am one of those people who doesn’t leave the house much in the winter. Grocery and dry cleaning delivery, plus a home gym, enable my hermit compulsions in the winter months. And although grocery delivery is a relatively new first-world convenience, pizza delivery has been around for decades— centuries, really. Legend has it that chef Raffaele Esposito served the first authentic pizza to King Umberto I of Italy and Queen Margherita (note the name) of Savoy in Naples around 1889. After WWII, hungry soldiers came back to the States craving the pizza they had discovered abroad, and the U.S. pizza industry was born. Today we can browse menus and track our orders, all from our phones. Although technology has changed the ordering process, what has not changed is our love of the ’za. There are over 75,000 pizzerias in the U.S. fulfilling a $45 billion market. These facts made it easy for us to choose the topic of our food-focused feature, but it was difficult for us to narrow down our coverage parameters. Pizza is everywhere, but delivery is confined by geography. And space limitations forced us to choose a town, so we focused on some beloved Naperville pizzerias offering a crazy variety of pies. Take a look at the feature (p. 64) and perhaps change up your traditional order each week to try something new. After all, we have a few more months of hibernating to taste-test it all.

he month of February emphasizes the importance of love in our lives, and although it’s most commonly associated with romantic love, our February 2008 issue included a feature titled “Love Your Neighbor.” In the story, then-editor Jennifer McGuffin wrote: “One of the things to love about Naperville is that it’s a metropolis all its own, complete with a variety of dining, entertainment, economic, health care and education alternatives. But while many cities the size of Naperville, such as Evanston and Oak Park, are also known for their ethnic diversity, Naperville is not.” Ouch. McGuffin’s sentiments were true enough—Naperville’s reputation as a white suburban enclave has been hard to shake. But thankfully, data reflect an uptick in diversity over the last decade. Our article cited that Caucasians were 85 percent of the city’s population in 2008; by 2017 that number was down to an estimated 75 percent of the city’s population—a minority jump of 10 percent, which translates to almost 15,000 people. And young minority residents are part of the cultural shift. According to a 2016 Chicago Tribune article, the percentage of white students enrolled in Indian Prairie District 204 had dipped below 50 percent for the first time. This trend toward demographic diversity has many advantages for Naperville. Economic strength, intercultural enrichment, and prosocial (helping others) attitudes are all bolstered by a community rich in diverse cultures. We hope the city and other west suburbs continue to attract a wide range of people who can offer unique perspectives, strengths, and abilities.

hink you have what it takes to climb 680 stairs in nine minutes or less? Each year, the American Lung Association (ALA) hosts its Fight for Air Climb in more than 40 cities across the United States. This year marks 16 FEBRUARY 2019 / NAPERVILLEMAGAZINE.COM
the 28th year of the event, and the first climb in the country will be held February 9 at the 31-floor Oakbrook Terrace Tower—the suburbs’ tallest building, which takes an average of nine minutes to climb. The corresponding Chicago event will take place
on March 10, when competitors can chose to climb one, two, three, or all four of the Presidential Towers. “When someone participates in the Fight for Air Climb, they often gasp for air when their lungs burn once they reach the top,” says ALA Executive Director Kristen Young. “This is similar to how it can feel for a person with lung disease every day.” The climbs raise money to help further the ALA’s mission of promoting awareness of lung diseases, raising money for research, and funding local educational programs to help children better manage their asthma and to encourage people to quit smoking. The events draw teams ranging from families to first responders to lawyers. Last year, Young says the youngest climber was 5, while the oldest was 73. They even have teams that are all kids, like local Girl Scouts troops who want to challenge themselves. Several corporations also field teams, including Redbox, Molex, DuPage Medical Group, ComEd, and Kohl’s. Many, including firefighter Richard Gray of the North Riverside Fire Department, do the climbs to support family members who have lung disease. “I started after my father received a right lung transplant in August of 2010,” Gray, 50, says. “Every year, I dedicate my climb to a family member who suffers from lung disease or who has passed away from it.” This month’s Oakbrook Terrace climb will be Gray’s ninth. He also participated twice in the Presidential Towers Climb in Chicago. Several area fire departments partake in the ALA’s First Responders Challenge. Firefighters must do the climb in full gear, including helmets, hoods, pants, coats, gloves, boots, and air packs, which can tack on an extra 45 pounds. Not to be outdone, the Oakbrook event also has a category for police officers. In 2018, Elmhurst took the top spots in both the fire and police challenges. HEAVY HITTER Train like a fighter on Naperville’s north side
N
aperville got a little tougher last year when a north side fitness center opened—the only facility in the world where you can take classes from a professional Ultimate Fighting Championship fighter. UFC Gym Naperville is the primary training center of UFC fighter Ricardo Lamas, who, along with partners Matt Kuschert and Chris Pope, created their facility for all ability levels. The goal? Bringing mixed martial arts-style training to the mainstream. All ages are welcomed to take cardio boxing and kickboxing, high-intensity interval training, boot camps, and martial arts. “I’m actively involved in class curriculum development and personal coach-
ing,” says Lamas, 36. “I teach classes three days or more per week.” Currently No. 11 in the UFC featherweight rankings, Lamas also has a degree in exercise science, a personal training certification, and a black belt in Brazilian jiu-jitsu. Typically, he fights two or three times a year, depending on his health and opponents’ availability. “I train every day, whether I have a fight scheduled or not. It’s crucial to stay sharp and at the top of my game,” Lamas says. “Once I book a fight, my training intensifies, and I spend four weeks in Miami with MMA Masters. Peterson started cooking as a young girl with her mother and owned a restaurant and a small catering company before appearing on several cooking competition shows, including Master Chef and Cutthroat Kitchen. The ESPN tour wasn’t the only football time Peterson has logged. Her oldest son, Alex, played at Butler, while her son, Luke, plays at Naperville Central. Her daughter Francesca also goes to Central. So, what will Peterson be serving on Super Bowl Sunday? “Super Bowl parties are the ultimate tailgate,” she says. “I’ll be hosting a big tailgate party this year and will be serving all sorts of favorites from the book: deviled bacon, a charcuterie table, chicken and waffle cupcakes, an epic chili bar, and bloody mary Jell-O shots.”

