ULTIMATE CHRISTMAS PUDDING By Andrew Wilson, Executive Head Chef at Ashdown Park Hotel & Country Club
Mince Ingredients • • • • • • • • • • • •
100g chopped suet 100g mixed peel 100g currants 100g raisins 100g sultanas 100g chopped apple 100g light brown sugar 10g mixed spice Zest of 1 lemon Zest 1 orange 75ml rum 75ml brandy
Method 1. Mix together all of the ingredients in a large bowl and leave to soak for 4-5 hours. 2. After soaking, divide the mixture between four individual small 80mm pudding moulds. Cover each mould with a small piece of tin foil and place in a deep tray, half filled with water. 3. Bake for 45 minutes at 165°C (145°C fan). Once cooked the puddings should be firm to touch. Leave to cool down in the tray 6
or serve straight away with a warm brandy sauce or vanilla ice cream - as it’s Christmas I would go for both! Enjoy and a Very Merry Christmas

Local artist wins national art competition such as Monet and Renoir, and has seen a resurgence recently with competitions throughout Europe.
Local Copthorne artist Robert Nelmes was thrilled to scoop the 2016 Paint Out Norwich ‘Best Freestyle Painting’ award, at the UK’s premier en plein air painting competition. ‘En plein air’ is painting outside. Predominantly using oils, the artist can fully capture the light and atmosphere of the scene by painting on the spot, away from the confines of the studio and not using photographs for reference. It was made popular by the French Impressionist greats
Robert explains his passion for this method, ‘I love painting outside – it is such an exciting challenge! The shifting light and changing weather will always present a greater test to the artist than the safety of the studio can. For me this increases the sense of urgency, promoting a more instinctive reaction and vibrant result.’ He said, ‘It was my first time at the competition and the other artists were hugely accomplished, so it was a great feeling to win the award!’ Huge congratulations to Robert! Robert recently settled in Copthorne, having spent 30 years living in Edinburgh where he worked as a commercial artist with the National Trust Scotland, Diaggio, BP and Standard Life. He was featured in the
2014 Sky Arts Landscape Artist of the Year competition and taught Life Drawing at Edinburgh Drawing School. He has also tutored watercolour painting in Tuscany and Sicily. Of his move to this area Robert states: ‘Firstly the countryside is fabulous and it’s well served by National Trust properties. Its proximity to London, where my two children live and work, was important, along with its wealth of galleries, museums and inspirational people. I’m also less than an hour from the south coast, an area I’ve yet to explore and having lived by the sea for most of my life that’s something I’m really looking forward to doing.’ He has already been busy painting landscapes of of this area, one of which is featured below. WILL’S STORY This story is slightly out of the East Grinstead area, however, we thought it would really interest our readers and we are pleased to be able to bring you this interview with Will Bayley, Gold medal winning Paralympian, who grew up in the village of Groombridge on the edge of Ashdown Forest.
Europeans in 2011 winning a world title had always been something I wanted to do and gave me a lot of belief. What was the biggest factor, do you think, in reaching to the very top of the sport?
Here is a snippet of his story on the way up to the giddy heights of gold medal mania: Born in 1988 with arthrogryposis, a rare congenital disorder that affected all four of his limbs, Will underwent numerous operations at Great Ormond Street Hospital from the age of three months old. He returned to Great Ormond Street for chemotherapy when he was diagnosed with Non-Hodgkin’s lymphoma at the age of seven and it was while recovering from cancer that his grandmother bought him a table tennis table. He joined the Byng Hall Table Tennis Club in nearby Tunbridge Wells and the rest is history! Will became one of the stars of the London 2012 Paralympic Games, featuring in a series of inspirational advertisements for Channel 4’s coverage of the event and winning individual silver and team bronze medals. Since 2011 Will has reached the final of every major championship - World, European and Paralympics Rio was his 6th consecutive major final! In December 2014 10
he was also recognised for his achievements when he won the Disability Sport Award at the inaugural Daily Mirror and Sport England Pride of Sport Awards. When he won gold in Rio, the image of an elated Will jumping up onto the table tennis table and standing in celebration remains as one of the most enduring and memorable of the whole of the Paralympics. Here Will answers our questions about his journey to Rio: What was your journey from winning silver in London 2012 to winning gold at Rio? The experience of London helped me to become a better player and taught me how to handle the big competitions. Losing in the final in London drove me to train even harder. I think the biggest factor was believing in myself through all the ups and downs. In top level sport there are generally more downs than ups and believing in myself really helped me to cope with the difficult times. I’ve also had a great team around me with good players to train with and good coaches and I couldn’t have done it without them. What was the highlight on your road to Rio journey? Winning the World Championship in Beijing in 2014 was definitely the highlight. To win a world title in China (the home of table tennis) was amazing! When you won gold in Rio, what was your and your family’s reaction? I think I was relieved more than anything that I’d done something that I had wanted to do all of my career and achieved something that I knew was really difficult. When I won the last point and jumped on the table it was just pure emotion and adrenalin. My family were really proud as they know how hard I have worked and how much it meant to me. My mum and dad were in Rio to watch me and it was great that they were there to see me win Paralympic gold. Living

