I do love a new year: a time for a new beginning, a quiet pause for reflection after the rush of the holidays and for many, an excuse to make some resolutions. I don’t do the resolution thing anymore, but I do like to take some time to dream about change and “newness” in the new year—and those dreams tend to revolve around enhancing my home: making it prettier, more comfortable or more functional. And so I’m thrilled that remodeling is always the theme of our first issue each year. If you, too, are dreaming about a little home enhancement, you’ll enjoy the three incredible remodels we feature in this issue, including the Boulder home of celebrity designer and Colorado native Kari Whitman. Her renovated cottage, just down the street from her childhood home, is funky, cool and glamorous. Just like its owner. And speaking of remodeling, we’ve also given our beloved magazine a little facelift. Now in its 34th year, we are proud of CH&L’s longevity, especially over the last few years—a time of unprecedented change for the publishing industry. But as we all well know, a little makeover now and again keeps everything feeling fresh and lively. As you read this issue, you’ll notice we’ve let go of a few departments and added some new ones, lightened up the pages and made it easier for you to grab useful information and designer tips. I’m especially excited about our “Shop” story (page 27), which will highlight the many charming retail districts around Colorado, and our “Explore” department (page 125), in which we’ll delve into the myriad recreational activities our beautiful state has to offer. hen gold was discovered along the Blue River in 1859, a small base camp was established. That camp is now known as Breckenridge, the charming little mountain town that sits at an elevation of 9,600 feet and serves as the county seat of glorious Summit County. Although a well-known mecca for snow-seeking outdoor enthusiasts, Breckenridge also offers plenty of fun for those looking for less strenuous pursuits; namely, shopping. The town’s Main Street, part of the largest historic district in Colorado, is lined with more than 150 locally-owned boutiques and galleries, all tucked into charming old buildings and homes. Ready, set, shop!

Art on the Open Plains

L

ook out, New York: From the blink-and-you-miss-it town of Byers (45 miles east of Denver), the non-profit M12 Studio creates and supports some of the most captivating contemporary art in the country. Instead of finding inspiration in the grit and glamour of the city, M12 responds to the beauty and culture of rural communities, particularly in the Great Plains. The group’s headquarters is a former feed store on Main Street, transformed into a hip, stripped-down working space. Among its leaders are Richard Saxton, an art professor at the University of Colorado, and Kirsten Stoltz, a former curator. And the group’s mission is nothing less than to help solve the biggest problems of the 21st century.

art CH&L: You have some lofty ideas floating around here. Tell me what M12 does.

Richard Saxton: At a basic level, we work with small communities and do interesting arts and culture projects. We saw a gap in the representation of arts and culture that existed in rural communities, and we seek to fill it. Sometimes, our projects are self-initiated, where we see something really intriguing to us and we think there could be a creative response to it, and sometimes we’re invited or commissioned to do a project in the community. Very early on, when we formalized the group, we wanted to be as informal as possible. We see ourselves as an organization that’s a fusion of practitioners—artists, architects, designers and other creative professionals who make things—with a focus on education and social engagement. CH&L: And tell me why you’re so drawn to rural communities.

Kirsten Stoltz: I was born in Yuma, Colorado, the fifth generation of my family to live there. Richard’s family homestead is in western Nebraska. So some of it is tied to identity. Many of the artists we work with are in the Midwest or Great Plains regions. They either live in rural communities or they’re from rural communities. We all see rural America as a dynamic, changing space that gets overlooked in the larger world of contemporary art and cultural production. Contemporary art is pushed to the coasts, but we truly believe this place is just as inspirational as urban places. We prefer it here because it allows us the space and freedom to think. And there’s no a lack of culture in rural places. RS: It just looks different. How? RS: Our Black Hornet car production is a great example. [Each year, M12 designs and builds a dirt-track race car with the Hall family of Fort Morgan, a family with deep generational ties to dirt-track racing. M12 sponsors a rookie driver as an act of cultural preservation. The car functions not only as a work of art, but also as an object (right) M12 created the Black Hornet, a race car that doubles as a conversation piece. “It’s an entry into conversations about cultural exchange outside of the city,” Saxton says. of social engagement]. We look at the art that already exists in the rural landscape. What’s ripe for creative visual expression? The dirt track exists on its own terms. The artistic genius doesn’t have to be implanted. KS: I love that we don’t set up something and tell people, ‘This is art.’ We go out there and interact with the community in a natural way. It’s different from saying, ‘Okay, we’ll design a sculpture in a public park or in the city square.’ The racetrack is the city square on Saturday nights. So are you focused on preserving rural communities?

