I
suppose it’s an occupational hazard that after spending my days reviewing and writing about stunning, professionallydesigned homes I occasionally look at my own spaces with an unfairly critical eye. Not always—I really do love my home— but sometimes I just can’t help it. This time of year seems to be the peak time for my harsh assessments, because I am bombarded (in a good way) with announcements about all the new furniture lines that are introduced this time of year. Everything is just so beautiful. I feel the overwhelming urge to pitch everything I have and replace it with fresh, fun pieces. Beyond our annual furniture roundup (starting on page 17), this issue’s featured homes highlight a great mix of furniture styles, from SlimGenics founder Katherine Ott’s ultra-contemporary condo to Kiera Zink’s classically updated bungalow. We also introduce you to Michelle Sie Whitten, Excelsior Youth Center’s 2014 Triumphant Woman (page 33) and give you a sneak peek of the Denver Art Museum’s incredible exhibition, Modern Masters. Since I probably won’t be replacing all my furniture this year, I’ll just live vicariously through the pages of this magazine and invite you to do the same. Old Town Treats
elebrating its 150th anniversary this year, Fort Collins is home to Colorado State University, but it’s more than just a college town. With a lively arts scene (boasting local symphony, theatre, ballet and opera groups) and a growing number of high-tech companies (including HewlettPackard) putting down roots, the city is abuzz with activity. And beer. While the giant Anheuser Busch brewery on the edge of town anchors the local brew culture, Fort Collins is also home to 11 award-winning craft brewers—including favorites Odell and New Belgium. The local Conventions & Visitors Bureau even offers a “Foam on the Range Tour.” The intertwined streets of the original city of Fort Collins, known as Old Town, have a vintage charm that captivated even Walt Disney, who modeled Disneyland’s Main Street, U.S.A. on Fort Collins after seeing photos taken by Harper Goff, a Disney artist and themepark designer born in the city.
Take a perch at The Little Bird Bakeshop (11 Old Town Square, #121), a bright and cheerful neighborhood spot where sumptuous pastries and artisan breads are baked from scratch each day. Modern Masters, a grand collaboration between the Denver Art Museum and the Clyfford Still Museum, is the must-see exhibition of the year. Before you go, get a lesson on the evolution of modern art
W
hen the Denver Art Museum unveils its new show, Modern Masters, this month, guests will get a rare glimpse of 70 of the finest and most compelling works in modern art. Curator Dean Sobel, director of the Clyfford Still Museum next door, designed the show with pieces that rarely leave their home at the Albright-Knox Art Gallery in Buffalo, NY. Meanwhile, the Still Museum will run a concurrent exhibition, 1959, that re-creates Clyfford Still’s landmark exhibition held at the Albright-Knox that year. In case it’s been a while since you’ve contemplated the connection between Picasso and Pollock, we spoke to Sobel and Gwen Chanzit, modern art curator at the DAM, for a primer on the history and influence of modern art—and a preview of some can’t-miss highlights of the show.

CH&L: Give us a little art lesson. What is modern art?
Gwen Chanzit: A big shift came in the last half of the 19th century, when artists began to reject the idea that a painting must imitate the visual world. After Renaissance artists perfected the device of perspective, a painting had been thought of as a kind of window into the world. This idea persisted well into the 19th century—until some artists began to see a painting as no longer subservient to the thing it depicts. Instead of erasing all signs of the brush to create a transparent window, artists began to consider the surface of the painting itself, and eventually to include emotional content and abstraction of form. These changes indicate a modernist point of view. Dean Sobel: And at that time, there seemed to be a desire to not follow tradition, which art had been doing. There emerged a desire to be on the
leading edge—the avant-garde—of what the audience might understand. At the start, you begin to see a flattening of space in an artwork. There’s an increasing acknowledgment that paintings are, as Gwen said, painted objects. Painters—think of Van Gogh— begin revealing their brushstrokes, which was a break from 19th-century academic painters, who hid all signs of the brushstroke. Van Gogh makes paint rise up on the surface; he celebrates the expressive power of paint. Then you get Cézanne, who’s organizing all brush strokes into a sort of pattern. It starts with Impressionism and PostImpressionism and evolves from there.
GC: Then early in the 20th century, you’ve got Einstein, the theories of relativity, the splitting of the atom. Literary figures were playing with language, breaking it into new structures, and painters embarked on similar experiments. These artists weren’t living in a vacuum. The world was changing. DS: Viewers in 2014 shouldn’t take for granted how radical these changes were for the [original] viewer. GC: Absolutely. Political cartoons ridiculed them. You can’t underestimate how much [modern art] got under people’s skin.
And what prompted these shifts?
There was plenty to get viewers riled up, right? Let’s talk about how big the “modern art” umbrella really is.
DS: Industry, ideas from the Enlightenment, interest in everyday life. Instead of turning to religious figures and history for inspiration, artists—the French Impressionists—started looking at scenes of modern life.
DS: It’s huge. Almost every two to five years, the movement changed. Artists were building on and synthesizing and elaborating on what came before. It’s pretty rapid-fire change. Within this hundred-year or so time frame, you’ve

got Post-Impressionism, Cubism, Surrealism, Pop Art, and Minimalism. GC: Also, we should mention that scholars don’t agree about when the modern art movement ends and contemporary art begins. DS: True. It’s an interesting question. We end [the show] in the early 1970s with the end of Pop Art, but there’s deep debate from the art historical perspective. Since [Andy] Warhol appropriates other people’s images in his work, he moved beyond issues of authorship and originality—ideas that Warhol would have thought were outdated in a media-saturated society. Maybe viewers can decide for themselves. What will they find at the show?
GC: The superstars. DS: Gauguin, Matisse, Picasso, Kahlo, Dalí, Pollock, Warhol. These are some of the biggest names we could serve up.

