SOUTHERN KRUGER H4-1 SABIE RIVER ROAD The main attractions of this road are the scenery, the abundance of game and the Sabie River it follows. Sabisa is the Swati word for ‘frightening’ and refers to the dangers of crossing this river with its slippery rocks and dangerous crocodiles. The views onto the riverbed are spectacular. Elephant, buffalo and grazers regularly cross the road on their way to water. Lion sightings often occur, and even the elusive leopard is regularly seen. The riverine forest attracts a plethora of birds, shy bushbuck, monkeys and baboons, while the thicket vegetation into the interior is ideal habitat for black rhino. Hotspots are the high-water bridge over the Sabie, the Nkuhlu Picnic Site, Lubyelubye River crossing with the occasional appearance of sandstone favoured by lion and klipspringer, and the popular Sunset Dam where people spend hours watching birds, game and other people.

Deglaze by slowly adding the sherry over a low heat, and reduce until the pan is dry. Add the white wine and reduce by two-thirds. Pour in the cream and reduce by two-thirds again, until you have a thick sauce. Strain through a sieve to remove rosemary and season to taste.
