H

eather Chalon, MPH, Master Trainer at Tai Chi for Health Institute, wants to remind us that September is National Falls Prevention Month. Falls are not a normal part of aging, yet falls and their associated costs are part of our nation’s largest health expenditure, and the leading cause of fatal and non-fatal injuries for older Americans. Falls are costly—in dollars and in quality of life. Through practical lifestyle adjustments, evidence-based balance and strength programs such as Tai Chi for Arthritis for Fall Prevention (TCAFP) with certified instructors, the number of falls among seniors can be reduced substantially. The National Council on Aging, of Centers for Disease Control and Prevention, recommends TCAFP as a proven system to help prevent falls and reoccurrence among those who have fallen. Classes and workshops are available locally both for personal development, and as a program to learn so one can share health benefits with others while taking good care of oneself. TCAFP is safe, effective and enjoyable, and the program has been proven to help with overall health and sense of well-being. Sing without Strain

arah’s School for Speech in Song (SSSS) was established after labored research in the field of singing. The teacher and owner, Sarah Evans conducted several choirs, participated in choirs and did gigs at coffee shops—and after each event was discouraged because of a hoarse and tired voice. “Our voices having a shelf life did not make Sarah Evans sense,” she says. Five years ago, Evans met her teacher, Christiaan Boele, and discovered that “the only reason voices have a shelf life or get tired and strained is because most are singing from a mechanical point, i.e. soft/hard palate, pharynx, larynx, diaphragm,” she explains. This school is the opposite. The specific exercises teach us how to forget about the breathing, forget about the mask and upper palate and allow the inner stream with its attendant tone to adjust the mechanics gently and effortlessly. After a lesson, students of SSSS have consistently felt better because the exercises are a gentle reminder of the interconnections of our breathing process and sound. “This singing school is healing and as one progresses, they can look forward to hours of singing without any strain on the voice,” says Evans. “Studies have shown that singing is good for the lungs and heart and produces more endorphins than laughter. Retirees are volunteering at hundreds of nationally protected lands. They staff visitor centers, do maintenance, clean up debris and remind visitors to keep food items secure from wildlife. Last year, volunteers outnumbered National Park Service staff about 20 to one, expanding the financially strapped agency’s ability to serve hundreds of millions of visitors. Nearly a third of them are 54 and up, contributing to the 7.9 million service hours worked in 2015 by all 400,000 volunteers. Volunteer opportunities also exist at National Wildlife Refuge sites, fish hatcheries and endangered species field offices of the U.S. Fish and Wildlife Service (USFWS). Sallie Gentry, volunteer coordinator for the Southeast Region, based in Atlanta, notes that Georgia’s Okefenokee National Wildlife Refuge has a dozen designated spots for motor homes in its Volunteer Village. She says most volunteers are local retired residents whose working hours vary while RV volunteers commit to 20 hours a week for at least three months. In return, they get free hookups for electricity, sewage, propane and water. “They have skills they want to contribute, but are also looking for a social outlet,” notes Gentry. Cookouts and potlucks are common. She also cites the Eastern Shore of Virginia National Wildlife Refuge, an important migratory stop especially for songbirds, as a place with great appeal. “We supply uniforms, training, tools and orientations,” says Gentry. “It’s a mutually beneficial investment.” She suggests that individuals apply for specific sites at least a year in advance. Megan Wandag, volunteer coordinator for the USFWS Midwest Region, based in Minneapolis, cites the popular Minnesota Valley National Wildlife Refuge, in Bloomington, and the Neal Smith National Wildlife Refuge, near Des Moines, as “oases near urban areas.” USFWS Southwest Region volunteer coordinator Juli Niemann highlights the Bosque del Apache National Wildlife Refuge, in central New Mexico, that has 18 recreation vehicle spots and an average occupancy duration of five months. “It’s a prime wintering place for sandhill cranes.” Volunteer.gov updates site details and contact information at federal facilities nationwide.

