developing an interest in cardiac surgery in medical school, Eric Gantwerker was certain that he wanted to specialize in otolaryngology (earnose-throat issues). But it wasn’t until his residency at Cincinnati Children’s Hospital that his desire to focus on working with kids within this area was solidified. And it wasn’t until he really got into practice that he came to understand that as a pediatric otolaryngologist, he wasn’t just treating the child on the examination or surgery table.

“You actually have two patients to care for—the child and the parent,” says Gantwerker, who currently practices at the Loyola Center for Children’s Health in Oakbrook Terrace. “But I really enjoy trying to get the kids involved in their own care and creating that bond with the whole family as they progress through treatment.”

In addition to common childhood ENT maladies such as ear and sinus infections, one issue that more of those families are dealing with these days— and one that Gantwerker believes parents should be on the lookout for— is sleep apnea. The condition causes excessive snoring or difficulty breathing at night, which can lead to a host of related sleep deprivation problems for little ones.

“Sometimes it shows up in things that aren’t so obvious, such as kids who are having trouble getting potty trained, or are dealing with hyperactivity during the day,” he explains. “These may be tied back to the fact that they’re not getting the sleep they need. It’s the little nuanced things that we don’t always think about that could be a sign that something else is going on.”

Strong arms help hold you up while on the bike, and they help you power up hills, whether you’re running or walking. If your upper body has largely been ignored, the good news is it doesn’t take long to firm things up.

BENT-OVER ROW

Hinge at the hips so upper body is near parallel to floor, dumbbells in hand with wrists below shoulders.

Draw weights up to chest with palms facing away from you (supinated grip) by bending elbows and squeezing shoulder blades together (like you’re rowing a boat). Slowly lower weights back to starting position and repeat.

GOAL Increase upper-body strength, tone and define arms PLAN Perform 2 to 3 sets of 10 to 15 repetitions of each exercise EQUIPMENT Body weight, dumbbells, and exercise tubes TRICEP DIPS

Stand in front of a chair or couch seat. Place hands on seat with fingers pointing forward. Keep back flat and walk legs out in front of body. Bend arms and lower body toward ground, with elbows directly behind body.

Straighten arms to complete 1 rep.

Do 10 reps.

SEATED PULLDOWN

Attach tubing to the upper part of a door hinge. Sit tall on a stability ball or bench and grasp tubing handles.

Keeping feet flat on the floor and chest high, pull elbows down and back, squeezing shoulder blades together. Pause and slowly return to starting position.

REVERSE FLY

Grasp two dumbbells and stand with feet shoulder width apart and knees slightly bent. Bend forward at the waist until your back is parallel to the floor (keep knees bent), palms and dumbbells facing each other. Raise dumbbells up and out to the sides, moving from the shoulders only, until arms are parallel to the floor at shoulder level. Lower to starting position and repeat.

PLANK-UPS

Start in a forearm plank. Keeping abs tight, spine long, and hips still, pick up right arm and right palm on ground.

Repeat on left side, ending up in a high-plank position. Repeat, replacing right palm with right elbow and left palm with left elbow. That’s 1 rep.

GiGi’s Playhouse Fox Valley supports individuals with Down syndrome

A local nonprofit coordinator now gives back to the organization that supported her daughter

hen Katie Vaughan’s daughter was born with Down syndrome, she and her husband were thrust into an unfamiliar world.

“Zoe was going through things my friends’ children weren’t. As a family we were going through things no one truly understood,” Vaughan recalls. When her daughter turned 1, they visited GiGi’s Playhouse, a nonprofit that supports individuals with Down syndrome and their families. “When I walked into GiGi’s, I saw they got it. They understood right away all the different trials and tribulations that happen with a special needs child.” Feeling welcomed and accepted, Vaughan saw her daughter thrive. dinator for GiGi’s Playhouse Fox Valley, she makes sure other families have the same positive experience.

A PLACE OF ACCEPTANCE GiGi’s Playhouse was created to change the way the world views a Down syndrome diagnosis, and send a global message of acceptance for all. While many online support organizations exist, GiGi’s Playhouse is the only one with actual physical locations where people can gather for support. The nonprofit began in 2002 when founder Nancy Gianni gave birth to her daughter GiGi. When hospital staff realized GiGi was born with Down syndrome, the atmosphere in the room immediate-

ly changed from celebration to sympathy. After attending a support group in a sterile hospital room, Gianni was inspired to create a warm and welcoming place where families could come for resources and networking—a place where the diagnosis would be celebrated and supported.

