Explore Tampa Bay - Support Local Businesses! I’ve lived in Tampa Bay since 2004, and I am still surprised at the amount of hidden local gems I have yet to explore. From adorable boutiques to food trucks and everything in between, Tampa Bay has numerous amazing small businesses just waiting for you to visit! During one of my “adventures” exploring local shops, I found myself at “Salty Paws” in Downtown Dunedin. It happens to be the first doggie ice cream shop in Florida, and it is a dream come true for any dog owner in town! Recently, my mother and I have found ourselves on the fun quest to find Tampa Bay’s most unique “locally-owned coffee shop.” We spend every weekend supporting one new coffee shop/bakery in town, getting to know the owners, and exploring their menu options. Our dates are usually less than $20 and we leave having made new friends in a new place. By doing this we’re not only supporting small businesses, but we’ve also gotten to know our city better and all the wonderful things it has to offer. Tech Talk with Bob: Are you CyberSecure?

You rely on your computer every day to perform multiple tasks; some of which involve transmitting your confidential information over the internet. Online banking, staying in touch with your child’s school, working remotely, paying bills, reviewing the results of your most recent blood test, monitoring and managing your investment accounts, preparing and filing your taxes, even the simple act of ordering a pizza using your credit card. Each of these basic tasks, that most of us do every day is a potential security exploit. I am willing to bet that you are the type of person who is smart enough to wear a seatbelt while driving. That’s because you know that even though you are a safe and considerate driver, you are still at the mercy of the less considerate drivers or those who are not as vigilant as you. You know you need to protect yourself while driving and you know that you need to protect yourself while online, navigating your digital world. Now I know you might be thinking, “Bob, I’m pretty sure my computer is safe. We haven’t had any problems. I’ve been using such and such software from the store where I bought the computer,” or

“the tech-savvy neighbor kid put something on my computer for me.” If you are doing any of the financial or medical transactions I mentioned earlier, you don’t you want to be “pretty sure” your computer is safe --- you want to be “certain” it is squeaky-clean! Some of my long-time clients who manage online banking and investment accounts that have balances from thousands to millions of dollars were “pretty sure” their computers were safe too. Every one of these folks was shocked when my cybersecurity team discovered their systems still had security exploits. OK, time for some tough love. If you do anything online of a financial or medical nature, you need to stop procrastinating and be proactive about securing your system. I know that performing deep scans on your computer system is a time-consuming process. Many people do not have the knowledge, resources, and most of all the patience to properly execute a thorough scan. The completion time of these scans have taken a few hours to a few days thanks to the many variables involved: the storage capacity of the hard drive, the number of files on the hard drive, the number of threats discovered on the hard drive, just to name a few. In addition to the automated scans we perform, my team also manually inspects critical areas of your system for threats that are not typically discovered by anti-malware software.

A lot of the more popularly known and usually all the FREE anti-malware usually complete their scans in 30 minutes or less, which can be very appealing. No one wants to wait for a long scan. But let’s be realistic, you’re not ordering a pizza; you’re protecting the device that holds the keys to your digital world. My cybersecurity team performs a through security scan of your computer “so you know for certain” whether your system is clean or not. Since these security scans have taken from hours to days to complete, to be fair, I only charge one hour of bench time to perform these scans. Whether your scan takes a few hours or 30 hours, your only obligation is our onehour bench fee. Once my cybersecurity team completes your scan, I will personally review the results with you. If you require any additional work, I will discuss your options and costs. I want you to have all the facts regarding your computer’s security health so you can make a well-informed decision based on what solution best serves you. In observance of Cybersecurity Awareness Month, which happens to be October, I challenge you to “know for certain” whether your computer is in order security-wise. Starting right now and through the end of October I will do a security scan of your computer on my bench for only $99.00. Yes, for less than the cost of a onehour service appointment, my team will assess the security

of your computer! Even if you think your computer is secure, I still challenge you to have my team check it. If I find that your system is squeakyclean, YOUR SCAN IS FREE! SAT AND ACT IMPROVEMENT: FALL OUTLOOKS Dr. Wayne Adams FALL EXAM DATES: SAT: October 2, December 4; PSAT October 13; ACT: September 11, October 23, December 11. Now that school has started and most schedules have settled down, we can all take a long breath and think about fall planning. Seniors and their parents are thinking about applying to colleges, the SAT and/or the ACT Exam, FASFA forms, Bright Futures, and other scholarships … on top of all the academics and activities that constantly demand attention. The “gorilla in Florida” is the UF deadline. According to the UF website, applications are due on November 1st, and any received after November 16 are accepted on a space-available basis, which is extremely limited. Most other schools are fine with a January 1st application and standard exam scores following soon behind. For those wanting to apply for early option or early decision, most of these programs are fine with exam scores coming in late November through December – but make sure to check the dates with your target schools to be absolutely sure. More important, with most schools your percentage of acceptances from Early Acceptance or Early Decision are roughly three times the rate of acceptances from the regular application dates. Juniors and Sophomores are simply looking forward to successfully completing their fall term, and doing their best on the PSAT coming in mid-October. Many are already preparing for the full exams, which gives them more time to prepare and experience the exams. On occasion, I have tutored seventh graders for the SAT and ACT, and it is becoming more common for me to start with ninth or tenth

