I feel like I am betraying my age if I talk too much about the weather, but this winter has been too warm. While I don’t look forward to the crush of season, I wait all year for the 70 degree days and the possibility of needing to pull on a sweater one chilly evening. But I am remaining optimistic that temperatures soon will fall under 80. Which will be the perfect time to take your kids to one of the many outdoor playgrounds in Southwest Florida. As part of our year-long 20th anniversary celebration, we are bringing you “20 in 2020”. For March, we’ve given you “20 Places to Play in 2020”. On pages 18-19, you will find our list of 20 local playgrounds, including the new Baker Park. If you have been yet, it is well worth a visit. You can stroll along the beautiful trails along Gordon River, fish off of the docks, watch your kids run across the wide expanse of green grass, or just play on the new playground equipment. March also means St. Patrick’s Day and spring break. We’ve provided all of the important details on where you can be Irish for the day in SWFL on page 35, along with suggestions of places to visit to continue your celebration of Irishness all year long on page 36. Our spring break coverage this year focuses on those of you with high school students who are starting to plan for college. Beginning on page 20, your questions about the ACT and SAT have been answered, and you can find out what your 11th grader should be doing now in the college planning process. Books for Collier Kids Expanding Program to 3-Year-Old Children

ooks for Collier Kids (BCK), a local nonprofit organization that provides new books to children in low-income families in Collier County, is expanding its reach ensure that children as young as 3 years old have access to new books. Each year BCK distributes 100,000 books to more than

8,000 boys and girls. This number will increase in 2020, as BCK plans to give at least three titles annually to 3-year-old children at Grace Place, Guadalupe Center, Fun Time Early Childhood Academy, and through Collier County Public Schools’ prekindergarten registration sites. Collier County Public Schools ‘Model’ United Nations

W

e are told not to discuss it at the dinner table. It’s been known to bring about heated disagreements. Yet, politics and the discussion and debate of such can be very valuable. Just ask any high school student who participates in Model United Nations (MUN). MUN is a simulation of the United Nations where students are assigned a country, committee, and topics in which they will debate throughout the course of a weekend. It teaches students how to research complex topics with great depth, and represent the interests of an entire country. Skylar Fry, a senior at Gulf Coast High School, enjoys the opportunity to really understand the world. “From learning foreign policy to compromising with those who may have different agendas or perspectives, this club has truly opened my eyes to our world and allowed me to have a hand in solving some of the most pressing issues.” Participants in MUN conferences, known as delegates, are occasionally assigned other organizations or political figures. That is where things get interesting. At this year’s Ivy League Model United Nations Conference (ILMUNC), another Gulf Coast senior, Jenia Browne, was chosen to represent British politician Dominic Raab. “It was definitely the most challenging room I’ve been in, mostly because it was a far more realistic view of politics, lobbying included,” explained Browne. “I definitely learned a lot about foreign affairs and European politics.” Gulf Coast’s Model United Nations (GCMUN) has seen a tremendous amount of success nationally. It has earned the Outstanding Delegation Award (second place overall) at the international ILMUNC, one of the largest and most prestigious conferences held for high 12

school MUN. The team also received Best Large Delegation (first place overall) at both Georgia Tech’s MUN competition and Gator MUN, which is held at the University of Florida. And another outstanding accolade – they’ve brought home the Burdell Cup four years in a row from Georgia Tech. “These students have turned our team into a national powerhouse,” said Sue Soulard, coach of GCMUN. “They are impressive!” Soulard’s former students now run MUN competitions at Georgetown University, West Point, and the University of Florida. She also has students who now work in the U.S. Department of State. For schools like Immokalee High School (IHS), MUN is just ramping up. Coach Diana McGowen revived the club five years ago after it was disbanded due to lack of interest. Her hope is for her students to gain friendships with people they never would have met otherwise and to obtain knowledge about the world and

the conflicts that embroil it. “I participated in MUN in high school and college. It was a very rewarding experience that taught me a lot about how different countries interact with each other,” McGowen said. Miffordens Registre, a senior at IHS, was recruited by a friend his sophomore year and slowly fell in love with the craft of public speaking. “I enjoy compromising with other countries for a global solution to impact the world for generations to come.” In his last competition, he represented Italy on its Counterterrorism Committee. IHS senior Alejandro Ligas-Villagomez has enjoyed the people he has met along the way and the problems they aim to solve. “I enjoy imagining we’re really fixing the world. If students get involved in things such as MUN and learn how to utilize what they’ve learned, the world ahead would be in for an enormously great impact.” NEAPOLITANfamily • March 2020

