y parents were married in Southern California in 1969, and their marriage has survived five decades of ups and downs, including a cross-country move for a job my dad landed in Chicago. Although that sales position is long gone, my parents stuck around my sister and me—and each other—and it was a joy to celebrate their 50th wedding anniversary this year. I was curious about the odds of long-lasting marriages, and I found data that suggested that only 7 percent of current marriages have lasted 50 years. But most married people have not been alive long enough to hit the 50-year mark. When you isolate people aged 70 and older, the percentage rises to 54 percent. But something as nuanced and complicated as developing—and sustaining—a lifelong relationship can’t be defined purely by the absence of death or divorce. The commitment of two people, who manage to navigate 50 years of life together, cannot be lauded enough. This issue is dedicated to all of us who are trying—or have tried—to make marriage work. The benefits (mental and financial health, family stability, and happiness) are real, but achievement is hard. Congratulations to all of the husbands and wives out there, scratching our way to whatever anniversary comes next. Each one is a milestone to celebrate.

STORY TIME The People Tree builds community with every tale told By Christie Willhite
W
hen a family in Rachna Prasad’s Naperville neighborhood experienced a tragedy, she realized playground chats and status updates wouldn’t help her community heal. Neighbors needed to really talk to each other. Prasad started inviting friends like Claire Dee over for storytelling nights. Everyone prepared to share a personal story was welcome. “We found it broke down barriers,” Dee says. “People talk all the time, but we don’t usually get to the issues underneath.” Seeing how the stories sparked more intimate conversation, Prasad and Dee scaled up the experiment and in January 2018 launched The People Tree, a monthly show of regular people relating their experiences, emotions, and ideas. 16 APRIL 2019 / NAPERVILLEMAGAZINE.COM
The shows sell out all 220 restaurant seats at Empire Burgers & Brew. “Everyone has this perception of Naperville, but by having the show, we’re showing the depth and breadth of the community,” Prasad says. “It’s such a beautiful thing.” Each night, eight storytellers deliver on a theme, such as April’s motif of “Lies, Confusion, and Practical Jokes.” Stories range from lighthearted to poignant, with diverse takes on the topic. “It’s a cliché, but it’s like a roller coaster with some thrills, some uncomfortable moments and anticipation,” season subscriber Susan Cheng says. “As the audience, we get taken along. It’s like listening to a good friend.” The People Tree shows start the same discussions organizers experienced in Prasad’s living room.
Erin Ambre workshopped her first story for five months before feeling ready to step onstage, only to find she hadn’t anticipated the glare of stage lighting. Unable to see the audience, she made a rocky start, she says. “At one point, I heard the audience laugh and that moment hooked me,” Ambre admits. “I knew I was making a connection with the audience. I knew they were with me.” Ambre has returned to The People Tree stage with her “personal triumph story” of forgiveness after her divorce and has told similar stories in storytelling venues in Chicago, Evanston, and Hyde Park. The People Tree “has changed me. I’m more confident,” she says. “Before, I was a listener. Now I know I have something to say, and it’s important.”

Transcranial magnetic stimulation provides another option for depressed patients
W
hen it comes to depression, the statistics themselves can be pretty bleak. The disease affects over 16 million adults in the United States, and is forecast to be the second-leading cause of disease—and the No. 1 cause of disability—by 2020. But individuals struggling with chronic depression—particularly those not seeing adequate response to traditional first-line treatments such as psychotherapy, cognitive behavior therapy, and medication—have a new local option that may provide a glimmer of hope. At Mindful TMS Neurocare in Wheaton, patients can opt for neuronavigation-based transcranial magnetic
stimulation. Recently approved by the FDA, this noninvasive treatment involves delivering targeted magnetic wave pulses to the brain to help reset abnormal circuitry. While white oaks can live an average of 300 years, even older specimens have been documented. White oaks get their name from the light appearance of the bark. Oaks provide gorgeous fall color, and on occasion show shades of red, gold, brown, yellow, and purple all on one tree. Plus, oaks support a wide range of animal species, including 534 types of butterflies. The white oak is as important to people as it is wildlife. Settlers in Illinois used its acorns to feed pigs and its wood to build homes. Today, the white oak is the most common oak in

