May is a busy month! Full of holidays, commemorations, proclamations, awareness events, and Mexican food! Let’s start with Memorial Day, formally known as Decoration Day. This is a federal holiday observed yearly on the last Monday of May. This year, Memorial Day falls on Monday, May 31st, 2021, and it is a day to commemorate all men and women who have died while serving in the military for the United States of America. Many local business owners understand the significance of this Holiday and show their support by offering amazing Memorial Day specials, one-of-a-kind offers, and fantastic discounts on merchandise, products, and services. Fans of the media franchise observe it by re-watching the Star Wars movies, wearing costumes, sharing movie quotes, and posting funny memes on social media. The date was chosen for the pun on the catchphrase “May The Force Be With You” as “May The Fourth Be With You.” Also, in May, many of us look forward to “Cinco de Mayo,” which is a holiday that celebrates the date of the Mexican army’s 1862 victory over France at the Battle of Puebla during the Franco-Mexican War. You wouldn’t guess it, but Cinco de Mayo is a relatively minor holiday in Mexico, but in the United States has evolved into a huge commemoration of Mexican culture and heritage, and the Holiday is frequently confused with “Mexico’s Independence Day,” which takes place on September

16th. So make sure you celebrate safely, and if possible, support some of our local restaurants, even from the comfort of your own home. Lastly, I want to bring your attention to something of importance that also takes place during this beautiful spring month, Lyme Disease Awareness Month. Many states and counties have taken steps to raise awareness regarding Lyme and tick-borne diseases. Declaring May “Lyme Awareness Month” is one move to help remind people spring is here, ticks are out, prevention, and proper education are your best tools to staying healthy. With the spread of the disease to all 50 states, Lyme awareness, education, and early intervention are critical. Even though Lyme disease may not be common in Florida, you can still get infected. Take it from someone who is currently battling this debilitating and life-altering condition. Please be prepared and learn the signs and symptoms of Lyme disease. If you have symptoms such as; high fevers, chills, body aches, weight gain/loss, TMJ, headaches/ migraines, extreme fatigue, muscle and joint aches, arthritis with severe joint pain and swelling, particularly on the knees and other large joints, severe inflammation, heart palpitations or an irregular heartbeat, and problems with short-term memory amongst others, please contact your primary physician. Ask him or her to advise you and refer you to a Lyme Disease specialist near you. Tech Talk with Bob: Malware Basics

Malware stands for malicious software. It is designed to break into and possibly harm your computer system, or even your online identity, without you knowing. Malware almost always hides itself. Some will even take control of your computer. There are many different types of malware which includes: viruses, Trojans, logic bombs, adware, spyware, rootkits, worms, etc. These terms can sometimes be confusing. So, let’s discuss a few. Viruses can be difficult to identify. They are sneaky and come in many different forms. A macro virus will exploit applications. When activated, it can cause significant damage and spread itself to other computers. For example, it can send itself as an attachment to all e-mail addresses in your address book. Sometimes a virus can be nothing more than an annoying pop-up on your computer screen. Other times its malicious code can be extremely dangerous because it can also purposely delete files from your computer’s hard drive. A Trojan is named after the Greek Trojan horse. A Trojan can be innocently mistaken to be an application like a screensaver or a game that you may unknowingly download and run because it looks cool or is fun to play. This type of malware is usually a free program you see on a website or

is often recommended via email from a well-intentioned friend who is obviously ignorant of the threat it presents. Trojans do not typically harm your computer’s operation. They create a backdoor into your system giving an attacker access and complete remote control of your computer, without you ever knowing. Spyware is any application which sends private information about you without your consent or knowledge. Spyware tracks and reports back to its attacker data about your online digital activities. Information such as which websites you visit and for how long. They can even record your keystrokes to steal your login credentials (username & password). In addition to building a digital profile on you, spyware can steal your entire list of contacts (with all your friends’ & families’ personal information) and serve them up on a silver platter to the attackers, courtesy of an unprotected computer. Creating a malware defense strategy is the first step in protecting yourself. Second, do not rely solely on new out-ofthe-box anti-malware software. All anti-malware software needs to have its settings properly configured to provide you with the highest level of protection possible. It is best to have a certified professional configure

this software as soon as it is installed. And of course, it is best to install this software before your computer contracts a malware infection. Third, keep the software up to date. Reflecting on four years of excellence

Grace Young, Lacrosse Player and Weightlifter, reflects on her time as a Student Athlete By Emma Diehl Over the course of her high school career, Grace Young, a senior at J.W. Mitchell High School, competed on two varsity sports teams, and led her Navy Junior Reserve Officers Training Corps (NJROTC) unit to national competitions twice. Through her leadership and experience, Young gained entry into the United States Military Academy, otherwise known as West Point Military Academy, where only about 1,250 students are accepted per year. Young began playing lacrosse in elementary school as part of a recreational league, in an effort to try something new. “The [recreational] lacrosse program started in our area when I was in the fifth grade and I was lucky enough to be a part of it. I grew up playing basketball and loved to try new sports, so when the opportunity presented itself, I quickly joined,” Young said. Young learned to love lacrosse, and bettered her skills with the support of her coaches and her family members. “My parents have supported me in anything I set my mind to; they always give me the best opportunity to improve and play lacrosse. I’m really lucky to have such amazing, sup-