tumped on what to bring to this year’s Super Bowl party? Football mom and Naperville resident Beth Peterson can help. Her book The Tailgate Cookbook was released in August by Cedar Fort, and features recipes that bring a new twist to traditional football food. Peterson draws from her days as a brand ambassador for Sam’s Club and Coke Zero, when she traveled around the country every weekend for two years on the ESPN Collegiate Game Day Tour. “Part of my job was to evaluate some of the top tailgates to find the best in the country,” says Peterson, 50. “It was incredibly interesting how regionality played a huge part in the food served at tailgates around the country—from jambalaya in Louisiana, to freshly caught salmon in the Northeast, to low country seafood boil in the Southeast.” Through her tailgating travels, Peterson noticed appetizers, side dishes, and desserts were by and large prepared by women, yet most available tailgate cookbooks focused almost exclusively on grilling recipes, traditionally the men’s domain. “The book highlights all of the dishes that women bring,” says Peterson. “It’s beautifully styled and photographed. Although men will enjoy it, the book has a feminine feel to it.” The Tailgate Cookbook features appetizers like crab, shrimp, and andouille gumbo dip; sushi donuts; and pomegranate guacamole; alongside such main dishes as adobo lamb pops with char-roasted poblano dipping sauce and a brown bag salmon; and winds up with dessert recipes, including hot chocolate grill cupcakes; Honeycrisp apple panna cotta; and coconut, lime, and avocado Popsicles. But don’t worry—there are still plenty of traditional tailgate food recipes as well. Nachos and deviled eggs are well represented, along with several chili variations.