DS: The Frida Kahlo self-portrait. It’s very rare to see one in the United States. It’s a treat. And the Pollock is probably his last great drip painting. The scale is enormous. It’s so unusual for anyone to get to see a Pollock of this scale. GC: Gauguin’s Spirit of the Dead Watching is iconic. Miró’s Harlequin’s Carnival is fantastic. What you’re going to see in this show is a signature work of each of these masters. DS: The centerpiece of the show, both by number and size, is the collection of American abstract expressionists. The Albright-Knox was actively collecting these pieces in the 50s and early 60s. We have Rothko, Motherwell, and of course Clyfford Still. Speaking of Still, tell us about 1959, the related exhibition at the Clyfford Still Museum.
DS: Still had a big show at the AlbrightKnox Museum in 1959—about 75 paintings—that we’re recreating. It 30

was an unusual event for Still because, of course, he had broken ties with the world in the early 50s. So why did he agree to a show in 1959?
DS: The real germ of it is that the Albright-Knox’s director went to visit Still’s studio in 1957. He wanted to buy a painting for the gallery, but Still didn’t like the idea of having the painting auditioned with the Board [which is typical protocol when a museum acquires a piece]. The museum director called Seymour Knox, the chair of the board, and Knox told him to buy the painting, sight unseen. That endeared Knox to Still, who agreed to show his work at the gallery two years later. GC: The great thing about the exhibit next door [at the Clyfford Still Museum], is that you get to understand a great artist in the context of an entire movement. What advice do you have for visitors?
GC: I’d like to mention the word “evolution.” Art is evolving
rather than progressing. You can look at a Renaissance painting, an Impressionist painting and a Pollock painting—one’s not better than another. The changes you see just reflect where art has taken us. This show is valuable in its ability to reveal those changes to you. DS: Come more than once. When you go through a large exhibition, sometimes you just acknowledge everything. A lot of these paintings beg for a sustained period of looking. Give yourself time for that. The DAM collections are really strong in many areas, but collectors [in Denver] weren’t buying a lot of modernist works in the mid-20th century. It’s rare for Denver to get to see this range of modern works, while at the same time see how modern masters were inspired by precisely those art forms where the DAM collection is particularly strong—New World, African, Pre-Columbian among them. It’s a real treat.

’m honored to be among these fabulous women,” says Michelle Sie Whitten of her recent distinction as Excelsior Youth Center’s 2014 Triumphant Woman, “but I don’t think I would have accepted it if I didn’t believe in the organization.” This strong statement seems appropriate coming from Whitten, a self-described workaholic and committed information junkie. “I knew of Excelsior through involved friends and had donated to them years ago, and then I reconnected when I met the force of nature that is [2013 Triumphant Woman] Jamie Angelic.

With many years of nonprofit experience, I really appreciated the success of the Center’s fundraising efforts.” Whitten is the co-founder and executive director of the Denver-based Global Down Syndrome Foundation, the nation’s leading lobbying and advocacy organization for people with the genetic disorder. Inspired by her daughter Sophia, who was born with Down syndrome, the foundation’s mission is to “significantly improve the lives of people with Down syndrome through research, medical care, education and advocacy.” For Whitten, education is paramount. “We estimate that 6,000 people in Colorado have Down syndrome, but growing up I never met anyone with the disorder. Societal inclusion is important; it’s a civil rights issue. And really, what better way is there to prepare parents to raise a Down syndrome child than to grow up with them?” Her passion for education also stems from the way in which she and her husband, art curator Tom Whitten, learned that their unborn child would have Down syndrome. “We received the diagnosis in a terrible way. We had a genetic counselor who provided no positive information and we were pushed to terminate. It’s not a secret that I’m pro-choice, but I’m also pro-information. To make an informed decision, you have to have accurate information, and it didn’t take long for me to discover that most of what [my doctor] told me was wrong.” After conducting their own research, the Whittens chose to move forward with the pregnancy. Whitten grew up in New Jersey and Pennsylvania and moved to Denver in 1983 at age 17 when her father, John J. Sie, relocated to help build the then-largest cable TV operator in the country, Tele-Communications,

How would you describe the style of your home? A mix of contemporary and Chinese. We love color! We spent eight months renovating, and this is our dream home; we are not moving again. Tell us about your amazing art collection. My husband is a contemporary Chinese art expert and curator. We both collected textiles and now we have a burgeoning art collection. We’ve had to find a balance between loving color on the walls and knowing that white walls show off the art.
Inc. “At that time, there was very little ethnic or cultural diversity in Denver,” Whitten recalls. She moved away to attend college (Whitten holds a Master of Arts degree in Regional Studies/East Asia and a Graduate Certificate in Business Administration from Harvard University as well as a Bachelor of Arts degree in Asian Studies from Tufts University) and subsequently chose to return to the Mile High City after her 1999 marriage. With a staff of just nine, Whitten continues to work diligently to grow the foundation and spread its message. The Be Beautiful Be Yourself Fashion Show, held each October, is the foundation’s largest fundraiser and helps contribute to the endowment of the Anna and John J. Sie Center for Down Syndrome at Children’s Hospital Colorado. In 2014, the foundation’s primary focus is to raise funds to establish the Alzheimer’s Center of Excellence for Adult Care—research shows that people with Down syndrome have an unusually high risk of contracting Alzheimer’s—and to partner with the Alzheimer’s Association to research the connection between Down syndrome and Alzheimer’s. The foundation is also developing a national survey of pregnant women to compile feedback about the types of prenatal information they want to receive regarding Down syndrome. “We must not be complacent,” says Whitten. “We must continue to move forward with our message.” 36

What are some of your family’s favorite things to do in and around Denver? I’m half Chinese and half Italian, so everything is about food. We don’t really have a favorite restaurant because we rarely go to the same one twice. Of course, we visit lots of museums, and this year we want to introduce the kids to skiing. How do you and your husband maintain a work/life balance? We don’t [laughs]. I think in our case, opposites attract; he’s calm and I’m hyper. But we’re both completely involved in our children’s lives; we don’t have a nanny and we accept that this is a full time in our lives. We’re busy but our lives are filled with positive things.

