Mud would be nice. The partially-built chicken coop is still standing. That’s because we are highly skilled craftsmen who know how to put pallets together to build a home for poultry. There are a handful of tennis balls stuck on the roof from where Tommy was trying to break off icicles. Just in case you were wondering ... Adam is holding an empty pewter wine glass because it is not holding any liquid. We not drink from pewter wine glasses. They sit in an opendoor jelly cabinet to make the dining room look pretty. When he’s not rolling that glass around, Adam is rolling around an antique ceramic butter churn. We use it to hold umbrellas and old tennis rackets. It makes our foyer look pretty. And adds whimsy to our home’s interior, as the magazines say. I guess that churn is an heirloom. It belonged to an old mama-auntiesomething Stafford. Sometimes the difference between an antique and an heirloom is a crack or a split. The
churn is still an heirloom. I have learned Target-brand shoes aren’t nearly as durable as the Oshkosh brand. They could certainly never be heirlooms. Adam just knocked over the dictionary stand. It made a loud noise and his screaming made an even louder noise. That heirloom just became an antique. Twas the winter of 2010. Enjoy! Yvette and Tommy Stafford

Viva Italia, La Stoppa In preparing the trip to Italy, I stumbled across the wines of La Stoppa and fell in love. La Stoppa is an ancient estate with vineyards stretching along the Trebbiola Valley, nestled just outside of Piacenza in the foodies’s paradise of Emilio Romagna. It’s a place where life and work go hand-in-hand with the river Trebbia which winds and dreams its lazy way in the distance. More than a hundred years ago, the estate’s previous owner planted French grapes with an emphasis on Bordeaux (Cabernet, Merlot, Semillon) and Burgundy (Pinot Noir). But current owners wisely added indigenous Italian varietals while keeping the international grapes and farming sustainably. La Stoppa uses natural grass cover crops, no fertilizing, weed killers or pesticides, only sulphur and copper treatments. The winery is now run by the vivacious and passionate Elena Pantaleoni who says, “I continue to use the same vines that have existed here for more than a century, without asking them to provide any more than that which they can give naturally. The wines I
have chosen to produce are those that history has delivered to me. I do not want this history altered like passing fashion; I wish my wines to live for many years, so that when selected, they can be enjoyed for their color, their taste and their bouquet.” I think Elena will have her wish…at least for now these are wines that live not only through their rich history, but through their great taste. Gutturnio, Colli Piacentini, 2007 – This blend of 60% Barbera and 40% Bonarda is a fruit bomb of a wine, but in a soft, inviting, spicy way, not in the way of the big Australia pots of jam. The balanced fruit is welcome and should come as no surprise since Barbera’s hallmark is its ripe cherry aroma, while Bonarda lays claim to blueberry notes. Drinking this wine is like eating a fantastic bar of dark chocolate. Medium-bodied. Pair with northern Italian cuisine: risotto, pasta, cheese, grilled meats and fowl. $18.99 Barbera della Stoppa,Emilia Barbera,2005 – Barbera della Stoppa takes up where Gutturnio left off. Made from 100% Barbera grapes, you might think it would lose complexity, but the reverse is true. This is a
sumptuous, elegant wine, with the cherry aromas of its varietal and lots of depth. Where the Gutturnio is fresh and fruit-forward, the Barbera has nuanced woody notes from twelve months aging in French barriques. Rich, velvety and smooth. Non-filtered. Pair with rack of lamb, Cornish game hen, grilled meats and fine cheeses. $29.99. Malvasia, 2008 – Produced from 100% Malvasia di Candia Aromatica a name which not only announces itself but speaks of the resulting aroma and palate of its final product. Honeyed, caramelized taste is perfectly blended with low alcohol and nice acidity. This is one of my favorite dessert wines, but it can just as easily be used as an aperitif or served with spicy foods. It’s a pity that so often sweet and sparkling wines are neglected unless there’s call for celebration. Perfect pairing is with crème brulée, custards and short crust pastries. In 1995, Terisa “Wren” Shoumate wrote a letter to National Geographic inquiring about a 1972 article she saw called “Easter Greetings from the Ukraine.” While most people would have expected a form letter back, thanking them for reading, Wren has no doubt in her mind that someone would answer her and she’d find out how to make the traditional Ukranian painted eggs. “I was very trusting that they would write back,” she said. And write back they did. “They were very encouraging in what they said.” Someone over at National Geographic wrote back to then 15-year-old Wren about The Ukranian Gift Store which is still up and running in Minnesota. Again, certain of getting a response, she wrote to them and sure enough they sent her a catalog – there was no e-mail or online purchasing back then, at least not for Wren.
