Raspberry Tart, Pistachio and Raspberry Sorbet By Alex Floyd – Pastry Chef at Ashdown Park Hotel & Country Club

Sweet pastry • 90g butter • 65g caster sugar • 3 eggs • 200g plain flour

Method: 1. Cream together the sugar and butter, then add one egg at a time until incorporated. 2. Mix in the flour to form a dough, then tip onto a floured surface and knead until smooth. 3. Cover with cling film and let rest in fridge until chilled. Roll out the pasty and use to line 4 x 10cm tart cases and blind bake at 180ºc for ten minutes. Take out the oven and brush with egg yolk then set aside.

Raspberry sorbet • 600g raspberry puree (save 100g to put into the tart) • 60g caster sugar • 25ml water

Crème patissiere

Method

• 250g whole milk (250ml)

Bring the sugar and water to the boil, allow to cool, then stir the raspberry puree into the syrup.

• 1 vanilla pod • 50g caster sugar

Pour into a ice-cream maker and churn until frozen.

• 3 egg yolks

To assemble:

• 10g plain flour • 10g corn flour

Method: Bring the milk to the boil with the split vanilla pod and remove from the heat.

Whisk the crème patissiere and pipe into the pastry cases. Using the remaining 100g of raspberry puree, add a layer of puree on top of the crème patissiere, top with fresh raspberries and chopped pistachios, and finish with a nice scoop of the raspberry sorbet. ‘Every School Child in Sussex knew The Guinea Pig Club Story’ McIndoe in theatre, observed by trainee surgeons, orderlies and nurses As the years go by the accomplishments and story of the famous New Zealand native, who came to settle in this area continues to be further recognised on the world stage. And for that reason, an authoritative, investigative book, The Guinea Pig Club, by E R Mayhew has been revised and updated, with a forward by HRH Prince Harry now included, and re-released to tie into a major new film of the same name, starring Richard E Grant and Sam Neill. This much-lauded book tells of two of the most diametrically opposed yet COMMUNITY BUSINESS DIRECTORY mutually supportive aspects of war: the ability to inflict living

As many of us know, East Grinstead’s Queen Vic has a proud and famous history. It is the place where maverick, pioneering surgeon Sir Archibald McIndoe performed his life-saving, plastic surgery, on his Guinea Pigs: members of the RAF who had suffered severe burns during World War 2.

what do you think he accomplished that others couldn’t?

What inspired you to take a particular interest in McIndoe and his Guinea Pigs? My grandmother was a VAD (Voluntary Aid Detachment) nurse at the hospital and she worked with the Guinea Pig Club (GPC) all the way through the Second World War. She lived very close by and my mum remembers meeting the Guinea Pigs when they came around for tea. So I grew up knowing the story of McIndoe and the GPC - every schoolchild in Sussex knows the GPC story. My mum learned to ride her bike on College Lane up to East Court, and she remembers my grandmother telling her to run inside if she COMMUNITY DIRECTORY heard theBUSINESS bombers overhead. When I was deciding what

kind of historical research to do, I was surprised to find that no-one had looked at the official national archives for the QVH during World War Two and that there was a lot of important material there to be discovered - particularly in understanding how close was the relationship between McIndoe and the most senior levels of the RAF. Whenever he wrote to them, they replied immediately - and the post was much better then so the letters got there on the same day - almost as quick as email! I wanted to find out the history behind the legend, so that inspired me to do the work that became The Guinea Pig Club book.

What sets McIndoe apart from other war time doctors and

McIndoe had an incredible sense of what it takes to really heal a human being - not just surgery but rehabilitation and the restoration of psychological resilience. It isn’t just doctors in war time that need to understand this, it’s all doctors so he is a really excellent role model. We don’t really know why he thought as he did. He didn’t leave behind many personal papers and he didn’t keep a diary in the war because he was too busy working. Also, and I think people often forget this, he was a truly brilliant surgeon. Many of the medics who worked with him, say they never saw anyone with better technical skills than him. So it’s the perfect combination of technical brilliance and an understanding that recovery comes from the whole process of treatment. He did say this really important thing about what surgeons should think about their patients: “Real and lasting satisfaction is derived from what the patient does with what the surgeon achieves, rather than from the purely technical aspect of the repair.” Continues over the page.

What part would you say East Grinstead has played in this episode of World War history?

them throughout their lives. That’s how it’s done, no quick fix but a commitment to recovery where everyone understands and benefits from the support.

