La Vid Fine Wines & Vinoteca Quenches Thirst For Local Independent Wine Shop and Bar in Carrollwood By Deborah Bostock-Kelley Trying to decide what determines a good wine brand can be overwhelming in a big box shopping store or liquor chain. When Certified Sommelier Victor Manuel and mother/business partner, Rosa Quintela opened La Vid Fine Wines & Vinoteca in November 2020, they wanted to create an intimate shop and make the process a personal one. La Vid offers only the best-in-class Spanish and Portuguese wines, beers, and vermouths, as well as other global wines of distinction and specialty food products from the Mediterranean. “We specialize in Iberian wines (Spain and

Portugal) and vermouths. We do sell other European and new world wines. We also carry food products like tuna, Sardines, anchovies, high-end vinegar, chestnuts, almonds, oils from Spain and Portugal,” said Victor. “We were excited to share our wine culture with Carrollwood and offer something different because people were- pun intended- thirsty for a local non-franchise concept.” The dark garnet walls are adorned with Spanish portraits of bullfighters and dancers. A guitar sits alone, waiting for someone to strum next to the long bar covered in Portuguese cork. If you would like to learn more about our program, please go to www. jcaachefs.com Fresh Berry Scones • 4 cups all-purpose flour • 2 Tablespoons baking powder • ½ teaspoon salt • ½ cup sugar • 8 ounces unsalted butter cut into 1” cubes

• 2 large eggs • 1 ½ cups buttermilk • 2 Tablespoons lemon zest • 2 cups of fresh berries, or dried berries • ¼ cup heavy cream • ¼ sugar for dusting Preheat oven to 375. In a mixing bowl of a food processor combine flour, baking powder, salt, and butter. In a small bowl rub together, the lemon zest and sugar to release the oils from the lemon zest. Add to the flour mixture in the processor. Pulse several times until butter is the size of a small pea Remove from processor and put into a large bowl. In a small bowl combine eggs, and milk together. Add to the flour mixture. Mix with together until all ingredients are wet.

Do not overmix. Add berries, fold in gently. Sprinkle a small amount of flour into surface, remove dough from bowl with spatula. Flatten and shape into a rectangle, cut triangles

with bench scraper of knife. Place on greased sheet pan. Brush tops with heavy cream and sprinkle with sugar liberally. Bake 20 – 25 minutes until golden brown.

The date was chosen for the pun on the catchphrase “May The Force Be With You” as “May The Fourth Be With You.” Also, in May, many of us look forward to “Cinco de Mayo,” which is a holiday that celebrates the date of the Mexican army’s 1862 victory over France at the Battle of Puebla during the Franco-Mexican War. You wouldn’t guess it, but Cinco de Mayo is a relatively minor holiday in Mexico, but in the United States has evolved into a huge commemoration of Mexican culture and heritage, and the Holiday is frequently confused with “Mexico’s Independence Day,” which takes place on September

16th. So make sure you celebrate safely, and if possible, support some of our local restaurants, even from the comfort of your own home. Lastly, I want to bring your attention to something of importance that also takes place during this beautiful spring month, Lyme Disease Awareness Month. Many states and counties have taken steps to raise awareness regarding Lyme and tick-borne diseases. Declaring May “Lyme Awareness Month” is one move to help remind people spring is here, ticks are out, prevention, and proper education are your best tools to staying healthy. With the spread of the disease to all 50 states, Lyme awareness, education, and early intervention are critical. Even though Lyme disease may not be common in Florida, you can still get infected. Take it from someone who is currently battling this debilitating and life-altering condition. Please be prepared and learn the signs and symptoms of Lyme disease. If you have symptoms such as; high fevers, chills, body aches, weight gain/loss, TMJ, headaches/ migraines, extreme fatigue, muscle and joint aches, arthritis with severe joint pain and swelling, particularly on the knees and other large joints, severe inflammation, heart palpitations or an irregular heartbeat, and problems with short-term memory amongst others, please contact your primary physician. Ask him or her to advise you and refer you to a Lyme Disease specialist near you. The COVID pandemic is still in full force, but there are many kinds of diseases still out there that can also mimic similar symptoms. Proper diagnosis is key. If your health fails, it can overshadow everything else that’s going on in your life. Please take care of yourself, eat a healthy diet, make sleep a priority, find a fitness habit that works for you, and don’t get too stressed out. Stress can wreak havoc on your body. Don’t Delay Emergency Care When You Have Symptoms You may be thinking twice about going to the emergency room at your local hospital if you don’t feel well. Maybe you’re not sure that it’s a true emergency. Or perhaps you’re concerned about getting sick from a virus while there. However, we want to assure you that you should always get care quickly in a medical emergency, and we’re taking extra steps to protect you and keep you safe in our emergency departments. Because nothing is more important to us than your safety. If you think your symptoms may signal a medical emergency, don’t wait to get care. We’re taking protective measures to for your safety in our emergency rooms and other facilities. Delaying medical care for serious health problems could be dangerous. Here’s some guidance on when

to seek emergency care. Is It an Emergency? Knowing which symptoms may signal a medical emergency can help you and your loved ones get the care you need. The American College of Emergency Physicians recommends seeking immediate medical care for these symptoms: • Bleeding that won’t stop • Chest pain • Choking • Confusion or other major changes in behavior • Loss of consciousness • Serious injuries like burns, large wounds or head trauma • Severe pain in your stomach or other body part • Sudden dizziness or weakness

