My Current Obsessions

Sexy Modern Lighting: The endless options for show-stopping lighting are almost overwhelming, but my heart is aflutter over Corbett Lighting’s new Fathom collection of LED pendants and sconces. Visions of this pendant in my entryway are dancing in my head. corbettlightinglights.com

he nearly-hundred-year-old oak pedestal table that sits in my breakfast nook always draws comments, typically along the lines of, “I think it’s time for a new table.” Perhaps. The poor thing wobbles on its base and is in desperate need of repair and refinishing. But I can’t change it, because I love it just the way it is. It sat in the breakfast nook of my childhood home, old even then, and every flaw is a reminder of thousands of meals shared around it. Surrounded now by midcentury modern Navy chairs, it makes me happy every day. And isn’t that how we should feel about the things that fill our home? The pieces that we have inherited, purchased or collected with care should make us feel joyful and comfortable. Our annual Art & Antiques Issue celebrates creativity and timeless design. The four homes featured in this issue were chosen because they are filled with interesting art and fine, carefully-curated furnishings. Each space tells the eclectic story of its occupants. And that’s just the beginning. We’re also thrilled to spotlight some unique offerings from the gift shops of both locally- and nationally-renowned museums, and we share the story of the Art Students League of Denver, a remarkable school for both accomplished professionals and beginners ready to unleash their inner artist. I believe an artist lives within each of us, whether expressed through the creation or collection of art, the unearthing of a forgotten treasure in a junk shop or the choice to live with a beloved heirloom. I hope that this issue inspires you to make your home a reflection of your particular brand of style. Cheers,

Denver’s Old South Gaylord Street This vintage Denver commercial row is a much-loved Washington Park neighborhood hangout By Laura Beausire

W

hen the Denver City Tramway Company had a cable car turnaround on South Gaylord Street between Mississippi and Tennessee Avenues, the area’s shopping district was a natural place to get out and explore. The streetcars vanished in the 1950s, but the business district, founded in 1924 and one of Denver’s oldest, still crackles with its own kind of vibrant electricity. Running north-south through the eastern end of the charmingly tree-lined and bungalow-blessed Washington Park neighborhood, South Gaylord Street, then as now, is a perfect place to stroll and browse. Since the 1920s, the street has been lined with an eclectic mixture of commercial buildings and private residences. The old drygoods store, creamery and watchmaker have made way for today’s boutiques, restaurants and salons, and many of the vintage homes have been retrofitted as businesses. But you still won’t find any chain stores here. On Old South Gaylord, the vibe is funky casual, the mood is Sunday-afternoon relaxed, and the shopping offers a comfortable blend of unexpected discoveries and trusted local standbys.

Where Everyone is an Artist

For 27 years, the non-profit Art Students League of Denver has been the place to unleash the visual artist in each of us: professional artists teach students of varying levels—from stick-figure virtuosi to budding Jackson Pollocks—in a handsome 1893 Richardsonian Romanesque school building in Denver’s West Washington Park neighborhood. The League is both grassroots and ambitious, serving more than 900 students a month and mounting as many as 10 exhibitions annually. League Executive Director Rachel Basye tells us why it’s such a magical place.

Rachel Basye: In 1987, a small group of artists and art appreciators came together because they wanted a professional-level art community and school. They modeled it after the Art Students League of New York, which is well over 100 years old. The teaching format is the same: All faculty members are professional artists, and none of them has a curriculum set by the League board or by me. Each class is based on the teacher’s own experience, talent and training. It’s really about working in an environment with a professional artist—that master/apprentice style of learning. We started at a small studio setting on 15th and Platte—near where [local café] Paris on COLORADOHOMESMAG.COM

the Platte is now. A handful of faculty offered courses, and we quickly outgrew the space. At the time, Denver Public Schools had a number of small elementary schools they had closed and were trying to find a use for, including this building. DPS wanted to connect the buildings with organizations that had educational missions, and before we got here artists were already using the studios, so it felt like the building was meant to be ours. It’s a gorgeous place.

League. We moved in 1992, and we did a major renovation then. Now we focus on maintenance, on making it a place where people feel inspired. So what happens, exactly, in this beautiful building?

Art-making of all kinds. I think what’s most appealing about the League is the opportunity to try a wide variety of media. Let’s say you start with an introductory drawing class. You work through charcoal, ink and silverpoint. Then maybe you take a painting class, and you have a lot of choices in water-

color, acrylic and oils. You can choose to study contemporary styles, abstract art, Realism. You can learn to paint like the Old Masters. For students interested in 3D art, we have classes in sculptural ceramics; or you can learn wheelthrowing techniques and make functional ceramics. We even have a stonesculpting studio. We have courses in how to make your own paper or bind your own books. In printmaking, you can study intaglio, monotypes, wood blocks, screen-printing—the list is very, very long. More than 100 professional

artists teach here, so you get the depth and breadth of their experience. And even those of us who haven’t made art since the required ninth-grade studio art class can sign up?

