WHEN MY HUSBAND AND I FIRST TOURED the 1938 Tudor that we now call home, I fell in love with all of the original details that were still in place, like hardwood floors and glass doorknobs. But what really pushed that love to commitment was that the two bathrooms were not original. Although these spaces were small (as most baths in older homes are), they had been stylishly updated by the previous owners with Duravit sinks and vanities, designer tile—the works. But lovely as they are, my bathrooms simply cannot compare to the sumptuous spaces we share with you in this issue (beginning on page 38). From modern and spare to downright pretty, these are rooms you would want to linger in. And even though April is one of our snowiest months, it’s also officially spring, which turns our thoughts toward brightening up our spaces. Bring some of the new season indoors with our roundup of natureinspired fabrics and accessories (page 17). And if you really want to add a blast of spring, turn to this month’s “Color Story” (page 25) for tips on how to incorporate the perfect shades of pink into your rooms. I hope you find some time to relax with this issue, whether in a hot bath on a snowy day or out on the deck beneath the warm spring sunshine. Pretty in P i n k Not just for nurseries or girls’ rooms, the color pink is all grown up this season. Interior designer Yvonne Jacobs shares her favorite shades—from subtle to sassy—of this pretty hue “Pink adds a sort of retro, nostalgic look to a space,” says Jacobs, interior designer and president of Denver- and Vail-based Slifer Designs. “Mixing different tones of pink is modern without being too girly, and pairing it with white lacquered pieces makes it fun and a little edgy.”

The Observer Gregory Block sees the world as we all wish we could: with an eye trained on the beauty of everyday objects. His ultrarealist paintings are among the hottest and most impressive works of art created in Colorado today. That he is young, charming, humble and self-taught are just added bonuses BY HILARY MASELL OSWALD

Greg Block: Not at all. I hope I’m always emerging in one way or another.

I went to elementary school at a Waldorf school [in Fort Collins] that my dad helped start. The Waldorf model really cultivates art, language and music. If we were studying Colorado geography, for example, we’d bind our own books and then do paintings of maps or the Colorado River. And then we moved to Steamboat Springs when I was 11 to live on a ranch. We raised alpacas, and we had moved because we needed more land. My mom was a fiber artist. We’d shear the alpacas annually, and she’d use the fiber, which is incredibly fine and soft, to make beautiful sweaters and other things. It was a great upbringing. I spent a lot of time outside, and I often made art supplies out of

things that weren’t art supplies. I made tree houses out of twigs and relief carvings out of sandstone. I’m still throwing away stuff that I made when I was five or six.

There’s plenty of it. Don’t worry.

Biology. Really. It’s easy to say there’s a paradox there, but art and science are fundamentally the same thing. They’re about looking closely at something and asking questions about the world. The main difference is that art embraces questions and greater mystery, and science tries to seek and destroy that mystery. I’m kidding. But I much prefer asking questions to trying to answer them.

I mostly took sculpture classes. I didn’t do any painting. But the whole time, whenever I was on break, I would be sure to paint. It was during all of those hours in the lab and in organic chemistry lectures that I realized I wanted to be painting. Mostly out of stubbornness, the desire to find my own way and teach myself. I’ve always thought the best way to learn is to find works that speak to you, tear them apart with your eyes, and see how they were created. Plus, I figured that if I didn’t have a formal education in art, then I couldn’t do anything wrong. I wouldn’t know I was breaking the rules if I didn’t know the rules. Recently I’ve been doing a lot of still lifes. There will be an assortment of objects that I find interesting in and of themselves—whether it’s the wear on a boot or the texture of a ceramic mug. And I take all of those

things that I think are interesting and put them in a pile, and move them around. More often than not, really quickly, something grabs me. And then it’s just a matter of standing there, looking at those things really closely. I can tell almost immediately if the arrangement I have is going to be interesting enough to stand in front of for days and days on end. If it is, then I figure it’s interesting enough for someone to stand in front of for a few moments as a painting.

Really, I hope it can continue to make me happy—continue to be satisfying. I know it will. Also, on a different level, I’d love for it to bring people together, like the Van Gogh show [at the Denver Art Museum]. The exhibit drew all kinds of people, from all over the world, looking closely at the same thing. And since my favorite thing about painting is observing, I want other people to be able to experience that same curiosity in observation and to share that experience with one another.

