I’M NOT REALLY MUCH of a cook, but I do love a beautiful, functional kitchen. State-ofthe-art appliances, great expanses of sleek countertops, luxurious backsplash tiles—I get all tingly just thinking about it. So when my husband and I bought our most recent home, redoing the kitchen was at the top of our list. The dark, dated cabinets, chipped laminate countertops and gold appliances had to go. I didn’t think hiring a kitchen designer was necessary for the changes I wanted to make, so we went the DIY route. At first, the idea of choosing all the various parts and pieces was exciting. I tore pictures of kitchens from magazines and had a crazy notion that I’d just take my favorite part of each picture and create my very own perfect kitchen. But have you ever stood in a warehouse filled with row upon row of granite slabs with your husband and the sales guy waiting for you to choose one? And that was just the beginning. The overwhelming number of options, our lack of expertise and the pure fear of doing something irrevocably wrong...you can bet that next time I’ll call in the pros. For some truly stunning examples of what professional kitchen designers can create, turn to page 42 and enjoy page after page of brilliantly-designed kitchens. We were delightfully overwhelmed by the number of submissions we received for our Kitchen of the Year contest, so we’re spreading the love: instead of featuring just the winner, we’re including three runners-up. ALEX SEIDEL IS GETTING PLENTY of recognition these days for having his finger on the pulse of the farm-to-table food movement in Denver. And it’s no surprise; at Fruition, the restaurant he co-founded with maitre d’ Paul Attardi in early 2007, he serves up “sophisticated comfort food” (think potato-wrapped Oysters Rockefeller and grilled Bavette steak au poivre) using fresh, honest ingredients, many of them culled at Fruition Farms, his own 10-acre property in Larkspur. Last year, FOOD & WINE magazine crowned him one of the Best New Chefs of 2010. And locals approve, too: try getting a reservation at Fruition within the week, and you may have to resort to your favorite take-out instead. What may come as a surprise, though, is that this tastemaker doesn’t really buy into trends. “I think ‘farm-totable’ can sometimes be overused,” says the Wisconsin native, who despite his homeland’s farming heritage, didn’t start working the earth until two years ago when he started Fruition Farms with Josh Halder, a foodie friend who had been running his own micro-greens business (the crop grew in Seidel’s basement for a stint). Seidel’s response to the farm-to-table fanfare is part genuine humility, part apparent bemusement: “I kind of sit

At preschool, when everyone asks, ‘What’s your favorite food?’ nine times out of 10, he’ll say ‘octopus’ or ‘unagi.’ Three must-have ingredients in your pantry. Go. Salt, because I believe people would make much better food if they seasoned it; shallots, because it’s a nice, sweet component that can flavor a lot of dishes; and vinegar, because acid brightens food. If you have those three, you should be able to make anything taste good. Favorite Colorado brew? The guys at the farm brew incredible beer, and it’s probably my favorite. It’s very seasonal; they’ll use pumpkins in the fall and they’re getting ready to harvest the cherry trees to make cherry beer. And they grow their own hops. There are some great Colorado brews, but it goes back to the experience for me—if I can learn from watching the process.

back and say, ‘there are probably thousands of other restaurants in this city that ultimately get their food from farms.’ It’s whether they know which farm it comes from, or how it’s produced, that’s important.” Though Wisconsin may not have lured Seidel to the fields early in life—his upbringing was, on the contrary, urban—his interest in starting a farm was sparked by his native state’s most iconic bounty: cheese. Stirred by some of the great cheeses of the world—Manchego from Spain, Roquefort from France, Pecorino from Italy, all made from sheep’s milk—and perplexed that many Colorado restaurants were pairing the state’s famous lamb with cheese made from goat’s milk, Seidel decided to start his own sheep dairy. He is one of a very few American cheesemakers to do so: the first sheep’s milk cheese made in the US was produced as part of a research project at the University of Minnesota in 1985; today, there are only about 75 registered sheep dairies in the country. Fruition Farms was the first to stake its claim in Colorado. Though cheese may be king at Fruition Farms, it’s certainly not the only staple. In addition to making two kinds of sheep’s milk cheese—Cacio Pecora, a raw-milk cheese aged four months, and ricotta, made once weekly by the 150-pound batch—Seidel, Halder, cheesemaker Val Landrum and sous-chef-turned-shepherd Jim Warren raise sheep, chickens, and heritage-breed pigs; keep beehives and make honey; and grow vegetables (radishes, beets, mache, potatoes, heirloom tomatoes, corn). Astonishingly, it’s all self-taught. Ask Seidel how much farming experience he took to Fruition Farms, and he doesn’t mince words: “Zero.” He elaborates, “Everything we’ve done here has been learned on our own, through research and talking to people. We didn’t have anyone coming to teach us how to make cheese.” 36