onsidering Representative Sean Casten’s background as a scientist, it is no surprise that he took a methodical approach to selecting which Chicago suburb to reside in. When relocating to Illinois in 2007—to cofound Recycled Energy Development in Westmont—Casten and his wife, Kara, wanted to raise their two daughters in a community that was as diverse as possible. “This is where things get really nerdy,” Casten says. “I built a spreadsheet with every town that was in a 20-mile radius.” He logged data for myriad factors—income, ratio of renters to homeowners, racial and religious diversity—and found Oak Park ranked first. “I talked to people out here and they said, ‘That’s great, but you don’t want to risk an Eisenhower commute every day.’ ” No. 2 on the list was Downers Grove, which charmed the Castens with its downtown district dotted with restaurants, shops, and historic fixtures such as the Tivoli. The annual fundraiser at this Irish pub has given Casten the opportunity to dust off his keyboard, and over the years the event has kickstarted the formation of a number of bands that play local venues. New bars and restaurants opened in the past year include rock-themed Cadence Kitchen & Co. ack when she was first setting out on the path of higher education, Dr. Manal Ibrahim decided to go in a different direction than her friends who were heading off to medical school. In choosing biomedical engineering to focus on designing prosthetic limbs, Ibrahim was looking to both make a difference in the lives of patients and indulge her creativity. But a chance run-in with an old friend soon got her thinking about dental school—and the rest, as they say, is history. After her first specialty in prosthodontics (essentially designing prosthetics for the mouth), Ibrahim soon found a home amid the rapidly changing world of her second specialty of orthodontics, leading her to the 2002 orthodontic breakthrough by Align Technology known as Invisalign. Fast-forward a decade and a half, and her Innovative Orthodontic Centers (IOC) practice is one of the top Invisalign providers in the world. “Invisalign is a great option for patients who might have been avoiding orthodontic treatment because they didn’t want to deal with braces and wires,” Ibrahim says. “The plastic trays are so much more comfortable and convenient.” Invisalign is but one example of the steadfast use of the very latest technology to assist in the diagnosis, planning, and execution for a variety of treatments at IOC. FULL STRENGTH These compound moves stimulate multiple joints and muscle groups By Danica Osborn In addition to being a trainer at the Naperville Park District’s Fort Hill Fitness facility, I’m a busy mom of four—so I need my workouts to be effective and efficient. Because of this, I’m a sucker for compound multipurpose/multijoint exercises that give you more bang for your buck. Try out these moves for some great full-body conditioning with minimum time commitment.
KNEELING TRICEP KICKBACKS
With abs engaged, start in a tabletop position with a medium-to-heavy weight in the right hand. Extend the left leg out parallel to the floor, engaging glutes. Keeping the left arm aligned to bear the body’s weight (stack the wrist, elbow, and shoulder), extend the right arm back parallel to the floor, then hinge at the elbow and bring the weight forward again. Repeat on the same side for 10 reps, then switch arms and legs. Modify Kneel with both knees.
GOAL Incorporate compound exercises that are time-efficient muscle builders PLAN 8–12 reps of each exercise EQUIPMENT Dumbbells, exercise mat BEAR CRAWL FLIES RENEGADE ROW BURPEE
Start in a plank position, holding two medium-heavy weights about shoulder-width apart. Keep the left arm tight against the body, row the right weight upwards, and hold for a moment while balancing on the other hand and feet, keeping hips square to the floor. Repeat with right arm, then spring up to feet and jump once, then return to start position. Modify Lower onto knees instead of a full plank, and step into standing and plank position, rather than jumping.
Start in a tabletop position on a mat—aligning wrists, elbows, and shoulders—with a light-to-medium weight in the right hand. Engage the core and lift knees off the floor so that they hover just above the mat. Perform 10 flies with the right arm, keeping hips square to the floor and a small bend in the elbow, while raising weight to shoulder height. Modify Keep knees on the floor and perform flies in tabletop position.
SHOULDER PRESS JUMP SQUAT
Start with two heavy weights hovering just above your shoulders. Lift arms up into a shoulder press (avoiding locking out elbows), lower arms, then set the weights down on the floor just outside feet while performing a squat (feet aligned with hips). Jump back into a standing position and squat again to retrieve the weights. Return to starting position. Modify Use lighter weights and/or take the jump out of the move. Standing and squeezing the glutes at the top can activate a lot of the same muscles.

Hold one heavy weight at chest height, with both hands in front of you. Keeping the weight stationary, step back into a reverse lunge so legs form two 90-degree angles, with your back knee hovering just above the floor. Alternate legs. Modify For a progression, add some plyometrics by jumping into the reverse lunge position as you alternate.

Keeping your chest up and hips back, step right foot out wide to the side into a deep side lunge with toes and knees pointing in the same direction (one leg will be bent at the knee and one leg will be long and extended to the side). Perform one set of bicep curls, then push back into the starting position, driving through the whole foot. Repeat with left foot. Modify Use lighter weights, and/or modify depth of side lunge.