Gianni founded the first GiGi’s Playhouse in Hoffman Estates, and two years later opened a second location in Fox Valley. In only 15 years, the nonprofit has grown to 40 locations throughout the U.S. and Mexico, and has over 200 inquiries to open more sites. By 2020, the organization hopes to have a site in every major U.S. metropolitan area.

Vaughan, a former teacher, became site coordinator in May 2018 after volunteering for several years with the preschool prep and literacy programs at GiGi’s Playhouse. In her current role, the Oswego resident and mother of two handles everything from coordinating programs and volunteers, to conducting administrative and marketing tasks.

Vaughan also volunteers for the National Association for Down Syndrome’s welcome basket program by visiting families of newborns with Down syndrome in the hospital.

Being able to love people and have love in return is really what we are all here for. That’s what I feel people with Down syndrome show the world. That’s why it’s so important to support them and this community.”

he ninth annual DuPage County Toys for Tots Gala was held November 9 at the Hilton Lisle/ Naperville, kicking off the holiday season by collecting over 200 toys and raising nearly $7,500 for the foundation.

SUBURBAN SHRED Chicagoland’s oldest ski shop has been outfitting the area for over 65 years

How did you get involved in owning King Keyser?

The short story is that both Rick and I had worked at different ski shops.

We’re both ski enthusiasts and have a common interest in love of skiing. We both knew wanted to eventually own a ski shop. Neither of us wanted to be a cog in someone else’s corporation. We wanted to own something ourselves and control our own destiny.

hile some people may shudder at the sight of snowflakes dancing in the winter air, it’s pure excitement for Jim Loufman and Rick Johnson, who own King Keyser Specialty Sports (41 South Washington Street, kingkeyser.com), a ski and snowboard shop in Hinsdale.

All things skiing are available at the store that was founded in 1952, but back in the day, guns and hockey equipment could also be found on the shelves.

ment, they provide a range of services from checking bindings, to fitting boots or waxing a snowboard or skis.

For kids who crave outdoor fun, the store offers the Trolls Ski & Snowboard Club for ages 9 to 16. In the 10-week program, skiers and snowboarders of all levels and abilities travel by bus to Wisconsin, visiting Wilmot or Alpine Valley. Membership in the club is $350, and each trip costs $50.

Here’s what Loufman says about how he and Johnson share their passion for hitting the slopes.

How would you describe what the store offers?

Our core business is downhill skiing.

It’s still our mainstay. Snowboarding is a large component. We also have cross-country equipment and a range of functional winter clothing.

Are most of your customers traveling outside the Midwest for ski vacations?

A PLACE TO HIDE Pierce Tavern is a homey hangout for wood-smoked eats and boozy treats

iven that downtown Downers Grove’s newest restaurant, Pierce Tavern, is located in one of the village’s oldest buildings, it makes good sense that it’s operated by siblings with deep dining roots in the area.

Sam and Patricia Vlahos grew up in their father’s restaurants around the western suburbs. “I think his most recognizable was Jonathan’s steakhouse in Lombard, which he ran for 35 years,” Sam says. After opening Fuller House in Hinsdale in 2015, the siblings wanted to replicate the concept in other west suburban downtowns. When the historic stone building on the corner of Main and Curtiss streets in Downers Grove became available, they easily envisioned

their next venture. “We grew up in Oak Brook and went to all Downers Grove schools,” Sam says. “We always wanted to do something in Downers.”

Inside, you’ll find antler chandeliers, lighting made from twisted rope, and reclaimed barn wood. As a nod to the building’s storied history as Downers Grove’s first bank and first library, there’s a column tiled in pennies and bills, plus a wall covered with books.

And the place is named, of course, for village founder Pierce Downer.

A BIT TIPSY The owners call Pierce Tavern “a neighborhood hideout,” even months after the September opening. The only

problem? It seems that everyone wants to hide out here, fueling an hour-plus wait on weekend nights. If you can’t score a table, catch a barstool on either side of the bar, or in front of the open kitchen, for a casual date night.

