FOR ME, THE START OF A NEW YEAR is always a time of reflection. How was the past year? Did I accomplish my goals? What are my goals for the year ahead? (I’ve stopped calling them resolutions.) I always like to take a little time during that quiet week between Christmas and New Year’s Day to look back, and then forward. My 2012 was exciting: I bought a charming brick Tudor in my favorite Denver neighborhood (never to move again), I settled into the second year at this wonderful job, and in March I became a grandma for the first time. In the year ahead, my goals include a trip to Italy, more time with my beautiful grandson, and, of course, to turn my new house (new, to me, that is; it was built in 1938) into my home. After a few wintry months trapped inside, I’ve succumbed to dreaming about wallpaper and new drapes, and, with perhaps a little too much time to really analyze the space, I’ve even begun to hallucinate about disappearing walls and raised roofs. So our annual Remodeling Issue is arriving at the perfect time. In the following pages, you’ll find inspiration in homes that have undergone changes both large and small, from top-to-bottom overhauls to a healthy dose of fresh paint and carefully chosen furnishings. We’re also delivering a few new departments for 2013: In “Color Story,” we’ll check in with some of our favorite designers to find out what colors they’re obsessed with (page 31); “State of the Arts” celebrates Colorado’s vibrant art community (we kick it off with a chat with the charming and brilliant Christoph Heinrich, director of the Denver Art Museum, page 33); and “Tastes,” which shares tips and recipes from Colorado foodies (don’t miss the delicious story about—what else for Valentine’s Day?—chocolate, page 113). Finally, I’d like to begin the year with a word of thanks—to our readers, our advertisers, and the designers and architects who keep sharing their talent with us. “AMBITIOUS” MIGHT BE THE BEST WORD to describe the past three years at the Denver Art Museum, where blockbuster exhibitions covering King Tut, Yves Saint Laurent and Vincent van Gogh (which runs through January 20th) have boosted Colorado’s profile as a place for artists and art lovers around the world. The man ultimately responsible for the museum’s program is the affable Christoph Heinrich, the DAM’s director, who has a knack for reminding us all how exciting, wide-ranging and enriching art can be. Colorado Homes & Lifestyles: It’s hard to ignore that during your tenure, the museum has hosted some big-name shows. Is this where the DAM is headed?
Christoph Heinrich: We need a beacon, let’s say, once a year. And that is really an exhibition that brings the light of the Denver Art Museum above the border of the city, the state. With Tut, Yves Saint Laurent, and now Van

Gogh, we had very high attendance from people outside the state. Everyone is excited about these shows. At the same time, the museum is only as good as its program in total. And we are doing a variety of smaller shows, medium-sized shows as well as larger shows with different angles. For instance, we produced something last year that I was personally very excited about: Marvelous Mud, which was a small cluster of exhibitions and programs about clay, derived from eight different departments. It was hugely popular. We’re going to do something similar this year, called Spun. It’s about textiles, of course. Every curatorial department is contributing to it, and what excites me about these projects is that you activate all of the collections. Then people, as they do in a scavenger hunt, are not only going through the 10,000 or 15,000 square feet of special exhibition space, but they’re taking advantage of all the museum’s offerings.

So how does an exhibition come to be? Are you in the shower when an idea pops into your head, or do your curators come to you with brilliant ideas?
Nobody knows anymore, which I think is a good thing. The projects come from the whole curatorial team. Like magic, it just happens. Timothy [Standring, curator of painting and sculpture] had Van Gogh on his mind for quite a while, and when we started talking about it, I said, ‘If we are going to do it, let’s do it right. Let’s not be afraid of the cost or the logistical problems that a major exhibition brings.’ He had this wonderful idea of presenting Van Gogh not just in a show of highlights but as a man who became the artist we know. By the way, I don’t get my best ideas in the shower. I get them while I’m shoveling manure [in the stables near his home in Morrison]. It gets me a little off-track, and suddenly, I realize I’m having good ideas. No doubt the six-year-old Hamilton Building helps inspire, too. True? 34

It’s our best buddy, the partner with which we can do everything. I really must say that I haven’t seen a show as glamorous, as dramatic, as the Yves Saint Laurent show. And now, with Van Gogh, you feel like you’re in a different museum. The building is very flexible, very smart. I’ve not seen this flexibility in any other museum building anywhere. So we have to ask: What’s featured in the “beacon” show for 2013?
Sometimes I’m scared of 2013—it goes boom, boom, boom. February brings the opening of a Georgia O’Keeffe exhibit, then comes Spun, which will be truly fantastic. Then we’re having a show about Nick Cave, a performance-dance-sculpture artist who created these wild “soundsuits”—suits that make sound. You have to Google it or search YouTube to see them. He’s doing a show of new work for the museum, which will be our big sensation this summer. And then we have a show with Mark Rothko, who became so famous for his color-field paintings.