Harley Jones takes on the ever-changing challenges of today’s teens By Julie Duffin
P
roviding services to youth, including substance use prevention education, counseling, and housing in the Naperville/Aurora area, 360 Youth Services has been a lifeline to area teens for over 45 years. Since January 2018, the nonprofit has been led by Naperville resident Harley Jones, a man with a passion for helping others and a vision for making the world a better place. Jones didn’t plan a career in nonprofit work—in fact, his plan was to become a history professor. “I studied history in school and began teaching at the college level, so I’ve always had an interest in something larger than myself,” Jones explains. It wasn’t until 32 FEBRUARY 2019 / NAPERVILLEMAGAZINE.COM
graduate school that he had an opportunity to try volunteer work. “I was the first one in my family to go to college, so I never volunteered in high school. When I went to college, I worked the entire time to afford it,” he explains. The pivotal moment came when Jones decided to volunteer with AmeriCorps. “Within two weeks of making that decision, I found myself on a Red Cross truck after the third hurricane hit Florida in 2004, handing out food and water to people who hadn’t had electricity for three weeks. I was hooked. That was really my first opportunity to volunteer or serve on a mission. It really changed my entire life, especially my career.”

Jones had just returned home after spending 45 days in Houston helping the victims of Hurricane Harvey, when the opportunity to work for 360 arose. “It came at the exact right time. Here was a great organization with an

Jones spent 15 years with the Red Cross, running disaster relief programs, first in the Peoria area and then in Chicago. “I lived in Naperville almost six years while I was working out of the Chicago office, but I spent 90 percent of my time on the road, either in the city or traveling following disasters,” he says.

LONG-STANDING, EVER-EVOLVING 360 Youth Services began in 1971 when a group of parents, community, and religious leaders recognized the need for professional youth-centered services in Naperville. They formed a council that eventually became the nonprofit organization Naperville Community Outreach. In 2011 the organization changed its name to 360 Youth Services to better reflect its mission and vision. W
est Suburban Humane Society has launched its fundraising campaign with encouraging results: $2.4 million in pledges toward a $4 million capital campaign goal to build a new shelter in Downers Grove. WSHS was retrofitted from a single-family home and a boarding kennel over 40 years ago, and it’s now deteriorating. The campaign will provide for a new 8,300-square foot building—that will be built on two lots adjacent to the current shelter—to house animals with ample room to play, roam, and receive medical services, along with the opportunity for families to use private space to interact with the animals. The added area also will provide more room for the growing humane education program for youth and teenagers, as well as staff training. “We have been operating under inadequate conditions for far too long, and

the time has come to embark on this much-needed campaign,” says WSHS board president Jennifer Bahlmann. “Our goal is to build a responsible and efficient shelter that provides dignity and safety for the animals, all while designing a special place that will attract more visitors for adoption and public education.” Cochairs Colette Loesher and Roy Thygesen lead the capital campaign. Loesher, a Wood Dale resident, serves as senior vice president and regional manager at Old Second National Bank. Bus riders going to H.C. Storm Elementary on Friday mornings are somewhat older than the district’s typical student—by a few decades. Senior residents of Batavia’s the Holmstad retirement community have been volunteering one day a week at the school to help kindergarteners and first- and second-grade students with their reading skills for the last three years. Principal Anne Paonessa appreciates having community partners providing student support, and loves the intergenerational aspect of the partnership with the retirement community. “The group from Holmstad have so much to offer
our students, and it’s wonderful seeing bridges being built between the generations,” says Paonessa. “The kids really look forward to reading to another adult, and those resident volunteers are contributing to our students’ success.” Resident Randy Johnson (shown above) sees so much potential in the

SHOP Here’s what Husami says about the store and how he and his business partner, Greg Armich, started working together. What was the genesis of Syrah Home? I was a corporate lawyer who fell in love with lighting and tried my hand at designing it. I was thinking of leaving the (legal) field and my wife said, “Go for it.” We’d met Greg when he had a furniture store in Logan Square. We were like, “Wow. This store is great.” Greg and I hit it off and kept in touch, and eventually I popped the question [about creating a store]. It was a mutually beneficial cooperation. What makes the lighting and the furniture cohesive? Both have this handmade element —it’s the common denominator. The furniture has these beautiful colors and hand carvings, and the lights have the handmade shades. They pair very well together. What types of home design styles does the furniture work with? It’s suitable for any setting—even modern. The colors, the hand carving—they add a touch of eclectic charm.