Monsanto Faces New Scandal The Monsanto agrochemical company, long cited for its ubiquitous toxic Roundup herbicide and pro-genetically modified organism (GMO) science, is reeling from the disclosure of internal communications that indicate it suppressed knowledge of the potential dangers of its herbicide and received insider help from U.S. regulators. Many documents have been made public by attorneys involved in a personal injury case involving cancer, just one of hundreds pending (reference nonprofit U.S. Right to Know at usrtk.org). Attorney Brent Wisner states, “These [documents] show that Monsanto has deliberately been stopping studies that look bad for them, ghostwriting literature and engaging in a whole host of corporate malfeasance. They have been telling everybody that these products are safe because regulators have said they are safe, but it turns out that Monsanto has been in bed with U.S. regulators, while misleading European regulators.” Monsanto is currently seeking to merge with Germany’s Bayer AG, another industry giant, but the deal is subject to government review. It remains to be seen if these revelations will interfere with the process or prompt other actions by such regulating bodies as the U.S. Environmental Protection Agency.

Organic Milk Producer Under Pressure The Aurora Organic Dairy pastures and feedlots north of Greeley, Colorado, are home to more than 15,000 cows—more than 100 times the size of a typical organic herd. It is the main facility of the company that supplies milk to Walmart, Costco and other major retailers. They adhere to U.S. Department of Agriculture (USDA) organic regulations, but critical weaknesses exist in the inspection system the government uses to ensure that food is organic; farmers are allowed to hire their own inspectors to certify them, and thus can fall short of reaching standards without detection. Organic dairies are required to allow the cows to graze daily throughout the growing season rather than be confined to barns and feedlots. Although the USDA National Organic Program allows for an extremely wide range of grazing practices that comply with the rule, Aurora was observed onsite and via satellite imagery by the Washington Post as having only a small percentage of the herd outdoors on any given day. The company disputes the data. The Gracefully Aging Face

A

ging is a combination of internal and external factors. Genetics and natural aging processes such as hormonal changes, loss of fat and bony support and slowing of regenerative processes such as collagen and elastin repair are the major causes of aging that are largely outside of our ability to control. External factors, what we call “lifestyle choices”, such as not smoking, avoiding sun or UV exposure, eating a balanced diet, exercising regularly, minimizing stress and taking care of our skin, are usually well within our individual control. Here are some basic skincare guidelines that will improve our chances of looking as young as we feel. • Cleanse your face at least once a day and always remove makeup at night. • Use a mild toner suited to your skin type to replace the skin’s acid balance. • Moisturize. Even if skin feels oily, it still needs hydration. Toning and moisturizing will reduce the skin’s natural inclination to over-produce oil, as well as minimize signs of irritation in sensitive skin. • Exfoliate regularly but gently, one to three times per week. This helps prevent buildup of epidermal layers while stimulating new growth. • Vitamins A, C and E are essential to skin health and rejuvenation, so look for topical products with those ingredients. • Never leave home without putting sunscreen on all skin that needs protecting from the sun’s ravages. A minimum of 30 SPF is necessary to protect from daily incidental UV exposure. Use higher SPF and cover up if heavier exposure is anticipated. • Get an annual skin check-up from a dermatologist and see an aesthetic skincare professional regularly to identify skin issues early and keep skin looking as healthy and youthful as possible. It is important to monitor our skin’s reactions to products and treatments and adjust our regimen accordingly. The goal is to gently, but consistently provide skin with the environment, stimulation and protection that it needs. Try these ideas to overcome anxiety. • Reframe the feelings into excitement, and use that energy to produce. • Accept the anxiety rather than waste time and energy fighting it. • Unplug devices. This will limit distraction and allow us to produce more. We all have a limited amount of willpower, so giving the task our complete focus makes it more likely it will get done. • Break a big task down into smaller steps. Check off micro tasks when done and celebrate each accomplishment. This creates a win psychologically. Small achievements lead to bigger ones. • Ask for clear feedback from employers. Meditation and Music Aid Memory in Early Stages of Alzheimer’s

A

new study from West Virginia University, in Morgantown, reveals that listening to music and practicing meditation may help improve memory function for those in the beginning stages of Alzheimer’s disease. Researchers asked 60 adults experiencing subjective cognitive decline (SCD), a common predictor of Alzheimer’s, to engage in kirtan kriya musical meditation or listen to other music for 12 minutes a day for three months, and then consider continuing for an additional three months. Scientists measured the memory and cognitive function of the 53 participants that completed the six-month study and found significant improvements in both measurements at the threemonth mark. At six months, the subjects in both groups had maintained or improved upon their initial results.