The Softer Side of Modern An updated take on the classics infuses an older Denver home with youth, freshness and timeless appeal By Nancy Richman Milligan Photography by Kimberly Gavin

hen homeowner Kiera Zink was ready to make changes to her vintage Denver bungalow, she had a lot of design ideas floating around in her head; she just needed someone to help pull together her vision of a chic, comfortable home. “I wanted something that was not exactly modern,” she explains, “but an updated, stylish version of classic—soft and pretty with some sparkle.” She and her husband Lee had bought the home in a quiet Washington Park neighborhood knowing that they would someday renovate it for the long term. “We believed this house had the potential to become our ‘forever home,’” Zink remembers. 46
The original fireplace in the living room got a modern makeover with Thassos marble mosaic tiles. Atop the crisply painted mantel rests Turbulence, an oil painting by Danny C. Williams from Walker Fine Art. Interior designer Beth Armijo set the tone for the house with a lighthearted mix of styles and textures, including the masculine Mr. Brown coffee table and Vanguard Spool Chairs from Highland Design Source in Denver.

Having admired interior designer Beth Armijo’s work on the pages of Colorado Homes & Lifestyles, the couple wisely hired her early in the game, before the top was popped, the interiors were gutted or major decisions had been made. That suited Armijo: “Designers can have the most impact if we can work with the whole canvas—the finishes, paint, cabinetry, molding, floors and furniture,” she explains. “It allows us to tell the whole story, to match the client’s personality, to create balance.” Armijo filled the newly blank canvas from top to bottom with the young, fresh personality of the homeowners. “We gave the house a contemporary, transitional look; very updated, very light with fun, bold prints,” she says. A serene, watery color-scheme flows throughout the open-concept spaces: a wash of white, gray and blue that was inspired by the clients’ recent visit to Nantucket. “The coastal colors actually work well in Colorado with our bright sunshine,” Armijo says. “They have a calming effect.” She injected pops of brilliance with silvery finishes, nail-head accents and jewel-like light fixtures. That east-coast style is perhaps most apparent in the airy living room, where a textural silk-and-wool Tibetan rug anchors a bold studded-metal coffee table and traditional furniture with light upholstery. “I had to trust Beth on the living room,” says Zink. “She created depth and balance and I love all the different elements.” Zink extended that trust to the kitchen as well, where she was uncertain about combining chocolate brown and gray cabinetry. But it worked. The furnishings are all custom, with a sassy spin on the classics. Wooden spool chairs have been around forever, but you rarely see them

with a fun gray color wash. Damask wallpaper may be considered old-fashioned, but the oversized Nina Campbell damask wallcovering in the study is decidedly up-to-date; elements such as a citron green-striped shade and a hot pink ottoman add playful pops. Throughout the home, Armijo applied old-school principles with newage colors and finishes—these are not your mother-in-law’s hand-medowns. The lines are clean and crisp, the patterns large-scale and modern, the finishes unexpected. There is a sense of adventure in the home, “and a sense of timelessness that comes from classic bones and clean modern lines,” Armijo adds. “When you mix materials it is less of a period look, so it transitions over time a lot easier.” The result is a stunning pairing. “I absolutely love the colors now,” says a delighted Kiera Zink. “I wasn’t able to express what I had in my head. That’s why I hired Beth. She can express my vision and pull it all together. It’s like magic.”

Aspen Escape An outdated 1970s home gets a light and airy transformation into a modern highcountry haven

The living room’s soaring 20-foot ceilings and two-sided stone fireplace keep the space open, airy and casual. rive through any Colorado mountain town and you’ll see plenty of 1970s homes—complete with dark wood interiors, orange shag carpeting and claustrophobic kitchens— begging for renovation. Once upon a time, that sad description would have fit this now-remodeled beauty, located in rural Pitkin County just a few miles from downtown Aspen. Fortunately, homeowner Cherie Hassenflu, an interior designer and principal of Houston-based Savant Design Group, and her husband, Alan, a commercial real estate developer, recognized enormous potential within the original 2,500-square-foot cedar home. The Hassenflus and their two sons started visiting the Aspen/Snowmass area 18 years ago. Avid travelers, they wanted this vacation home to stand as a reflection of their lifestyle and interests. To that end, they turned to Ted Guy and Mike Bucchin of Aspenbased Theodore K Guy Associates (TKGA), an architectural, planning and structural engineering firm, to transform the rustic structure into a modern-day mountain haven.

Rather than using standard columns that would disrupt the home’s lines, the architectural team of Mike Bucchin and Ted Guy opted for diagonal beams to extend the roofline about two feet over the deck. The downstairs powder room features elements symbolic of the mountains, such as the “Woods” wallpaper by Cole & Son for Lee Jofa and a sink base made from an antique Asian food vessel inverted to resemble a tree trunk. Tile from Oceanside Glasstile, a Kohler faucet and an antique mirror finish the look. “The existing home ignored an onsite pond, and the views to the north and to Aspen,” Guy says. “It was simply plopped on the site with no imagination.” Guy and Bucchin extended the meager front porch into a wraparound deck that now takes advantage of the awe-inspiring views. And, using a photo from a magazine as inspiration, the architects created a contemporary version of a log home— complete with a carved “bowtie” detail that is expressed on both ends of the home’s facade. “We took the underutilized architecture and transformed it into a usable, elegant piece of art,” Bucchin says. “The front deck is linear and modern while the expansive Hope’s steel windows are more traditional, which lightens the architectural feel of the house,” Hassenflu says. Guy and Bucchin also installed diagonal timber beams on the exterior of the home, creating a two-foot overhang along the deck. Other enhancements came in the form of a warm flagstone entry, a new shed roof and a nearly 1,800-square-foot addition that includes a new master bedroom and bathroom suite.
The entryway features a cozy vignette composed of an antique settee covered in Kelly Wearstler fabric by Lee Jofa, an antique Navajo rug from Isberian Rug Company, and antique Black Forest trophies imported by Savant Design Group.
Once the structural modifications were complete, Hassenflu put her interior design expertise to work. She spruced up the now-fivebedroom home with a mountain aesthetic in mind, accented by clean lines and a modern flair. In order to get away from the usual greens and browns used in many mountain homes, the designer instead went for a neutral color palette and created interest through the use of multiple layered textures. For example, the custom iron-andwood dining table by Savant Design Group features a reflective surface; it’s a substantial piece that anchors the room, and it’s definitely not your typical wooden table. In the winter, Hassenflu drapes the Knoll Sprite side dining chairs with cozy lambskins that add further warmth and texture to the space. “A lot of Aspen homes have an inside/outside connection, both literally and figuratively,” Bucchin says. “This home is consistent with the Aspen area, but [the details] are expressed in a completely different way.” Guy adds, “Many older homes have within them the potential to improve their connection to the site without starting over from scratch.” Indeed, this home is a true testament that an ugly duckling can transform into a beautiful swan. Denver businesswoman Katherine Ott sheds 5,000 square feet and gains a more livable home