How to Pick the Right Pediatrician

I

t might sound silly, but is the pediatrician a pediatrician? Nowadays, many kinds of healthcare providers can be found caring for children. Family practice physicians, nurse practitioners, and physician assistants can all be certified to treat kids. Ultimately, these different healthcare providers can be as experienced and caring as pediatricians, but it’s important to educate yourself, as a parent, regarding the differences among them. Pediatricians are, after all, kid experts. They are the most extensively trained healthcare providers who take care of children. 1. How many patients does the pediatrician see in a normal day? It’s important to choose a pediatrician who will give your child the time and attention needed for acceptable medical care, and it’s reasonable to be wary of a pediatrician who doesn’t seem to have time to address all your concerns in an unhurried manner. Bedside manner and time for questions are clues as to how much time and diligence a pediatrician will give your family. Also, asking about the availability of same-day appointments will give you a clue as to a particular office’s ability to get you in, in the case of a sudden illness. 2. Does the pediatrician return phone calls personally? If a pediatrician is extremely busy, there won’t be time to return phone calls during the workday. Most pediatric offices screen parent calls through a nurse or assistant to determine if a patient visit or other

treatment is recommended. However, it is a reasonable expectation that a pediatrician speak directly with the parent on the phone in certain circumstances. Every day, healthcare is centering more on the patient experience. This means staff should be considering customer service, in this case, the parents! Ask your potential pediatrician if he or she is willing and able to get on the phone to answer your questions in a timely manner. 3. What feeling does the pediatrician give you? As mentioned above, healthcare is revolving around the patient experience. Things like how the staff treats patients, how the doctor deals with patients, and customer service are big considerations. This is even more important for pediatricians, as we need to make sure that not only our patients are taken care of but also that their parents are satisfied. Phone etiquette, the etiquette of office staff, and the availability of same-day appointments all are important for patient satisfaction as well. Ask a pediatrician about “the patient experience” or “patient satisfaction”. The answer should be very telling and go a long way toward choosing the right pediatrician. DR. The newest public park in our area, Baker Park, opened to rave reviews in late 2019. Your Top ACT/SAT Questions Answered by an Expert

I

receive a lot of questions regarding the ACT and SAT tests: what they are, when best to take them, what it means for college admissions. While some schools are moving away from using standardized test scores for college admission, for most schools it is a big part of the college admission application. Not only is admissions connected to your score, but often times scholarships as well. A few extra points here and there can make a big difference. For this article, I am not going to into the philosophy of the test and all the arguments for or against. The thing you should know is that they are necessary for most four-year universities. Two-year state or community colleges also will use it, but may have other tests you can take such as the Postsecondary Education Readiness Test (PERT). Here are some basic questions I hear frequently. 1. Should I take one of these tests? Consider the path that you’re planning after high school to determine if you should take the ACT or SAT. While it may not be a requirement, depending on the school you’re attending, consider taking the long-term view when making the decision. You may be planning to attend a school or program that doesn’t require the ACT or SAT (some schools are even test optional), but your plans may change down the road and taking the tests in high school will be much easier than later in life. 2. What’s the difference between the ACT and the SAT tests? While the ACT and SAT are both standardized tests that can help you get into college, they do differ a bit from each other. The ACT is focused on achievement, measuring the bigger picture of what you’ve learned in school, while the SAT measures aptitude, testing your reasoning skills and verbal abilities. Check out the Princeton Review for more information on the two tests and their differences. My suggestion is to take both tests early on, see how those scores compare against what you need for the colleges you are