Yes, and it’s pretty awesome. Are you going to tell us about it?
Maybe. What do you think when you hear the words, ‘French painting?’ Monet.
Yes! It’s a three-part show all about the French glory, from Old Masters to Monet. One component is a wonderful collection of highlights of 300 years of French painting, another is a drawing show, and the third is impressionist landscapes, the good stuff: Monet. Cezanne. Renoir. Degas. Sounds wonderful. We will be there. And while we all love big shows, what do you hope people know about the museum as a whole?

I believe that museums are places for learning about other cultures and educating yourself to be a more complex and full person. Being in the museum space and learning is a deep and enriching experience.

HOTEL JEROME GETS
Handsome One of Aspen’s most historic hotels gets a makeover: Goodbye, fussy Victorian accents; hello, bold, masculine style BEFORE designer Todd-Avery Lenahan reimagined the Hotel Jerome, arriving at the guest rooms was somewhat... anticlimactic. Visitors would open the door and behold a “big, gypsum sheetrock box,” the principal of TAL Studio says about the rooms, which are part of an annex built in the 1980s. To overcome this “eighties tract home” effect, Lenahan added moldings and treated existing trim and doors to “a very rich, gun-metal gray,” which “instantly gave the room strength, masculinity and a period quality,” he says. The furnishings continue the historic narrative: Overhead light fixtures date back to the 1920s, when the hotel was in its heyday, and the custom carpet (designed by Lenahan) is a riff on a cubist pattern from the same era. The palette of materials—plaid, pin stripes and cashmere—is inspired by menswear suitable for Aspen’s different seasons, and polished nickel and bronze accents make the perfect finishing touches: “They’re like the buttons on a man’s jacket, or a beautiful watch peeking out from a cashmere coat,” Lenahan says. WANT A MASTER SUITE that makes a statement? Follow Lenahan’s tips, and mix and match these masculine furnishings. Start with a design statement. “Come up with a concept—it’s like writing a script—and stay true to it. People start shopping, get excited about particular furnishings and then go off script,” he says. (Here, Lenahan’s menswear motif inspired a strong, cohesive look.) Small rooms don’t require small furnishings. “If you buy what I call ‘shrunken furniture,’” the designer says, “then the brain registers that the space is small. I like well composed, handsomely scaled pieces that have presence in the room.” Don’t be afraid of the dark. Lenahan debunks the design myth that light colors expand space: “Dark colors recede, and when you paint a wall in a dark shade, it moves away from you and makes the room feel larger.” Give your bed prominence. “Use both a headboard and footboard to create a room within a room,” he says, adding that footboards also serve to anchor furniture (like the sofa above) at the foot of the bed. —Caroline Eberly

FACING THE GORE RANGE ON THE EDGE of the Ptarmigan Peak Wilderness, a thousand feet above the Blue River Valley, there stands a forest of spruce, fir and aspen sprinkled with wildflowers. It sounds like the perfect place for nature photographer John Fielder to perch his camera—but it’s actually where he’s decided to perch his Summit County home. Taken with the “nature-consumed” mining buildings—abandoned structures on which the elements have left their mark—that dot Colorado’s landscape, Fielder wanted to design a modest, eco-friendly home that looked like it had been there for ages. After seeing a 19th-century ore-stamp mill while crosscountry skiing near Breckenridge, he built a model of his dream house using cardboard and tape. Architect Suzanne Allen-Guerra of Allen-Guerra Design Build was unfazed when the photographer offered her the cardboard mockup, which actually resembles the finished structure a great deal. From the flow of the floorplan to the placement of light switches, they planned everything so fastidiously that Fielder hasn’t changed a thing since the home was finished.