• Trouble breathing • Trouble walking • Vomiting or coughing up blood • Vomiting or diarrhea that won’t stop You should also seek emergency care if you or a loved one has swallowed a poisonous substance. And don’t

delay care if you are having thoughts of harming yourself or others. Call 911 right away if you or a loved one is having a medical emergency. It’s the safest way to get care when seconds count, and harm may be imminent if care is delayed. If the person experiencing the

Tech Talk with Bob: Malware Basics

Malware stands for malicious software. It is designed to break into and possibly harm your computer system, or even your online identity, without you knowing. Malware almost always hides itself. Some will even take control of your computer. There are many different types of malware which includes: viruses, Trojans, logic bombs, adware, spyware, rootkits, worms, etc. These terms can sometimes be confusing. So, let’s discuss a few. Viruses can be difficult to identify. They are sneaky and come in many different forms. A macro virus will exploit applications. When activated, it can cause significant damage and spread itself to other computers. For example, it can send itself as an attachment to all e-mail addresses in your address book. Sometimes

a virus can be nothing more than an annoying pop-up on your computer screen. Other times its malicious code can be extremely dangerous because it can also purposely delete files from your computer’s hard drive. A Trojan is named after the Greek Trojan horse. A Trojan can be innocently mistaken to be an application like a screensaver or a game that you may unknowingly download and run because it looks cool or is fun to play. This type of malware is usually a free program you see on a website or is often recommended via email from a well-intentioned friend who is obviously ignorant of the threat it presents. Trojans do not typically harm your computer’s operation. They create a backdoor into your system giving an attacker access and complete remote

control of your computer, without you ever knowing. Spyware is any application which sends private information about you without your consent or knowledge. Spyware tracks and reports back to its attacker data about your online digital activities. Information such as which websites you visit and for how long. They can even record your keystrokes to steal your login credentials (username & password). In addition to building a digital profile on you, spyware can steal your entire list of contacts (with all your friends’ & families’ personal information) and serve them up on a silver platter to the attackers, courtesy of an unprotected computer. Creating a malware defense strategy is the first step in protecting yourself. Second, do not rely solely on new out-ofthe-box anti-malware software. All anti-malware software needs to have its settings properly configured to provide you with the highest level of protection possible. It is best to have a certified professional configure this software as soon as it is installed. And of course, it is

best to install this software before your computer contracts a malware infection. Third, keep the software up to date. Be Safer My Friend. “La Vid” - continued from page 1 conveniently throughout the shop, the specialized retail and wine bar in Carrollwood feels welcoming, warm, and inviting. Victor said the personal attention he gives to every customer and the carefully curated selection makes La Vid stand out from other wine concepts. “We are a smaller operation, so it permits us to have that one-on-one with the customers. We also are willing to order anything that they want,” he said. “We are glad to cater to their needs. Customers can shop with confidence. I bring in products that are classic examples of what textbook Iberian wines are all about.” Having worked regularly with wine in the hospitality industry, his interest was furthered when he was given a book about wine. “I wanted to try all the wines featured in the book,” he explained. “I wanted to know more.” Once he experienced the different wines, a seed was planted and began to cultivate. Victor went through rigorous training and exams to become a Certified Sommelier. An idea for opening his own shop formed. “I had my own perspective and, with my experience, the tools to establish a successful business, learning from great people who’ve been in the business for years,” he said. “I don’t have this knowledge to want to keep to myself. I want to share with people. I want this to hub for people to learn about wine. I want to reach anybody who’s willing to taste something new and exciting.” With ancestors from Spain, he said the idea to specialize in Iberian wines came easily. “Maybe it’s preprogrammed in my DNA because of my Hispanic heritage. It’s two parts – a personal side and a cultural one. Both great grandparents came from Spain, and the crest that we use here is actually an adaption of our family’s coat of arms. On the cultural side, Spain

is a country that produces wines that can rival any kind of style of wine that exists in the world, and Portugal has such a vast variety has wines that there is no typical style. It’s a very exciting time in wine across the board, but especially in the Iberian peninsula. The quality of wines we are getting is punching way above its weight.” Victor explained that the wines aren’t made in huge, mass qualities. “It’s more of a finite product. A lot are unfiltered and unrefined. Though not always listed on the label, many are organic or biodynamically grown. I try to source the most talented producers to offer the best products that I can, which allows us to have a wonderful selection for the same prices you’d pay at a grocery store or chain liquor store. You’re getting a much better product, and you’re also buying and supporting local,” he said. Not only can customers purchase wine from the retail