Caring for Others Prolongs Life

R

esearchers from several international universities have found that seniors that provide caregivingservices live longer than those that do not. The scientists analyzed survival data and information collected from the Berlin Aging Study on 500 adults over the age of 69 from 1990 to 2009. They compared survival rates from the subjects that provided caregiving for children, grandchildren and friends to those that did not. Of the subjects analyzed, the half that took care of their grandchildren or children were still alive 10 years after their first interview in 1990. Caring for non-family members also produced positive results, with half of the subjects living for seven years after the initial interview. Conversely, 50 percent of those that did not participate in any caregiving had died just four years after their first interview. The researchers warn that caregiving must be done in moderation. Ralph Hertwig, director of the Center for Adaptive Rationality and the Max Planck Institute for Human Development, in Berlin, explains, “A moderate level of caregiving involvement seems to have positive effects on health, but previous studies have shown that more intense involvement causes stress, which has a negative effect on physical and mental health.”

Conscious Aging by Lynne Namka

D

ecisions made in our younger and middle years define our later years. To make strong aged bones, a healthy body and a flexible mind, now is the time to make intelligent decisions for keeping the body/mind/spirit strong and vigorous. Life is about change. All is transitory in life save that which is of the Spirit. Loss can be sobering. It sets us back on our heels—asking us to take stock. In youth we give credence to beauty, health, security, material goods and career gain. However, strength, agility and physical beauty are the outer trappings of the human being that fade with time. Likewise some friends, loved ones and a job identity can be of a temporary nature. Acceptance of this theme of inevitable losses with grace prepares us for the final and greatest task—death. Virginia Satir said, “Humans are made to integrate loss. Each loss makes another gain,” It is through acceptance of losing things, those unessential parts of our life, that we become loose. With grace and understanding, loss can help us to become looser. Loss can help us find a more fluid version of ourselves.” Those who are on the sincere spiritual journey honor this transformational game of gain and loss. Self-exploration is a way of taking stock of our lives as we march down the years. Gaining maturity though working out life’s lessons helps bring about balance. Balance is accomplished by subtracting what there is too much of and adding what is lacking of a deeper nature. As old negative beliefs and defense mechanisms that no longer fit are discarded, insights and breakthroughs happen. The symbol-laden unconscious provides rich fodder to deal with the resignation and despair that loss brings. Spiritual transcendence is transforming the rigid ego attachments into acceptance of self and others. Psychoanalyst Carl Jung described a major task of later life where the ego and the self can become integrated. Wisdom gained throughout the lifetime helps transform losses and suffering through reflection and introspection. Aging with grace means to spend more time being present in the moment instead of living in the past or worrying about the future. Staying present requires that we become more aware of our pain, our joys and the big and small rites 22

of passage that dot our lives. We can sit with our emotions to process them and glean what wisdom we can. And then risk going into the unknown of the shadow self where there is rich fodder to explore. As we move toward elderhood, there’s the opportunity to give up overemphasis on material goods, drama, gossip and self-created chaos. The self-absorbed indulgence of youth can be replaced with a generous spirit leading to actions. Research shows that as people mature, altruistic behavior increases. A generosity of heart and spirit indicates good mental health and a willingness to let go of unnecessary attachments. Indeed the true spirituality path leads to service. The older years can be a time for giving up some of the worldly pursuits and move into the simplicities. That which is true and beautiful becomes even more so—the innocent smile of a child, the first violet after the winter, the cobalt blue of the teapot, a Palo Verde tree glistening with dew drops, the holiness within our soul. Deep friendships become more meaningful. We can return home to our innocence that we gave up so many years ago as small children.

Aging with grace means to spend more time being present in the moment instead of living in the past or worrying about the future Small fruits shine when we learn to just be in the process of becoming who we are. Conscious aging demands that we take responsibility for our thoughts, words and actions. We can insist on being pathologically honest with ourselves. We become spunkier and refuse to take nonsense from others or from ourselves. We learn to act as if what we choose makes a difference—because it does. In making our choices from the simplicity of the wise Sage or the Wise Old Woman part within, we honor our process of growing into our true selves. Losses, which inevitably come with aging, can better be watched with a Zen-like detachment as we step back and look at the aging process. Taking stock of the role of loss in life, we can say with detachment, “Oh, that’s what it’s like to have loss of vision. Ahhh, now I have lower energy. So this is what it is about. So, I’m getting forgetful. Well, some things I don’t need to remember. I need to make better choices as to what is memorable.” Graceful aging bids us to concentrate on gratitude. It’s a time to drink deeply from the cup half full, seeing the fullness of it. During those difficult times when the cup appears half empty, then that too is faced with the philosophy of resilience and a willingness to keep looking within. Aging with Trickster Wisdom by Linda Joy Stone