considering, and then take the “better” score test again after more preparation. Unlike decades ago, universities have no preference on which test you take; they care about your highest score. 3. How do I prepare for the ACT/SAT? There are a number of different ways to prepare. Your school may offer test prep courses, and going private can often be extremely costly. This is one of the issues people have with the test. There are several good websites out there that can give you diagnostic tests, flashcards, practice tests, and overall guidance. Be careful of private tutors; make sure they are legitimate. Just because they charge a lot does not mean they are good or can get you results. On the other hand, there are certain strategies students can learn to be able to do better on the test. Knowing what the test makers are seeking for answers and shoring up some academic weaknesses could prove beneficial for students. Private tutors or computer programs often can help in this area. One suggestion is to take the test first and see how your student does as a baseline. On the second attempt have your child study on their own using some outside resources (online, book, at school, etc). If their scores are still not where they need to be, then on the third attempt consider some private, specialized tutoring to gain a few more points. 4. When should I take the test for the first time? Typically, students will take the ACT or SAT no later than spring of their 11th grade year. This is to strengthen your math, reading, and writing. However, some students start earlier to begin practicing, and sometimes it is needed for certain high school programs like dual enrollment. 5. How many times can I take the test? It’s generally advised to take the test no more than three times, to avoid raising red flags with admissions counselors. Prepare for the test as though you’re

Many seniors use this as their last testing time for college admissions. Most colleges have a priority deadline of November 1st. Admissions

only going to take it one time, and do your best. If you’re not satisfied with your score, you can take it again. 6. What is the cost for the ACT and SAT tests? There are several price ranges: one includes the full test with the writing portion. I highly suggest you do both. There also is a late fee registration if you miss the regular deadline. ACT: $39.50; ACT with writing: $56.50; SAT: $43; SAT with essay: $54.40; SAT subject tests: $26 (to be taken if specific programs ask for it). If you qualify for free or reduced lunch, there are waivers for both tests. You may use two waivers. You will need to see your high school guidance counselor for this waiver. You also are entitled to waived application fees at some colleges and universities, so be sure to ask. 7. Should I send my scores directly to the college/university I am considering? It will ask you in the beginning part of the two

tests if you want to send your scores to a college/university of your choice. At this point, it is free. However, you do not know how you will score, especially if it is your first time. My suggestion is to not send your scores the first time; after you feel more confident, and know approximately what you might get, then I would send it using the free service. If you decide not to do so, and send it later, you will have to pay. It’s $12 for ACT for each school, and the SAT is $11.25. 8. How do I sign up? ACT: actstudent.org, SAT: collegeboard. org. You will need your six digit school code. You select which date you want to take it and at which high school. I hope this helps provide some basic background information on these tests. As a reminder, the ACT and SAT are just one aspect of your college admission; your recalculated GPA, courses taken, extracurriculars, and overall school success play a big part.

College Planning for Juniors

I

f you have not already begun, it is time to get started! Juniors who begin planning for college now will give themselves a few extra months to prepare quality applications and find better fit schools. Unfortunately, many students delay planning until the summer before senior year and end up squeezing months of work into just a few weeks before they submit their applications, which often are sub-par. Here are a few things to work on over the next few months to help you prepare to apply for college before you begin senior year.

throughout high school. Include activities both inside and outside of school, as well as jobs, hobbies, and awards. Write quality descriptions of the activities and your role in the organizations. Doing this now will give you a better picture of what may be missing. While it is not a good idea to suddenly add lots of new activities or clubs, you still have time to increase your involvement in what you currently do and add things that complement it. Writing your resume now also will make the process of completing your application later much simpler.

College search Begin researching colleges online and thinking about the qualities you want in your future school. Often, students do not know what they want until they actually set foot on a few campuses. Planning now allows you plenty of time to do some visits this spring while the semester is in full swing and you can get a feel for student life on campus. Use your breaks and weekends to do some campus visits. If you are unable to visit, do your best to research online and connect with past or current students to get more information.

Testing SAT and ACT test dates are right around the corner. You should allow yourself 4-6 weeks to prepare for the tests and by taking them this spring, you will have time to get your scores, work on your areas of weakness, and retake them before you have to submit your applications. Also, taking these tests before the end of your junior year will give you an idea of where you stand and what level of schools you should consider your targets, safeties, and reaches. Students who end up taking the tests in the fall of their senior year face the added stress of having to worry about getting the new scores added to their applications and making sure they arrive in time to be considered.