A
s the founder and CEO of Denver-based weight-loss firm SlimGenics, Katherine Ott has spent the last decade helping others develop healthy eating habits. Recently, she decided to trim some of the fat out of her own life, downsizing from an 8,000-square-foot home in Centennial to a 3,000-square-foot condo in Denver. In shedding square footage, she also let go of her former home’s mountain-focused style—and nearly all of her furniture. “I kept one chair,” she says. “I like to start over and have fresh beginnings, so that’s what I wanted to do here. This home in the city needed a lighter, more modern, more urban look than I had in my last home.” (opposite) In the hallway, interior designers Noelle Hernandez and Nicole Stewart installed a gallery wall of floral X-ray prints and positioned a custom dresser by Glenwood Springs’ Highland Woodworks at one end. Perched on the 33rd floor of the Four Seasons in Denver, Ott’s new condo offers panoramic views of both downtown and the Rocky Mountains. When Ott bought it, the space was about as basic as a luxury residence in the Four Seasons gets. It didn’t even have a kitchen, so Ott hired Noelle Hernandez and Nicole Stewart, the mother-daughter design duo behind NCH Design in Aspen, to bring the bare space to life. Hernandez specializes in kitchen and bathroom design, which is a good thing because she and Stewart had just six months to design and construct the kitchen, while also renovating the master bathroom and installing lighting and sound systems. In perhaps the most daunting challenge of all, the designers ordered several pieces of custom furniture, which—as anyone who’s waited anxiously for a shipment can attest—regularly takes up to four months for delivery.
“It was a bit of a nail-biter,” Hernandez remembers. “Thankfully, Katherine is a businesswoman and she’s really decisive. She made her design choices quickly, and we ended up finishing two-and-a-half weeks early.” The three-bedroom, three-and-a-half bathroom home features an open-concept floor plan appointed with clean-lined furnishings and a soothingly neutral color scheme. “The home’s palette was inspired by the kitchen cabinets,” Stewart says. “There’s a gray overtone with a darker chocolate brown underneath to give the cabinets some texture and richness.” The resulting color, a gray beige—or “greige”—carries over into the Petra dining chairs from Ligne Roset, as well as the large, custom sectional that’s big enough to seat a crowd. To keep the space from being consumed by the sofa, Hernandez and Stewart added a couple of organic pieces: a custom walnut dining table and a walnut credenza— one with a quieter,

tighter wood-grain and the other with a more open grain that celebrates the natural irregularities of the log. Ott and her design team agree, though, that the pièce de résistance is the coffee table—a four-piece, lacewood Infinity table by Donghia, lacquered to an elegant sheen. But don’t bother reaching for a coaster. While Ott wants her home to be urbane to suit its city setting, she strives to make every square inch of her new space inviting and comfortable. “In my old house, I only saw two-thirds of it when there was company; this home gets used,” she says. “And while I used to have bigger, bulkier furniture to match that house’s 20-foot ceilings, I wasn’t as concerned about comfort. Here, the furniture is all streamlined and elegant, but it’s super comfortable.” It feels good to shed the excess, Ott says. “All of this home is so livable.” (opposite) Hernandez and Stewart renovated the master bathroom, adding limestone flooring and extra storage. Self-professed “Food Geek in Chief” Erin Fletter’s passion for teaching kids to cook and enjoy nutritious food led her to take on her own business. In 2011, she joined Sticky Fingers Cooking, a Denver-based cooking school for children ages 2-12. The following year, she purchased the business and decided to eschew the brick-and-mortar shop and go mobile. “It was a wacky idea then,” says Fletter, “but I’m a busy mother of three daughters and am a big fan of after-school enrichment programs.” Emphasizing fresh, whole-food ingredients, simple recipes and basic techniques (like knife skills), Fletter and her team of 25 chefs travel to area schools, libraries, community centers and even churches and synagogues to help youngsters “cultivate culinary curiosity” and form healthy eating habits. “We have created a mobile cooking kit so we don’t need a kitchen. We can cook anywhere,” Fletter explains. The team also hosts private events and birthday parties. “We have an enthusiastic team here; we love kids and we love cooking. Blueberry Lemon Ricotta Pancakes Dry Measure Measure and combine 1½ C flour + 3 T baking powder + 1 tsp ground nutmeg + ½ tsp salt + 4 T sugar in a small bowl. wash+zest+juice Wash 2 lemons, and using a fine cheese grater, zest the peel of the lemons (only the yellow part) and squeeze the juice out of the lemons. Reserve the lemon juice and zest. wet measure In a large bowl, measure and whisk together 2 C ricotta cheese, 1½ C Blueberries + 4 eggs + 1⅓ C milk + the lemon juice from squeezed lemons + lemon zest. fold+cook Lightly whisk or fold the flour mixture into the wet ingredients until just combined. Brush a hot griddle with some oil or butter. Pour approximately 1-2 Tbs of the batter on the griddle and cook on both sides until light golden brown. Repeat until no batter remains. Makes about 24-28 silver dollar size pancakes.