M

any of us find beauty in gnarly old trees, amongst overgrown forests and within nature’s oddities, but shudder at the wrinkles, barnacles and deformities human bodies develop with age. The Japanese have a jaunty term—wabi sabi—for the beauty of imperfection. In our rather adolescent culture, imperfection is seen as a flaw. However, striving to achieve some kind of perfection or perpetual youth can rob us of joy. I find the “anti-aging” movement a bit of a con job that feeds a vanity-motivated, death-fearing, multi-billion-dollar industry. Instead, consider “pro-aging my way” as a better description for a natural occurring process, and then choose wisely. Our bodies and our hearts know what to do if we listen and take care of them. Having a good sense of humor is a vital attribute in aging well and being able to appreciate the unpredictability of life. This is where we can invite our clever trickster-fool to assist in this play. Knowing and accepting that anything can happen at any time, we can train ourselves to shift from feeling anxious to being amazed. As our bodies and the world change, humor can be one of the best medicines. Getting older can be so liberating, which is learned more easily thanks in part to a trickster-ally—that mythological character who crosses boundaries and questions authority. He’s the playful disrupter who can take us off course in order to bring us back to ourselves and what we love most. Now in my 60s, I find that I have fewer self-imposed restrictions, less self-consciousness and enjoy more passion for life. Every day offers a creative opportunity to play, as well as nap. Aging with humor can offer wisdom and spicy stories to share. Events that once seemed emotionally devastating can now be looked upon as rich experiences that contributed to our growth and maturity. As we age, the trickster can help show us that everything is sacred, as well as humorous, and beauty is everywhere. May we look upon our body like we would upon a formidable old tree with deep roots to the ancestors and wide branches that reach into the cosmos to worlds yet unknown. Scientific research has shown that floating can release the feel-good neurotransmitters endorphins and dopamine, and lower the stress hormones adrenaline and cortisol. Studies performed by the Laureate Institute of Brain Research, in Tulsa, Oklahoma, which maintains a float clinic, have found the therapy is an effective treatment for patients with anxiety disorders. “It frees your mind of distraction and puts it in a zone,” explains Gray. “It removes the need for fight or flight, so those hormones are reduced. hroughout history, the concept of beauty has been an ever-changing lens through which we both view and mirror our evolution as a species. Humankind has adorned, embellished and decorated our environments from dwellings, clothing, modes of transportation and our bodies since the beginning of recorded time. Reflecting upon and 28

researching the concept of beauty reveals the evolution of cultural mores worldwide. Philosophies, spirituality and even consciousness itself can be explored through beauty as a portal into the history of ideas and beliefs. And yet, “beauty” has been marginalized as trivial or superficial at varying times in history; even today.

For artist Barbara Rogers, beauty has been the pivotal driving force behind her lifelong commitment to an internationally recognized career as a painter and a teacher. For the over five decades, she has created stunning, nature-saturated imagery with “The Imperative of Beauty” as the central, unifying theme. Born and raised in the farmlands of central Ohio, Rogers was surrounded by the lush greens of the verdant natural world. Early, formative childhood influences included her mother, an accomplished seamstress and clothing designer; her young aunts, who included her in their love of the worlds of glamour and fashion; her father, an inventor and a “fix-it-all” kind of man; and her great uncle, who crafted furniture that he then decorated using stencils. Influenced by her industrious and creative family members, she filled a proverbial tool box with techniques and materials. But more importantly, she learned the value of a dedicated creative practice supported by a committed work ethic. In 2012, Rogers’s work was exhibited at The Tucson Museum of Art as a retrospective spanning 50 years of her painting career. The exhibit awas accompanied by the publication of a monograph entitled, “The Imperative of Beauty”. The book, a compendium of gorgeous, color-saturated photographs, also includes threein-depth essays exploring the evolution of her work and life. A professor emeritus from the University of Arizona, Rogers has taught art all around the world. Her teaching work spanned over 20 years at The San Francisco Art Institute prior to arriving at the U. of A. in 1990. On a hot, monsoon afternoon in August, I had the pleasure and privilege of

Bursting with her overwhelmingly beauty-filled canvases, the house is surrounded by an exotic desert garden she has designed and cared for herself throughout the years she has lived in Tucson. Although our conversation never included the topic of aging, per se, Rogers is a true testament to the time-tested adage invoking us to follow our hearts. Having recently celebrated a milestone birthday, she is a woman bursting with health, elegance, vitality, wisdom and beauty. In addition to an amazing life, she still paints brilliantly every day. Of the many questions posed throughout the afternoon, four key answers struck me as being most important to share with readers.

