Hot Smoked Salmon, Asparagus, New Potato Salad & Raw Fennel Serves 2

By Pete Howes, Pastry Chef at Ashdown Park Hotel & Country Club

Ingredients

• 350-400g hot smoked salmon • 200g new potatoes • ½ x fennel bulb • zest and juice of 1 lime • 4 asparagus spears • 1 bunch watercress • 100g mayonnaise • ¼ bunch of chives, finely chopped • handful roquette leaves • 150ml olive oil • 1 teaspoon wholegrain mustard • 3 tablespoons honey

Method

6. Place the asparagus, fennel and watercress into a bowl and add a small amount of dressing, just enough to coat the ingredients.

1. Boil the new potatoes in slightly salted boiling water for approximately 10 minutes; when cooked strain off the water and leave to cool down naturally.

7. Place some new potatoes in the middle of the plate, place the salmon on top of the potatoes, followed by the fennel mix finish with some more of the dressing.

2. When the potatoes have cooled, add the mayonnaise, lime zest and juice and also the chopped chives.

8. This is a great summer dish to enjoy with a chilled bottle of English white wine!

3. Then very carefully using a Japanese mandolin or a sharp knife, cut the fennel into thin slices and place into a bowl. 4. Take a vegetable peeler to create ribbons from the raw asparagus.

Schools from all over the UK travelled to K2 to take part, where competition for medals is always fierce. Millie beat the previous record by .01 of a second coming home in 14.25 seconds. She received her medal from London 2012 Olympic 200m breaststroke silver medal winner, Michael Jamieson. Well done Millie!

A Card Indeed! The Extravagant Earl

The Prince of Wales (centre with stick) and Earl of Sheffield 1896 Throughout 2017, Sheffield Park and Garden will be looking at the life of ‘The Extravagant Earl’, Henry North Holroyd, 3rd Earl of Sheffield. Born in 1832, Lord Holroyd was a member of parliament before he succeeded his father in the earldom in 1876. Most of his spare time was taken up by his love of cricket, however he also loved travelling, made many changes to the garden and was very involved in local issues, not least of which was the building of the railway - what was to become the Bluebell Railway with Sheffield Park as one of its stations. He never married, but in 1895 at the age of 63 he adopted Miss Mabel Attenborough, the 24 year old daughter of the local vicar. She lived at the house as hostess and companion until the Earl’s death.

Despite the inevitable ‘tongues wagging’ about this unusual relationship, Mabel was a very independent young woman, and unusual for her time. She enjoyed shooting, fishing and cricket and always accompanied the Earl on his travels abroad. When she moved into the house it was along with a female chaperone and the foreign trips also included her father, suggesting there was nothing untoward about their friendship. The Earl and Mabel hosted many parties and celebrations in the grounds, often with no expense spared. For example, he held an annual children’s picnic. One year, 2000 children attended, bought in by train and were treated to pony rides, firework displays, music, games and a newspaper reported that placed end to end, the picnic tables would have been a mile long! Lord Sheffield was a patron

of the military, having served in India in his younger days. A great supporter of the Volunteer Movement, he offered the use of Sheffield Park for training and encampments. A large mock battle took place in 1894 which was attended by Lord Haldane, Secretary for War and Lord Kitchener. This grand affair involved 4000 men divided into two armies along with horses and even an armoured train moving along the railway between Sheffield Park and Newick & Chailey. After the battle they all retired to Sheffield Park along with the public spectators who were treated to food and drink sold from the pavilions and refreshment tents, roundabouts, model elephants, balloons and in the evening a fireworks display by Brocks. The Earl’s first love and biggest extravagance was cricket. The original cricket pitch was built for him by his father in the mid1800s, but on inheriting the earldom, Lord Sheffield set about creating a world class cricket pitch, suitable to host international matches, complete with elaborate pavilions. The first in 1882/3 was a private pavilion built with ornamental ironwork and its own flower garden. An octagonal ladies pavilion was added to the east side two years later, complete with another roof terrace for the best views; along with a players pavilion and band stand. The Prince of Wales came to watch a match between Lord Sheffield’s XI and Australia in 1896, when 25,000 spectators were also admitted free to see the match. The Earl always admitted the public for free as he felt if a charge was made then visitors might feel inclined to pick flowers from his rhododendrons and crocuses. A man of reason! He would take his cricket team across the world on tour, including to Australia where he sponsored ‘The Sheffield Shield’, a famed inter-continental competition, still played for today. Even in winter he took every opportunity to play cricket. On 17 January 1891 the lakes