DuPage County and is the dominant tree in most of the county’s forests and woodlands. It provides more value than any other tree. “In the Chicago region, oaks provide more than $2 billion worth of flood control and other water management services,” says Andrew Hipp, a senior scientist in plant systematics and herbarium curator at the Morton Arboretum. But “today, oaks need our help. With only 17 percent of ancient oak forest area remaining in the Chicago region and similar oak loss throughout the world, human intervention is critical to ensure we don’t lose this important species.” PLANTING AN OAK White oaks can grow 80 to 100 feet tall. If given space to spread, the branches will create a massive canopy as wide as the tree is tall, making it an excellent shade tree. Shonts says to pick a spot where your tree will have plenty of room to grow. Make sure the tree is planted at least 20 feet away from above-ground wires, underground pipes or wires, sidewalks, and permanent structures like your home or garage. The white oak can be found in every county in the state. It grows best in upland areas and on slopes. It is not a tree that grows well in wet soil. Shonts suggests making the planting hole two to three times larger than the root ball to allow the new tree’s roots to spread out. Then position your tree so that the area where the roots meet the trunk is at or slightly above the ground. After watering, cover the planting hole with two to three inches of shredded hardwood or leaf mulch. Shonts warns: Do not over mulch the tree or “volcano” mulch, keep it two to three inches away from the trunk. Be sure to provide proper tree maintenance for strong, healthy growth. White oaks are subject to leaf eaters and other bark diseases.

heaton does not have an Olympic speed skating track, but a trio of speed skaters are still happy to call it home. Four-time Olympic speed skater Nancy Swider-Peltz (above), 62, grew up in Park Ridge and pursued a career in competitive speed skating while attending Wheaton College. The opportunity for her husband and classmate, Jeff Peltz, 60, to coach football on campus led them to stay and raise their children—Nancy Jr., 32; Jeffrey Jr., 29; and Johnny, 25—here. “We love the community and the schools,” Swider-Peltz says. Coached by their mom, Nancy Jr. and Jeffrey Jr. also pursued competitive speed skating (see sidebar). Though they commuted back and forth to Milwaukee to train at Pettit National Ice Center countless times over the years, Wheaton always remained home base. “Downtown Wheaton has a small, old-time feel, and though some things are coming in that are new, there are shops that have been there forever,” Nancy Sr. says. he Swider-Peltz family has myriad competitive speed skating credits to their name. In 2002, Nancy Sr. and Nancy Jr. were the oldest and youngest speed skaters to compete in Olympic Trials at ages 45 and 14, respectively. Nancy Sr. was the first U.S. Olympian to ever compete in four winter games—1976, 1980, 1984, and 1988—and has coached the Park Ridge Speedskating Club since 1985. Coached by their mother, Nancy Jr. and Jeffrey Jr. have competed internationally at the Speed Skating World Cup, as well as the World Championships. Nancy Jr. competed in the 2010 Olympics in Vancouver, and placed ninth in the 3,000-
meter event and fourth in the team pursuit. Since retiring from competition, the Swider-Peltzes have visited local schools to speak about navigating the successes and failures of competing as elite athletes. As of press time, Jeffrey Jr. had just completed a speed skating-inspired gallery show as part of his senior project as a studio art major at Wheaton College. After graduation, he plans to work as a freelance artist and promote his own clothing line, Uesay Apparel. Nancy Jr. coaches beginner speed skaters and also hand-makes leather journals and engraved wooden art pieces sold through her online boutique, NancyJr.com.

Begin in a pushup position with one knee bent in towards your chest and the other leg straight. (The foot of the straight leg should be wider than shoulder width apart.) Jump feet in the air and mirror the starting position with the opposite leg. Land softly on feet and continue for 20 seconds.
With spring right around the corner, this “Bodyweight Burn” workout will help you build muscle and elevate your metabolism, which will ultimately help you burn fat. The best part? No equipment is needed! GOAL These two circuits include four movements each. The first is designed to help you get stronger and build muscle—it’s important you do this part first. The more muscle you have on your body, the more fat you’ll burn throughout the day at rest. The second circuit is designed to get your heart rate up and help you burn more calories throughout the day. PLAN For each circuit, use a timer and allow it to keep running once you get started. You will perform each exercise for 20 seconds, followed by an immediate 20 second rest period. When the 20 seconds of rest is up, you will begin the next movement on the list. Once all movements are completed, you can either take a break or—for more of a challenge—go right into the next round. Repeat the first circuit three to six times, then move on to the second, highintensity circuit. This second circuit is designed to get your heart rate up, so make sure you go at your own pace and be safe. CIRCUIT 1 STRENGTH & CORE LUNGE HOLD
Begin in a half-kneel position with your right leg out and your left knee on the ground. Lift your left knee off the ground and keep it as close to the ground as you can and hold for 20 seconds. Repeat on the opposite leg.
Begin in a plank position with elbows slightly out in front of your shoulders. Once knees are lifted, squeeze glutes and drive elbows toward toes. If you’re doing this correctly, you’ll feel your abs fire up in a plank like never before!
SQUAT JUMP
From plank position, drop into a pushup, keeping elbows tight to body. Drive body away from the ground, leading with hips toward ceiling. Sink heels down and push head through arms, as in downward dog yoga pose. Return to pushup position and repeat.