“Dr. Liza” story continued from page 1 The skin consists of three major layers, the epidermis (outermost layer), the dermis (supporting layer), and subcutaneous fat. The epidermis is the top layer of your skin. The dermis is thicker than the epidermis and contains all sweat and oil glands, hair follicles, connective tissue, nerve endings, and lymph vessels. The layer of skin beneath the dermis is sometimes called the subcutaneous fat, subcutis or hypodermis layer. (Bing.com). I know these are interesting facts, but why this should be important to you? In interviewing local dermatologist, Dr. Liza Brown, I asked her what was important for her magazine and online article. Without hesitation, dismissing the opportunity for self-promotion, “Tips on protecting your skin from the sun.” Now that you understand the important functions that your skin provides for your body’s health while you are outside soaking up the sun’s rays, did you also realize that overexposure to those same warming rays or even an artificial sun lamp has hidden dangers with both short, and long-term effects on your skin? Dr. Brown warned that the results of the sun are cumulative with roughly 25% of sun damage occurring before the age of 18. Dr. Brown warned that “severe sunburns during childhood and adolescence

may increase one’s risk of melanoma; children should be especially protected from the sun. Experiencing five or more blistering sunburns between the ages 15 to 20 increases one’s risk of melanoma by 80% and Nonmelanoma skin cancer by 68%.” The effects of ultraviolet rays on skin will vary, depending on the length of exposure but, as a Bing. com article notes, “Over time, the sun’s ultraviolet (UV) light damages the fibers in the skin called elastin. When these fibers break down, the skin begins to sag, stretch, and lose its ability to go back into place after stretching. The skin also bruises and tears more easily -- taking longer to heal.” In fact, most of what we think is normal skin aging is actually caused by the sun. Dr. Brown differentiated between the two ultraviolet rays contained in sunlight and their consequences from long-term or over exposure. UVA rays are the ones that contribute to the aging of the skin, she warned, while UVB rays can cause skin cancer. She also noted there are many things we can do to protect our skin when we are outside, exposed to the sun. education has replaced a great deal of in-school education and with it, the inherent risk of the invisible emissions. Our first line of defense should be, Dr. Brown suggests, the liberal application of a sunscreen, roughly one shot glass worth or 1 ounce as part of your daily routine. Each manufacturer’s product receives an SPF rating (Sun Protective Factor) based on the percentage of prevention to UVB exposure it provides. Dr. Brown recommends sunscreens should have at least an SPF rating of 30 to be effective. She also warned, even a 99% rating still allows a 1% exposure, so reapplication every 2 hours is crucial. UPF Clothing can also help control UV exposure, according to Dr. Brown. Hats should have a wide brim, and sunglasses should be worn to protect your eyes. She suggests. According to rei.com, a rating of less than 15 UPF means the product does not provide any protection. A typical white cotton T-shirt, for example, offers about a UPF 5 rating, which means that 20 percent

of available UV radiation passes through it. “If you learn nothing else about UPF (Ultraviolet Protection Factor) consider this: Always look for a garment’s lab-tested UPF rating (if available) to evaluate its true UV protection level.” Dr. Brown suggests that tighter weaved fabrics provide greater protection. The rei.com article added, “darker fabrics will usually perform better that light ones and polyester and nylon do better at sun protection than natural fibers.” Dermatology Associates

SAT AND ACT IMPROVEMENT: WHAT MAKES THE DIFFERENCE FOR COLLEGE ADMISSIONS?

Spring and Summer Exam Dates: SAT: June 5th, August 28th; ACT: June 12th and July 17th. As most of you know, my aim in our classes is to help my students and their families have the best possible futures, including doing their best on the SAT and ACT Exams. This is why I include five of my special books/guides in the courses: How to Achieve and Maintain your Peak Mental Performance on the SAT, ACT, and Life’s Exams; How to Write College Admission Essays Colleges Will Love (including 40 sample essays); Negotiating with Colleges (that has helped my families save $1,000 to $10,000 a year in college costs); How to Survive and Thrive as a Freshman at a Secular University; and Dream Colleges and Universities: The Top 25, 5 More, and Top 5 in Florida. During my many years of tutoring, I have talked with admissions officers at Harvard, Yale, Vanderbilt, University of Florida, FSU, and many other schools. One of my questions was always, “What makes the difference in admitting new freshmen?” The answers were surprisingly similar. The first three were class standing, GPA, and SAT/ACT scores. Then the officers went on to explain that for most applicants, these three were very similar because students tend to self-select out if they were not in the needed ranges. The fourth is the quality and originality of the college application essays. This is the first time an admission officer learns something about the student and their ability to think, organize, write, and create something special that will grab attention. The standard, “academic” essays don’t cut it. The fifth is a big differentiator! Is this student “lopsided”? By this, I mean have they shown a special skill, interest, passion that has enabled them to really stand out much higher than their peers. For example, one student from Russia who went to Yale with our daughter came from an average “American school” in Russia, had mediocre SAT scores, and would not have been admitted … EXCEPT … he had created a computer algorithm at age sixteen and sold it to a large, international corporation for over $1 million US. This student would be admitted anywhere he applied because he was outstandingly “lopsided”!
