ith Spring in the air and a buoyant market, we turn to first time buyers in this issue and share some sound advice about preparing for mortgage applications. If it all gets too much, try our suggested weekend getaway up the East Coast to Seaham or stay at home, raid the attic or the local car boot sales, and get up-cycling with the family. It doesn’t involve wheels but it’s a rewarding activity to get everyone together and involved in a project without spending too much money. We meet some up-cycling experts from St Neots who share their tips.

GET TOGETHER TO UP-CYCLE Once reserved for crafty DIY-minded home-owners and entrepreneurs, Up-Cycling is now becoming a popular social and family activity
With the season of school holidays and parties on the horizon, why not try something crafty that will get people together without breaking the bank? As part of Gumtree’s mission to get the whole UK up-cycling, they have put together three easy projects to get the whole family started. Gumtree’s Upcycle Revolution blogger Lynne Lambourne says: “Up-cycling is a fun family activity and is a great way to boost creativity, and you don’t have to be a DIY-er to get involved – children and novices can have plenty of fun getting messy and if you’re struggling to find anything to use, there’s heaps of stuff on Gumtree that you can buy at the click of a button. With tablets and phones as a constant distraction these days, we all want to encourage children to read more, which is why a bookcase is a great way to get them started.” According to a recent report in The Telegraph, the number of products on Etsy, the online market place for handmade goods, tagged with the word “upcycled” increased from about 7,900 in January 2010 to more than 200,000 in January 2014. Up-cycling is no new invention but the
Internet, and the trend for getting together to do it, is inspiring a new generation on what to do with all of that old stuff - and they share their visions on social media apps such as Pinterest and Instagram. Annie Sloan, who developed her own chalk paint in 1990, told The Telegraph: “Financially, it’s sensible and it’s also very practical because old furniture is generally nicer, well made and incredibly endurable.” Sharon Walker and Lee Burrett established a retro and vintage wares upcycling business in St Neots in 2013. Sharon says: “We had a knack for upcycling retro curiosities and salvaging vintage pieces of furniture and so built a workshop in our garden, painted it turquoise, and set about turning our hobby into an online furniture business.” The pair now have a permanent shop in St Neots and sell custom renovations, paint, and sewing creations from Stacie Swift. They also offer workshops such as ‘Make your own lampshade’ and ‘Introduction to Sewing: Bunting Making’ and private parties such as birthdays, hen parties and baby showers, where a group may come together to create a quilt or set of cushions.

Health officials in several countries, including the UK, have advocated for people to have at least two alcohol free days per week and the UK government’s new proposal on alcohol guidelines says drinkers should have ‘several’ alcohol free days weekly. For some, it makes no difference – for others it requires a complete turnaround in culinary habits. This recipe from Eisberg allows you to cook with real wine that is non-alcoholic. Now that the clocks have gone forward, one of the easiest ways to get into summer mode is, according to Fiona, to ‘look to your diet for an uplift - adding colour with vegetables. Mediterranean vegetables are particularly good for adding a vibrant hue to your dinner - mixed peppers, tomatoes, courgettes, aubergene, sweetcorn.’ This delicious Italian chicken dish uses lemon and olives. Prawns and salmon also add colour. Swedish chef Marcus Samuelsson was born in Ethopia and lives in New York. He says: “So many colours are in season during summer - eating a bit of the rainbow makes for a delicious and healthy lunch or dinner - and making healthy dishes more interesting and eye-pleasing is a surefire way to ensure that we will not only eat food that is good for us, but that we enjoy it wholeheartedly too. Use colour to create a mouth-watering and eye catching meal.
1 Place the flour onto a plate and add a pinch of salt and pepper. Toss the chicken thighs in the flour to coat on all sides. 2 Heat the oil in a large, deep frying pan and fry the chicken pieces for about 5 minutes, or until lightly browned on all sides. Remove from the pan and place on a plate. 3 Add the onion, leeks and garlic to the pan and fry over a medium low heat for 2-3 minutes then add the rosemary, stock and Eisberg Chardonnay. Using a vegetable peeler, remove the zest from the lemon and add to the pan, then squeeze in the juice of half the lemon. 4 Bring to a simmer then turn down the heat, loosely cover and cook gently for 30 minutes, stirring occasionally. Stir in the olives and cook for a further 10 minutes. Check that the chicken is cooked through. If your pan is heatproof, place it under the grill for a minute to crisp the chicken skin. 5 Sprinkle over a few chopped rosemary leaves and serve with some crusty bread to mop up the juice.