H
eroin drove Eric to do things he never dreamed he would do: lie, steal, and even sleep in his car in the middle of winter. Anything just to get high. He started doing drugs in high school and knew he should stop; he just didn’t know how. Eric’s brother encouraged him to check out Serenity House (serenityhouse.com), a local substance abuse treatment center. Thanks to its unique alcohol and drug program, Eric is now clean, working full time and looking forward to building a career. SAFE HAVEN Serenity House was established by Henry Tews in 1985 on an abandoned 32 APRIL 2019 / NAPERVILLEMAGAZINE.COM
farm in Addison. A recovering alcoholic himself, Tews created a safe environment that allowed clients to work during the day and receive counseling in the evenings. What started as four-bedroom cottage has now grown into a residential program housing 32 men and 12 women. In addition to these facilities, Serenity House offers both adult and adolescent outpatient services, DUI programs, and seven recovery homes in Addison, Villa Park, and Naperville. Mark Buschbacher has been serving as executive director for Serenity House for the past two years, after a successful 30-year career in the health
care industry. Wanting to gain a better understanding of the disorder that affected his family, Buschbacher jumped at the opportunity to lead a program helping those recover from a life of substance abuse. “What makes Serenity House so great is the combination of our halfway house and recovery home programs. Other agencies may have halfway houses or 30-day inpatient programs, but no one else in DuPage County has a combination halfway house/recovery program like we do,” Buschbacher says. Many clients arrive at Serenity House without job or life skills. According to Buschbacher, an important part of one’s recovery is the discipline and accountability that comes with having a job. If a client comes to Serenity House without a job, the staff helps them find one. Clients are required to work during the day and return to the halfway house by 5:30 p.m. “Our founder Henry Tews believed strongly in having a community dinner. They also talk about being held accountable for washing their clothes, doing the dishes, and other chores—things that those of us who aren’t addicts take for granted.” Buschbacher points out that while the organization has existed for only 34 years, Serenity House’s staff has an average tenure of 23 years. “They’ve seen the various challenges our clients have gone through. Nevertheless, Serenity House has thousands of success stories, including that of recent resident Ashley, who credits the staff with teaching her to love herself again. “There are times though when some of our best clients have become our biggest disappointments,” Buschbacher says of those who relapsed. “It can be a roller coaster, but our staff continues to put their hearts and souls into the job. They are truly an inspiration motivated by a strong sense of hope and the opportunity to change a life.”

orthern Illinois Food Bank’s Executive Women’s Council held its fourth annual “A Cup of Hope: A Garden Tea to Solve Hunger” fundraiser on Sunday, March 3, at Embassy Suites in Naperville. Over 300 guests enjoyed a traditional afternoon tea party, complete with an extensive tea selection, finger sandwiches, scones, and pastries. Guests sipped on Prosecco as they perused silent auction and raffle items. Speaker Jill Kilhefner, who is an advanced master gardener, a registered dietitian, and an amateur beekeeper, educated the group on the importance of bees and other pollinators in home gardens and beyond. Event proceeds benefit the food bank’s child nutrition programs. “We’re so excited to once again raise funds for child nutrition programming … and are so grateful for the outpouring of generosity we see each year from the community during this event,” says Executive Women’s Council member Gail Hernly. Last year, the food bank distributed 1.6 million meals in 13 counties through its backpack, after school, supper, and summer meal programs.

NCHS football coach Mike Stine
After coaching 35 years, Stine gets Hall of Fame call
W
hen Naperville Central football coach Mike Stine was inducted into the Illinois High School Football Coaches Association Hall of Fame on March 30 in Champaign, he likely saw some familiar faces. Stine, who has spent his entire 35-year career at Naperville Central, is the son of Hall of Fame coach Everett “Abe” Stine, who won 222 games and a state championship in 37 years at Byron, some 75 miles northwest of Naperville. The elder Stine and his wife Donna live in Texas, but spend the football season here attending all of their son’s games. “It’s really special,” Stine says. “My dad is my idol and the one I try to model my
coaching career after. I’ve been climbing to get to the top where he’s at.” Stine has coached with several Hall of Famers, including Larry McKeon and John Jackson. He was an assistant coach when the Redhawks won the Class 6A state title in 1999, and succeeded Hall of Famer Joe Bunge as head coach in 2006. “I think it’s awesome,” says Naperville Central assistant coach Andy Nussbaum, who has worked with Stine for 25 years. “It’s hard to follow a Hall of Famer, and it’s hard to live up to your dad, but Mike has done that and then some. “He’s been so great for our football program and our school. There are a lot of things that go on in our football program that people don’t know about, and

the positive things that happen are due to Mike Stine’s good, solid core values.” In 13 seasons, Stine has guided the Redhawks to a 95-44 record, including the 2013 Class 8A state championship. He rises before 5 a.m. every day to work with his players. “I don’t feel like I’ve gone to work a day in my life,” says Stine, who also coaches girls track. “The reward is having an impact on kids’ lives and trying to help kids grow into positive young adults. I couldn’t ask for anything better.”