Of course. In every catalogue we have a guide for beginners, to give people ideas of where they might start. I’m going to start by going to one of your shows.

I think it’s a couple of things. The master/apprentice format is really appealing to artists. Professional artists know what their strengths are and know what they can share with others, and this format allows them to do that—to focus on the skill and the craft. And because we’re non-accredited—as in, you can’t apply these courses to a degree program—there’s not the same level of paperwork for faculty. And second, people who take courses here are here because they want to be. I have heard from many of our faculty that there was someone in their lives who gave them the skills they have, and they want to give back to the community to pass on that knowledge and expertise, especially to students who are so hungry for that experience. The League is an easy place to love.

Citizen Meskis Tattered Cover Bookstore owner Joyce Meskis has kept Denverites reading for more than forty years—and fighting for our right to read whatever we choose ­B y Irene Rawlings

W

ith three locations in the Denver metro area, one at Denver International Airport and another coming soon to Union Station, Tattered Cover Bookstore is widely regarded as one of the top independent booksellers in the country. Furnished with overstuffed chairs and sink-into sofas, the charming shops offer quiet places to curl up and read—in the company of more than 250,000 books. Each year, Tattered Cover hosts over 400 readings and literary events. The notable quotables who have come to sign their books include Harry Potter’s creator J.K. Rowling, Twilight’s Stephenie Meyer, Caroline Kennedy, Garrison Keillor, astronaut John Glenn, soon-to-be-President Barack Obama and the futurist architect Buckminster Fuller who, even with a broken finger, signed books for a sell-out crowd. The author of all this book magic is Joyce Meskis. She came to Colorado (from her native Illinois) in the 1970s and fell—“immediately and deeply”—in love with Denver. “I was thrilled with the unpretentious and welcoming atmosphere, the community spirit and especially that people here appreciate the arts and love their libraries,” she says. Her first bookstore (in Cherry Creek North) measured only 950 square feet, crammed with books and punctuated by easy chairs that could have come straight from Grandma’s attic. Forty successful years later, two of her Tattered Cover shops anchor landmark buildings: the 1896 Morey Mercantile Building, with its high ceilings and creaking wood floors, is home to the LoDo store; and the Colfax location fills the historic Lowenstein Theater, one of Denver’s best examples of streamlined Art Moderne. That building stood empty for 19 years and was a likely candidate for demolition until Meskis refurbished the 66,000-square-foot space in 2005.

Meskis has been honored numerous times for her tireless defense of First Amendment Rights. “Let me say that I have appreciated every acknowledgement that I’ve been lucky enough to receive,” she says. However, receiving the William J. Brennan, Jr. Award for the Protection of Free Expression, given by the Thomas Jefferson Center in Washington, D.C., was a real high point. “The experience of being in the National Supreme Court Building with Justices Sandra Day O’Connor and Ruth Bader Ginsburg, and even the retired and quite elderly Justice Brennan, was just jaw-dropping for me,” she admits. Asked how she got started advocating for the freedom of expression, Meskis quickly responds, “In our generation, with the ashes of World War II not yet gone cold, we have this horrific example of the Nazis burning books containing ideas they did not agree with; [today] our democracy is based on debating ideas of all kinds,” she says. “And in order to have an informed and enlightened citizenry, people need the freedom to read.” The newest Tattered Cover is slated for the freshly renovated Union Station, which Meskis describes as “one of Denver’s grandest historic structures.” It is an extension of Tattered Cover LoDo (a block away) and, at only 922 square feet, is about the size of Joyce Meskis’ very first Cherry Creek Store. “It seems like a very nice symmetry,” Meskis notes; a fitting career bookend for a maverick who still believes that something magical can happen between a reader and a great book.