KS: It’s more about evolution. We’re interested in how contemporary art can trigger dialogue about important issues. Some projects never become anything tangible, but we think the conversation is truly valuable.

Can you give me an example?

RS: The Campito Project. We looked at the sheepherding industry and the architecture of the sheep wagon. The reality of sheepherding is not the romantic notion of cowboys running their sheep. We’re importing rural

rural space in contemporary art on its own terms. It’s not plein air painting, where the culturally elite go out and paint the fields. So what is it about?

RS: I read a phrase once that struck me in a book called Let Us Now Praise Famous Men [by James Agee]: ‘The effort to preserve simply the cruel radiance of what is.’ I like that, ‘the cruel radiance of what is.’ That’s what motivates us. We’re not inserting art into artless places. We’re acknowledging and responding to the cruel radiance of what is.

And tell us why that matters.

Open Space is a 24-foot-tall geodesic dome on a wooden platform built from the remnants of Yuma County’s original rodeo arena. It exists to help visitors pay close attention to their sensory experiences of the farm’s natural cycles.

knowledge about sheepherding from Peru, Mexico, Bolivia. The herders are often immigrants who live here for three years, and they’re living in these chuck wagons. The design hasn’t changed much since the 1800s. If we value sheepherding culturally—and I would argue we do—then some things need to change, and one of those things is the design of the wagons. So we redesigned it. We actually created a series of designs, all of which had solar energy platforms, composting toilets, heated showers, a portable garden, a global communication system—elements that could really transform the lives of sheepherders. But we’re not going to be a sheep-wagon production company. We want to highlight the fact that it’s of value to treat sheepherders well. KS: We want to get people thinking and talking. Like you do with Gran’s University. We love this idea. Tell us more.

RS: Gran’s University is a two-part project. We wanted to archive intergenerational knowledge that might specifically deal with rural experience. We built this trailer, and we take it out and collect stories and knowledge from our elders. Our professors are grandmothers and grandfathers. So, for example, we took the mobile unit to the Washington County Fair and asked people what they wanted to preserve. Then we captured this knowledge through drawings, recorded interviews, photography and some video. We also work with our Swedish collaborator, Kultivator. We looked at things like the root cellar and the sod house, and we found some fusion in architectural styles in rural Sweden and in the rural Great Plains. [In Dyestad, Sweden], we built an underground food preservation structure with a classroom on top. It’s called Elders’ Hill. Now they organize workshops with elders in the community who have knowledge about food preservation that’s deeper than what you get when you Google it. The experiential practice is, in its way, the art. Why Sweden?

RS: The group Kultivator does a lot of the same things we do. That’s another really wonderful thing about working in this field of rural contemporary art: It’s a budding field. The people involved are very open to exchange. We all know it’s not just about art. We’re saying together that the time has come to represent 32

RS: M12’s work can be the conduit between rural and urban spaces, and in that chasm are some of the most important issues of the 21stcentury reality. We’re talking about food production, natural resource management, immigration, land use, intergenerational knowledge—major issues of our time. Almost nothing we do has commercial value. How are you going to sell a race car? How do you sell this idea of Gran’s University? At a lot of cultural institutions, the businesspeople ask, ‘What’s the return?’ There is no return here. We’re interested in the conversation. We believe that’s invaluable. If we can leave a body of work that is creating a culture of dialogue, then we’re doing our job for this time and place.

Pride of Place No matter where in the world he’s working, renowned Denver architect Curtis Fentress says the key to successful design is keeping it local

I

f you’ve ever dropped your suitcase to marvel at the stunning snow-white peaked roofline or gawk at the billowing, tent-like interior of the Denver International Airport, then you’ve had a glimpse of what goes on inside the wonderfully imaginative mind of architect Curtis Fentress. Born and raised on a tobacco farm in Greensboro, N.C., Fentress earned his architecture degree from North Carolina State University and then headed to New York, landing in the office of celebrated modern architect I.M. Pei. His next job, with New York-based Kohn Pedersen Fox, brought him to Denver to work on the Amoco Building, where he decided to stay and open his own firm in 1980.