EG played a vital role. Every day the people of the town showed the Guinea Pig Club that they could go back to their lives and families and that it was possible to recover. Recovery is about really practical things like being able to go to the pub and have conversations and dance to a band. Without EG taking care of the personal, social things, McIndoe would never have been able to take care of the surgical things. I think we also forget how the town did this even though the war was raging right over their heads. It was a frightening time to live near London because of the bombing. We now know that the war ended in 1945 but no-one had a sense of how long it was going to go on for until the end of 1944 and it wasn’t certain that D-Day would result in victory. EG shows us the best of ourselves how a community can come together, for no reward except the knowledge that they have done the right thing, for years, not just for a long weekend, and really make a difference to other people’s lives.

What response have you had from the book so far and how does it tie in to the soon-to-be-released film the Guinea Pigs? The response to the book has been great, both when it was first published and now. Through events like the Invictus Games and the Paralympics, the public has a good understanding of what being a casualty means and everyone is very interested to know that there is a history of public engagement with wounded service personnel. Also, I think people understand that in the First World War, things were not properly done and casualties ended up disabled and destitute. It helps to know that things were better in the Second World War. Let’s hope that in our century things are even better! The book, ‘Guinea Pig Club, Archibald McIndoe and the RAF in World War II’ is published by Pen & Sword Books and can be found in good local book shops and Amazon.

What is the highlight of McIndoe’s story? What always stands out to readers? Readers are always fascinated by the role of the town in the recovery of the GPs. I think everyone always wants to be able to contribute to the recovery of military casualties and EG shows how this could be done in an incredibly important way. But now people also understand that this is a story about how best to treat our wounded service men and women - that when we think about how we should do that; history and the GPC has already shown us. That it isn’t necessarily very expensive or complicated, but it does require a commitment byCOMMUNITY doctorsBUSINESS andDIRECTORY the public to maintain support in recovery. East Grinstead didn’t just support the GPC during the war, it went on supporting

Cleaning the dreaded toilets. For a heavy duty scrub that also deodorizes while it cleans, pour ½ cup of bicarb of soda into toilet bowl and about 8 or 10 drops of tea tree essential oil. Then add ¼ cup of vinegar to the bowl and scrub away while the mixture fizzes. Cleaning shower tiles and/or have a glass shower door? Consider using a squeegee to wipe down the walls, one with good suction, it will cut down on lots scrubbing and cleaning time. Spray the tiles and glass with neat white vinegar or another spray of your choice and squeegee it down. Of course the tiles will need a good overhaul scrubbing every now and again but regular spraying and squeegeeing will cut down the amount of times it’s necessary and save you lots of scrubbing time in the long run. Try this naturally scented, all-purpose cleaner: mix one part white vinegar, with one part water, add lemon rind and a few pieces rosemary sprigs. Once combined leave it to infuse for a week before using – to get a really nice scent. You can spray this anywhere and it’s safe. Spray it over laundry to freshen, use it on carpet spots. The fruit acid adds extra cleaning properties.

THE ABBEY LOCAL HISTORY NOTES

Just north of the A22 between Ashurst Wood and Forest Row, is an imposing building which cuts a white, stark but beautiful figure on the surrounding landscape: The Abbey. It was built on rising ground and its gleaming white facade can be seen for miles around. It is particularly obvious from vantage points on Ashdown Forest and so itself has amazing views of the forest. It began life in 1783, when it was named Pawleys, owned by Lord George Henry Cavendish, who was a distinguished Member

of Parliament and Lord of the Manor. He was elevated to become the 1st Earl of Burlington and was responsible for building the Burlington Arcade in London. The property then passed into the ownership of a wealthy diamond merchant, Sir Abe Bailey. He was also a cricket batsman and footballer playing at national level for his native South Africa. Sadly, in 1938 he was diagnosed with thrombosis and had to have both legs amputated, he died two years later. One of Abe’s sons, John Milner Bailey, was born in East Grinstead by his first wife Caroline Paddon. John went on to marry Diana Churchill, Winston Churchill’s eldest daughter; the wedding also took place in East Grinstead. The marriage lasted for only three years and there were no children from their union. Living

THE ABBEY CONTINUED

The well-known author, Michael Morpurgo, was a pupil there for six years. Playing rugby was one of the few things he enjoyed in those few years. The football and Rugby pitches of the school were later gifted to the village of Ashurst Wood, by Molly Pears, as a recreation ground. Known as the John Pears Pavilion, the building on it was named in memory of the man who purchased the land upon which it stands. Unfortunately, the pavilion was burnt down in 2003 but rebuilt two years later; both land and pavilion are now a central part of Ashurst Wood village used for many functions and sporting events.

The building itself is now divided into several luxury apartments. The Abbey has stood for nearly two hundred and fifty years now. A landmark in the local area which has seen many changes in its long life. Maybe in another two hundred and fifty years it will still be observing changes in its surroundings and making its unique contribution to our history.