Distinctive architecture sets the stage for a gracious home filled with fine art and antiques, layers of texture and exquisite attention to detail

ike a fine wine or a gentle patina, a well-designed home often takes time to develop to its full potential. This was the case when a family moving into a Cherry Hills Village home hired interior designers Mary Knape and Kelly Zibell of Knape & Zibell Interior Design to marry the homeowners’ beloved fine art and antique collection with their Territorial Revival-style house. The design process, which evolved thoughtfully over eight years, created continuity and balanced the weightiness of the architecture with the more delicate furnishings. “The homeowners were willing to wait for special things,” says Knape. “They were very involved in the design. They have excellent, refined taste and wanted to invest in high quality, from art to every fringe and detail.” (page 50) Built in 1989, the 6,200 square-foot ranch house is true to New Mexico Territorial Revival style. Wooden gates open onto a charming courtyard garden featuring meandering flagstone paths and a cast-iron fountain. The home’s stucco façade is punctuated with classical white painted trim around the windows and topped with a brick cornice and flat roof. The homeowners’ love of antiques inspired the design of the interior spaces. They already had some pieces—mostly 18th- and 19th-century French and English—when the design team began working on the home eight years ago. “We tried to bring the house back to the feeling of the original New Mexico Territorial style by taking away heavy draperies to bring in light, returning painted wood beams to their original look and bringing in European antiques, as homeowners often did in that period from 1845 to 1912,” says the homeowner. Additional antiques were purchased locally at Black Tulip Antiques and Eron Johnson Antiques and in Atlanta, New Orleans and Paris. The designers also incorporated new custom items and highend reproductions for an eclectic feel. “We like a mixture,” says the homeowner. “We didn’t want things to look too decorated or too exact. We wanted a home that was comfortable and easy to live in, but still somewhat elegant and refined.” That sophisticated taste extended to the family’s preference for neutral colors—primarily shades of cream or ivory— which the designers accented with touches of pale blue and green. “The rooms tend to be monochromatic, so we played up texture through fabrics,” Zibell notes. dress the soaring windows. “We wanted to complement the wood-beamed ceilings,” Knape explains. “The draperies add softness without competing.” In addition to balancing the architecture, the neutral palette allows the artwork to claim a place in the spotlight. As with antiques, the homeowners collect what they love rather than focusing on investment value. “The husband has a real eye for art. He found and collected most of the art, including works purchased in Carmel-by-the-Sea and Santa Fe galleries,” says Zibell. The framed landscapes provide a subtle interplay with the breathtaking mountain views glimpsed through the west-facing windows. The home’s graceful beauty is proof that the most satisfying design solutions often evolve at a more deliberate pace. “The quality, the attention to detail and the love that we have all put into this house over the years make it a place where the family can retreat from the day-to-day world,” Zibell says. “We’ve always known this was a very special home,” Knape adds in agreement. “It really reflects the people who live here.” Design Details

A family-friendly Boulder home blends easy living with an exacting design and a host of spacestretching innovations

ever let it be said that architects David Barrett and Sam Nishek aren’t up for a good challenge. The duo—both principals of Barrett Studio Architects in Boulder—designed a spacious, modern home for a family of four near the city’s historic Chautauqua Park. First, though, they had to overcome a few obstacles. A gas fireplace warms the thick cement stucco wall, which acts as a passive solar thermal mass and also delineates the home’s public and private spaces. The hearth and shelves are cast-in-place concrete. The painting is by mid-20thcentury artist Helen Dooley. Comfy orange Togo couches by Ligne Roset invite relaxation in the living area, where abundant windows and tall ceilings make the space feel larger. The Jens walnut chairs are from Design Within Reach and the floors are polished concrete.

“For starters, the building site was on the small side,” Nishek explains. “The existing 800-square-foot house had been built on a substandard city lot in the 1950s, and it was unusable so we had to tear it down.” Then the architects had to figure out how to squeeze nearly four thousand square feet of living space, along with abundant outdoor living areas and a three-car garage, onto the site. A tall house was out of the question; the building envelope’s height was restricted by Boulder’s strict solar-shadow ordinance. In the end, the solution required some digging: the architects appropriated extra space below the house by creating a steeply sloped driveway from the alley that would lead to a basement garage. (this page) A pass-through in the kitchen features shock-style lifters to open the window to the serving bar outside. “This small feature really helps the kitchen space flow to the outside, and is great for entertaining,” Nishek says. Kitchen cabinets are red birch topped with black Brazilian granite. (opposite) “Rather than putting a window overlooking the neighbor’s yard, we preserved privacy while letting light in,” Nishek says, explaining the strategy of placing a window near the bottom of the dining area wall. That decision also created the perfect space for a bold abstract. A slab of hand-hewn, Thai acacia wood tops the large family dining table, which is surrounded by modern white leather and chrome Calligaris New York chairs. Further complicating construction, testing revealed that the site had expansive, clay-based soil. “It’s common in many parts of Colorado, but the expand-and-shrink properties of the soil in hot and cold weather necessitate special mitigation measures,” says Nishek. So their design strategy involved a foundation set on caissons and a basement slab that would also provide structural support for the new garage. Then came the excavation: in the summer of 2009 the old house was demolished and a backhoe rumbled in. With each load of dirt that was removed, however, water seeped in and filled the hole. An underground spring was soon identified as the culprit—good news for well drillers, but not so advantageous for homebuilders. Digging ceased while the team engineered a sophisticated trench system to divert the spring water. The challenges were worth it, however. When the 3,790-square-foot home was finally completed in 2010, its open, light-filled floorplan betrayed no hint of the planning challenges that preceded it. “We really paid attention to the volume of the space and looked for ways to maximize the natural light,” Nishek says. As a result, some windows are located in unconventional places, including one near the dining room floor and another above the master bathroom vanity. Skylights and a sparkling glass stairwell let the sunlight wash down the walls. The rooms are punctuated by bright colors and fun, comfortable furnishings; built-in shelves, niches and wall spaces accommodate the homeowners’ collection of modern art. A thick stucco living room wall is a nod to the couple’s southwestern roots, separating the main floor’s more public living, dining and kitchen spaces from private areas like the media room, powder room and laundry. Four bedrooms, an office and game room are located on the upper and lower floors. Sustainability and energy-efficiency are hallmarks of Barrett Studio Architects’ projects, and this home boasts eco-friendly features like photovoltaic roof panels, foam insulation, high quality windows, radiant floor heat and passive solar elements. Outside, landscape designer Dan Long created a lush environment, bringing in mature trees, native grasses and hardy plants to create private gardens and inviting outdoor gathering places. A kitchen window opens directly to an outdoor serving bar, enabling easy access to food and drinks from the back deck. Nishek notes, “The driveway leading to the basement runs under the deck, and when you’re out there you have the sense that you’re suspended over the yard.”