olor, shadow, and light—these elements all play a role in the selected offerings at Syrah Home, a Naperville-based store that offers handmade, small-batch furniture, plus unique lighting fixtures and home accessories. The vibrantly hued furniture incorporates reclaimed antique and industrial elements and is imported from artisan studios in India. co-owner Mateen Husami, who is just as fascinated by the illumination they provide as he is with the interesting shadows the shades cast. The store at 233 South Main Street, which was previously located in Evanston, is in the heart of downtown Naperville, where people can pop in to find everything from Turkish mosaic chandeliers to Thai silk scarves to rustic furniture or hand-hammered shades in copper or other metals.
How does your co-owner find the artists who design the furniture you carry? Greg is a “roughing it” type of traveler. He goes into the alleys and finds these workshops that make the pieces by hand using reclaimed wood. Our prices range from $150 for a side table to $1,000 for a large cabinet. Our prices are good because we don’t have middle men. We go direct to the workshops. You could go to Home Depot to get a light, but this is all handmade. What does lighting mean to you? Light is functional, but it’s also beautiful. The shadows are what create the mystery. They reflects the passage of time, and isn’t everyone, since they were little, mesmerized by their shadows? Can you describe the range of lighting fixtures the store offers? There are globes made of spun wire that create striations of light and have a very organic feel. There are hand-

anene Salomon and her husband took on an ambitious five-phase overhaul of their Lisle home in 2016. “We needed to update the whole house,” says Salomon. “It was really dark and closed off.” The two-year project managed by Joan Kaufman of Interior Planning & Design totally transformed the contemporary house. “I loved this project,” says Kaufman. “It’s pretty rare that you have a client that lets you be creative.” Kaufman’s spa-like plan for the master bathroom created such a relaxing oasis for the couple that it resulted in a 2018 design excellence award by the American Society of Interior Designers’ Illinois chapter.—MD 42 FEBRUARY 2019 / NAPERVILLEMAGAZINE.COM
A traditional sofa is purposely absent from the Salomon’s cozy front living room. “People like chairs better for conversation,” explains Kaufman. Other creative features of the room include a repainted bedroom armoire, plus carpet that was cut and bound into the shape of a circle—which Kaufman says is much less expensive than purchasing a round rug. “It’s a very conversational room,” says Salomon. “If I have some girlfriends over we’ll have a glass of wine in there, or if we sit in there and read, we’ll pop in with a book.”

Mission accomplished on this front, as it quickly becomes hard to even recall just how different the place felt as the longtime home of Heaven on Seven. The story continues across the compact but wide-ranging menu, which follows no distinct pattern other than a decided focus on madefrom-scratch dishes utilizing seasonal,

iven the substantial payingof-dues time and effort and that goes into it, the longgestating dream of opening one’s own restaurant is usually about much more for the proprietor than just selling food. A grocery store sells food, and a restaurant sells a story. So after a long career of helping other people realize

their restaurant visions as an industry consultant, it’s more than fitting that Chris Mason decided to incorporate the notion of storytelling right into the name of the first place he could truly call his own. “Over time, I hope the story I’m telling is my own,” Mason says of Allegory, his eclectically personal

Rotating— based on availability and Mason’s restless whims—are a handful each of appetizers (smalls), salads (foliage), sandwiches (hands-y), and entrées (biggs), all complemented by a drink menu that includes a variety of local beers, a well-chosen selection of Italian and French wines, and several imaginative cocktails. as we perused the fancifully titled choices before settling on a shared pair of table-setters in the Dorf of Sorts salad—Mason’s piled-high take on the classic Waldorf, replete with cranberries, grapes, apple chunks, and candied walnuts—and the tempura squash rings appetizer, lightly fried and nicely spiced wedges. While entrées like pan-seared trout and pheasant pot pie beckoned from the “biggs” slate, we opted for a couple of sandwiches for our main course and never looked back. The standout of the Veg Out for veg-heads and meat-eaters alike was the delectable pretzel bun into which it was tucked. (If Mason and his crew are actually baking these things onsite, ask for about a dozen to take home.) On the other side of the table, meanwhile, the Phil E. Sangwich was inspiring plenty of brotherly love with its fire-roasted red and green peppers, a trio of gooey cheeses, and a heap of succulent prime rib commingling atop a thick bed of sourdough. Despite being grouped with the other sandwiches under the “hands-y” label, this was a knife-and-fork experience all the way. Of course, no good story can be complete without a well-written ending, but our initial concern upon not seeing dessert options on the menu was allayed as our server ticked off five tempting possibilities. And while settling on grandma’s pumpkin pie (a largely straightforward take on the autumnal classic) amid a host of more adventurous-sounding options may have seemed like a missed opportunity for one last unexpected twist in the story of this night, it instead brought us back to that feeling Mason was trying to create all along: The comfort of home.