The Vlahos siblings hired a bar director to create a cocktail menu unique to Pierce Tavern, and it leans heavily on spirits infused in-house.

The light and bubbly Gone With the Gin features smoked rosemary-infused gin, while the Merchant Man pleases the palate with brown butter-infused bourbon, chocolate-walnut bitters, vanilla demerara sugar, and a single oversize ice cube. With a price tag of $10 a pop, the value is definitely there and I’ve no doubt shelled out more for much less impressive options at other spots around town. Sam says the cocktail program has proved so popular that they may follow suit and level up the drinks at Fuller House too.

dishes in the mix, such as juicy seared pork chops with peppery bacon-andpeach relish, dreamy white cheddar grits, and garlicky sautéed spinach. A domed wood-fired oven visible in the open kitchen turns out Neapolitaninspired pizzas ranging from the simple, traditional margherita to the Sunny Side Up pie with an egg and bacon. There’s also a smoker at work, cooking low and slow to make tender meats, such as the brisket that’s stuffed in tacos topped with fried onion strings and white barbecue sauce.

Though downtown Downers Grove has seen a few new restaurants established in the past year or two, it’s still a pretty sleepy scene after 9:00 p.m. That makes Pierce Tavern’s latenight kitchen—which serves food until 10:00 p.m. on weekdays and 11:00 p.m. on weekends—just right for a bite after a movie at the nearby Tivoli Theater.

Truth be told, though, I’d destroy an order of the fried calamari—with sweet chili sauce, flecks of fried basil, and spicy sambal mayo—any time of day or night.

Yield: 4 Portions 2½ pounds boneless beef short ribs, cut crosswise into 3” pieces 4 cups Burgundy wine 4 cups yellow onion, peeled, cut into julienne 2 tablespoons garlic cloves, peeled 4 cups button mushrooms, sliced 1 sprig rosemary 3 sprigs thyme 1 each bay leaf

salt and black pepper, to taste 2 cups olive oil 8 cups low-sodium beef stock ¼ cup butter 1

Remove excess fat from short ribs, place into a plastic container, and cover with wine, onion, garlic, mushrooms, rosemary, thyme, and bay leaf. Marinate for 12 to 24 hours.

Preheat oven to 275 degrees.

Remove short ribs from marinade and dry with paper towels. Season on all surfaces evenly with salt and pepper. Strain marinade, reserving liquid and vegetables.

Heat oil in a large Dutch oven over medium-high heat. Working in two batches, brown short ribs on all sides, about 8 minutes per batch. Transfer browned ribs to plate and set aside.

Reduce heat to medium and add reserved onions and garlic. Cook gently until soft and caramelized, about 15 minutes.

Add mushrooms and continue to cook for about 10 minutes, deglazing pan.

Add reserved red wine and cook until liquid is reduced three-quarters. Remove any foam that comes to surface.

11 Season sauce to taste with salt and pepper.

12 To serve, spoon celery root purée (see recipe below) onto a plate and place short ribs on top.

CELERY ROOT PURÉE 4 cups celery root, peeled, cut into 2-inch cubes 2 cups russet potato, peeled, cut into 2-inch cubes 4 ounces butter 8 ounces whole milk, warmed 1 tablespoon salt ½ teaspoon white pepper 1

Cut the potato and celery root into 2-inch chunks and place in a medium pot, covering with salted water. Cook vegetables until very tender, about 30 minutes. Drain, discarding cooking liquid.

Combine the vegetables, butter, milk, salt, and white pepper into a blender or food processor and purée until smooth. If more liquid is needed, add more milk.

8 Add short ribs and beef stock, then bring to a boil. Cover with an oven-proof lid (or foil) and transfer to oven.

Cook 5 to 6 hours, or until meat is spoon-tender but still retains a pink interior.

10 Transfer short ribs to a platter.

Spoon fat from surface of sauce and discard. Add butter and cook over medium heat until butter is melted.

Whether it’s an eating disorder, cancer, or a rare syndrome, grappling with an illness changes life—completely.

Naperville magazine recently spoke with three area residents who have battled emotional and physical burdens. Although their conditions are unique, they all share the same mission: to empower and teach others what they have learned.

MODEL CRUSADE

Although Michelle Landriault’s plus-size curves were always supported by her modeling colleagues, the Geneva resident found her health numbers were “borderline everything” and she had a high body mass index.