In the end, those early struggles with the site’s soil and water issues more than paid off. On a September afternoon last year, ominous clouds rolled in over the Flatirons and it began to rain… and rain. That week, Boulder experienced what flood experts called a “thousand-year-rain” with a record-breaking seventeen inches falling in seven days. Unlike many buildings in the area, the home’s basement stayed perfectly dry. Surviving the flood was all in a day’s work for Barrett and Nishek, who say that the unexpected challenges of their work always keep things interesting—and keep the architects innovating. New Home, Old Soul

A timeless design strategy and layers of authentic finishes make a newly constructed farmhouse appear mature beyond its years

O

n acres of rolling green pastures, at the end of a winding gravel drive and nestled into an old stand of trees, sits a serene and stately farmhouse with a gracious front porch and a barn sporting a fresh coat of crimson paint. This home recalls a bygone era, but it’s actually new construction with an old soul in the middle of Greenwood Village, a Denver suburb. The house wasn’t intended to be a period piece, but the design team wanted to give it a sense of permanence, so they took a historian’s approach to its design and construction, explains architect Todd Remington. “All along, we had this hierarchy of values that we were working from, which translated into everything from the buildings we built and where we put them, down to the little details and finishing touches,” he says. 69

Looming Large Fabrics have the power to keep a historically inspired home from feeling like a museum by adding balance and fun. Here’s how:

Enliven a space: Farmhouse style often features faded colors, but Oliver wanted to inject some life into this home’s palette. “Bolder colors and patterns here and there make the house look happier and not so washed-out,” she says. Mix it up: Layering traditional patterns can bring elegance to a room, but to add visual interest, consider mixing in an unexpected choice. In the master bedroom, Oliver combined traditional stripes, plaid and floral fabrics in the same muted palette, then added a more contemporary painterly polka dot “for just a touch of fun,” she says. Even it out: Fabrics can help create balance in a room. To offset the heaviness of the dining-room built-ins, Oliver made the comparably petite dining set chairs look more substantial with slipcovers, adding visual weight with the drapery’s large-scale floral.

They built the home as homes were constructed years ago, applying upgraded finishes and more detail to the public spaces and keeping the private spaces simpler, using basic, less expensive materials for the workspaces than for the entertaining spaces. The exterior of the main house, for example, is clad in traditional lap siding; the back patio features a stone fireplace and natural wood detailing in the Greek revival style. In contrast, the cottage has simple board-and-batten siding and the working horse barn features traditional shiplap with a concrete block foundation. “The farther out we went from the main house, even the roofing got simpler,” Remington says. “We went with asphalt shingles instead of the more expensive metal roof like the main house because, hey, it’s just a barn, right?” Remington worked with interior designer Lane Oliver, of Denver-based LEO Interior Design, to carry that hierarchical approach indoors, layering decorative moldings, wainscoting, wood paneling and handcrafted details into the living room and dining room, while keeping the bedrooms and even the kitchen a bit quieter. The kitchen features Shaker cabinets and interior walls finished with lap siding, while the nearby dining room has more ornate carved custom built-ins and decorative wood paneling. The patio is cozy and comfortable, and it sits at the same grade as the surrounding yard to extend the potential entertaining space. Oliver complemented the homeowners’ table and outdoor dining chairs with folksy white wicker.