...Will we ever be able to buy a pint of beer at the restaurant? I have dreams of expanding the greenhouse [at the farm] and putting in commercial and brew kitchens so we could do it legitimately. I just need someone to give me another couple hundred thousand dollars [chuckles]. Making cheese, milking sheep, tending beehives...Do you have a favorite farm activity? I think that changes all the time. I love to do it all. But currently, I like to take a bucket of food scraps from the kitchen and just watch the pigs go to town. There seems to be quite a bit of momentum surrounding the Colorado food scene. What’s your take? Even though we don’t have the same kind of farm fields as Wisconsin or California, we’re making waves with our markets and fresh food. And even though we’re a landlocked state, the caliber of chefs and the quality of food has gone up. A lot of people are trying to get me to sign up for PR, and all they keep saying is that Denver’s the place that’s being talked about.

For Seidel, it’s about understanding the food on a deeper level. “As a chef, you can cook food and be creative and change your menus seasonally, but if you don’t understand where your product comes from or how it’s produced, you’re just kind of one-dimensional.” The industrious chef spends three days working at Fruition Farms, followed by three days on the line at Fruition; he calls his venture into farming “a good tool to keep educating myself.” And his staff gets an education, too. All of the Fruition cooks go to the farm one day a week to get experience planting seeds, feeding pigs and milking sheep. “It’s an opportunity that not many cooks in this country get,” Seidel says. He’s honest about the effort and experimentation that goes into farming in Colorado. “I don’t want to sugarcoat it. We live in the Rocky Mountains, the high desert plain, and not everything grows great here.” Not to mention a lot of dirty work: “Usually when you buy potatoes, you get a box that’s been cleaned and nicely steamed,” Seidel says. “Here, we pull them right out of the ground, covered in dirt.” But with a little dirt comes a lot of freshness. The crew returning to town from the farm brings freshly harvested produce for the restaurant, and those heading in the opposite direction take food scraps from the kitchen to feed the pigs. Say you’re one of the lucky hungry to land a reservation at Fruition. You won’t find any plaques posted by the host table or bathroom—just honest, outstanding food in which plainspoken ingredients shine through—which is, for Seidel, what the restaurant biz is really about: satiating those who set foot inside. “We’re doing our thing because this is what we love to do. We love to cook, we love to make people happy,” he says. And trust us, after a satisfying meal crafted with cheese and vegetables from the farm—concluding, perhaps, with a serving of Fruition Farms Ricotta Cheesecake with Pluot-Ginger Compote—and there’s no doubt: you’ll go home happy. 38

Where It Began The homeowners of this completely reconstructed Boulder kitchen presented a tall order to designer Margie McCulloch. A kitchen and pantry that are almost the same size—one 260 square feet, the other 224 square feet—would both need to accommodate commercial-size appliances: Sub-Zero refrigerators, dishwashers, commercial beverage refrigerators, freezers, and ice makers. On top of that, they asked that the space have an Old-World feel but offer up-to-date functionality, and the materials had to be interesting, textural and top of the line.

To get the Old World look the owners craved, the cabinets were painted a Benjamin Moore Oregon Teal and distressed on site so the owner could approve the final look. Yellow-stained concrete counters add another textural touch, and old freezer handles were incorporated as hardware on the island cabinets. The elements jibe in such a way that they look charmingly old and yet refreshingly new.

Beyond the unique details, McCulloch focused on function. “My goal in designing these two similar rooms—the pantry has all the same appliances as the kitchen except for the 48-inch Wolf range—was that they didn’t both look like kitchens,” the designer says, “so I made sure the two rooms served different purposes by using the pantry’s open shelves, shallow linen drawers and chickenwire cabinets to store the majority of food and servingware.”

The stainless capped island legs add stylish support. (One of the legs is actually a pullout that holds family games.) A floor-to-ceiling tile treatment makes a striking statement, and the three-dimensional tiles from Ann Sacks give the room another layer of texture. Clean and Classic A dialed-back traditional white kitchen makes for the perfect family gathering spot

Where It Began The original kitchen was designed 15 years ago with an emphasis more on function than beauty. By the time of the remodel, it was totally dated, with older appliances, beat-up cherry cabinets and a long narrow island with a bulky exhaust hood. “The client wanted to turn the utilitarian kitchen into a warm space that would act as the epicenter for her family of four,” says Angela Otten of William Ohs Showrooms, who was hired to help revamp the space. The homeowner, who had designed several spec homes prior to this remodel, came to the table with lots of interesting ideas for making the space functional and good-looking: an under-counter refrigeration unit that the kids could easily access, plus compartments in the main island for homework and crafts. Overall, says Otten, the client wanted the kitchen to look clean and classic, yet warm and comfortable.