Essays The Common Application recently announced that the essay prompts for the 2020-21 application year will remain unchanged from the past year. This means you have plenty of time to brainstorm and write your best essay. Schools that require other essays may not announce the prompts until later in the summer, but you can get this one out of the way early and often times it can be re-used for schools that do not use the Common Application. Take the time to write several drafts and review for grammar and content improvements. Career exploration A very important part of college planning is figuring out what you want to study. While you may change your mind several times throughout the next few years, you can do some exploration now to get on the right path. Organize job shadows, internships, and/or summer exploration programs to help you dig a little deeper into potential careers and college majors. Do not be afraid to ask family and connections for help with organizing these opportunities. These do not need to be long-term commitments – even if it is only for a few hours or days, that may be all that is needed to help you eliminate or solidify your interest in a potential major or career. Destination: Get Your Irish On!

Finn McCool and the Giant’s Causeway So here’s what happened. Once upon a time long, long ago, a troublemaking giant from Scotland named Bennandonnar decided to stomp his way south through the Irish Sea and take over Ireland. Which didn’t sit well with Irish giant Fionn MacCumhaill (Finn McCool for short). He threw massive boulders into the sea facing Scotland, creating a bridge that he could stride across and take the enemy down. Much drama and trickery ensued 36

in the best fairy tale fashion, but eventually Bennandonnar retreats to Scotland in defeat, furiously tearing up the causeway as he goes. Today, the four mile-long Giant’s Causeway in Northern Ireland is a super-mc-cool place to visit, with its surreal formations of 40,000 basalt rock columns and giant flat stones dubbed Giant’s Eyes. The Causeway Coastal Route is an eco-adventurer’s dream, meandering through marshes, along beaches, past castles and through picturesque seaside towns. And, of course, Game of Thrones country is all around. But if you crave more Irish than a day of green beer and marching bands, why not dig a bit deeper into the Irish tradition: meet some other real and mythical characters, and make a summer vacation of it? heroic creature is said to have charged down from the mountaintop to warn the villagers that Oliver Cromwell’s murderous army was coming. Now, each year, Old Puck (or one of his most worthy descendants) is captured and escorted into town for a three-day fair, which includes horse and cattle shows, flea markets, ceiligh music, Irish dance workshops, wild geese shenanigans, stilt walkers and strongmen, a parade, and of course, the goat-crowning ceremony. Weekend or not, the festival is held every August 10, 11, and 12. Afterward, King Puck is released back into the wild. Cape Cod Irish Village Okay, South Yarmouth isn’t as over-the-top Irish as Boston (America’s biggest Irish heritage city) or Scituate, just up the coast (where over 60% of the population claims Irish ancestors!), but at the Cape Cod Irish Village Inn you can chow down on some corned beef and cabbage or shepherd’s pie in the dining room, have a pint in the pub, or do some impromptu Irish dancing year-round. South Yarmouth is centrally located on the cape, close to everything from salt marshes and giant sand dunes to lighthouses and cranberry bogs, endless bike paths, and whale-watching experiences. World’s Largest Celtic Music & Culture Festival If you guessed that the location is Milwaukee, Wisconsin, you’d be right! Tame Spring Allergies by Allergy Proofing Your Home

T

he flowers are blooming, birds are singing, the sun is shining … and the kids are sneezing. For children with seasonal allergies, warm spring breezes bring pollen, causing itchy, watery eyes, sneezing, and runny noses. If you suspect your child suffers from seasonal allergies (also called hay fever or seasonal allergic rhinitis) first visit your pediatrician for a diagnosis and medical recommendations. In the meantime, although you can’t control the pollen count, you can control some of the allergens in your home with these tips. Keep that pollen outside where it belongs! On spring days, kids are more likely to spend time outside. Taking a before-bedtime shower or bath can wash pollen out of the hair. This keeps pollen and other allergens from falling on the pillowcase and being breathed in during sleep. Pollen counts are highest in the evening. Consider taking playtime indoors on evenings when that pollen count climbs – or change into clean clothes after being outdoors to avoid spreading pollen around the house. Grass is a common allergic trigger. Keep kids with allergies inside with doors and windows closed while the lawn is being 38