until the 1960s it was a very desirable place to holiday and certainly didn’t represent the cheap option!’ The book brings the story up to date with chapters that look at how the ‘British holiday package’ has evolved. For example, the famous Butlin’s chalet which, from having only cold running water in the 1930s, was relaunched last year with every desirable modern comfort.
1936 it was a revolutionary holiday idea. Billy Butlin envisaged his camps as self-contained seaside villages and the huge numbers he catered for allowed him to pay for some of the top names in entertainment.

A Dream Come True For Sandy After much hard work and fundraising Sandy Saunders 93, member of the famous Guinea Pig club, was able to see his dream of a permanent memorial to badly burnt airment in WW2 unveiled at the National Memorial Arboretum in Staffordshire, by The Duke of Edinburgh last month. The Guinea Pig Club was founded 75 years ago by a group of badly injured and burned airmen under Sir Archibald McIndoe's care at the Queen Victoria Hospital. There are now only 17 surviving members and ten of those braved a chilly but sunny afternoon

On September 3rd 1939, Archibald McIndoe arrived at the Queen Victoria Hospital in East Grinstead. He was one of four plastic surgeons seconded by the War Office. Each was allocated one of the armed services in four different hospitals throughout the country. McIndoe had been given the task of taking care of injured airmen in East Grinstead. The choice of East Grinstead as a base was probably dictated by two considerations: firstly, the hospital itself was only three years old and had upto-date facilities. Secondly, it was situated between London and the English Channel, over which most of the sorties would cross and therefore the area in which most casualties would occur. The choice of McIndoe as the head plastic surgeon was either fortuitous or inspired. He came in from day one with an intense desire to help the injured 20
aircrew in every way he could. He realised that these young men, who were mainly in their late teens or early twenties, would be horribly burned on their faces and hands. They would be badly disfigured and think that their lives would be ruined for ever. In addition, they would not be hospitalised for a few

a drinking club but it soon developed into a support network which survives to this day. Sadly, not many original members remain as the youngest is ninety-two, but the friends of the club carry on the work supporting the few that are left and widows of the ones who are no longer with us.
burnt the “hospital blues”, the royal blue uniforms which wounded servicemen were required to wear when not on active duty. Most servicemen disliked being singled out in this way. McIndoe’s men wore their own uniforms. However, he apparently kept a few blue uniforms back, to use as punishment for those who over-stepped the mark. Whether they were ever used in this way is not known. The surgery McIndoe used on his patients was partly based on pioneering work by Harold Gilles, a distant relative, at St Mary’s Hospital, Sidcup. This involved transplanting skin grafts from one part of the body to its recipient part, while still attached to the donor part. The tubes of skin which resulted were called pedicles. This meant that the skin was still being supplied by blood and so greatly improved the chances of success. One of McIndoe’s unique 22
ideas was to treat the wounds in saline baths. His main contribution to the recovery of his patients was the holistic approach he took. This was almost unheard of at that period. Counselling was non-existent and McIndoe’s approach was unique. He encouraged the men to go into the town and mix with the people there. He had already primed the residents to not over-react when they saw the disfigured faces. It worked! East Grinstead became known as “The Little Town That Did Not Stare”.
When the East Grinstead Museum was given the collection of artefacts, images and archives built up over the years by Bob Marchant, the museum decided to use them to raise the profile of their story. The museum was closed for most of November to transform the temporary exhibition space into a gallery devoted to them: we are now the official Guinea Pig Museum. The exhibition opened to the public on November 30th. It will contain the original operating table used by McIndoe and many of the surgical instruments adapted by him. These will be shown in tableaus, with life size mannequins, interactive effects and sound and film recordings. It will bring to life that period of our history which played an important part in the life of our community. Most importantly perhaps, it will fulfil the wish of Archibald McIndoe who said, “One day someone will tell the story as it should be told.”
The patients were well aware that the surgery they underwent was largely experimental, thus explaining why one patient grumbled to The Maestro as McIndoe was affectionately known, “We’re just your blooming guinea pigs.” The name stuck and when the idea of them forming a club was mooted, COMMUNITY BUSINESS DIRECTORY this was the name they chose. What was the most inspirational aspect to participating in writing the ‘Winter’ story in The Best Bear in All the World? Firstly, there was the challenge of trying to emulate the style of A. A. Milne: a writer consummately skilled in the art of seemingly effortless witty prose and sparkling dialogue. Secondly, there was the opportunity to try to think and speak like Pooh, Piglet and the others in a way that was true to characters who are so well known and loved. And, finally, to have the courage (or, perhaps, just the temerity) to introduce a new character into the world of Pooh, inspired by a long-overlooked photo of Milne and Christopher Robin playing with Pooh – and a toy penguin. How do you hope this sequel will be received and what has the initial reaction been? The immediate response has been overwhelmingly positive with readers accepting (even welcoming) Penguin as a new visitor to the Hundred Acre Wood. My chief hope is that people will realise that the writers – Paul Bright, Kate Saunders, Jeanne Willis and myself – along with the book’s illustrator, Mark 26