Reclaimed hardwood floors run throughout most of the home, save for the butler’s pantry, where Oliver deviated from the design formula and dressed up the workspace with a marble mosaic tile floor. “I wanted it to be a little surprise,” she says, “an unexpected extravagance.” Both upstairs and downstairs, the ceilings were kept low, extending no more than nine feet high, with sloped ceilings in the master suite for added coziness. There are charming nooks and crannies, such as a cushion-bedecked window seat that transforms a pass-through into a tempting place to perch. The design team also introduced imperfections here and there—joints in wood paneling that are slightly askew, and visible baseboard heating in a sunroom that mimics the look and feel of a renovated porch—to give the new home a more mature feel. Historically appropriate details abound, but the true mark of success is that the home is united with its open, pastoral surroundings. The designers’ goal was to give the home a sense of place, Remington says, “and toward the end of the project, I started getting to the point where I’d wear my cowboy boots to the site. It just felt like I was going to a whole different world, and to me, that was the most exciting part, because it felt like we had actually done it.” 76

Denver artists Don and Grace Quade curate a harmonious home filled with global artwork and accents

A

rtists live with their art. It’s part of their environment, integrated into the everyday. They understand that art doesn’t have to be hung on a white wall in the glow of a spotlight. It can be appreciated just as much when slightly obscured by a stack of books or a potted plant. At least that’s what Denver-based painter Don Quade and his wife Grace, a jeweler, believe. Don’s work, which ranges from organic to geometric, from expressionist to abstract, is featured throughout the Quades’ home alongside Mexican folk art, Spanish colonial art and Native American pieces. It hangs behind ceramics from Santa Fe and pots from Portugal, and even mixed in with the occasional table lamp. “We live with this art,” Don says. “It’s part of our surroundings.” (opposite) A painting by Don Quade, The Seventh Season, is installed over the fireplace, joining a global mix in the living room that includes a Mexican painting, a pot from Peru and Italian leather chairs from Calia Salotti. The Quades bought their 2,200-square-foot home 20 years ago after Don took a detour through the Berkeley neighborhood to avoid traffic. “I was driving down the street and thinking how awesome this neighborhood is, and just then, I looked over and there was a realtor pounding a ‘For Sale’ sign into the front lawn,” he remembers. Since then, the Quades have made the house their own, deriving color inspiration from their cross-cultural art collection, painting the rooms in earth tones and incorporating red accents inside and out. “We decorate around the artwork, but we don’t think that the art should match the furniture or anything,” Don says. “There has to be a conversation, or even a friendly friction, like introducing a new color into a room that might be a little off.” In the living room, the couple paired one of Don’s paintings, titled The Seventh Season, with a painting by Mexican artist Mauricio Mora, and nestled the two artworks amidst a mantel-top grouping of Native American pottery and a wooden pillar candleholder fashioned out of an old table leg. The fireplace itself is an example of Don’s handiwork: inspired by timeworn stucco methods, he coated the formerly brick fireplace surround in red stucco and incorporated bits of hay for traditional texture. Then he added decorative tile and patinaed the brass fireplace insert. While the Quades create in different media, the two artists work together to realize their shared design aesthetic. Inside, “Grace is really good with color and I’m the texture guy,” Don says. And out in the gardens, “Don is the visionary and I’m the labor,” Grace jokes.

The Quades have created comfortable living spaces outdoors too, installing a teak bench here and a café table there, and furnishing a well-appointed patio space, complete with festive twinkle lights. “We put them up for our son’s graduation and then we let the ivy grow over them,” Don says. “Now we use them all of the time.” The lights are one of many installations that have become permanent exhibits in the Quades’ home, layered in with the miscellanea of modern life. “We thought that, at some point, we would rotate our art,” Don says, “but once it finds the perfect spot, it just never ends up moving.”

ASPEN attracts

By Margaret Jackson Aspen’s glitz and glamour are attracting homebuyers in all price ranges who are snapping up single-family homes as well as condos. From January 1 through April 9 of 2014, 20 single-family homes sold in Aspen at an average price of $4.75 million. During the same period in 2013, there were 19 sales with an average price of $4.21 million. There were 32 condos sold at an average price of $1.56 million, compared with

31 condos with an average price of $1.29 million. There are an additional 45 sales of condos, single-family homes and vacant lots pending. “Our market has been getting better each year,” said Bob Cadger, Cadger, an Independent Broker affiliated with Coldwell Banker Mason Morse, the longest-standing Aspen real estate firm in the Roaring Fork Valley. “There is a lot of pent-up demand from 2009 and 2010 when people were sitting on the sidelines.”