mowed. Then, stay inside until the grass settles. If itchy eyes are a problem, wearing a wide brimmed hat and/ or sunglasses can help shield the eyes from pollen. Allergen-proof the bedroom One-third of every 24 hours are spent sleeping – more for younger kids! Because of this, it makes sense that controlling allergens in the bedroom can have a big impact on your child’s symptoms. Dust contains all sorts of allergens including mold, pollen, and dust mites. Dust mites are microscopic bugs that are found on every continent except Antarctica. They live in even the cleanest of homes and according to the Allergy and Asthma Foundation of America, they may be the most common trigger of year-round allergies and asthma. By controlling dust and dust mites in the bedroom, you can reduce exposure. Start with the bed. Mattresses and box springs are a haven for dust and dust mites. Since you can’t wash these, encasing your mattress and box spring in dust-proof or allergen-impermeable covers traps dust and mites inside. Plastic and vinyl covers are least expensive and work well for kids still potty training – but NEAPOLITANfamily • March 2020


some find sleeping on plastic uncomfortable. Find allergen covers online and at most big box stores. Another good resources for all products allergy related is AllergyStore.com. Once you have the mattress and box spring covered, turn your attention to the bedclothes and pillows. To kill dust mites, bedding must be washed weekly in water that is at least 130 degrees Fahrenheit. Many homes with small children have the hot water heater set below this temperature to prevent scalding. If your water heater is set lower than 130, you can wash bed clothes at a commercial establishment or use an additive in the wash that kills dust mites. Remember, you will need to wash pillows weekly as well. Or to make it easier, encase pillows in allergen covers; then you only need to wash the pillow cases. These allergen pillow covers come in many forms: cotton, polyester, and even vinyl. Most allergy sufferers feel that the cotton covers are most comfortable. Dust and vacuum regularly, but do it early in the day so that any remaining dust has time to settle before bedtime. Always use a damp cloth to dust; using a dry cloth or feather duster stirs up more dust. If you have wall-to-wall carpet, make sure your vacuum has a HEPA filter, which keeps what is sucked up in the vacuum from getting into the air. Consider an air filter. There are many of these on the market at reasonable prices. You can use a free standing filter for small areas such as a bedroom or add a HEPA filter to your central heating or air conditioning unit. An air filter doesn’t help as much as frequent cleaning, however. Close windows at night. Keep the allergens where they belong – outside. If you have fur babies, try to keep them out of the allergic person’s bedroom. Even if your child isn’t allergic to dogs or cats, fur can trap pollen and bring it into the sleeping space. You and your child can still enjoy the outdoors by controlling the home environment and leaving that pollen outside where it belongs. 8 Don’t Sweat it Tips for New Parents

H

aving a baby is one of the most exciting and anticipated moments in a parent’s life. You have prepared the nursery, installed the car seat, read parenting books, and it’s time to bring your baby home and start life with a new family member. While having a new baby is a fun and exciting time, it also can be exhausting and overwhelming. Adjusting to having an infant at home takes time and there are several things you don’t need to sweat as you figure out your new normal. Here is a list of eight things that aren’t worth stressing over while you enjoy time with your new baby.

You also can ask friends to set up a meal train where family and friends bring dinner during the first few days after the birth of your baby. This will eliminate the need to shop and cook when you are recovering.

1. Housework It’s nice to have a house that is neat and clean but the thing about housework is that it never goes away. Once you get the house clean, it’s messy again. While you enjoy your new baby, try to let some of the cleaning go. Do the bare minimum while you rest, recover, and recuperate from birth and snuggle your newborn.

3. Spoiling baby When I first became a mom I was warned that I shouldn’t hold my newborn too much or while he was sleeping because it might “spoil” him and then he would never sleep in his own bed or let me put him down for a few minutes. This simply is not true. There is no such thing as a spoiled baby. Newborns sleep most of the day and they find great comfort in being held. It also creates a strong bond between parent and child. There is no such thing as sleep training a newborn or spoiling a new baby. Enjoy as much cuddle time as you care to and let that worry go.

2. Cooking Immediately after bringing home baby is not the time to cook elaborate meals or, sometimes, any meals at all. However, you do need to eat regular and nutritious meals, so keep it simple. Stock the pantry with items that are quick and easy to eat while you care for the baby. “I prepared freezer meals before the baby was born so

Accept help It can be hard to accept help when you are used to doing everything yourself but when you have a new baby at home any assistance offered can be a huge blessing. Take people up on their offers to bring meals, help with older children’s carpool, or clean the house. Don’t just have them do the easy, quick chores that aren’t difficult to keep up on – let them vacuum the house, do laundry, and wash dishes which all seem to get behind quickly. While you have help, jump in the shower, take a nap, or run a much needed errand. People offer to help because they want to. You can always pay it forward when you find your new normal. 6. Take turns It can be hard, especially for breastfeeding moms, not to get overtired. As much as possible, share the task of caretaking with your partner. Some moms will find it hard to pass the baby care to their husbands, but dads often feel left out and want to jump in. He may not do things exactly as you do but that’s okay. As long as baby is clean, fed, and happy then there isn’t anything to stress over. This also will give dad time to bond with baby as well.