WE WERE JUST WONDERING...
This parcel of land isn’t the only corner of Colorado with which Fielder is well acquainted. He is arguably best known for his best-selling book, Colorado: 1870-2000, for which he drove 25,000 miles and backpacked another 500 to retrace the steps of early Colorado photographer William Henry Jackson. The book’s juxtaposition of Jackson’s historic photographs and Fielder’s modern retakes reveal how much—and, in some places, how little—our state’s landscape has changed since its settlement. He first fell in love with the Rocky Mountains as a teenager from North Carolina on a school field trip, but it wasn’t until he was 32 and launched his own publishing company, Westcliffe Publishers, that Fielder’s hobby of nature photography became the mainstay of his career. Not only did he publish books and calendars featuring his own Colorado photography; his small publishing house garnered a reputation for producing high-quality outdoor guidebooks and picture books by nationally known authors and photographers. As his business blossomed, so did his family: he and his wife Gigi had daughters Ashley and Katy, and son J.T. (right) Fielder originally constructed a cardboard mockup of his Summit County home. In the early 2000s, amid the notoriety that accompanied the popularity of Colorado: 1870-2000, tragedy struck the Fielder family not once, but twice. Following the loss of Fielder’s wife, Gigi, to early-onset Alzheimer’s, his son took his own life on a wintry mountaintop. By 2007, Fielder’s grown daughters had moved out of the family’s Greenwood Village home, he’d sold Westcliffe Publishers, and he’d opened a fine-art photography gallery called John Fielder’s Colorado (now in Denver’s Art District on Santa Fe). Fielder knew it was time to move on, and Summit County, which offered instant access to the mountains but was still an easy drive to his Denver gallery, was a natural fit. Today, Fielder has another reason to travel to Denver: a granddaughter named Gigi, born to Ashley nearly two years ago. “She’s the reincarnation of her grandmother,” Fielder smiles. “I think about Gigi and J.T. every day,” he admits, “but you try to focus on what you have, like little Gigi. No matter what you do for a living, life is too special to focus on what you don’t have.”
What’s a typical day at home look like? I wake up to the red light on the Gore Range, just as if I were camping out in a tent. I have coffee on the couch and read The Denver Post on my iPad. By 9 a.m. I’m on the computer, editing photos and communicating with people. At some point, I ride my mountain bike down to Highway 9 and back. At 4 or 5 o’clock, I sit on the patio with a cocktail, watch the sun go down, fire up the grill, and have dinner with some Chardonnay before watching sports and, by nine, getting in bed, where I read until I’m fast asleep. Of all the photographs you’ve taken, do you have favorites? All nature is beautiful, but these two images [pictured at left] represent my idea of Colorado at its best. What keeps you passionate about the Colorado landscape? After 40 years of photographing and seeing the things I’ve seen—the moments of light, the landscape, the creatures— you can’t help but be influenced by the glory of it all. I just love being outdoors—smelling it, touching it, hearing it, seeing it. And sharing it. That’s as important as anything else, and that’s why I try to do my part to help protect it. Any advice for aspiring photographers? Great photography doesn’t come from cameras. It comes from appreciating your subject matter, whether it’s people or nature. If you’re in love with your subject matter, you will make better photos.

in the Highlands A Denver designer transforms a cool interior with warm colors, bold patterns and redefined spaces

remodeling jobs, but when Rebecca Cobo bought her Victorian home in Denver’s lower Highlands neighborhood she was largely satisfied with the former homeowners’ renovations. The kitchen and bathrooms were brand new and tastefully done, several walls had been removed to open up the space, and the original exterior juxtaposed nicely with interiors that were sleek and contemporary.

The only problem? The rooms felt a little too modern. “Everything was gray and white, and it just didn’t feel like home to me,” Cobo says. So she enlisted the help of Jodi Cook, a senior designer with Ashley Campbell, Inc., to liven up the space. “Rebecca is young, fun and vibrant, and she loves to cook and entertain,” Cook says. “I wanted to translate her style into interiors that reflect her taste and personality,” a transformation that began with a new color palette. “We warmed things up right away by painting every wall and ceiling in the house.”

