Done Right
Pirogues Catering has dozens of military contracts and has proven that good food for a crowd is not difficult when the company’s motto is “find and stick to the fine details.” Cooking for a crowd is a tough gig, but the crew at Pirogues Catering is up to the task. Catering a gender reveal party for 100 people sounds like a lot of mouths to feed, but it’s peanuts for the good folks at Pirogues. The owners and staff there have been feeding military crowds for decades as well as volunteering to feed holiday meals to the less fortunate, so a party of 100 is a cinch for this group. A little background. Jim and Dorothy Tipton, owners of Pirogues Catering, have had their sleeves rolled up and their aprons donned since opening their first diner back in 1997. Military sweethearts who met as
military cooks on the base of Fort Dix near Trenton, New Jersey and married three months later, the couple has worn many chef toques (white hats) over the years. But
for too long, it was always working for someone else. After raising a family of four children and a couple of restaurant openings and closings, the Tiptons
decided to change their focus. “They knew they wanted to do food their way, from scratch and while paying close attention to the small details, so they decided to do what they do best and that is cooking for large groups while maintaining their high standards,” said their son, Andy Tipton. “They went after military contracts across the nation and have served members of the National Guard in remote locations across states such as Maryland, Arkansas, Minnesota, Wisconsin, Arizona, Oregon and others. The rest is, as they say, history.” The catering company is determined to change the face of the industry, one meal at a time. On more

than one occasion, units of troops or soldiers being deployed overseas were to have a bag lunch, or, even a MRE (meal ready to eat) lunch, but when Pirogues was called on to cater for the military members, it sent them abroad with a home-cooked meal. “It was our way of giving back. To send our brave men and women not just a decent, but delicious home-cooked meal was our way of saying “thankyou” for what they’re doing for our country and what they mean to our country,” Andy Tipton said. Another way the company has given back to the community is by pairing with the town of Mitchell’s Breaking Bread Ministries in 2020 and providing the community with a Thanksgiving meal. The all-volunteer effort along with donations by Pirogues and other local businesses, produced more than 2,200 meals free to anyone who needed a meal. “What sets us apart is we use quality ingredients first and foremost. We will sacrifice our cost to make sure the food is the best it can be. We cook from scratch and we don’t take shortcuts,” Andy Tipton said. “We’re a family owned business and
we treat our employees like they’re family as well.” Having hailed from Texas, barbecue is a mainstay in Jim’s life. He has created a mouthwatering barbecue menu unlike any other. Brisket has always been the most popular item on Pirogue’s menu. The shop’s Maryland chicken is also one of the more popular menu items. It’s a reinvented Shake ‘N Bakestyle chicken, a recipe from Jim’s dad. Another staple is the pepper Jack mac-n-cheese. It’s a homemade pepper Jack cheese sauce that has garlic, wine, butter, cream, cheese and few secret ingredients in it and has
been a hit since Day 1. Pirogues has catered many different types of events over the years. From feeding 10 people to feeding 1,500 at one time. From doing a sevencourse, black-tie event for 300 people to a backyard barbecue for 50 people, the company has done it all. “We cater to all types of events. I think that’s what makes us who we are. We can do a fine-dining, multiple-course meal for 300 or we can just grill burgers for 50 of your closest friends,” Andy said. “We don’t discriminate; we just love to cook.”

The Depot Pub & Grill’s concrete home serves up a little bit of railroad history along with a bevy of great meals.