The Fentressdesigned Denver International Airport was the largest in the world when it opened in 1995.

Many architects are known for a signature style, but not Fentress. “If you get a Frank Gehry, you get a crumpled piece of paper, wherever it is. If you get a Richard Meier, you get a white box. There’s certainly art in that, but for me, the art in architecture is about relating to the place and to the culture,” Fentress says. Fentress created DIA’s now-iconic fabric-roofed terminal to mirror the snowy Rockies nearby. And he just completed work on an update to Los Angeles International Airport, with a modern terminal that features an undulating roof intended to evoke the waves rolling in from the Pacific. As president of Fentress Architects in Denver (as well as international satellite offices), Fentress has had the opportunity to design public and commercial spaces all over the world—including museums, office buildings, courthouses and convention centers. Along the way, he has become an acknowledged expert on airports, designing terminals and towers from San Jose to South Korea. Fentress finds airports especially symbolic—they are often the first and last structures that many visitors see, and therefore they help shape visitors’ perceptions of the cities themselves. “Each building, we think, should add to the sense of place of the area in which we’re working,” Fentress says. “We call our design process the ‘patient search.’ It’s a little bit like sociology. You visit the place and you try to blend in with the population. For LAX, we conducted four or five focus groups around the city, asking participants what they thought Los Angeles was and what they wanted their airport to be. We studied the history of the city through books and photographs, and we visited museums.”

Which architect’s work do you admire? The architect who has probably given me the most inspiration is Eero Saarinen. All of his work was very different, tailored to each building’s location and usage. What inspires you on a daily basis? I go to a lot of art museums and galleries. I love photography and I love collecting books, especially books on architecture. But mostly, I look for the place to give me inspiration. What style is your home? My home is very modern and minimalist. Which of your possessions is emblematic of your personal style? My green glasses.

The resulting wave-like roof soars 130 feet high, blocking the hot sunlight from the south and west but keeping views to the north and east open, allowing travelers to see the Santa Monica Mountains. “Particularly with large buildings, there’s a chance for the buildings’ design to do something that’s going to amplify their location and make it more unique, but it takes time and patience to come up with the right ideas to make that happen,” Fentress observes. Fentress’ terminal design for Denver International Airport in 1995 was the launch-pad for his work on airports worldwide. His firm now handles 20 to 25 airport projects at any given time, in various stages of completion. He’s 38

Form vs. function: Go. You have to balance, but sometimes one or the other is more important. Take the Colorado Convention Center: The form of the building is really important. It’s a 1,000-foot-long line at an angle with lots of glass. When the lights are on, you know that there’s something going on there. Set against all of the tall buildings in downtown Denver, it changes the skyline. Inside, of course, it’s all about function.

also working to inspire the next generation of architects through the Fentress Global Challenge, an international competition intended to get architecture students thinking about the future of public design. That forward-thinking inclination, along with a focus on the needs and attributes of the location, are at the heart of Fentress’ work. “Each project presents a question, such as, ‘What function does the building have to serve? What do you want people to experience?’” he says. “For me, it’s less about applying your own style to the solution. You need to design the answer that’s most appropriate for the place.”

Star Power What does Kari Whitman love best about her living room? The brass feathers that she purchased from Etsy and arranged in a dramatic display up the wall. “They’re the cheapest thing in the room,” she laughs. “There’s a lesson there.” Whitman had the lush sofa custom-made in Los Angeles and paired it with a black, angular coffee table from Caracole and a side table from Arteriors. The curtain “wall” of ball chain separating the living and dining spaces sparkles in brass and stainless-steel stripes. A turquoise chandelier from Currey & Company adds a glam jolt of color.

efore she began designing homes for celebrities like Jessica Alba and Kristen Bell, Kari Whitman was just a kid growing up among Boulder’s distinctive combination of righteous cyclists, collegiate verve, natural splendor and Suburu-driving hippies. “It was a really cool place to grow up,” says Whitman, principal of Beverly Hills-based Kari Whitman Interiors. “I have a profound love for Boulder.”