In the open kitchen, the splash of teal in the patterned rug contrasts with the mink-gray countertops and white cabinets. Metal patchwork barstools made from reclaimed cans provide seating when Cobo is cooking for friends, and a cozy dining nook tucked in the corner is a perfect spot for sipping morning coffee. Inspiration for the home’s main floor hues came from the living room’s original bright green fireplace surround, which Cook offset with accents of coral and chartreuse. To complement the modern ‘bones’ of the interiors and to add some edge, Cook specified several accessories with a vintage, industrial look like the metal overhead light fixture with exposed Edison bulbs. She also suggested repurposing some of the rooms to better suit Cobo’s lifestyle. “We let go of the formal dining room and turned it into a cool lounge area where Rebecca and her friends can hang (top) The kitchen features an abundance of built-in cabinets and a subway tile backsplash in cool white, warmed up by a teal rug underfoot. out,” Cook says. “The orange glass chandelier gives the room what I call the ‘wow’ factor.” The guest room was also converted into a music room where Cobo can play her instruments and listen to the collection of vintage records she received from her dad. A pullout sofa provides extra sleeping space for guests.

Cool colors dominate in the upstairs level. “Rebecca grew up in Key West, and she loves blues and watery colors,” Cook explains. Under the eaves, the master suite is a peaceful retreat with walls of pale seafoam green, and an adjacent master bathroom in pale blue features a deep soaking tub. Like any renovation well done, the interior is just right for its new owner: neither too modern nor too stuffy, but cozy and stylish in all the right ways. “The house feels like my home now, and I throw dinner parties for my friends nearly every week,” says Cobo, a graduate of Johnson & Wales University’s culinary arts program. “I use every room, and the space fits my lifestyle perfectly.”
Interior designer Jodi Cook brought big style to this modest 1,200-square-foot home. Here, her tips for maximizing style and livability, even when space is limited:

Strategically-placed mirrors can add depth to a small room. The key? “Use mirrors with skinny frames; big, heavy frames can overwhelm the space,” Cook says. Make the furnishings count. “When your space is limited, every piece should be as exceptional as possible for maximum impact.” Look for furniture that can multitask, like an ottoman with built-in storage, and seek creative space solutions. Pay attention to scale and proportion. “Don’t over-furnish smaller rooms with pieces that are too big, and don’t fill the room with a lot of little pieces, either,” says Cook. “Strive for balance.” High ceilings can add volume to a space, so highlight them with extra-tall draperies or vertically striped curtains. Don’t be afraid to reinvent spaces to work for your lifestyle. In this home, the guest room was converted to a music room and the formal dining room was eliminated to create a comfortable living space.

Into the Light A remarkable remodel turns a dark and dated Vail house into a modern, elegant, light-filled home

in the heart of Vail, it is difficult to believe it ever resembled the heavy, dark space the “before” photos reveal. The full-fledged renovation required the vision and talents of architect Beth Levine of Beth Levine Architect, Inc., the skills and flexibility of contractor Tom Solawetz of Beck Building Company, a team of designers and the confidence and daring of involved homeowners to pull it off. Now doubled in size and opened up to the light and views of Gore Creek, the home feels fresh and inviting. “What was once a simple two-story house with eight-foot ceilings was transformed into a collection of incredible architectural spaces enhanced by fabulous furnishings and art,” Levine says. 53

When the clients first came to Levine, they were planning to update the kitchen and raise the attic space to create a third floor—and that’s it. But the project quickly blossomed into a head-to-toe remodel and expansion: “We raised the roof to add a third-floor master suite and, at the same time, decided to excavate the crawl space beneath the house and turn it into a livable basement,” explains Levine. The existing 2,164square-foot house was gutted and an 8-foot bump-out was added to every level. Responding to the home’s simple New England saltbox-style exterior and the owners’ desire for both contemporary and antique furnishings, Levine created a straightforward contemporary design with a clean palette. The centerpiece is a custom staircase that seems to float from one level to the next. “The house has a very clean-lined, cohesive style,” says Levine, pointing to the consistency of wide-plank European white oak floors and calm, neutral colors throughout. Kitchen designer Carolyn Samelson of William Ohs picked up on the architect’s aesthetic with sleek cabinetry in shades of white and blue-gray.

While the new third floor was treated to soaring vaulted ceilings, the first two levels were kept within their existing 8-foot height. Instead of changing the actual dimensions, Levine and interior designer Jim Powell, of J. Powell & Associates, worked to create an illusion of greater height. The architect extended the living room windows up a foot and added three-quarterinch reveals at the ceiling line to draw the eye upward. Powell used high-gloss ceiling paint to “visually lift the space and reflect light from the windows,” he says. The designer also conceived a new fireplace surround, selected lighting and hard finishes, and coordinated with the homeowners’ Texas decorator, Suzie Page. Familiar with her clients’ preferences, Page pulled together a striking fusion of contemporary and antique elements. “The husband likes modern, contemporary flair,” she says. “The wife has an incredible aesthetic, mixing beautiful, well-thought-out pieces from different places and times. They complement each other amazingly well.” 58

A très chic renovation of this Denver home puts a fresh spin on Old-World elegance

WITH A FEW WELL-CHOSEN furnishings and adornments, home design can transport you to a different place or time. But taking a newer home back several centuries—and doing so authentically—requires more than just some artfully placed antiques.