Cadger has been a veteran independent real estate agent in downtown Aspen for 33 years and recently joined forces with his wife, Tamy Cadger, to form a team. Cadger has several highend listings in Aspen, including a five bedroom, five and one-half bath home within walking distance to the downtown core with commanding views of Aspen Mountain for $8.45 million. He also has a building site within walking distance of the towns’ center for $3.1 million. Though Aspen is known for its epic skiing, there’s plenty more to do in the easily walkable resort town. There are more than 20 art galleries, 125 storefronts ranging from various ski shops to high-end department stores such as Gucci, and well over 100 restaurants. For music aficionados, The Aspen Music Festival and School attracts more than 350 musical events over an eight-week season. Other festivals like Jazz Aspen Snowmass draw big crowds to see big-name acts such as One Republic, FUN. and Carrie Underwood. In addition to art and music festivals, The Aspen Institute’s Aspen Ideas Festival brings leading thinkers, writers, business people, politicians and presenters from around the world to debate, learn and ponder the ideas that confront today’s society. “Aspen has always been about the mind and body, and balancing all of the senses,” said Tamy Cadger, an independent broker with Coldwell

Banker Mason Morse. “It really is a magical place. This well-balanced lifestyle is just one of the countless reasons why many choose to own in Aspen.” And for this clientele, their Aspen home is usually a third or fourth home between their other getaways in places like the Hamptons, New York and La Jolla. The majority of these buyers pay cash. “It’s unusual to have an estate upwards of $7 million that is not a cash deal,” Tamy Cadger said. Though prices have not risen dramatically, the Cadgers expect that the declining inventory will start pushing them up in the near future. “We’ve had a pretty good run and our inventory is certainly decreasing,” Bob Cadger said. “Land sales have also been good, which I think is indicative of an upswing in the market. Boulder’s Meadow Lark Farm Dinners are gloriously fresh and friendly collaborations with local farmers By Laura Beausire

hen Bella the vintage school bus rolls onto a farm, you know good food is coming soon. The retired and retrofitted bus (purchased on eBay from a school district in Indiana) is a mobile prep kitchen for Meadow Lark Farm Dinners, and between late May and the end of September, Bella and her merry band of traveling chefs turn farms into feasts. Meadow Lark Farm Dinners were first served in 2008, thanks to the enthusiasm of a group of four welltraveled friends (Veronica Volny, Aaron Hirsh, China Tresemer and Nate Ready) with a shared love of food and a great respect for farmers. Veronica explains, “we really wanted to reveal the taste of the specific farm, to give people the opportunity to actually see what the crops look like, talk to the farmers and eat it at the source.” Each year,

taste An Early Summer Salad

salads provide a chance to forage through farmers’ markets, your garden, the pots of flowers and herbs on your window sill, the grassy banks of a creek during your Sunday stroll, and to fill your basket and your plate—what grows together in the field will go together in a salad. We’ve served many a composed salad at our farm dinners; they are a fresh, crisp and colorful way to begin a dinner. From the farm, we might get baby carrots, which we peel and keep whole if very little, or slice lengthwise, almost translucently thin, using a mandolin. Carrot thinnings from the garden can end up in this salad, complete with frilly greens still attached. Radishes, cut into thin rounds, add crescents of color and a nice bite. Bright white baby turnips are wonderful here—to mix it up, we might cut these into thicker slices, and then into matchsticks. The tips of pea shoots with their curling vines add whimsy, and if you can spare a few pea flowers, you’ll have yourself a very beautiful first course. This salad should be dressed very lightly, with a mild olive oil, a squeeze of lemon, and only a tiny bit of salt. For creaminess, you can add a few morsels of the most delicate chèvre you can find, or a swipe of creamy mustard vinaigrette. Once the salad is arranged on individual plates or a large serving platter,

Meadow Lark works with a small number of carefully chosen Boulder-area farms, developing close relationships with local producers. Menus are based on what’s available on the particular farm that day, and they can change up until the last minute. Meals are several courses, yet they are simple, and recipes are uncomplicated. “Our goal is to honor the ingredients and reveal what they have to offer,” Veronica says. “We’re constantly playing with the menu.” Any meat, cheese, fruit or vegetable not produced by that evening’s farmstead is sourced from trusted local food artisans. All of the advance work is done on the bus, which is equipped with a refrigerator, stainless steel work tables, sinks, a water hook-up and custom-built storage racks to safely transport the team’s old-fashioned china and stemware. “I scoured every antique shop from Denver to Fort Collins,” Veronica recalls. Once the bus is parked in the field, the cooks and crew (who come from all over the country for the experience of working with Meadow Lark) set up a wood-burning grill and get started. White tents are set up and one long table is assembled to seat 42 for dinner. When guests arrive, they are welcomed by their farmer-hosts and offered a local craft brew and a tour of the farm before sitting down to enjoy the meal. “It’s an extremely rewarding way to go about eating,” Veronica observes. “We get to know the people who are behind the food that we put on our plates. There’s more exchange, more dialogue, more deliciousness.” Here, Veronica shares some Meadow Lark recipes: 154