LIFE OF THE PARTY This transformative husband-and-wife team creates charming, dreamy spaces for weddings and more By Annemarie Manion
W
hen Ivi Rizzato entered the banquet room where her wedding was held last year, she burst into tears of happiness as she saw for the first time how the humdrum room had been turned into just the venue she had always dreamed about. “I wanted a mystical fairy tale—all white and pink with accent trees,” recalls Rizzato, who lives with her husband, Matthew, in Chicago. “The uplighting really helped. The whole room had a pinkish-purple glow.” The decor of the room, which was dominated by dull brown hues and brass, had been transformed into her vision thanks to the efforts of the Satin Chair, an Ogden Avenue business in 48 APRIL 2019 / NAPERVILLEMAGAZINE.COM
Naperville owned by Travis Meils and his wife, Natalia. The couple started the business in 2009 supplying chair covers and table linens, and found a market as the country was recovering from the recession. “A lot of banquet halls weren’t remodeling their spaces or buying new chairs,” Travis says. “Everybody wanted covers for the chairs that weren’t looking too fresh.” Over the years, the business has grown to include backdrops, ceiling and wall draping, lighting, chandeliers, trees, dance floors, centerpieces, and anything else needed to turn a run-of-the-mill space into something truly magical.
“Over the years we just kept adding things. We’d get requests from brides and we’d say, ‘Why not?’ ” says Travis. “The draping really transforms a space,” adds Natalia. “You can make the VFW look like a totally different venue.” Travis, who previously had a landscaping business, had been studying for his pilot’s license when they started the the Satin Chair. Natalia, who is from Ukraine, had worked in marketing and business, but always had a passion for decor. She used to decorate her church for the holidays. “We always had to come up with something from scratch,” she says. “My country didn’t have all the amenities this country has.” The Satin Chair often works with clients who’ve pored over Instagram and Pinterest looking for ideas that will make their weddings stand out. Natalia says people often think they will not be able to achieve the look they yearn to have. “They’re seeing all these things, but they don’t think it’s affordable or reachable, or that it’s too hard or complicated,” notes Natalia. “But we can create any vibe they want.” The Meilses agree that most couples want a wedding that isn’t cookie-cutter. “They want the room to feel like it matches their characters,” Travis says. “They want it to be very personalized.” The business has planned weddings with many different themes. For a Game of Thrones wedding they decorated in grays and black with red lighting. For another with a winter wonderland theme, snowflakes were projected on the walls. And a couple who loved the Beatles enjoyed a projected yellow submarine on the dance floor. An outdoorsy look is a very popular request for clients.

Turning a couple’s ideas into reality starts with an appointment at the Satin Chair. Appointments last anywhere from half an hour to three hours, depending on how much help the couple needs to express their vision. The company uses demonstration tables and switches out linens and other decor items to give couples an idea of how the finished product will look at their wedding.

“Some people are shy or they don’t want to be mean, but it really helps me to know what direction to go in,” says Travis. The Satin Chair also designs decor for graduation parties, corporate parties and other events. As wonderful as those gatherings are, the Meilses agree that weddings are special, particularly when a couple sees their venue for the first time. “It’s kind of like a reveal,” says Natalia. “Their eyes get wide and they say, ‘It’s so much better than I imagined.’ ”

HOME The fireplace surround features 12-by-24-inch tile, which is a nod to the modern aesthetic, flanked by texture created with white-onwhite millwork and geometric artwork. Bowman kept some of the larger furniture pieces in the home neutral, so pops of color could be incorporated into artwork and accent pieces.
Most furnishings in the home are new, says Bowman, as the couple didn’t bring a lot from their starter home in the city. She helped them choose comfortable, but refined, pieces that weren’t too fussy, including this John-Richard console table, a Bernhardt sectional, and Caracole accent chairs.

A close look in the kitchen reveals a two-tone treatment that “creates some visual interest in the space,” says Bowman. The hue of the refrigerator and hood provides contrast to the white cabinets, as do the door style and hardware in the refrigerator column. Another design solution that Bowman used was a pie-shaped island to help circulation in the space. “It’s larger, so it can be used for entertaining, but if it was a square or rectangle, it would cut into the area where you would walk,” says Bowman.

hen a couple works with a developer to build their dream home, it’s typical for Leslie Bowman, owner and designer with the Design Bar, to help a couple make flooring, fixture, and furniture selections. But she recently worked with a Chicago couple who had a unique option when building their home—they also were able to choose who would live next to them in the suburbs. In total, four sets of friends worked with Burr Ridge–based McNaughton Brothers to navigate the rezoning process to turn a five-acre parcel into a five-home cul-de-sac. “I knew two of the couples growing up in the Burr Ridge-Hinsdale area,” says Bill McNaughton. The fifth home was purchased later in the process, and McNaughton says the five families are now all friends. “It really couldn’t have worked out any better.”—MD