You went through art school as a young woman in the 1950s and ‘60s, during an era dominated by Abstract Expressionism and a male-dominated art world. How important do you feel it is for young women art students today to be mentored by women teachers? Actually, I feel art students today, regardless of gender, need to be mentored by those who can give them solid instruction in the formal aspects of creative practice. Over the past several decades, the emphasis in visual arts programs has shifted away from technical and formal concerns in favor of content as the primary focus. Art students absolutely need the formal elements of visual arts as well as guidance and training in “the business of art”.

You lived in the Bay Area in the 1960s and ‘70s. Can you talk about how your life and work were shaped and influenced by being in Berkeley and San Francisco at such a turning point in our cultural history? The major political issues of our current times were emerging back then in my Bay Area days. Racism, ecology, shifts in sexual roles and more, and even present-day focus on the “food revolution” influenced me in those years. The Bay Area was also a major focal point in the country for the re-emergence of Gaia or Mother Earth awareness. War protests and all of these other concerns affected my outlook as an emerging artist. But, there was actually an incident in the 1960s that shifted my perspective and changed my life forever. Can you share the essence of that particular experience? At one point, I was hired to teach art though a synagogue program, despite the fact that I was raised a Protestant. I met a Rabbi early on in the job who gave me a 15-minute overview of the Jewish faith. He explained that in Judaism, people believed, among other things, that there was no such thing as heaven or hell that existed out there or in the great beyond. He told me that one of the core beliefs in Judaism is that the choices we make in life create our experience of either heaven or hell on earth. This concept hit me like a bolt of lightning and changed my perspective on everything. From that day on, I decided to dedicate my energy and attention to creating and sharing beauty. Can you talk about how your pursuit of beauty through studio practice has served as a path of healing for both you and others? The act of painting is a form of meditation. I feel we all seek and crave harmony, meaning and balance to feel whole. Being engaged in the act of painting is to bring together a unity of opposites. To perceive a painting that has successfully reached a place of harmony and balance allows the viewer to feel alignment and resonance with these eternal qualities. “T

hat was so much fun,” is the initial emotional response spoken by many who try dancing for the first time. Be it Zumba, swing dancing or the waltz, they love the music and find other participants supportive and happy. If done often—at least three times a week—the results of research show that dancing, especially with a partner, provides significant health benefits. Thinking ‘In the Moment’ The “in the moment” brain activity that occurs when dancing with a partner is the reason a study by Albert Einstein College of Medicine claimed dancing, when done often, was the only physical activity that could reduce the risk of dementia by 76 percent. There’s a lot to think about by both partners, especially when they have never danced together before. “Will I be able to follow his lead?” she wonders. “Hope I can remember my cues,” he worries. Plus, those cues have to be executed at the right time or the connection is lost. The mind continues to work the entire time, intent on making this a successful experience for both. With great music and a safe dance floor, it can become the type of addiction that is healthy for us—mind, body and spirit.