Whitman spent years away from her beloved hometown—pursuing modeling and acting jobs in Los Angeles that gave way to a design career when Eagles drummer Don Henley got a look at her house and hired her to design his own home. But Whitman couldn’t resist the draw of Boulder, and in September 2012 she bought a vintage cottage two doors down from her childhood home. The architecture, the front porch and the abundant space won her heart, she says. The rest she transformed from a beige-and-boring home into a glamorous, modern retreat. “When you walk up to the house, you expect the inside to be cute and rustic,” she says. “And it’s a surprise when you walk through the door. I like dichotomy. I don’t like anything that’s expected—not in design, not anywhere else in my life.” So perhaps it was inevitable that one of Whitman’s first design decisions was daring. She enclosed an oddly-shaped, loft-like space outside of the master bedroom and installed 20 porthole windows—reclaimed from ships—in the interior wall. “I have this thing for circles in walls,” she says. “I had seen these portholes somewhere in a New York hotel, and a light went off when we were starting the project. I’m so glad we did it. The light shines up from the first floor. I love it.” The home is full of such surprises. Case in point: Between the living and dining rooms, Whitman hung a “wall” of ball chain in brass and stainlesssteel stripes. “I saw these at a very cool burlesque club in L.A., and I knew I wanted them,” she says. Adjacent to the ball chain, Whitman created a playful, linear art installation of brass feathers she bought on Etsy. A spherical turquoise chandelier—“I had to have it,” Whitman says—crowns the room. Upstairs in one of the guest bedrooms, a bold, black-and-white wallpaper image of a favela, a Brazilian shantytown, covers the wall behind the vintage, mirrored headboard. “To recycle is to reuse,” says Whitman. True to her word, she picked up this dining table from Clutter Consignment in Boulder and had the host chairs covered in turquoise pleather she had left over from a client’s project. She found the beige chairs at The Amazing Garage Sale in Boulder; the light fixture came from a vintage shop in Dallas. Whitman commissioned a craftsman to create the bench with the corsetwrapped chair backs. The metallic silver plaster on the wall and ceiling is from Firenze.

Whitman designed the side tables— “inspired by Pucci”—and found the lamp at Material Environments in L.A. The ampersand is from The Amazing Garage Sale in Boulder, and white bedding is “always the right choice,” Whitman says. (this page) Whitman covered the bathroom walls in black lacquer and then hung the bold dandelion graphic as a tribute to her childhood. “My mom and I had this game. Who could find a dandelion and blow it?” she says. “It reminds me of my hippie childhood.” True to her commitment to eco-friendly design, Whitman kept the existing vanity and tub.

before In the second-floor sitting area, Whitman installed 20 porthole windows, reclaimed from old ships and discovered at Seaside Treasures in Clearwater, Florida. “People thought I was crazy,” she says, “but that’s never stopped me before.” Whitman found the white chair at Luna Antiques in Miami, and the black chair, originally from Design Within Reach, at The Amazing Garage Sale.

But don’t let the boldness and sparkle fool you: Whitman also made some very conservative choices in creating her eco-friendly home. “I tried to use everything I had rather than replacing it,” she says. “That’s the best gift I can give the earth.” She kept the existing kitchen and bathroom cabinets, and instead of ripping out the hardwood floors, she had them refinished in a rich, dark hue. The new insulation is a product made from old blue jeans, the new floor joists came from reclaimed wood and recycled leather flooring in the entry nods to her western roots. “I mix old with new all the time,” Whitman says of her style. “People have to know that the nightstands don’t have to match, and a box of $50 feathers can be an art installation. That’s what this house shows. You can have glamour and comfort in one place. You can have fun with your design.” And, as Whitman proves, you can always come home again.