A DRAMATIC ENTRANCE Supper’s back in style at Carnivore & the Queen By Lisa Arnett
W
hen it comes to dining out, the west suburbs have plenty of seasonal shared-plates spots and upscale bars with fancy burgers on the table and sports on the TVs. When husband-and-wife team Chris Matus and Kelli Lodico-Matus opened their first restaurant, Carnivore & the Queen in Downers Grove in February, they decided to go an entirely different direction. “What we’re doing is bringing back that bygone era of the supper club,” Matus says. As a kid growing up in the ’70s, Matus has fond memories of dining at supper clubs on family vacations in 60 APRIL 2019 / NAPERVILLEMAGAZINE.COM
Minocqua, Wisconsin. Though Lodico-Matus was never enthused about continuing that vacation tradition with their kids—“Can you get a tan there?” she’d say to her parents—she surprised Matus with a birthday trip there three years ago, and the family had a blast visiting half a dozen supper clubs in a few short days. “They all have their signature thing,” Lodico-Matus says. “Some have prime rib. … [At another] they have this huge cheese spread that you can have at the bar and you get a drink there first and then they take you to your table.” What they all share is the desire to showcase
START WITH A DRINK Cozied into the corner of a strip mall, Carnivore & the Queen is a sexy little space with dark, inky walls and gilded accessories. For an intimate date, ask for one of the pillow-strewn booths; for a more social meal, opt for the eightseat bar or high-top communal table. “We wanted to take the old paneling and walleye and bluegills that you would normally see in a Wisconsin supper club and transform it into a cool, swanky [place where] I feel like I’m in downtown Chicago, but here I am tucked into Downers Grove,” Matus says. A supper club visit traditionally kicks off with a cocktail, and the drink menu here was thoughtfully crafted with local spirits, such as gin from Skeptic Distillery in Melrose Park and rye from Almighty Spirits in Northbrook. There are four different takes on the old-fashioned, including Wisconsin-style (made with brandy and the requisite cherries and orange wedge) and a new-school twist with basil-infused elderflower liqueur. For a real showstopper, though, order a drink finished in the tableside smoking chamber, such as the rye-based Civil War. A bartender will wheel over a drink cart and place your cocktail inside a hinged glass box that fills with cherry wood smoke. Moments later, he’ll open the door so the aromatic smoke wafts out of the chamber as you retrieve your glass. Theatrical, indeed. HOPE YOU’RE HUNGRY The Matuses both went to culinary school and have worked in hotel, catering, and restaurant settings, but their family recipes fuel much of the menu. “I learned at a very young age to cook

the owners’ family recipes and treat diners to an evening-long experience— and that’s what the Matuses are aiming for with their modern take on a classic supper club. Lodico-Matus came up with the name while on a walk one day. “The name Carnivore & the Queen to me sounded indulgent, grandiose, and a bit … theatrical?” she says. “I thought it described our personalities … and it stuck! Most importantly, everything on our menu are foods we like to eat and indulge in—with no guilt.”

Inspired by the wedge salad with homemade dressing that her mother used to make, she’s serving an iceberg wedge topped with sweet candied bacon, tangy marinated tomatoes, charred corn, and one of four housemade dressings (the Ooo-Lala Garlic was my personal fave). The salad is part of the restaurant’s five-course supper, an impressive value at $35. Other courses include citrusy walleye ceviche with dreamy house-baked bread, a relish tray with creamy beer cheese, and olive-gorgonzola dip and roasted chicken with root vegetables. There are 10 or so other entrées— including garlicky shrimp de Jonghe, mussels with little neck clams and a bone-in rib eye—that you can order separately or as part of the supper for an upcharge. The most decadent choice is a 22-ounce double-cut veal chop topped with lump crabmeat.

“[When someone orders it,] the restaurant comes to a halt because it’s huge,” Matus says. “It looks like what Barney [Rubble] would be driving in The Flintstones.” There’s just one dessert on offer: a killer Key lime pie made from a treasured Matus family recipe that incorporates ginger for a touch of spice and salted cashews for a rich, nutty crust. If you’re not a pie fan—and in that case, you’re missing out—there are also some thoroughly throwback dessert drinks, such as a grasshopper or brandy Alexander. At the evening’s end, I left refreshed to see a new restaurant zigging while everyone else is zagging. This modern supper club remix is a novel addition to the local dining scene—and a cure for the common date night.

Sauté ginger, garlic, and chili in rice oil. Add red onion and sweat lightly, stirring constantly. Add sake, rice vinegar, soy sauce, and sugar, then bring to a quick boil and cook until onions are al dente. Strain and reserve.

