obstructive sleep apnea. While there are three different classifications of sleep apnea, obstructive sleep apnea (OSA) is the most common. According to the Mayo Clinic, a person’s throat muscles will relax during OSA, making it extremely difficult for them to breathe. When this happens, their brain will wake them up to receive more oxygen. However, since they’re waking for only a short time, they may not even be aware of the problem. As a result, a person might gasp or choke for air or snore very loudly, which can also keep their loved ones from getting any rest. To make things worse, this unhealthy cycle of not breathing and suddenly waking with loud snoring or gasping can continue throughout the night, sometimes 30 plus times an hour. October observes Breast Cancer Awareness Month, LGBT History Month, ADHD Awareness Month, Emotional Wellness Month, and Italian-American Heritage Month, amongst others numerous events of extreme significance not just nationally but worldwide. During October, numerous momand-pop shops and other locally owned businesses established multiple promotions and fundraising events to show their support for many of these different causes while getting their name and message out there to the public. Starting October 1st until the 31st, 2021, Tampa Bay will be shinning pretty in pink! CREW Tampa Bay efforts included asking owners, managers, and tenants of Tampa Bay properties to display their support to breast cancer awareness month by illuminating pink for CREW Tampa Bay CITY IN PINK. Per CREW’s Tampa Bay website message, “CREW Tampa Bay CITY IN PINK is a reminder to stay vigilant in the fight for a cure and will be a touching tribute to breast cancer survivors and the lives that have been affected by the disease. With

so much uncertainty in our world today, we want CREW Tampa Bay CITY IN PINK to be a source of HOPE for those who have been affected by this disease and a reminder that cancer never stops, and neither should its awareness. More Than a Pretty Face, Meet Sara Burd, the Activist Beneath the Crown By Deborah Bostock-Kelley If asked what comes to mind when you hear pageant beauty queen, preconceived notions and negative stereotypes about the women who participate are often mentioned. However, the easiest way to dispel these misconceptions is to speak to the women behind the crown. Miss Global USA 2022 winner Sara Burd is a Tampa Bay native born and bred in Clearwater and has regularly dealt with this misunderstanding about pageantry. “First and foremost, pageant women are making a choice to be on stage. Pageantry is such an empowering industry. When I got into it, I was super low in confidence and self-esteem. I completely transformed my life

through it and met the most amazing, accomplished, and supportive women friends for life,” she said. “And people think it’s a women-only industry, but there’s also a lot of male pageant systems too.” One of Sara’s friends DJ Davids just won Mister Global USA 2021. With her platform of environmental and ocean conservation, the 5’10, Norwegian, twenty-seven-yearold model is just as comfortable on a surfboard in the water as she is out of it, campaigning to protect the oceans. “Constantly being at the beach and watching how the environment changed over the years made me very aware of the needs of our aquatic environment.”

A graduate of the College of Charleston in South Carolina with a Masters in Communication, in 2015, she got into competing through a nomination from her college sorority. “I loved it and had so much fun. I went back the next year and got second place. I started competing in preliminary pageants around the city of Charleston and competed for Miss South Carolina a few times,” she said. “The director of the College of Charleston introduced me to Miss Global, which was a new pageant system. I won Miss South Carolina Global in 2017 and enjoyed working with the national director at the national pageant. I decided to compete a couple more times, and I won this past summer.” Initially, she was first runner-

up, then received a surprise call two days later that Miss Global USA had stepped down and Sara would assume the coveted title. “Initially, I was bummed because I felt like my performance on stage was the best I’d ever done, so I was okay with the results. Then I got the call two days later. I am just thrilled.”


When asked what she most enjoyed about competing, she described the community aspect. “You get what you put into it, for sure. I love that pageantry - if you want - can make you a super involved community member, and that’s something I really enjoy about pageantry. I love doing volunteer projects and finding platforms to support,” she explained. “As far as beauty goes, you can work out and do all the fitness stuff, which I enjoy because pageantry totally transformed my health both physically and mentally. Living a super balanced and healthfocused lifestyle has been great.” She’s taken makeup courses and had her stylist show her how to do her hair so that she can be self-sufficient. “I can be independent and be my own glam team. I like knowing I have control, and I can count on myself in any situation. It’s important skills to know, instead of relying on a team.” In 2020, she found #alittlealot, a social media environmental campaign. “A little effort done by a lot of people can change the world,” she said. “I understand that it’s super overwhelming to try to be the perfect environmentalist, recycler, or sustainable liver. Encouraging people to make good choices in little habits throughout their day is an approachable way to do that.” Sara volunteers with the Surfrider Foundation,