There was cricket on UWWP, curling on Middle Lake and football on Ten Foot Pond. The Earl was a great one for collecting strange curiosities. Unwrapping a mummy (extract from 1893 local paper from Roger Packham’s book): “At Sheffield Park on Saturday in the presence of some 40 or 50 of Lord Sheffield’s friends and neighbours, Professor Budge of the British Museum, unrolled a mummy brought by Lord Sheffield from Egypt in the early part of this year. On a number of tables placed together in front of his Lordship’s private pavilion in the cricket ground lay a strange object in human form and from this the experienced fingers of the professor were seen unwinding yard upon yard of brownish linen, brittle with age,

until at length the shapely face and head and small but well moulded form of a priestess of twenty centuries ago was unveiled. A hieroglyphic inscription was thus described by Dr Budge: ‘Look, O Osiris, the President of the Underworld, the Great God, the Lord of Abydys, and do thou protect the deceased Sheret-Meht, daughter of Nes-Heru.’ "At the close of the investigation, which was followed with the deepest interest by all present, the remains of the priestess were returned to the sarcophagus where they had rested for so many centuries.” Among Lord Sheffield’s collection was said to be: The head and feet of Rameses II (statue) from the temple at Karnac, two of the last mummies to be removed Continues over the page. from Egypt, a fragment of the tree under which the Virgin Mary is said to have sat during the flight into Egypt, the pipe of Marshal Blucher picked up at Ligny where he was unhorsed and ridden over by the French Cavalry in 1815, a pair of barn doors retrieved from the battlefield at the Battle of Waterloo... One wonders if he was somewhat gullible?

Poison pen letters/ local disputes. The Earl had a rivalry going back to his grandfather’s generation with his neighbours, the MaryonWilsons. One particular story says that on being banned from the cricket matches at Sheffield Park, Maryon-Wilson had an extra four storeys built onto Fletching watermill that he owned, giving him a view of Earl’s pitch. On learning what he had done, the Earl had some fast-growing trees moved to block the view. In retaliation it is said that Maryon-Wilson would fire his canon from the top of the mill towards the Earl’s land. At one time, the Earl started to receive poison pen letters, one signed ‘Jack the Ripper’ and threatening the Earl with a sharp knife. Unable to find out who had written the letters, the Earl withdrew his patronage of the Sussex Cricket Club, saying that the people of Sussex had not

Eventually it was discovered that the culprit was a local man Mr Glover, whose mother had been moved from her home to live with her other son by the Earl under a recommendation from her doctor who said she was no longer able to live alone. Mr Glover was caught and tried, but was let off when he showed remorse.

A Costly Lifestyle As well as his expenditure on entertaining and cricket, the Earl had many other hobbies and interests that proved expensive. He was integral in developing the railway line that ran through Sheffield Park between Lewes and East Grinstead, supplying the principal funding for the bill to get through parliament, and donating land to the cause. He also loved to travel, and as well as shorter trips on his own yacht, ‘Heloise’, he would take long winter

holidays to places such as Pompeii and Egypt. On one of these trips, he brought back two ancient mummies (one of which he ceremoniously unwrapped on the cricket pitch as described above). We know from auction catalogues that by 1907 Lord Sheffield was starting to sell off parts of the library and art collection. Lord Sheffield died in 1909 insolvent and the property was bought by one of his creditors Arthur Soames. Mabel Attenborough was his heir, although there was nothing left to inherit. William Moore was the head groundsman at Sheffield Park for most of his working life. His diary of 1896 still survives, and gives us an insight into life on the estate, especially during this auspicious year when preparing for the visit of the Prince of Wales.

Discovering a Bug's Life

The National Trust at Sheffield Park need your help! As part of their plans to restore and improve the section of the River Ouse that runs through the Sheffield Park estate, they are holding a ‘Bioblitz’ event on Saturday 1st July 2017. This completely free event gives families the opportunity

and alleviating flooding downstream. Plans also include building a bridge over the river, linking the Sheffield Park parkland with the Ouse Valley Way. Details of the plans will be available for visitors to see during the day.

The Extra Mile At the tender age of 6, Maya Williams, from Horsted Keynes, has been presented with a special letter of congratulations from the Chairman of Mid Sussex District Council after her money raising efforts for charity. Each year, staff at The Dolphin Leisure Centre take part in a day of fundraising for Comic Relief. When Neil and Natasha Williams, who both work at The Dolphin, told their daughter Maya she was so keen to help that she volunteered to do a sponsored swim.