Crostini with Egg Salad

Egg salad can be fresh, light and savory—and a vibrant marigold-yellow—but more often than not, it gets suffocated in too much mayonnaise. The key is to use excellent eggs and to boil them till the yolks just set—somewhere between seven and eight minutes. This way, the yolks will remain creamy. Coarsely chopped, the eggs need nothing more than a dollop of Dijon mustard and a sprinkle of flaky sea salt to come together. This is the departure point for any number of culinary directions: the addition of fresh herbs, young shallots or ground spices will make this egg salad fit right into the day’s menu. Fines herbes are very much at home here: parsley, chives, tarragon, chervil and even leaves of sorrel or celery, or frilly dill. These herbs can be added in combination, or one at a time. Give them a rough chop and mix them in among the eggs, saving a fistful to scatter on top before serving. Minced shallots that have marinated in some nice vinegar will give up their edge; drained and used in measured quantities, they will provide some welcome lift. Minced capers will do the same. Cumin or coriander seeds that have been barely toasted, and ground in a mortar, can be sprinkled over these egg salad crostini, giving them an altogether new identity. A red streak of smoky paprika takes us toward Spain; purplish sumac reminds us of Morocco. At Meadow Lark, we make our crostini—thin, toasted slices of bread—by cutting a baguette on a bias; we arrange the slices on a sheet tray, drizzle with olive oil, sprinkle with salt, and toast them over our wood fire. A hot oven, or even a toaster oven, works just as well.

At Meadow Lark, we get our flank steaks from Frank Silva, who raises Scottish Highland cattle. Instead of adding salt to the marinade, we salt the meat directly to ensure it gets just the right amount: an even shower on both sides.

Here’s what goes in the marinade: Dijon mustard red wine vinegar garlic olive oil oregano rosemary chili bay leaves lemon peel black pepper For a single flank steak, you might start with three or four tablespoons of red wine vinegar and a teaspoon of Dijon. Then whisk in a steady stream of olive oil until you have what looks and tastes like the beginning of a vinaigrette. Add a few cloves of crushed garlic. Similarly, bruise the rosemary and oregano: lay them on your board and give them a few whacks with the back of the blade to release their essential oils. Crush a couple of bay leaves and a dried cayenne chili in your fist and let them crumble into the marinade. Add a couple of twists of black pepper and a few strips of lemon peel. Let the salted flank steak rest in the marinade, in your fridge, for the better part of the day, or overnight. And be sure to allow the steak to warm up a bit on your counter before you head for the grill, otherwise it will cook too unevenly. When your grill is hot, remove the steak from the marinade—you don’t have to brush off any excess, but be sure that no stray pieces of garlic remain, or they will burn and turn very bitter. As with any cut of meat that has been grilled as you like it, make sure you let it rest in a warm place for five to ten minutes, protected from any breezes. Slice the steak across its grain, and serve it on a warm platter, perhaps on a pillow of robust greens that will benefit from the steak’s juices.

Apricot Frangipane Tart

Apricots are hard to grow in our Colorado climate—spring snowstorms, high winds, and the late arrival of honeybees in the orchard are only a few factors that can go wrong. So when everything comes together and you get your hands on some perfect Colorado apricots, set this recipe aside, rinse the apricots under cool water, set them in your prettiest bowl, and serve them—unadorned—for dessert. The rest of the time, this tart will add the sweetness that is lacking