a grassroots non-profit environmental organization that protects and preserves the world’s oceans, waves, and beaches as part of her platform. She recently discovered Water Warrior Alliance, a water conservation organization she hopes to volunteer. “I also love small businesses and am excited to use my social media platform to promote small businesses as well.” When asked what advice she would give to a young woman considering entering pageantry, Sara responded without hesitation. “You should do pageantry if you genuinely want to better yourself and challenge yourself. But also keep in mind – and this is something I keep in my head every time I competemore than likely, you will lose, and that’s okay. Enjoy the ride, the experience, and the transformation, make friends with people, and don’t put a bunch of pressure on yourself. Otherwise, you are not going to have fun, and if you’re not having fun, you’re not going to perform well.” If you see Miss Global USA at a philanthropic appearance or checking off a bucket list box walking in New York Fashion Week, make sure you say hello. You’ll discover a down-to-earth, poised, articulate, and intelligent activist who also just happens to occasionally wear a sash and sparkly headpiece.

Choosing to play the sport he loves at an early age of five, Tyler Geary (‘22) gains support from his teammates and coaches, leading him to selection as the Gregg Schindler Male Student Athlete of October. With Monday practices filmed along with sprints and walkthroughs, and Tuesdays’ and Wednesdays’ intense practices, Geary maintains a close brotherhood throughout the season. “We always go over team offense and team defense on everything. Even though we have hard practices, we usually do senior dinners the night before the game. Even during the weekends we all go out, sometimes fishing or hanging with each other and always planning something. We’re all very close and our bonds are very tight, as if we were family,” Geary said. Getting down to business remains

important to Geary, but receiving support from his fellow peers is something he values that allows him to further his successful athletic career. “I play defensive end and tight end but ever since I’ve been playing football at a young age, I didn’t actually choose. I just stuck with it because my parents said it would be a fun sport, and ever since then I have been more competitive. Due to my biggest influence, my mom, she has always kept me going and

supported what I love no matter what,” Geary said. While winning four games since the beginning of the season, Geary faced setbacks during one of his games. Despite difficulties, he plans on furthering his football career and continues to progress further into the season. “The biggest challenges when we played Wiregrass and we lost. We had to step up our game and decided that we needed to fix some things, which were

difficult. Although, my best moment in football so far would have to be when I tied the SAC record for one game in the season against Fivay High School. That being said, I plan on playing football in college. I’ve actually had some offers from Eastern Illinois, Monmouth University, and Austin Peay,” Geary said. By Emma Diehl The female Gregg Schindler Athlete of the Month is Caroline Knight, an outside hitter and junior on the varsity volleyball team. Knight earned this honor by exceeding the national average for sets played, hitting percentage, kills, and triple blocks, and by impressing her coaches and her teammates. Knight began playing volleyball in seventh grade at the YMCA. Through both practice and skill, Knight earned player of the match twice this year.

“She has made a great improvement since coming into summer workouts and it helped us get the season off to a great start with three big wins. In a span of three games, she had 42 kills and was our player of the game against Wiregrass Ranch,” Coach Lea Weber (FAC) said. Over the years, family played a large role in Knight’s athletic career. “My parents have probably made the biggest impact on my volleyball life. They support me and come to every game that they can. They have

also helped me in the recruiting process to play college volleyball. Every year I have been one of the youngest [team members], so my older teammates have definitely been big role models for me and have coached me to become a better player,” Knight said. Standing at 5’11”, Knight is significantly taller than the national female average of 5’3” to 5’4”. This gives her an advantage in her position as an outside hitter. “I’m an outside hitter because I love hitting,

which is the outsider’s main job. [I’m also a hitter] because of my height. I love earning as many points for my team as possible. Right now, I am leading the team in kills,” Knight said. Through her three years as a varsity athlete, Knight has worked with her coaches to improve her abilities, and began working closer with her teammates to win games. “Caroline has such a fun, easy going, goofy personality. She gets along with everyone. The team loves her. Her personality and her ability to keep her teammates upbeat. I am always proud of Caroline. She has really stepped up when the team needed her and she has come a long way since freshman year,” Coach Weber said. Knight’s final game of the season will be at home versus Palm Harbor University High School at 7:30 pm. Come out and support Knight and her fellow Mustangs as they take on the Hurricanes on Oct. 14. Help is just around the corner