Travelling back to the 60s ‘On the Buses’

© ginoandsharonphotography.co.uk Last month Tunbridge Wells Photographer Gino Cinganelli arranged a hugely entertaining 60s/70s style photoshoot, 'On the Buses' in East Grinstead's High Street during a vintage bus running day. Here he tells us all: I like to create large scale photo shoots with lots of people involved, with local company CDH Events we've recreated The Exorcist, The Rocky Horror Show, The Dark Circus and in February 2017 we put on our biggest most challenging photo shoot to date, The Walking Dead, with a huge team of makeup artists. I am lucky enough that when I announce a shoot I have plenty of willing actors and models who volunteer their time. The result was amazing and has given us a great deal of coverage and interest!

East Grinstead held a Country Bus Rallies day. With this in mind I tracked down the organiser Alan Charman and explained my plan was to fill a bus with people dressed in 1960's and 70's costume, for an 'On the Buses' sitcom-style photoshoot. He was wonderful and made all the necessary arrangements!

But how could I follow that? I always wanted to do a vintage shoot on a vintage double decker bus so I started researching bus hire and learning about old buses. As we all do these shoots on a budget of £0 and its all just for fun, I could not pay the £1000 to hire such a bus for the day. It was then I discovered that

TRAVELLING BACK TO THE 60S ‘ON THE BUSES’ CONTINUED lady who was to tell everyone about her health problems, a vicar who had to bless people while swigging from a flask of brandy, a magician and his partner on their way to an interview, doing Tommy Cooper style tricks which all went wrong and a man on his way home after spending time in prison for a crime he did not commit, the twist was he only had a pair of union Jack Y fronts under his long rain coat! All in all our characters pulled this off perfectly.

I had 3 singers from a 1940's vocal group and I asked them to learn the "On The Buses" song; they had the whole bus singing along. Our job as photographers was to capture the mood, the fun and the laughter and I think we did this well. We are hoping to come back to East Grinstead for an event on 1st October, this time we want to bring with us 50 actors and models all OAP's dressed as punkrockers, we hope to have many on walking sticks, zimmer frames and a couple in wheelchairs, with a team of around 20 makeup artist working with us! All the images from the "On The Buses" are on our website. Thank you to the cast and photographers Robert and Stephanie Sceal. Bridge Cottage: A Wealden Legacy

large, unglazed bay window, extending the full height of the wall up to the eaves. Over time the rafters and upper walls would have been crusted with thick black soot (today Bridge Cottage no longer has an open hall, and the central section has had an upper floor inserted).

The Building Built in 1436, Bridge Cottage is a Wealden Hall House. This kind of building was common across the Weald (the area of the South East between the North and South Down that includes parts of Hampshire, Kent, Surrey and Sussex). Bridge Cottage has some unique features which set it apart from other Wealden Hall Houses, but it shares the same basic three-sectioned layout. Recent archaeological work revealed that an older building once stood on the site of Bridge Cottage, although it is not known when this building dated from.

The southern section contained service rooms; on the ground floor were the pantry and the buttery which stored alcoholic drinks such as beer, ale and wine. A cross passage linking the front and back doors of the house ran between the service rooms on the one side and the main hall on the other. The upper floor would have contained another storeroom or servants’ bedroom.

The main living room of a Wealden Hall House was the central hall, which would have been completely open from floor to ceiling with a central open hearth. Smoke would rise up and escape not through a conventional chimney, but through the tiles and perhaps some form of smoke hatch in the roof. Certainly light and smoke was controlled by shutters on a

external door, access would have been gained via the main hall. A key feature of the Wealden Hall House is the “jettied” upper floor. The floors of the upper rooms in the northern and southern sections extended out beyond the lower wall at the front of the house. The eaves of the roof extended out in line with the jettied floors, making the central hall and the lower floors of the outer sections appear ‘recessed’.

Construction The date of construction for Bridge Cottage has been determined through a process known as dendrochronology: patterns of annual growth rings in wood are used to find the date of timbers. Of course the growth rings vary in width depending on the climate each year creating a pattern of rings, these are then matched to timber of a known age genius!

was inserted in the central section. A small smoke bay was left at the southern end of the hall so that the smoke could escape, this was converted to a brick chimney later in the 16th century. In the middle of the eighteenth century, two brick “lean-to” rooms were added to the cottage. One was placed where the northern section once stood, and another was added to the rear of the house at the southern end.

As the timber was used ‘green’ (unseasoned), this has allowed testing; the date discovered was 1436. Bridge Cottage was built using a framework of oak timbers held together by complex joints and wooden pegs. The walls between the oak posts were filled with rectangular panels of wattle and daub: thin hazel branches woven around small oak posts and covered on both sides with a clay and straw plaster. This way of building used materials available locally and was relatively lightweight but gives good heat insulation and is extremely durable if looked after well. There are still many original panels of wattle and daub in Bridge Cottage now.