The building was later sold on, but remained a school and was renamed: The Abbey School. This school had started life in Beckenham, Kent, but moved out in part of the Second World War, to avoid the bombing of the London area. The school was described as being built on 3 floors: on the ground floor was a vestibule, entrance hall/lounge, a large dining hall, a library, a vast drawing room with French windows facing south out on to the valley and the owner’s private suite of rooms. Some parts were extensively panelled in wood and other rooms had elegant plasterwork and ornate fireplaces. Wide staircases led upstairs to twenty-four bedrooms. Kitchens, storerooms and domestic offices also occupied a lot of space on the ground floor and there were wine cellars and fuel stores below ground level. So, although the kids are back to school, no need to feel the summer is over. In fact, temperatures average only a couple of degrees lower than August, so don’t put your shorts away just yet!

Why exactly we don’t know, something to do with the dark, cold days of January perhaps? September is also the beginning of harvest time… and this year’s Harvest Moon will fall on the 25th; it’s the full moon nearest the start of autumn or the autumnal equinox. Why is it called a Harvest moon? At this time of year, the moon rises very shortly after sunset without much of a delay, for several evenings. This results in an abundance of bright moonlight early in the evening. As if by a kind of miraculous co-incidence this is traditionally exactly what the farmers needed to harvest their crops – lots of light! Work had to be carried out at speed as no one wanted overripe, rotting produce, not least the farmers, so the extra light was a blessing indeed.

With a small amount of internet research I stumbled upon an interesting fact… which I hope is true as I’m sharing it with you… there are more people Forget-me-not, born in September than any other month. With September birth flower the short shrift research I can give to this fact, short of counting up all the birthdates across the world, it is true that the majority of my best friends over the years (the ones whose birthdays you always remember) were born in September…. so if that’s anything to go by, it may well be correct!

In Britain we have given thanks for successful harvests since pagan times with a Harvest Festival which is traditionally held on the Sunday near or on the Harvest Moon and we celebrate by singing hymns, praying, and decorating churches with baskets of fruit and food, which often now involves donating said wares to local charities in need afterwards. New Affordable Gym for Kids Opens A new kind of low-cost gym has just been opened by the Town Mayor, at Imberhorne Upper School, for all kids and teenagers of the town and surrounds that want to get fit. Local company, Active Fit, owned by Gary Nation and Ricky Ingram (see photo) will be running the gym for the community. Here is a Q&A with Gary with more details: there we meet with Steve Hill who works closely with All School in East Grinstead and he asked if we would be interested in running their gym. So here we are opening a new gym at Imberhorne School which has some really fantastic equipment; thankfully the school shared our vision.

What made you decide to run a lowcost gym membership for kids? We didn’t necessarily look to open a gym as such, our vision was to educate the community in health and fitness. I was new to the area having just moved here in November 2017 and I wanted to network. There was a local event at a restaurant one evening so I decided to go down there. By chance I got talking to a very nice man called Rex Whitaker who introduced himself and started to talk about what we both did. I spoke about Active Fit and he spoke about wellbeing in the community. Later I was to find out he was due to take over as Mayor of East Grinstead the following month. We agreed to meet up and discuss further, once he had started his new role. To cut a long story short he introduced me to some fantastic people who shared his vision. From

To whom is this membership open? Memberships are from 8 years plus and are looking to run some senior classes too. We will also offer family memberships. This will be a no frills but fantastically equipped gym with monthly memberships available for children from £5 per month (for information about other memberships, drop us a line.).

Ashdown Forest Centre: The Big Draw Sunday October 7th Come draw, doodle, scribble or sketch on the Ashdown Forest. CELEBRATING 30 YEARS OF SERVICE TO THE LOCAL COMMUNITY Last month CARE in East Grinstead & Lingfield celebrated its 30th birthday with an afternoon tea party at Trinity Methodist Church with the Town Mayor, Cllr Rex Whittaker, as guest of honour. CARE was formed in 1988 by a local group of churches as part of an outreach to the community by giving help to elderly and infirm people who, for various reasons, have no-one else available to assist them. Most of the help given is in driving clients to medical appointments but they also do shopping and minor errands or help with gardening and small DIY jobs. Clients phone a central number a few days in advance and a volunteer is found to help. CARE has been chosen as one of the mayor’s three special charities in his year of office and he has shown his commitment to their work by joining up as a volunteer driver.

CARE Chairman John Monks said, “Today we have around about 350 clients on our books and are doing over 1000 jobs a year, 95% of which involve driving people to local surgeries and hospitals or clinics throughout Sussex, Kent and Surrey.”