Preheat oven to 350 degrees. Set a pot of salted water to boil. Toss peeled, diced squash with thyme, brown sugar, salt, pepper, and olive oil on a cookie sheet. Roast for 30 minutes or until tender, not mushy. Do not overcook.

Meanwhile, brown diced bacon in a sauté pan until crispy. Remove pieces, saving fat and drippings.

Add claws, garlic, and shallot to pan of drippings, stirring to ensure even cooking. When partially cooked, add ½ cup water. Cover and cook 2 minutes, or until hot.

Remove claws. Discard the onion, garlic and water.

Reheat the pan to medium-high, add buffalo butter and cook until browned with a nutty scent.

Add sage, pasta, claws, bacon, and roasted squash.
8 Add pasta to water for 90 seconds, or until tender but with “tooth.” 9
Drain pasta and add to pan with other ingredients.

Resident chef Brad Hudetz (Green Street Smoked Meats, Alinea, Spiaggia) and his brother Justin have opened a fast-casual kitchen in Plainfield centered around a massive 4,200-pound, wood-burning smoker they have dubbed “Smoke Force One.” Shipped direct from Mesquite, Texas, the smoker now resides in Station One Smokehouse (15025 S. Des Plaines St., Plainfield, 815.271.6328, stationonesmokehouse.com), an old firehouse they converted into an authentic Central-Texas barbecue experience. “The renovation of our town’s longtime firehouse has been quite an undertaking,” says Justin. “We’re happy to say that although the space looks very different, we have taken many measures throughout our decor to pay homage to the building’s history.” The brisket, pastrami, pork, sausage, and chicken are all sourced from Midwest farmers. Try the Frito Pie—smoked brisket chili served with queso and pickled jalapeños piled in a bag of Fritos—or the (Sunday-only) Bloody Mary, topped with celery, pickled vegetables, pork belly, and brisket burnt ends.

Our friends at El Gran Agave in Lisle have given us a romantic twist on the traditional martini. Their creamy, boozy Chocolate Covered Strawberry Martini recipe includes just three ingredients: strawberry liqueur, chocolate liqueur, and tequila. Um … yes, please. To make this Valentine treat, combine 3 ounces Tequila Rose, 4 ounces Don Julio 70, and 4 ounces Godiva chocolate liqueur in a cocktail shaker with ice. The romance begins when the cocktail is strained into a martini glass swirled with red chocolate syrup. The restaurant tells us this drink is best enjoyed with plenty of hugs and kisses.

We won’t attempt to convince you that the crisp edges of thin crusts are superior to deep-dish, or that you’ve committed geographical treason when you order pie-shaped wedges (we’re talking to you, Pieroni’s customers). Here instead, we present you with the skinny (no pun intended, as pizza is decidedly undiet) on 10 local joints that fit our qualifications: a Naperville address with no more than three overall locations. Owner Eddie Feka is a self-taught chef from Albania with a penchant for bread, and it’s reflected in his pies’ memorable dough. But make no mistake: Save for a sprinkling of outside-of-the-box toppings (gyros meat, feta) and specialty pies like the aforementioned, this is a Chicago pizza joint through and through. The restaurant commemorates its 30h anniversary this year and though the counter-service space is rather bare bones, Feka runs a warm, Cheers-like operation, calling customers by name and teaching his staff to do the same.
For over a decade, the family-owned, family-run pizzeria has dabbled in styles ranging from cracker-thin to pan, and you can sample them all on the lunch buffet, which offers five rotating pies daily. The homemade wheat crust is a fan favorite, as is the gluten-free version, which packs more flavor than many of its peers. Make a note to stop by when spring hits—the serene back patio is a great spot to sip a glass of Chardonnay with your pie. Or dine in the Pradel Room, which contains memorabilia from former Mayor George Pradel’s career in law enforcement.

Toppings are king at this simple carryout and delivery operation. Brothers George and Sam Syreggelas took over the eight-year-old business last year, and according to George, the goal is to use crust as vehicle for building deep layers of flavor, instead of a means for haphazardly loading on cheese. He recommends the ultrathin crust, a light and crisp style he likens to what’s traditionally served in Chicago taverns. Those looking for a little more heft will find both New York and pan-style options on the menu.