nterior designer Susse Budde, co-owner of Dimension Fine Homes, spotted a quaint—and tragically neglected—log cabin in an aspen grove near Steamboat Springs and knew she just had to investigate. Never mind that she wasn’t in the market for a second home. Never mind that she was in Steamboat because her home in Los Angeles was undergoing a major remodel and she needed a vacation from construction. The “For Sale” sign and stand of aspens were too alluring to pass by. “It was a small cabin, built in the early 1900’s,” she says, “and it only had a loft, a bedroom and a kitchen with a shower in the corner—as well as a very dark, underground basement.” Yet she saw potential. “I thought it’d make a nice vacation home,” she explains. So she bought it. (previous page) Light and bright, this living room is the antithesis of a typical log cabin. A deep orange houndstooth rug from HW Home anchors the space, accommodating a white-leather Italian couch and a custom-made swivel chair; a live-edge tree slab serves as a coffee table, with a Gail Folwell sculpture from Walker Fine Art dancing on top. Instead of ubiquitous river rock, Budde installed one-by-four-inch quartz tiles vertically on the fireplace surround. That was 2005, but the remodel didn’t really get serious until 2007. When it was completed the next year, Budde and her husband decided to leave Los Angeles and live in their cabin in the woods full-time. The complete reconstruction included gutting the main and lower level (as well as excavating to allow a walkout basement) and “popping the top” to create two master suites at tree level. Budde’s design goals were specific—to include the gorgeous views while creating a mountain aerie, not a cavern. “So many mountain homes are dark—even with windows—and are filled with heavy furniture and antler chandeliers,” she says. The renovated home is a modest 3,000 square feet on three floors, so she wanted to make it look as spacious as possible while respecting the integrity of the setting.

Modern to the Mountains

Lighten up. Instead of wroughtiron light fixtures, go with glass and white. Instead of heavy dark floral rugs, choose light hides or classic designs in oversized patterns. Instead of dark log walls, stain the wood an off-white or light gray. Get stoned. Unless you love it, forget polished river rock. Instead, think about dry-stacking rectangular stones. Say adios to arches. Arched doorways are passé. Clean straight lines are always in style. Go trimless. Trimmed windows add another layer of wood. Ask your installer to do a “drywall return”—or trimless windows. Hang it! Wallpaper is hotter than ever, and new patterns that replicate nature are perfect for a mountain house.

In search of a more modern vernacular, Budde mixed antiques with new pieces, wood and wallpaper, glass and steel—all the while keeping the log cabin a log cabin. The original exterior, a D-log frame, allowed both sunlight and drafts into the house, so Budde had flat logs installed on the interior sides of the exterior walls so they could be chinked. To keep everything light, airy and natural, she stained the logs light gray and either painted or wallpapered all of the interior walls. The designer filled the home with new, modern furniture mixed with beloved antiques. The living room’s creamy Italian sofa sidles up to a vintage Brazilian credenza, topped with a modern lamp from Arhaus. Clean, neutral fabrics pull pieces together. The home’s location is so private that Budde was able to eschew window coverings and open up each room to natural light. 59

Carefully placed wall mirrors, in elegant frames, reflect the outdoors; glass light fixtures contribute to the feeling of airiness. While the home design includes those traditional mountain touches— natural materials, animal hides and logs used in usual—and unusual—ways, the overall effect is exciting and new. “This home—now our permanent residence—feels energetic,” Budde says. “Unlike many mountain homes that rely on what is heavy and dark in nature, this one is about space and light.”

long, multi-week treasure hunt,” is how Alexandra Besser describes the process of going through the closets, basement and attic of the historic home she and her husband Grant bought in 2011. Located in Boulder’s Mapleton Hill Historic District, the home—which had been owned by the same family for over ninety years—came complete with a houseful of artifacts. “We discovered vintage Life magazines, old radios, family photographs, Christmas decorations and three hundred tobacco pipes, among other things,” Besser says. before

The home came with a pedigreed history, too. Designed by William Redding & Son—the same prominent architectural firm that created the city’s landmark Hotel Boulderado—the 3,200-square-foot house was built in 1905 to serve as the mayor’s official residence. Incredibly, the structure hadn’t been significantly changed or updated over its many decades of existence. “The house had great bones, and the elements that were good were so good,” Besser says. “Everything was clearly well cared for, and the home had ten-foot ceilings, hardwood floors, windows with original glass, beautiful old hardware and woodwork that had never been painted over.” But the century-old floor plan wasn’t well-suited for a family of five; for starters, it had just one full bathroom. “With three children, we knew that wasn’t going to work,” Besser says. “We also wanted a larger kitchen, because we all tend to gather there and I love to cook. The trick was to figure out how to incorporate modern conveniences while honoring the home’s character and roots.” The couple turned to Boulder architect Lisa Egger, AIA, and general contractor Joel Smiley—both highly recommended because of their extensive work on other historic homes in the neighborhood—to bring their house gently into the 21st century. The homeowners discovered the handsome faceted glass overhead light tucked away in a closet, and replaced its black canopy with a new one from Schoolhouse Electric & Supply Co. The new kitchen’s custom cabinets are painted with Benjamin Moore’s Lancaster White; classic soapstone countertops are flanked by a white subway tile backsplash. Reverent Renovations Staying true to the home’s history and character while adding modern systems and spaces was a balancing act. Alexandra Besser shares some of the ways they achieved success:

Reclaim and reuse. The homeowners preserved everything they could, from antique hardware and vintage light fixtures to a pair of old red piano stools left in the house. “Our attitude was, if it ain’t broke we won’t fix it,” Besser says. Keep what works. The Bessers opted to keep the old radiators at the advice of contractor Joel Smiley, and refreshed the metal with a custom blend of waterbased Modern Masters metallic paints in Blackened Bronze and Brass. “The radiators are surprisingly efficient, and they deliver beautiful, even heat,” Besser says. Radiate warmth. The couple opted to remove the original radiators in the kitchen, where they were trying to gain every inch of available space. Adding energy-efficient, in-floor radiant heat allowed them to maximize the room’s square footage. Keep it light. Besser used a neutral palette of five different shades of white and pale gray on the home’s walls. “I especially love Benjamin Moore’s neutral Navajo White, which contrasts really nicely against the rich, dark woodwork,” she says. Sit and eat. “We had plenty of storage in the new kitchen so we decided to forgo an island, but we’d always wanted a ‘community-style’ family table,” Besser says. Smiley custom-built a seven-foot table from old reclaimed barnwood.

Egger’s elegant design creatively reconfigured the home’s floor plan without adding an inch of additional space. By removing a pantry, mudroom and back staircase once used by servants, she was able to create the spacious, light-filled kitchen Besser had hoped for. Smiley handcrafted the classic, American-style inset cabinets and painted them soft white. Black soapstone counters and a farmhouse sink enhance the room’s traditional aesthetic. By judiciously removing several main floor walls and relocating the powder room, Eggers also created space for an open kitchen and family/media room. On the upper level she reconfigured the layout to add two more bathrooms, and turned an unneeded fifth bedroom into a master bathroom—complete with a period-appropriate reproduction clawfoot bathtub. The Bessers were also able to incorporate some of the artifacts they unearthed in the renovation, such as a quartet of faceted glass Art Deco light fixtures that now hang in the foyer and kitchen. But it was the ephemera related to the house that especially captivated the homeowners. “The old letters and photographs we found were so fascinating, and we’re fortunate that the Boulder Historic Library is right next door because the staff there has helped us piece together the house’s story,” Besser says. “Our family recognizes that researching our home’s history and uncovering some of its secrets is a rare privilege.” Custom molding meticulously milled to match the rest of the home’s woodwork frames the doorway connecting the master bedroom to the new bathroom, which features a reproduction clawfoot tub and classic Carrara marble hexagon tile floors. The mirrors and polished nickel hardware are from Restoration Hardware, and the sconces are from Schoolhouse Electric Supply & Co.

Colorado’s cooking schools offer a tempting menu of classes for fledgling foodies or experienced connoisseurs Conor Culver

here’s just no excuse for being a lousy cook these days. In the past few years, we have become gluttons for eating as entertainment, stuffed on an abundant diet of TV food shows and celebrity chefs, tempted by specialty grocers, artisanal food and drink, and awakened to a feast of local ingredients. And still, some of us either never learned to cook properly or yearn to know more. Well, help is at hand. A huge and delicious variety of classes for the home cook are available throughout Colorado, and here’s a sample of what you will find at a few of the state’s tastiest cooking schools.