WHEN SCOTT O’NEIL HEARS a Bach passacaglia, his mind jumps to the music of contemporary composer Philip Glass. And when he hears a song by indierock artist Björk, the sounds of Debussy start floating through his head. Play him the theme song to the 1968 science fiction film “2001: A Space Odyssey”? He’ll convince you it’s classical music. “I see the world for how things are similar,” says O’Neil, a pianist and consummate musician who spent six years at the Utah Symphony before taking the conductor’s podium at the Colorado Symphony’s Boettcher Concert Hall in Denver in 2006. This open-minded philosophy has led him to develop programs that explore the threads that connect genres of music, rather than those differences that separate them. Through the symphony’s “Pops” program, for example, the orchestra accompanies the more “tuneful” sounds of artists like DeVotchKa and Boyz II Men. And through the series “Inside the Score,” O’Neil pauses the show to speak directly to the audience—with his signature wit and enthusiasm—about the deep meanings behind the notes. “You can’t make anyone love anything,” he says, acknowledging the nature of the symphony business, where a season is considered successful if just 2.5 percent of the local population sets foot inside the door. “You can only show them that they already do love it.”

Those who do seek out classical performance may believe that conductors like O’Neil enjoy a great sense of power, due to their ability to bring sound out of silence with a single wave of the wand. But O’Neil is quick to admit that sometimes the best thing he can do is get out of his orchestra’s way. After he signals the first upbeat—that tremendous moment, full of potential, when all stands still—the company takes on a pulse of its own. “There’s a beat that exists somewhere out there among the musicians,” he says, “and if it’s going well, you get into this great, ephemeral place where you’re not sure who’s leading it—you or them.” And so O’Neil’s job is to influence rather than control his crew: cueing when to start and stop, encouraging different “articulations” of sound, choosing between “panoramic” advice to the entire orchestra, and specific signals to the percussion or brass sections. He likens this relationship to a dance: the longer an orchestra and conductor have been moving together, the more familiar they become with the subtlety of each other’s gestures. To their benefit, O’Neil and his players happen to have an unusually longstanding relationship—one that has outlasted a conductor’s typical “shelf life” of just three or four years. This history enables them to “fix the engine while it’s running” during rehearsals, a necessary skill when they often have just two-and-a-half hours to practice any given show. For O’Neil, the music itself would also turn any lingering arrogance into awe. “When you spend hours a day communing with the minds of Beethoven, Bach, Ravel, Stravinsky, Mahler… That’s anything but egostroking,” he says. “It’s a nice big piece of humble pie.” It’s this deep fascination with his material that keeps the conductor wide-eyed and inspired. “Some of the greatest conceptions the human mind has ever achieved have been recorded as notes on paper, this map we call music,” he says. “And the better you get at reading that map, and understanding what it was they were trying to communicate, you realize the amazing message that’s in there for us.” To learn about upcoming shows and buy tickets, go to coloradosymphony.org.

FROM THE CONDUCTOR’S SUITE CH&L: Do you have a favorite composer of all time? Scott O’Neil: Ahh... [Stalls.] It’s hard to say. Okay; you can give us three. Beethoven, Debussy and Mahler. Why those particular composers? They each have a certain mood— I get the same thing from them every time, just with a different accent—but they all have clear messages. If you learn how to hear their music the right way, it’s not just sound. It’s an idea. We’re intrigued. Tell us more. Take Debussy’s “Prelude to the Afternoon of a Faun,” for instance. It only takes about 11 or 12 minutes to perform, but that thing is so dense with meaning, so compact, that every note has a relationship to the next. And what the notes say to each other is mind boggling. If we were to scroll through your iPod, what artists would we find? A wide variety. I think music has different purposes. When I work out, I like to listen to something high energy, so my latest favorite is Muse, especially their song, “Supermassive Black Hole.” Then on the other end of the spectrum,