Set the Pace – Watch the Results The pace (tempo/speed) of dancing allows individuals to select the style that is most comfortable for them and meets their needs. Rumba, waltz and foxtrot are slower dance styles, perfect for beginners. Salsa, samba and the Lindy Hop are faster, great for burning calories. Slow or fast, all of them will contribute to cardiovascular and pulmonary health—improved endurance and breathing, increased circulation and more efficient use of oxygen. Waltzing was prescribed for recovering heart failure patients by researcher Romualdo Belardinelli, MD, professor at Universita Politecnica delle Marche School of Medicine and director of cardiac rehabilitation and prevention at Lancisi Heart Institute, in Ancona, Italy. Improvements in health were made, but the socialization benefit became the motivating factor that kept them dancing—and happy. They realized their quality of life improved. If fitness is the focus, faster dance styles like the Lindy Hop, Samba and Salsa can tone legs, trim waists and burn lots of calories. In addition to the music being faster, these dance styles require dancing on the balls of the feet (heel slightly off the floor), with relaxed knees, and twisting in the waist. Hence the great looking gams and waistline. Dancing delivers a full-body workout, results which have been seen on Dancing With The Stars since its premiere in June 2005. Finding Dance Classes in Tucson The Arizona Dance Coalition (ADC), a nonprofit organization, maintains a website for the general public on all dancerelated topics with listings for statewide events, classes, articles, resources and a photo gallery. The Social Dance calendar is found within their free monthly publication, the Arizona Dance e-Star, archived on their website: AZDanceCoalition.org. Tucson is home to a wide variety of different styles of dance classes, both for those with a partner and without. There is something for everyone, with weekly, bimonthly and monthly options to get out on the dance floor and get healthy. The cost of dancing is a low-cost health insurance “premium”. We are taking “steps” to significantly reduce the risk of dementia, osteoporosis, depression, stress and more—and having fun while doing it. Dancing is pleasure—a basic need which we require in abundance on a regular basis. enowned yogi and international teacher Rodney Yee, of New York City, has maintained an inspired yoga practice for 37 years while juggling career obligations, fame and family life. While the benefits of yoga are increasingly well known—from stress reduction and pain management to a more limber body and inner peace—Lee is also aware of the challenges to maintaining a consistent practice. Here he shares insights on the pitfalls encountered by both beginning and advanced students. “My advice is to first get rid of self-berating behavior, including judgmental inner dialogue. In many aspects of life, we are constantly measuring ourselves against a standard, which is a waste of time and energy,” says Yee. With a professional background in classical dance and gymnastics, Yee decided to give yoga a try at a nearby studio when he craved more physical flexibility. “As many people do, I came to yoga for a reason. I was a dancer with tight joints. After the first class, I couldn’t believe how I felt. It was not at all like an athletic high; I had a sense of well-being and knew what it means to feel peaceful and clear.” For people with jam-packed lives, finding time for exercise can be daunting. Yee suggests a relaxed approach to

scheduling yoga into a busy day. “As the rishis [Hindu sages] say, we shouldn’t ‘try’ to meditate, not try to force a natural state. To say, ‘I have to do yoga,’ just puts another thing on our to-do list. Sometimes discipline is needed, but another part of discipline is not about force.” Different approaches to yoga abound, and part of staying motivated may include exploration of a variety of traditions as individual needs change due to lifestyle, health, interests or simple curiosity. Yee reminds us to go with the flow and follow how we feel in the moment. “Different schools of yoga exist because each offers something different. There is a form for all of our moods and a practice for how you feel at any given time.” Reflecting on how his own practice has evolved through the years, Yee recollects, “In my 20s and 30s, my yoga practice was arduous, including three to four hours of strong, physical work and a half hour of pranayama [breath work]. Then for 20 years, it involved a lot of teaching. Over the past 17 years, my practice has become more subtle, with a focus

on sequencing and meditation; it’s about how to do this all day long in the context of my body and my life; about being both centered and in the world. In some way, we’re always doing yoga, as we already take 20,000 breaths a day. From a philosophical and ethical point of view, yogis have no choice but to practice.” Because many American women have found their way to a yogic path, men often assume it’s primarily a women’s niche. But yoga has been a male practice for nearly 2,500 years in other countries. Yee encourages men to not feel intimidated. “Why not try something that can help you improve your business, family life and even your golf game?” he queries. While Yee believes in a no-pressure approach, he also suggests inviting ways to foster consistency. “If you are just beginning, set aside a half-hour before going to bed or get up a half-hour earlier. Also note that pain is less to be avoided than learned from.” Wisdom can come from dedication to a yoga practice. Yee’s philosophy is, “You can blink and half your life is gone. You can’t always be busy, busy, busy; you have to decide how to fill your life. study from Hospital Israelita Albert Einstein, in São Paulo, Brazil, suggests a link between regular yoga practice and an increase in brain cortical thickness, associated with memory and attention. The researchers used brain imaging scans (CT) to measure the cortical thickness of 42 Brazilian women older than 59. Twenty-one of the subjects had practiced hatha yoga regularly for at least eight years. These women were compared to 21 other women matched for age and education that engaged in other physical activity comparable to hatha yoga. The researchers found that the cortical thickness in the yoga practitioners was significantly greater in the left prefrontal lobe of the brain. This portion of brain gray matter is linked to awareness, attention, executive function and memory, suggesting that hatha yoga practice may be associated with cognitive preservation. The scientists added, “The present results parallel those previously reported in which younger yoga and meditation practitioners had greater gray matter volumes than non-practitioners in the following brain regions: larger gray matter volume in the right anterior insula and right inferior temporal gyrus.”