Cook Street School of Culinary Arts Denver cookstreet.com

Downtown Denver’s Cook Street School of Culinary Arts opened in 1999, when its owner, Morey Hecox, a self-described “recovering lawyer,” decided that instead of going to an existing cooking school he

would just start one of his own, “to do it better.” From the beginning, Cook Street has focused on fundamental techniques, that, Hecox says, “you can use over and over again every day. Our goal is that you will leave here a better cook.” Accordingly, Cook Street has something for everyone. Classic French and Italian techniques provide the basis of Cook Street’s approach to culinary training, with multi-day classes devoted to building a strong foundation. Single-session courses span a huge culinary range, from NYC Baking to Charcuterie and Pickles, Preserves and Conserves. Wine education includes classes on wine regions and varieties and an in-depth discussion of pairings (wine and sometimes beer) at the end of each lesson. Other crowd favorites: Wine and Chocolate Pairing, Steak and Whiskey, Steak and Spirits, Everybody Loves Bacon, Fresh Sausage Making, and Burgers and Beer.

Pan-Seared Striped Bass with White Wine and Basil

4 striped bass filets Flour for dredging Salt and pepper to taste 3 tablespoons olive oil 2 garlic cloves, minced 1 shallot, minced 1/2 teaspoon lemon zest 1/4 cup white wine 1 1/2 cups vegetable stock 3 tablespoons fresh basil, chopped 1 tablespoon lemon juice

COOK STREET:

Fried Calamari (pictured on previous page) 2 cups each loosely packed fresh mint, basil, flat-leaf parsley and cilantro leaves 1/2 cup chopped red onion 1/2 cup sliced celery (1/4-inch thick) 1 cup whole salted cashews 4 cups vegetable oil 1 pound calamari, cleaned 1/2 cup all-purpose flour 1/2 cup rice flour 1 teaspoon kosher salt 1/4 teaspoon cayenne In a small bowl, combine lime juice, sugar, fish sauce and chiles. Set dressing aside. In a large serving bowl, combine mint, basil, dill, parsley, cilantro, onion, celery and cashews. Set aside. In a 4-quart pot (about 10 inches in diameter), heat vegetable oil until it registers 360 degrees F on a candy thermometer (or use a small deep fryer). While the oil is heating, slice calamari tubes into rings. Put in a small bowl with tentacles. Set aside. In a small bowl, combine all-purpose flour, rice flour, salt and cayenne. Drop the calamari pieces into the flour mixture, turning to coat well. Working in three batches, fry squid four to five minutes per batch, or until pieces are curled and light brown. Using a slotted spoon, transfer fried calamari to a large plate lined with several folded paper towels and sprinkle lightly with salt to taste. Allow oil temperature to return to 360 degrees F between batches. Add the warm calamari to the herb-cashew mixture and pour half of the dressing over it. Toss gently just until coated. Serve salad immediately, with remaining dressing on the side.

At 9,600 feet above sea level in Breckenridge, Colorado Mountain College Culinary Institute serves up an extravagant feast of “hands-on, just-for-fun cooking classes” in addition to its degree and apprenticeship programs. Program director Doug Schwartz says the school “teaches people to have fun with food—to touch it and not be intimidated.” True to its academic roots, the Institute offers 60-70 courses per semester, from educational fare like Flavor Dynamics (emphasizing cooking without recipes) and Food Science, to High Altitude Baking, Winter One-Pot Meals, Fast & Fresh, Soups (five different levels), Pressure Cooking and Savory Pot Pies, along with vegetarian classes, and wine varietal and pairing and craft brewing courses. International offerings span the globe from Mumbai to Cuba to Korea to Paris and the Yucatan—and often sell out. The state-of-the-art teaching kitchens, including a 36-foot-long commercial line, are designed for one-on-one attention, with a limit of 12 students. Each session ends in a buffetstyle meal and a takeaway of new friendships.

Preheat oven to 200 degrees F. Preheat large sauté pan over high heat; season bass with salt and pepper and dredge in flour, gently shaking off excess. Add 2 tablespoons oil to pan and heat until just before smoking; gently place bass in pan flesh side down and brown well on first side. Flip and cook skin side until golden brown, then transfer to baking dish and place in the oven to keep warm. Meanwhile, add 1 tablespoon oil to the same pan and return to medium-high heat, stir in garlic, shallots, and lemon zest and cook 30 seconds. Stir in white wine, stock and lemon juice. Reduce until it coats the back of a spoon. Add basil and season with salt and pepper.