you’ve got Frank Zappa and Steve Vai—this incredibly complex music. So you’re saying “complex” doesn’t have to mean “classical.” Let’s face it: In the world of classical music, we like to think that our music is better than everyone else’s. But I would challenge any classical musician to listen to a Steve Vai solo, and, because it’s “so simple,” play it back to me. Good luck with that. Who did you grow up listening to? ABBA and The Carpenters, and the sound of Karen Carpenter’s voice. If someone doesn’t like Karen Carpenter’s voice, you should keep your eye on them, because I don’t think they’re trustworthy. When you’re able to break free from the concert hall, what do you like to do in Denver? I go to Churchill Bar at The Brown Palace Hotel to have a cigar with a good friend. It’s a sensual thing— the smell, the taste, the company. Some of the best orchestrations I’ve done came while I was smoking a cigar, doodling. Then I have to put down the cigar and try to realize the idea’s potential before the muse walks away again.

BLENDING MODERN FORMS AND ORGANIC elements, this contemporary bathroom is simple and open to reflect the beauty of the landscape outside the Vail Valley home. “The space is soft, quiet and soothing,” says designer Robyn Scott of Robyn Scott Interiors. “The homeowners are drawn to European design, and they envisioned a very clean, minimalist room.” In the early planning stages, as Scott and her clients walked the aisles of a cavernous stone warehouse, a stunning slab of onyx stopped them in their tracks. “We were looking for a stone of some kind for the shower wall, and we all fell in love with its incredible pattern,” she says. “The earth tones also fit well with the natural color palette of the space.” A satin-etched glass door with hand-blown knobs opens into the light-filled room, where a deep, cast-resin Agape soaking tub takes center stage. Two shallow, rectangular basin sinks top a pair of white cantilevered counters, and mirrors reflect the stunning views. Custom “floating” cabinets are built of Yew, an exotic wood known for its fine, distinctive grain. “The cabinetry is rustic in material, but modern in shape,” Scott says. “The simple design highlights the grain of the wood, which relates well to the Colorado outdoors.” Floors and walls are covered in cream-hued honed limestone, creating visual continuity and reflecting the room’s natural light. Furnishings are spare and elegant, from the small arrangement of stacked river rocks to a sculptural white chair made from industrial seatbelt strapping. “It’s a minimalist space with monochromatic tones that highlight the elemental materials,” Scott says. “I think this room is a beautiful example of how creating something really simple leads to a very strong design.” DESIGNER TIPS “Floating” cabinetry that doesn’t touch the floor helps to visually lighten the room; Scott added lighting underneath for a dramatic accent.

It’s a pricey investment, but a full slab of onyx in the shower is like a show-stopping piece of art that transforms the room.

Instead of cladding just the lower half of the wall

with tile or stone—a typical bathroom element— cover the entire wall and floor for a more modern look that has greater impact.

“IT STARTED WHEN THE HOMEOWNERS WANTED a better shower,” says Craig Pickrel of True North Builders, Inc. “They were deliberating between remodeling or moving; we had to present them with a design for the space that would make them want to stay in the home. In the end, they decided to stay—and the project evolved into a whole-house remodel.” To reinvent this Greenwood Village home’s master bath, which was originally dark and narrow, Pickrel enlarged the footprint by borrowing space from a nearby room. Mullion-framed windows and a skylight welcome sunshine, which is further reflected by mirrors and a color scheme of soft white and gray. White custom cabinets were designed to look like freestanding pieces and trimmed with traditional hardware; countertops of gray

quartz are finished with curved edges. An oversized mirror above the vanity is trimmed in white to complement the woodwork, and the ornate white sconces were mounted directly on the mirror for additional sparkle. Knowing the classic Carrara marble floors could be cold underfoot, Pickrel specified radiant in-floor heating. The tile extends all the way across the floor until it meets the walls of the large, glass-enclosed steam shower. The white, cast iron slipper tub with a floor-mounted chrome faucet was placed in the center of the room so the homeowners could enjoy the view, and a tiny tufted chair by Arhaus invites a quiet moment. In addition to recessed lights, a crystal chandelier dripping with more than a thousand pieces creates drama, tying together the room’s traditional and modern design sensibilities.