Before homeowners Roxanne and David Peterschmidt got their hands on it, this home in Denver’s Cherry Creek North neighborhood was a typical city dwelling, circa 1990. Now it recalls 18th-century Paris, with flickering lanterns, intricate ironwork, grand custom woodwork and layers of elegant finishes—the result of a gut renovation that spanned 14 months and employed a fleet of local craftsmen. And after all of that hard work, the project’s measure of success is somewhat ironic: it looks as if the homeowners didn’t change a thing. Pulling off a period renovation is not for amateurs. Do too little and it looks artificial and out of place. Do too much and it looks like a museum. In this case, Roxanne Peterschmidt and her design team, interior designer Linda Floyd and contractor Steve Diamond, had just the right touch— with a sledgehammer. “To make it look like it’s always been there, you have to ‘peel back’ as far as we peeled back,” Peterschmidt says. “We took out the cabinetry and all of the tile and finishes. We kept the hardwood floors, but otherwise we had the chance to add things that were going to make the home look authentic.” They reframed walls and added custom built-ins and woodwork at nearly every turn. Floyd designed a thick, ornate wall that runs the length of the house, from the front door to the back family room. design a sense of permanence. And in the foyer, she swapped out the staircase’s white spindles for a custom iron railing crafted by local artisan Max Brun, recalling an 18th-century French manor. The exterior received a facelift, too. Its stucco façade was reskimmed and embellishments were added, including crown molding under the eaves, cast-stone casings on the windows and ornamental ironwork. Floyd painted the front door a French blue, fitted it with imported French steel hardware and crowned it with an antique French marquis. The European embellishments and Old-World ambience give the home a sense of sophistication, but the scheme steers clear of fuddy-duddy formality. “It’s fresh enough to live in today, the designer says, “but it has elements from the past.” For example, Floyd filled the kitchen with Old-World-inspired touches such as an antique French fireback and a limestone and pewter hood over the stove, but then she opened the space to the family room to suit a modern lifestyle. (above) “There was no light in the kitchen, so I put windows behind the cabinets on either side of the stove,” Floyd says. “The contractor thought I was crazy, but he executed it beautifully.” The white Carrera marble countertops and antique brass shelving were inspired by Parisian bistros. The center island, clad in walnut, features a refrigerated drawer. An antique French fireback embellishes the backsplash behind the La Cornue stove, which is crowned with a limestone surround and a pewter hood. Floyd’s eye for detail could have sent some contractors running for the hills, but Steve Diamond of Englewood-based Diamond Homes was up to the challenge. “We’ve done a lot of Old-World-style homes, but this involved detail on a different level,” he says. “But as the final layers were completed and the furniture and fabric were placed, Linda’s vision came together. This home is like a little jewel box from Paris that just got dropped onto an ordinary street in Cherry Creek North.” Peterschmidt likes that assessment: “That’s what we kept saying when we were building the home. We wanted it to be this little jewel box. This is the fourth house that my husband and I have created with Linda and this is our favorite.”

By Mark Samuelson Home builders working the towns along Colorado’s U.S. 36 northwest of Denver were racking up sales last fall at rates that didn’t jibe with 2012’s lukewarm job growth: The Boulder Turnpike, wrapped by office campuses that are primed for high-tech ventures, still seemed mired in the national economy’s malaise. Petroleum giant Phillips 66 announced it was backing out of a promised research center that was to lure 7,000 jobs; but just a few miles east, luxury builder Toll Brothers was taking its 22nd sale of the year at McKay Shores in
Coldwell Banker agent Marie Callaway, fresh from a $1.15 million sale in nearby Huntington Trails Estates, says she knows what’s going on. “There are still no big-dog employers coming, but we have tremendous numbers of self-employed,” she said over sushi at Zen Asian Bistro in Bradburn, a new-urban master plan in Broomfield. Last week, she recalled, she had met buyers coming from balmy Palm Springs. “One of the things you’ll like about living here is being outside, the hiking and walking,” she told them. “As nice as your climate is in California, your cities are not set up for open space.” Towns that Callaway specializes in -- not just Boulder but Broomfield, Westminster and Louisville -- show off superb recreation facilities linked by endless trails. “You can start from practically any neighborhood and be at a trailhead in three minutes,” she said, showing one byway winding from the lake into an enclave where she has a custom listing at $1.1 million; about half of what Boulder buyers would pay for that property. Chocolate Frontier Modern pioneers in craft chocolate-making, Robbie Stout and Anna Davies of Denverbased Ritual Chocolate create small-batch, big-flavor bars using vintage methods and just two simple ingredients