Pulling It Together For starters, Colorado Master Builders & Architects added several feet to the kitchen to accommodate a larger layout. Next, Otten chose integrated appliances to keep the lines and surfaces of the room clean—including a hidden pantry entrance between two refrigeration/freezer units. Finally, she designed an arched niche to highlight an etched turquoise china buffet (built new, but painted to look antique) that displays fine dishes and adds interest. The range wall is a focal point with a stone-and-pewter hood and glasspaned wall cabinets. And three islands make up the center of the kitchen, each with a different purpose: the butcher-block island for prep work, with a cutting surface and prep sink; the center island for cleanup and casual dining; the third island for extra, easy-access refrigeration.

Style Tips Otten created a traditional, timeless kitchen by avoiding what she calls “fluffy details”—such as corbels on the islands—so that “your eye goes across the entire kitchen without getting stuck on any one detail.” Thoughtful, artistic touches such as the antique-inspired turquoise hutch, which was created with a timeintensive painting and etching style, add personality and unique style to the space.

On the island, the diamond-style pattern on the doors provides interest without being fussy. “We took cabinets with a very simple style and added detailing that catches your eye only slightly,” Otten says.

Go easy on the stainless steel appliances. “To achieve a comfortable, warmer space,” says the designer, “use more wood, less metal.”

Pure Minimalism This modern kitchen makes a big impact with only a few materials BY CHERYL MEYERS

Where It Began The clients’ goal was to replace their tired, cherry-stained kitchen with a sleek, minimalist design. The original space could best be described as quirky: “The island was at an odd angle and the countertops were a dark granite material that screamed ‘1980s,’” says William Landeros, CKD, of bulthaup Denver who, with colleagues Jed MacKenzie, CKD, and Sheila

Fein took on the challenge of giving the space a much-needed facelift. “Our vision was to make sure that all of the strange details from the previous kitchen were reworked to make a cohesive, functional space without complicated angles or funny details,” Landeros says. To that end, they aimed for simplicity, clean lines and smart organization.

Pulling It Together For the layout, the design team followed the original footprint but reconfigured cabinetry and wall details to avoid all those odd angles. For the cabinet faces, they chose grey anodized aluminum with silver aluminum edges, and to continue the minimalist theme, they opted for recessed handles on all top drawers and wall cabinets and bulthaup’s handle-free Touch system for the lower cabinets. To fulfill the homeowners’ request for a maintenance-free countertop, almost-white CaesarStone called “Blizzard” was chosen. A cherry veneer bar top was added for casual gatherings with friends and family. “We selected a cherry finish so there would be some connection with the original flooring, and also a warm contrast with the gray cabinets,” Landeros says. The homeowners didn’t want an obtrusive hood in the middle of the island, says Landeros, so they went with a Wolf downdraft ventilation system, which works perfectly with the Wolf induction cooktop. But the list of stateof-the-art appliances doesn’t stop there: a Gaggenau Steam Convection Oven and a Miele coffee system and dishwasher also joined the lineup.

Style Tips Hard, linear surfaces form the bones of this kitchen, so shapely contours were brought in for balance; Landeros recommends using oval-shaped lighting to soften the overall feel of the space.

In a minimalist kitchen, it is important to use a carefully edited materials palette. “If we are using metal finishes and solid color countertops,” says MacKenzie, “we like to integrate some kind of warm material—in this case, the cherry bar top.” Another great tip for going streamlined is concealing hardware. As Landeros says, “This look is as minimal as you can get.”

Hidden Beauty A dark, inefficient kitchen lightens up and conforms to the lifestyle of avid cooks BY SALLY STICH

Where It Began This Lonetree kitchen was once filled with black cabinets and wasted corner space. Not surprisingly, the owners requested light and efficiency. Serious cooks who keep a meticulous kitchen, they also wanted to eliminate all clutter. “Their primary request was that we find a convenient way to store all their pots, pans and lids so they could be easily accessed, but of sight,� says Bill Livingston, CKD, of Kitchen Distributors. Finally, they wanted the design to revolve around a 48-inch Wolf range they already owned.