DESIGNER KATIE WOLFE AGRON OF DENVER’S Wolfe Design House was asked to bring a dated, 1970s bathroom into the 21st century. “My clients moved here from New York to be closer to their family,” she says. “The home they purchased still had the original, 40-year-old fixtures and finishes, and they wanted to give the bath a major overhaul.” Agron chose a cool color palette of gray, navy and black, with white cabinetry and tile, to brighten up the his-and-her space. “The room is a blend of masculine and feminine elements,” she says. Walls are painted in Benjamin Moore’s Bear Creek—a gray-brown hue—and the floors are hardwood, a material Agron says homeowners shouldn’t be afraid to use in a bathroom. “If they’re finished properly, wood floors will withstand moisture and they add a lot of warmth to bathroom spaces,” she says. “And you step on a bath mat when you get out of the shower, right?” On ‘her’ side of the room, Agron specified floral wallpaper, a glamorous oval mirror, fabric lampshades to soften the light, and a slipper chair covered with toile fabric by Schumacher. “The more upholstery you can put in a bathroom, the better,” she says. “It’s cozy, comfortable and absorbs noise.” The built-in white vanity is topped with Carrara marble, and the sconces are mounted directly on the mirror backsplash to create a tailored look. “Just have your electrician install the boxes before you hang the mirror,” Agron advises. Two walls are covered in ceiling-height mirrors, for reasons both practical and aesthetic. “The bathroom is where you really need a fulllength mirror,” the designer says. “And putting mirrors on adjacent walls gives the illusion of a much bigger space.” The design is elegant without being fussy. “We created a master bathroom as sophisticated as the homeowners, with a nod to their New York roots,” Agron says.

Streamlined spaces and contemporary patterns bring this traditional home into the modern world

IMAGINE A SPACIOUS, well-appointed home that recalls a French chateau, nestled into Littleton’s horse country with panoramic views of the Front Range. On paper it sounds like an ideal abode for homeowners with a penchant for classic design and outdoor living. But for these 30-somethings and their designer, it didn’t quite make the grade. “This house was your typical serious, brown Colorado home and we wanted to give it some life and energy. We wanted to ‘young it up,’” says interior designer Andrea Schumacher. The homeowners liked the family-friendly layout, but they wanted to strip away some of the ornate millwork in favor of a more streamlined, mountain-appropriate look, balancing

the formality with more playful touches. They recruited Schumacher and project manager Shadie Copeland of Denver-based O Interior Design, and general contractor Brian Husmann of Diamond Homes in Englewood, to renovate nearly every room in the house. The design team refinished the floors, staining them dark brown for a more contemporary look, and spent months re-plastering walls and refinishing millwork. They painted and wallpapered, and installed new cabinets and crown molding. They reworked almost every surface, inside and out. “It was a pretty extensive renovation, although no walls were moved,” Husmann says. “It took six or seven months to complete because of the attention to detail.” In the family room, the team removed an ornate mantel and a gas

insert, and installed a wood-burning fireplace with a limestone surround. They flanked the fireplace with custom Shaker-style cabinetry. To balance the masculinity of the weighty stone and heavy beams, Schumacher introduced a few feminine touches, including a Moroccanstyle coffee table and a pair of armchairs upholstered in a bold, red ikat print. “The ikat chairs are a little daring, but I thought the room needed a fun pop of color,” she says. “I wanted that space to maintain some formality because it’s the first room you walk into from the front door, but it still has to be comfortable because it’s where people hang out.” In the adjoining kitchen, Schumacher chose deep blue Moroccan tile for the contemporary backsplash, a counterpoint to the classically styled cabinetry, to play off of the orange-red fabrics in the family room.

In the master bedroom, the design team renovated the fireplace, bumping it out from the wall to add depth. “We wrapped it in a geometric, grass-cloth wallpaper in a fun lime green color,” Schumacher says. She paired the contemporary pattern with classic prints for the drapes and bed linens. A rug that mimics the wallpaper’s pattern and a French armchair and ottoman upholstered in a strong, modern print maintain the traditional-modern mix.