A James Beard Foundation award winner for Best Chef Southwest in 2013, Jennifer Jasinski opened her first restaurant, Rioja, in Denver’s Historic Larimer Square in 2004 to critical acclaim, featuring a menu inspired by Mediterranean ingredients and influenced by local and seasonal products. She and business partner Beth Gruitch acquired Bistro Vendôme, a French bistro across the street from Rioja in 2006 and opened Euclid Hall Bar & Kitchen just around the corner in 2010. Jasinski was named 2004 Colorado Chef of the Year and 2005 Western Regional Chef of the Year by the American Culinary Federation, and Rioja is consistently listed among Denver’s top restaurants by 5280, The Denver Post and the Gabby Gourmet Restaurant Guide. In 2007, Jasinski was the Jean Yancey award winner in the Denver Business Journal’s Outstanding Women in Business awards. Fennel Mascarpone Purée • 1 head fennel • 2 tablespoons pure olive oil, or as needed • ¼ cup Pernod liqueur • 2 cups vegetable broth • Kosher salt and black pepper, to taste • ½ cup mascarpone cheese Remove the tough core of the fennel head; thinly slice the head across the ribs. In a saucepan, heat olive oil. Sauté the fennel briefly over medium heat, but do not let it get any color. Deglaze the pan with Pernod, reducing liquid completely. Add vegetable broth and simmer over mediumlow heat, until all the liquid is gone and the fennel is tender. Season to taste with salt and pepper. Transfer mixture to a blender or food processor and blend until very smooth. Place the purée in a bowl to cool slightly. Whisk in mascarpone and chill in refrigerator.

Bring a large 2-3 gallon stockpot of water to a boil over high heat. Prepare a large bath of ice water and set aside. Drop live lobsters into boiling water, one at a time, and boil for 6 minutes. Remove lobsters from the boiling water to the ice water bath and chill thoroughly. Pull chilled lobsters from bath and remove tail and claws, including the knuckles. Crack the claws on the spine of the fattest part with the back of a knife and continue until are broken loose. Gently remove meat, ensuring there are no shells or cartilage remaining. Pull off the tail fin end of the tail and remove meat by pulling gently out of the larger opening. Split the tails in half lengthwise. Place lobster meat in refrigerator and reserve all shells and body cavity for Lobster Nage.
Lobster Nage • ½ cup shallots, sliced • 2 tablespoons garlic, sliced • ¼ head fennel, chopped • Lobster shells and the body cavity, chopped • 1 Roma tomato, diced • 2 teaspoons tomato paste • 8 basil leaves • 1 bay leaf • 6 black peppercorns • 1 cup white wine • 1 quart chicken stock • 4 ounces sweet butter, cubed • 1 tablespoon sherry vinegar • Kosher salt and black pepper, to taste Heat olive oil in a heavy saucepot; sauté the shallots, garlic and fennel in olive oil until golden. Add lobster shells and sauté for 2 minutes. Add tomato, tomato paste, two basil leaves, bay leaf and peppercorns; sauté until the tomato is soft. Deglaze the pan with wine and reduce completely. Add stock and reduce by half over medium heat. Blend in a blender or with an emulsion blender to pulverize shells. Strain sauce through a fine-mesh chinois, pressing to extract all juice. To finish, bring sauce base to a boil and place in blender. With the motor running, add the butter, remaining six basil leaves and sherry vinegar. Season to taste with salt and pepper. Keep warm.
Risotto • 1 cup asparagus spears, bias cut in 1-inch-long pieces • 7 cups chicken stock • 2 teaspoons kosher salt, plus more to taste • ½ cup yellow onion, chopped • 5 tablespoons butter • 1 cup Carnaroli rice • ½ cup white wine

• 3 whole live Maine lobsters, about 1 ¼ pounds each
• Black pepper, to taste • ½ cup fennel mascarpone purée Prepare a large bath of ice water. Blanch the asparagus in boiling, salted water for 2 minutes. Drain and shock the asparagus in the bath, allowing it to chill completely. Drain again and dry spears. Place the chicken stock and the 2 teaspoons salt in a large saucepot; bring to a low simmer. In a wide, shallow pan, sauté onion over medium heat in 2 tablespoons of butter. Once the onion is translucent and aromatic, add the rice and cook another 1-2 minutes. Deglaze the pan with white wine and reduce the liquid until the pan is dry, stirring constantly. Ladle the hot stock into the rice, one cup at a time, stirring constantly and reducing until dry before making the next addition. As the rice becomes soft and the stock nearly exhausted, season to taste with salt and pepper. Add cooked asparagus to warm through, checking the consistency once more to ensure that the risotto is tight and all of the stock is reduced; add 1 ½ cups of fennel mascarpone purée. (The purée will slightly loosen the risotto.) Allow rice to get warm again and then vigorously stir in the remaining 3 tablespoons butter to emulsify. Once the butter has been added, be sure that the rice does not return to a boil.
Assembly and Plating • ½ pound (2 sticks) butter • 6-8 tiny chervil sprigs Gently warm butter in a sauté pan; add reserved lobster meat, just to warm it up. Do not overcook. Place ¼ cup of lobster nage in the bottom of each 12inch pasta bowl. Spoon the risotto into the center of the bowls, pushing the sauce to the outside. Place ½ tail and 1 claw of the lobster on top of each risotto portion. Garnish with chervil sprigs and serve immediately. Serves 6.

Marinated Shrimp • 12 large shrimp, peeled and deveined • 2 tablespoons olive oil • 1 lemon • 1 teaspoon crushed red chili flakes • ½ teaspoon ground fennel seed • Salt and pepper Mix all ingredients. Marinate for approximately 10 minutes.

• 1 cup heavy cream • 2 cups snap peas • 10 basil leaves • Salt Heat cream in a small saucepan until simmering. Add peas; simmer for 2-3 minutes, until soft. Add basil, and blend until smooth. Season to taste. Set aside.
Risotto • 3 tablespoons olive oil • ½ yellow onion, diced • 1 teaspoon garlic, minced • 1 cup Carneroli rice • ½ cup white wine • 1 quart vegetable stock • 2 tablespoons butter • 1 cup pea puree • ¾ cup snap peas, chopped • 2 tablespoon basil, chopped • 2 tablespoons grated Parmesan • Salt and pepper Sauté the onions and garlic in olive oil until soft. Add rice; toast in pan for about 2 minutes. Deglaze with white wine, and slowly add the vegetable stock, a little at a time to just cover rice, as absorbed. Continue stirring the rice and cook for 10 minutes, until al dente. Finish by stirring in butter, pea puree, chopped peas, basil and Parmesan, and season to taste. When risotto is complete, heat a medium sauté pan and sear shrimp for 1-2 minutes on each side, until cooked through. To plate, place the risotto in a small bowl, stacking shrimp on top. Garnish with the gremolata and baby basil leaves, if desired. Serves 4.