APPLE MUSTARD DRESSING 1 Granny Smith apple, grated 3 tablespoons white onion, grated 5 tablespoons rice vinegar 6 tablespoons Yamasa soy sauce 3 teaspoons sake ½ tablespoon caster sugar ¼ tablespoon shichimi 5 tablespoons roast sesame seeds ½ tablespoon fresh garlic paste ½ tablespoon fresh ginger paste ¼ tablespoon spring onion 2 tablespoons brown mustard seeds 1 tablespoon sesame oil 1 tablespoon rice oil 4 tuna fillets 1 Mix the apple and onion in a medium bowl with the rice vinegar. 2
Combine soy sauce, sake, caster sugar; whisk to dissolve. Add shichimi, sesame seeds, garlic, ginger, spring onion. Add to apple mixture.

Warm the mustard seeds in a small pan gently to extract oils and flavor. Crush seeds with the back of a knife and add to dressing.

GARDEN PARTY Oak Brook Hills’ new executive chef redefines hotel dining en masse
O
ak Brook Hills Resort is putting an exclamation point on its multiyear, $25 million transformation with the introduction of Chicago-native Victor Martinez, who took over as executive chef in October. The culinary program now under his purview includes a farm-to-table dinner concept called B., the gastropub Tin Cup, as well as special event banquets and holiday brunches. Martinez’s commitment to seasonal menu diversity will be easier to execute due to a unique and substantial resort resource: 2,000 square feet of on-property garden space that includes dozens of beehives. He and his staff (including 36 to 45 employees during the golf season) work with grounds crews to grow a wide variety of ingredients, including specialty herbs, vegetables, fruits, and greenery that will augment his flavor-focused philosophy. What isn’t grown on property will be sourced from 90 local farms that supply produce, poultry, beef, and dairy items to the golf resort. “I see through ingredients, into their soul,” says Martinez. “Where they came from, what they’re intended to be. My cooking philosophy is to tell the ingredients’ story.” Guests of the resort’s popular holiday brunches perhaps have the best seat in the Oak Brook Hills house to sample a wide variety of dishes influenced by Chef Martinez, including the resort’s Easter from the Chef ’s Table event on Sunday, April 21. The elaborate brunch will include typical family favorites—pastries and an omelet station—plus elevated adult offerings like almond bisque with caramelized onions and lavender honey madeleines, or a brined and pan-seared chicken breast topped with toasted oats and a porcini demi-glace. “The honey-smoked bone-in ham is my play on a Cuban sandwich,” admits Martinez, who will outfit that station with piles of caramelized onions, pickled cucumbers, spicy mustard, mango salsa, and pretzel rolls. The family-friendly feast includes children’s activities, including a petting zoo. Tickets to either seating time—10 a.m. or 1 p.m.—are traditionally sold out in advance of the holiday. After the vows are recited and the first dance is waltzed, every wedding guest is ready for the sweet stuff. Though a wedding cake should provide the decadent finale to a joyous day, it also should reflect the vibe of the celebration at large. We enlisted the expertise of local bakers to share how they created specialoccasion cakes in distinctly different styles, from an oh-so-trendy naked cake to a towering, sparkly stunner.

Wedding confections for any style celebration, from modern to traditional
Yellow cake provides just enough contrast against white buttercream. “We can do a seminaked cake with chocolate or fruit flavored [frosting], but 99 percent of the time, it’s vanilla buttercream,” says Michelle Adams, CEO of the Sugar Path in Geneva.

TRADITIONAL For a classic bridal look
“This cake is an example of really clean and simple design,” says Toni Marie Cox, chef and proprietor of Toni Patisserie in Hinsdale and Chicago. The cake itself is vanilla génoise, a French-style sponge cake, filled with lemon mousse and raspberry preserves. Cox frosted the cake with Swiss meringue buttercream, which is made with egg whites, sugar, butter, and vanilla extract that’s whipped to a smooth, creamy texture. “We use a really high-quality butter—it’s 82 percent butterfat—so it has a really nice balance of richness and the meringue helps to lighten it up.”
Cox finished off the base of the cake by piping on a simple pearl border with Swiss meringue buttercream.

Cox prefers to use edible flowers on her cakes; this one features blue delphiniums, white lisianthus, Champagne anemones, and white heather arranged in an asymmetrical design. “When I’m putting flowers on a cake, I like to have your eye move around the cake a little bit,” Cox says. She also garnished the cake with fresh plums to coordinate with the couple’s sweets table that featured an assortment of fruit-themed treats, including marzipan figs and candied citrus slices. “I loved that one plum that just seems to be casually placed on the stand,” Cox says.