“It was [no longer] about the ‘beauty aspect,’ ” Landriault, 36, says. “The weight was starting to take a toll on my heart.”

After a metabolic endocrinologist diagnosed her with binge eating disorder (BED), Landriault went on a courageous weight-loss journey and lost almost 130 pounds in two years.

First, Landriault retrained her body how to eat properly again. She took medication to help control her eating and began seeing a therapist to uncover the root of her emotional binges. After losing 90 pounds, she joined the adult fitness program at Naperville’s UltiFit, which includes progress testing every six weeks.

“I cannot explain to you how far I’ve come in so little time,” Landriault says. “In my first 90 days, I was able to do double where I started. In February 2018, I weighed 355 pounds. Now I’m 316. I’m able to move in ways I never have before.

Life is so much easier.”

But Landriault thinks working out three times per week at UltiFit is easier than eating right.

“Once you get there, you bust your butt for 50 minutes, and it’s over,” she says. “With eating habits, it’s a constant battle all day long. My therapist gave some great advice. She said, ‘Michelle, motivation is crap. No one is motivated—they are planners, who have committed to a schedule.

Motivation is a pretty word people use, but it’s all about planning.’ ” Sticking to the plan is paramount to losing weight, but the body also goes through a lot of changes that result in what Landriault calls “an emotional roller coaster.” She encourages people NAPERVILLEMAGAZINE.COM / JANUARY 2019 71

to be transparent and share what they are going through with friends, family, and doctors. Landriault writes about her weight loss, dealing with BED, makeup, and fashion on her blog, Michelle Swoons (michelleswoons.com).

Landriault started out as a makeup artist in 2003. She now teaches at the College of DuPage and recently launched her own makeup line, F.A.C.E., which stands for Facts, Action, Compassion, and Empowerment.

“I loved playing in my mom’s makeup and watching my Nana put on her face every day,” she says. “I was never popular at school. Getting bullied and never fitting in made it a bit hard in high school. Makeup saved me.”

Through her work in makeup and weight loss journey, Landriault hopes to empower others to get healthy and to stick to their goals.

“Getting treatment for BED made me aware of the issue and gave me courage to get help,” Landriault says. “I’ve learned more about myself these past two years than in my entire lifetime.”

LIFELONG BATTLE

Ever since Naperville physical therapist Wendy Wagner was a child, she’s been labeled a “medical mystery.” Constant headaches. Dislocated joints.

Sprained everything.

After years of pain, injuries, surgeries, and tests by dozens of medical specialists, at age 49, she can finally give a diagnostic name to her battle: Ehlers-Danlos syndrome (EDS).

The Ehlers-Danlos Society defines EDS as “a distinctive problem with connective tissue, which is what the body uses to provide strength and elasticity.” It’s generally characterized by overly flexible joints and stretchy, fragile skin. For

Wagner, EDS resulted in difficulty healing after surgery and weakness and increased elasticity in her ligaments.

“I’ve had several reconstructive knee and wrist surgeries,” Wagner says. “The greatest impact, however, has been on my cervical spine, which resulted in continuous headaches for most of my adult life.”

Every day, Wagner struggles with wrist pain that makes it difficult to hold or carry things.

Writing and typing are painful, and she has to do them in small increments. She also has constant head and neck pain because her neck isn’t strong enough to hold her head on her spine.

“I was devastated when I finally heard the words ‘Ehlers-Danlos syndrome.’ As a physical therapist, I was familiar with the course of the disease and had trouble admitting I was headed down that path,” Wagner says. “When I got home, I found the strength to say out loud, ‘I am Wendy, and I have a disability.’ ” After the diagnosis, Wagner embarked on a mission to help herself, only to find there are few doctors who understand the rare condition. As she explored treatment options and pain-relieving techniques for herself, Wagner realized not one physical therapist in the Chicago area treated EDS patients like herself, so she decided to start offering her services to others (wendy4therapy.com).

Wagner posted a question in an EDS Chicago Facebook group that read, “I am a PT, and I have EDS. Would any of you be interested in traveling to Naperville for PT services?” Within four hours, 26 people responded, including one from Wisconsin and another from Indiana.

Wagner believes physical therapy is one of the few viable solutions for EDS patients. With very specific exercises, she works to strengthen the muscles that cross over joints, so they can provide the stabilization that the faulty ligaments cannot.