from an abridged growing season. This dessert is best served warm—but you can get most of the preparation done beforehand. There are three parts to this tart: the pre-baked tart shell, the frangipane—a combination of eggs, sugar, butter and ground almonds that makes for a pillowy backdrop in this tart—and the apricots themselves. Start by making a pâte sucrée, a sweetcrust pastry: 1/3 cup sugar 1/4 pound butter 1 1/4 cup flour 1 egg yolk salt vanilla extract Using a stand mixer with a paddle attachment, beat 1/4 pound (one stick) of unsalted butter with 1/3 cup of sugar until the butter is whipped and creamy. Then add a pinch of salt, a few drops of vanilla extract, and one egg yolk, and keep mixing until everything is combined (you may have to pause the mixer and use a rubber spatula to scrape the sides of the mixing bowl). Finally, turn the mixer to its lowest speed and add 1 1/4 cups of flour— watch closely, and stop the mixer as soon as the pastry dough has come together. In our dry climate, you may need a few drops of water to encourage everything to come together. Peel the dough off the paddle, gather any loose crumbs of dough, wrap the ball in plastic foil, and press it into a disc just over an inch thick. This dough likes to rest for as long as you can let it—all day if possible, or even overnight if you plan ahead. When you are getting ready to pre-bake the tart shell, let the dough warm up and soften a bit on your counter. Then roll it out while keeping both sides dusted with flour to keep it from sticking. Transfer the rolled-out dough to a tart shell with a removable bottom, and press it into place. Don’t worry if the dough cracks and crumbles—you can patch any holes with extra pieces of dough. Stick the lined tart shell in the freezer for 15 minutes or so before transferring it to a hot oven (somewhere around 375˚F). Bake it until it’s just golden, not more—remember that it will spend more time in the oven once it’s filled.

Prepare the apricots by cutting them into little wedges. Sprinkle them liberally with sugar, toss them around, and let them get a little juicy as they sit in the sugar. A squeeze of lemon juice will keep them from browning too much. For the frangipane, prepare: 1 cup ground almonds 1/2 cup sugar 6 tablespoons butter 1/4 cup flour vanilla extract 2 eggs Combine all of the ingredients in the bowl of a stand mixer and beat assertively until the frangipane looks light in color and a bit fluffy. Cover the bowl with plastic foil and keep it in the refrigerator until you are ready to assemble and bake the tart. Make sure the tart shell has cooled completely before you do. Use a rubber spatula to spread the frangipane on the bottom of the tart shell in an even layer. Then use a slotted spoon to remove the apricot wedges from their juices, and scatter them across the surface of the frangipane. Use the back of the spoon to gently press the wedges into the frangipane—just a little bit. You can use a generous amount of apricots, but be sure to leave some spaces of frangipane peeking through here and there. Bake the tart in a hot oven until the frangipane has puffed up around the apricots and has turned a deep golden brown, and some of the wedges have caramelized a bit around the edges. Once it’s out of the oven, let the tart cool ever so slightly before removing the rim of the pan. You can simmer the sweet apricot juices until they are thick and syrupy, and use this reduction to sweeten some loosely whipped cream. A splash of almond extract in the cream will add a nice perfume.

Union Station

Denver’s historic gateway is entering the 21st century with a flourish

he clash and clamor of trains rumbling over tracks and the bustle of busy passengers rushing in all directions is central to the life of a great city, and for the past 133 years the historic heart of Denver’s transportation network has been Union Station. The original structure, designed by architect William E. Taylor and opened on June 1, 1881 by the Union Depot and Railroad Company at a cost of $525,000, was built from Colorado-quarried stone, with a majestic wooden central tower. It measured a grand 503 feet long by 65 feet wide facing Wynkoop Street, and it was surrounded with park-like landscaping. As railroads flourished, 60-80 trains a day would arrive or depart from the new station. In 1886, Denver’s fully electrified streetcar system was also linked to Union Station. A fire swept through the depot in 1894, causing extensive damage, including the destruction of the tower. Swift reconstruction efforts produced a lower-profile structure, rebuilt in the Romanesque Revival style with a stone clock tower. That depot served its purpose until 1914, when Denver architects Aaron Gove and Thomas Walsh gave the building a Beaux Arts/ Renaissance Revival renovation. The stone tower was removed to make way

for a new and expanded central waiting room, complete with eight-footwide chandeliers, bronze sconces and elegant plaster arches embellished with 2,300 bas-relief columbine flowers. Famous passengers who stepped onto the platforms over the years include Presidents Teddy Roosevelt, William Howard Taft, Franklin Delano Roosevelt (along with Eleanor, the First Lady), and Harry S. Truman. Many thousands of servicemen and women also passed through Union Station during World War II. Rail travel dropped with highway construction and auto and airplane popularity. Despite the addition of a jaunty red “UNION STATION TRAVEL by TRAIN” sign in 1952, the historic depot faced decades of decline. But in 1969 the newly-formed Regional Transportation District (RTD) began to rethink the station as a regional hub for a new era of light rail and bus in addition to Amtrak. The building was named to the National Register of Historic Places in 1974. Since the mid-2000s the grand old station has been the focus of an ambitious redevelopment initiative, set to bring back the old clamor and bustle, only this time with an exciting new array of shops, restaurants, apartments, offices and a hotel, all slated to open in July. unionstationdenver.com