pretty impressed with her work. And then she read a note that said for people who live in warmer climates, it was probably better to hollow out the egg so it didn’t spoil. While in the Ukraine, where temperatures rarely get above 70˚F, warm weather is not a big problem. But for the Florida teenager who was decorating eggs during summer vacation, things could have gotten pretty bad pretty fast, so she decided to hollow out the egg. “I carefully put a hole in each end and it went well,” remembered Wren. “I was blowing carefully but it wasn’t working very well so I blew a little harder and the whole egg exploded in my face. All that work I did came to nothing.” But Wren wasn’t discouraged – she just hollows
The first thing she ordered was a simple egg decorating kit. The kit said there was no need to hollow out the egg so she got right into decorating. The whole process went pretty well and Wren was
the eggs out before she decorates them now, 15 years later. And instead of blowing on the eggs, she uses a bulb syringe to do the huffing and puffing for her.

And what does she do with all those shell-less eggs? “I have a lot of omelets,” she said. She especially likes veggie and cheese omelets, heavy on the mushrooms, but a girl can only eat so many eggs. Wren also uses the eggs to tan deer hides. Wren, an artist of all kinds who has a workshop at the Rockfish Valley Community Center and whose face greats customer behind the counter at The Java Depot, said that the process of coloring the eggs is not really painting, but is instead a process of drawing on the eggs with wax using a tool called a kistka and bathing the eggs in various colored dyes. It’s called a wax resist process. So as Wren decorates the eggs, they get more and more covered in wax until at the end, the whole egg is waxed. Then she melts the wax using a candle and the egg in all its glory is uncovered. That’s her favorite part. Though she’s been decorating eggs since she was a teenager, Wren just recently discovered the traditions behind the decorating and it’s only made her more interested. “They’re actually used as a blessing for people or animals or for the fields,” she explained. “Each egg can tell a story through the symbols and the colors. It’s a visual language.” NCL
Working at her studio in the Rockfish Valley Community Center, Terisa “Wren� Shoumate applies a different pattern of wax with the kistka after the first layer of yellow dye has been applied to the egg. Wren then dips the eggs in increasingly darker dyes throughout the process of making the Ukrainian style decorated eggs (opposite). After all the layers of dye have been applied, Wren applies heat from a candle flame to the egg in order to melt off the wax. After the egg appears shiny she gently wipes the wax from the egg with a rag. This process is called a wax resist technique.

What a great question! Before I answer it, please let me introduce myself. My name is Darin Martin, and I am a lifelong resident of Central Virginia, and a local business owner. Having said that , I truly understand why people move to Nelson County, and never leave. It is a place that is rich in history, culturally diverse, relatively small, and of course the natural beauty. Ah yes, the majestic views of the Blue Ridge, the spring flowers, the plush greens of summer, and the lovely golds, oranges, and crimsons of Autumn. Most people I know, including myself want to enjoy our natural surroundings as much as possible. We hike, bike, take walks, Sunday drives, and play golf. Another trend I have noticed over the years is that we want to enjoy all of those splendors even when we don’t have time to be active or just want to relax. One way this has been accomplished is by adding more, and larger windows to our homes. The upsides to doing this are obvious. We receive much more natural light, and of course those views! Unfortunately, everything has a downside. We didn’t consider how much heat enters our home through the glass. Then there’s that awful fading. Who knew that the sun destroyed everything so fast. Now are floors, furniture, carpet, and artwork are a different color. This brings us back to the original question. What can I do? Since blinds and curtains only work when they are closed, they block our wonderful views, and they eliminate our natural light. They also are difficult to clean, have to be replaced or repaired periodically, and don’t work well on reducing the heat that passes through our windows. The recession has changed how Americans view housing. Whether being forced to make a change through foreclosures and short sales, or just opting to change with the economy, many American households are downsizing and choosing smarter not bigger. “Smart, Sustainable Luxury” is the new trend as home owners downsize without necessarily skimping on luxury. According to consumer experts at the International Builders Show, here are some of the most popular features that home purchasers would rather NOT live without:
r Large kitchens, with an island; the kitchen is still king. If you’re going to spend design dollars, spend them in the kitchen. Bill McDonald, the Nelson County School Resource Officer, spent one recent Wednesday in an empty building looking for narcotics with his K-9, Nicodemus. And, although it wasn’t a real drug bust, Nicodemus was successful. Officer McDonald and Nicodemus were just practicing that day. They’re both members of the Blue Ridge Police K-9 Association, a group of police officers and their K-9 partners who train all day every other Wednesday. The association was formed about five years ago to help train the dogs and their handlers. “It just sort of formed out of a necessity for area K-9 handlers to train together,” said City of Charlottesville K-9 Officer and Handler Lynn Childers. “Most departments have only one or maybe two dogs and the training you need to do, you need other people to help you.” Officer Childers said that the 16 hours a month the association trains is really only the minimum that
police dogs should be training and that most of the dogs, including her K-9 Brett, get training at home daily. “A dog needs constant repetition and constant reminders to stay good at what he does,” she said. “There’s a lot of things you can do by yourself, but the group really fills the gap with doing more advanced skills.” Brett, an 8-year-old German Shepherd, is considered a crosstrained K-9 who does both full police work of tracking and apprehending people and searching for drugs. Nicodemus and Officer McDonald, on the other hand, focus mainly on narcotics, something Officer McDonald says has been extremely helpful to him as a school resource officer. “I think the school credits [Nicodemus] with keeping drugs out of the school by a large margin,” he said. around the school, it prevents some students from bringing narcotics to class. Likewise, Officer Childers says that by having Brett at her side, suspects are quite often more likely to cooperate. “Just showing up on a chaotic scene… with a dog really makes a difference in the outcome,” she said. “[Suspects] don’t seem to be as concerned with officers pointing rifles at them as they do with dogs.” For years, the group has been open to any local police departments with K-9 components, but recently it has attracted some new members. Helene Dodge and her yellow Labrador retriever, Orso, were invited to be part of the association. Orso, a search and rescue dog, specializes in live wilderness searches and human remains detection. “This is kind of a different end of the spectrum,” said Dodge. “But they have a really great trainer and he will help me kind of move my dog along and help with some
of the weak spots he has in his searching.” While the officers really do learn from each other, they have some professional help, too. That trainer Dodge mentioned is Armin Winkler who has been training dogs since he was a kid and is now a professional trainer who lives here in Central Virginia. After meeting with the Blue Ridge Police K-9 Association to help with a dog having training trouble and then teaching an annual in-service course for K-9 Handlers, Winkler has become a mainstay in the training program. “All dog training, especially in law enforcement, is what a dog naturally likes to do,” he said. “Like he’s hunting a rabbit.” The trick is just getting them to do it on command. “What we do in training is we manipulate the dog to believe that a make-believe rabbit smells like narcotics,” said Winkler. “We give him replacement prey.” NCL

Did you see Matthew McDaniel traveling north along US 29 in Lovingston around Valentine’s Day weekend? If you did, you’d know it. He was riding his horse, Hampton, through town on his way to Washington D.C. From Oregon. Yes, Matthew McDaniel is taking a horse back trip across the country for the second time in his life. While the first time was just for fun, Matthew is riding for a cause this time – the Akha Hill Tribe of Thailand. Matthew’s been in Thailand working with human rights since 1991. Originally from the U.S., he came back a few years ago with his wife (who is Akha) and their kids. And then he decided to ride across the country. The family stays in a bus while Matthew rides about 20 miles a day. Then he gets a ride back to the bus and they stay there for the night. Matthew and Hampton have been going pretty far for just three planned pickets, or protests. One at the Thai Consult in Los Angeles, one at the Thai Embassy in D.C. and the last at the Thai Mission in New York. “It’s a lot of riding for three days,” said Matthew, but he doesn’t mind. “Three strategic days.” But while he was here, he had a pretty good time. “Everyone in Virginia is super friendly,” he said. Spring Thaw Feeding With a thick blanket of snow on the ground, it is a natural for many of us to think about wildlife, in particular birds, and the many