Pulling It Together A straightforward rectangular floor plan solved the problem of awkward corners. And to lighten the space, Livingston helped the family select white cabinets, a soft blue island and a large white farm sink—all cleanlined and bright without being stark. Then he gave them a copy of the floor plan and asked them to label where they wanted to store each and every pot, pan and lid. Livingston designed special drawers for the oversized pots and a separate slotted drawer for the lids—no more fumbling around for a matching set. Their love of Asian cooking inspired “garages” on either end of one counter where they can store cut vegetables that need to soak for hours. (Stainless mesh doors keep the air circulating.) A double-basin Franke sink can hold big pans on one side and a basin of soapy water on the other.

Style Tips An all-white kitchen can feel cold. Livingston’s choices of light blue for the island, as well as hints of blue in the granite and backsplash tiles, prevent things from feeling chilly. To keep the island from looking like a big rectangular chunk in the center of the kitchen, Livingston designed it wider at the ends than the middle. (It narrows by 1 1/2 inches at the center.) Not wanting the kitchen to look too traditional, the designer used contemporary hardware and faucets as well as a stainless steel hood over the range. The couple hates clutter, so Livingston designed a breakfast garage next to the refrigerator. Their coffee maker, all necessary utensils, and cereals take cover.

A Greenwood Village home with neutral interiors gets a floor-to-ceiling makeover with chic furnishings and exuberant splashes of color

LIKE SO MANY REMODELING PROJECTS, this one started with a single small idea. Homeowner Jeanette Azar thought it would be nice to have a larger window over her kitchen sink so she could enjoy looking out onto her gardens and landscaping. Since the old window had to be torn out, it seemed like an opportune time to make some other changes as well. After drawing up plans on a napkin, she had the kitchen gutted — a nd t he rest of t he main floor

followed—much to the surprise of her husband, attorney Frank Azar, who returned to the rubble after a business trip. “We have a large Sub-Zero refrigerator and freezer, but increasingly I find we’re using our double set of smaller, U-Line refrigerator drawers,” homeowner Jeanette Azar says. “Because we have fresh organic fruits and vegetables delivered each week, we keep the produce in the drawers so we can enjoy it right away.”

“We use the water faucet above the range all the time, especially since we eat so much fresh produce,” Azar says. “It’s convenient and safe for filling big pots of water to steam vegetables and cook pasta.”

A stunning, eight-foot-long island topped with a polished granite slab is the centerpiece of the kitchen. “Someone asked why I didn’t put a sink in the middle of it, but we already have a sink; why do we need another?” the homeowner says. “Besides, I love the smooth, unbroken surface.”

When the Azars entertain on the deck adjacent to the kitchen, they leave the doors open so the island can serve as a buffet. “We installed a smaller Wolf oven under the island to keep food warm, and an icemaker by the back door makes it easy to refresh drinks,” Azar says.

“I have a big cookbook collection, so I repurposed an old chicken coop (not pictured) to separate the kitchen nook and hold my cookbook collection,” Azar says. More cookbooks are accessible from a built-in bookcase at one end of the island.

Then, three years ago, she started thinking about that kitchen window. “I knew it was time to update the kitchen,” Azar says. “In the process we changed virtually every aspect of the main floor. We knocked down walls, enclosed some of the soaring ceiling space to create a new master suite, built a new staircase and added French doors.” After the space was rearranged, Azar called in Andrea Schumacher of O Interior Design to help with the rest of the remodel. “I love Andrea’s fresh, young style, and I asked her to help us make the house ‘pop,’” she says. “When I entered the home,” Schumacher says, “it was refreshing to discover such a well-designed space with all the basic elements so beautifully done, from the cabinetry Jeanette had chosen to the texture on the walls. I got to do all the fun things.” Designer and homeowner went shopping for fabrics, rugs, furniture and accessories. “She was a joy to shop with because she always insisted on the finest quality, high-end pieces,” Schumacher says. The designer describes the new, open living area as “European with a modern Colorado aesthetic.” The space is light and bright, with comfortable furnishings and accents of color throughout. And above the kitchen sink is one subtle yet important feature that Azar appreciates every day—a new, generously proportioned window.