When we nearly lost Christmas... used, more than in all the year besides, to the great dishonour of God and impoverishing of the realm.’

In the England of the early 1600s, as it is now, Christmas was one of the most important dates in the calendar: a popular holiday and religious festival which had replaced the preChristian winter pagan festival. Men, women and children of all ages indulged in a range of traditional pastimes. Although Christmas was not ushered in as early as it is in the modern era (er...mid-November now!), during the twelve days of Christmas, churches and other buildings were decorated with rosemary, bays, holly and ivy; church services were attended and gifts were exchanged at New Year - patience was required! Gifts were distributed to servants, tradesmen, the poor; great quantities of brawn, roast beef and ‘plumpottage’, minced pies and special ale were consumed, and the population indulged in dancing, singing, card games and stage plays. Of course some over-indulging activities typically led to 30
drunkenness, promiscuity and other forms of excess. In fact the concept of ‘misrule’ was an important element of Christmas. Such traditions as the appointing of ‘The Lord of Misrule’ had their place; he was in charge of Christmas revelries which included drunkenness and wild partying - following on from the earlier pagan traditions. It was precisely this face of Christmas - where revelry led to debauchery - that the Puritans of the 1500s and 1600s objected to and which gave Christmas a ‘bad name’ and led to its near demise in the mid 1600s in England. In addition to this association with immorality and the concept of misrule, another power-play was afoot: Protestant v. Catholic. One of the biggest objections to Christmas by the stricter English Protestants (Puritans) was its popularity among the papist Catholic community. With this backdrop, when the Puritans and Oliver Cromwell took control of government after the civil war, in the mid1640s, they made a definite effort to abolish any Christmas celebrations. Happily, all was not lost! A clergyman, Edward Fisher, counter-argued that those who refused to recognise Christmas had ‘revolted from the Church of Christ’, further stating: ‘Stand fast and hold the traditions which we have been taught, let us make them known to our children that the generations to come may know them.’ Then of course there was the charitable aspect of Christmas that was also argued by a cleric, George Palmer: ‘At such time as Christmas, those who God Almighty hath given a good share of the wealth of this world may wear the best, eat and drink the best with moderation, so that they remember Christ’s poor members with mercy and charity, and this year requireth more charity than ordinary because of the dearness of provision of corn and victuals.’
The argument raged on for several years and was a debating ground for religious intellectuals. But in any case, the common people just simply defied their government and, despite the pressures and regulations, refused to abandon their deep-rooted traditional practices. Even when the churches were not allowed to open on the 25th, the congregations still gathered to celebrate Christ’s nativity. Banning Christmas was one of the factors that made Cromwell’s rule so unpopular. When Charles II was welcomed back from exile and put on the throne, the Puritan customs of suppressing Christmas died away with their rule. Merry England was merry once more. On the Sunday before Christmas, famous Londoner Samuel Pepys noted that his church was decorated with rosemary and bays; and on the 25th Pepys attended morning service and returned home to a Christmas dinner of chicken and shoulder of mutton - without having to look over his shoulder! (pun intended). Christmas was back with a bang and happily has been with us since.