In addition to symptom management and EDS education, she also provides information on core strengthening, energy conservation, anti-inflammatory nutrition counseling, ergonomics, and pain-relieving techniques.

“After numerous hospitalizations and years of continuous headaches,” says Wagner, “I’m happy to report that between 60 minutes of daily physical therapy, plus substantial lifestyle modifications, I’m finding pain relief I didn’t think was possible.”

THE POWER OF PRODUCE

John Graves’s son Brandon always wanted to open a small, premier produce company in his hometown of Plainfield. After his son’s college graduation, Graves and his wife, Maria, invested in Brandon’s dream, and Peter Rubi Produce (peterrubi.com) opened in 2012.

Six months later, John was diagnosed with cancer—a fast-spreading undifferentiated pleomorphic sarcoma—in his leg. He was given eight months to live.

After receiving the news, his wife hugged him, said, “Were going to beat this,” and marched off to the kitchen to make juice drinks. Maria had been studying nutrition and the benefits of boosting the immune system, and food would be one of their weapons to battle cancer.

“After making peace with God and knowing he is in control of all things, we started our new journey fighting cancer,” Graves, 57, says. “We met with an army of doctors, but I opted out of chemotherapy treatments and fired my oncologist. He was too negative. With such a short time left, why surround yourself with people you don’t want to spend time with?”

Surgery removed the first tumor, but the soft tissue cancer only grew back to its original size two months later. Graves completed 25 days of radiation therapy and then had a second surgery to completely remove his rectus femoris (quadricep) muscle. After that, a spot was discovered on his lungs. Before his next doctor visit, he and his wife were at a spiritual retreat in Michigan, and the group prayed over him for healing. At his next follow-up visit to the doctor’s office, a nurse told him the spot was gone.

“I couldn’t believe her. I asked if there was a mistake. Had I inhaled a bug?” says Graves. “She laughed and said I had received a miracle.” After five years, Graves was declared cancer-free.

“Is there a cure for cancer? That’s not the right question. The reality is we all have cancer in our bodies. Cancer cells are good cells that have gone bad,” Graves says. “Can we change our body’s environment before the cancer is created? Once we have cancer, can we change the environment so that our immune system can kill the cancer cells before cancer kills us?”

Graves believes strengthening the immune system is key to keeping cancer at bay. He is on a mission to partner alongside people to help them live healthier lives through education, direction, and produce. The Graveses offer seminars at the store to share their nutritional knowledge, such as the recent Clean Eating with John and Maria.

“Peter Rubi Produce and Peter Rubi University are all about providing the products and information to feed your body and soul to live life well,” Graves says. “Maria and I know our purpose—to radically change lives.”

THE MORNING MAINSTAY HAS EVOLVED INTO MORE THAN JUST A CUP OF CAFFEINE, INFLUENCED

one are the days of settling for a subpar caffeine fix or trekking into the city to score the perfect pour-over. “The community demands good coffee at this point,” says Tyler Fivecoat of five-year-old Wheaton roaster and café Five & Hoek. “We have people in their 30s and 40s moving out from the city and wanting specialty coffee,” he continues. “It’s fun to show them that we care about coffee as much as places in the city do, and that our product delivers.”

Around the time Five & Hoek debuted, Chris Ptacek and some like-minded coffee-craving friends took matters into their own hands and began home roasting. “I was crazy jealous of the quality of coffee you could get in the city, and there weren’t roasteries in the western suburbs at that point,” he recalls.

Due to demand from friends, Ptacek’s side hustle snowballed. He and his partners started with a 386-square-foot café and roastery, quickly outgrew that, and can now accommodate 50 at their Plainfield shop, Ten Drops. Instead of roasting just enough to supply friends, they now go through up to 1,500 pounds of beans per month.

Fivecoat and Ptacek are in good company, as the western suburbs are in the midst of a craft coffee boom. For coffee fans, the benefits go beyond tasty beverages: These companies are innovating, educating, and supporting both coffee farmers and the community in the process.

COFFEE CONSCIENCE Sourcing is top-of-mind for any roaster, and has piqued consumer interest too. “It’s the same reason you see farm-to-table restaurants,” Fivecoat explains. “People now want to know what kind of coffee they’re drinking, who the farmer is, where it was grown, and how it was roasted,” he adds.