7. Take a break Having a new baby can be physically and emotionally taxing. It is okay to admit you may need a break sometimes. If you are feeling overwhelmed, schedule a time your spouse or a friend can take care of the baby while you step out of the house for a short while. Breastfeeding moms may find it is hard to get away for extended periods but typically taking a break for an hour or two can do a lot to improve your mood. 8. Be flexible When you are adjusting to having a new baby, it’s important to realize it will take awhile to find your routine again. When planning an outing, think ahead. Pack items you might need, including extra diapers, clothes for you and the baby, and be prepared to feed baby on the go if needed. It’s also important to accept that sometimes an outing will not go as well as planned and it’s okay to head home early. Be flexible and go easy on yourself when it comes to taking baby out for the first time and when trying to get things done around the house. Adding a new family member is both exciting and disruptive. In time, you will adjust to your newborn and won’t be able to imagine your family without them. In the meantime, give yourself, your spouse, and your other children time to adjust to this big change. It’s okay to let go of some of the things that take up your time and focus on your baby.

The Air Fryer That Thing You Never Knew You Always Needed

I

f you know anything about current parent culture, you’re probably at least vaguely aware of a counter-top convection oven-esque device affectionately re-branded and marketed as “The Air Fryer.” Parents the world over are passionately devoted to this small appliance. What makes the air fryer so addicting and so indispensable to modern American parents, who are constantly pressed for time yet desperately attempting to prepare nourishing, tasty food for their families? The air fryer uses a mechanism that circulates hot air – very similar to a convection oven – and yet fits nicely in that small space between your coffee maker and the stand mixer perched reclusively in the corner of your kitchen counter, collecting dust. The circulating heat creates a delicious caramelization such that food gets crispy on the outside and cooked evenly on the inside – in short, baked food that tastes fried. And, guess what else? This otherworldly, magical process is almost instantaneous in comparison to the odious, prosaic tasks of preheating, baking, or (audible sigh of disgust) stovetop frying. With various sizes available at an array of price points, what’s not to love? I began my passionate affair with the air fryer in October 2019 when Costco offered a rather large-sized one for $30 off, a feel-good deal so attractive, it would have been irresponsible not to buy it. And to me, the air fryer embodies

Delicious Chicken Nuggets (recipe adapted from skinnytaste.com)

Crispy Zucchini Curly Fries (recipe courtesy of allrecipes.com)

2-3 boneless skinless chicken breasts, trimmed and cut into bite-sized pieces 2 teaspoons olive oil Salt and pepper, to taste 6 tablespoons breadcrumbs 2 tablespoons panko 2 tablespoons Parmesan cheese

1-2 medium zucchinis 1 egg, beaten 1 cup panko ½ cup Parmesan cheese 1 teaspoon Italian seasoning

Cut zucchini into spirals using a spiralizer tool. Beat egg in a shallow dish. Perfect Salmon Fillets (recipe adapted from noblepig.com) 2 salmon fillets of comparable thickness 2 teaspoons toasted sesame oil 1 teaspoon ginger 1 teaspoon honey 1 tablespoon soy sauce or coconut aminos 1 teaspoon Worcestershire sauce ½ teaspoon garlic powder Salt and pepper, to taste

Combine all ingredients except for the salmon in a 1-gallon zippered storage bag. Place fillets inside the bag and allow to marinate in the refrigerator for several hours. Take out of the fridge and let fillets sit for approximately one hour on the countertop. Place fillets in the basket of the air fryer and cook at 390 degrees for 7 minutes.