Open since 2010, Cassano’s enlists family recipes, including several straight from the owner’s “Nana.” You’ll find all the crust choices (thin, thick, and stuffed double-thick), but keep things simple by focusing your efforts on the cracker-thin version, which allows tangy sauce and myriad topping options—including shrimp, French basil, and roasted red peppers—to shine. You’ll find neither frills nor alcoholic beverages, but you can place your order, belly up and wait with a cold one next door at White Tavern, then grab your grub and eat it at the bar. 421 E. Brothers Mike and Paul Traverso have the restaurant biz in their DNA: Their father and uncle ran a string of taverns and pizza joints, both in the city and suburbs (the first Traverso’s is still going strong after more than 40 years in Orland Park). In 1993, they debuted this cozy, family-friendly nook, where their 80-something mom—“Mama T,” who was raised in northern Italy—still drops by to make ravioli by hand and perform quality control of her Old World recipes.
Started in Chicago in 1947 and churning out pizza locally since 1980, Uncle Pete’s has zero fluff on the menu: Save for garlic bread and pop, you’ll find pizza and only pizza. Under the guidance of owner and Naperville native Jay Becker for more than three decades, the kitchen whips up fresh dough daily, creates its own piquant sauce, and offers a surprising amount of fresh veggies as toppings. You’ll find a fine thin crust, but focus your stomach space on pan-style—and be warned that a medium tips the scales at a whopping five pounds.

Between a stint as Giordano’s corporate chef to his intensive study at Italy’s oldest pizza school, certified pizzaiolo Leo Spizzirri knows his way around deep-dish, Neapolitan-style, and everything in between. At the year-old North American Pizza & Culinary Academy in Lisle, he inculcates both restaurant chefs and home cooks in the art of pizza-making. Here, his seven must-have items for crafting perfect pies at home. TOOLS WORTH THE INVESTMENT Pizza stones—but not the round kind. “You stick your pizza on that little target, and cheese ends up all over your oven, your smoke alarm goes off, dog is barking,” Spizzirri says. Instead, use a rectangular stone on each of your oven’s racks to emulate a brick oven. ($28.99, Target) Digital scale—For the most accurate results, weigh your ingredients instead of measuring them. ($20–$149, Williams Sonoma) Digital thermometer—If you’re really going to do it right, you’ll need to check the temperatures of your dough and water. “You’re dealing with a living, breathing thing, so you’ll want to make sure you’re maintaining the correct environment,” he says. ($14.95–$69.95, Sur La Table) GAME-CHANGING INGREDIENTS Italian 00 flour—This finely ground, superabsorbent variety is a must to properly anchor your dough. ($2.09, Caputo’s) High-quality olive oil—“Buy the best you can afford, because you don’t need a lot,” Spizzirri says, adding that the oil not only lends flavor, but actually affects crust quality. We’re all capable of growing, we all need to feel like we belong, and we all have a story to tell that defines us. It’s this kind of self-discovery and vulnerability that make magic connections happen between people. Whether you’ve been in a relationship for weeks, months, or years, there’s always room to grow together. Here are five ways to do it.