graders as well. When I am asked, “Wayne, what do you do?” most expect the answer, “I am a tutor.” Instead, my answer is, “I help my students have their best possible futures which includes doing their best on the SAT and/or ACT Exam.” This is why each of my students/parents receives a copy of two guides that I have written. The first is Negotiating with Colleges, which has saved many families from $1,000 to $10,000 a year in college costs. The second is How to Write College Application Essays that Colleges will Love, with 104 pages including how to write great essays and over 40 examples with my comments and explanations. My new guide Achieve and Maintain Your PEAK MENTAL PERFORMANCE ZONE on the SAT and ACT including HOW TO WIN OVER PERFORMANCE ANXIETY has proven to be very helpful for my students to do their best on these exams. Also, I help with college application information, ideas about possible schools, coaching for students in how to study most effectively, and special negotiating points. Many Florida parents and students are very surprised to

learn that it can easily cost less to attend a top university than a Florida public university. The reason is because top academic schools have large endowments, and adopted generous grant and assistance policies several years ago to help their students graduate “debt free” if possible, and make awards on a “net cost” basis that includes room and board. For example, if your student is admitted to Harvard and the family makes $75,001 - $110,000 a year, the net cost is $15,553 a year according to collegescorecard.com. That is often less than the net cost for UF on a 100% Bright Futures scholarship because students at UF must pay full room and board which can easily run more than the Harvard net cost. At Yale, the net cost is $11,492; Princeton, $16,989; Stanford, $10,631; U Chicago, $17,929; and MIT $14,381. Redesigning a small room that packs a punch By Decorating Den | Design Inspiration Does your home have that one nook or room that makes it difficult to make the most of its space? You can’t figure out how to decorate it, let alone articulate how exactly you can maximize the area and utilize it to its fullest potential. Whether it’s a bedroom, makeshift workspace or a little corner that your kids use for playtime, there are specific design tips and elements you can incorporate into the living area that can make it seem larger than it actually is. Color, furniture and decor choice all play a major role in how you can have fun with design and really pack a punch

out of what could’ve been an ignored, empty space. Evaluate your needs within the living space How do you currently use this space? Do you have new plans after renovating the small area? These are valid questions to consider as you decide what type of decor and furniture you’ll need. Take the following scenarios, for example: • For a small workspace: All you need is a desk, chair and some type of storage space. We recommend vertical shelving here so you can free up the floor space that a bookshelf or storage unit would take up. • For a bedroom: Take a minimalist approach here

as well. Your bedroom should have a bed and storage for your clothing. Other furniture can make it feel cluttered, so keep it minimal and include

only the necessities. Keep a neutral color scheme in mind. Use appropriate colors


Take lighting seriously As previously mentioned, light means everything in a tiny space. We always talk about the importance of lighting regardless of your living space arrangements, but it doesn’t get more important than this scenario.

Unfortunately, certain colors and shades can make your small space feel even more minuscule and cluttered. Dark colors should be avoided in this case; they absorb light and make the four walls feel more closed in. Lighter shades can create the illusion of a larger area — that’s because they’re more reflective and

maximize the way light moves around the room. During the initial stages of your redesign process, keep this tip in mind. A neutral color scheme can work wonders over one that’s dark and deep. The 2021 Pantone Color(s) of The Year, Ultimate Gray and Illuminating are two excellent choices for a smaller room, for example.

Natural lighting is your best friend in a small space. Take advantage of natural lighting to its fullest extent by keeping window coverings as minimal and sheer as possible. If there’s little opportunity for outdoor lighting, artificial illumination will work wonders here. Try to keep your lighting options off of the ground to avoid taking up unnecessary space; hanging sconces are helpful in this scenario. are also useful here. Use multifunctional furniture as much as you can When you’re minimizing the amount of furniture in your rooms, you still need to make sure that you have enough storage for your belongings. JACOBSON CULINARY ARTS ACADEMY AT TARPON SPRINGS HIGH SCHOOL Andouille Sausage, potato, and leek sauté • 12 ounces Andouille sausage • 1-pound small creamy white potatoes or red bliss, cut in half or quartered • 2 medium leeks, sliced • 1 large red sweet pepper, sliced • 2 tablespoon olive oil • 2 garlic cloves, chopped fine • 1 cup fresh cherry or plum tomatoes, cut in half • 1 tablespoon fresh thyme • 1 tablespoon fresh Italian parsley • ½ teaspoon red pepper flakes • Salt and pepper to taste

In a large skillet heat a few drizzles of olive oil. Add potatoes and sprinkle with salt and pepper. Cover and let potatoes cook for several minutes, let brown on one side before turning. Remove green tops of leeks, slice the white part of leek into ½ inch slices. Place in water and wash to remove any sand. Cook the potatoes for 8 – 10 minutes until fork tender. Add leeks, sweet red peppers, and garlic. Cook for 5 to 8 minutes until leeks and peppers begin to soften. Slice the andouille sausage into ¼ inch slices and add to pan.

Cook covered on medium heat for several minutes Adjust seasoning, add fresh thyme, pepper flakes and tomatoes.

Allow to cook for several more minutes until everything is warmed through. Serve by itself, or over white rice.