Air Fryer Chicken Wings (recipe courtesy of foodnetwork.com) Ah, chicken wings – comfort food, party food, midnight snack food, out-to-eat at a bar food. What if they could not have so many calories, never get soggy, and taste delicious? Enter: the air fryer. 2 pounds chicken wings, split at the joint and tips removed Salt 4 tablespoons unsalted butter ½ cup hot sauce or buffalo sauce Ranch or blue cheese dressing, for serving Obligatory celery sticks, for token nutrients and leftover ranch dressing

Spray the air fryer basket with nonstick cooking spray. Pat the chicken wings dry and sprinkle with salt. Place the wings in the fryer basket so they are not touching. Cook for 24 minutes at 360 degrees, flipping halfway through. Flip the wings yet again, and increase the temperature to 390 degrees. Cook for 6 minutes more. While the wings are cooking, melt the butter, and then whisk in the hot sauce. In a large bowl, toss the wings with the butter mixture. Serve with the dressing and celery sticks on the side.

Best. Brussels Sprouts. Ever. I eat air fried Brussels sprouts just about every day for lunch. I change up the seasonings depending upon my mood. I often eat them with sriracha ranch dressing, some diced avocados, and a bit of spicy salsa and/or, if I’m especially hungry, eggs over medium, as shown in the photo above. 1-2 cups Brussels sprouts, quartered 1 teaspoon olive oil 1 tablespoon nutritional yeast ½ teaspoon smoked paprika Salt and pepper to taste

Place quartered Brussel sprouts in a bowl. Stir in remaining ingredients. Place in air fryer – do not overcrowd. Cook at 400 degrees for 8 minutes, opening and shaking basket halfway through. Optional: stir in a piece of chopped bacon to your mixture in place of nutritional yeast. Continued on page 45

Air Fryer Tips and Benefits Do not overcrowd your air fryer with food. This impedes the circulation of the hot air and makes it unable to crisp evenly. Though many recipes suggest preheating the air fryer, I have never done this. Consider using spray oil to coat the basket, and spray food halfway through. This creates the delicious browning/caramelization effect. Trial and error is the best way to perfect cooking times, as air fryers differ from brand to brand. It’s the perfect opportunity to cook without a recipe! You can open the basket and check food often, throw small amounts of food together, and enjoy culinary creations right away. The Internet posits that in order to convert conventional oven cooking times to the air fryer, cut cooking time by 20% and cooking temperature by 30 degrees. Again, trial and error works well in this case, along with a quick-read food thermometer. Look for air fryer instructions on the frozen food packages you know and love; many of them now come with this information. And parents everywhere rejoice! Go from frozen tundra chicken nuggets to a steaming dip in the refreshing ketchup pool in seven minutes flat. When Naples turns from jealousy-inducing wintery pleasant-ville to summery unbearable kiln, the air fryer provides a cooking option that doesn’t heat the entire kitchen and negate the effects of our hard-working air conditioners. Additionally, as a small, countertop appliance, the air fryer uses less electricity overall than an oven in order to cook food. The air fryer makes food taste like it has been fried in oil – thus, it shines brightest when attempting to make fried foods a bit healthier … just a bit. So, try items such as chicken wings, chicken nuggets and strips, and onion rings. They are so delicious!

Diced Seasoned Potatoes My 5-year-old daughter loves these potatoes, and they are such a great way to round out just about any meal. We eat them for dinner with roasted broccoli and burgers or for a weekend breakfast with scrambled eggs and fruit kabobs. 2-3 diced Yukon gold potatoes 1 small sweet onion, chopped 1 teaspoon olive oil 1 teaspoon paprika Salt and pepper, to taste

Add all ingredients to a bowl and stir together to combine. Place in air fryer at 400 degrees for 11 minutes or so, shaking halfway. (Depending upon the size you dice your potatoes, it may take a bit less time to achieve desired doneness, so be sure to check intermittently.)

Prosciutto Wrapped Stuffed Figs (recipe adapted from skinnytaste.com) 8 figs 4 thin slices prosciutto, cut in half lengthwise ¼ cup goat cheese (or blue cheese)

Starting at the stem end, cut figs in half nearly through, but leave the blossom end in tact. Press a small spoonful of the cheese into the center of each fig and close them up. Wrap each fig with a slice of prosciutto and secure with a toothpick. Air fry at 400 degrees for about 6 minutes – or until the prosciutto is crisp. These are delicious served as an appetizer or over a mixed-greens salad and drizzled with a vinaigrette.