As if balancing work, family needs and financial requirements wasn’t already stressful enough, the COVID-19 pandemic has added tremendous pressure, and many people are finding themselves overwhelmed. We’ve witnessed tragedy and loss of life on a scale we weren’t prepared for. Many are facing mounting mental health challenges as a result. As many people are aware, our society was already facing a major opioid pain pill epidemic, which has resulted in significant misery and loss of life. Unfortunately, when you add in the stresses of the current pandemic, this perfect storm puts people at an even higher risk of developing a substance use disorder. I know because I’ve been

14 OCTOBER 2021

there. Thanks to chronic back pain, coupled with the stress of running a busy surgical practice, I turned to opioids to selfmedicate. When my usage got out of control, I knew I needed help, but I was afraid — afraid of what my family and friends would think, afraid of losing my job and everything I’d worked so hard for. The shame was overwhelming. In hindsight, I should have been more afraid of the mounting personal, professional and financial consequences I would face if my addiction continued unchecked. Not to mention the possible legal consequences. But I was fortunate; I learned that there are actually many affordable and confidential ways to get critically needed help, which can save lives, protect jobs and mend relationships. After finding my recovery and training in Addiction Medicine, I have spent the last

10 years working to help those suffering from addiction. Here are some important points I have learned: You don’t have it under control. The first mistake, which I have made myself and heard so many others make, is believing that you can stop on your own. This is a dangerous, false assumption which has cost countless lives. Addiction is a process which involves areas of the brain over which people do not have complete control. Even if one can stop for a period of time, they almost always go back to using the substance. It’s like holding your breath; you can do that for a little while if you want to, but eventually your brain makes you breathe! The consequences of not getting help are almost universally worse. I was terribly afraid for someone to find out I was addicted to opioids. But

the consequences of not getting help are much worse. People don’t usually intend to die from an overdose, but it happens all the time. Even if you do survive, without help to find a sustained recovery, the end result will be loss of family, loss of job, financial devastation and possible arrest. There are programs just for you. More often than not, substance abuse treatment is not what the person expects. It is confidential and full of people from all walks of life. And there are many levels of care, including some which are done from home. Lastly, it does not need to be overly costly, and is frequently covered by insurance. The final message is this: there’s no shame in admitting you need help. There are systems in place to help you save your life, your family and your job. Get help before it goes too far! Tech Talk with Bob: Happy Cybersecurity Month!

Did you know October is Cybersecurity Awareness Month? Previously coined National Cybersecurity Awareness Month. Regardless of what you call it, it is now in its 18th year. Its purpose? To raise awareness about the importance of cybersecurity across our nation and ensure that all Americans have the resources they need to be safer and more secure online. A noble mission because unfortunately cybersecurity is not properly addressed by most computer owners. Please understand this, at some point in time you will have a security issue with your computer. Almost every computer we have surveyed has had some type of threat lurking in the system. It amazes me the number of times people “think” their computer is secure, only to find out that their system is still harboring threats. The threats we find vary between actual viruses all the way to strangers having complete remote control of these computers. So, the odds are in your favor that you will, at some

point, have security issues. Now the question is, “do you want to be proactive and stay ahead of these threats;” or “do want to do it the hard way, the expensive way, by doing nothing and letting the chips fall where they may? Not to mention the days of grief you will experience as you hope your data isn’t lost while you pay a security professional to salvage your precious data.” Unfortunately, I see people go through this every week. Trust me my Friend, this is a place you do not want to find yourself. You must decide, because at some moment in time you will find yourself talking to me or some other security professional to help dig you out of this mess. SAT AND ACT IMPROVEMENT: 4 MAJOR REASONS! Dr. Wayne Adams Fall Exam Dates: SAT on Nov 6 and Dec 4, Mar 12; ACT on Oct 23, Dec 11, Feb 12. THE FLORIDA LEGISLATURE recently made a small reduction in Bright Futures scholarships in 2022 by eliminating the $600 annual textbook stipend for scholarship winners. All other provisions remained the same. As you know, the major screening hurdle for qualifying for Bright Futures is the SAT or ACT score. The 100% level requires an SAT superscore of 1330 or an ACT composite of 29. The 75% level requires an SAT superscore of 1210 or an ACT composite of 25. Many times parents will tell me, “My student has excellent grades, but has not scored well on the SAT and/or the ACT.” I believe THERE ARE FOUR MAJOR REASONS GOOD STUDENTS DON’T SCORE WELL on these exams. REASON #1: Most high school students lack key fundamentals such as having had phonics, grammar, “recall” vocabulary, critical thinking, and the mathematics needed to do well on these exams. In many cases, they “overthink” to find the answers. According to multiple research, the vocabulary for a senior in high school is about the same as for an eighthgrader. Unfortunately, this is no lol! My students learn “new ways to learn” that greatly increases both learning and remembering vocabulary and dramatically improving their English/Writing and Grammar abilities. REASON #2: Educational directions in most high schools do not match what is required to do well on the SAT and ACT. Pre-calculus, most geometry, and most algebra courses poorly prepare for these exams. Recently, I tutored a 7th grader who had not had algebra or geometry. His baseline score as