We’ve all heard the buzzwords: direct trade, fair trade, direct sourcing. After realizing “fair trade” isn’t always what it’s cracked up to be when it came to the payment of farmers, Cody Lorance of Endiro Coffee in Aurora decided to walk away from the label.

“We instead focus on creating meaningful relationships with farmers, and that has become the defining mark of our company,” he says of Endiro, which his partner, Gloria Katusiime, started in Uganda as a means to raise money for local children.

ra—contracts with 250 growers in Uganda, making them the country’s highest-paid farmers by fivefold.

Lorance and his team regularly log time with the farmers, teaching them how to properly fertilize and prune in order to maximize output. “We want to see every family in the village we work with get out of the extreme poverty scenario, and we’ve already helped a lot of them,” he says.

Here on the home front, Endiro furthers its mission by teaming up with organizations that support kids. The café hosts a monthly event for a nonprofit, allowing representatives to wait tables, wash dishes, tell customers their story, and collect a percentage of the day’s sales. By partnering with World Relief and even hiring employees with refugee backgrounds, Lorance seamlessly combines his background in advocacy and social work with his passion for coffee.

Plainfield’s Ten Drops crafts occasional charity coffee releases, creating a barrel-aged coffee and donating $5 per bag sale to causes both local and global, including food banks, water and animal charities, and a Guatemalan nonprofit that aids women-run businesses.

From an office building in south Naperville, Compass Café carries on the charitable mission of the adjacent Compass Church, but aims to be a gathering place for more than just churchgoers.

“Yes, we have the church affiliation and we’re happy to talk about it. But more than that, we want to be welcoming to the community,” says manager Angela Mosshamer, who notes that the café keeps early morning and evening hours to cater to those coming and going from nearby schools and activities. One of four church-affiliated coffee shops in Naperville, Compass looks to differentiate itself by pouring coffee from esteemed Wheaton microroaster I Have a Bean, which, incidentally, has a heavy altruistic component: The prison ministry employs ex-convicts and helps them transition back into the workforce.

A TEAM EFFORT Considering the burgeoning coffee scene, one might think these fledgling business owners are fiercely competitive. But it’s quite the opposite, according to Ten Drops’ Ptacek. “There’s none of that. It’s more, ‘Do you want some help?’ or ‘Do you need some time on our roasters to make extra batches?’ ” he says.

Endiro’s Lorance says west suburban roasters keep in touch via a Facebook page, and are quick to support and encourage one another. “We really feel like we’re in it together. Our competition isn’t each other, but maybe bad coffee drinking habits,” he says.

“Maybe Starbucks,” he offers, laughing. Adds Ptacek, “I firmly believe you can’t corner the market in coffee.

You can only fit so many into your space, and there are enough people needing coffee to go around.”

Coffee shop owners are also eager to team up with other local businesses. At Five & Hoeck, a breakfast sandwich is made with a bagel from nearby County Farm Bagels and coffee-infused cheese created in collaboration with Lombard’s Modern Artisan Cheese Company. A partnership with Dry City Brew Works produces a milk stout that Fivecoat says has a cult following in Wheaton. Similarly, Ptacek notes that in any given month, Ten Drops’ coffee infuses beers in at least two local breweries, plus a rum at neighboring Tailwinds Distillery. “It’s not a money thing. It’s just an opportunity to be a flavor component in some great products, and it’s a lot of fun,” he says.

They’re making sure customers are having a blast too—and learning a little along the way. “Our mantra is coffee, connection, and community,” says Fivecoat, who trains his staff to welcome and educate customers about the complexities of coffee, meeting them where they’re at and “not being a jerk about it.” Ptacek loves the educational component too. “Just learning that straight-up coffee can have different flavor notes—without dumping in sugary syrups—is really enlightening. Once people realize the depth of coffee, this becomes fascinating to everybody,” he says.

BASKETBALL AND BROADCASTING By nature, I always have to know what’s next. I realize basketball isn’t going to last forever, and I want to figure out what I’m passionate about. Right now I play basketball for a living, so what’s the next best thing?

Talking basketball, which is why I’m trying out broadcasting to see if it’s something I’d like to do after my playing career. And I really am enjoying learning and being a rookie again in a new field.