IN A SMALL, SPARE FACTORY JUST NORTH OF downtown Denver—where creative outposts are reclaiming the tired streets—Robbie Stout and Anna Davies are pursuing their own artisan craft amid the upstart coffee shops and design studios: chocolate making. To be clear: these creative, young entrepreneurs are not making candy, or importing chocolate from Belgium, melting it down and molding it into truffles. Rather, they’re crafting the actual substance itself—sourcing the cacao from high-integrity farms in Costa Rica and Madagascar; roasting, dehulling, grinding and tempering the beans; hand-wrapping the bars and personally delivering them to local shops, as well as restaurants that use the chocolate to create luscious desserts. They engage in this spectacular effort with the hope of turning people on to the magic of exquisite, high-quality chocolate—a food many people love but know little about—and educating them about why it’s worth paying a little extra for chocolate that’s made slowly, with fair practices in mind. “In Colorado, it’s a very empty landscape for this craft,” Stout says, adding that there are only about 30 producers of this kind in the entire country. “But the industry is going to boom,” he says. After considering the love and labor he and his business-partner girlfriend have poured into the fledgling company, started just about two years ago, it’s clear that only the most dedicated will survive.

Embrace the Ritual “The only wrong way to eat chocolate is to scarf down the whole bar at once,” Robbie Stout says. For a moving experience, find a quiet moment with a few morsels and follow these tasting tips: Remove distractions. “Tasting is a meditative process,” Stout says. “You need to be focused on the moment and have an open mind. It’s easy to stick something in your mouth, walk around the room, talk to someone, and forget you’re eating this amazing chocolate.”
For Stout and Davies, first came love, then chocolate. The couple met on Boulder’s Pearl Street Mall, where Stout held a part-time job in a coffee shop Davies frequented. They began dating, and the idea for a chocolate enterprise was sparked not long after. “We were really into chocolate already,” he says, “and we were eating it every night.” Around the same time, Stout, a cyclist and former journalist who has always loved extreme challenges (chocolate-making no exception), took on an article for Boulder-based VeloNews about coffee marketed to cyclists. He was stirred by how diverse and amazing this sister substance could be—and the success some young artisan-entrepreneurs were having carving out their corner of that specialty industry. His thoughts turned toward chocolate, where he and Davies saw “immense potential and endless interest.” Before long, they were buying small quantities of beans, piecing together their own equipment (even a small roaster) and making experimental batches at home. “We were living in a carriage house and the landlords were getting a little annoyed with the roasting and all of the equipment,” Stout laughs, who uses the word “obsessive” to describe their curiosity about the process. This “research and development phase” included visits to farms in Costa Rica and Madagascar, where the beans used in Ritual Chocolate’s single-origin and -estate 75% cacao bars take on their distinctive terroir. (The only ingredient besides cacao beans is organic cane sugar—pure and simple.) According to English-born Davies, who grew up helping her father on his farm north of London, half the craft of chocolate-making lies in careful farming of the beans. This conviction led Stout and Davies to select farms they could trust—those that pay their workers an honorable wage and with whom they could form friendly working relationships. Tap into your personal food history. “To taste particular notes, it doesn’t take a creative imagination; it just takes a good memory. If you try our Madagascar bar and it reminds you of a PB&J, you’ve done a good job, since it’s nutty, fruity and bread-y.” Eat with a warm mouth to maximize flavor. “Chocolate melts just below the temperature of your mouth, so don’t eat it while drinking ice water or immediately after coming in from the cold,” Stout says. “It will just wad up.” Store chocolate at room temperature, not in the fridge or freezer. Consider the first bite a warm-up. “The second, third and fourth bites are the best; you’ll notice more flavors than during the first, when your mouth might not be fully prepped.” Stout recommends using half of one of the nine squares in a Ritual Chocolate bar as your sample size. “I’ll bite it once or twice and swirl it around, which exposes new surface areas and can increase the flavor.” Breathe deep “Once the chocolate is melted, it helps to breathe out through your nose to see if you can smell or taste the after-aroma.”