Colorado Lamb Sliders with Pepper Jack Cheese and Green Chile Pesto
Colorado Lamb Sliders
Divide lamb into 8-2 ounce portions and form into mini hamburgers. Set aside. Coat peppers in canola oil and season with salt and pepper. Roast on a hot grill or under broiler until charred. Place in a container with a lid and let stand 20-30 minutes, allowing peppers to steam. For pesto: Peel skin from peppers; remove stem and seeds. Roughly chop peppers and garlic. Place peppers, garlic, Cotija cheese, pumpkin seeds, and olive oil in blender and season with salt and pepper. Blend until mixture is smooth. Adjust seasoning to taste and set aside. Butter both sides of slider buns and toast on a griddle or grill. Season burgers with salt and pepper and cook on griddle or grill to desired temperature. Top each burger with a slice of pepper jack to melt. Place sliders on the bottom bun and top with a tablespoon of pesto on each. Put top bun on and serve. Makes 16 sliders.

• 6 ravioli • 2 tablespoons butter • 1 tablespoon rosemary, chopped fine • ½ ounce Parmesan, shaved • 3-5 small sprigs Italian parsley Combine rosemary and butter together and cook gently until the butter starts to brown. Toss in cooked pasta. Place in bowl; garnish with shaved Parmesan and parsley sprigs. Serves 4.

Oatmeal Cookie • 5 cups ground rolled oats • ½ teaspoon allspice • ½ teaspoon cinnamon • ½ teaspoon ground ginger • ⅛ teaspoon nutmeg • 1 cup gluten-free flour • ½ teaspoon baking powder • ¼ teaspoon kosher salt • ¼ cup brown sugar • 1 egg • 1 teaspoon vanilla paste • ½ cup molasses • ¾ cup grape seed oil • 1 cup milk Combine all ingredients. Scoop one ounce of batter (about two tablespoons) and smooth on a Silpat sheet or parchment paper to desired size. Bake at 350 degrees F for 8 to 10 minutes, then freeze. Scott Parker is executive chef at Session Kitchen, one of Denver’s most talked about new restaurants. A simple man with artistic culinary talent, Parker uses food as his paint and hunger as his muse, cooking whatever he’s in the mood for. His love of the kitchen began at a young age while growing up in Tulsa, Oklahoma. Dining was a relaxed experience in the Parker household, and his mother would send him on grocery runs, allowing him to buy whatever he wanted. While most boys his age would have picked out frozen pizzas and TV dinners, Scott gravitated toward fresh fruits, vegetables and choice cuts of meat. Going to the store was an educational experience, and Scott learned when food is at its peak. Scott attended Denver’s Johnson & Wales University and upon graduation moved to Telluride, Colorado, working as a chef at the San Sophia, followed by stints at Nantucket’s DeMarco, The Game Creek Grill in Vail and Grouse Mountain Grill in nearby Beaver Creek. He returned to Denver and started working at award-winning, progressive restaurant Adega. He then spent a decade at the highly lauded Table 6, where his creativity with American comfort food earned him national attention. Cookie Filling • 1 cup sugar • 1 cup water • 6 egg whites Combine sugar and water in saucepan and, using a candy thermometer, bring to 270 degrees F to create syrup. Whip egg whites to stiff peaks; add syrup to whites while beating vigorously.
Rum Date Ice Cream • 2 cups milk • 1 cup heavy cream • ¾ cup sugar • ¼ teaspoon salt • ¼ teaspoon xanthum gum • 10 egg yolks • 12 pitted dates, soaked in rum Temper egg yolks and combine all ingredients except dates in saucepan. Bring to 180 degrees F, constantly stirring; strain and freeze. Once frozen, add macerated dates and process in ice cream maker.

Landscape designer and gardening expert Annie Huston finds inspiration during her extensive travels with husband Scott, with whom she owns Denver-based Columbine Design and Birdsall & Co. Born in the Savoie region of France, Huston says she has always had a love for plants and flowers. “As a toddler I would run into a field of wild flowers and refuse to get back in the car unless I had picked all the blooms. I also had a tendency to stop and pick all the flowers in the neighbors’ gardens to give gigantic bouquets to my mom, who then had to apologize to neighbors.” Arriving in the US an AFS (American Field Service) student, Huston finished high school in Alexandra, Virginia, and earned degree in Mass Communications from the University of Denver. By Mark Samuelson How far is Aspen from Crested Butte? That depends whether you’re driving the distance (a little over 200 miles), flying (about 25 miles), or skiing (around 40 miles). Coldwell Banker Previews International® Agent Chris Kopf knows the latter route – he’s made the trek in the annual GORE-TEX® Elk Mountains Grand Traverse race, which begins at midnight in Crested Butte’s historic downtown and ends early the next morning in Aspen. Not only can Kopf ski his way through the 40-mile race, he can also describe how far apart these towns are in terms of real estate, including how much further a luxury-home dollar goes on his side of the rugged Elk Range.
Picture a dazzling, custom Crested Butte estate that sits approximately 1.5 miles west of town with five bedrooms, five and one-half baths and a showcase view of the namesake ski peak across nearly 35 acres of pines and aspen. “It’s a beautiful mountain home, truly a piece of art,” Kopf says. “It’s priced at $3.9 million but would sell for nearly $10 or $15 million over in Aspen,” Kopf adds. Kopf bought his first resort home in Crested Butte in 1999 and moved the family up from Texas five years ago. Now he prepares a Crested Butte Real Estate Market Report for clients (ask for it at ChrisKopf@BigHornRealty.com) – on a market moving decidedly uphill now, showing twice the number of sales as at the bottom of the downturn. “Crested Butte is not as developed as Aspen; not as big; not as Hollywood,” Kopf adds. “Sometimes people say Crested Butte is what Aspen was 20 years ago. Most people first come to ski and when they come back in the summer, they’re hooked.” More than price, Crested Butte offers luxury assets for those looking for an alternative to Glitter Gulch. Home shoppers can get prepared for jet service into Gunnison-Crested Butte Regional Airport where they can find direct flights from Denver, Chicago, Dallas, Houston and a few other areas during the summer. There’s a mountain bike scene,
a thriving art community, good restaurants (Kopf mentions Maxwell’s, Wooden Nickel, Marchitelli’s and Bacchanale to name a few) and a performing arts center downtown and another on the ski mountain. For those interested, Kopf shows a wide range of Crested Butte proper ties including “Wilder on the Taylor,” which showcases luxurious riverfront home sites along a secluded, approximately two-mile stretch of the trout-laden Taylor River with prices star ting at $1.65 million. These days, quinoa seems to be everywhere—and for good reason. This nutritional powerhouse is versatile, easy to make, and contains more protein than any other grain. In The Quinoa Quookbook, author Eliza Cross shows us why this superfood isn’t just for vegans anymore