“In the family room, everything was brown on brown on brown,” Schumacher says, “so I turned to opposite sides of the color wheel to add some visual interest.” Classic patterns and saturated hues add more visual interest in the dining room, which Schumacher clad in a soft, seemingly faded floral wallpaper and custom wainscoting. A blue beaded chandelier and metallic papered ceiling crown the space, adding a younger, more playful touch to the room’s traditional design scheme. That balance of formal and fun carries into the powder room, which is a study in contradictions. The classic cane-printed wallpaper shows off a contemporary geometric pattern, and the oversized, modern sconces and small-ish mirror hang above a classically-shaped porcelain sink. In this room, as in the rest of the house, Schumacher played with scale, layered classic and geometric patterns, added traditional and contemporary touches, and balanced formal beauty with family-friendly comfort. Her ruledefying approach shows that you can bridge design eras and styles to create a home that’s planted squarely in the here and now—and full of good surprises.

A BUSY DOCTOR AND PARENT WITH A HECTIC LIFESTYLE, the owner of this 6,000-square-foot home in Denver’s Hilltop neighborhood wanted her space to be a source of Zen-like serenity. For the San Francisco transplant, that meant a refined yet casual space with a calm, monochromatic palette. Although the home, built in the 1990s, is relatively new, the interior architecture needed a complete facelift before interior designer Beth Armijo of Armijo Design Group could start thinking about color, furnishings and materials. The structural renovations included gutting the master bath and—to kick off the project—reinventing the kitchen. Enter Angela Otten, a kitchen designer with William Ohs, who created a beautiful, functional space that suits the homeowner’s needs. “She wanted a clean look that was far from traditional,” Otten explains, “with two ovens, plenty of storage and ample seating for her two children and their friends.” The remodeled kitchen is simple and symmetrical, with a range wall as its focal point. The alder wood cabinets, featuring varying door styles, are painted a custom shade of gray with a soft glaze. An oversized island with dark contrasting cabinetry provides plenty of gathering space. With the kitchen makeover underway, Armijo began to develop the overall design concept for the home. “We chose the kitchen cabinets and decided on the layout for the space, and then found the tile and granite; those selections were the springboard for the home’s overall color palette,” she says. To develop a nature-inspired concept, the designer gravitated toward gray stains and soothing colors such as light blue, green and cream. She also used natural fabrics, such as linen, cotton and wool, with patterns that occur in nature (think leaves and tree vines) in areas like the master bedroom and dining room. Because of the home’s open floor plan, in which multiple rooms are visible from any given point, Armijo was careful to unify the spaces. She worked with Iris Building Group to remove the living room’s custom

built-ins and separate the room into two spaces that are now connected with the help of color. “The layout feels really cohesive and gives the family a reading and living space that’s open to the kitchen, so everyone can be together,” Armijo says. Off the kitchen, a breakfast nook features a banquette that anchors the space. Perfect for accommodating several kids during play dates, the piece is upholstered in vinyl so the homeowner doesn’t have to worry about messes. The dining room, separate from the kitchen, is a private, formal area that’s perfect for entertaining. Armijo used dramatic wood wing chairs from Ashley Campbell at either end of the table to separate the space from the adjoining hallway and to subtly contrast with the upholstered side chairs. When it came to choosing art for the home, Armijo was careful to keep the client’s minimalist approach in mind. “Van Gogh said, ‘The great doesn’t happen through impulse alone,

and is a succession of little things that are brought together,’” she says. “People want instant gratification, but when it comes to accessories and art, decisions shouldn’t be rushed. So we were very selective with what we chose.” Just like its art collection, the home proves that great design comes to those who take the time to slowly and thoughtfully develop living spaces that speak to them. And for this homeowner, a sophisticated yet family-friendly home with a minimalist sensibility was worth the wait.

Greenwood Village’s flagship neighborhood is The Preserve, a mile-square enclave that pioneered a more inviting definition of ‘exclusive’ reaching through its neighborhoods. The entire expanse would be wrapped in even more trail -set off not by walls, but wide, heavily landscaped berms. “The berms would create a softer feel that was a better match for Greenwood Village,” Koelbel recalls.