BEFORE THERE WAS A HOME ON THIS 2.7-ACRE LOT overlooking Colorado Springs, there was an observation deck—a makeshift meeting space where architect Todd Brokaw, builder Gary Gregoire and interior designers Mickey Ackerman and Yoki Imai gathered to take it all in and plan a home that would make the most of the site. “360-degree views are a blessing and a curse,” says Ackerman, of Denver-based Amirob & Associates. “We absolutely had to capture the essence of the lot, but [the design] couldn’t be just about the views. This house was about creating a livable space for a family with kids–teenagers, no less—that feels warm and sophisticated. It was a puzzle.”

Brokaw, principal of Brokaw Architectura in the Springs, began putting the pieces together in his design for a two-level, 8,400-square-foot home. On the main level, he divided the public and private spaces along an 11-foot-tall stone wall in the great room. From there, a dramatic dining room, a small powder room and a to-die-for kitchen flow easily from one space to the next. On the other side of the wall lie a second powder room, the inviting master suite and his-and-her studies. The spaces are “kind of like pie pieces,” Ackerman says, divided so that each opens to patios outside. The lower level belongs mostly to the children. The central hub—dubbed “the command center”—is part rec room and part study space, equipped with four desks topped by computers. An exercise room, a small but marvelous wine cellar, the guest suite, and three kids’ bedrooms, each with its own bath, round out the space. The home gets high marks not just for smart space planning but also for eco-friendly features. Geothermal pumps support heating and cooling and photovoltaic panels provide energy. Brokaw used passive solar design strategies as well. “The shed roof lets in southern light in the winter, but in the summer, the deep overhangs prevent the harsh sun from entering the house,” the architect explains.

He and Ackerman chose a palette of sleek materials that fit the home’s contemporary design while warming up the space. Telluride Gold stone on select walls and warm-tone exotic woods balance steel elements, such as trusses and columns exposed on the home’s interior. Ackerman describes the palette as a mix of “coppers, paprikas, burnt orange, browns and a

little influence of golds and grays.” These color choices help root the home in its environment. A few simple tricks boost the home’s wow factor. The design team raised the entry by about 15 inches to give guests unobstructed views through the windows across the room. The tongue-and-groove cedar on the main level’s ceiling extends outside to emphasize the indoor-

outdoor harmony. And in the dining room, where the ceiling height threatened to overpower the furnishings, Ackerman designed a glamorous hand-blown glass chandelier that measures 7 1/2 by 5 1/2 feet. Then he suggested cutting an opening in the stone wall to hold some pieces from the homeowners’ art collection and help scale down the big, bold wall. The home’s magic is in such details. Sure, the views are spectacular, but as the longgone observation deck proved, views don’t make a home; that’s the job of good design.

Denver revamps its 50-year-old zoning regulations to unite big vision with minute detail

IN 2010, DENVER PASSED A SWEEPING REVISION TO ITS ZONING CODE. Years in the making, the new plan addressed virtually every piece of ground in the city’s 153 square miles. We talked to Peter Park, Denver’s Manager of Community Planning and Development, about the whys and wherefores. What was the state of zoning before the restructuring? The old regulations had become very cumbersome and unclear. So many exceptions had to be made, and special zoning created on a project-by-project basis, that businesses, homeowners and developers really had no idea what to expect or what could be built. Without clarity, development is very difficult and unnecessarily costly. So the old code had simply become outdated? Not only had it become outdated, the actual philosophy of how land should be utilized had changed. What you were allowed to build under those regulations was based primarily on the use of the land. There was no consideration of where that land was located or what was around it. Plus, that code was built entirely under the post-World War II philosophy that our cities should be demolished and rebuilt over time. That is simply not what the community wants anymore.

R e a l E s t a t e Wa t c h Tell us how you went about restructuring Denver’s zoning. Many neighborhoods had developed very sophisticated plans over the years. In addition, the city itself, along with citizens, businesses, architects, planners and developers, had developed a long-range, overarching vision for the city called Blueprint Denver. Basically, what we did was look at what those neighborhoods and constituencies wanted and we rewrote the zoning code to support those visions. What’s new in the code? Several things. First, context is now strongly considered. The way a business may build on an urban stretch of East Colfax is now treated differently than a more suburban section of East Hampden. The first wants to be close to the sidewalk to enhance the existing urban scene (think storefront shopping and sidewalk cafes), while the other needs a freestanding building with parking in front. Both are now accommodated. Perhaps most importantly, we developed form-based guidelines to replace the old use-based guidelines. The new code is very clear about how high you can build, for instance. It also provides clarity about where new structures may be sited, how parking may be handled and what the general form or shape of new buildings is to be. The old code always forced you to set structures back away from the property line, which is fine in some areas, but along the shops on West 32nd Avenue, for example, it would be out of place. There we ask you to design right up to the existing line of buildings. This is called a “build to� line and it’s a very effective way of maintaining and enhancing the urban character of these areas. The form-based standards also provide requirements for windows and building entrances along the street in order to make vital Main Streets. How does the new plan support Denver’s goals for public transit? The zoning now reflects that increased densities of dwellings and businesses are appropriate around the various FasTracks stations. Such transit-oriented development—allowing areas of higher density—limits suburban sprawl, helps lower the cost of infrastructure building and is more sustainable overall.