For a dazzling black-tie bash For finishing touches, Greatrix added a matte black “Mr. & Mrs.” topper and white blooms provided by the couple’s florist.
Inspired by the bridesmaids’ gold lace gowns, Greatrix created edible lace by pressing a sugarbased paste into a mold. When dry, “it bends like lace, it feels like fabric and it’s flexible,” she says.
When you have a big guest list, you’ll need a big cake. Victoria Greatrix, owner and pastry chef at the Quintessential Cake, designed this dramatic beauty to feed 175 guests at an elegant and formal holiday season wedding. Though it appears to be five tiers, it’s actually six, with the tallest tier made from two identically sized tiers stacked one atop the other. Taking a cue from the couple’s gold glitter invitations, Greatrix dusted the second and top tiers with sanding sugar that she dyed gold to match the lace details. “[The bride] wanted something festive because it was a Christmas wedding,” she says. To emulate sequins, Greatrix cut tiny discs out of fondant, painted them gold and applied them one by one to the cake’s first tier. She also wrapped real fabric ribbon around the base of each tier.

For a boho barn wedding As rustic-chic barn and backyard weddings gained popularity, “naked cakes” became a musthave for couples looking for a more casual look for dessert. “Naked cake is pretty much how it sounds: It’s cake without any or without a lot of frosting on the outside,” says Michelle Adams, CEO of the Sugar Path. A true naked cake has frosting between the layers but none on the exterior; a seminaked cake, like this one, has just a thin coating of buttercream that allows the texture and color of the cake to peek through. The choice is not only about appearance, Adams says: “Some people pick out this cake mainly because they do not like frosting.” The Sugar Path 315 W. State St., Geneva 630.262.3353 thesugarpath.com
Adams thinks that thoughtful garnishes can make this work for any style of celebration. “You can definitely make a naked cake look very rustic for a farm wedding, or you can also make it look great in an industrial setting … or a more elegant venue, where the flowers start at the top and go all the way to the bottom,” Adams says.

“It’s upscale and chic with a little bit of edge,” says Julie Lopez, owner and designer at Julie Michelle Cakes, of this black and gold masterpiece. “I like to create taller tiers. … I just think it’s a more modern take on a wedding cake.” The first and second tier are six inches tall, versus the traditional four inches. “It’s fun because you add more cake layers on the inside: six layers of cake and five layers of filling,” she says. “Sometimes it’s hard for the venue or catering [staff ] to cut it, but they take one for the team for the price of beauty.” The top tier has four cake layers with three layers of filling. “It’s the perfect size to save for your one-year anniversary,” she says. Jet black fondant is a head-turning alternative to traditional bridal white. “A lot of people are nervous about eating it or getting black in their mouths, but you really don’t,” Lopez says. “Oftentimes the fondant will just peel right off at the end of your slice, so you don’t even have to eat it.” Lopez used two different metallic mediums to give the fondant its sparkle. First, she mixed gold luster dust—a decorative metallic powder—with lemon extract to make an edible paint. She applied it using a thin wire rather than a paintbrush. “I would dip it in the paint and pull it across the surface … the more wild, the better,” she says. Next, she applied edible gold foil. “It comes in three-by-three-inch squares and if you breathe, it will just blow away; it’s so beautiful and thin,” Lopez says. “I added that on and used a paintbrush to disperse it so it was more organic.” To give the top tier some contrast, Lopez mixed a bit of white fondant into the black fondant to achieve a marbled effect. “The top little guy, there should be a little something extra to him so he doesn’t get lost,” she says. 78 APRIL 2019 / NAPERVILLEMAGAZINE.COM

For a feminine fete “This is our most popular design,” says Alicia Gozum, owner of Cali Girl Cakes. A crown of fresh pale pink and white roses provides texture and polish. “We can also do silk flowers or we can make paste flowers,” she says. Gozum coated the top tier in meringue buttercream before covering it with pink fondant. She then used a diamond-shaped tool to create a dimensional geometric pattern that resembles quilting. “You can’t press too hard or you’ll cut the fondant, but if you press too lightly it won’t make an impression,” she says.
Candy pearls called dragées mark the corner of each diamond shape. “We use a very thin paintbrush and put a little dab of water on it and handattach each dragée,” Gozum says. The bottom tier is covered with pink buttercream rosettes that are piped on by hand. “We use a onemillimeter star tip [on a pastry bag] and then we just go row by row,” she says.