By Mark Samuelson Does exclusive have to mean exclusionary? That was the question Koelbel and Company grappled with when the moment came during the late 1980s to develop the largest neighborhood in Greenwood Village. The parcel at Belleview and Holly Street measured a milesquare and encompassed a 2,550-yard loop of the Highline Canal, already a coveted amenity -an unspoiled remnant of countryside that hadn’t been carved into estates and enclaves. “I came into the project determined that there would be no gates, no walls, no interior fences,” recalls Buz Koelbel, now Koelbel’s President and CEO, who envisioned the concept and went door-to-door explaining it to neighbors. “I did focus groups with Realtors who told me that it would never work,” Koelbel adds. But when The Preserve at Greenwood Village opened in 1992, rather than a security gate, the land plan had no fences between lots; and a 55acre nature preserve at its core that would be open to the wider community by trail corridors

Now The Preserve (only 22 of its initial 522 lots are left) has become a prototype that’s in tune with preferences of today’s buyer: good access to nature, but also shorter commutes to work and urban attractions (downtown Denver is 20 minutes north; Denver Tech Center is five minutes; and a gourmet grocery and upscale restaurants are within walking distance). The open land plan, reflecting Koelbel’s long association with the Urban Land Institute, can now be seen replicated in other area developments that followed. Residents like another aspect of The Preserve, adds Coldwell Banker Devonshire agent Linda Hantman, who specializes in Greenwood Village and Cherry Hills: With no gate, they receive Greenwood Village’s coveted snow plowing and street maintenance. “We not only get wonderful services provided by the City of Greenwood Village, but the continued support of Koelbel

A Good Reason to Party IF YOU HAVEN’T HEARD OF—or been to—the Derby Party, this is the year to join thousands of partygoers at one of Denver’s most anticipated spring events. But before you start shopping for that fabulous hat or seersucker suit, learn a little about how the party got started. Twelve years ago, Denver locals Terrence Hunt and Scott Anderson wanted to honor their friend and Colorado State University alum, Sean “Ranch” Lough, who died in a mountain-biking accident in 2001. The two men turned their annual parties—Hunt’s holiday fete and Anderson’s Labor Day bash—into fundraisers for a small scholarship fund they had established in Lough’s honor. They also decided to add a Kentucky Derby party to their roster. The first year, the Derby Party took place at the Washington Park Boathouse with 130 guests and just a few sponsors; last year, there were more than 5,000 well-dressed attendees. For this year’s event, which takes place on May 4th in the courtyard of the Denver Performing Arts Complex and the Sculpture Park, the foundation expects to sell at least as many tickets. The proceeds from this bash—every single dollar—go to the Sean “Ranch” Lough Foundation, which funds four-year, full-ride scholarships to Colorado State University for high-achieving, low-income students from the Denver area. The recipient is always a first-generation college student. “The scholarship has truly changed my life and I am living every moment of it. [The foundation’s] generous support has propelled my success,” says Fred Herrera, a 2010 recipient who graduated from Arupe Jesuit High School and is currently studying abroad in Spain. The fact that these students are leading richer lives would make Lough happy. “[He] was an energetic individual that lived his life to the fullest,” friend and foundation committee member Garrett Gee says. “Whether it was applying himself to achieve his personal or professional goals, or just having a good time with friends and family, Ranch was always a pleasure to be around. Through the memorial scholarship, we’re keeping his spirit alive by doing something positive for young students.” The Sean “Ranch” Lough Foundation has absolutely no operating expenses. Its founders and supporters volunteer their time, and the scholarship funds, more than $1 million to date, are deposited into CSU’s 501(c)3 and handled by the school’s endowment manager. Halibut with Fingerling Potatoes and Umami Sauce Makes 4 servings Halibut is a delicate fish that is easy to cook under the broiler, a method that seals the surface and renders it moist and flaky. Alaskan halibut is in season through spring and summer, and Seafood Watch gives it a high sustainability rating. Umami Sauce and wok-style vegetables complement halibut’s light, gentle flavor. (photo on previous page) 1 pound fingerling potatoes, cubed 1 tablespoon extra virgin olive oil Salt and freshly ground black pepper 1 pound asparagus, cut into 1-inch pieces 4 (5- to 6-ounce) halibut steaks 1 1/2 teaspoons salt 2 tablespoons expeller-pressed canola oil 3 cups Roasted Mushrooms (recipe follows) 1 tablespoon Wok Aromatics (recipe follows) 1 /2 cup Umami Sauce (recipe follows) Preheat the oven to 400 degrees F. Line a baking sheet with aluminum foil. Arrange the potato cubes on the prepared baking sheet and toss them with the olive oil, salt and pepper. Roast for 25 minutes, or until tender when pierced with a knife. Remove from the oven and set aside. Preheat oven to broil. Bring a large pot of water to boil. Fill a large bowl with ice cubes and cold water. Plunge the asparagus into the boiling water for 2 minutes. Using a slotted spoon, transfer them from the hot water to the ice bath for 3 minutes. The cold water allows the asparagus to keep its bright green color. Drain them in a colander. Pat the halibut steaks dry with a paper towel and season with the salt. Heat an ovenproof skillet large enough to hold the fish in a single layer over medium-high heat. When the pan is hot, heat 1 tablespoon of the canola oil until it shimmers. Put the fish in the hot pan and immediately place under the broiler. Cook until golden brown or to the preferred doneness, 8 to 10 minutes. Heat another skillet over medium-high heat. 100