Later still, many of the rooms were subdivided and the house was split into two cottages. The floor had also been raised several times by this point, probably to prevent damp and flooding, and the front door was moved northwards into the original hall.

Restoration In 1983, Bridge Cottage was saved from demolition by the Uckfield & District Preservation Society and Uckfield Town Council as an important part of local Wealden history so progeny could have a taste of important dwellings hereabouts. Thanks to a grant from The Heritage Lottery Fund, it has now been extensively restored and today looks much as it would have done in the early 1600s.

Change over time By the middle of the 16th century, open halls were considered less fashionable, and consequently Bridge Cottage underwent changes. The northern section was demolished either through design or, more likely through flood damage and a first floor

BRIDGE COTTAGE: A WEALDEN LEGACY CONTINUED

Owners and occupiers

Renovation work began in September 2014 and was completed in April 2016, it can now be enjoyed by the local people in this area. When dismantling walls or floors, builders took extra care to recover and store any materials for reuse in the construction work. One of the first steps was to remove the floors and dig down to a depth of about 2ft ready for the insertion of the underfloor heating. At this point, archaeologists discovered evidence of an earlier building, including a hearth made of packed stone tiles and flagstones and ceramics which even predated the 1436 house! The first major change to the building was the removal of the second floor from the central hall section to recreate a hall chamber which would have been present around the late 1600s

The second change is the creation of an additional, jettied section above the lean to extension at the northern end to reestablished the original Wealden house appearance. The roof was retiled, half of which by using recovered tiles from the original roof some tiles were sponsored and signed by local Uckfield residents. While the cottage now has a more “authentic” appearance, it has not been rebuilt to its exact original 1436 specifications. For example, the cross passage has not been reinstated, nor has the open hall or the jettied appearance of the upper floors. This mixture of original features, restoration, and alterations from across the centuries means that the cottage itself can give an account of its long and fascinating history.

The names of the earliest 15th and early 16th century residents of Bridge Cottage are lost to history. Since the house is larger than a standard Wealden hall house and the timberwork is of a high quality, it is likely that the original owners were relatively wealthy and locally important. The first known occupier was recorded c.1570 as Thomas Maunser, the grandson or great grandson of Sir Robert Maunser, ironmaster of High Town, Wadhurst (c. 1483). At some point before 1584, Arthur Langworth, an influential local landowner with links to the Archbishops of Canterbury, came to own the cottage. In 1584 he granted Bridge Cottage and its farmlands to Edward Orwell as part of the “Fullyngsmill” Meade. Orwell was a lawyer and was Registrar to the Archbishop of Canterbury’s Court of Arches. The Orwell family owned Bridge Cottage until 1631, when Edward Orwell left the cottage to his sister Joan Hill and her son William Hill. In 1661, Edward Hill (probably William’s brother) transferred the cottage to William Peake, a Lewes merchant and landowner. Continues over the page. BRIDGE COTTAGE: A WEALDEN LEGACY CONTINUED

After Peake’s death in 1685, it passed to his brother-in-law Simon Snell, a merchant and tobacconist from London who moved to Lewes in 1687. Snell left the cottage to his son William in 1709, who transferred it fairly swiftly to a fellow Londoner, Thomas Mitchell, in 1710. From at least 1584 the majority of Bridge Cottage’s owners were not actually the occupiers of the house. From 1660 until the early 18th century the cottage and its farmlands were rented by the Colgate family, and in 1713 Thomas Mitchell sold it to Henry Colgate, the current tenant. The Colgates were active and influential members of the local community in Uckfield. Moving ahead, in 1887 Charles Morris was recorded as a resident of the house on the electoral register. The Morris family continued to live in half of Bridge Cottage (No. 51, later No.1) until 1957. The Johnstone family occupied the other half (No. 53, later No. 3) from 1896 until 1966. The last residents left it in 1966, and in early 1970s the Uckfield District Preservation Society took responsibility for the building.

Goings on at Bridge Cottage In July Bridge Cottage will be taking part in the Uckfield Festival with stocks & pillory, a teddy bears picnic, guided walks and a number of concerts by local musicians. They will also be creating some history by burying a time capsule for future generations. Looking forward to the summer and autumn when they will host the first historic cookery classes, an interactive games exhibition, regular antiques fairs, art exhibitions, craft & photography markets, monthly talks by local historians and a series of concerts & recitals. As Bridge Cottage is a heritage centre, a memory café will be held on a monthly basis for the general public to tell us their local stories and memories.