issues that they have locating a food source. However, with the spring thaw just around the corner (hopefully!), many people don’t understand that we need to remember to continue to fill those containers into the early spring months. Many birds are just finishing a long journey migrating in from other areas and food is still scarce and not as accessible as it will be later in the spring. Food availability, along with prime nesting spots, is the difference between them wanting to build a nest in your landscape versus continuing on to other areas where food is more prevalent. To keep it simple can hang a few tube feeders full of black oil sunflower seed at different intervals around your yard and attract a variety of birds. But if you want to get serious about your birds here are several tips: The lowest feeding level is the ground (obviously) or a flat surface and attracts birds like sparrows, red-winged blackbirds and dove. This group typically is attracted to sunflower seed (both black oil and white stripped), cracked corn and millet. When using cracked corn, time your feedings so that minimal is used each time as it will rot rather quickly since it has no hard covering protecting the seed. Be wary of evergreens or structures near the feeding site since this can be a prime ambush site for cats and other predators. The next level, usually around 4-6 feet from the ground, is best suited for finches, bluebirds and cardinals. The feeders used here are the hopper or tube feeders. This group is readily attracted to black oil sunflowers and thistle. Since the feeder is off the ground, it is less of an issue to worry about cover for predators. Nevertheless, I still try to keep them out in the open so that if the bird drops down for
a quick meal on the ground he does not subsequently become a quick meal! The highest level of feeder, 6 feet or higher, is mostly for the chickadees and woodpeckers. They prefer suet in this early season and, since the feeder can be high, really don’t have to worry too much about predation. It is best not to feed suet once weather really begins to heat up since the suet can melt and damage natural waterproofing on bird feathers. I have found best success locating the feeders about 30 feet or so from each other and typically in an area that is a bit protected from the western winter winds (if possible). Spreading the feeders out helps to not only attract more birds but to also prevent the spread of diseases and parasites since the birds themselves are more spread out. These feeding areas should also not be located too close to a natural (evergreen tree) or man-made nesting site since overcrowding in these areas either leads to nest abandonment or even, in some cases, predation from one species to the other. Remember, bluebirds, my personal favorite, like their nesting sites to be about 4-6 feet from the ground in an open area with a 1.5 inch entrance, without a perch, facing east. As if feeding was not enough, it is recommended that you clean your feeder at least one time per month to prevent the spread of diseases and parasites. The best home remedy involves soaking your feeder in a 9 to 1, water-bleach solution for 10 minutes or so and then rinsing it – thoroughly. This will also get rid of parasites and diseases as well as old seed hulls and decaying seed that got stuck in the bottom of the feeder during the season. Finally, enjoy watching your feathered, insect eating friends. To the organic gardener, active wildlife around the garden is crucial to maintaining insect populations at acceptable levels. asktheDr. By Dr. Charles Cole Afton Family Medicine Dear Dr. Cole, I am confused about my cholesterol blood test. What do all the different results mean? Cholesterol results can be confusing. Cholesterol is a soft waxy substance that is needed to produce cell walls and certain hormones. Too much cholesterol, however, is a major risk factor for the development of heart disease and stroke. Cholesterol comes from 2 sources – your body and your food. It is transported to cells by molecules called lipoproteins – mainly LDL (low density lipoprotein), and HDL (high density lipoprotein.) Simply speaking HDL is good and LDL is bad. Our bodies make LDL cholesterol but some people create too much of it because of their genes. Eating too much cholesterol or fat can also lead to increased levels of LDL. When too much LDL cholesterol circulates in the blood, it can build up in the walls of arteries in the heart and brain. Now, you can’t choose your parents but you can control how much fat and cholesterol you eat! HDL cholesterol is good because
