Get inspired for summer gardening with Capability Brown’s gardens To mark the 300th anniversary of the original celebrity gardener Lancelot ‘Capability’ Brown, Compton Verney in Warwickshire will spearhead a local and national festival devoted to the man and his achievements. A £2.5 million Heritage Lottery Fund grant is being used at the historic art gallery and former country house to preserve, conserve and celebrate the contribution ‘Capability’ Brown made to 120 acres of Grade II-listed parkland, which includes the restoration of a rare, Brown-designed Grade I-listed Chapel. There will also be a brand new Visitor Welcome Centre. In 1769, Brown was employed to lay out the grounds in keeping with the new taste for more naturalistic landscapes. He eliminated the earlier formal gardens and introduced grassland and trees, cedars, oak and ash saplings. What is heart disease? The main type is coronary heart disease, which comes about when the coronary arteries – the two major blood vessels that supply the heart – become narrow or blocked. Stay in Stratford-upon-Avon: Shakespeare, stage and spa This year, the pretty Warwickshire town of Stratford-upon-Avon marks the 400-year legacy of the town’s most famous son, William Shakespeare Some 400 years since his death on his 52nd birthday, festivals, exhibitions and performances all around the world will celebrate the legacy of William Shakespeare this year. Arguably the finest playwright and poet to ever write in the English language, his birth town, Stratford-upon-Avon, has an exciting programme of events and activities. 5. Plan how you want to use the garden. Do you want a seating area or a play area for children? A pretty garden is almost of no use if you can’t use it or experience it up close. A well-designed seating area, with structures to support plants, might become your place to relax; time spent creating the right feature in the right place is time well spent. 6. Understand your soil. Many people fall in love with the plants first, which is all too tempting –but get to know your soil. Invest in a soil testing kit, or ask a gardener to test it. You’ll learn which plants will flourish best and how to improve conditions.
Compton Verney’s Head Gardner Gary Webb shares his green-finger tips on designing your own garden Professional garden design today usually involves elaborate drawings and computer generated images of idyllic creations, and designers do follow a process but with a little insight, a home-gardener can replicate this and enjoy the journey. 1. Be thoughtful. Study the plot. Look at where the sun falls, where the shadier areas are, which soil areas remain waterlogged and so on. This should influence plant selection and layout, and will save time and effort. 2. Be courageous. When you look to other gardens for inspiration, the presentation and togetherness can intimidate the best of us. But many of the best gardens develop over years, starting from a basic plan; this course of change can be very rewarding. 3. Create a mood board. Collect images of appealing features and styles. You’ll find inspiration online that you can collect in one place but nothing beats getting out to
visit gardens, where you can photograph eye-catching structures and plants. 4. Think about utility features. Make a priority list, eg. space for a shed, composting bin or glass house. These key areas will need to be hidden away or located in places you can reach easily, or be hidden away as necessary. Don’t underestimate how much space you’ll need to give to each utility area.
7. Plant hunting - Knowing your soil type, next comes finding plants that will most enjoy your conditions. Pay attention to that shady corner of the garden where woodland style plants might prefer to grow, and think about the open positions where only sun loving plants will thrive. An educated choice is the best way to reduce plant losses. 8. A vision appears - By now you may see a garden form in your mind, but remember; everything needs to fit. Measure as accurately as possible and plan to scale if you can – this is the ideal method for any garden designer. It is certainly easier to make mistakes on paper which can be rubbed out! 9. Stake out – Often, it is not until the design is laid out on the ground that the plan becomes real, and you may still need to fine tune it. Use pegs, canes, marker paint or even an old drinks bottle filled with play sand; just be as accurate as possible. Take a few steps back, view from an upstairs window and from every position possible to make sure you’re happy with the design. 10. If you feel more advice is necessary, you might like to hire a professional garden designer who will consider all of the above and more. The Society of Garden Designers website is a good first port of call, with regional contacts to take you forward. Visit www.sgd.org.uk. WENSLEYDALE AND CRANBERRY SOUFFLE INGREDIENTS
Say Cheese! Sean Wilson, known for 20 years as Coronation Street’s Martin Platt, is now an award-winning cheesemaker and chef. He shares a recipe and his perfect cheeseboard. “The first place to start, when choosing cheese, is to head to a Farmer’s Market rather than a Supermarket, so that you can buy a handmade product and have a good chat to the person who made it – which should be the essence of cheese buying. I’ll be at one stall every weekend selling my Lancashire cheese,” explains Sean. Lancashire has been making cheese since the 1400s and British cheesemaking started in 1125, when the first cheese was recorded. “All cheese has such industry; the story needs telling – it brings so much more to the experience. There are 700 types of British cheeses alone, and my current interest is telling the story – how it began when Cistercian monks came from France and built themselves a monastery in Wensleydale.” With such expert knowledge of cheese, we asked Sean to choose the perfect cheeseboard, and it goes something like this! 1. Smelly Ha’peth (A Lancashire term that means a child covered in muck after a full day’s play) is my blue cheese and I have to include it as it has won the international
cheese awards four times and is our flagship blue veined cheese. It’s a lovely medium soft, isn’t overly strong, and has a lightness of flavour that eventually reveals a sweetness – it’s not a slap around the face like some blue cheese is! 2. Montgomery Cheddar Cheese, from Somerset – go for the Mature. It’s buttery and you can taste sweetness and the hay of the fields. It’s made in the same way as it was back in the Cheddar Gorge of the 1300s. 3. 50g unsalted butter plus more for greasing Finely grated parmesan or fine breadcrumbs 350ml whole milk 50g plain flour ½ a teaspoon English mustard Tip of a teaspoon of xanthem gum (1-2g) to keep a souffle from falling • 125g good wensleydale cheese • 2 egg yolks and 4 egg whites • 1 tablespoon dried cranberries
METHOD
1 Set your fan oven to 170-180’c 2 Lightly coat the soufflé dishes on the inside with butter. Add a tablespoon of breadcrumbs or grated Parmesan to each soufflé dish and tip on to its side in the palm of your hand. In your other hand, slowly roll the dish around to help coat the entire dish. Discard the remainder back into the dispenser. 3 Set aside for later with a roasting tray deep enough and large enough to take all 4 souffle dishes. Boil a kettle of water. 4 In a medium copper based pan melt the butter, add the flour and stir with a wooden spoon to create a creamy roux. Gently cook the roux out for a minut. Off the heat, add the milk a bit at a time and hand whisk - return to the heat when it starts to bind. If using xanthem gum put in now and blitz it through the béchamel with a hand blender until slightly thickened. Add the mustard and stir, then add the cheese and allow to melt into the roux. Add cranberries and egg yolks and combine to a smooth sauce. Carefully check seasoning. 5 In a clean plastic bowl machine whisk the egg whites to firm peaks. 6 Add a third of the egg whites to your sauce and fully amalgamate with a plastic soufflé spatula. Carefully fold in the remaining egg white to incorporate the sauce and the whites but retaining the “air” in the mix. 7 Half fill a soufflé dish with the mix, tap the bottom of the dish on the work surface to help distribute the mix evenly. Fill to the top leaving the mix “dome shaped” at the top. Fit your thumb into the rim and twist the dish to help your thumb “clear” the edge of the souffle dish of excess sauce. Repeat with all four souffle dishes and place into the roasting tray. 9 Reboil the kettle and pour the resulting boiling water into the roasting tray until it comes half way up the souffle dishes. Carefully place into the oven on the middle shelf and cook for 12-15 mins until beautifully coloured. Serve at once. Serves 4