Add the remaining 1 tablespoon canola oil and heat until it shimmers, but do not let it smoke. Add the potatoes and cook until crisp. Stir in the Roasted Mushrooms, asparagus and Wok Aromatics. Add 1 tablespoon water and cook until hot and the water evaporates. Add 2 tablespoons of the Umami Sauce and toss to coat. To serve, divide the potato-mushroom mixture among warmed plates. Top each with a piece of roasted halibut and drizzle on some of the remaining Umami Sauce. Serve with any remaining Umami Sauce on the side.

Roasted Mushrooms Makes about 3 cups 8 ounces shiitake mushrooms, stemmed and thinly sliced 6 ounces oyster mushrooms, thinly sliced 4 ounces maitake mushrooms, torn into small pieces 3 tablespoons extra virgin olive oil 1 /2 teaspoon salt Preheat the oven to 400 degrees F. Line a baking sheet with a silicone mat or parchment paper. Toss together all of the mushrooms in a large bowl. Add the oil, salt and pepper, tossing to coat the mushrooms. Arrange the seasoned mushrooms in a single layer on the prepared baking sheet. Bake for 12 to 15 minutes, until soft, lightly browned and beginning to become crisp. When cool, transfer to a lidded container and store in the refrigerator for up to 3 days.

Wok Aromatics 1 lemongrass stalk, thinly sliced (about 1/3 cup) 1 /3 cup thinly sliced fresh ginger 5 or 6 scallions, white part only, coarsely chopped 1 1/2 teaspoons sambal oelek (or Sriracha sauce) Combine the lemongrass, ginger and scallions in a food processor and pulse until finely minced. Transfer to a lidded jar and add the sambal oelek, and mix well to combine. Use immediately and freeze any left over.

Immunity Soup Makes 12 cups, 6 servings This tasty soup is perfect when you feel the need for a little immune-system boost. (photo above) 1 1/2 teaspoons extra virgin olive oil 2 large onions, thinly sliced 3 garlic cloves, mashed 1 tablespoon minced fresh ginger 4 ounces shiitake mushrooms, stemmed and thinly sliced 2 large carrots, thinly sliced on the bias 2 1/2 pieces astragalus root (about 15 inches total) 10 cups mushroom stock 2 tablespoons tamari or low sodium soy sauce Salt 2 cups broccoli florets 1 /2 cup chopped scallions In a large pot, heat the olive oil over medium heat. Add the onions, garlic and ginger and sauté until soft and translucent. Add the shiitakes, carrots, astragalus root and mushroom stock. Bring to a low boil, reduce the heat and simmer for 45 minutes. Add the tamari and adjust the seasoning with salt if needed. Add the broccoli florets and cook until tender, about 2 minutes. Remove the astragalus root pieces. Ladle the soup into bowls and garnish with scallions before serving.

Brussels Sprouts with Umami Sauce

Do you see Americans eating differently since the inception of your restaurants? I do, but I don’t know how much credit the restaurants can take for that. A lot of doctors are recommending my antiinflammatory diet, so I’m hopeful. I see it going both ways: Certainly better quality foods are available in grocery stores; on the other hand, Americans are still eating huge portions. I do observe that on the coasts and in Colorado, food consciousness is growing and moving in a better direction. Our main purpose is to show that delicious food can be good for you, which I hope will influence other restaurants.