“When we’re given the beans,” Davies says, “we have to really respect them because there’s already been so much care put into them. We have the responsibility to make a good-quality product.” If Davies is the agricultural advocate, then Stout is the manufacturing guru. “Chocolate meets us in the middle,” he says. “You can’t have good chocolate without good manufacturing practices.” And together they’ve discovered that “good manufacturing” doesn’t necessarily require newfangled technology. Inside the Ritual Chocolate factory—a space the couple shares with chocolate master Steve DeVries of DeVries Chocolate—vintage equipment stands amid burlap bags of raw, sun-dried cacao beans. Whereas new equipment is generally engineered to produce lots of chocolate (and quickly), this old machinery is designed to develop flavor and texture. The factory’s winnower, for example—the machine that separates the nibs from the shell—was built in the early 1900s. While other pieces of equipment might only be 20 years old, their designs date back to the 1800s. This process is neither fast nor efficient—but that’s exactly how the innovators would have it. As if pursuing a sensual blend of wine or perfectly balanced coffee, they approach each stage of chocolate creation with care and conscience. “Every step is the most important,” Davies says. It’s this ritualistic approach, which you’d observe as Stout and Davies sort the beans by hand or wait for the chocolate to age as long as six months, that speaks to the history of cacao, and inspired the company’s name. “When you look back to Aztec and Mayan cultures,” Stout says, “chocolate was the drink of choice. Chocolate Bread Pudding Makes 12-16 servings
You’ll need: About 8 ounces stale bread, crusts removed and cut into half-inch cubes 4 1/2 cups heavy cream 1 1/2 cups milk 1 1/4 cups sugar 1 teaspoon salt 15 ounces Ritual Chocolate, roughly chopped 3 eggs 12 egg yolks Place the bread cubes in a bowl and allow them to dry out while you make the custard. Pour the cream, milk, sugar and salt into a medium pot and bring to a boil. Remove from heat and whisk in the chocolate until fully melted. Whisk in the eggs and yolks. Pour the custard over the bread and mix to combine. Let stand at least one hour, stirring occasionally, so the bread can soak up the custard. Meanwhile, preheat the oven to 350 degrees and grease a 13 x 9 x 2-inch baking dish. Pour the soaked bread into the baking dish, cover with foil and bake for one hour. Remove the foil and bake 20 minutes more. The pudding will puff up and is finished when a toothpick inserted into the center comes out clean or with just a few crumbs. Cool for at least 20 minutes before cutting and serving. (Pudding can be completely chilled and re-heated when ready to serve.) Spampinato recommends topping the bread pudding with chocolate sauce, cocoa crumble and toasted hazelnuts, and serving with a side of pear sorbet.

A Happy Dose of Nostalgia Architect Suzanne Allen-Guerra infuses century-old charm into a present-day kitchen BY ERIN ENGLISH

WITH THE HOPE OF BRINGING SOUTHERN CHARM into her new home, the owner of this Breckenridge dwelling first sat down with architect Suzanne Allen-Guerra of Allen-Guerra Design Build to share stories from her childhood in eastern Tennessee. This charming kitchen, inspired by a “cozy, comfortable” cabin owned by her husband’s family as well as another belonging to a close friend, is just one of the home’s many spaces that puts her love for vintage items on display. Many of the elements in the room are deliberately old in feel: The simple countertops were created by Vermont Soapstone, which has been in business since 1850; exposed timbers were reclaimed from an old,
dismantled mill in Wisconsin; and the kitchen floor was constructed with wide-plank pine boards that have a rustic flair. “We used old-fashioned nails and hammered them in by hand so they were exposed, just like it used to be done,” Allen-Guerra says. The architect also worked closely with custom woodworker Genesis Innovations to create cabinetry that was similar to those the homeowner remembered from her friend’s cabin. By incorporating these thoughtful details to evoke such fond memories, the design team hit a home run. “When her friend came out for a visit and stepped into the kitchen, she burst into tears,” AllenGuerra says.