we started was 375. When he took the actual ACT exam, he scored very close to a 600 in math. REASON #3: Most Prep Classes in high school are woefully inadequate. Recently, I learned that a leading private high school used the worst SAT prep book on the market today and the students were bored to death. In other words, prep classes are seen as “fluff” breaks between the real “academic” work at school … yet the SAT and ACT results often have more impact on students’ future (admissions and scholarships) than most classes in high school. REASON #4: Students don’t know how to achieve and maintain their peak “Mental Performance Zone” on the SAT, ACT, and other tests in life. I am convinced half of a student’s doing his/her best is mental. One of my highest scoring students said, “Dr. A, my biggest problem is test anxiety.” So I wrote a guide which we use in our classes that has proven to greatly help my students in “doing their best on the SAT and ACT, and in life. THE GOOD NEWS IS …I consistently find that students respond incredibly well and improve in our classes. My role is to quickly help them determine where they need to work and to be a resource as they progress. Instead of my lecturing, we work together to determine a student’s baseline level, then then structure their learning around their needs. In our classes, there are no “good or bad” scores. Instead, they simply indicate where we need to work to improve. It is very satisfying to see their motivations soar when their perspective changes from “Can I do this?” to “I can do this.” to “I can do this well.” and then to “Let me show you how well I can do.” They discover that real competition is internal and - when they do their best - external

results take care of themselves. Learning the strategies often result in comments like, “Cool” and “That makes it a lot easier”. More important, they learn how to “learn for a lifetime”. JACOBSON CULINARY ARTS ACADEMY AT TARPON SPRINGS HIGH SCHOOL Pistachio Praline Pound Cake • 1 cup plus 1 tablespoon granulated sugar, divided • 1 ½ cups plus 3 tablespoon raw hulled unsalted pistachios, divided • 1 ½ cups flour • 2 teaspoon baking powder • 1 teaspoon sea salt or kosher salt • ¼ teaspoon baking soda • Zest of 2 lemons, divided • 1cup sour cream • 2 eggs • 1 stick unsalted butter, room temperature • ¼ teaspoon almond extract • 1 teaspoon pure vanilla extract • 1 teaspoon pure vanilla extract • 2 cups powdered sugar • 2 ½ tablespoons milk Preheat oven to 350 F Grease the inside of a standard-size loaf baking pan with vegetable oil or spray. Sprinkle 1 tablespoon granulated sugar inside pan and turn pan to coat the inside with sugar, set aside. Place 1 ½ cups pistachios sprinkled with 2 tablespoons of granulated sugar on a baking sheet and toast in preheated oven for 6 – 8 minutes, until sugar is melted, and nuts are slightly toasted. Let cool, remove and transfer to food processor. Process nuts until finely

ground. Combine remaining 1 cup of sugar, 1 ½ cups flour, 1 ½ cups of pistachio, baking powder, salt, and baking soda in a large mixing bowl. Add half of the lemon zest and stir to incorporate. Add sour cream, eggs, butter, vanilla extract, and almond extract. Stir with a spoon until completely mixed, it should be a thick and lumpy batter. Transfer to prepared pan and bake until toothpick inserted in the middle comes out clean, 55 -60 minutes. Rotate pan in oven for even cooking halfway through. Allow it to cool on rack completely before removing from pan. Make glaze by combining powdered sugar, milk, and vanilla until smooth. The glaze should fall from the spoon in a thick rib-

bon. Pour over cooled cake and use a spoon to spread to edges. Allow excess to drip down the sides of cake.

Sprinkle with remaining 3 tablespoons of pistachio praline and lemon zest. Enjoy!