Most people who say they hate Brussels sprouts have never eaten them properly prepared. The secrets: choose fresh, smallish, young sprouts; do not overcook them; and enhance them with the right seasonings. Here, halved sprouts are quickly stir fried with garlic, then tossed in True Food’s Umami Sauce. Spring these on a Brussels sprouts hater and change a life. (photo below)

If people want to make a change in their diet, what single step would you advise? Eliminate refined, processed and manufactured food. It’s that simple. Your cookbook has received great reviews for the photography, design and flavorful recipes. The most common complaint is that the book uses hard-to-find, exotic ingredients. Would you change that if you could do it again? No. I tell people where to get them in the book, and they are available online. But I’ve been getting pressure to do another cookbook, and the theme might be even simpler recipes. After a long workday, how do you like to cook at home? I always cook for myself. I’ll have a salad, baked or broiled fish, or a simple pasta dish. I’ll see what I have on hand and throw something together—simple, quick. I’ll have a glass of wine or sake with my dinner, and I usually have a piece of good dark chocolate for dessert.

Umami Sauce This novel, intriguing sauce is so simple to make. Most people cannot guess the ingredients, particularly the nutritional yeast flakes that give the sauce its rich ochre color and imparts that clear “fifth taste” (umami). Keep a jar of it in your refrigerator and use it on everything from steamed vegetables to broiled fish. It’s great on salads, but add it at the last minute and don’t toss it with delicate greens, lest they wilt. 1

1 1/2 teaspoons expeller-pressed canola oil 1 1/2 pounds Brussels sprouts, halved 2 garlic cloves, thinly sliced 1 /3 cup Umami Sauce (recipe follows) 2 teaspoons freshly squeezed lemon juice 1 /2 teaspoon freshly grated lemon zest 1 /4 teaspoon salt 1 /4 teaspoon freshly ground black pepper Heat wok or skillet over high heat. Add the oil. When hot, add the Brussels sprouts and garlic, and sauté for 1 minute. Add 1/4 cup water, cover and cook for 2 minutes, tossing to cook evenly. Remove the cover and stir in the Umami Sauce, lemon juice, zest, salt and pepper. Continue to cook while occasionally tossing until the liquid is reduced to a thick sauce, about 7 minutes. Transfer to a plate and serve hot.

/4 cup apple cider vinegar /4 cup water 3 tablespoons tamari 1 cup nutritional yeast flakes 8 garlic cloves, mashed 1 /2 cup extra-virgin olive oil Salt (optional) 1

Place the vinegar, water, tamari, yeast flakes and garlic in a blender or food processor and blend until well combined. Remove the feed tube and, with the machine running, slowly drizzle in the olive oil. Blend well until the mixture becomes thick and emulsified, like mayonnaise. Adjust the seasoning with salt as needed. Pour the mixture into a lidded jar and refrigerate for up to 2 weeks. Bring the sauce to room temperature and shake well before using.

Bright, Bold and Blue An injection of color and contemporary style turns a dated kitchen into a modern masterpiece BY NANCY RICHMAN MILLIGAN

THE KITCHEN IN THIS 1970s home near Tabernash underwent drastic changes as part of a whole-house renovation: out went tired oak cabinets, pink laminate countertops and a constricting layout; in came bright blue cabinetry, sleek appliances and a whole new configuration. “The homeowners wanted a classy, comfortable, energy-efficient retreat,” says kitchen designer Margie McCulloch, owner of Red Pepper Kitchen + Bath in Boulder. “They like color, so we selected a custom cobalt blue to define the space.” And with two cooks in the family, a smart layout was important, as was the use of energy-efficient appliances and eco-friendly materials. McCulloch created an efficient new kitchen layout that interacts with the adjacent family room. She opted for clean-lined shelving (rather than upper cabinets) on the window wall to create an open, spacious feeling. Neutral concrete countertops, white brick backsplash tiles and stainless steel appliances both complement and calm the bold cabinetry. The designer selected super-efficient appliances, such as an induction cooktop, as well as materials made with recycled content. “But the real key to making this kitchen work was creating an inset pantry by borrowing 12 inches from the adjacent bedroom,” McCulloch says. “The kitchen might not be large, but it works efficiently.”