According to the American Tailgaters Association, in St. Paul, Minnesota, an estimated 50 million Americans tailgate annually. Whether we’re on the road or at home, making the menu healthy is a winning strategy for hosts and guests. Here, two experts divulge their winning ways. Says Debbie Moose, author of Fan Fare: A Playbook of Great Recipes for Tailgating or Watching the Game at Home, Ivy League schools like Princ-

eton and Yale claim credit for pregame picnics that 19th-century sports fans packed into their horse and buggy for local road trips. Moose lives in the tailgate trifecta of the North Carolina triangle, home to Duke, North Carolina and Wake Forest universities. can be served hot, cold or at room temperature. “At the game or at home, your guests will be moving around, so go for foods that can be eaten with one hand,” she suggests. She also plans her menu around color, universal appeal and variety because it’s healthier than just serving a mound of barbecued chicken wings and a big bowl of potato chips. She likes recipes that can do double duty; her black bean summer salad with cherry tomatoes and corn can function as a colorful side dish or as a salsa for nonGMO blue corn chips. “Recipes that you can do ahead of time make things easier on game day; just pull them from the fridge and go,” says Moose. Daina Falk, of New York City, grew up around professional athletes because her father, David Falk, is a well-known sports agent. Excitement-generating sports are in her blood and inspired her to write The Hungry Fan’s Game Day Cookbook. She knows that most of the tailgating in her area takes place for football and baseball games and NASCAR races. On HungryFan.com, Falk serves up tips for every fangating/homegating occasion, from the Kentucky Derby to the Super Bowl. “Keep your menu interesting,” says Falk. “I always like to feature a dish for each team. For instance, if you’re hosting an Alabama versus Washington watch party, you could feature an Alabama barbecue dish with white sauce and oysters or other fresh seafood. Both dishes are characteristic of the local foods in the universities’ respective hometowns.” Falk recommends buying more local beer than needed to make sure not to run out. Game day guests can get hot and thirsty, indoors or out. Supply lots of filtered water in non-breakable contaainers. For easy entertaining, Falk recommends biodegradable dishes and cups. “Whenever there are a lot of people in one room, especially when they’re drinking, a glass will likely be broken,” she says. “Save yourself cleanup and the risk of glass shards by committing to temporary cups and plates that are Earth-friendly and compostable.” Judith Fertig writes cookbooks and foodie fiction from Overland Park, KS (JudithFertig.com).

Southwestern Quesadillas Ingredients 10-inch flour tortillas Shredded jack and cheddar cheese Goat cheese ¼ or ½ stick of melted butter Flag Garnish 1 red bell pepper 1 green bell pepper 1 red onion 1 medium yellow onion Bunch of fresh cilantro Directions Put goat cheese in the freezer for 10 to 15 minutes and let it get very hard. While it’s chilling, finely dice all ingredients for flag garnish and mix together. Pull out the goat cheese and break it up into little bits, then mix well with jack and cheddar cheese. Lay a tortilla flat and put plenty of cheese mix on half, then add the flag mix, fold the tortilla over and gently place on grill. Brush the top of the tortilla with melted butter. When the bottom is crispy brown, flip it over on the grill and brush that side with melted butter.

Black Bean Summer Salad Yields: 8 side dishes or 4 light meals This salad is easily doubled to feed a crowd.

Greek Nachos Ingredients Six gluten-free, par-baked pizza crusts 3 Tbsp olive oil Kosher salt Sauce ½ cup Greek yogurt 1 cucumber, seeded and chopped 1 Tbsp olive oil 2 Tbsp chopped fresh dill 1 lemon, juiced Salt and pepper, to taste Toppings ¼ cup Kalamata olives, chopped ¼ cup Greek green olives, chopped 1 cucumber, finely chopped ½ cup cherry tomatoes, quartered ½ small red onion, finely chopped Feta cheese, for sprinkling Directions Preheat the oven to 400 degrees F. Brush the crusts with the olive oil and cut each into 6 triangles. Spread the triangles in a single layer on a baking sheet, sprinkle with salt and cook until they are crunchy, 10 to 13 minutes (turn the sheet halfway through cooking, if necessary). In a food processor or blender, combine yogurt, cucumber, olive oil, lemon juice, salt, pepper, dill and garlic. Process until well-combined. Transfer to a separate dish, cover and refrigerate for at least one hour for best flavor.