ecause quinoa has always been featured in vegan cookbooks and is gluten-free, it has a reputation for being a weird ingredient. But it’s not!” declares Eliza Cross, author of the recently published Quinoa Quookbook. “It has a nice nutty flavor and a wonderful texture, and it’s not nearly as fussy as rice to prepare.” When Cross couldn’t find a cookbook that used the ancient grain as the star ingredient, she decided to write one. “I bought it in bulk and started experimenting, first by using it in place of rice. “Quinoa Pork ‘Fried Rice’ is one of my original recipes, and now my family likes it more than they ever liked traditional fried rice.” Filled with simple recipes using ingredients found in most pantries and dotted with charming illustrations by Betty Crosslen (Cross’ mother), this handy little book will inspire even the most devout meat-and-potato eaters to try this hearty yet humble superfood.

pictured on previous page Bright green and healthy, this quick stir-fry is also truly delicious. 2 tablespoons olive oil ½ cup chopped onion 2 cloves garlic, peeled and minced ⅓ cup chicken or vegetable stock or broth 1 medium head broccolini, cut in 3-inch pieces 1 bunch kale, leaves removed from stems, torn in bite-sized pieces 1½ cups cooked quinoa salt and freshly ground black pepper to taste ¼ cup grated Parmesan cheese 3 radishes, thinly sliced ¼ cup microgreens

Heat the olive oil in a medium skillet over medium heat. Sauté the onions until they are lightly browned, about five minutes. Add the garlic and continue cooking for two minutes, until fragrant. Add the broth, broccolini and kale and stir to combine. Cook for 5 to 7 minutes, stirring occasionally, until the broccolini and kale are crisp-tender. Stir in the quinoa and season to taste with salt and pepper. Sprinkle with grated Parmesan cheese, sliced radishes and microgreens. 6 servings. For the salad: 1 cup fresh or frozen corn, cooked 1 cup cooked quinoa 1 15-ounce can black beans, rinsed and drained 1 cup diced tomatoes 1 tablespoon finely minced green onion 1 avocado, diced ⅓ chopped fresh cilantro (or more or less to suit your taste)

To make the dressing, whisk together the olive oil, lime juice, chiles, salt and pepper in a small bowl. Combine the corn, quinoa, beans, tomatoes, onion and avocados in a large bowl. Drizzle with the dressing and toss gently. Garnish with cilantro. 4 servings.
Black Bean, Corn, Quinoa and Avocado Salad
The flavors of the Southwest blend in this simple salad topped with a fresh lime-chipotle dressing. For the dressing: ⅓ cup olive oil ¼ cup fresh lime juice 1 tablespoon finely chopped green chiles ¼ teaspoon salt ¼ teaspoon freshly ground black pepper

This colorful summer dish of red, yellow and green has a dash of balsamic vinegar for a pop of bright flavor. 1 red bell pepper, sliced in ¼-inch strips 1 yellow bell pepper, sliced in ¼-inch strips 1 green bell pepper, sliced in ¼-inch strips 2 medium zucchini, sliced 1 yellow summer squash, sliced 3 tablespoons olive oil ½ teaspoon ground cumin 1 teaspoon paprika 1 teaspoon dried chili flakes (or more or less to suit your taste) 1½ cups cooked quinoa salt and freshly ground black pepper to taste
1 tablespoon balsamic vinegar 2 tablespoons chopped parsley fresh mint sprig for garnish In a large bowl, combine the peppers, zucchini, squash, olive oil, cumin, paprika and chili flakes. Heat a large skillet and add the vegetable mixture. Cook, stirring occasionally, until the peppers just begin to brown. Add the quinoa and continue cooking until peppers are tender. Remove from heat and season with salt and pepper to taste. Sprinkle with the balsamic vinegar and parsley and stir just until combined. Garnish with mint sprig. 6 servings.

Black quinoa is the secret ingredient that makes these miniature chocolate cakes so rich and delicious. ⅓ cup milk 4 eggs 1 teaspoon vanilla 2 cups cooked black quinoa ½ cup butter (1 stick), melted and cooled ¼ cup vegetable oil ¾ cup sugar ¾ cup plus ⅛ cup unsweetened cocoa powder 1½ teaspoons baking powder ½ teaspoon baking soda ½ teaspoon cinnamon ¼ teaspoon salt fresh sliced strawberries fresh mint sprigs

For the raspberry filling: ¾ cup raspberry jam ¾ cup fresh raspberries or defrosted frozen raspberries 2 teaspoons fresh lemon juice 1 tablespoon sugar

Preheat oven to 375 degrees F and grease a 9- by 13-inch baking dish In a large bowl, combine the flour, sugar, and salt. Using an electric mixer on a low speed, blend the mixture and add the softened butter one piece at a time until it is incorporated and crumbly. Measure out 1½ cups of the flour mixture into a medium bowl and reserve. Distribute the remaining flour mixture into the bottom of the prepared baking pan. Press the mixture firmly into an even layer to form the bottom crust. Bake for 14 to 18 minutes, until the edges begin to brown. To make the streusel topping, combine the reserved crust mixture with the brown sugar, oats, and quinoa in
Mother Nature gave quinoa a natural coating that protects the grains, a soap-like substance called saponin. To remove the saponin, pour the quinoa into a bowl, add water and swish it around with your hands to remove the coating. Now, dump the quinoa in a strainer and rinse it again under running water to get off every last bit of the coating. This will make all the difference and remove any trace of bitterness.