Over the years, my coaches have helped me to improve my skills, they encourage me to work on my weaknesses so I can improve as an athlete,” Young said. For the past four years, Young was a member of the lacrosse and weightlifting teams. Coach Linsey Hoskins (FAC) describes Young as a hard-working student, and she is proud of her student’s accomplishments. “Grace is a two year captain, leads the team in caused turnovers, and been the leader of the defense for the last 3 years. She excels not only on the field, but also in the gym during the weightlifting season. Grace is a 4.0 student, an officer in NJROTC, and

takes several AP courses while maintaining two varsity sports and competing in weightlifting outside of school as well,” Hoskins said. For the past two years, Young’s NJROTC unit has participated in national competitions, last year placing second, and this year placing 13th. Balancing academics, NJROTC, and sports wasn’t always easy. “Sometimes it was difficult to balance, since I am actively involved in sports, NJROTC, and academics. There were many early mornings for NJROTC combined with strenuous practices and late nights for schoolwork. I got better at balancing everything with improving my time management skills,” Young said.

With her acceptance into West Point, Young is one of the 12 percent of applicants to get into the prestigious military academy. “I am excited to be able to grow as a person and set a good foundation for my future goals while being around people with similar work ethic and goals. I want to continue to improve my leadership and athletic abilities, with an end goal of graduating and getting accepted into a medical school,” Young said. Overall, Young’s time in high school was filled with academic, athletic, and leadership achievements. She will be attending West Point in the fall, and hopes to go to medical school after attending.

Focused on the Goal

J.W. Mitchell High School junior, Leonid Alexeyev, strengthened his game and earned the top spot on the team. By Ashley Hoskins Leonid (Leo) Alexeyev continues his third year on the J.W. Mitchell High School varsity tennis team as he finishes his junior year. He strives to further develop his athletic abilities during his regular season and on his own as well. Coach Dave Peterson nominated Alexeyev for the honor in March. “He is our #1 singles player, has a 12-0 match record, and has led the team to a 5-1 record so far this season,” Peterson said. With the help of his coach, Mr. Dave Peterson, Alexeyev cultivates a sense of community among teammates while working through previous injuries. “I’ve played tennis since I was six. It has always been my number one sport and it has impacted me positively throughout my life.

It’s given me an outlet to stay in shape and develop teamwork and competitive skills that I can apply in other parts of life. Most of my challenges in tennis I’ve had to overcome have come from injuries. My strong team has gotten me through them and our district chances due to getting hurt my freshman year. Sadly, I had a heel issue that forced me to take a few months off last year,” Alexeyev said. Tennis allowed Alexeyev to form close friendships with his teammates over the years by spending time together after school and going to team dinners following matches. Although tennis players compete individually and in double pairs, the team must mesh to cheer each other on and cohesively practice. “Throughout the season, the team creates strong bonds and we go out to eat

“Hope with Every Smile”–The SmileFaith Foundation Story By Tom Bostock Tom Lane, former Navy chaplain and successful businessman, searched for a meaningful way to give back by helping people smile again. In 2009, Tom launched SmileFaith Foundation to bless under-served Veterans and others in need with charitable dental care and life-changing inspiration. Although many Veterans can receive medical treatment at Veterans hospitals and facilities around the country, most have no access to low or no cost VA dental services. SmileFaith helps to fill that void, offering a quality dental care program to honorably discharged Veterans. Veterans with proof of service may receive certain free services such as exams, X-Rays, routine cleanings, simple extractions, and fillings. In addition, some Veterans may qualify for free dental implants upon special assessment.

If you would like to learn more about our program, please go to www. jcaachefs.com Fresh Berry Scones • 4 cups all-purpose flour • 2 Tablespoons baking powder • ½ teaspoon salt • ½ cup sugar • 8 ounces unsalted butter cut into 1” cubes

• 2 large eggs • 1 ½ cups buttermilk • 2 Tablespoons lemon zest • 2 cups of fresh berries, or dried berries • ¼ cup heavy cream • ¼ sugar for dusting Preheat oven to 375. In a mixing bowl of a food processor combine flour, baking powder, salt, and butter. In a small bowl rub together, the lemon zest and sugar to release the oils from the lemon zest. Add to the flour mixture in the processor. Pulse several times until butter is the size of a small pea Remove from processor and put into a large bowl. In a small bowl combine eggs, and milk together. Add to the flour mixture. Mix with together until all ingredients are wet.

Do not overmix. Add berries, fold in gently. Sprinkle a small amount of flour into surface, remove dough from bowl with spatula. Flatten and shape into a rectangle, cut triangles

with bench scraper of knife. Place on greased sheet pan. Brush tops with heavy cream and sprinkle with sugar liberally. Bake 20 – 25 minutes until golden brown.