Rinse and separate cauliflower florets into small- to medium-sized pieces. In a medium-sized mixing bowl, combine the barbecue spice, flour and nut milk until smooth. Dredge each piece of cauliflower in the batter before placing it on the baking sheet. Bake for 18 minutes or until golden brown. Brush the cauliflower with barbecue sauce and return to the oven for an additional 5 minutes. Remove the cauliflower from the baking sheet and plate alongside a dipping sauce of your choice. Fluoride Alert Excess in Food and Tap Water Harms Pets by Karen Becker

I

n 2009, an Environmental Working Group (EWG) study found that bone meal and animal byproducts in eight of 10 major national dog food brands contain fluoride in amounts between 1.6 and 2.5 times higher than the U.S. Environmental Protection Agency (EPA) recommended maximum dose in drinking water. Some fluoride from tap water used in the manufacturing of pet food contributes to this. Olga Naidenko, Ph.D., lead researcher of the study, remarks, “A failed regulatory system and suspect practices by some in the pet food industry puts countless dogs at risk of ingesting excessive fluoride.” Fluoride occurs naturally in rocks, soil and thus some food plants and water supplies. More enters food via use of fluoride-based pesticides and commercial processing facilities. The EWG advises that two-thirds of all Americans, along with pets and farm animals, are exposed to artificially fluoridated tap water.

exposure to unacceptably high levels of fluoride. They are, for example, at significantly higher probability for bone cancer than humans, with more than 8,000 cases diagnosed each year in the U.S., compared with about 900 human cases. According to the EWG, a dog drinking normal amounts of tap water would be exposed to 0.05 to 0.1 milligram (mg) of fluoride per kilogram (kg) of body weight daily. A 10-pound puppy that daily eats about a cup of dog food would ingest approximately 0.25 mg fluoride per kg body weight a day, based on average fluoride content in the eight contaminated brands it tested. Altogether, the puppy could be exposed to 3.5 times more fluoride than the EPA allows in drinking water. Large breed puppies may be exposed to even more fluoride due to higher water intake. Whatever the size and the appetite of a dog, combined fluoride exposure from food and water can easily become unsafe. Eating the same food every day, they may be constantly consuming more fluoride than is healthy for normal growth, leading to health problems and higher veterinary bills later in life.

Prevent High Ingestion of Fluoride

The EWG recommends owners purchase pet foods free of bone meal and other meals made from animal byproducts. It also suggests that government set fluoride limits in pet food that protect both puppies and large breeds most at risk for bone cancer.

Fluoride-Free Feeding Tips n In homemade food preparation, avoid Teflon-coated pans, which may increase the fluoride levels in food. n Avoid cooking with fluoridated water, which concentrates fluoride in the food. n Avoid toothpaste or oral rinses intended for humans, to brush canine teeth. Dental health products made for pets are fluoride-free.

Dr. Michael W. Fox, an internationally recognized veterinarian and former vice president of the Humane Society of the United States and Humane Society International, recommends providing pets with fluoride-free water; spring water or reverse osmosis filtered water also works well. In preparing homemade food for a pet, make sure any added bone meal is free of fluoride and lead. Ethical bone meal producers will test for these contaminants; verify with the source. Fox suggests a good bone meal substitute might be fossilized oyster shell, dolomite or a synthesized or refined calcium supplement like calcium citrate, ascorbate, stearate or gluconate. Or, consider a pure tricalcium and dicalcium phosphate, blended with magnesium. Fox attests that bones from longerlived food animals such as dairy cows, laying hens and breeding stock likely contain higher levels of fluoride than shorter-lived animals like chickens, calves and lambs. In his article “Fluoride in Pet Food: A Serious Health Risk for Both Dogs and Cats?” he writes: “Fluorides accumulate in farmed animals over time from phosphate fertilizers, phosphate supplements, bone meal and fish meal supplements and pesticide and industrial-pollution-contaminated pastures and animal feed. The bones, fins, gills and scales of fish are often high in fluoride.” He recommends raw food diets that avoid ground bone from older animals like beef cattle and adult sheep.