high levels of it decrease your risk of developing heart attacks. On the other hand, low levels of HDL increase your risk of heart disease. Regular exercise, not smoking and eating healthy foods can raise your HDL cholesterol. You may also see very low density lipoproteins (VLDL) and triglycerides reported on your lab results. VLDL can be thought of like LDL, it is bad and low levels are desired. Triglycerides are another type of fat. Elevated triglycerides can be due to being overweight, physically inactive, smoking cigarettes, consuming too much alcohol or carbohydrates. If you do not know your cholesterol levels you should see your doctor to have your blood checked. You should also talk to your doctor to determine where your cholesterol levels should be and see if any treatment is appropriate for your cholesterol. Share the Load After the snowiest winter Virginia has seen in years and the weather becomes milder, I have a strong desire to be outdoors without the parka. Walking outdoors is not only therapeutic but it is also great exercise. As you find your way outside, consider adding a new piece of equipment to your exercise toolbox. Trekking poles. Often thought of for hiking, it is more common to see walkers using trekking poles. There are only benefits and there is no downside (well, perhaps the cost). Using trekking poles while you walk decreases the stress on your joints: particularly your knees, hips and low back. It increases your heart rate as you are utilizing your arms and your whole body. Interestingly, it does not increase your perceived exertion (your perceived effort of the exercise). A study conducted at James Madison University found that when individuals walked with trekking poles, they expended 10% more calories (about 50 more calories an hour) without the feeling that they
were working any harder. Thus, folks could walk longer or farther and perhaps more frequently with less joint pain and less feelings of fatique. It could also be helpful for those who are beginning an exercise program who may get tired easily. Most trekking poles are adjustable making it easy to fit them for your height. They are also quite light in weight so it is not a burden to use them. It takes a bit of coordination when you first start using them, but with practice you eventually develop a rhythm as you walk. It is especially helpful when descending hills to assist with balance. So, share the load and decrease stress and pain on your joints while increasing your caloric expenditure. Have fun with it! Barbers have come a long way since “Shave and a haircut, two bits,� but most men will tell you, that’s no reason to get your hair cut at a beauty salon. Especially now that there’s a real, live barber right in Nellysford. Lydia Holsapple has been a cosmetologist for 17 years now, but just started doing men’s hair two years ago. “My license says ‘cosmetology and barber,’ but until you’re trained by a barber, you’re not a barber,� she said. “It’s totally different, it really is.� Lydia spent one year training with a barber in Waynesboro before she opened up The Barber Shop right near Grave’s Grocery in Nellysford in September. “That side of the county really needed a barber shop,� she said. “There’s a bunch of salons every-

where, but I think men prefer to go to a barber shop. It’s an atmosphere that men prefer. Men come and talk about huntin’ and fishin. It’s men talking to men. And they don’t have to smell chemical solution and fingernail acrylic. I don’t even have women’s magazines.� If asked, Lydia will do a woman’s haircut. In fact, she cuts her own hair and everyone’s in her family including her son and two daughters. But, she does prefer working with men. “A lot of times, they get in my chair and say, ‘I don’t care what it’s going to look like, I’m gonna wear a hat anyway.’ You won’t a hear a woman say that,� said Lydia. Going to The Barber Shop is a little bit like stepping back in time,
though you still won’t get your haircut for two bits (no, a haircut is $12). For starters, Lydia bought an antique barber’s chair that was built in 1947. It even has a headrest so she can do straight razor shaves, which she will do for only $7. And don’t forget about the bona-fide barber pole out front. “It kind of reminds you of something you’d see on the Andy Griffith Show,� said Lydia. Lydia’s dad helped her put in the barber shop that has just the one work station. Lydia works by herself all day every day, but enjoys the company of her customers – some of whom come in twice a week for a nice shave. One of her frequent customer’s is Frank “Big Foot� Napier who got his hair cut
with Lydia in Waynesboro before she opened up the Nellysford shop. Many of Lydia’s clients used to drive pretty far to get their hair cuts done by barbers, as opposed to going to a salon. “So many man have told me, ‘I am so glad you’re here because now I don’t have to drive to Waynesboro or Charlottesville,’� Lydia said. While business took a little while to build up, Lydia’s haircuts – which include a hot lather straight razor shave on the back of the neck every time – are gaining in popularity. She said that in just two snowy weeks in February, she had 27 new customers. And it’s not like haircuts are going out of style. NCL