Auguste Escoffier School of Culinary Arts Boulder escoffier.edu

Beneath the towering Flatirons, Boulder’s Auguste Escoffier School of Culinary Arts (named after the esteemed French “patriarch of modern cooking”) began in 1991 as the Cooking School of the Rockies. Today it offers recreational cooking classes in addition to its widely respected professional program. With a dedication to “green” practices like recycling, composting and energy conservation, it’s no surprise that a passion for farm-to-table cuisine lies at the core of the school’s approach. Home cooking students can take one-day workshops (on topics ranging from Party Hors D’oeuvres to Whole Hog Butchery) held on weeknights or weekends, or five-session

techniques classes on themes like Basic Pastry. Courses correspond to the season, and there are also plenty of specialty offerings, including Paleo, gluten-free and vegetarian, along with world food classes such as Totally Tapas, Sushi Madness and The Joy of Gnocchi. Instruction is hands-on, with a maximum group size of 12 in one of the four professional-grade kitchens on the South Boulder campus. Ellie Scott, program director, describes many of the Escoffier students as repeat visitors, who often start with the basics and advance to the more complicated challenges. Scott calls the class atmosphere casual and comfortable, emphasizing the relaxed gathering time that ends each session with a meal and a lively discussion. ESCOFFIER:

In a medium saucepan, bring milk and heavy cream to a simmer. Remove from heat and add tea to infuse the mixture with earl grey flavor. After mixture is cooled, remove/strain tea and add extra milk or cream to bring the mixture back to 8 ounces, if necessary. Place chocolate in a heatproof bowl over a saucepan of simmering water. Make sure that bowl does not touch the surface of the water. Stir carefully with a rubber spatula until chocolate is fully melted. Whisk cream mixture into the melted chocolate and add butter. Chill until able to roll by hand. While ganache is chilling, toast almonds on a sheet tray in a 350 degree F oven until golden brown. Allow to cool, then chop or pulse in a food processor until they form coarse crumbs. When the ganache is cooled, use a 1/2-ounce scoop or a teaspoon to divide the mixture. Roll each portion into a ball and then toss in the chopped almonds to coat. The finished truffles may need to be chilled for about 30 minutes after forming to counteract the heat from your hands.

The ranch’s “haute mountain cuisine” has been praised by top national food magazines, for good reason: Chef Nelson grows his own produce in the summer and uses locally-raised meat. Ghost Stories

Opened in 1909, the famed Stanley Hotel is perfect for guests looking for some mountain luxury—and a little paranormal activity By Laura Beausire

I

f you’ve heard of the Stanley Hotel, chances are you think it’s haunted. You might be right. But there’s so much more than ghosts behind the fame of this landmark Estes Park resort. Long before Stephen King stayed in Room 217 and was inspired to write his terrifying novel, The Shining, The Stanley Hotel was renowned as a luxurious destination resort dreamed up by a pioneering American inventor, Freelan Oscar (F.O.) Stanley. Along with his twin brother Francis, F. O. Stanley made a fortune when he introduced the steam-powered Stanley Steamer automobile in 1897. But it seemed that the illustrious businessman was destined for an early grave. In 1903, diagnosed with consumption, Stanley’s doctors gave him three months to live. Instead he moved to Colorado, where he went on living for another 37 years. He fell in love with Estes Park, and he and his wife Flora decided to make it their home. But F. O. saw the need for a top-notch resort hotel worthy of the spectacular mountain setting, so he bought

160 acres and constructed an eleven-building complex. It is believed that Stanley himself designed the grand and imposing Georgianinspired structures. Begun in 1907, the main building is solidly constructed with steel beams and timber harvested from land in what is now Rocky Mountain National Park. When it opened two years later, the Rocky Mountain News raved, “It is luxurious and modern even to the great kitchen where cooking is done entirely by electricity,” and declared it “simply palatial equaling anything of its size in the world.” Over the years, famous guests ranged from John Philip Sousa and Molly Brown to countless Hollywood celebrities. Tales of ghostly happenings swirl around the building, with reports of objects mysteriously changing place, phantom children running and laughing through the fourth-floor halls and even alleged sightings of Mr. Stanley himself. Ghost tours run regularly, and there are monthly five-hour ghost hunts conducted by paranormal investigators who call the Stanley “a Disneyland for spirits.” stanleyhotel.com