PLAY TOGETHER
PAY ATTENTION TO SMALL MOMENTS
We forget so easily how to have fun and play, and unfortunately the fun things are often the first to go when we’re crunched for time. Running kids around, busy careers, and bustling lifestyles seem to leave little time for more than just the basics. And if there are tensions between the two of you, time together can sometimes be sabotaged with arguing or more serious conversations. All of that aside, couples still need to have fun together. Playing is so incredibly important to a relationship because it gives us an awesome opportunity to connect with our partners as friends and see them in a different role, one that’s more vulnerable—but also less restrictive—and simply put, more fun. Life can be hard and relationships are hard work. Everyone needs a break, and even just a little play can deepen your connection by adding a positive shared experience together. Playing together doesn’t have to take a lot of time, energy, or space. When I encourage couples to add play into their lives, sometimes that looks like a fun date night doing something out of the ordinary, but more often than not, it looks like finding a joke to share, playing a board game, or sending one another funny memes. Play can be simple or elaborate—just make sure it’s in there somewhere. Believe it or not, even adding a little playfulness to a heated argument has great potential to snuff it out.
This is the part that’s usually missing in a relationship when people talk about feeling “disconnected.” Rarely do grand gestures make people feel truly connected to one another. Really getting to know and grow together happens by taking note of the intricacies of your partner’s life. It requires time and effort, yes—but it’s so important for connection. When I talk with clients about this, I often refer to it as whether or not you or your partner is picking up on what’s being put down. (The same thing works with friends and other family members, too.). Every moment is an opportunity for connection, whether it’s something great, but especially if it’s not. We all throw out statements—moods and body language. I call that “putting it down”— we’re literally putting something out there onto an imaginary table in front of us all the time. The connection happens when our partners pick up what we’ve put down and take note of it. This requires great listening, intent noticing, and follow-up. Did your husband or wife tell you about a significant part of their day? Does he or she look sad? Is there something on his or her mind? Ask questions about it, touch base, and make the effort to follow up. How do you do this in real time? Listen to the inflection in your partner’s voice, pay attention to body language, and, quite simply, notice when they walk into a room. Many couples I work with have been together a long time and have forgotten how to NAPERVILLEMAGAZINE.COM / FEBRUARY 2019 73
make eye contact with their partner. It sounds simple, and it is. So start there and build up. THREE
FIGURE OUT WHAT’S YOURS, MINE, AND OURS We are faulty beings. None of us is perfect, yet we get so defensive when we’re called out on our imperfections. Or we use them as a mirror to reflect someone else’s not-so-great moments. Think of a Venn diagram. The two circles that overlap in the middle— these represent ourselves, our partners, and our relationships. The parts that intersect are the “ours,” but the rest are either the “yours” or the “mine.” We all have our life experiences, expectations, and ideas that we come into relationships with, and those continue even as our relationships grow. It’s so easy to ignore our own limitations and focus on someone else’s, to throw judgment or criticism or to feel entitled. It’s much harder to look at our own personal behaviors, ideas, and shields that we might be adding. Personal reflection can be so powerful in a relationship, because it makes us aware of what’s not working for us and helps change happen. But even more so, when you share what you’ve reflected on, it’s an opportunity to be humble and vulnerable, allowing your partner to do the same. FOUR
SHARE YOUR STORIES—THE ONES IN YOUR HEAD AND ON YOUR HEART— WITH ONE ANOTHER Our brains are so wired for storytelling that they will spin off a lie before they sit with uncertainty. And because we all have that Venn diagram (mentioned above) between us, we always plenty of ammunition to create a story about something. Whether it’s something in our own past or based off of a previous 74 FEBRUARY 2019 / NAPERVILLEMAGAZINE.COM
encounter, there are so many reasons we create the stories we do. Sharing even the most outrageous assumptions with one another leaves little room for misunderstanding and hurt. Being able to say, “In my head, I was making up that you…” can take connection to a whole new level. FIVE
FEED THE RELATIONSHIP, NOT THE EGO This one’s a big one, and it ties in with No. 3. In order to feed your relationship, and not your own personal ego, sometimes you have to put down the thing that you’re defending for the greater good of your relationship. This is like an extended version of “choosing your battles,” but with some Zen to it. How much is “being right” really worth to you if you walk away having hurt someone else in order to win the argument? You may have won that one, but you may also have inflicted pain or dismissal of your partner’s feelings in order to do so. For the ego, that’s a win; but for the relationship, that’s a definite lose.
Almost every one of these ideas comes with the caveat of being vulnerable with your person. That vulnerability—the space between putting something down and waiting to see if it’s going to be picked up—is one of the most difficult human emotions to sit with. But it’s also the place where the magic happens, where deep connections, and intimate moments take place. You can only go so far without growing, and that’s something we’re all capable of.

DAMIEN SNEED The versatile performer helps mark the 35th anniversary of MLK Day with a musical tribute to the civil rights giant By Mark Loehrke A LIFETIME OF MUSICAL GENRE-HOPPING I’ve spent most of my life going back and forth between different musical styles. When I was a kid, I’d play at church on a Sunday morning, have a classical solo piano recital in the afternoon, and play a jazz gig in the evening. So all of these styles and genres have always been very equal to me. INSPIRATION FOR A TRIBUTE Being from Georgia originally, Martin Luther King Jr. has always been a figure who’s been at the forefront of my mind. But with everything that’s going on in the world today, I think it’s very timely to re-engage with the ideals for which he stood—that we can all overcome any situation by working together in unity and in love. I hope that people walk away encouraged by that message. THERE’S STILL MORE TO SAY ABOUT MLK There was a time in the past that I might have felt that there was nothing new to offer about MLK, but given that many of the same issues from his time continue to arise in our present society, a tribute like this can really help younger generations see his life, his work and his mission as something still very necessary today.