What is an example of a zone change in a well-known neighborhood? Cherry Creek is a good example. Under the old zoning, mostly single-family houses were allowed, but because of development pressure much of the land had been re-zoned piecemeal into specially developed areas called Planned Unit Developments (PUDs). These developments were mostly row houses, so rather than developers and builders having to apply for PUDs, we simply re-zoned most remaining areas for row houses. This recognizes what people want and streamlines the development and building process with greater predictability for both the neighborhood and developers.

How do you predict the new zoning will carry Denver into the future? Most importantly, the city will now be built in the way that citizens want it built. We now have a code in place that matches our citizens’ larger vision; it’s sustainable because it’s much better organized.

Burger-centric. Denver has played an important role in the evolution of the hamburger: the cheeseburger was officially invented here in 1935, when burger-joint entrepreneur Louis Ballast trademarked the term for his Humpty Dumpty Drive-In. Today a bevy of restaurants carry the burger torch: The Cherry Cricket elevates a staple into an epiphany, albeit a messy one. Park Burger offers a vegetarian burger that’s a persuasive argument for swearing off flesh, and Larkburger’s sushi-grade tuna burger has diverted many a fish lover to its doors. When “hot” describes more than food. Certain chefs have become as popular for their looks as their cuisine. That goes for the recently opened ChoLon Modern Asian Bistro’s chef/owner Lon Symensma, who in the not-so-distant past was a formidable contender for Eater NY’s Hottest Chef in New York award. Delicious meals for all. It’s not a pipe dream, but an actual pay-what-youcan restaurant called SAME (So All May Eat) Cafe. Founded by Brad and Libby Birky in 2006 with the intention to provide organic, high-quality food to whoever enters, diners pay—or volunteer—according to their means. Taking it to the streets. The mobile movement has hit Denver with a vengeance: from cupcakes to caviar, serving food through a truck window has gained serious cred. Track down Pinche Tacos for irresistible taco urges, Brava Pizzeria Della Strada for recurring pizza visions, or the Biscuit Bus when the winds of nostalgia blow. A new green standard. That’s the mission of Eat Greener Denver, a collaboration of independent Denver restaurants committed to reducing their collective and individual impact on the environment. The green dream team—14 restaurants and counting—targets a different aspect of wastefulness each month (September’s focus is on sustainable take-out containers). Rocky Mountain Suds. Denver brews more beer than any other US city. Between the Great American Beer Festival and Oktoberfest, September is the perfect month to wet your whistle. The Ale House at Amato’s, one of the more recent brewpubs to tap the keg, has a rooftop patio perfect for sampling their 42 beers on tap, 36 of which are brewed in Colorado. Casual without compromise. A spate of upscale restaurants is introducing more humble scions. Chef Frank Bonanno rounded out his more formal ventures with two casual spots, Marco and Bones, where succulence comes speedy and unadorned. State liquor license number one is held by Denver’s oldest restaurant, The Buckhorn Exchange, established in 1893. Feeling especially ravenous? Opt for The Big Steak, designed for peeps who abhor going home hungry. Savor the savings (discreetly). Ask Miss Manners: it’s one thing to brandish your Groupon, another to have 30 percent inconspicuously taken off your bill. The website savored.com, which just hung its virtual shingle in Denver, does exactly that, charging a $10 reservation fee, but then awarding a 30 percent discount on everything you order at participating restaurants, including cocktails. The EatDenver Deck of gift cards is no slouch in the bargain department either: for $52, it includes 52 $10 cards that can be redeemed at participating locally-owned restaurants. For extreme locavores. Farm-to-table cuisine means chefs are growing the vegetables, raising the animals, even milking the cows themselves at the restaurant farm. It may sound like “The Farmer in the Dell,” but this is highly sophisticated food: cutting out the middleman makes for ultimate freshness and puts a premium on letting the ingredients speak for themselves. Potager in Denver produces its herbs directly on the premises, and Fruition serves up produce and cheese from its own ten-acre farm in Larkspur. —Elizabeth Marglin