Preheat oven to 350 degrees F and grease a muffin tin. Combine milk, eggs and vanilla in a food processor or blender and pulse to combine. Add cooked quinoa, butter and oil and blend until smooth. Whisk together sugar, cocoa, baking powder, baking soda, cinnamon and salt in a large bowl. Add the quinoa mixture to bowl and mix until everything is moist. Divide batter among 12 prepared muffin cups and bake for 22 minutes, or until a tester comes out clean. Cool before unmolding, and sprinkle with the ⅛ cup cocoa powder. Garnish with sliced strawberries and mint sprigs. 12 servings.
Raspberry Quinoa Streusel Bars Red quinoa adds crunch and nutty flavor to these delectable cookie bars, made with both fresh raspberries and raspberry jam. For the crust: 2½ cups flour ⅔ cup sugar ½ teaspoon salt 2 sticks butter, softened and cut in 1-inch pieces For the streusel topping: ¼ cup packed brown sugar ½ cup rolled oats ½ cup uncooked red quinoa, rinsed and drained 2 tablespoons cold butter

The most important step to perfect quinoa? Rinsing before cooking. Eliza Cross writes:

In a small bowl, combine the raspberry jam, raspberries, lemon juice and sugar. Mash with a fork until combined. Remove the crust from the oven and spread the raspberry filling evenly over it. Sprinkle the streusel topping evenly over the filling. Return the pan to the oven and continue baking for 20 to 25 minutes, or until the streusel topping is golden brown and the filling is hot and bubbling. Cool and cut in squares. About 24 bars.

ver the last century, dozens of Colorado’s old ghost towns have been revitalized, but few can rival Dunton Hot Springs, a tiny, late 1800’s mining camp turned posh retreat tucked away in the San Juan Mountains. Once home to nearly 300 people at its booming peak in 1905, isolation and poor transportation left the town deserted by 1918. In 1994, businessman Christoph Henkel and his wife, art dealer Katrin Bellinger, snapped up the 183-acre property with an eye on real estate development. Dunton Hot Springs HOW TO GET THERE: The journey to Dunton Hot Springs by car is both bucolic and breathtaking, with dramatic mountain views. Guests may fly into nearby Telluride (TEX), Montrose (MTJ), Cortez (CEZ) or Durango (DRO) airports and drive themselves, or get picked up by the resort’s shuttle service. Today the resort serves as a getaway for an eclectic mix of individuals, including Hollywood A-listers, blue-jeans-clad cowboys, Fortune 500 executives, roadtripping families and honeymooning couples. Twelve hand-hewn, authentic cabins filled with unique memorabilia and furnishings, along with one luxury tent, are available to rent year-round; the whole town, which can accommodate up to 44 overnight guests, may be reserved for special events or corporate retreats. Have an overwhelming urge to be spoiled? Pampering is all a part of the experience at Dunton, with sumptuous down comforters and super-soft robes at the ready, while an array of restorative treatments await you at the spa. The resident chefs whip up three mouthwatering meals each day using fresh, locallysourced meats, produce and cheeses, and will happily drive all over the Western Slope to fulfill guests’ special food and drink requests made prior to their arrival. And yet a stay at Dunton Hot Springs is the comfortable antithesis of a fivestar hotel. The staff is small (the bellman does double-duty as a waiter), meals are served family-style at a communal dining table, and the dress code is nonexistent. While the resort’s namesake hot springs are the main attraction, plenty of other diversions are available on-site and nearby, from dog-sledding to heli-skiing. But many folks are just content to curl up with a hot toddy by the fireplace in the two-story library. Mountain Memories The Telluride Historical Museum is a living link to the town’s early mining days and a fascinating repository of local lore

f the old stone walls of the building at 201 West Gregory Avenue in Telluride could talk, tales of frontier medicine would unfold. The structure that now houses the Telluride Historical Museum is a cultural heritage landmark originally built as a hospital in 1895. It has been known variously over the years as the Miner’s Hospital, Dr. Hall’s Hospital, Hadley Hospital, the American Legion Hospital and the Community Hospital. By the turn of the twentieth century, the mining boom and the arrival of the Rio Grande Southern Railroad had pushed Telluride’s prosperity and population to its peak of nearly 5,000 people, including Chinese, Swedish, Finnish, Italian, Irish, German and Cornish immigrants. Primitive sewage and sanitation facilities, along with perilous work conditions in the mines, assured that the hospital had no shortage of patients. One of Telluride’s earliest physicians was also its longest serving. For 27 years in the early 1900s, a woman, Dr. Anna Brown, tended to victims of mining accidents and responded to the many widespread disease outbreaks of the day, including cholera,

diphtheria, scarlet fever and tuberculosis. In 1918, when the Spanish Flu epidemic ruthlessly tore through Telluride and killed one in ten residents during a two-month period, the hospital overflowed and local saloons were converted into makeshift wards. The town’s population fell to fewer than 600 residents in the 1960s as mining operations declined, and the hospital closed. But in 1966 the structure was given new life as the San Miguel County Historical Museum, and it was subsequently purchased by the town. When the exterior masonry began to crumble in 1995, Telluride voters approved a $2 million, seven-year repair and renovation of the stalwart old building, now known as the Telluride Historical Museum. Today, it is again a hive of activity—of a much healthier sort—featuring ten information-packed rooms that explore different facets of the San Juan Mountain town’s colorful history (such as geology, Native American Ute culture, mining, the railroad).