From the Queen Mother and Princess Diana, to Kate Middleton and Meghan Markle, royal weddings have always been cause for celebration. Not one, but two royal weddings in 2018 are influencing this year’s everything— from rings and florals to gowns and getaways. We scoured the suburbs for all things regal, so every local groom and bride can tap into that royal British vibe. By Michelle Dellinger

here have been 66 monarchs of England and Britain over the last 1,500 years, and there are no less than 58 living descendants of Queen Elizabeth II, including three generations of princes, dukes, and princesses in the country’s current line of succession. Much less complicated is the lineage involved in Don and Donna Wolsfelt’s family business—daughters Dawn and Vicki Wolsfelt now own and manage the expansive bridal and prom salon in Aurora. Wolsfelt’s has evolved from a floral business to a full-service bridal salon with 10,000 square feet of wedding and bridal party dresses, tuxes, and accessories. Four decades in the business have given Dawn and Vicki a broad look at 2019 wedding dress styles. “Long sleeves are definitely a trend right now,” says Donna, including off-the-shoulder styles. Both sisters agree that the streamlined looks that all royal brides choose are trending in 2019. “Simple, classic, and understated are all very strong,” says Vicki. Brides who want a touch
of individual style can look for an underlying color, or accessories like veils. “Cathedral veils are making a huge comeback,” says Vicki. “It adds a lot of drama to the look of a gown.” Although veils come in a variety of lengths—from 20-inch modern veils that just cover the face, to dramatic cathedral-length veils like Meghan Markle’s—Vicki recommends adding a long, coordinating veil to any dress with a soft-flowing skirt. “It looks very romantic and whimsical,” she adds. Sue Cerelli, who owns Bri’Zan Couture in Naperville, agrees. “Cathedral-length veils that are very embellished are absolutely on trend right now.” Bri’Zan specializes in custom-designed dresses and veils, so brides can add sleeves or embellishments to create any style. “We can customize veils to match the dress exactly. Not many stores do that.” Although she agrees that the clean, classic looks of the royal weddings have influenced today’s styles, a lot of Cerelli’s brides are adding three-dimensional elements to their gowns, such as encrusted crystals and pearls. “It adds the perfect, elegant touch to any gown and silhouette shape. All-over sparkle is very daring and sophisticated. You want it to be classic, but on-trend as well, with some modernization.” The elegant Olyssia gown from Maggie Sottero (The Crystal Bride, Geneva, $900 to $2,100) features a bateau neckline similar to Meghan Markle’s, with lace illusion sleeves and a detachable overskirt.

hile uncommon in American weddings, it’s British tradition to have children serve as bridesmaids and pageboys. Both 2018 royal weddings included 10 children in the bridal party; Prince Harry’s included his nephew Prince George and niece Princess Charlotte (Prince Louis, all of 3 weeks old, did not attend). Although white flower girl dresses are pretty common at any David’s Bridal
(davidsbridal.com), we came up short finding a local vendor for the British Blues and Royals frock coats for the juvenile gents in your ceremony. But if suburban malls don’t have it, you don’t need it… Head to Wave Kids at Stratford Square Mall (Bloomingdale) or Kidco at Yorktown (Lombard) to find formal attire for the smallest members of the your wedding party.

loral trends in 2019 are all about a neutral, white and green palette, says Jason Williquette, who is the lead wedding designer at Flowers for Dreams. “That lush green gardeny type of vibe is definitely different than a stuffy floral-forward look,” he says. “Adding blooming branches with delicate organic texture is a newer way of looking at floral pieces.” Floral designs for royal weddings are heavily influenced by meaningful gestures. Williquette recently worked with a bride who grew up in the South, so magnolia branches and gardenia meant a lot to her family. “We’ve also seen a slight trend in the use of delicate blossoms,” he says, “like stephanotis, which is a very classic floral choice that the previous generation carried.”
This bride’s cascading bouquet of stephanotis and lily of the valley mirrors the flowers her mother carried, adding local spirea blooms as a modern twist.
Every royal wedding bouquet since Queen Victoria’s ceremony in 1840 has included a sprig of myrtle, which symbolizes hope and love.
Kate Middleton’s 12-carat blue sapphire engagement ring originally belonged to Harry, not William. After Princess Diana’s death in 1997, Prince Charles encouraged his sons to choose mementos from her possessions. Harry chose the engagement ring and William chose a Cartier watch, but the brothers made a royal swap when William decided to propose to Kate. While it’s not likely that locals would enlist Garrard’s of London— the Crown Jeweller—to create their engagement masterpiece, local companies carry similar nontraditional rings adorned with colored stones. WRITING AND PERFORMING You can write all the jokes in the world, but it doesn’t actually become a joke until someone laughs at it. Creating new content, staying fresh, developing a timing and a delivery, all starts with writing and performing. ENERGY OF A LIVE PERFORMANCE Standup is one of the purest forms of art, in the sense that you’ve created something and you instantly know if it’s good or not by the response of the audience. I also love to make people laugh.
BEING A 2015 SEMIFINALIST ON LAST COMIC STANDING LCS was dope. It definitely ranks up there with my other standup experiences. I wanted to go further, but making it to the top 40 after they had looked at over 5,000 comedians is something to feel good about. In the end, it’s all about validation. Everyone needs it in their line of work, and with standup, entering comedy competitions is a good way to validate that the way you write, the way you perform, and your overall thought process is good enough.
